L’Academy esprime la vocazione di Diemme per la formazione, ma ne rappresenta anche l’evoluzione. In che modo?

Diemme ha da sempre fatto della formazione un suo punto di forza, supportando i propri partner italiani ed esteri in un percorso di crescita e sviluppo delle competenze in linea con un mercato in evoluzione.

Già nel 2009, con l’apertura dell’attuale sede aziendale, era stata creata un'aula di formazione rivolta a tutti i partner che intendessero approfondire il proprio know-how nel mondo del caffè. Il progetto dell’Academy, realizzato dieci anni dopo, rappresenta la naturale evoluzione di uno dei principi della filosofia aziendale.

Si tratta di uno spazio polifunzionale con cinque aule didattiche studiate ad hoc per supportare al meglio i diversi percorsi formativi dedicati ai professionisti e agli appassionati del mondo caffè e non solo.

The Academy expresses Diemme’s vocation for training, but it also represents an evolution. How does it do this?

Training has always been one of Diemme’s strong points, supporting the company’s partners in Italy and abroad in a path of growth and skills development in line with an evolving market.

With the opening of the current corporate headquarters in 2009, Diemme created a training room for all partners wanting to expand their know-how in the world of coffee. Ten years later, the Academy project is complete, and represents the natural evolution of one of the principles of the company’s philosophy. This multipurpose space has five classrooms designed specifically for our training courses dedicated to professionals, enthusiasts of the coffee world and others.

Quattro i materiali che “compongono” in maniera armonica la struttura del Centro di formazione e nei quali si trovano espressi i valori di Diemme: il legno, che rappresenta il legame autentico con la materia prima e l’attenzione per l’ambiente da cui ciascun caffè trae origine; il vetro, simbolo dell’atteggiamento trasparente e dell’ambizione al guardare “oltre”; il marmo, elemento di solidità, continuità storica e insieme di pregio estetico; infine l’acciaio, da associare alla “conduzione” e al trasferimento di conoscenza, ma anche alla flessibilità e alla personalizzazione del servizio.

Diemme Academy si estende in un’area di oltre 700 mq, adiacente e compenetrata agli spazi direzionali e produttivi della torrefazione, presso l’attuale Centro Diemme. Spazio indipendente e allo stesso tempo strettamente connesso all’azienda di cui è espressione, ne diventa anche luogo d’ispirazione attraverso l’attività di laboratorio, ricerca e training continuo.

Ciascuna sala didattica è attrezzata con macchine da caffè e tecnologie all’avanguardia, adatte allo svolgimento di specifiche attività formative e di laboratorio. In questi spazi il professionista può prendere parte sia a corsi creati su misura da Diemme, sia a tutti i moduli e livelli del Coffee Skills Program di SCA (Coffee Specialty Association) e del Latte Art Grading System.

La sala Barista è studiata per i corsi di caffetteria e latte art: con quattro postazioni indipendenti accoglie fino a 10 corsisti contemporaneamente; la sala Brewing è dedicata all’apprendimento delle tecniche di estrazione alternative all’espresso; la sala Roastery & Research, luogo di sperimentazione per eccellenza, è il cuore pulsante della Diemme Academy: al suo interno una tostatrice Giesen da 15 kg, utilizzata per tostare le selezioni di caffè di alto profilo della linea Gli Speciali – Diemme, continuamente in funzione per la ricerca di nuove miscele e monorigini.

Comunica con lo spazio di tostatura la sala Green: un’area adibita a deposito delle diverse e selezionate provenienze di caffè verde, in cui si può toccare con mano la materia prima, conoscerne gli aspetti botanici e i processi di lavorazione.

Nella sala Automatic, dedicata al caffè monoporzionato in capsule e cialde, si possono conoscere e testare macchine automatiche e super-automatiche ideali per uffici e aziende.

La sala Food & Pastry è invece pensata per quanti intendono arricchire la propria offerta con piatti veloci dolci e salati, bevande e cocktails, o che desiderano migliorare le proprie performance attraverso specifici corsi extra caffè.

Un’impostazione più divulgativa e d’intrattenimento si ritrova invece nell’area living di fronte al cavedio centrale: la struttura a vetri e l’illuminazione che filtra direttamente dall’esterno donano un’atmosfera suggestiva a questo spazio, ideale per ospitare durante tutto l’anno eventi culturali, serate a tema e degustazioni.

Tra tutti questi ambienti si susseguono diverse aree studio, con tavoli e comode sedute per gli appuntamenti business, e un’area libreria ricca di volumi e piacevoli letture, dove trascorrere anche qualche momento di pausa durante lo svolgimento delle attività.

Completa il progetto Diemme Academy un capiente Auditorium, la sala Finardi, adatta allo svolgimento di corsi di coaching & management, incontri e seminari di ampio respiro, pronta quindi ad accoglierne il numeroso pubblico.

Infine, la tecnologia di ultima generazione e le installazioni multimediali rappresentano inoltre un valido supporto all’attività formativa e al percorso esperienziale all’interno della struttura.

Diemme Academy covers an area of 750 m2, adjacent to and part of the coffee roasting and production facilities, at the current Diemme Centre. An area which is independent but at the same time closely linked to the company it represents, also providing a source of inspiration with its laboratory, research and ongoing training activity.

Each teaching room is equipped with cutting edge coffee machines and technologies, suited to specific training and practical activities. In these spaces, professionals can take part both in the Diemme tailored courses, and in all the modules and levels of the SCA (Coffee Specialty Association) Coffee Skills Program and Latte Art Grading System.

The Barista room is designed for the coffee bar and latte art courses: with four independent stations, it can accommodate up to 10 participants at a time; the Brewing room is dedicated to learning brewing techniques alternative to espresso; the Roastery & Research room, synonymous with experimentation, is the nerve centre of the Diemme Academy: it houses a 15 kg Giesen roaster, used to roast the high profile coffee selections in the Gli Speciali– Diemme line, operating continuously in the search for new blends and single origins.

The roasting area communicates with the Green room: an area for storage of the many different selected green coffees, where you can see the raw material for yourself, get to know the botanical aspects and processing phases, in addition to observing manual packaging of the roasted coffee.

In the Automatic room, dedicated to coffee in capsules and pods, automatic and superautomatic machines ideal for offices and firms can be viewed and tested. The Food & Pastry room is designed for those who wish to extend their product offering with quick savoury and sweet dishes, drinks and cocktails, or who wish to improve their performances via specific extra coffee courses.

The living area opposite the central lobby offers a more relaxed setting: the glass structure and the light that filters directly from the outside give this area great appeal, making it ideal for hosting cultural events, theme evenings and tastings throughout the year.

The teaching areas are interspersed with study areas, provided with tables and comfortable chairs for business discussions, and a well-stocked reading area, where participants can take a break from their course activities.

The Diemme Academy project is completed by a spacious Auditorium, the Finardi room, suitable for coaching & management courses, meetings and seminars of all kinds and equipped to seat large audiences.

Lastly, the latest generation technology and the multimedia installations provide a valid support for the training activity and the experiential path within the facility.

Gli spazi, dal gusto estetico ricercato, sono stati progettati sfruttando tutta l'esperienza dell’azienda, da oltre 90 anni nel campo della torrefazione e della gestione di locali. Un altro plus è legato alle tecnologie moderne di cui dispongono le diverse sale: grazie a un sistema di videocamere è addirittura possibile creare live streaming delle lezioni.

Anche l’area living incarna lo spirito di crescita culturale di Diemme: può essere il luogo ideale per appuntamenti di business o per piacevoli pause, magari sfogliando un libro scelto tra quelli di cui dispone la nostra libreria. Un’adeguata preparazione è alla base di qualsiasi attività imprenditoriale; riteniamo che il mercato richieda professionisti capaci di destreggiarsi in situazioni sempre più complesse e sfidanti; andando avanti coi tempi, la strada sarà sempre più in salita. Formarsi con passione sul mondo caffè è fondamentale ma non basta, occorre anche possedere conoscenze che riguardano la parte economica e gestionale. Ecco perché nella nostra proposta formativa abbiamo deciso di aggiungere corsi di food&drink cost e ottimizzazione del proprio business.

Si può parlare di una formazione “tailor-made” basata sui propri specifici obiettivi formativi? A quali figure professionali vi rivolgete?

Formazione per noi significa in primis mantenere costantemente aggiornati noi stessi, per poter a nostra volta garantire una proposta formativa attuale e credibile, rivolgendoci al professionista ma anche al grande pubblico.

Dal semplice coffee lover, al neofita che vuole entrare nel mondo Ho.Re.Ca., fino al manager che desidera approfondire determinate conoscenze, il target è davvero diversificato, così come lo è la nostra offerta, che, per certi corsi, si suddivide in livelli, dal base all'avanzato, a seconda degli obiettivi di ogni partecipante.

As the educational manager, how much and in what way do you believe that adequate preparation and specialisation are decisive factors for business in the Ho.Re.Ca. sector?

Adequate preparation is the basis of any business; we believe that the market needs professionals able to work in more and more complex and challenging situations; this will be increasingly difficult as time goes on. Although learning about the coffee world is essential, it is not enough; we need knowledge of economic and management aspects as well. That’s why we have decided to add food & drink cost and business optimisation courses to our offering.

So, your courses are "tailor-made" to specific educational goals? What professionals

In base alla tua esperienza, quali sono i prossimi scenari del mondo caffè in via di affermazione?

Guardando al mercato attuale, mi rendo conto che da un lato troviamo il bar generalista, che punta su un'offerta "di quantità", dall’altro, il locale specializzato. Quest’ultimo si contraddistingue per l’attenzione che ripone nella selezione dei prodotti e per la sua capacità di “fare cultura”, trasmettendola al consumatore finale attraverso il valore della propria offerta.

Ritengo probabile che nel locale specializzato del futuro – se si affermerà in modo più consistente anche in Italia – potrebbero prender piede tendenze già consolidate in altre parti del mondo, quali la possibilità di creare e acquistare la propria miscela di caffè (come avviene già nei nostri Caffè Diemme Italian Attitude) o l’estensione del caffè a ingrediente per aperitivi (ad esempio in cocktail a base bitter e cold brew). Insomma, una tipologia di locale che pone le basi per un consumo più creativo, consapevole e curioso.

We believe that we also need to stay current so we can ensure our training proposal is up to date and credible, for both professionals and the general public. From the coffee lover to the neophyte who wants to enter the HoReCa world to the manager looking to expand certain knowledge, we have a very diverse target, and a very diverse offer, with some courses divided into levels, from basic to advanced, according to each participant’s objectives.

Based on your experience, what can we expect to see soon in the coffee world?

Looking at the current market, I realize that we have both generalist coffee shops based on "quantity", and more specialised establishments. The latter stand out for their attention to the selection of products and for their ability to "create a culture", transmitting it to the final consumer through the value of their offer.

I think it’s likely that in the specialised establishments of the future—if they become better established in Italy as well—we could see trends that are already established in other parts of the world, such as the ability to create and buy your own coffee blend (as is already the case in our Caffè Diemme Italian Attitude coffee shops) or the extension of coffee with ingredients for cocktails (e.g.in bitter and cold brew cocktails). Basically, a type of establishment that lays the foundations for a more creative, aware and curious consumption.

Granita Superiore: un'idea per l'estate

INGREDIENTI PER 1 KG DI PRODOTTO:

Infuso: 500ml di acqua oligominerale + 100gr Caffè Superiore Torrefazione Dubbini Zucchero bianco: 150g

Acqua oligominerale: 250ml INGREDIENTS PER 1 KG OF PRODUCT:

Infusion: 500 ml of natural water + 100 gr Caffè Superiore Torrefazione Dubbini White sugar: 150 g

Natural water: 250 ml

the following steps: boiling water and coffee for about 5 minutes, taking care the coffee does not stick to the bottom; filtering the solution for at least 2-3 times by using a finely meshed strainer.

At this point let the infusion cool; once cold, the recipe can be made by combining infusion, white sugar and water. Coffee granita can be made both at home and in the laboratory following these little precautions.

IN THE LAB: The mixing and cooling of the ingredients are done by using a preferably vertical batch freezer. It is required to control the time of execution and the speed of the batch freezer, (till the maximum of 8 min; time can vary depending on the size of the batch freezer and the method of whipping). Room temperature will need to reach -3 / -4 ° C (extraction temperature of granita).

AT HOME: Once the ingredients are mixed together, put the mixture in the freezer and go through this sequence: remove after about 1 hour (the waiting time can vary depending on the the freezer efficiency) and mix with a spatula breaking the ice, put it in the freezer again, after 1 hour take it out and break the ice again. Do it again for 5-6 times. Once the granita is done, preserve it at -5 ° C. A CASA: Una volta uniti gli ingredienti, mettere il composto in congelatore e ripetere questa sequenza: togliere dopo circa 1 ora (il tempo di attesa può variare a seconda dell'efficienza del congelatore) e mescolare con una spatola rompendo il ghiaccio formatosi, mettere nuovamente in congelatore, dopo 1 ora tirare fuori e rompere nuovamente il ghiaccio… così via per 5-6 volte. Una volta ottenuta la granita conservare a -5°C. ALCUNI SUGGERIMENTI: La granita può essere impreziosita, una volta versata all’interno del bicchiere o coppa, aggiungendo zenzero grattugiato, panna montata e chicchi di caffè.

LA PREPARAZIONE DELL’INFUSO: A partire dal caffè macinato grossolanamente si esegue un’infusione a caldo che consiste nei seguenti passaggi: - far bollire acqua e caffè per circa 5 minuti con particolare attenzione che il caffè non si attacchi sul fondo; - filtrare il tutto per almeno 2-3 volte utilizzando un colino a maglia fine.

A questo punto lasciar raffreddare l’infuso; una volta freddo può essere composta la ricetta unendo infuso, zucchero bianco e acqua. La granita al caffè può essere realizzata sia a casa che in laboratorio, seguendo queste piccole accortezze.

PASSIONE SPECIALTY: l'importanza della tostatura artigianale, un viaggio sensoriale alla ricerca dell'eccellenza di Matteo Manuzzato Green & Roasted Coffee Master

Nel raccontare i caffè specialty non possiamo trascurare i temi legati alla tostatura degli stessi: l’emozione che scaturisce dall’idea che le nostre scelte possano determinare un profilo di tazza con determinate caratteristiche rispetto ad altre, di volta in volta rappresenta l’aspetto più affascinante per tutti coloro che, come me, hanno l’opportunità di tostare in modo artigianale il caffè di alta qualità.

Di fatto, trasformare la materia prima conferendole profumi e sapori unici e inimitabili, in qualche modo ci fa sentire dei veri e propri chef che, con la giusta attenzione, concentrazione e conoscenza, possono esaltare al massimo le caratteristiche organolettiche del caffè.

Ed è proprio questa ambizione che ci spinge a ricercare ogni volta il giusto profilo

magicamente con il passare del tempo cambia aspetto, si trasforma da verde a giallo, fino a raggiungere la “classica” colorazione marrone che tutti conosciamo.

Tutto questo processo d’imbrunimento stimola i sensi dell’olfatto dando vita a profumi unici, apprezzabili al massimo solamente vivendo a stretto contatto con la tostatrice. Anche l’udito è coinvolto in chi, come me, ha la fortuna di vivere quotidianamente questo processo: per me la tostatrice, più che “rumori”, produce suoni rivelatori di come stia cambiando anche la struttura molecolare del chicco.

In altre parole la tostatura artigianale è un’esperienza in grado di coinvolgere tutti i nostri sensi: tatto, olfatto, vista e udito durante la fase di tostatura, nonché il gusto, al termine della stessa, che ci permette di valutare il risultato del nostro lavoro.

Questo processo assume connotazioni ancor più affascinanti grazie

di tostatura: la consapevolezza che con il nostro lavoro potremo esaltare o al contrario rovinare l’attento e accurato lavoro dei produttori nei Paesi d’origine.

L’utilizzo di una tostatrice di piccole dimensioni, nel nostro caso una Giesen da 15 kg, ci permette di controllare il processo di trasformazione, apprezzando le reazioni del nostro chicco di caffè, che

all’ambiente in cui è svolto, cioè all’interno della nostra Academy e in particolare nella sala Roasting and Research, dove abbiamo modo di studiare quotidianamente nuovi profili di tostatura, valutare nuove origini, concepire nuove miscele e respirare nuovi profumi in uno spazio capace di raccontare e trasferire tutta la nostra passione.

SPECIALTY PASSION: the importance of artisan roasting, a sensory journey in search of excellence

by Matteo Manuzzato – Diemme Green & Roasted Master Roasting is a key element in speciality coffees: the excitement of knowing that our choices can determine a cup profile with certain characteristics rather than others is the most fascinating aspect for all those, like me, who are lucky enough to be able to roast high quality coffee using artisan methods.Transforming the raw material, giving it unique incomparable aromas and flavours, somehow makes us feel like

chefs who, with the right attention, concentration and knowledge, can enhance the organoleptic characteristics of the coffee to the highest degree.

And it’s this ambition that drives us each time in search of the right roasting profile: the awareness that with our work we can enhance - or, 8 6

on the contrary, spoil - the careful and accurate work of the producers in the countries of origin.

The use of a small roaster, in our case a 15 kg Giesen, enables us to control the transformation process, witnessing the reactions of our coffee bean, which magically changes colour over time, from green to yellow, until it takes on the “classic” brown colour we all know .

This browining process stimulates the senses of smell, creating unique aromas which can be fully appreciated only by living in close contact with the roaster. Hearing is also important for those, like me, who are fortunate enough to experience this process daily: for me, the roaster produces not noise but sounds that also reveal how the molecular structure of the bean is changing.

In other words, artisan roasting is an experience that involves all our senses: touch, smell, sight and hearing during the roasting phase and, at the end, taste which enables us to assess the result of our work.

This process becomes even more fascinating as it takes place in our Academy, in particular in the Roasting and Research room where we are able to study daily new roasting profiles, assess new origins, conceive new blends and breathe new aromas in a space that can recount and transfer all our passion.

NON SOLO ESPRESSO • NOT JUST ESPRESSO

ESTRAZIONI ALTERNATIVE

MOKA: UN'INVENZIONE TUTTA ITALIANA Rappresenta il sistema più diffuso in Italia per l’estrazione domestica, almeno una è presente in quasi tutte le case italiane, per tradizione. Stiamo parlando del caffè filtro più amato e conosciuto dagli italiani: la moka.

Risultato in tazza: si ottiene un caffè piuttosto corposo e ricco di aromi.

Processo: Il design può cambiare, ma il principio di funzionamento resta lo stesso: l’acqua contenuta nella base si scalda, la pressione del vapore a circa 2 atmosfere la spinge in alto attraverso il caffè macinato e fuoriesce la classica bevanda scura che noi tutti conosciamo. La pressione raggiunta con questo metodo è leggermente superiore a quella atmosferica, sicché è possibile raggiungere temperature più alte che con altre caffettiere, tra cui la napoletana.

Le origini della Moka: è un’invenzione italiana di Alfonso Bialetti del 1933. Il nome rimanda alla città di Moka, nello Yemen, rinomata per la qualità del caffè.

Come preparare il caffè con la Moka: riempire il serbatoio con acqua preferibilmente calda fino alla valvola, inserire il filtro metallico e riempirlo con caffè macinato senza pressarlo all’interno. Chiudere la caffettiera e posizionarla sul fuoco, a fiamma bassa. Quando il caffè sarà completamente uscito spegnere il fuoco e lasciar riposare qualche istante. Mescolare il caffè prima di versarlo.

MOKA: A QUINTESSENTIALLY ITALIAN INVENTION It’s the most commonly used system in Italy for domestic coffee making. Traditionally, almost all Italian households have at least one; we’re talking about the moka pot, the filter coffee machine best loved and most widely used by the Italians.

Result in the cup: it produces a full-bodied coffee rich in aromas.

Process: the design can vary, but the operating principle remains the same: the water contained in the base is heated, the pressure of the steam at roughly 2 atmospheres pushes it upwards through the ground coffee, resulting in the classic dark beverage we all know. The pressure reached with this method is slightly higher than the atmospheric pressure, so higher temperatures can be achieved than with other coffee makers, including the Neapolitan flip coffee pot.

The origins of the moka pot: it was invented by the Italian Alfonso Bialetti in 1933 and named after the city of Mocha, in Yemen, renowned for the quality of its coffee.

How to brew coffee with the moka pot: fill the base with water, preferably hot, up to the valve, insert the metal filter and fill it with ground coffee, without compacting it into the filter. Screw the upper part of the pot tightly onto the base and place on a low-flame burner. When all the coffee has come up, turn the burner off and leave to rest for a few moments. Mix the coffee before pouring.

For them, Diemme Industria Caffè Torrefatti has developed a range of different blends and single origin coffees, each with a marked flavour and aroma. All these unique characteristics, enhanced by a new dynamic image, are the result of the professionalism and aesthetic sense which has always distinguished Diemme coffee roasting.

Origin and evolution of the brand The “Artisti del Caffè” brand originated in Verona, a splendid city of culture with excellent food and wine traditions.

It was conceived by Sergio, an enthusiastic young master coffee roaster, who began his career as the owner of a coffee bar and then dedicated his professional life to studying the characteristics of coffee and the different ways of brewing and enjoying it.

His encounter with Diemme then transformed a brilliant individual intuition into an opportunity for growth and expression of his style in the Ho.Re.Ca. channel. The solidity of the company, operating in the coffee roasting sector since 1927, and its broad vision, due to its international experience and the direct management of coffee bars, enables it to renew the brand image, at the same time boosting production and the dependability of the service. Diemme is now a modern industrial complex able to combine the best Italian coffee traditions with innovative market trends, resulting in novel interpretations of the coffee sector. La selezione diretta della materia prima e i test di assaggio eseguiti nel laboratorio Diemme, uniti all’arte della torrefazione che l’azienda pratica dal 1927, hanno permesso di ottenere dei prodotti che spiccano per la loro identità, mantenendo allo stesso tempo un buon rapporto qualità/prezzo.

Cinque le armonie di gusto e aroma ispirate, nel carattere grafico e nel profilo in tazza, alle maggiori correnti artistiche dell’epoca moderna e contemporanea: Déco, Liberty, Rococò, Naif, Pop. Una panoramica che esplora varie personalità e punti di vista, evocando attitudini artistiche quali la pittura, la scultura, la danza, il cinema e la musica.

A ciascuna miscela di caffè vengono perciò associati i tratti predominanti di quel particolare stile artistico: le trame geometriche e preziose dell’Art Déco, la flessuosità naturale dello stile Liberty, gli ornamenti leggeri e curvilinei del Rococò, l’intensità cromatica e le forme semplici dell’arte Naif, l’iconografia immediata e un po’ eccentrica del mondo Pop. Un mood esotico e vivace caratterizza invece la monorigine in grani Tanzania: una varietà di caffè Arabica lavato di ottima qualità, in grado di offrire un viaggio esplorativo attraverso i sentori unici della regione africana, che è anche una delle zone più antiche in assoluto per la produzione di caffè.

La gamma è completata da un barattolo di caffè macinato da 250 g, ideale per l’estrazione con la moka e pensato quindi anche come proposta al cliente di consumo domestico.

DIEMME: MEETING DI DUE GIORNI PER IL BUSINESS NEL MONDO CAFFÈ

Nei giorni 7 e 8 febbraio 2019 si è svolta la prima Diemme Academy Coffee Conference, l’evento business a cui hanno preso parte i partner esteri di Diemme Industria Caffè Torrefatti.

Palcoscenico di questa intensa “due-giorni” è stato proprio il nuovo centro formativo Diemme Academy, che con l’occasione è stato presentato agli interlocutori internazionali dell’azienda.

Lo spazio funge anche come luogo privilegiato per l’accoglienza, la condivisione dei valori e del know-how aziendale con i partner, dunque come motore di business sul mercato Ho.Re.Ca. a livello globale.

Al consueto caffè di benvenuto è seguito il discorso introduttivo e la visita guidata dell’Academy da parte del presidente e AD di Diemme Giannandrea Dubbini. Nel corso delle due giornate si sono poi susseguiti speech, interviste e momenti di confronto su temi attuali, spaziando dall’equipment all’importanza dell’acqua in caffetteria, dalle nuove sfide poste dal mercato internazionale alle strategie di sviluppo condiviso.

Diversi i nomi illustri nel panorama del caffè intervenuti alla convention, tra cui l’italiano Maurizio Giuli, presidente UCIMAC e Direttore Marketing & Comunicazione Nuova Simonelli, e Yannis Apostolopoulos, Direttore Esecutivo SCA, oltre ai rappresentanti delle aziende partner di Diemme all’estero, che hanno condiviso con i presenti la loro storia di successo. Diemme ha inoltre presentato in anteprima i nuovi progetti dedicati al mercato internazionale, tra cui la nuova linea retail “I Viaggi di Caffè Diemme" e, con il contributo di Davide Cavaglieri, Campione Italiano Baristi 2018, ha posto un focus particolare sul progetto di affiliazione alla catena di caffetterie Caffè Diemme Italian Attitude.

Diemme: two-day meeting for the coffee business On february 7-8 2019, Diemme Academy Coffee Conference, the business event with participation of the foreign partners of Diemme Industria Caffè Torrefatti, was held in Diemme.

The stage for this intense two-day event was

the new Diemme Academy training centre, in fact the meeting was also an opportunity to present the new centre to the company’s international partners. The area also acts as a centre for hospitality, and for sharing the values and know-how of the company with its partners, and therefore as a business drive on the Ho.Re. Ca. market at global level.

The usual welcome coffee was followed by the opening speech and guided tour of the Academy by the Chairman and CEO of Diemme, Giannandrea Dubbini. Over the two days, a succession of speeches, interviews and discussions were held on topical themes, comprising equipment, the importance of water in coffee making, the new challenges posed by the international market and shared development strategies.

Various well-known names on the coffee scene took part in the convention, including the Italian Maurizio Giuli, chairman of UCIMAC [trade association] and Marketing & Communications

interpretations.

“Artisti del Caffè” therefore represents a response to the aspirations of baristas and coffee bar owners, bringing out their particular individual characteristics, and providing a credible up-to-date image. While Sergio continues to work with Diemme and its partners as Coffee Master, the new “Artisti del Caffè” offer the public their interpretation of one of the most widespread and best-loved drinks in the world.

The range: a multiplicity of unique styles The different characters of “Artisti del Caffè” are represented in a wide range of blends and single origin coffee beans, available in 1 kg packs.

Direct selection of the raw material and the tasting tests performed in the Diemme laboratory, combined with the art of coffee roasting, the company vocation since 1927, have enabled it to obtain products that stand out in terms of identity, while at the same time maintaining good value for money.

Five modern and contemporary artistic movements - Deco, Art Nouveau, Rococo, Naïve and Pop – inspire different harmonies of flavour and aroma and are reflected in the graphics and profile in the cup. A panorama that explores various personalities and points of view, expressing different art forms such as painting, sculpture, dance, cinema and music.

Each coffee blend is therefore associated with the main features of one particular artistic style: the precious geometrical lines of Art Deco, the natural sinuosity of Art Nouveau, the light curvy ornamentation of Rococo, the chromatic intensity and simple forms of Naïve art, the direct and slightly eccentric iconography of the Pop world.

An exotic lively mood characterizes the Tanzania single origin beans: a variety of washed Arabica coffee of excellent quality, taking you on an exploratory journey through the unique scents of this African region, which is also one of the oldest coffee producing areas.

The range is completed by a 250 g tin of ground coffee, ideal for brewing in the moka pot and therefore also created for home consumption.

Because somehow, deep down, we are all Artists – and Creators – of the coffee we drink.
