This year’s event was held on Saturday, October 12th and is now considered an annual social highlight on Hilton Head Island. Holiday Foods?

are interesting. Depending on your taste’s you can run the gamut from wishing something could be eaten everyday to wondering how did someone come up with the idea of thinking that is even edible. Let’s start with one of my favorites, eggnog. Why isn’t this nectar available everyday of the year? The ingredients are available but no one thinks about mixing eggs and whatever nog is together in the middle of July except me. It is probably a good thing since even the light version of the drink can still add extra pounds. The real great thing about eggnog is that it can stand alone, or it can serve as a chaser for several adult beverages. Most people know about drinking it with, brandy, bourbon or rum. Last year I was introduced to the Christmas Russian (vodka and eggnog). Some holiday favorites can be found during other months of the year but have special significance during this season. Gingersnaps and ginger bread take on a new life and become gingerbread men during the holiday season. The same takes place when those regular peppermints turn into candy canes. What is about this time of year that makes summer sausage, which people eat in the winter and cheese so special? You can always find those cheese balls and logs for sale especially in the mall this time of year. Speaking of logs, let’s get into that. Who has tried a Yule Log (the food version)? pretty good. O n e version is a basic sponge cake with chocolate buttercreme. Figgy Pudding is something else you only hear about this time of year, but I’m not even sure what it is. I researched this as well and found two totally different desserts. One was actually pudding with figs (makes sense) the other was a spice cake with figs and walnuts (sounds more appetizing). The jury is still out on this. Speaking of desserts, pumpkin and sweet potato pies are both big hits during the holidays. Both are harvested during the fall and are kind of heavy to eat during the warmer months. Let’s talk pork now. It seems those hams that are glazed with honey just seem to fit the holiday season. Some people even bake them with pineapples. There is also a southern pork specialty Chitterlings (pork intestines) that may require an acquired taste. Some people actually call the dish a delicacy, while others shy away from it. To me it all depends on the cook and how it is prepared. Finally, there are a few adult beverages like the special ales and mashes that come out during the holiday season that add a little extra cheer. Now where is the hopping John and Collards for the new year.

Bush began working for Campbell at Penn Center in the Program of Alternative Certification for Educators (PACE) right out of college in 1992. Now as board chairman at Penn

Center, Bush is excited by new developments at the national historic landmark, including a branch of the Beaufort County Library; a health center in partnership with Beaufort-Jasper-Hampton Comprehensive Health Services, Inc.; and a new executive director, Michael Campi, who aims to attract more visitors to the site. Bush and his wife Aretha RhoneBush, an educator in Chatham County, Ga., have a daughter, Savannah, and a son, Rasheem. In his spare time Bush is also an avid motorcycle rider.

Growing up in south and central Florida allowed me to have this high appreciation for everything seafood –I could get lost any given day in the salt filled air. I understand and respect southern cuisine as it comes from all over the world by settlers from France to South Africa that have a ton of influence on the Low Countries style of cooking. The fusion of flavors is phenomenal. I appreciate the south for its historic sense the stories on plates passed down through family amongst generations the layers and adding elements. I grew up in restaurants in the Florida keys while my dad worked I observed than began doing dishes and prepping and learning sauté station by age of 13. I feel deeply in love with food the very first time I ate jerked chicken, coconut rice and spiced apples I told myself I need to make food forever. I woke up the other day with shrimp on my mental and Ray Charles on blast so I decided to create a shrimp and grits dish. I started cooking my grits slowly with salted butter and a few splashes of cream. As that was going I began skewering my shrimp and adding my own seafood blend and some fresh lemon as the grits finished. I added some blue cheese and cheddar cheese and transferred it to a pan and let it cool and prepped grit cakes. Placing some skewers in a sauté pan with butter and

olive oil cooking them off and grilling the grit cakes. As they finished I made a quick buffalo sauce and chopped some smoked bacon and scallions for garish. This dish has a full range of elements and flavors that hits on all levels. My name is Jacob Lyons I am a caterer and personal chef in the lovely shine state. Simple,Helpful Kitchen Tips (Family Features)

So much of life happens in the kitchen – from hurried morning breakfasts to after school snacks with the kids – it’s likely to be the most travelled room of the home. Unfortunately, all this activity in one room can cause many messes and much required upkeep. By following a few simple steps, you can keep this important space tidy, clean and smelling great. Here are some simple tips to keep your kitchen clean and inviting: Add Some Citrus. Does your garbage disposal have an uninviting stench? Here’s one simple solution – use orange or lemon peels to freshen the drain or disposal. Simply run cool water from your faucet, turn on the disposal, throw in the peels and take in the fresh citrus scent. This is a perfect way to use old fruit that is no longer good enough to eat. Make Dishes Sparkle. Dirty plates, pots, pans, glasses and utensils pile up quickly in busy kitchens. Get dishes sparkling clean with a dish liquid that leaves your hands feeling touchably soft, such as Palmolive Soft Touch dish liquid. In a recent survey conducted by Kelton, 33 percent of those who wash dishes by

hand said their skin is usually dry afterwards. Keep Up With Countertops.

The kitchen countertop is the easiest place to collect a mess so it’s important to keep it tidy. Because so many countertops are made with fine woods, stones and other specialty materials, it is important to know what cleaning products you can use on them so they keep their beautiful appearance. In general, avoid abrasive cleaners and never use steel wool or other harsh brushes which can scratch the surface. Invest in protectors such as trivets for hot cookware, or trays for oil bottles and other cooking items that keep permanent residence on countertop space. Love Your Oven. Ovens are often the most neglected appliance in the kitchen. Open them up to find baked-on spills, burnt-on food, as well as splatters covering the exterior. Be sure you’re giving your oven the maintenance it needs by cleaning it at least once each season. Whether you’re using a homemade cleaning concoction or a heavyduty store-bought brand, it is important to scour every nook and cranny. Chef Eric’s Butternut Squash and Pear Bisque Recipe by Eric Sayers Executive Chef Beaufort Memorial Hospital

Ingredients: 2 Tbsp. butter 2 # butternut squash, peeled, seeded and chopped 1 onion, chopped 4 pears, peeled and chopped (d’anjou preferred) 1 cup apple juice 3 cups vegetable stock 1 Tbsp. cinnamon 2 tsp. nutmeg (fresh ground is the best) ¼ cup brown sugar 1 tsp. cayenne pepper S/P to taste

Directions Sweat the onion in butter for 3 minutes add the squash and pear. Add the apple juice and reduce by half. Add the remaining ingredients and cook for at least an hour for flavors to blend. Puree and adjust consistency with stock. Adjust seasoning. Garnishes:My Favorite: homemade marshmallow, bruleed Other ideas: cinnamon croutons, cinnamon whipped cream, toast butternut squash seeds, pepitas and pumpkin oil.

Ingredients: 7 Chicken Thighs, Boiled Down about 4 cups of Stock ( Dark Meat--More Flavor ) 1/2 Lb Hillshire Beef Sausage 1/2 Lb. Italian Sausage With Skin Removed 4 Filets Of White Fish Sometimes I Use Mussels And Clams 1Lb. Of Medium Peeled Shrimp Colorful Peppers, Sliced Thin Big Sweet Onion Sliced Thin Large Italian Chopped Tomatoes or can 3--Cloves Of Garlic 3 bay leaves salt and pepper to your taste If I have it----a teaspoon of saffron 31/2 cups of rice 1/2 cup white wine

Directions In a large iron skillet, or what you have cook off your sausage, onions, peppers together, then add your chicken stock, white wine and chopped tomatoes, bring to a boil, add rice and, lower the temperature, to medium, after 45 minutes, put your raw seafood in and bake uncovered at 350 degrees, in this skillet for 20 minutes. Yes, all those seafood juices blend with the Paella....

This easy Divalicious pie recipe is full of flavor made from fresh sweet potatoes.

Ingredients: 4 ounces butter, softened 2 cups cooked and mashed sweet potatoes 2 cups granulated sugar 1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk 1 teaspoon vanilla 3 eggs, beaten 1 1/2 teaspoons of pumpkin pie spice 2 prepared pie shells, unbaked Directions Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and pumpkin pie spice mix well. Pour into the prepared pie shells. Bake in a 350° oven

Crispy Calamari Salad

Ingredients: 4 cups vegetable oil 1lb clean squid with tentacles cut bodies into 1/3 to ¼ inch thick rings 1 cup all purpose flour 1 cup corn starch Salt Pepper Cayenne pepper 1 egg slightly beaten 1 tsp dried parsley SALAD: ½ cup sliced golden grape tomatoes ½ cup sliced grape tomatoes 1 cup fried wonton strips 1 lb Mixed European greens 4 thinly sliced lemon wedges (garnish) SWEET CHILI VINAGRARETTE: ½ cup Chili garlic sauce 1/3 cup honey ¼ cup olive oil 3 Tablespoons rice wine vinegar 4 Tablespoons fresh lime juice ½ tsp fresh chopped Directions Whisk chili sauce, honey, cilantro, oil, vinegar and lime juice until well mixed. Then refrigerate at least 1 hour. Combined flour,

cornstreach, cayenne pepper, salt, pepper and parsley in a plastic bag and shake well to mix ingredients. In a large heavy sauce pan, the depth of 3 inches. Add oil and heat over medium heat to 350 degrees F. Place squid in egg and coat well. Then take about a 3rd of the squid and place in the flour mixture shake well and make sure all pieces are coated well. Then carefully add squid to oil and fry until crisp and very pale golden about a 1 minute per batch. Using tongs or slotted spoon to remove calamari from oil. Place calamari on paper towels to drain. In a large salad bowl combined lettuce, tomatoes, calamari and wonton strips and ½ of the dressing and toss until all is lightly coated. Take a slice of lemon and squeeze the juice on top of salad if desired. Use remainder of vinaigrette as needed. www.Ediblesmag.com • 19

A side dish of sweet potatoes provides your family with a host of nutritional benefits such as vitamins, carbohydrates and fiber. If a plain sweet potato doesn’t excite your palate, consider making your sweet potatoes into a pie, casserole or souffle or topping them with brown sugar and almonds. However you choose to serve these flavor-rich vegetables, you’re guaranteed a heart-healthy addition to any meal.

Fiber: Sweet potatoes contain both soluble and insoluble fiber. According to the American Dietetic Association, soluble fiber has been shown to lower cholesterol and keep blood sugar levels stable. Lower cholesterol levels help prevent blockages in the arteries that cause heart disease while stable blood sugar levels reduce hunger between meals. Insoluble fiber, by contrast, improves digestive health by adding bulk and weight to the stool, thus increasing regularity and reducing the likelihood of constipation.

Vitamin A: If you need additional vitamin A in your diet, look no further than a sweet potato. Vitamin A plays a crucial role in vision and boosts your immune system’s response to infections and illnesses. Vitamin A is also a necessary requirement of sperm production, greatly contributing to male reproductive health.

Complex Carbohydrates: The average sweet potato contains 22g of complex carbohydrates. Your body breaks down carbohydrates into glucose, which subsequently provides you with the energy you need to go about your daily tasks. As opposed to the simple carbohydrates contained in sugary snacks, however, complex carbohydrates take longer to digest--staving off hunger pangs until your next meal. Vitamin C: Sweet potatoes are loaded with vitamin C. A single medium-sized sweet potato provides you with almost 30 percent of your daily recommended intake of vitamin C. Long heralded as the vitamin to take to ward off illness, vitamin C boasts other health benefits as well. Oregon State University’s Linus Pauling Institute notes that high vitamin C levels are associated with a decreased risk of developing cataracts, gout, kidney stones, coronary heart disease and some forms of cancer. Potassium: Potassium is a crucial electrolyte contained in sweet potatoes that contributes to smooth muscle function. Potassium maintains your body’s water balance and helps ward off heart disease.
