Food MEMORY Travel See. Taste.
Where do you remember a delicious moment? Your grandparent’s farm, Jasper National Park, Paris, Kelowna, or your own dining table? It’s possible to re-create past and create new food experiences without boarding a plane or driving a car to get there. Stored in memory banks and solidified in time are your life and food recollections. What made that particular event or place exciting? What was served up when you were there? Let’s use various senses to capture those past experiences then re-assemble them to boost health and wellness. Sight
What place triggers food pleasure and delight? Describe the scene: who is with you, are you in a particular season, what is in landscape or indoor room, and identify the shapes, colors, and servings of food present? What makes food in this place so special? Include any items like table coverings, centerpieces, or furniture to complete the picture.
Sound
What do you hear? Maybe it’s silence, or the laughter of loved ones, or the bustle of people that remind you you’re in a large city. Do the sounds impact the food experience? Is there music, and if what kind? Aroma
Breathe in to really release the smell from your food storage; the sense of smell is a very powerful one to recall what makes this such an important recollection. When drawing in the aroma, describe how you feel. Explain why this smell sends you back to that time. Do you think there is a way to restore this aromatic experience without actual travel involved? Taste
What tickled your taste buds? Recall sour, spicy, sweet, or savory notes. This may be the tricky one to conjure up (and you’ll forgive me if you’ll begin to salivate as a response!) but a necessary one to explore.... for future use! How can you include this taste into present food choices?

Pleasurable food experiences from both the past and in the present increase our health by celebrating who we are, assigning meaning to our food choices, releasing any shackles of diet bondage, and enjoying occasions... our bodies become stronger as a result.

Here are some ideas you can use to encourage more fond food memories, on any day: prepare recipes recognizing places you have travelled to, decorate the dining table with flowers, candles, and favorite pieces typically reserved for special events, invite color and aroma to your menu, or play songs to capture a particular mood or theme. Time Travel Recipe
It was hard to pick just one food item that reminded me of dear ones, loved locations, and life-enhancing moments but the humble Carrot Cake has me travel back to times eagerly awaiting to eat it, after a carrot harvest. Even today it is a chosen celebratory dessert or birthday cake. I hope you enjoy this tasty, and visually-appealing new version I created that I feel offers aromatic pleasure too. Add family and the picture is complete. CARROT CAKE Makes 12 to 15 servings For those in Edmonton and area, since I like to support local, I recommend Gold Forest Grains flour, Silk Road Spice Merchants spices, extra-virgin olive oil (EVOO) from Italian Centre Shop or Evoolution, and eggs from Sunworks Farm. Whenever possible, I use carrots from my own garden! Ingredients Cake • 2 cups soft white wheat flour
• 2 teaspoon baking soda • ½ teaspoon mineral salt • 2 teaspoons ground cinnamon • ¼ teaspoon ground ginger • 1 cup EVOO • 5 large “happy” eggs • 3 cups grated carrots Icing • 1, 8 ounce package cream cheese – full fat! • ¼ cup butter • 1 tsp citrus-infused EVOO OR real vanilla extract • 1 ½ cups icing sugar Directions 1. For cake: preheat oven at 350 degrees. Lightly grease 9x13 inch pan. Mix flour, sugar, baking soda, baking powder, salt, cinnamon, and ginger together. Set aside. Blend oil and eggs thoroughly. Add flour mixture. Stir. Then add in carrots. Stir to combine. Pour into greased baking pan. Bake for 25 – 35 minutes (depending on how hot oven gets.) Check it with a toothpick or cake tester ~ little crumbs should stick. Cool in rack for 30 minutes before icing. 2. For icing: mix butter and cream cheese until well incorporated. Then add EVOO (or vanilla) and sugar. Blend well until creamy. Maybe MEANS Maybe When I was young, my family moved out of a busy suburban neighborhood to a new development where there was not another child within walking distance. In this isolated setting, I became a victim of childhood sexual abuse. When this abuse was discovered, nothing happened. There was no anger, no outrage, no insistence that the abuser (a friend of the family) be brought to justice. There was just absolute silence.

A sexual ethic begins by insisting that mutual consent is imperative in each and every sexual interaction, even when we are in a committed relationship, even when we are married.
As a result of this abuse and the silence that followed, I grew up feeling incredible shame. I came to believe that no one would be interested in me if they didn’t have access to my body. And I came to believe that if I was in a relationship with someone, I didn’t have the right to say “no.”
Both people must have the option of saying yes, but also the opportunity to say “no” and to do so without being punished. Consent is never the same as submitting, going along with or acquiescing. And you cannot give consent if your reasoning is impaired by alcohol, drugs or other substances.
You can hardly look at the news these days without finding a headline about sexual assault. From college campuses, to star athletes, to Hollywood icons, we are learning about acts of sexual abuse and rape. It is important that these cases be brought to national consciousness and that they be tried in the criminal justice system. But it is equally important that

Each of us needs to claim ownership of our own body. We get to make the decisions about how we will and will not use our body. Excuses Not to Travel Why You Should Kick Them to the Curb Traveling is the one activity that allows you to discover and understand the world around you. There are two types of people in the world: those who talk about their bucket list and those who decide to create an action plan to fulfill their bucket list. Which type do you believe is the happiest and most fulfilled? Those who do not travel, either do so due to fear or several common excuses. The excuses you tell yourselves about why you can't do things block the opportunities of experiencing the richness of life and its diversity. A quote of an unknown source sums this up is, “Travel is the only thing you buy that makes you richer.” Excuses,excuses, excuses… Excuses come up when a person is not willing to do something outside of their comfort zone or they are avoiding ac-
countability. Isn't it time to examine the real reason that you don't want to travel? What excuses have you been telling yourself or others? “I can't afford it” or “It's too expensive”. One of the top excuses that people give for not traveling is that they can't afford to do it yet they can spend money on things that they really don't need. Think about the places you spend your money: Do you need the convenience items in your shopping cart at the grocery store? Do you need the daily latte or the can of soda pop? Do you need to go out for drinks or suppers every night of the week? Can you kick the cigarette addiction so you can have more money?

We all make choices about where we allocate our resources. When someone says I can't afford it, they are actually saying “I choose not to afford it” or “I am not willing to make the changes that need to be made in order to make things happen”. Can you made changes in your spending habits? Travel does cost money; however, you can still explore the world in a variety of ways. Do you need high end accommodations or would you be willing to stay somewhere within a moderate price range? I have even heard people say travel is too expensive before they have even investigated the investment. How do you know how much something is unless you check it out. “I have no time.” Another common excuse relates to taking time off work or leaving things unattended at home. They say I have too much work to do at home and too many deadlines at work to get away. Have you ever noticed that there is always work to do at home and work? How much more productive would you be if you were able to fulfill something you desired and had an opportunity to recharge and rejuvenate? We all have the same 24 hours in a day; it all depends on how we use it. “It's not safe to travel.” Although there is unrest in the world this excuse is worth investigating. You can't paint the entire world with the same brush because there is unrest in a certain area of the world. There are many places that are safe to travel. Choose an area that you feel comfortable going to. There are security measures being put
in place all the time to ensure a traveler’s safety. Take some time to research travel advisories and warnings. “I don't know the language.” Even though you don't know the language, it does not mean that you will be unable to get around. You probably heard the phrase, “There is an app for that!” There are many apps that you can use to help translate what you want to say so that you can communicate effectively to ensure your needs are met. Better yet, start learning the language and some common phrases in advance. “I have no one to go with.” or “I've never traveled alone”. Even if you have never traveled alone, there are opportunities to connect with other individuals in the same situation. There are tours and groups that you can travel with and explore. This is a great way to meet new people and make new friends. There are bonuses to traveling alone. You get to do what you want when you want to. You’re able to discover more about yourself as you discover the world. There's no one to judge what you choose to eat or experience. Step out of your comfort zone; you never know what you may discover. “I'm too old.” This is one excuse I don't understand. Age should not be a defining factor of whether or not you are able to travel, if you are in good health and have no mobility issues. If you have health issues, look into what insurance coverage you need and discover if it is actually a hindrance. Even if you may have some mobility issues, there are ways to get around them to make it more like home. {continued on page 23}

Happy Travels with Ayurveda Transport, communication and movement are the three main factors that increase Vata (space & air elements). This means traveling will increase Vata in anyone regardless of their constitution and there are certain classic Vata imbalances that people typically experience when on the move such as constipation, irregular appetite, nervous exhaustion, insomnia and anxiety. The more Vata dosha that you have in your constitution the more you will experience these symptoms. The most challenging mode of traveling for Vata is flying. This is because Vata is made partly of the air element so it automatically increases the air in the system. Travelling by car, bus or train will also aggravate Vata because your senses (especially vision) were not designed for the
speeds we travel at. The constant visual exposure as we whip past neon signs and other visual stimulus is overwhelming to the sensitive nature of the Vata dosha. So what to do? Calming and soothing the Vata dosha is key to restoring balance. The following recommendations will counter the qualities of the Vata dosha which are dry, cool, brittle, light, irregular, fast moving and erratic. These tips will reduce the impact of travel on your senses, helping you arrive at your destination feeling calm, relaxed and balanced on all levels: • Drink plenty of hot water or herbal tea to counter the dryness of Vata. Adding excess air to your system will interfere with your digestion and elimination. • Do not drink alcohol when travelling as this dehydrates your system and may cause constipation and insomnia. • Close your eyes and rest (unless you are driving!). Relaxing your senses helps to counter the activity and movement of traveling. Ear plugs and an eye mask will reduce your sensory input. • Stay silent and keep conversation to a minimum as talking increases Vata and can leave you feeling exhausted. • Peaceful, soothing music will help you stay relaxed and calm. Music, videos or radio stations that are over stimulating will leave you feeling wired and exhausted. • Alternate nostril breathing is an effective way to bring instant calm in just a few minutes. Practice this whenever you are aware that you are shallow breathing, feeling stressed or when you feel tension in your body. • When traveling by car keep the windows closed and the air vents pointed away from your head. On an airplane turn off the overhead vent as drafts (especially cold air) will aggravate Vata and leave you mentally stressed. • ELS Vata aroma oil is a specific blend of essential oils that calm, soothe and balance Vata dosha.

I’m a Lonely Stranger in a Strange Land!
The travel bug bit me when I was only 11. My parents took me, my brother, and my grandmother to Disneyland in 1961 – the first year the park was open. I also discovered on that first airplane ride that I loved to fly. I flew many times after that – to Boston, Hawaii, Egypt, Mexico. So when San Francisco beckoned as the destination for a weekend workshop called “Discover Your Destiny”, I jumped at the chance. I also added a little time before and after the workshop for sightseeing and a visit with friends who had moved from Edmonton to Los Banos near San Jose. There was, however, one small, niggling worry. It was 2007. I’d been single again for four years and I couldn’t recall a recent
trip to another place by myself where I wouldn’t know a soul and no one would be there to meet me at the airport - or look after my bags! This trip would be a solo flight – only me to be responsible for my tickets, my passport, my money, directions to the hotel, transportation – you get the picture. Oh boy! It wasn’t that I didn’t feel competent. It was that no one I knew would have my back – just in case. Despite my trepidation, I went anyway. I arrived safely at the hotel with plenty of time to wander the area before dinner. As I contemplated what to do next, a feeling of dread washed over me. My stomach churned as I crawled under the covers and curled into a fetal position. Yikes! I was alone – really alone.

What if something bad happened? My imagination ran wild. I want my blankee! I hung out in terror until my curiosity about this unusual behavior surfaced. What the heck was going on with me? I wanted to give myself a stern talking-to: “Don’t be such a baby – there’s nothing to be scared of.” I resisted scolding myself, knowing it wouldn’t work anyway. Instead, I was soothed by the notion that I could do whatever I pleased, and if that meant staying in the room for 48 hours until the workshop started, so be it. And if a nap was in order, I could do that, too. Calm and Refreshed
Two hours later, I woke feeling calm, refreshed, and ready to leave my room in search of dinner. The hotel clerk directed me down a grassy path to a delightful café by a canal where I feasted on local fare. The next morning – guidebook in hand – I headed for the bus to downtown San Francisco. When the bus driver failed to arrive, the locals waiting with me asked where I was going and invited me to share a cab. How kind of them! My stop was Fisherman’s Wharf, where a cornucopia of sounds, smells, and sights greeted me. I thanked my cab mates and boarded the city tour bus for a whirlwind peek at San Francisco’s main attractions. On the bus, I discovered that people are happy to chat with a woman traveling
alone. Four women on a “girls’ weekend” were sitting behind me. When they realized I was by myself, they insisted I join in their fun and made sure to snap my picture in front of the Golden Gate Bridge. They wished me well at the end of the tour, and I went in search of the Wharf’s famous clam chowder soup. Served in a bread bowl, I ate every scrap – yum! After the workshop, I boarded the Greyhound to visit friends not far from San Jose. I loved the look of the countryside and had a delightful talk with my seat mate – an 11-year old Mexican lad. At the insistence of my friends, I returned to San Francisco in a snazzy, chauffeur-driven town car and learned the history of the area from my well-informed driver. Now that’s the way to travel! Once home, not only did I pat myself on the back for facing my fears and having a successful adventure, I reveled in the memories of everything I’d done and the wonderful people who’d crossed my path. Road Trip Tart
Many of my favourite memories involve being on a road trip and having decadent food. Whether it involved driving out into the woods for venison sausage cooked on a stick, or camping in the mountains eating Coho salmon that was baked in a pit, driving and food go together just like scallops and bacon! As a kid, there I was with my brother and sister tucked into the backseat, our parents in the front, and sometimes Nana was along with us or we’d be part of a little train of family headed out. With the car busting at the seams, Dad would pull over and then he’d pry the trusty Coleman stove out of the trunk. He’d crank up the propane burners ready to make tea while Mom was revealing the contents of the forest green cooler that held our travelling picnic. Sandwiches, hard boiled eggs, apples…and then on one trip in particular, I remember this Bakewell Tart. It was like a masterpiece, shining in the sun and calling us to dive in to sticky sweetness with almond over-
tones. To this day, it was the most delicious thing ever to be packed on a road trip and making one for this article has brought back lots of great memories. A Bakewell Tart is a layered delight. For people who like to make things in an orderly manner, working on one layer at a time is ideal. If you prefer to modify and adapt, you can do so throughout the entire process. The bottom is a pastry crust, followed by a layer of brightly flavoured homemade jam like raspberry or blackberry, then something called a frangipane which is not a technically a cake but looks similar through it is actually a “sweet pastry cream.” The top is often dusted or drizzled in icing sugar, but that’s totally optional. Allow the tart to cool if you are icing.
Thaw frozen pastry, roll it out to the thickness of a Loonie, then carefully fit it over a fluted tart tin or flan dish (something with straight sides). This takes a bit of practice, especially if your pan edges are metal. Don’t worry. If you tear a hole into it, just patch it up with a bit of spare pastry and keep moving!
Icing on Top
Jam Don’t wimp out on this. In a large tart tin, I use an entre jar – 250 ml from my jam stash. Plop it carefully onto your pastry, starting in the middle, but don’t spread it all the way to the edge as it might spread up to sit on top of your frangipane. In a smaller tart tin or tartlet cups, adjust accordingly and cut back the amount of jam. Frangipane Combine 150 g softened butter, 150 g sugar, 2 large eggs plus 1 yolk, pinch salt, 150 g ground almonds, and 30 g regular flour. You can also add 10 ml of fine brandy (optional, but very nice). Sprinkle a couple of tablespoons of blanched slivered almonds before putting this into the oven. Bake at 350 degrees F for 25 – 35 minutes until things are properly browned, and the frangipane springs back when touched.
Mix one cup of icing sugar with about 1.5 tablespoons of milk and 1 tsp of almond essence. Mix vigorously until the sugar is nicely melted. Pour/spread quickly over the top of your tart so it doesn’t start to set. You can add decorative touches using a few dots of chocolate icing or a fruit coulis. If you’re taking your tart on the road, and I recommend you do, leave it in the tart tin or flan pan to transport. Place it in a cake safe, or wrap it well in plastic and place it into a similarly sized box to transport. Make sure you have a knife for slicing at your roadside pullout and enjoy it as part of your lunch with some camp coffee or tea. {LIFE IS JUST A PHASE}
Pack Your Bags I used to think that travel was a luxury – something you did for a couple of weeks on vacation if you could convince yourself to actually take the time away from work. That’s probably the way most people think about travel. But I’ve come to realize that it’s not the best way to think. What I understand now is that travel is a necessity not a luxury. Here’s the reason why: If you never leave your own backyard you see life through a pretty small lens. The world is a wildly diverse place and that’s a good thing. People do things in ways that are uniquely different to their own culture. But when we stay close to home we begin to think that the way we do things is somehow inherently the right way. We set out to visit different countries or even other parts of our own country to see something new and yet we still are surprised that it is actually different.
We start to judge it based on how we do it at home. Maybe not overtly, but subtly we set up comparisons in our heads. We create unconscious expectations that can get us into trouble. I’ve travelled with other people and listened to laments that they don’t make great spaghetti in Germany or eat toast for breakfast in Italy. On some level they want what they are used to and when it’s different they are a little unsettled. In all of that disappointment it’s easy to miss the tasty schnitzel and spaetzle or a steaming caffe latte and brioche con marmellata. Expectations rob us of the new experiences at our fingertips. Travel lets us see and appreciate the differences in the world. It helps us understand that there is no right way to do anything, and that includes food or music or what time stores open and close. There are many paths to the same destination. Travelling gives us the opportunity to appreciate that different doesn’t mean bad or good – just different.

I was born to travel. I was 18 months old when my parents immigrated to Montreal from England. I flew over in a Skycot on B.O.A.C. earning my “Junior Jet Club” status which included a Log Book and pin. Sadly, both have gone missing, likely lost in one of my travels. As a child, I was a voracious reader and loved world geography. Reading books and newspaper articles about people and places around the world fascinated me. I have fond memories from a grade 4 school project my dad helped me with using his jig saw to carve a wooden map of South America. I added plaster of Paris to create mountains, plateaus, and rivers and painted them brown, yellow, green and blue.
Born to Travel
2013 – Venice, Italy
By age twenty, I had travelled across Canada from Newfoundland to B.C. A summer holiday with family in Prince Edward Island, visited an aunt in St. John’s, worked at an inn in New Brunswick and went to university in Ottawa, Ontario. My journey west was aboard CN Rail across the prairies to Calgary and Banff, and eventually to Vancouver where I lived for most of my adult life. To help feed my appetite for travel, I worked in the Reservations office at CP Air in the late 70’s early 80’s. I flew to England, visited Whitehorse one weekend, and took my mum to Hawaii. An unfortunate accident resulting in a lawsuit temporarily put my travel plans on hold, (a whole OTHER story.)

I fortuitously won the court case, was awarded a bit of money and quit my job at CP Air. Yes, to go travelling.
Vancouver feeling a little lost, but older and wiser at 26 and needed a job.
I bought a ticket around the world valid for one year and headed off to Australia and New Zealand. After working in Oz, camping in the outback, exploring the Great Barrier Reef and hitch-hiking around New Zealand, I flew to Singapore. I had an amazing train journey through Malaysia, into Thailand and on to Bangkok where I back-packed and explored. From Asia, I flew via Bahrain to Athens spending a glorious three weeks ferry hopping around the Cyclades Islands with an Aussie girlfriend. We bought Eurail tickets and travelled to Italy, Switzerland, France and back to England. I returned home to
After several months floating around at odd jobs, I landed a position at Cathay Pacific Airways. They were inaugurating non-stop service to Hong Kong from Vancouver! Within days of signing on, I was back in the air flying to Hong Kong for training. My 8 year career enabled me to visit Greece again, China, parts of USA, Hawaii, Mexico, The Caribbean, Australia, and countless business trips to Hong Kong.
Again, fate stepped in.
I moved from airline work to tour operation. It was in this area, I discovered what I truly enjoyed; exotic trip planning and leading groups.

Throughout the 1990’s I travelled the length and breadth of Indonesia, including the fabled island of Bali. I bore witness to early tourism in Vietnam, and Cambodia, revisited Malaysia and Thailand, discovered India, Nepal and Sri Lanka, loved island life in Fiji, the Cook Islands and The Philippines. Then, to one of my favourite continents – Africa. I did a self- drive through South Africa, safaris in Kenya and Tanzania, a fascinating journey through Tunisa and the island of Malta. One of my most memorable journeys, was travelling for 18 days aboard The Shongololo Adventure train in Southern Africa from Johannesburg to Victoria Falls visiting Swaziland, Mozambique, Zimbabwe, Zambia and parts of Botswana . It was life-changing. When we moved to Edmonton in 2007 to start our Wine & Spirits business, life changed. Drastically. I felt as if my wings had been clipped. We worked long hours every day on our business, running the store, learning about wines and spirits. Eventually, we were able to hire staff and take quick vacations to Mexico, or visits back to Vancouver. In the back of my mind, I was dreaming about more exotic destinations.
So, I made a decision. I would do both things I love. In 2013, we went to Italy visiting Venice, Florence and Rome, exploring wineries in Tuscany. In 2014 we hosted our first group Wine Tour on a River Cruise through Bordeaux in France. Last summer we took a small group on an Okanagan Wine Tour. This fall, one of my long time dreams is coming true – Winos & Rhinos a Wine & Wildlife tour visiting South Africa & Victoria Falls. a Travel and Wine. I think I have found my true calling! THE COLORS OF ECUADOR My husband and I had the privilege of traveling to Ecuador to join our good friends, Cathy and Ron for a little adventure. The flight was long, but great - going business class is the way to go when you have a long journey.
in Ecuador, we took a taxi up to a mountain hot springs and spent the day there. We shared a taxi with 2 solo travellers from the states. Both Rhonda and John had sold all their possessions and were traveling through Ecuador by themselves.
Our first few nights we stayed in a Hostal, breakfast included for $39.00 USD per night. The manager was a young man from the US named Dominick, who like most Ecadorians was very accommodating and polite. The Hostal was in a little town close to the airport in a sleepy town called Tababella. The second day we were
It was incredible how many people from all over world came through the the Hostal in those few days either coming or going to the airport. They had a great service, that they would hold your luggage so you could just take a backpack and leave the bulk of the larger suitcases behind to pick up on way back through.

Once our friends arrived, we decided to rent a car to go from Quito to Baños and then on to Cuenca.
It is a beautiful town with a population less than 20,00, with a pleasant year-round climate.
The roads are great compared to our roads in Canada with no potholes to deal with, just very smooth roads. We just took what we needed for 3 days and left everything else at the hotel that we would be returning to.
From canyoning, water water rafting, dome buggies, horseback riding, Baños is popular for the extreme sports folks.
The drive south was amazing, twisting and turning through the mountains, driving through clouds, sometimes raining, but mostly dry roads. The landscape is spectacular, green, green and more green. Our first stop was a city names Baños, in eastern Tungurahua Province. It is a major tourist center, know as the “Gateway to the Amazon.”
We decided to take a hike up to the top of a mountain after a soak in the hot springs. At the top was a huge statue and a stunning view of Baños. I measured 4,000 steps and 59 floors, it was a challenge and was worth the sore calves for a few days after. Rooms and food are cheap in Baños, it is very easy to spend less than $50.00 USD a day and to eat and rest well. Baños is in a valley with its very own waterfall that we could see from out Hostal. It was Easter weekend, so the festivities were going late into the night.

Between the booming dance music and the car alarms, sleeping was not in the program for me. If you are coming to Baños to rest I would recommend staying away from the core of the town, it is very busy and noisy. We met people from everywhere, some our age traveling alone and lots of young backpackers. We stayed 2 days in Baños and then headed to Cuenca. We heard so much about this city being one of the top places for North Americans to retire, so we were curious to see what it had to offer. Like the rest of the Ecuadorian Andes, Cuenca has a mild climate year-round. Days are warm and nights are cool, where all you need is a sweater. We meet a couple from the US and their 2 girls who were on a sabbatical and living in Cuenca for 2 years, with the girls registered in a regular school. I would recommend taking a taxi once you are in the city, as it is very cheap and a lot less frustrating. Since we had only a short time here, we took a city tour and were given an hour and half bus ride with a tour guide that spoke English. The colonial style buildings were beautiful, so much history here, yet modern amenities too. They are building a light rail train through the city centre which should be done in 2017 sometime. I find it such a shame, that there is so much graffiti on the beautiful colonial building. Many of the really beautiful graffiti art is in select areas, not marking the colonial building. When I was in Argentina in 2014, it was the same, disappointing, that their own people don’t appreciate the beauty of the city. But besides that, I felt safe, the people were friendly and of course the price to travel once you are there, makes it so worth it. I think you will be hearing more about this beautiful country. a
