Since purchasing Elders Real Estate Port Macquarie in 2017, David saw a unique opportunity in a market place that was open for change. I am writing this on the last leg of our amazing European holiday in the hope to inspire, provide you with a few good travel tips and give you a bit of an insight to what’s happening O/S in terms of fashion. Time to dust off those passports and start living! Flying Sydney to Mykonos was a dream come true. Stylish white rendered buildings line the coastline beyond the crystal clear turquoise water. Incredible luxury boats mored perfectly along the beautiful coastline is a view you definitely do not get sick of waking up to! We chose to stay at ‘Mykonos Blu’, incredible views, comfortable, minimalist stylish interiors and a very ‘instagramable’ pool area. Trend alert - crotchet knits, twin sets, linen (especially white) all with a funky boho feel.
For the next part of our journey we flew Mykonos to Croatia. There we stayed at ‘The Pakace’ Debrovnik for 1 night and somehow got upgraded to the presidential suite! With breaktaking views over the magical islands that surround and a beautiful sunset dinner at one if the in-house restaurants, I think that may be the closest we get to seeing how ‘the other half’ really live. We also visited the ‘Old Town’ a must do full of amazing history, great restaurants and beautiful beaches. What to Wear - Anything goes in Dubrovnik, it’s extremely hot so basically swimmers, sandals and a simple cotton dress works best Instagram
Next we set for 3 days with our great friends Ollie & Rach and chartered a boat to sail around the ‘Elephante Islands’. Wow, wow wow! Is all I can say. Croatian waters are my favourite so far. I couldn’t even begin to explain how clear, blue and - with the perfect temperature was absolute bliss! Our wonderful captain Bruno was excellent and provided us with many different islands to stop for lunch, we had a great night at a beach club and best of all the was being with our friends, music on, drink in hand and nothing to worry about except our next swim! Must haves - swimmers, denim or linen shorts & top, sunscreen and hat.
The drive from Dubrovnik to Split took about 3 hours. A very windey road that follows the coast most of the way. I can’t say I loved Split but I have been told Havar is amazing so if you are planning on going make sure you organise a day trip to this gorgeous island. We arrived in Rome about 5.30pm just in time to unpack our things and head to the rooftop bar for afternoon cocktails! We stayed at the ‘W’ which also has a pool on the rooftop which I have since been told is very uncommon. We absolutely love staying a W Hotels around the world so if you haven’t tried it - I urge you to check it out, you won’t be disappointed!
We had a fabulous time in Rome, the history and architecture is next level impressive.Be ready with your best walking shoes though - we averaged about 15kms per day and with temps around 35 degrees made it a long day. Plenty of truely amazing restaurants (we are at Michelin star restaurant within the Eden Hotel and partied the night away at ‘The Sanctuary’ Rome is a city you must visit, the fashion, food and atheism is of the highest level and just a beautiful experience.
From Rome we hired a private car to take us to Naples where we caught a speedboat to the island of Capri! This little town has a funky little vibe, very busy but with some great shopping and picturesque scenery. If you like getting dressed up - Capri is the place to do it. We stayed at a quaint private villa high up in on the hill called Villa Olga. Clean, cool and comfortable (tick, tick, tick) plus amazing views. I would however recommend you book a place with a pool (unfortunately we didn’t assumed we were closer to the water) so after a long day of shopping a cold shower it was.
We spent 3 days in Capri and then took another chartered speedboat to Positano! This place is literally the images you see in ‘European summer prints’ crystal blue water (Positano is on the Amalfi Coast), cute and colourful buildings styled with an Italian influence set in to the high rock hills and a fabulous coastline littered with beach umbrellas and sun beds! Plenty of amazing outfits here too however the shopping is more ‘market style’ then designer but still a great way to waste a day if you ever get sick of the beach.
Finally we have arrived in Dubai where we will be for our last 3 nights. On first impressions - 3 days does not look enough! Driving through the city and arriving at our accommodation (The Atlantas) is like nothing I’ve ever seen before. Everything is big, bright and HUGE and I can see that just getting around the hotel could easily take up a day or two as it is host to aquariums, water park, wave pool, restaurants, shopping and so much more. On my to do list is shopping of course however I am planning to hit the shopping centre and see if Dubai lives up to its reputation of being the best shopping in the world!

FOR THE CAKE:
Nonstick cooking spray
1 cup shelled pistachios
¾ cup good-quality extra-virgin olive oil
3 large eggs, at room temperature
2 teaspoons vanilla bean paste (or extract)
Zest of 1 lemon (roughly 1 tablespoon)
Juice of 1 lemon (roughly 3 tablespoons)
½ cup buttermilk
1½ cups granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt
FOR SERVING:
Zest and juice of 1 lemon
1 cup powdered sugar
Additional pistachios, chopped Lemon slices
Fresh berries
FOR THE CAKE:
1. Preheat the oven to 180C. Liberally spray a 9-inch springform pan with nonstick spray.
2. Place the pistachios in a food processor and pulse until they are finely ground.
3. In a large mixing bowl, whisk together the oil, eggs, vanilla, lemon zest and juice, and buttermilk. Whisk in the sugar.
4.Measure out 1 cup of the ground pistachios and add to a second bowl (reserve the rest for serving). Whisk in the flour, baking powder, and salt.
5. Fold the dry ingredients into the wet ingredients, stirring until everything is just combined. Resist the urge to overmix (this results in a dry, dense cake).
6. Pour the batter into the prepared pan. Bake for 4050 minutes or until golden brown around the edges and set in the middle (insert a toothpick in the center and if it comes out mostly clean with a few moist crumbs, the cake is done).
7. Allow the cake to cool completely in the pan and then carefully run a knife around the edges and release the springform sides. Transfer to a serving plate.
FOR SERVING:
Whisk together the lemon juice and zest and powdered sugar until a thick but pourable glaze forms.Pour the glaze over the cake, as liberally as you want. Garnish with chopped pistachios, lemon slices, and fresh berries – all optional!
Slice and serve!
