Located within the Ovolo Hotel, Alibi offers an incredible menu created by plant-based chef Matthew Kenney. Kenney’s food philosophy is simple, “clean eating need never compromise on taste”
This evening started with one of their signature cocktails, The Godfather Thompson. A mix of Laphroaig 10-year-old scotch whiskey, barrel aged whiskey bitters, angostura bitters, orange and liquid nitrogen. Wait for the liquid nitrogen to evaporate, then pour the mixture in to your glass. Very tasty.
As a true carnivore I wasn’t sure what to expect from a planet-based menu. But fear not, these dishes are amazing. Full of flavor, texture and well seasoned. If fact after only a few bites I forgot for a moment that there was no meat. My favorites, Kimchi Dumplings and the Lasagna.
Vegetarian or not, you must give Alibi a try while staying in Sydney.

Spice Alley is tucked out of the way behind the Kensington Street lane way in the Chippendale district.
This street food meets lane way open air food court takes you on a culinary journey through a variety of Asian cuisine. Dine on Singaporean dishes at Alex Lee Kitchen, Bang Luck Thai Street Food, Old Jim Kee’s Malaysian spices and Cantonese street food from Hong Kong Diner and that will just get you started. But before you dig in, venture on down the street to Handpicked Cellar Door and grab a bottle of your preferred wine. For me, nothing pairs better with Beef Rendang and Roti than a Margaret River Merlot.
Also, make sure you place an order at Shanghai Dumpling Bar. This new addition to the Spice Alley group prepares some of the most delicious dumpling I’ve eaten. Handmade in unique flavored pastry including pumpkin, spinach and beetroot these dumplings can be cooked potsticker style or boiled. Either way, you will leave wanting more.
Top of the list for most people, the Sydney Opera House. I was no different, and the best way to view this landmark is from what is one of the most beautiful harbors in the world. Head down to Circular Quay, there you will find dozens of harbor cruise boats. Or if you want something more person try Sydney Harbour Boat Tours (sydneyharbourboattours.com). They offer 3-hour harbor cruises, or you can charter the boat for the day. With a day charter you can tour the harbor, stop for a catered lunch on a secluded beach and then watch the sunset with champaign and canapés.
In for a little adventure, try the Bridge Climb and get an amazing 360 degree view of Sydney. The Royal Botanic Garden, Sydney Opera House, Hyde Park, Australian Museum and Art Gallery of New South Wales all within walking distance and well worth the short stroll.
Don’t forget the famous Bondi Beach. Just a short cab ride from downtown this beach is an incredible. If your up for a swim stop by the Bondi Icebergs POOL and do a few laps in what is likely the most photographed pool in the world. For those not splashing around in the ocean, Bondi Beach has lots of shops and restaurant, something for everyone.

Malaysia: Trekking Borneo & Beyond: Borneo is home to some of the most diverse and beautiful wildlife in the whole of South East Asia. Start with a visit to majestic Mt Kinabalu, before heading to the pristine Danum Valley. A nature lover’s paradise, whose beauty and animals are equaled only by Sarawak and the World Heritage Mulu National Park with its immense cave system and the oldest rain forest in the world. Come face to face with Orang-utans at the Sepilok Sanctuary, stay at a bamboo longhouse in Sabah on a tea plantation, and finish the trip relaxing at the beach for a chance to spot the elusive Irrawaddy dolphins.
5Uzbekistan: Uncover the Silk Road: This journey to the heart of Central Asia will take you back to a time across the centuries. Explore the city of Bukhara, which is home to 900 monuments, jeweled colored domes and fascinating Islamic architecture. One of the city’s great landmarks is the Kalyan minaret, known as the death tower, where apparently many an unfaithful wife met a dreadful end. Spend a night in the desert by staying in a traditional Yurt camp and be regaled stories of the local culture by Kazakh nomads. Travel to Samarkand, the jewel of the ancient and modern Silk Road, and still a major trade center of textiles, carpets and works of art in this fascinating country.
6Madagascar: Wildlife Paradise: The wildlife of Madagascar is one of the island’s main attractions, and its chief superstar is undoubtedly the lemur with over 70 species spread throughout. Quite a number of the native animals cannot be found anywhere else in the world, such as the Grandidier Mongoose, Appert’s Greenbull and the Crested Ibis. There’s a chance to see the rare Indri, the largest lemur in Andasibele, while in the cloud forest of Ranomafana National Park, catch a glimpse of the elusive rare Golden Bamboo and Greater Bamboo Lemurs. Madagascar also boasts some glorious coastlines, so relax on their white powdery beaches, go snorkeling or a take simple stroll on the sand.
Macedonia: Cultural Journey: A lesserdiscovered cousin of the Balkans, Macedonia has an intense history where influences from the East and West collide. It is famous for ancient civilizations, UNESCO world heritage monasteries and the vibrant cities of Sofia and Skopje. Ottomans, Communists and Romans left their mark during their occupation, which subsequently imprinted many contrasts across the cultural landscape of this country. This Baltic state is also rich in nature with a multitude of national parks, waterfalls, and famous wine regions, and travelers will sample locally grown Macedonian wine in the city of Tikvesh. Foodies will also enjoy discovering the coffee culture in Bitola, and the role it has had on the city in the last few centuries. 8
Italy: Walking the Francigena Way: AAs trail tourism increases in popularity, The Francigena Way should be next on your list to conquer. This historical journey has been walked by thousands of pilgrims, and was once the route from Canterbury to Rome. It begins in the beautiful city of Orvieto, before walking through Tuscia Laziale, an agricultural region of fields, olive groves and volcanic lakes. Following the ancient Via Cassia, pass through beautiful villages such as Montefiascone, also known as the city of Popes and for its fine wine. Many medieval cities and monasteries fill this path, including thick forests of oaks, abbey ruins, and secluded communities. The journey ends in the Eternal City of Rome.

West Greenland: Discover Disko Bay: Polar expeditions have grown in popularity over the years, as people want to see glaciers and icebergs in all their glory. This arctic expedition takes a unique spin as it also journeys into local Inuit communities living on the western coast of Greenland. Travelers have the opportunity to delve into the local culture within the icy seas. No journey in Greenland would be complete without a visit to the impressive Ilulissat Icefjord, a UNESCO World Heritage Site. There’s a vast amount of Arctic wildlife on this route, and the best whale watching can be done on Disko Island, as its surrounding waters are home to the humpback, fin, and minke whales.

Sudan: Desert Explorer: An underrated destination compared to other African nations, Sudan is slowing gaining momentum as an unchartered destination to visit. It has vast red deserts and believe it or not, a large number of ancient pyramids. Built by the rulers of the Kushite kingdoms, they are smaller compared to Egyptian pyramids and are extremely well preserved. The best part is, there are hardly any tourists around so your chances of taking an unobstructed photograph of a pyramid is extremely high. Explore the Temple of Soleb, and capture images of colonial style railway stations still reminiscent of British architecture in the middle of the desert. On top of that, camp under the stars and visit Nubian villages in this out of the way itinerary.

Australia is blessed with hundreds of picture postcard scenes and Instagram worthy lookouts. If you want to avoid the crowds however, and see some of Australia’s most beautiful places, you need to look a bit beyond the icons. Here are 6 of my favorites...
Situated on the beautiful and laid back Fraser Island just off Queensland’s Sunshine Coast is Lake Mackenzie. A perched fresh water lake, it boasts crystal clear water and sparkling white sands. It is perfect for swimming and snorkeling. Fraser Island is accessible by ferry from Rainbow Beach and the nearby township of Hervey bay. Fraser Island is a popular four wheel drive and recreation destination and is Australia’s biggest sand island. Personally I love Fraser Island and I have visited there often. I actually began my career as a guide on Fraser Island driving day tours from the nearby town of Noosa. The best time to visit Lake Mackenzie is before 12pm or after 3pm as it can get quite busy. And you must dive down and see the small turtles swimming close to the sandy bottom.
Along Tasmania’s North East coast is The Bay of Fires. Dominated by sandy white beaches, aqua blue water and huge granite boulders the region is simply stunning. The granite boulders are covered in Orange lichen giving a sharp contrast to the surrounding area. You can walk for miles along secluded beaches free of people giving you the feeling that you are the only one there. I lived in Launceston in the northern part of Tasmania for 3 years so I visited this region frequently. On your way to or from the Bay of Fires you should stop in at the Bakery at the small village of Campbelltown. Australia is well known for its meat pies and the pies from this small bakery are certainly up there with the best in Australia. You can access The bay of Fires via the nearby town of St Helens. If you are feeling adventurous try the 4 day walk.
The Glass House Mountains are a group of awe inspiring hills that rise abruptly from the hinterland of the Sunshine Coast, just north of Brisbane. The mountains were actually named by Captain James Cook as he sailed past in them in 1770 as their sheer sides gave an appearance of an English Glass House. The mountains are actually part of a volcanic plug and are now heritage listed as they are so significant to the local area. The views from the top are incredible and best viewing times are at sunrise. The pick is the scenic lookout within the Beerburrum State Forest or if you are feeling more adventurous you can explore one of the many local walking tracks. I have actually completed the walk to the top of Mount Ngungun. This walk is not for the feint hearted and literally goes straight up the side of Mount Ngungun for about half a mile. The other technicality is that I completed the walk in complete darkness as I climbed to see the sunrise. At any time of the day the walk is absolutely worth it but if you are not completely confident in negotiating rocky slopes I would recommend climbing this section during the daylight hours.
Situated on the South Coast of New South Wales, around a stunningly scenic 2.5 hour drive from Sydney along the aptly named Great Scenic Way is Jervis Bay. Famous for its glacier white sand and clear turquoise water, Jervis Bay is a favorite for locals. Unspoiled coastal and country villages feature local produce and arts and craft markets, boutique shops and galleries. This place was a favorite for some of my family members who have been visiting for well over 20 years. I have often joined them with my kids in tow and I must say this is a simply stunning and family friendly destination. If you walk down to the edge of the St George Basin at dusk you can often see the strange phenomenon of what looks like kangaroos hopping on water. Kangaroos go down to shore line to snack on the abundant seaweed that washes ashore. Often they may be standing in a couple inches of water some meters off the dry land. So when startled they hop off and give the impression of hopping on water as they make their way through the shallow water. The area is also teeming with other wildlife including kangaroos, wallabies, echidnas and wombats as well as resident dolphins within Jervis Bay itself. Huskisson or Sussex Inlet are the stand out towns to stay and feature great cafes, restaurants, country pubs and a vast range of accommodation options. Nearby you can also visit the well known areas of Kangaroo Valley, Kiama and Mollymook.
The second largest but most spectacular National Park in Western Australia is the Karijini National Park. Located in the Hamersley Ranges of the Pilbara region, the park is located just north of the Tropic of Capricorn and 600 miles North West of Perth. Karijini is well known for its eye catching geological features and rich deep outback colors. Immerse yourself amongst the ancient geological formations and you suddenly feel awestruck at the red layered cliffs that line the spectacular gorges eroded by nature over billions of years. I made the trek to the Pilbara a few years ago and the long drive in at some stages felt like we were never going to arrive. But once we did the travel time in was never in question. It was a hot day and we headed straight to the Spa Pool, a natural rock pool to swim. To say this was one of the most amazing places that I have swum is an understatement. And pictures just don’t do it justice, you have got to get there. This part of Australia is quite hard to access and wont suit everyone but it is in incredibly beautiful and worth the effort. The National Park and surrounding area is nothing like anything I have experienced ever before. The Pilbara’s gum trees, termite mounds and expansive plains give way to picturesque gorges, refreshing waterfalls and the emerald waterholes.
Zebedee Springs are located in the El Questro Wilderness Park, in the Kimberly Region of Western Australia. Zebedee Springs are a number of natural thermal springs that sit at the base of sheer sandstone cliffs and are constantly heated at around 36 degrees Celsius or around 100 degrees Fahrenheit. The Kimberly is on many people’s bucket list of things to do and see while in Australia but visitation is very low. There are many ways to see and experience the Kimberly and I had the incredible pleasure of driving along The Gibb River Road from Kununurra to Derby some years ago. To really engage with the destination, driving the Gibb River Road is by far and away the best way to go. I was able to visit Zebedee Springs which were quite hard to find but once located very easy to get to. The best time to go is before 12pm and pack some drinks and snacks and stay a while. The springs are often closed for sole use of guests staying at El Questro in the afternoon. You will discover a pure oasis in the middle of a dry desert region as you take the short walk from the nearby car park. Sit back and relax and take in the contrasting lush tropical rain forest. Not easy to find or get too but it wouldn’t be special if it was.

My first thought of Berlin was a war-torn city with a divided past. That may be its legacy but not the present reality. Creative – architecturally, artistically, and musically best describes Berlin today.

I have visited the Memorial to the Murdered Jews of Europe several times; yet, I return again and again. I am always struck by its simplistic beauty and historical significance.
Street art can be found throughout Berlin, especially the Kreuzberg area. Home to creative types, the reminder is everywhere. No visit to Berlin is complete without experiencing this one-of-a-kind neighborhood.
Perhaps the most famous mural depicts Soviet leader Brezhnev and East German President Honecker in full embrace. Painted by Dmitri Wrubel, the slogan reads, “My God Help me to Survive this Deadly Love.”
Art in Berlin is taken to a completely different level, literally! World famous artists create largescale masterpieces throughout the city. The skyline is ever changing with new installations.
This nondescript alley near the Hackescher Market is home to lively bars and colorful graffiti. Seats are often hard to find but there’s ample room to stroll and admire the art.
Berlin likely has the largest number of iconic buildings by the world’s most prominent architects. Along with street art and sculptures, electronic music, and graphic design firms, Berlin is undoubtedly Europe’s creative capital.
The central train station personifies the essence of Berlin. With its light-filled contemporary design, colorful visual displays, and boundless energy.
Built in 1957, the House of World Cultures stands the test of time as an architectural marvel. The Henry Moore sculpture in the reflective pool was too much to pass up for this architecture-loving photographer.
Berlin is often recognized for its music and art scene; however, contemporary architecture clearly plays a major role in defining the city. Even government buildings are noteworthy for their design.
Molecule Man, by Jonathan Borofsky, is a 100 foot tall (30 meters) sculpture rising out of the Spree River. Art abounds in the most unexpected locations – even the river!
Berlin’s electronic music scene is universally recognized; however, talented musicians perform all genres of music on street corners, train stations, and many other gathering places. Love that battery-powered megaphone!

Follonico is a unique country house offering an authentic and relaxed Tuscan experience. For those who want to escape the rush, take a slower journey into the heart of Southern Tuscany. Six beautifully restored suites have been created with utmost respect for the history and environment surrounding Follonico.
Each morning, delicious, seasonal ingredients are lovingly harvested from Follonico’s land. Fresh veggies are gathered from the kitchen garden, organic eggs collected from the freerange hens and ducks (...well, sometimes they strike and we need to find alternatives) and home-baked sourdough bread is served warm, straight from the farmhouse kitchen.
The hillside where Follonico gently rests has been transformed over time into an enchanting natural environment for guests to enjoy. Abundant borders of lavenders and aromatic plants give the garden a touch of romance, whilst climbing roses, jasmines and honeysuckles clamber along ancient stone walls and fill the air with the heady scents of Tuscany. Terracotta pots are planted with Michaelmas daisies, sedums and lilies. Natural borders of rosemary and sage sweep across the land, gently dividing the surrounding gardens into al fresco rooms.
Enjoy the many secluded corners of the gardens where you can relax with a good book or watch the sunset over the hills and valleys of Montepulciano. Savor a glass of Brunello under the shade of a Wisteria laden pergola or simply spend a lazy day under the gentle warmth of the Tuscan sun.

In early May, Hawaii’s Kilauea volcano began erupting, dramatically spewing out lava bombs, spurting huge plumes of ash and volcanic smog, and oozing out so much lava. Mike Perea was there to capture this event came away with some very compelling images.
Lava enters the ocean in Kapoho Bay, creating brand new land. This is exactly how the Hawaiian Islands were created. Violent, destructive, yet very beautiful.

Eco-conscious guests can join a waste-free Yellowstone wildlife safari in 2019
Natural Habitat Adventures is spearheading the world’s first zero waste trip—a travel-industry first. On the July 6-12, 2019 departure of Safari America: Yellowstone Country, 14 travelers will join this pioneering endeavor in which Nat Hab’s goal is to divert (refuse, recycle, compost, upcycle, or reuse) 99 percent or more of all waste produced as part of Nat Hab sponsored trip operations.* With the World’s First Zero Waste Adventure, Nat Hab aims to fit all waste produced on the trip into a single small container at the end, nearly eliminating the need to send any materials to a landfill or incinerator.
Trip leaders will encourage travelers to refuse potential waste whenever possible, such as declining disposable straws or individually packaged condiments, minimizing the waste they produce along the route while in vehicles, lodges and camps throughout the Greater Yellowstone Ecosystem.
The company has devised various strategies to limit trash: providing travelers with a zero waste toolkit that includes personal reusable items such as water bottles, mugs, cutlery and tote bags; transporting packed meals in reusable containers; recycling single-use packaging, including
hard-to-recycle items through TerraCycle; composting napkins and biodegradable food waste; and buying food in bulk. Waste reduction begins even before the trip starts, with travelers receiving digital versions of all pre-trip materials, including forms to complete and the daily itinerary.
While realizing this zero waste goal won’t be easy, Nat Hab is committed to setting a new standard for the travel industry. By demonstrating that it is possible to operate a zero waste adventure, the company hopes to motivate other operators to improve their own waste management practices
and pursue similar innovations. Nat Hab also expects to learn lessons the company can apply across its other trips in destinations worldwide.

travelers with refillable stainless steel water bottles, replacing disposable plastic bottles across all operations. And it is currently achieving major strides in reducing the use of plastic straws. By August 2018, 67 percent of Nat Hab trips were plastic-strawfree, and the company is on target to eradicate plastic straws from at least 90 percent of its trips by the end of the year, with a goal of eliminating them entirely in 2019.
