Bella Luna By Ruth Ragland
M
aria Jackson, proprietor of Bella Luna on St. Helena Island, has brought a taste of the old country to the Lowcountry. Jackson prides herself on using only fresh ingredients, including locally grown produce, in her Italian-inspired dishes. “Everything we make here is from scratch — nothing is pre-made or processed,” she said. “It makes a big difference when you can use something that’s fresh.” Jackson, who has roots in Beaufort County, attended high school and college in Los Angeles, where she worked in the catering business, as a personal chef and even in craft services for the film industry. She moved to Beaufort in 2004 and opened Bella Luna in 2009. “The area out here offers a lot of fresh produce and it seemed to be a good combination with what you can do with regional cuisine, especially Italian,” she said. “We’ve got a good relationship with the farmers out here, they’ve really been helpful in not only taking our suggestions that they can grow something specifically for us, but providing us with the winter vegetables, the spring and 6 • www.Ediblesmag.com
summer vegetables — everything that’s out here.” Her menu boasts freshly made tomato sauce and local eggplant, squash, zucchini, corn and peppers in a variety of dishes. Bella Luna serves breakfast, lunch and dinner daily to hungry locals and tourists as well. Jackson offers traditional breakfast fare that draws a steady crowd of regulars from Dataw, Harbor and Fripp islands, but has also added items like French toast encrusted with cereal and other seasonings, “taking something ordinary and making it extraordinary,” she said.
Lunch features Italian-type sandwiches including meatball subs, sausage and peppers, calzones, Strombolis and a whole selection of salads. Dinner patrons are offered a couple of specials each night depending on what local fish is available or a steak dish along with the regular menu. Jackson sees her restaurant’s location
as another factor in its success. “St. Helena is a very close knit group,” she said. “I’ve been overwhelmed with how everybody has taken me in and has been very, very complimentary not only toward the amazing work that the kitchen does here but with everybody.” “It’s been a tremendous learning experience in a good way, with not only having the advantage of having so many people that are supportive of us, it helped tremendously that my Mom was born and raised here, just with the farmers that are out here,” she said. “They’ve all grown

up together —my grandparents grew up with their parents — so it does go back several generations.” Jackson’s husband and daughter Holly, 22, lend a hand as well. “My daughter does everything that I do, she truly helps me out tremendously,” she said. “We’ve kind of created our own family here — we all work together real well, pulling for each other,” she said of her staff. New life springs from ashes at Old Sheldon Church near Beaufort (historical and free)
church construction was South Carolina’s Lieutenant Governor and he also assisted in laying out Savannah. His tombstone is currently displayed in the graveyard.
The Old Sheldon Church Ruins and Graveyard are about a 20 minute drive from both Beaufort and Interstate I-95. The centuries old church is a South Carolina truly inspirational historic site attraction the whole family should enjoy. Here lay the remains of Prince William’s Parish, better known as Sheldon Church (named after Bull’s family ancestral home back in England). William Bull, the Commissioner for the Sheldon
Interesting Facts 1. The Sheldon church was built between 1745 and 1755 and it was burned twice. First by the British Army during the Revolutionary War, then by Sherman’s troops at the end of the Civil War. Although never rebuilt the church’s pillars and outside walls remained erect withstanding the test of time. 2. The church recently became a very popular location for wedding ceremonies. The spiritual ruins are

testimony of endurance in the face of hardship. Surrounded by green lush grass and serene oak trees the Old Sheldon Church is an inspirational and unforgettable wedding setting. With each matrimonial ceremony new life springs from the fire ashes. 3. A public service free for anyone to attend is held annually on the Second Sunday after Easter. 4. An old hand-operated water pump close to the gate is still functioning and is quite popular with kids. 5. There is space for only 2 two cars to park safely on the side of the road; however there is an event parking overflow across the gate.
Where The church is located on Old Sheldon Road off of highway 21 between Beaufort and Yemassee. Directions: After the intersection between Hwy 21 and 17, continue on Hwy 21. Turn right on Old Sheldon Road. About ¼ mile after you reach a stop sign the historical marker and gate entrance will be on your right. Coming from I-95 exit 33 at Point South and continue about 10 miles and turn left on Sheldon Church road directly across from Bull Point Plantation. Go about two miles and you will see the church ruins on the right side of the road.

Living in the Lowcountry is a gourmands dream! Buying from a licensed local seafood market is your best bet or from a dock. Keep some of these tips in mind when purchasing your seafood 1. Make sure you ask the country of origin stores and dock markets are required by law to post this information. Just because a market is on a dock doesn’t mean all their products are coming from local waters. 2. Also ask if it has been previously frozen you can get sick if you make Ceviche from old fish and shell fish. 3. Ask if it was farm raised. A few years back everyone had a fit about farm raised fish being unhealthy, there are some origins I will not buy from, but the U.S. has gotten
stricter on things so it’s a lot safer now. 4. Look at the fish and see if the liquid is clear and that the blood isn’t a reddish brown. 5. Be sure you smell the fish, a sour aroma is a clear indication the fish isn’t as fresh as it could be. 6. When buying a whole fish make sure the eyes are not cloudy that is the first sign of fish on the verge of being old. or authentic Lowcountry cuisine you can’t beat Dye’s Gullah Fixin’s in the Pineland Station Shopping Mall on Hilton Head Island. Chef Dye Scott-Rhodan serves up signature dishes like crab cakes, shrimp and grits, fried chicken and ribs made from scratch with fresh ingredients the way she learned to cook in her mother’s kitchen. Dye’s parents Nathaniel and Earline Newton Scott raised 10 children in Ridgeland. Her father was a farmer and her mother fed their big family home-cooked meals from recipes handed down through the generations. How to make perfect sweet iced tea In a medium-size saucepan, heat 2 cups of water with 2 cups of sugar and bring to a boil; boil for 5 minutes. Remove saucepan from heat, and steep 8 regular size tea bags in sugar/water mixture for 5 minutes. Remove tea bags and allow mixture to cool slightly before pouring into a gallon-size pitcher. Add three quarts cold water to the pitcher. Allow tea to come to room temperature before chilling in refrigerator. To serve, pour chilled tea into iced-filled glasses. Makes about one gallon. Spiced Indian Chai Iced Tea Chai Tea is a spiced milk tea beverage that originated in India. Some typical Indian Chai spices (called “masala”) include ginger, cloves, cinnamon and cardamom. 6 cups water 2 cups half-and-half 8 regular size tea bags (Darjeeling or English Breakfast) ¾ cup sugar (or to taste) Masala spice mixture 6 pods cardamom, cracked open 6 whole cloves 2-inch piece cinnamon stick, plus more for garnish 2 (1-inch) pieces crystallized ginger

Combine masala spices and water in a saucepan. Boil for 5 minutes. Remove from heat, add tea bags and steep for 10 minutes. Remove tea bags and strain mixture into a large pitcher. Add sugar, stirring until sugar is dissolved. Bring to room temperature, then chill. Once tea is chilled, add half-and-half, stirring to blend. Fill tall glass with ice and pour Chai tea over ice. Garnish with a cinnamon stick. Serves 6. Sweet Tea pointers * Allow brewed tea to cool to room temperature before placing in refrigerator. Tea that is cooled too quickly will become cloudy. * Never add ice to hot tea. Add ice to drinking glass and pour chilled brewed sweet tea over the ice cubes. * To avoid diluting iced tea, ice cubes can be made from brewed sweet tea.
Peach Bread Pudding
Recipe by Eric Sayers-Executive Chef Beaufort Memorial Hospital Ingredients: For the Bread Pudding: 4 cups diced bread, day old French bread preferably 2 cups fresh local peaches, sliced and peeled 1 cup half and half 1 cup heavy cream 2/3 cup sugar ¼ cup brown sugar 1 tsp ground cinnamon 4 eggs, slightly beaten 1 cup peach puree (see recipe below) Combine all ingredients and place in a greased oven proof pan. Let soak for 24 hours, bake at 350 for 35-45 minutes until center is firm. Serve warm with vanilla sauce and ice cream. Enjoy For the Peach puree: 4 fresh peaches 1 cup orange juice ¼ cup white wine such as Chablis 1 cinnamon stick 18 • www.Ediblesmag.com
Juice of one lemon ½ cup sugar Combine orange juice, lemon juice, wine, cinnamon stick and sugar in pan, bring to a simmer. Cut peaches in half, remove pit and place in simmering liquid. Cook until tender, remove and peel. Reduce liquid by half, remove cinnamon stick and discard. Return peaches to liquid, remove from heat and puree until smooth, cool. Mixture should be slightly thick. * If fresh peaches are unavailable, canned peaches can be substituted, if they are in heavy syrup, rinse before combining with other liquids.
Marinated Grilled Shrimp Recipe by Donald Whistler Ingredients: 3 cloves garlic, minced 1/3 cup olive oil 1/4 cup tomato sauce 2 tablespoons red wine vinegar 2 tablespoons chopped fresh basil 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 2 pounds fresh shrimp, peeled and deveined skewers Directions In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add
shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade. Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
Fried Green Tomatoes with Bacon Dipping Sauce Recipe by Peggy Beck The Joyful Palate Catering & event Planning peggy@thejoyfulpalate.com: 843-422-0435 Ingredients: 8 pieces bacon chopped 3 medium tomatoes sliced 1/3 inch thick 2 large eggs 3/4 cup buttermilk 1 tsp chopped fresh dill 1/2 cup all purpose flour 1/4 cup cornmeal 1/4 shredded Parmesan cheese 1/2 sea salt 1/8 tsp cracked black pepper vegetable oil for frying tomatoes In a large bowl whisk together eggs, buttermilk and dill. Add tomatoes and let sit 10 minutes. In a 4 qt pot render bacon until crispy remove bacon. Add oil to bacon drippings to about an inch. Heat oil. In a medium bowl combine flour, cornmeal, parmesan cheese, sea salt and pepper. Dredge tomatoes into flour mixture, add to grease and fry until golden brown. On a plate lined with paper towels allow fried tomatoes
to drain excess oil. For presentation stack tomatoes unevenly serve with a portion of Bacon dipping sauce. Bacon dipping sauce 8 oz softened cream chesse 8 oz crumbled bleu cheese 1/4 cup half & half 1/2 cup Hellmann’s mayonaise 3 TBLSP Frank’s Red Hot Sauce 2 tsp worchestershire sauce 1 tsp garlic powder cracked black pepper to taste 2 green onions Add all ingredients into a food processor until well blended. Serve dip on the side of the tomatoes. If you prefer the dipping sauce to be thinner add half and half 1 TBLSP at a time until you reach the desired consistency.

Clean your microwave: An easy remedy to that yucky baked on food out of the microwave: Just mix 3 tablespoons of lemon juice with 1 ½ cups of water in a microwave safe bowl. Microwave for 5-10 minutes, allowing the steam to penetrate the on the inside walls of the microwave. Wipe away the softened food with a dishrag. 3. Deodorize your garbage disposal: Our garbage disposals have the tough job of grinding up our throw away foods. Over time, the foods we shovel down the drain begin to leave a bad smelling residue. Lemons are the perfect natural remedy. As you use lemons, save the peels in a Ziploc bag for later use. Just drop them down the
disposal once a week to keep your drain smelling fresh. 4. Keep produce fresh: No one likes to eat browned apple slices and no one has to. After slicing apples, just sprinkle with a mixture of lemon juice and water to keep them crisp and white. This also works for other produce like avocadoes and potatoes. To keep guacamole fresh and bright green, just squeeze fresh lemon juice on top. The lemon juice will add a great flavor to the guacamole too. 5. Make lemonade: After all of the cleaning and deodorizing, enjoy a glass of lemonade made from freshly squeezed lemonade. 2 cups sugar, 1 cup hot water, 2 cups fresh lemon juice, 1 gallon cold water, 1 lemon, sliced. In a gallon container, mix the sugar and hot water until dissolved. Add lemon juice and fill the remainder of the way with cold water. Serve over ice and garnish with lemon slices.

It’s easy to get to beautiful Beaufort County - just a short drive from I-95 or US 17. Both roads run north-south along the east coast of the United States and connect to other interstates and major highways. Driving south on US 17, exit onto US 21 at Gardens Corner and enjoy the scenic marsh views going approximately 20 miles east into the downtown Beaufort area. Driving south on I-95, take Exit 33 at Point South and connect to US 21 for a direct route into the center of Beaufort. Driving north on I-95, take Exit 8 onto US 278 toward Hilton Head Island and directly into the Bluffton area and the southern part of Beaufort County. This route connects to SC 170, across the Broad River into the city of Beaufort in the northern part of the county.
