Henry C. Chambers Waterfront Park (Beaufort, SC) The center of it all! The Henry C. Chambers Waterfront Park was started in 1975 and opened May 4, 1979. It is located in downtown Beaufort, opposite Bay Street, includes seven landscaped acres and is named for Mayor Henry Chambers, who championed replacing abandoned docks with a park. The Waterfront Park is one of our city’s biggest attractions. The multi-acre park provides a breathtaking view of the Beaufort River, the Woods Memorial Bridge, the western tip of Lady’s Island, the eastern side of Port Royal Island and the northern tip of Parris Island. Shaded trees swaying in the sea breeze provide a relaxing atmosphere. Other amenities include public restrooms, children playground, a variety of flowers, shrubs and plants, a stage for performances, a pavilion for displays, and a grassed amphitheater for picnicking, frisbee or simple relaxing. On any given day you can find people fishing from the park’s walkway, people jogging/walking, or families and couples swinging as boats move down the Intercoastal Waterway. The Henry C. Chef Steve Brown

B

eaufort caterer Steve Brown is known as much for his good works as his good eats. “I came from parents who had two great gifts,” he explained. His father was someone who “could share and talk and uplift any human being,” he said. “When he left you, you felt better.” His mother charged her children not to rest without blessing somebody’s life every day. “For the last 36 years I’ve had a silent network of angels that have done nothing but help people,” he said. Brown said he acts as a facilitator with his informal group of friends to help others by “combining our efforts.” “That’s just part of my everyday life now — there isn’t any magic in it,” he said. The city recognized his efforts by declaring June 14, 2003 Steve Brown Day in Beaufort. But for Brown, “It’s never been about bragging,” he said. “Go out there and do it because you should do it.” He got his start in the food industry like many others — as a dishwasher in his teens — and then went on to become a pizza maker. Brown is a native of Beaufort, as is his father, retired professional photographer Ned Brown. He set out to follow in his father’s footsteps and studied photography at the Rochester Institute of Technology in Rochester, N.Y. When he came home he worked in his dad’s photo lab for several years but because Beaufort was such a small

town he didn’t want to compete with his father as a photographer. Since he already had food service experience he returned to it to establish a new career. “You do what you know,” he explained. Brown laments the loss of “a lot of the old recipes that came from the Old South,” like plantation shrimp curry, the original red rice and sausage, shrimp pie and Lowcountry seafood casserole. “You won’t find them served anywhere,” he said. “I would love to see that Lowcountry food be shared with the public here.” Now he’s turned his focus to cookies, baking batches by the dozen to fill special orders. His lineup of high-quality 3 oz. treats includes cranberry walnut, white chocolate macadamia nut, chocolate chunk pecan, English toffee and oatmeal raisin cookies. Even more personally rewarding to Brown than his profession is his vocation to teach and mentor young people in cooking and in life. A lot of parents don’t take the time to teach their children “all the good things” like how to talk to other people, a work ethic and to follow the news every day, he said. “When I get a chance to teach I like that,” Brown said. “I want to stay busy.”

Chilled Carolina Peach Bisque With toasted pecans and mint Chantilly cream Recipe by Eric Sayers Executive Chef/ Beaufort Memorial Hospital

Ingredients: #1 fresh Carolina peaches, peeled ½ cup plain yogurt 2 tsp. honey ¼ cup heavy cream 2 Tbsp. orange juice 2 Tbsp. apple juice 1 tsp. vanilla extract Juice of 1 lemon Directions: Dice the peeled peach and combine with juices, and yogurt, puree in a food processor or a hand blender until smooth. Slowly add heavy cream and blend until well incorporated, add honey and fresh lemon juice. Refrigerate for at least 2 hours before serving. Garnish with mint Chantilly cream and toasted pecans.

A quick and easy way to peel the peachessubmerge in boiling water for 45 seconds and quickly plunge in ice water, the skin should slide right off. For the Chantilly Cream: 1 cup heavy cream 2 Tbsp. fresh mint, chiffonaide 2 Tbsp. powdered sugar Toasted Pecans Whip cream to soft peaks, sift in powdered sugar and combine. Gently fold in mint. Assembly: Place well chilled soup in bowls, garnish with a dollop of Mint Chantilly Cream and sprinkle with toasted pecans.

No Bake Berry Surprise Recipe by Janice Reid Ingredients: 1 pints strawberries 1 pint blueberries 10 oz pound cake Sliced 1 8oz container of whipped cream 1 8oz package of cream cheese Directions: In a separate bowl mix whipped cream and softened cream cheese until smooth. Reserve strawberries and blueberries for your top layer. Layer your dish with the pound cake slices. Add a layer of strawberries and blueberries. Spread your whipped cream mixture on top of your berries. Add a second layer of cake slices strawberries and blueberries. Again

spread your whipped cream mixture on top of your berries. Next arrange your strawberries and blueberries in a flag pattern or any pattern of your choice. Cover and refrigerate at least 30 minutes.


The Joyful Palate Cheesy Potato Bake Recipe by Peggy Beck

Ingredients: 5 pounds Yukon red potatoes 2 cups shredded sharp cheese (save 1 cup to top) 1 cup shredded pepper jack cheese 1 medium onion peeled and quartered 1 brick cream cheese 1 stick butter (use some to butter the sides and bottom of baking dish) 1/4 cup half and half 1 teaspoon cracked black pepper 1 teaspoon sea salt 1-2 green onions finely chopped 1/2 cup crumbled bacon (optional) Directions: Boil potatoes with skins on. In food processor add 1 cup of each cheese, onion,butter, cream cheese, half & half,

pepper and salt. Process until blended well. Preheat oven temp to 350. In a 9x12 baking dish use some of your butter for the sides and bottom of dish. In the dish place a layer of sliced cooked potatoes, cover with a thin layer of cheese mixture over the potatoes, continue making layers. Cover and bake until bubbly about 25 minutes. Remove lid or foil, cover the top with 1 cup shredded cheddar, green onion and bacon. Bake uncovered an additional 10 minutes or until cheese is melted and lightly browned.

Watermelon Smoothie Recipe by Mama-Doo

Ingredients: 1 cup seedless watermelon 1/2 cup of coconut water 1 Tablespoon of honey 3 teaspoons of lemon juice 10 fresh mint leaves Directions Mix all ingredients except 3 or 4 mint leaves for garnish and blend on high speed. VoilĂ ! A great summer light and refreshing drink.

The Town of Hilton Head Island provides beach accesses at the following • Alder Lane Beach Access, located off South Forest Beach Drive • Burkes Beach Access, located off of William Hilton Parkway at the end of Burkes Beach Road. • Chaplin Community Park, located off of William Hilton Parkway • Coligny Beach Park, located off Coligny Circle • Driessen Beach Park, located at the end of Bradley Beach Road • Fish Haul Park, located at the end of Beach City Road • Folly Field Beach Park, located off Folly Field Road • Islanders Beach Park, located off Folly Field Road • Mitchelville Beach Park, located off Beach City Road Parking: There are metered spaces at Alder, Folly Field and at Burkes Beach Road. The parking fee for metered spaces is a quarter for each fifteen minutes. Driessen Beach Park for long term parking. The fee is a quarter for each thirty minutes during the week. Parking is free at Fish Haul Park, Mitchelville Park and Coligny Beach Park. Handicap parking is available at no fee at all beach parks. Barbecued Fall-off-the-Bone Tender Pork Ribs

If you are short on time, simmering ribs on the stove before grilling can help to both tenderize the meat and cut down on the grilling time. Basted with barbecue sauce, ribs that have been precooked can be grilled to a deep mahogany brown in just 20 minutes. Baked barbecued beans, pictured behind ribs, makes a good side for ribs. 6½ pounds pork baby back ribs 1 onion, coarsely chopped ½ cup cider vinegar

12 black peppercorns 1 teaspoon salt Barbecue sauce

Cut ribs into serving portions. Place them into a large Dutch oven, adding water to just cover. Add onion, vinegar, peppercorns and salt. Bring to a boil; cover and simmer for 1 hour; drain well. Grill over low coals for 20 minutes, turning after 10 minutes. Baste with barbecue sauce and grill 5 minutes. Turn ribs, grilling for an additional 5 minutes, or until ribs are done, as desired. Makes 6 servings. Kitchen Ade note: barbecue sauces that are high in sugar will burn when brushed on foods over a hot fire. To avoid burning, always add the barbecue sauce during the last minutes of grilling. Barbecue sauce can also be added after the food is removed from the grill.
