How to Throw a Super Bowl Party By Ruth de Jauregui
Cheers explode from the living room as the football clears the goal posts, followed by the losing team’s fans enduring some good-natured ribbing. If you’re gearing up to host your first Super Bowl party, don’t limit yourself to chips, dips and beer. Plenty of seating, a big-screen TV and a lavish spread of food and beverages are the bare bones of a successful party that will keep your fellow fans asking if you’re hosting next year’s party too. Provide Plenty of Seating Place the sofa and loveseat in good viewing positions, then work your way around the room to add more seating. A row of dining room chairs or bar stools behind the sofa and low ottomans placed on each side of the room add more seating for your guests. Super Bowl Decorations Hang light-blocking curtains or blankets over the windows to block excess light from reflecting off the TV screen. Football-shaped helium balloons float overhead, while individual chalkboards or dry erase boards allow your friends to plot the next play. Cut coasters from artificial grass, available at home improvement centers, and scatter them about the room, on your coffee and end tables. Alternately, use plastic tablecloths to protect your tables from
accidental spills and water rings. Scatter bowls of popcorn, peanuts, Chex mix and spiced nuts about the room for snacking. A Super Bowl Worthy Buffet Half the fun of a Super Bowl party is the feast. In warmer climates, you may spend the morning grilling chicken and ribs, when the weather outside is frightful, simply cook them in the oven. Crock-pots and chafing dishes allow you to keep all the food warm, such as: ribs, chicken, hot links, sweet and sour meatballs, macaroni and cheese, roasted potatoes and nacho sauce. If the buffet table is already full, place the desserts and the Super Bowl cake on a separate table where it’s easy to cut and serve the cake. Beers, Beverages and More While the Super Bowl is always associated with beer, provide an assortment of beverages for your friends. Pitchers of sangria and freshsqueezed lemonade, bottled hard cider or lemonade, red or white wines, sodas, bottled water and specialty beverages, such as non-alcoholic ginger beers and sparkling juices, slake the fans’ thirst. Lowcountry roots inspire chef’s Gullah/French fusion By Ruth Ragland Associate Editor
Chef Ben Jenkins’ interest in cooking was sparked by his grandmother’s skill in the kitchen. “She was an excellent cook,” he said. “I loved the smell of her cooking.” His grandmother began teaching him at home, and in high school the Beaufort native entered the culinary arts program at the Career Education Center, graduating No. 1 in his class. His first kitchen job during high school was at the old Anchorage House on Bay Street, a restaurant that earned Beaufort a mention in the Michelin Guide. “I think the Anchorage House was pretty much in a class by itself,” he said. The restaurant’s chef had been a competitor on a U.S. team in the culinary Olympics, winning a gold medal for his seafood sausage. Jenkins worked in the pantry area on desserts, salads and appetizers. The chef taught him a lot about French cooking and inspired him to pursue the profession. After a stint in the Marine Corps, Jenkins enrolled at Johnson & Wales University, a culinary school in Charleston, and

graduated magna cum laude with a medal in classical French cooking in 1999. Jenkins has worked at Chelsea Plantation, a private 5,200-acre hunting preserve in Jasper County, for 21 years. “I’ve been called one of the best hidden secrets in the Beaufort area,” he said, because Chelsea isn’t open to the public. One of his mostcraved creations is called Brown Bag Surprise. “It’s a brown bag that we make and it’s stuffed with a Southern chocolate cake, fresh berries and a mascarpone chocolate mousse,” he explained. “It’s a very beautiful dessert and even when we take it off the menu people still ask for it.” Chelsea is open six months of the year keeping Jenkins busy with breakfast, lunch and dinner for guests. Quail hunting is the club’s big draw and wild game is also featured on the menu. One of his signature dishes is a panfried plantation quail served with Texas toast, Cajun red rice, corn on the cob and persimmon pudding. The persimmons are harvested in the fall from an orchard on the property, and pulped and frozen to prepare pudding later. Other dishes include a semi-boneless
quail filled with grape, apple and cranberry stuffing, and a bourbon-grilled barbecue quail. Jenkins enjoys the challenge of preparing wild game dishes that take diners by surprise. “Most of the time people say, ‘I won’t eat deer, I don’t eat duck,’ but when I give it to them they say how good it is, yet they don’t know what they’re eating,” he explained. Jenkins has taken first place three times at the Taste of the Lowcountry Jasper Style fundraiser, most recently with a venison chili with butternut squash and cranberries in it. “I try to mix my classical French training with some local Gullah cooking and switch things up a bit,” he said. “I get a lot of joy out of that.” When he’s not putting in 15-to-16-hour days at Chelsea, Jenkins has his own small catering company called Edible
Memories. He’s available for birthday celebrations, dinner parties and wedding receptions, preparing everything from appetizers and hors d’oeuvres to prime rib and steaks. “The thing that keeps me going is the love of cooking, and the smiles and the compliments that people give me on a daily basis,” he said. “Some people think that money is the universal language, but food is the universal language because it brings all shades of people together like at a huge supper table,” he said. “With food I think a lot of people have the same beliefs — it doesn’t matter what race or religion — when it’s good food we can all come to a common place and say it’s good food.” chefjenkinsb@gmail.com 843-321-0961

Love the taste of S’more but don’t have a campfire? This quick and easy recipe is a delightful treat.
Ingredients: Yield: 36 bars 12 cups mini marshmallows (reserve 3 cups) 16 cups golden grahams cereal or broken graham crackers 4 oz butter 1 ½ cups semi-sweet chocolate chips 1 ½ cups milk chocolate chips 2 tsp. vanilla Directions: Grease a 10x13 pan. In a large heavy sauce pan melt the butter; add 9 cups
marshmallows and chips, heat until completely melted, add vanilla. Combine mixture with cereal stir to coat, add 2cups of the reserved marshmallows. Press into greased pan, top with remaining marshmallows and gently press them into mixture. Brulee marshmallows with torch (optional). Cool and cut. Enjoy!
Easy Stuffed Strawberries Recipe by Ashley Maket-Loveit.com Ingredients: 1 lb fresh strawberries 8 oz cream cheese 1/2 cup powdered sugar 1 tsp vanilla chocolate chips (optional) Directions: Rinse your strawberries and cut out the stem plus a little more of the center of each strawberry. Then cut off enough of the tip of the strawberry so that
it can stand alone. Next, beat together your cream cheese, sugar, and vanilla until nice and fluffy. Then place mixture in a pastry bag and pipe into each strawberry, adding a little extra to the top. Optional: drizzle with melted chocolate chips. Place in fridge until thoroughly chilled. Don’t make too far in advance or your strawberries will sweat and may become a bit soggy.
Buffalo Chicken Pizza
Recipe by Tamia Reid Ingredients: 1 package of pizza crust-prepare as directed 1/4 cup ranch dressing 10 ounces chicken, shredded 1/2 cup shredded, cheddar cheese 1/2 cup shredded monterey jack cheese 1/2 cup parmesan cheese 1/4 buffalo wing sauce Directions: Preheat over to 375. In a bowl, mix buffalo wing sauce and ranch. Spread over dough as a sauce. Top with 1/2 cup
each of cheddar and jack cheeses. Add chicken on top, then remaining 1/4 cup of parmesan. Bake for 20-25 minutes.

4.5 million women over the age of 50 have osteoporosis of the hip, equivalent to 10% of all women in the United States (Centers for Disease Control and Prevention, 2013). However, Osteoporosis is not always a consequence of aging as some elderly individuals have strong and dense bones (Huether & McChance, 2012). The rate at which old bone is removed (reabsorbed) and new bone is added (formed) potentiates one’s risk of developing osteoporosis. After age 30, bone reabsorption slowly exceeds new bone formation. Decreased calcium intake, lactose intolerance, sickle cell disease, the consumption of tobacco products, and lupus are some factors that can increase a woman’s probability of developing osteoporosis (Huether & McChance, 2012). It is now recommended by the United States Preventative Services Task Force that women over 65 receive preventative screening for osteoporosis (Huether & McChance, 2012). Osteoporosis is the leading cause of fractures and is increased in women with low bone mineral density. Research has found that those with low bone mineral density (BMD) who was treated with bisphosphonates decreased their fracture risk. Typically, African American women have higher BMD and lower fracture risks when compared to Caucasian women (Hamrick et al., 2012). Screenings utilizing dual energy x-ray absorptiometry (DXA) is the most reliable predictor of one’s fracture risk and BMD (Hamrick et al., 2012). Check

Second Annual Cooking Well Invitational
BMH Takes Third in the State (SC) By Chef Eric Sayers Executive Chef/ Beaufort Memorial Hospital
There’s always next year… a
saying every sports fan knows. This year The Food and Nutrition Department of Beaufort Memorial Hospital was asked to participate in the Second Annual Cooking Well Invitational in Charleston. This competition is for all South Carolina hospitals which have received the prestigious Golden Apple Award. This award is part of the SCHA Working Well intuitive that is centered around improving overall wellness, focusing on 3 pillars of physical fitness, tobacco free and nutritional wellbeing. We assembled a team of our cooks and I created a menu and recipes under strict budgetary and nutritional guidelines. I worked with our Registered Dietitian Roxanne Davis-Cote to keep the 18 • WWW.EDIBLESMAG.COM
meal from exceeding in fat, sugar, caloric and salt limits. The entire 3 course meal needed to be prepared in 90 minutes using only two butane burners as heat sources with the cost of the ingredients not to exceed $5 meal. The menu we put together was butternut squash and apple bisque, sage turkey medallions and syrah-
poached pear Reggie Singleton made the soup, topped with bruleed, made fromscratch marshmallows and toasted butternut squash seeds. The entrée, prepared by Corey Harper, included a hash of red quinoa, sweet potatoes, kale, baby sunburst and patty pan squash
and dried cranberries, along third in the State; we are looking with a maple chipotle jus. Jabar forward to next year when we Coaxum whipped up the poached- hopefully will come in first. pear dessert topped with orange mascarpone and hazelnut leaves. I supervised the team and pitched in with some of the finishing touches, including the autumnal adornment cutout of a crepe made from ground hazelnuts. The judges were three Certified Executive Chefs from the Culinary Institute of Charleston. Ten other hospitals from around the state also competed and the event was hosted by Star Chef Marvin Woods. We practiced seven or eight times in our kitchen here at BMH, but it’s a whole different kind of pressure when you’re at the competition. GETTING AROUND THE LOWCOUNTRY It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways. Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area. Driving south on I-95, take Exit 33 at Point South and connect to US 21 for a direct route into the center of Beaufort. Driving north on I-95, take Exit 8 onto US 278 toward Hilton Head Island and directly into the Bluffton area and the southern part of Beaufort County. This route connects to SC 170, across the Broad River into the city of Beaufort in the northern part of the county.
