Southern Charleston Like many chefs, South Carolina native Tim Richardson gravitated to the kitchen as a teenager. Richardson spent several years learning the restaurant business at locally owned steak houses in Columbia, S.C., before discovering his niche at Twigs, a charming restaurant located in Blowing Rock, North Carolina. Under the tutelage of Twigs Chef Ryan Brevda, Richardson honed his appreciation for preparing high quality ingredients and crafting a fine dining experience. To further refine his culinary skills, Richardson relocated in 2001 to Charleston, S.C., where he enrolled in Johnson & Wales University and began mentoring at Hank’s Seafood Restaurant under founding Chef Frank McMahon. Easter Mini Cheesecakes

Heat oven to 325°F. Mix graham crumbs, 2 tablespoons sugar and butter; press onto bottoms of 18 paperlined muffin cups. Beat cream cheese, vanilla and remaining sugar with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Spoon over crusts. Bake 25–30 minutes or until centers are almost set. Cool completely. Refrigerate 2 hours. Top each cheesecake with 1 tablespoon coco­nut; shape to resemble bird’s nest. Fill

with malted milk eggs. Note: To soften cream cheese, place com­ pletely unwrapped package of cream cheese in micro­­­waveable bowl. Microwave on high 10 seconds or just until softened. Add 15 seconds for each additional package of cream cheese.

Corned Beef and Cabbage Recipe by Laria Tabul 3 pounds corned beef brisket with spice packet 10 small red potatoes 5 carrots, peeled and cut into 3-inch pieces 1 large head cabbage, cut into small wedges 1 1/2 cup of Celery Glaze (whisk mustard and brown sugar together and set a side) 1/3 cup of yellow mustard 6 tbs of brown sugar Directions Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender. Preheat oven to 400º. Transfer beef to baking sheet and cover top of beef (fat side) with glaze, bake on the middle rack for about

7 -10 minutes or until glaze is hot and golden brown. (Put as much or little of the glaze as you want). Remove meat and let rest 10 minutes. Slice meat across the grain. Add potatoes, celery and carrots, and cook until the vegetables are almost tender in the pot with a small amount of the liquid reserve. Add cabbage and cook for 15 more minutes. Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want.

Double Lemon Cheesecake Bars Prep time: 35 minutes Total time: 7 hours, 15 minutes Servings: 16 52 vanilla wafers, finely crushed (about 2 cups) 3 tablespoons butter or margarine, melted 4 eggs, divided 4 packages (8 ounces each) PHILADELPHIA Cream Cheese, softened 1 3/4 cups sugar, divided 3 tablespoons flour 1 tablespoon lemon zest 1/3 cup lemon juice (about 2 lemons), divided 1/2 teaspoon vanilla 2 tablespoons cornstarch 1/2 cup water Heat oven to 325°F. Line 13-by-9-inch pan with parchment paper, with ends of paper extending over sides. Mix wafer crumbs and butter until blended; press onto bottom of prepared pan. Bake 10 minutes. Separate 1 egg; refrigerate yolk until ready to use. Beat cream cheese, 1 cup sugar, flour, lemon zest, 2 tablespoons lemon juice and vanilla in large bowl with mixer until blended. Add egg white and remaining 3 whole eggs, 1 at a time, mixing on low speed after each until

just blended. Pour over crust. Bake 40 minutes or until center is almost set. Cool 1 hour. Refrigerate 4 hours. Mix cornstarch and remaining sugar in medium saucepan; gradually stir in water and remaining lemon juice until blended. Bring just to boil on medium heat, stirring constantly; cook and stir until clear and thickened. Lightly beat reserved egg yolk in small bowl with fork until blended; stir in 2 tablespoons of hot cornstarch mixture. Return to remaining cornstarch mixture in saucepan; stir until blended. Cook 1 minute or until thickened, stirring constantly. Cool slightly. Spoon lemon glaze over cheesecake. Refrig-erate 1 hour or until firm. Use parchment handles to remove cheesecake from pan before cutting to serve. Note: This lemon glaze can be prepared ahead of time. Cool, then refrigerate up to 8 hours before spooning over individual slices of cheesecake. Garnish with 1/2 cup blueberries, lemon peel and fresh mint leaves.

Banana and Kale Smoothie Recipe by Nancy Sams

2 bananas 2 cups of frozen blue berries 2 cups water or juice 5 leafs of kale 5 cubes of ice Directions Put all ingredients in a high speed blender. Jasper’s Porch Lakefront Restaurant caters to casual dining By Ruth Ragland Associate Editor

Rick Passio, proprietor of Jasper’s Porch Lakefront Restaurant, invites visitors and locals alike to drop by and sit a spell at his Ridgeland eatery. Although he’s from the big city of Philadelphia, Passio promises a Southern ambience and family-friendly attitude at the place. Jasper’s Porch isn’t new to Ridgeland, but Passio and his business partner Cheryl Reiger have put a new emphasis on high-quality ingredients and fresh, made-to-order menu selections. Passio says that fried chicken will always be the star attraction at Jasper’s Porch, but he’s also proud to serve an authentic Philly cheesesteak in honor of his hometown. Other Lowcountry favorites include

Passio was looking for a restaurant business in South Carolina about a year and a half ago and happened on Jasper’s Porch one night for dinner. GETTING AROUND THE LOWCOUNTRY It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways. Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area. Driving south on I-95, take Exit 33 at Point South and connect to US 21 for a direct route into the center of Beaufort. Driving north on I-95, take Exit 8 onto US 278 toward Hilton Head Island and directly into the Bluffton area and the southern part of Beaufort County. This route connects to SC 170, across the Broad River into the city of Beaufort in the northern part of the county.
