1. Trim back the trimmings. Go all out and deck the halls with boughs of holly, glitter, and lights, but when it comes to holiday food, accessorize with care. To shave calories, go easy when adding nuts, cheese, cream sauces, gravy, butter, and whipped cream -- additions that don’t add much to the meal, but can add plenty to your waistline. Trim calories wherever you can so you leave the party feeling satisfied, but not stuffed, recommends Carolyn O’Neil, MS, RD, author of The Dish on Eating Healthy and Being Fabulous.
2. Wear snug clothes and keep one hand busy. When you wear snugfitting attire, chances are you’ll be too busy holding in your stomach to overeat. While you stand around looking posh in your holiday finery, See Holiday Page 10

The Art of Collecting By Mary Mack, Proprietor Red Piano Too Art Gallery
Getting Started
The first, and most important step to becoming a collector is to love what you collect. Especially when buying art, make sure that the work of art touches you. If your heart begins to race and you start to feel a warm sensation all over… do not panic. It just means that this is the piece for you. Take into consideration that this work of art will most likely hang in your home for a long time. Find that piece that you will never tire of… a work of art that will bring a smile to your face on the gloomiest of Mondays. You may want to start collecting images based on a particular theme such as music, family, romance etc. Visit your local library, bookstore or internet and find out about different styles of art, the various mediums used, and the great masters techniques. On a rainy afternoon, pay a visit to a local gallery or museum… and just sit there and stare at that painting that seems to captivate you. Examine the meaning of the piece.
6 • WWW.EDIBLESMAG.COM
Put yourself in the artist’s shoes and imagine his or her muse. You’ll find that most art goes deeper than the canvas.
Those in the know
Art galleries are an excellent venue for shaping your collection. Gallery owners often know about up and coming artist’s, events, and trends. They can help you invest your money in quality art as well as educate you on art terminology. Acquiring art is one thing. Preserving and displaying your art is another. Art galleries are the source to go to for tips on protecting your investment.
Ask Questions
Never feel embarrassed to ask an artist or gallery owner questions about art. Most artists strive on the opportunities to speak to someone about their work. Each artist is unique and approaches the canvas differently. Ask the artist what his inspiration is; What technique he uses; How long does it take him to do a piece. Ask him why one painting costs more than the other. Gallery exhibits and art trade shows are an excellent venue to meet the artist and find out what goes into the creation of your favorite work of art.

Pumpkin Pie Martini By Ambrosia www.lifesambrosia.com
Let’s not beat around the bush, Thanksgiving and Christmas is mostly about the food. The turkey, the mashed potatoes, the stuffing and the green bean casserole. But you know, it is a celebration. It should be about the drinks too. And when I say drinks I don’t just mean hot chocolate and sparkling cider. I’m talking about the drinks with a little bit of a kick. The drinks that make you all warm and fuzzy inside. Drinks like this pumpkin martini. With pumpkin spice, pumpkin puree, cream liqueur, vanilla vodka and half and half it is sure to add a little pep to your holiday step. I first had a pumpkin martini on my husband birthday this year. It was a seasonal special on the menu at the
Holiday
Continued from Page 5 hold a drink in your dominant hand so it won’t be so easy to grab food, recommends obesity expert Cathy Nonas, MS, RD. 3. Chew gum. When you don’t want to eat, pop a piece of sugarless gum into your mouth. This works well when you’re cooking or when you’re trying not to dive into the buffet, says Nonas. 4. Be a food snob. If you don’t love it, don’t eat it, says American Dietetic Association spokeswoman Melinda Johnson, MS, RD. Scan the buffet for foods you truly treasure and skip the everyday dishes that are available all year long. And don’t think it’s your 10 • WWW.EDIBLESMAG.COM
restaurant we went to. I was a little nervous to try it because at $11 a pop I wanted to be sure that I was going to like it. Let me tell you, it was worth every penny. It was creamy, luscious and decadent. It really did taste like pumpkin pie in a glass. This recipe is my recreation of that drink. I was pleased and so was Ryan. In fact…we each drank 2. responsibility to sample everything on the buffet. Go ahead and indulge in your personal holiday favorites, then find a seat and, slowly and mindfully, savor every mouthful. 5. Add fun and games. Cynthia Sass, MPH, MA, RD, co-author of Your Diet Is Driving Me Crazy, proposes taking the focus off food and getting family and friends more active during holiday parties. Think horseshoes, badminton, sledding, ice skating, or building snowmen. Indoors, try a spirited game of charades, or rent an instructional dance video followed by a dance-off. “The best parties include dancing, so why not make dancing after eating a new holiday tradition for a great form of fun and recreation?” asks David Katz, MD, MPH, author of The Flavor Point Diet.

Meringues Christmas Tree Recipe by Karen Hobbs
Ingredients 4 egg whites, at room temperature 220g (1 cup) caster sugar 2 teaspoons cornflour, sifted 1 teaspoon white vinegar 4-5 drops pink food colouring Coloured sprinkles, to decorate-option Instructions Preheat oven to 100°C. Line 2 baking trays with non-stick baking paper. Place the egg whites in a large clean, dry bowl. Use an electric beater to whisk the egg whites until soft peaks form. Gradually add the sugar and whisk until the sugar dissolves. Continue beating for 2 minutes or until the mixture is thick, glossy, all the sugar dissolves and a long trailing peak forms when the beater is lifted from the mixture. Add the cornflour and vinegar, and whisk until just combined. Divide meringue between 2 bowls. Stir pink colouring into 1 bowl and leave white into the other (optional). Place the pink mixture into a clean piping bag fitted with a fluted 1.5 cm diameter nozzle. Pipe 20 medium size(base measurement)
meringues (with a swirl motion), about 3cm apart, onto 1 lined tray, then pipe 10 small size. Bake in preheated oven for 2 1/2 hours, swapping trays halfway through cooking, until meringues are crisp and sound hollow when tapped on base. Turn oven off and leave in oven for 3 hours or until cool. Preparing the tower You will need a polystyrene cone, some foil paper and royal icing. In order to make the cone food safe, you will need to completely cover it with foil. Wrap and secure with a little bit of icing. This also keeps the cone clean so you can use it again. Spread royal icing and completely cover the cone so that no foil will show in between the meringues. Leave to dry overnight. The following day, use a little bit of royal icing on the back of each meringue to “glue” on the cone, starting at the bottom.

How To Shuck An Oyster The main reason for shucking oysters is to eat them raw. You want very fresh, live, fabulous oysters if that’s your plan. Luckily, oysters are fairly cooperative on that front as long as you keep them cold and don’t suffocate them in plastic. I like to buy oysters the day I’m going to shuck them, but that’s mainly a storage issue. There is no reason not to buy them a day or two ahead if that’s more convenient. Whether you’re an East Coast oyster fan or you prefer them from the Western shore, having a trusty guide to shucking your own oyster is crucial. Oysters might not be able to defend themselves with a bite, but their shells are sharp and jagged -- a bad grip on one just won’t end well. Also, despite the oyster’s small size, they’re fiercely strong -- a battle of strength most likely won’t end in your favor. But don’t let that intimidate you, shucking oysters is all about mastering the proper technique. Just follow the steps and you’ll be well on your way to putting down a dozen on the half shelf all thanks to you.
1) Wash the oysters well under cold, running water to remove any grit or sand. Then place in ice for an hour to ensure that they’re well chilled 2) Insert the oyster knife into the hinge. Before you do this, be sure to protect your hands because oyster shells are sharp. Use a thick glove or folded kitchen towel and grab the oyster in one hand. Hold the oyster cup side down. With the hinge toward you, insert the oyster knife into the hinge. 3) Twist the blade to pop the shell. With gentle pressure on the knife, twist and rock the oyster. When you feel the knife point go in, twist the blade to pop the shell. Run the blade forward over the meat to sever the abductor muscle. 4) Cut under the oyster to release it. Cut under the oyster to release it from the bottom of the shell, being careful to keep as much liquid as possible. Discard the top shell and place the opened oyster in it bottom shell on a bed of crushed ice. 5) Sprinkle with lemon, hot sauce or mignonette sauce. Enjoy! WWW.EDIBLESMAG.COM • 15

Childhood Obesity Awareness Courtesy of Andrietta Barnett, MSN, APRN, FNP-C, MSRN, CCRN Alisha Orage, MSN, APRN, FNP-C, MSRN
Childhood obesity refers to a condition in which excess body fat negatively affects a child. Obesity is a serious public health concern due to its rising prevalence. Body Mass Index (BMI) is acceptable in determining a child’s obesity status if he or she is over two years of age. The normal range for BMI among children depends on sex and age. According to the Center for the Disease Control and Prevention, obesity is further defined as a BMI that is greater than or equal to the 95th percentile. Obesity can lead to critical circumstances such as diabetes, high blood pressure, heart disease, sleep disturbances, and cancer. Additional disorders include, but are not limited to, liver disease and early puberty. Research has proved that children who are obese are more likely to have health problems during their adult life and possess the obesity trait. Children who are obese are believed to have a pronounced lifespan shortage by approximately five years. Current research reveals that in some countries, for example, America, children with obesity have a shorter lifespan when compared to their parents (O’Dea & Eriksen, 2011). A child’s social and economic status can greatly affect obesity. Research shows that obesity is much more prevalent in young children who come from racial or ethnic minorities or even those with

lower socioeconomic status. However, obesity can be prevented. Parents and schools institutions play a vital role in reducing the prevalence of childhood obesity. Schools must ensure physical activity during recess, physical education, and other daily outdoor/indoor tasks. Dietary intake is another imperative factor that can influence a child’s obesity status. Healthy eating habits are important to reduce obesity in children of all ages (Simmons, Alexander, Ewing, & Whetzel, 2012). Increasing one’s consumption of fresh and or frozen fruits and vegetables is one simple way to decrease obesity thus decreasing the probability of developing complex morbid diseases such as diabetes and heart disease. Parents must also restrict a child’s access to products such as sodas, juices, cakes, pies, pizza, cheeseburgers, and french fries as these products contain trans and saturated fats that also contribute to obesity and morbid diseases.
