1. Make a room scent//humidifier: Fill a small pot with water, add lemon peels, cinnamon sticks, and cloves and simmer. Your home will smell wonderful and your dry skin will feel great. 2. Clean your microwave: An easy remedy to that yucky baked on food out of the microwave: Just mix 3 tablespoons of lemon juice with 1 ½ cups of water in a microwave safe bowl. Microwave for 5-10 minutes, allowing the steam to penetrate the on the inside walls of the microwave. Wipe away the softened food with a dishrag. 3. Deodorize your garbage disposal: Our garbage disposals have the tough job of grinding up our throw away foods. Over time, the foods we shovel down the drain begin to leave a bad smelling residue. Lemons are the perfect natural remedy. As you use lemons, save the peels in a Ziploc bag for later use. Just drop them down the

disposal once a week to keep your drain smelling fresh. 4. Keep produce fresh: No one likes to eat browned apple slices and no one has to. After slicing apples, just sprinkle with a mixture of lemon juice and water to keep them crisp and white. This also works for other produce like avocadoes and potatoes. To keep guacamole fresh and bright green, just squeeze fresh lemon juice on top. The lemon juice will add a great flavor to the guacamole too. 5. Make lemonade: After all of the cleaning and deodorizing, enjoy a glass of lemonade made from freshly squeezed lemonade. 2 cups sugar, 1 cup hot water, 2 cups fresh lemon juice, 1 gallon cold water, 1 lemon, sliced. In a gallon container, mix the sugar and hot water until dissolved. Add lemon juice and fill the remainder of the way with cold water. Serve over ice and garnish with lemon slices.

Parker Stafford is the newest addition to our management team, coming on board as Red Fish Bluffton’s Executive Chef. Parker looks forward to bringing all the favorite flavors from Hilton Head as well as introducing some new excitement to our new location in Old Town Bluffton. Parker came to us from Hampton Hall Club, where he served as Executive Chef. During his time at the club, he enjoyed combining his eclectic style and flair with Lowcountry and local cuisine to produce a fresh approach on some familiar regional classics. Parker, born and raised in the Tampa Bay area, learned the culinary trade at the Balsams Grand Resort Hotel’s nationally renowned American Culinary Federation apprenticeship program in Dixville Notch, NH. Through this program, he also worked at such properties around the United States such as Pinehurst Country Club in North Carolina, 10 • WWW.EDIBLESMAG.COM

The Waldorf Astoria in NYC, and the Broadmoor Hotel in Colorado to name a few. Upon graduation, Parker accepted the position of Executive Chef of Todd English’s Figs Restaurants in Charlestown and Boston, MA. He also served as Executive Chef for Boston’s Armani Café, then moving to New York City as the Executive Chef at Louie’s Westside Café. In early 2001, Parker moved back to Tampa, receiving such accolades as “Tampa’s Best” in seafood as Executive Chef and partner at Splash, an Ocean Grill. He continued to head the culinary teams for the Grill at Feather Sound and Bellarte in St. Petersburg, and the Wyndham Tampa Westshore. Parker looks forward to continuing the Red Fish tradition at our newest location through working with local farmers, fisherman, and purveyors to provide fresh, local, and seasonal favorites.

The St. Helena Parish Chapel of Ease, a relic of the Lowcountry’s colonial past, has beguiled and haunted visitors to St. Helena Island for more than two centuries. It was built ca. 1740 to serve planters in St. Helena Parish who lived at great distances from the parish church in Beaufort and could not regularly attend services there. The ruin is significant as a relatively intact example of mideighteenth century tabby construction and was added to the National Register of Historic places on Oct. 6, 1988. The church was virtually abandoned when the planters evacuated the island

in the fall of 1861. During the Federal occupation of St. Helena, the church was used frequently by several of the Northerners who had come to the island to educate and train the freedmen. It was

also used as a sanctuary by Methodist freedmen as early as 1868, but was burned by a forest fire in February 1886 and was never repaired. Much of its historic fabric, including the church walls and much of its plaster, remains. A local legend from Lowcountry lore has drawn visitors to the chapel’s ruins for decades. As the story goes a headless man is said to haunt Land’s End on St. Helena Island. According to legend, he’s a soldier who was decapitated in battle and is looking to restore his head. The apparition looks “like a little swinging lantern, swinging back and forth,” but the scientific explanation for sightings of the ghost is phosphorescence. Gnarled and majestic live oaks add to the mysterious atmosphere. Visitors to St. Helena Island can also catch spectacular sunsets by following Land’s End Road to a county dock on the Beaufort River and Inland Waterway. WWW.EDIBLESMAG.COM • 11


S’mores Ice Cream Sandwiches Recipe and photo by Annalise Sandberg www.completelydelicious.com Ingredients For the cookies: 10 tablespoons (141 grams) unsalted butter, at room temperature 1/2 cup (100 grams) granulated sugar 1/2 cup (105 grams) light or dark brown sugar 2 large eggs 1 teaspoon vanilla extract 1 1/2 cup (180 grams) all-purpose flour 1 1/2 cup (213 grams) graham cracker crumbs (about 2 sleeves) 1/2 teaspoon baking soda 1/2 teaspoon salt 2 HERSHEY’S Milk Chocolate Bars, chopped For the ice cream: 2 cup (86 grams) marshmallows 1 pint (250 ml) vanilla ice cream, softened

Honey Glaze Salmon Recipe by Loretta Bates

1.5 pounds salmon, or 4 6-ounce salmon fillets salt and pepper 3 tablespoons olive oil 2 tablespoons honey 2 tablespoons freshly squeezed lemon juice or lime juice 2 tablespoons soy sauce (use gluten free soy sauce for gluten free version) Instructions To prepare the glaze: combine honey, lemon juice and soy sauce in a small pan on medium heat until honey is softened and well incorporated with other ingredients. Set aside. Preheat skillet with olive oil. Season the salmon on both sides with salt and pepper. Sear it a little because this will allow to easily remove the skin. Add salmon, non-skin side down and sear on high heat for 2 minutes, constantly moving the salmon in the skillet so

slightly at room temperature Additional marshmallows for toasting, optional. Instructions To make the cookies: Preheat oven to 350 degrees F and line a sheet pan with parchment paper. In the bowl of a stand mixer fitted with a paddle attachment, or in a large bowl with a hand-held mixer, beat the butter, sugar and brown sugar together until light and creamy, about 3-4 minutes. that it doesn’t stick. After it’s nicely seared, flip the salmon skin side down and continue searing for 2 more minutes After it’s nicely seared on the skin side, remove the skin easily with spatula. Brush the one side of salmon with half the amount of glaze prepared. Cook for about 3 minutes, flip salmon and brush with the remaining amount of glaze and cook for additional 2-3 minutes until nicely charred. Watch to make sure salmon does not burn because of the sugar in the honey. Cover and let it sit for about 5 minutes before serving. This will allow salmon to cook through but not be overcooked. Serve with your favorite vegetables or salad. Enjoy!


Peach Bread Pudding Recipe by Eric Sayers-Executive Chef Beaufort Memorial Hospital

Ingredients: For the Bread Pudding: 4 cups diced bread, day old French bread preferably 2 cups fresh local peaches, sliced and peeled 1 cup half and half 1 cup heavy cream 2/3 cup sugar ¼ cup brown sugar 1 tsp ground cinnamon 4 eggs, slightly beaten 1 cup peach puree (see recipe below) Combine all ingredients and place in a greased oven proof pan. Let soak for 24 hours, bake at 350 for 35-45 minutes until center is firm. Serve warm with vanilla sauce and ice cream. Enjoy For the Peach puree: 4 fresh peaches

1 cup orange juice ¼ cup white wine such as Chablis 1 cinnamon stick Juice of one lemon ½ cup sugar Combine orange juice, lemon juice, wine, cinnamon stick and sugar in pan, bring to a simmer. Cut peaches in half, remove pit and place in simmering liquid. Cook until tender, remove and peel. Reduce liquid by half, remove cinnamon stick and discard. Return peaches to liquid, remove from heat and puree until smooth, cool. Mixture should be slightly thick. * If fresh peaches are unavailable, canned peaches can be substituted, if they are in heavy syrup, rinse before combining with other liquids.

Dining Pleasures From The Past THE DEVILED CRAB,

a LowCountry favorite has almost disappeared here!

tradition in the Lowcountry, 55 years ago my father would give us a string with a chicken neck on the end, we would wade a couple of feet into the river in front of our home and 40 minutes later we had a bucket of fresh local Atlantic blue crab. Dad would throw them in a big pot of boiling water with a seafood seasoning. While we cooked and cleaned the crab he told us, “We’re going to make deviled crab.” I can remember him saying that deviled crab originated in Florida, near Tampa during a cigar workers strike in the 1920s. It was shaped in an oval to be held with one hand. During this time crab was very plentiful and inexpensive; it was fed to migrant workers, labor forces. Stale Cuban bread was used with Latin American spices making it easy to carry with you to work. Locally we were taught to make deviled crab and place it back into the crab shell, serving it for dinner. Really good deviled crab is hard to find

now — crab cakes have taken over. Today you can just purchase a pound of good crab meat and prepare your own deviled crab. Here is our simple family recipe. DEVILED CRAB: 1 cup of cracker crumbs 2-3 tablespoons of butter 1 pound of claw or lump crab meat 1/2 cup of mayonnaise 1 1/2 tablespoons of Worcestershire sauce 1 1/2 tablespoons of a good mustard 1 hard cooked egg, chopped fine 1 teaspoon of hot sauce 1 tablespoon of Old Bay seasoning (early on, it was a Cuban spice-my father used). Mix well and place in your foil or real crab shell.....Put a solid small butter cube on top, now cool for several hours (to let seasonings attach ). Bake at 350 degrees 4 inches from the top of the oven around 15-20 minutes (until it’s nice and brown)

NOTE: Good deviled crab isn’t found here now — GOOD CRAB CAKES HAVE TAKEN OVER!

Today, Luther’s has more of a “Cheers” vibe, laid back and comfortable, a great place for a good meal and some cold brew.
