We’ve all heard the expression, “Never underestimate the power of a woman”. I’d like to take that a step further and add, “Never underestimate the power of a woman’s friends”. Women are aware that the bond between us is unique…resilient…and ageless. Regardless of our backgrounds…no matter what our circumstances, there’s an inexplicable connection that links us together. Along with this powerful bond is the kindred spirit that we call “friend”. That someone who will understand your need to fly under the radar…who will casually murmur, “We’ve all felt that way” and will dismiss your harried apologies with a wave of her hand. She possesses the knowledge of a scholar…the understanding of a saint and dispels a sense of humor that will leave you breathless with laughter. When a friend asks, “How are you?” she honestly wants to know. No ambiguous reply will do. Venting and tears are not met with awkward glances towards the nearest exit but find sympathy and an ample supply of tissues. She knows when to bite her tongue and encourage you to let it out…but she’ll share the brutal truth when you ask for it. She’ll be the first to arrive with that necessary

casserole and those six magical words: “What can I do to help?” It’s no wonder that women often create lifelong friendships that can withstand everything from an ill-fated marriage to a move clear across the country. And whereas many men often find it difficult to establish newfound friendships as adults, women seem to have an inherent need to connect. We nurture…we encourage…we support. Cocktails help, of course. The everyday challenge of balancing relationships and careers with an endless stream of responsibility is the reason martinis were invented. I firmly believe that the word “martini” should replace the word “cheese” when one poses for photographs. Imagine how happy everyone would look. Ultimately, your best resource for clarity, knowledge and sanity exists not in a therapist’s office…but within the powerful circle of one’s friends. They’ll support you when you fall and will enthusiastically confirm your fabulousness. Because, hey…that’s what friends are for. Here’s to celebrating that irrepressible, undeniable Power of She. Hot! when it’s

The temperatures are rising and women want their image to stay light and fresh – not wilted like a cut flower. These tips are simple, quick and easy. Fabrics: avoid polyester, rayon, or nylon. They trap heat against your body that cause you to feel hot and sticky. Instead, choose a breezy, light-weight cotton, cotton blend, linen, linen blend or wicking fabric when it’s appropriate. Natural fibres breathe which leaves you feeling cooler. Fit: Avoid clothes that are too tight or too small - not only will they prevent

your skin from breathing and cooling naturally, they will also show every drop of perspiration. Also avoid oversized baggy clothes in the name of comfort. You will look sloppy and wilted. Instead, choose tailored, fitted pieces that will help you look more pulled together while still being able to move freely and easily. Colour: Avoid head-to-toe dark neutrals. Freshen up by adding light neutrals to your wardrobe. White and creams and blushes are especially popular this year. Keep your colours light, bright, and fresh in the heat. If black is a must, wear it with white for a crisp summer style. Add a pop of colour with a coral necklace, deep seablue handbag, or a stack of colourful bracelets that make a statement. Wardrobe must-haves: Upgrade your summer wardrobe with kneelength Bermuda or city-length shorts. Try an A-line cotton or linen print skirt to boost your flirty side while still keeping it office worthy. Wear them with this season’s wedge sandals. Pedicure a must. A pretty dress is always a boost for your summer wardrobe. You’ll have it for years so choose wisely. Replace teeny-weeny accessories with statement earrings or a stack of colourful bracelets. Cover your bra and straps. Showing your bra under your arms or the straps is in bad taste. Shorten the straps of your tank tops for a quick remedy to this image blooper.

Replace your black leather handbag for a sherbet coloured bag with interesting hardware. Or this season’s lighter tans and saddle brown. Beauty Strategies for Women • Lighten up your fragrance; replace heavy musks and spices for citrus and floral-scented lotions. • Rethink your makeup routine for summer. Heavy liner and cream foundations are too harsh when the sun is bright and hot. Wear mineral cosmetics for a fresh glow all day and night.

5 SUMMER of the HAPPY Many of us are too rushed to enjoy life, too much in the future to be living fully, too anxious to really relax, too worried to be healthy, too ungrateful to be happy, too afraid to love, and too critical to be compassionate. Do your part to spread joy upon this earth: We greatly need it. Only when you enjoy this moment will you know why it is called the present. Enjoy your present; it contains JOY right now. According to an article in the New York Post, a recent British study found that quality time with your family can make you happier. Apparently, it’s the simple things, like a home-cooked meal, that carry a lot of weight. This summer make an effort to sit down and eat with your family and friends. Strong family and social networks are highly correlated to increased happiness. People who eat well and drink moderately are among the happiest. This summer add some “good mood” foods to your menu and notice the sunnier dispositions in your loved ones. When you eat a meal, the contents are absorbed into your bloodstream. If the meal is a healthy one, your body will benefit from all of the nutrients found in those foods. What you eat has a remarkable effect on your moods, and energy.

Here are some healthy foods you should consider adding to your diet, if you haven’t already. Fish – All types of fish contain high levels of omega-3 fatty acids. Omega3s boost your serotonin levels helping you to feel great. High levels of serotonin boost mood, and help you sleep, whereas low levels can cause feelings of depression. Fish is easy to prepare and grill, which makes it a great food to eat in the summer. Garlic – Add some fresh or roasted garlic to your dishes; it helps give you energy and boost immunity. Ginger – The unassuming ginger root helps prevent coughs, colds and flus. Oats – The properties in slow cooking oats, which are really easy to cook in a pot on the stove, help to sustain you and give you a wonderful metabolic boost in the morning. Oats are loaded with B vitamins and important minerals, such as iron and zinc, which contribute to a very healthy nervous system. Add a handful of blueberries, which contain massive amounts of antioxidants, or any berry for that matter, and you’ll have a happy belly and a happy brain. Water- It’s critical for your brain to be hydrated since good moods are regulated by our brains.

Skip the sugary drinks and add some lemon or lime to your water. I also love using frozen berries as ice cubes. Quinoa – The word quinoa (pronounced keen-wa) means “mother” in the Quechua language. Quinoa contains a full range of essential amino acids, including tryptophan, and has a high content of the minerals potassium, magnesium, zinc, and iron. Quinoa provides a spectrum of B vitamins, including pantothenic acid or vitamin B5, which is essential in allowing the adrenal glands to provide a healthy response to stress. Quinoa is wonderful in green salads or with a tomato soup. It’s nutritious and delicious! Walnuts – Walnuts are the richest nut source of omega-3 fat, which is critical for optimum health. They also contain zinc, necessary for good mental and emotional health. Walnuts are great on their own or tossed into salads, oats, and stir fries. Walnuts are a great pick-meup in the middle of the afternoon when paired with a piece of fruit. They’ll be sure to keep the smiles coming. Making a few enhancements to your family’s diet this summer will improve moods and increase smiles, especially if you do it together! Taking a few minutes to sit and eat with loved ones will increase your joy factor immensely. LET YOUR LITTLE GIRL RUN FREE I just watched an old episode of Boston Legal. One character was informing another that his little boy was gone. He was so concerned with being a “proper” grown up, he no longer knew how to have fun. She made the point that it’s important to still have some little boy in you as a grown up or your life becomes stale and dull. How’s your little girl? Have you become so concerned with being a good mom, wife, employee, business woman or whatever else you do now that you’re a big girl, that you’ve forgotten how to have fun? We have responsibility now. We have so many things – and people – to take care of there’s no time for fun. Often our version of fun has to do with substances that help us let loose for a bit. Many of us have forgotten how to take chances and enjoy life without any liquid assistance or even at all. I see it over and over. “I can’t dance until I’ve had a few drinks.” “I couldn’t possibly try painting/ sky diving/rock climbing/writing/Asian cooking (fill in whatever activity you find interesting) – what if I suck at it?” “I can’t go to that party, I don’t know anyone.” “I don’t want to dress up for Halloween; I’ll look like a fool.” {continued on page 28}

You CAN teach an old dog new tricks, and, I think humans can learn a lot from their four legged and furry friends! This past month has been quite the adventure in Toby world, wait until you read what I have learned. Let me just sum it up for you, it all has to do with purpose, passion and promise. On March 26, 2011, Charmaine, Christopher and I left Sherwood Park, Alberta and headed towards California. Waving good bye to snow and cold, we arrived three days later to sunshine and surf. While I slept most of the way, it gave me lots of time to think about what really matters and what contributes to a PAWsome life! Having a purpose is so important. My purpose is to bring joy, happiness

and love to the world and every person I meet. I make it my mission to do that every single day whether it be while we are on a walk, meeting strangers that pass by, at the events I attend at bookstores and schools, or at my job at the hospital. What is your purpose? Life is so much easier when you have purpose, and also passion. When I go into schools with Charmaine and do presentations, the children are attentive and engaged because I am there, but, the more passionate I am, the more engaged they are.... Mmmm... Interesting isn’t it? When I learned to surf on our California trip...yes...on a real surfboard, I discovered the more fun I had, the easier the learning was.

Managing distractions was critical. Christopher and Craig, my teacher, watched the waves coming behind me, and I focussed on the dogs, flying toys (or birds as you humans refer to them), and balls passing by right in front of me. Dog beach is full of fun distractions. But, focussing on the surfing, and not the distractions, allowed me to pick the sport up very quickly. Before long I was staying on the board and caught a few waves. Focussing on distractions made me lose my balance, and fall off the board. So when you focus on the passion, catching the wave is much easier, and of course more fun. That brings me to my next lesson. That is the lesson of mindset. You may assume that all I think about is going for walks, when the next treat is coming, and having fun time with

Charmaine and Christopher. Okay, well I do think about that...a lot. But, you thoughts and mindset is so important, it shapes your future, actions and results. For example, one day we visited Hollywood Blvd walk of fame (I call it HollyWOOF). One of my dreams is to have my own star on HollyWOOF Blvd. So to start setting my mindset, we visited HollyWoof Blvd. We walked past the stars of my favourite actors then found Lassie’s star. I got my photo taken with Lassies star. That was fun, but here’s the really exciting part. There was a star beside Lassie’s with no name on it...yet. I got my photo taken with that star, the one I have claimed for TOBY. You see, if you believe it is possible and get excited about the possibility, you may just make it your reality. Like me, I may just have my name on on HollyWoof Blvd. z

Habits: A Financial Planning Strategy

Can financial planning and therefore financial security be easy, provided the proper habits are learned and done often? Let’s look at some financial needs that require addressing. 1. Spend less than you earn, know the difference between immediate need and what can be delayed into the future before purchasing, and thereby accumulating debt. Debt is costly; interest has to be paid. Credit card debt can be extremely expensive and keep you awake at night. 2. Save 10% of what you earn whether you put this in a Registered Retirement Savings Plan (RRSP) or a Tax-Free Savings Account (TFSA) depends on when you think you might need that money and your income bracket. 3. Cover your risks, what is the cost if you becoming disabled or critically ill? What affect would your death have on your family? 4. Know your group benefit plans (and those of your spouse/life partner) Often these plans are very affordable and all you have to do is ask for them.

The New Webster’s Dictionary definition of a habit is: a thing done often and hence, easily. 5. Do you have children or grandchildren? Chances are good that someone is university bound and a family plan can maximize government grants and offset huge costs later. 6. Wanting to save for that trip/cruise of a lifetime. It may be planned for five or ten years away, but by starting to save today it is more likely to become a reality than staying an unfulfilled fantasy. 7. Always wanted to support a cause close to your heart you never seemed to have the extra money to donate? Small amounts can make a huge impact. 8. Are you worried about retirement and what it might look like for you. Have you ever tried to live on your potential retirement income? Try it for just one month. Many a 50-year-old has quit a day job and gone back to school. Ask why, and they might say “I just wanted that piece of paper” or “to prove to myself that I could.” And, while either pat reply or heartfelt confidence would surely be true, it would also conceal a great story – one which began a long, long time ago, at a fork in the road to Everywhere; a path is charted, with nothing more – or less – than one young traveler’s 20-20 foresight (and a mother’s sage advice), in an otherwise uncertain world. Here’s Sally Vaughan-Johnston’s story: It’s 1973. Standing at crossroads, the 17-year-old of Norfolk, England holds in her velvety, smooth hands two acceptance letters: one from a culinary arts institute, the other from journalism school.

“My mom said if you go into journalism and later decide, down the road, to go into cooking, it’ll be easier than to train as a chef now then pursue journalism later,” a matter-of-fact VaughanJohnston recalls of the day she veered right, and headed off to J-school. “It made sense to me at the time.” Thirty-odd years later, married with two teenagers, Vaughan-Johnston had become a successful lifestyle/food editor for the Edmonton Sun with an attractive pay cheque and a popular weekly opinion column, Sally Sez. Some might, even, say: “she’d arrived.” Her problem: “I felt I’d said everything I wanted to say.” foodies

But back at her desk, she found herself wishing she was behind a stainless steel countertop, in white scrubs, arm-deep in carrot tops and potato-peelings – not headlines and deadlines. “The closer I was to it, the more I wanted to be a part of it,” the 55-year-old confides. Meanwhile, the daily dish being served up in the newspaper biz was less than “satisfying.” Declining subscriptions, corporate cutbacks, content standardization. Heartburn. Ask Vaughan-Johnston if the Universe, then, stepped in, and threw a door wide open for her – and she’d likely laugh, call it a bunch of “spiritual hooey” and chalk up what came next to determination and good timing. One day, nonetheless, Vaughan-Johnston accepted an invitation: to attend a week-long kitchen skills course, as food editor for the Sun, at the Culinary Institute of America in Upstate New York. She jumped at the opportunity, packed her bags – and apron – flew through that door, and never quite looked back. betty crocker

“It was such a fantastic experience learning from people of such remarkable talent,” says Vaughan-Johnston, who realized she was, once again, at crossroads. So she dialed up her mom for a wee chat. And, this time, veered left.

“I thought, ‘I’ve got to do this now’ ... but give up a good salary to work in a kitchen for $12 an hour as an apprentice?” Was this not some kind of midlife Betty Crocker-foolery? But deep down, she knew it wasn’t. And her husband, kids and mother knew her. So Vaughan-Johnston took an entry-level job in the Sutton Place Hotel’s banquet kitchen on Saturdays. It was backbreaking, neck-kinking work, with endless hours of slicing, dicing and chopping, until the aspiring chef’s rookie hands were sore, raw and calloused. At the end of each shift, she went home “knackered,” but as happy as a college freshman, who’d just survived the culinary equivalent of ritual hazing. red seal exam

Within a year, Vaughan-Johnston had left the Sun, and become a full-time apprentice cook through the Northern Alberta Institute of Technology’s (NAIT). By 2010, she’d earned her Journeyman Cook designation and passed the interprovincial Red Seal Exam. Her little piece of paper. Today Vaughan-Johnston is not only a real-life chef, but co-author of Bravo!, a best-selling cookbook and the latest in the Best of Bridge line – a Canadian household favourite for more than three decades. Bob Dees, a former Sun contact of Vaughan-Johnston’s, retained the rights to the well-loved cookbook series. He then called her up to see if she’d carry on its’ legacy. Today, the writer-cook spends her time in the kitchen dreaming up fast, fresh and easy recipes. She regularly consults with Bridge ladies’ spokesperson, Mary Halpen. They have become great friends. Vaughan-Johnston also works parttime as a cook in a seniors’ home and runs community cooking classes. Her second Best of Bridge book, Fan Fare! – with 200 new recipes including her Shrimp Hurry Curry, Quick Chicken

and Corn Chowder and Rhubarb Vanilla Custard Tarts – is due out later this year. Reflecting on her midlife career change, Vaughan-Johnston just smiles and says: “If there’s anyone, at my age, looking to make that dramatic leap, be prepared for some consequences you might not have anticipated,” then, stopping to examine her hands – aged, seasoned and tenderized – she adds, wryly, “as hard as it is working in a kitchen, there’s nothing I’d rather be doing ... but it’s hard work. Whenever I visit Mexico City, I often stay right downtown. I love the friendly people, the vibe and the variety of things to do. One of my favourite places to stay is the AAA diamond-rated Hotel Presidente InterContinental. It’s a modern 42-storey tower with great restaurants and lots of amenities. You can’t beat its location – walking distance to many of the city’s great attractions, including Chapultepec Park. Chapultepec Park is one of the oldest and largest natural parks in North America. With many museums, an amusement park, a lake and even a zoo, there’s something for everyone. Visit the historic Chapultec Castle, which was once the residence of past presidents and emperors. Also located in the park is the National Anthropology Museum. Within its walls, you’ll find rare archaeological artifacts which date back to Mexico’s pre-Columbian heritage. One

noteworthy artifact to view is a large Aztec calendar called the Stone of the Sun (Piedra del Sol). Another popular attraction located in the park is the Museum of Modern Art. It houses an extensive collection of Mexican folk art and the paintings of one of the most influential Mexican artists, Frida Kahlo. When you no longer feel like walking anymore, catch the Turibus – a “hop-on-hop-off ” bus. Get off near the Zocalo, or Main Square, where you’ll find the National Palace and the Templo Mayor (Great Temple) ruins built around AD 1325. Looking for some authentic food? Try the enchiladas suizas at the original location of the Mexican restaurant chain Sanborns in the Casa de los Azulejos (House of Tiles), recognizable by its beautiful blue-and-white tiled façade. When night falls, there are many trendy restaurants and nightclubs that await you. One of the hottest eateries and the best place to nosh on Yucatan cuisine is Izote, owned by famed chef Patricia Quintana. I’m just too busy! That’s the response I get when I ask people if they have enough play and fun in their lives. Play typically comes far down the list of priorities after family and work and 101 other things on the never-ending to-do list. Kids just take care of play naturally. It seems that they need help with play when adults get involved - like with scheduled play dates and organized sports. Left to their own devices, kids have no trouble getting their daily dose of play. Adults on the other hand could use a lot of help. Maybe that’s because we’ve convinced ourselves that kids can have the luxury of play since they don’t have all the commitments, obligations and worries of adults. Play is something that you add on to your day if by chance you have any left over time. I think it’s really because kids have a mindset of play and adults think about it only as something you do.

olly olley oxen free! Of course play is something you “do”, but it is also a way of approaching life in general. How would your life change if you thought about play as way of being rather than simply a task to check off? What would be different if you considered play a necessity rather than a luxury? All it takes is a little shift in thinking. More like a kid and less like a grown-up. Here’s some things that we adults can learn from kids about play: You don’t need a lot of fancy equipment.

On most summer nights when I was a kid we played a game called Kick the Can. The only thing we needed was a tin can. Sometimes we even substituted something else if there were no cans in sight. If you were around little kids last Christmas, you probably saw them be more fascinated with the boxes than the gifts. So what does that teach us? You already have what you need to play.

You don’t have to go buy anything else. The requirements for play are quite simple. Start by taking a playful attitude with tasks that you have to complete. You need a little play every day.

Structured leisure activities are great but they are not the only way to play. There are lots of opportunities in the day to take a few minutes to lighten up if you keep your eyes open. Start by being more spontaneous - everything doesn’t have to be scheduled. Toss the ball with your dog. Have a pillow fight. Dance in the kitchen. You feel better when you play.

Playtime lets us be creative. It reduces anxiety and worry. It provides a distraction from the other demands in your life. It’s tough to be stressed

when you are laughing and having a good time. If you are feeling a little cranky, ask yourself how long it’s been since you played. You learn stuff while you play.

Just in case you are not convinced of the value of play on its own, consider it as an important avenue for learning. While we are playing we figure out how to get along with others. We learn new skills, We problem solve. So if you are stuck on the idea that play has to have additional benefits, rest assured that you will get bang for your buck out of every play experience. Call out the little kid in you. If you think you are too busy to take time to play, then it’s definitely time to schedule a play date. Not sure where to begin just ask your kids. z

Expanding Your Family Circle Summertime meant family time when I was growing up on the farm. Warm weather brought Sunday visitors – aunts, uncles and cousins. Cousins from Saskatchewan and southern Alberta would stay during summer holidays. “The more the merrier” was the common theme as we helped each other ride the horses, do the chores and pick peas or raspberries from the garden. It was never a problem to throw extra potatoes in the pot or grab more rhubarb for pie, depending on the number of extra mouths at mealtimes. I was taught that the bond of your birth family, that of blood was stronger than any bond – even that of friends – so no matter what happened; your family came first. If you had trouble with any of them, well, they were your family, so you had to ‘go along to get along’. Childhood friends took a back seat if your family needed your time and attention. Despite that programming, when my mother died – I was 17 – my friends got me through. When I married, I added in-laws and new friends into the ‘family’ circle.

As young adults and parents, our social circle took precedence over relatives as a source of enrichment and fun. That old saying, “you can’t pick your family, but you can pick your friends” proved to be so true. We picked our friends based on common interests and shared values.

What happened, though, when this idyllic picture got shattered by divorce? Along with a mountain of grief, divorce brought a void where my in-laws and some good friends had previously been. Instead of hordes of people rallying around in support (as happens when a spouse dies), when our relationship died, the people who were closest to us didn’t know whether to take sides or just stay away.

Even though my Ex and I were fortunate to have personal friends and family who propped us up and helped us carry on, we both lost a number of close ties. While I valued the fact that my relatives would always be there for me, I learned from my friends that bonds forged through adversity were equally as strong as those forged by blood – in some cases, even stronger. I also learned that the nature and definition of ‘family’ can and should change over time. If family is defined as people who care about each other, then I was blessed with a far bigger family than I had been born into. WEEKEND WOES

The toughest times as an older single were the weekends – traditionally ‘family’ time for most people I knew. While they had someone to party with or cook for, I was mostly alone. If I didn’t want to feel miserable on Saturday night, I had to plan something special. (I learned this strategy from a friend who had never been married.) Sometimes I would cook a special meal just for me, set the table properly (no eating Kraft dinner over the sink!) start my favourite music, and indulge in a glass of sherry or red wine. As I started dating again, my weekends took on a different flavour. Food festivals, a trip to the ice cream parlour or picnics in the park were all the more fun when shared with someone new. It was also an opportunity to explore the city as if we were tourists. Now that I have a new love (he came with a big family), I’ve added even more people to join in my circle. Even though we don’t see each other as often as we’d like to, we just pick up wherever we left off the last time we met. I’ve ended up with more family than I can count! Best of all are the memories of great food and fun made even better by sharing with those who matter to us. Happy summer! z

Three-year glitch replaces seven year itch There’s a new survey out in Britain that suggests the “three-year glitch” has replaced the “seven-year itch” as the tipping point where couples start to take each other for granted. I notice that when I’m asked how long my husband and I have been married, I get a response that is a mixture of surprise, shock and awe. ”Ten years? Wow!” The reaction is then followed by a knowing nod of the head and a silly grin, as if we have unwittingly found the cure for cancer or something equally as impressive. That said, marriages do seem to be getting shorter and shorter. Passion killers

The British survey shows the top two passion killers as being weight gain/lack of exercise and money/spend thriftiness. Even our beloved celebrities can’t seem to make their relationships last, even though it doesn’t seem to make sense when celeb couples seem to change partners as fast as Lindsay Lohan goes in and out of rehab. After all, celebs don’t gain weight; they all have personal trainers and private chefs, right? Money woes? Puhleeze! But one thing that celebs tend to do is rush into marriage.

A few romantic scenes with their sexy co-stars and whamo! The oxytocin kicks in, and the girl is gliding down the aisle all decked out in Vera Wang. Besides the three -year glitch throwing a wrench in things, fewer people are making the decision to go down the aisle in the first place. And it’s no surprise. It basically comes down to economics. What is marriage really? Marriage is basically a contract of economic convenience, and it’s been that way for centuries. This was certainly the case up until the 1950’s and 60’s, when fewer women were in the work place. Women were more dependent on men for financial security. Now women are able to call their own shots and bring home the bacon just like the men. As a consequence, dating and marriage options for men are getting tougher. Women have more options in terms of being pickier about the partner they choose. As a matchmaker I notice this, that most women are looking for an exceptional man to spend their life with, and if he isn’t everything she is looking for, she would often times prefer to be alone. z

Regardless the excuse or reason, if you are one of those “I only drink red” types, go out on a limb this summer and try some nice whites or roses for a change! delicious wines

Summertime is a time for barbeques and outdoor entertaining with friends When it comes to wines, the majority of people here in Alberta prefer to choose red wines over whites. Perhaps it is the long, cold dark winters that tend to make one want to cozy up inside with a simmering beef stew and bottle of red. Or, maybe the fact that Alberta beef and bison, barbecued ribs and hamburgers seem to win out over succulent white fish, chicken or shrimp during the short summer season in our northern region of the country.

Summer is the best time to experience that cool refreshing, thirst quenching pucker of a crisp chilled white wine while basking in the sunshine on a patio deck. Roses are a delightful alternative too. These can range from crisp and dry to off dry and quite nice and fruity. Most can be enjoyed alone, (we mean without food, not friends!) not all of them are “bitter”, lots can be paired with meat and some will utterly surprise you with their delicate flavours. Roses are a perfect accompaniment for salads and are the quaff of choice in the South of France. Here’s some ways to lighten up this summer and experiment with a few delicious wines and introduce your guests to a whole new range of tastes at your next gathering! First, you’ll need ice buckets. They can be anything from a proper one used for chilling champagne to a child’s sand pail, large ceramic flower pot, or a great big colourful bowl. Have fun and use something that works with the theme of your event. Fill the bottom of the ice bucket with some cold water - just a couple of inches will do. Then fill the top 2/3 up to the rim with ice. {continued on page 28}

ATCO BLUE FLAME KITCHEN

GO FISH! Hosting a barbecue? Fish was made for

the barbecue! Not only does it make a very juicy and flavorful fish but the direct high heat cooks fish fast! It’s great for entertaining because it may be prepared for the grill in advance and when you’re ready to barbecue, it cooks completely in a short period of time. Try grilling fish on nonstick foil or on a cedar plank to prevent it from sticking and be sure to barbecue it just until fish flakes easily with a fork. As a guide, grill fish over medium heat on natural gas barbecue for 10-12 minutes per inch of thickness.

BAJA FISH TACOS Savour the flavours of Mexico with our trendy fish tacos. 2 tbsp (25 mL) oil 6 flour tortillas (8 inch/20 cm) 2 tbsp (25 mL) fresh lime juice Sweet and Spicy Slaw, recipe follows Pico de Gallo, 1/2tsp (2 mL) salt Mango Salsa, 1/4 tsp (1 mL) freshly ground pepper Purchased guacamole, optional 1 clove garlic, crushed Sour cream, optional 4 small or 2 large halibut fillets To prepare marinade, combine first 6 ingredients (oil through garlic) in a heavy zip-lock plastic bag. Add halibut and squeeze bag to coat halibut with marinade; seal bag. Let stand for 30 minutes. Remove halibut from marinade; discard marinade. Wrap tortillas in heavy-duty foil and place off to one side of barbecue grid.

Grill halibut over medium heat on natural gas barbecue for 10 - 12 minutes per inch (2.5 cm) of thickness or until fish flakes easily with a fork. Flake fish into large chunks. Unwrap tortillas; place Sweet and Spicy Slaw and halibut over one side of each tortilla. Top with Pico de Gallo or Mango Salsa, guacamole and sour cream.Fold tortillas in half. Serves 6. Sweet and Spicy Slaw 1/2 cup (125 mL) light sour cream 1/4 tsp (1 mL) salt 1 tbsp (15 mL) orange marmalade 1/4 tsp (1 mL) chipotle chile pepper 1 tbsp (15 mL) rice vinegar 4 cups (1 L) coleslaw mix To prepare dressing, whisk together sour cream, marmalade, vinegar, salt and chipotle chile pepper until blended. Place coleslaw mix in a bowl.Add dressing and toss to combine. Cover and refrigerate for up to 2 hours. Makes 4 cups (1 L). z

Achieving Your Ideal Weight;

A Holistic Journey Part I

The list of books on diet and weight loss programs on the market seems endless. The majority of women between the ages of 40 to 60 have felt the sting of weight gain, inspite of dieting and exercise. What is the solution? The answer is there isn’t just one solution; it’s a combination of many contributing factors. Here are a few to consider. High levels of stress increase cortisol levels, which contribute to weight gain in the abdominal area. Abdominal fat leads to insulin resistance, which results in more weight gain. As we age we lose our tolerance for a high carbohydrate diet. When we were in our twenties, we could eat half a pizza, no problem. Now it seems just looking at a piece of pizza makes us gain two pounds. No matter how much you restrict calories, weight gain won’t move in a high stress body. Exercise, meditation, adequate sleep, and making time for fun, all help to reduce the effects of stress on the body. The majority of women I see have high levels of stress that are often out of their control. Now is the time to take control of the areas in your life you can bring change into.

With hormonal imbalances you tend to crave high carbohydrate foods like bread, pasta, potato chips, and sugar. Having your hormone levels assessed and treated is key to weight loss. Thyroid and estrogen are controllers of metabolism. If your thyroid function is low (hypothyroidism), weight loss can become near impossible. Women who have hypothyroidism often carry their weight in the hips. If you are estrogen dominant; meaning you have higher levels of estrogen compared to progesterone, you will also gain weight. Progesterone is a fat burning hormone. Unfortunately, it tends to be low in perimenopause, and non-existent in menopause, becoming one of the contributing factors to weight gain. When women go through perimenopause and menopause there can be a dramatic decrease in metabolism that doesn’t fully recover, inspite of bioidentical hormone replacement therapy. There will be improvement, but it may not be like it was in your twenties and thirties. We can’t leave out our emotions when we talk about weight gain. Many people who are overweight are eating for their emotions. Having unresolved issues in our lives manifests as symptoms in our physical body. Every part of our body is connected; the mind, body, and spirit, are one. There comes a time when we can’t suppress our emotions any longer. Hormonal changes such as

perimenopause and menopause, seem to bring it all to the surface. We also need to come to terms with the fact that we will likely never be the same size we were before having children or in our early twenties. Contentment needs to become part of who we are. We have let society place unrealistic expectations of how we, as women should look.

Having unresolved issues in our lives manifests as symptoms in our physical body. Every part of our body is connected: the mind, body, and spirit, are one.

As I age I’m finding my ideas of what is beautiful are changing. To me, women with a little extra body fat have a more youthful, healthy glow. I know some women who’ve been overweight their whole lives and look better than some women who are thin. It comes down to attitude and self-love. There has to be a place of balance, where your health comes first. If we are at peace with ourselves, our mind and spirit will be in harmony. Then, and only then will our physical body reflect that balance! In the next issue learn about weight gain related to food sensitivities and how to implement a whole foods diet. z

If you want the latter, the time to start is now! 1. What makes you laugh? Find a way to laugh every day. Whether it’s watching a comedy, calling a positive and engaging friend, jumping in a puddle, spending time with a child – do it! 2. What gives you a sense of joy? Find a way to get involved in it. One thing I love to do is sing. I sing to the radio. I sing as I work around the house.

3. Take a course in something that appeals to you but also scares you. Were you told you couldn’t dance? Dance anyway and enjoy the expression of your body. 4. Make 50 Selfish Goals. Write out things you would love to do that you’ve been putting on hold because of your responsibilities. Go deep. Get creative. When you accomplish one, add a new one. 5. Make a Happiness List. Write out 10 small things you can do every day that contribute to your happiness. Note the word SMALL because you are going to do them every day. For example: light my favorite scented candle, have a piece of dark chocolate, read a joke, kiss my loved ones. Play with the list until you can accomplish it daily. Do it in order so that you know what’s up next as you get in the habit. Your little girl is still inside you. Don’t let her sit in limbo. Your little girl will inspire your big girl and make her life so much more interesting. Go forth and play! z

Plunge the bottle of wine into the bucket so that the ice covers the majority of the bottle to keep it chilled. A great way to start any party is with an aperitif - a beverage that will quench thirst, and get both the gastric juices and taste buds primed for the delicious dinner to follow without filling you up. Champagne or Sparkling wine is a wonderful way to add some pizzazz to any function and is a perfect summer sipper. Sauvignon Blanc is a great choice as these wines contain high acidity and medium to high alcohol. buckets and label them with the name and a few tasting notes. They might be a crisp, acidic Sauvignon Blanc, a fragrant, floral, lychee-style Gewurztraminer (“Gewurtz” for short!) and a sweeter style apricot, honey, lemony Riesling, to name but a few. Then, if your main course at the event is steak or ribs or even burgers and dogs, you can still fall back on your favourite reds to go with the meal knowing that you have at least tried to expand your wine repertoire! Next time you are barbequing pork ribs, try pairing them with a crisp semi dry Riesling. You will be amazed! z
