This issue features the third and last chapter in the “Cooking in Color” series and these recipes are my favorite ones in the series. As the season changes we, too, must embrace the new beautiful colors we can find at the market and incorporate them into our favorite fall dishes. Waxahachie Symphony Association’s NEW SEASON hits just the right note. BY MELISSA CHAPMAN

The Waxahachie Symphony Association will officially commence its 2015-16 season of classical, Pops, and jazz concerts in September. The association has brought beautiful music to Waxahachie since 1976, and this season is no different with a series of five diverse performances with something for all tastes and interests. “I’m thrilled about the new season, I think it will be a good year for us. There is more variety going on from concert to concert,” said WSA President Sherry Dyess. “We’re opening with a brass concert that mixes jazz, blues and swing, and then hosting a Pops concert with iconic music from the movies, and will round out the year with a classical performance by the Fort Worth Symphony Orchestra.” The WSA begins their 39th season on a triumphant note with a concert by Imperial Brass on September 19. A versatile group with a wide-ranging repertoire, the Dallas-based Imperial Brass draws on some of the finest talent in the Metroplex. The 11-piece ensemble will perform a full concert of music from classical to jazz. Called “One of Fort Worth’s best kept secrets!” the Fort Worth Civic Orchestra will present a Pops concert featuring “Music from the Movies” on October 17. The audience can look forward to hearing memorable pieces from “2001: A Space Odyssey”, “Pirates of the Caribbean”, “The Godfather”, “Downton Abbey” and “Lord of the Rings.” This year, season ticket holders will receive the best seat in the house with new reserved priority seating at each performance. They’ll also be invited to a variety of member events throughout the year. Season tickets start at just $50. “Like” the WSA on Facebook to keep up-to-date on all the concerts and happenings. The dresses are looser fitting and have this magnificent lightweight appearance. There is a no-frills feel to these bridal adornments. They come in many fabrics from lace to silk.

ECLECTIC SEATING Recently I noticed that my brides want to add seating to their events, but they don’t want the usual chivari or the wooden garden chair. They want more modern, but at times still rustic. There are so many options beginning to pop up around DFW that will tickle any bride’s fancy for seating. A few of my personal favorites are the wooden folding chairs, metal high back chairs and the plantation chairs (that have two different versions). The wooden folding chairs started bursting on to the wedding scene over a year ago. Their appeal is for that bride who wants something a little bit different than your classic wooden folding chair. The only drawback to these chairs is that they aren’t built for anyone over a certain height and weight. Be forewarned! Metal high back chairs are for that bride who just flat wants something that she hasn’t

seen before, is a little edgy and wants to add a fun design element to her wedding. I adore how the chairs can go from a loft to a casual garden wedding. They pair perfectly with farmhouse tables and long tables with just white linen. The last chair option that I have seen recently more and more is the plantation chair. They are a little of a spin on the traditional chivari chair, but they have a rustic edge that truly lends itself to the modern bride. My favorite part about these adorable seats is the “X” on the back! I honestly can’t get enough of them. They come in two different varieties: wooden “X” backs and metal “X” backs. Both styles are completely interchangeable.

ORGANIC BOUQUETS This trend burst on the scene right as I was starting my wedding and event planning business. These bouquets are by definition “organic”, so they mimic how they would look in nature. They celebrate the freedom and beauty of all flowers. At first glance, this style looks messy, unfinished, and not practical for a bride to carry. These bouquets are easier to carry because no longer do you have to worry about keeping your bouquet just straight up and down. This bouquet was designed to be viewed from various angles. Photographers usually shoot them from all over, because each photo comes out

completely different with the look and feel. This bouquet is a stunning addition to your wedding. Please note that with wedding trends, you can incorporate all of them or just one of them into your wedding day. It is up to you, the bride, to decide what look that you like the best. Remember that trends happen, because there was a bride who wanted something unique and couldn’t find it.

Wedding paper can do more than save the date.

Paper Planning He popped the question, and you said yes. Now what? Many couples rush in the early months of engagement to book a venue for the ceremony, choose a photographer and event designer, but often paper products are overlooked until six months out when traditional save the dates are sent out to wedding guests. For arguably the most important day in your life, nothing should be left last minute, especially the way in which you invite your guests. Here are a few questions to ask yourself as you decide on wedding paper and why it is important to tackle these decisions early on in the engagement. Discuss with your fiancé if you want custom paper goods or will be looking at a boutique in your city or online retailer. Custom designers require a much longer lead time than most stationery boutiques online, therefore if you have someone in mind for your big day it’s important to make the initial deposit and secure a spot on their calendar. How important is paper to the overall vision of your big day and how does it fit in your budget? Going back to choosing custom design versus ready-made, it’s important to look at costs in terms of the big picture. Know that custom work will most likely be double what you

would pay for a retailer. If you have to skim somewhere maybe look at custom work for save the dates and invitations but perhaps something quick and easy online for menus or programs. No need to cut the margarita machine rental or that awesome DJ! Lastly, I often advise potential clients to create a series of lists: a paper wishlist so-tospeak. Divide it into three columns: what is a wish, what is essential and finally what can be omitted; much like when creating your guest list. We can look at rehearsal dinner invitations like that cousin fourth removed you’ve seen only once in your lifetime. Your wedding paper serves as the first glimpse into your big day, and it is a fun way to incorporate your vision and family traditions. Do you both hail from the same college? Why not include your school spirit in a custom map or maybe highlight where the proposal took place. Wedding stationery etiquette is ever changing in this digital age, and some couples prefer online RSVPs and accommodation information. Just remember when investing in anything for your wedding day, hiring vendors you trust to bring your vision to life is number one.

On the day John and Allison got engaged, John said several times throughout the day before he proposed, “this is the best day ever!” Not knowing that he was about to propose, Allison thought he was just having a really good day! From the entrance song to the cake topper, “Best Day Ever” became the theme of their wedding. Allison had known that she wanted to have the reception at the Chautauqua for some time. The first thing we did was reserve it and the church, then we met with Teresa Choate. She kept us focused and was there to answer any questions and give us advice along the way. I don’t know how we would have gotten through the wedding day without her! She kept us (5 Kemp women) on task and somewhat on time!! I know that we were a challenging group as we all wanted to laugh and chat throughout the day! I had a wedding planning notebook that helped to keep me organized. Part of that notebook included old wedding issues from Living Magazine. I used them for ideas for vendors as well as décor. In fact, the flowers on the cake were inspired by the cover of one of the issues. We used Fresh for the flowers. They did a beautiful job and were so easy to work with. Since Teresa works with Henry Frayre at Fresh, it was nice to be able to discuss décor and flowers with her. I was amazed at how we could give them a picture of what we wanted and the product would end up exactly the same!

All print material was designed by Jennifer (my daughter and ECLM’s creative director). I was amazed at the things she did and creations she came up with! I know that she is my daughter, but I personally know that she is extremely gifted! The next major decision was photography. We looked at all of the wedding photos in Ellis County Living Magazine and decided that Ami Trull would be a good fit as our photographer for both the wedding and the bridals. She exceeded our expectations and did a beautiful job. Brent Hughes did the photo booth, which was a hit! It was an open photo booth allowing for large group shots and the pictures were all printed for guests to take home. Charlesa Sims made the wedding cake. It was delicious and looked exactly like the picture we’d shown her of what we wanted. What an overwhelming honor it was to get to stand next to my daughter on her wedding day, not only as her Matron of Honor but as her best friend. Words cannot even express how special that was for me. There were many unique things about the wedding: Allison’s engagement ring has diamonds in it that came from my mother’s wedding ring and John’s grandmother‘s jewelry; Allison wore my wedding veil; they toasted with the same goblets that Galen and I used at our reception; she wore the same necklace I wore on my wedding day (which belonged to my mother)

and she had a sixpence in her shoe that Galen and I brought back from London in 1987. It was such a fun day - it only went by too fast! Allison and John went on a wonderful honeymoon to Tahiti. While they were in Bora Bora, they went on an impromptu boat trip with what turned out to be the same captain that took Galen and I out in Bora Bora in 1986! The Bride

I have always known I wanted to get married in the First United Methodist Church of Waxahachie, my family’s church. It is such a beautiful building with amazing stained glass windows in the sanctuary. For the reception, we chose the Chautauqua. I love the historic homes and buildings throughout Waxahachie, and I remember learning about the Chautauqua in Texas History class. John and I both wanted to have our wedding at the church and reception somewhere unique, so the Chautauqua was a perfect choice. It was picture perfect too, as was captured in the wonderful photos by Ami Trull. She was so fun to work with and was able to create any look we asked for - we don’t have enough wall space to hang all the photos we love! For the flowers and decor, we showed Fresh

some ideas we liked and they transformed the church and reception site beautifully. G-Texas, out of Dallas, catered the reception and the food and service were great. One of the most exciting, and stressful, endeavors was searching for the perfect dress. My sisters, mother and I went to several bridal salons in Dallas, and while I knew I wanted lace and a vintage style I had to try every look just to be sure. When I put on the perfect dress, I knew. I could also see it on the faces of my mother and sisters. I’m pretty sure they were all crying. Jennifer, my sister, designed all of the printed materials - the save the dates, wedding invitations, programs, information cards for tables, and countless other projects. She did an amazing job and was able to create exactly what I wanted…only better. Every time we had an idea, she would made it happen. She may have been a little abused. I will forever cherish the moment my dad came in the room to see me in my dress for the first time. It was such a special moment and very emotional for everyone in the room. I also loved the moment I finally walked through the doors of the sanctuary to see John, my family and so many people we love there to support us. I was overwhelmed. I have known for many years that I wanted my mother to be my matron of honor. She really is my best friend, and I can’t imagine having

someone else stand beside me and help me plan my wedding. We had a lot of fun planning and spending so much time together. John’s dad was his best man and his two sons were groomsmen. We are both very close to our families. Planning the wedding ended up being much more fun than I thought it would be...I even wish I could do it all again! Advice to brides: Hire a planner or day-of planner to help, and use a travel agent to book your honeymoon. We worked with Stephanie Medina with Beach Bliss Honeymoons and Destination Weddings. The Wedding Planner

I had come to know this special family through all of the weddings of past clients’ they had attended, or participated in as bridesmaids, over several years. I had always secretly hoped when one of the Kemp Sisters got engaged I would get “the call” to assist in planning and decor design. I was blessed to receive this call. From the very beginning, I knew this wedding would be special. How could it not be? The other three sisters would be bridesmaids, the MOB (mother of the bride) would be the matron of honor and the FOG (father of the groom) would be the best man. Truly so much

love for each other in this family. The ceremony was magical, starting with Allison’s gown. I will never forget John’s face when he saw her, escorted by her father, Galen Kemp, walk down the long aisle of the First United Methodist Church. And yes, for everyone that knows the Kemp girls, we did start on time! Allison knew she wanted a relaxed feel to the reception, lots of mercury glass and an eclectic garden feel for the decor. This was achieved by bringing in 8-foot banquet tables with grey linens placed end to end, using some of the historic benches at the Chautauqua. We also had mahogany garden chairs and flowers in the color scheme of pale peach, soft pinks, whites and creams. The Chautauqua was full of family and friends. The cafe lighting glowed and the dance music played while the guests danced the evening away. “The Eyes of Texas” was of course included in the reception, along with some of the most memorable toasts ever given by David Shannon and Cindy and Galen Kemp to the new couple. When it was time for the evening to come to an end, the last dance was to the track played during Cindy and Galen’s first dance at their wedding. Old Bison Ranch

Cherina and Josh Curry met at Cowboys dance hall the night before Thanksgiving. They both went out dancing with friends. After talking to each other in the beginning, they actually weren’t very interested in one another, but by the end of the night all was history. Josh proposed on a romantic getaway to Cozumel with another couple. The two couples were on the beach at sunset taking pictures, and while Cherina was playing photographer, Josh got down on one knee! Cherina wanted a short engagement and a fall wedding so she called Bliss Event Management to help plan her flawless day. The two were married on a perfect Friday evening at Old Bison Ranch in Forreston, TX. The couple chose Old Bison Ranch because they wanted an outdoor wedding with an option to pull their guests out of the elements if Mother Nature’s schedule was different from their own. The weather could not have been more perfect that day. The sun was shining and the first cool fall breeze was in the air. The bride

walked down the aisle, escorted by her father, in a beautiful chiffon A-line dress, embroidered at the waist. Cherina followed a soft pastel palette. The groomsmen wore navy slacks with a light blue oxford shirt. Her flowers were very unique. She chose astilbe instead of using only baby’s breath. The centerpieces included hydrangeas, with pops of lavender and pink in roses. She mixed and matched chandeliers and log slices, but all of the tables had whitewashed deer antlers to bring in her husband’s style. Following the ceremony, their guests enjoyed barbecue, served by none other than Mike Anderson’s BBQ, famous for their service and cheesy cornbread casserole. Later in the evening, guests enjoyed diving into a four-tiered wedding cake choosing between two flavors; red velvet island spice or peach amaretto. Cherina and Josh wanted to make sure everyone was entertained and provided excellent music, dancing and a photo

booth for their guests to take home lasting memories. Cherina and Josh exited their reception as their guests lined the drive with sparklers. Cherina was an absolutely stunning bride with impeccable taste, and Josh couldn’t take his eyes off of her all night. The evening was seamless beyond compare. It is always endearing to be able to witness two people join in marriage with full and prayerful hearts, and an amazing support system from their family and friends. This is how a wedding is meant to be. This is love. It was truly a pleasure working with the couple and being able to be a part of such a memorable day.

07.24.15 Willow Creek Wedding and Event Venue Caitlin looked beautiful as she walked down the aisle to marry James just before sunset on Friday, July 24, 2015 as 75 guests watched the ceremony at Willow Creek in Waxahachie. The first time James and Caitlin looked at Willow Creek they knew they had found the perfect countryside setting for their big day. They contacted Shannon Almon with My Daughter’s Wedding and Events to help with the wedding planning. The vision that Caitlin had for her wedding was simple elegance. Kevin Edmonson with Accent Floral Design had amazing designs in mind to set off Caitlin’s chosen colors of wisteria, white, and grey. Caitlin’s bouquet was a stunning cascading cluster of lavender cymbidium orchids, open white roses, wax flower, purple stock, and dusty miller. For the ceremony, Kevin suggested using eight lanterns with white hydrangeas, white roses, white stock, purple statice, caspia, and foliage on both sides of the aisle with white rose petals sprinkled down the aisle. Five other centerpieces consisted of a lush design of white hydrangeas, white roses, purple statice and lavender stock with foliage. Shannon set an appointment for a food tasting with Linda Rodriquez at My Sisters Affair Catering. It was decided that Linda would make a beautiful display of cheese and fruits for the cocktail hour following the ceremony. The menu for the reception would begin with a spinach and strawberry salad followed by beef medallions, grilled chicken, cheesy scalloped potatoes, and roasted asparagus. Ending the meal was a lovely champagne toast with delicious bride and groom cakes made by Sarah Hadlock. The wedding turned out perfectly and DJ Arjun kept the party going at the reception with a lot of good music. Jen Hughes Photography captured the whole day with beautiful pictures to forever treasure the wonderful memories made that day.

When I first became engaged, I started the planning process by looking on Pinterest, because we all know that Pinterest is a girl’s best friend! I got lots of ideas after looking through several pictures and seeing what I liked and what I did not.

husband and wife team who will truly bend over backwards to make sure you get what you want for your wedding photos. They looked at picture poses I liked and worked with crazy ideas I had, and made it all work.

I knew I was going for a soft and romantic feel with lots of candles and dimmed lighting. I chose light pink and gold as my colors.

One of my favorite photos is of me and my bridesmaids holding our bouquets in the shape of an “H”. I also wanted a groomsmen picture that looked like the guys were posing for GQ, and that photo is definitely a framer!

My first step was to book the venue. I knew that Collin and I wanted to get married where we met, which was at our church, Brown Street Church of Christ. After we scheduled the date, we called Jason and Laurie with JD Ruiz Photography. I had a friend who used them for her wedding and she raved about them. They are a fabulous

of Commerce members and I had connections with them through my job as Membership Director with the Chamber. Uncle Willie’s Pies did my appetizers, wedding cake, and pie bar. Collin didn’t want a groom’s cake, so we had a groom’s cobbler and pie bar with ice cream! I went in knowing exactly what I wanted my bridal cake to look like…layer by layer. CiCi was awesome and drew out what I was talking about. The cake was fantastic! Pearls and Lace Events knew exactly what I wanted and Sherri helped make a few of the banners and crafty things I didn’t have time for. She also helped set everything up the day before.

From the beginning of our relationship, our goal as a couple was to love each other unconditionally and to have lots of fun! Our priority in life is to be partners, challenge each other, and to go on grand adventures. We wanted our wedding to be no different. Tres is a seventh generation Waxahachie resident. Patrick Road and Patrick Street in Waxahachie were both named after his family. His family has deep traditions and lineage in Waxahachie, and we wanted to honor that somehow. We chose to get married steps away from the house he grew up in, in a barn on Patrick Road. With the help of Susan Baker at Bliss Event Management and our families, we were able to transform the barn into the wedding we had always dreamed of! Later, after the wedding, Tres and I both talked about how there was just a total peace over the whole day. Neither

one of us were even the slightest bit nervous. We wanted our wedding to be a blast. We wanted people to come out and celebrate with good food, their favorite drink, and lots of dancing under the stars. Outside the barn, the guest table was covered in the wedding pictures of our grandparents, parents, and siblings. The barn was transformed with 200 white folding chairs, strings of café lights, and beautiful bright colored flowers. When it came to the flowers, the more colorful, the better. We installed a dance floor and were fortunate to have Barry Wolverton from KBEC, be our DJ. We wanted to be non-traditional when it came to the wedding cakes. Tres doesn’t enjoy sweets, so we chose his favorite snack (popcorn), in lieu of a groom’s cake. For myself, I am a BIG sweets person, especially when it comes to doughnuts. So,

instead of traditional wedding cake, we purchased hundreds of Krispy Kreme doughnuts. We had different flavors and colors, and they even custom made some that had lavender colored icing. We chose My Sister’s Affair to cater, and the food was delicious. We had grilled steak skewers, mashed potato martini glasses, and a salsa bar. After hours of dancing and having a blast, we exited to all of our guests throwing lavender on us. It filled the air with a wonderful smell. We got into our “getaway vehicle” which was a tricked out Razor ATV that belonged to our cousin, Louie. All in all, our wedding was PERFECT for us. It was everything we wanted and so much more. It was literally a dream come true! We could not have pulled it off without our families, and The Bliss Event Management team.

Love Wins

On Friday, June 26th the United States Supreme Court legalized same-sex marriage, no longer giving states jurisdiction on this issue. The following Monday I received my quarterly email from Living Magazine about the next article submission deadline…that happen to be “The Wedding Issue”. The wheels instantly started turning. Writing on a hot button issue like this is touchy and, to be honest, I normally try and steer clear of them. I am not a pot stirrer by nature. But for some reason I decided that I wanted to take a run at this one. My angle was to dig a little deeper than this ‘topic’, this ‘issue’, or this ‘right’. Whichever noun you want to use. I wanted to get to the bare bones of it and answer a simple question. What is your foundation? Social media was flooded with both positive and negative backlash in the weeks that followed this decision. The White House was illuminated like a rainbow. Thousands of Facebook profile pictures followed suit. The masses seemed divided…are you for or against? The foundation question takes you beneath the surface level issue of same-sex marriage, or homosexuality. Our nation was founded by God-fearing men. The pledge of allegiance states “One Nation Under God”. US currency reads “In God We Trust”. This is evidence that I do in fact live in a nation that trusts God. Given that, I will look at same-sex marriage through the lens of a believer.

but homosexuality is different. It’s different because as a nation we now proudly accept and celebrate a sin that God specifically says will keep you from the kingdom. These other sins listed in this scripture are evidence of human frailty and as a nation we do not judge them as harshly as we have homosexuality. What if you applied universal law to every other sin mentioned? There would be an agenda for the drunkard, the thief, the adulterer and so on. What would that say about how we treat human frailty and imperfections? God’s love measures all of our sins equally in his eyes. There are two distinct sides to this coin. The first being if your foundation is not God and you are in a same-sex marriage or relationship. If this is you, I have good news, through the eyes of a believer you should never be judged by us. That is not our job. You should also not be called names, ridiculed on social media, or discriminated against in any way. The flip side of that coin would be if your foundation is God. How should you treat homosexuals? You show them love. Pe-

riod. That’s it. They shouldn’t feel a finger being pointed at them, they should see arms open wide. Evidence of Christ’s love for everyone. “Hatred stirs up dissension, but love covers over all wrongs” Proverbs 10:12. The United States is 75% Christian, depending on the poll used. We pledge One Nation Under God, and In God We Trust. Instead, we contradict ourselves legally about God’s command on homosexuality. That is a little discerning to me. When this verdict was given back in late June, the gay and lesbian community bannered the slogan “Love Wins”. I argue “Love Won”. It won a long time ago when Christ died on the cross because he loved all of us, regardless of our sexual orientation. What is your foundation? If it is God…then simply love. Billy Graham said it best, “It’s the holy spirit’s job to convict, God’s job to judge, and my job to love”. But if your foundation is not God, I leave you with one more quote from Rev. Graham. “I’ve never met a person who regretted giving their life to Christ – and neither will you.”

There are ten types of unrighteous people mentioned in 1 Corinthians 6:9-10. Not just homosexuals. Do you not know that the unrighteous will not inherit the kingdom of God? Do not be deceived. Neither the sexually immoral, nor idolaters, nor adulterers, nor male prostitutes, nor homosexuals, nor thieves, nor covetous, nor drunkards, nor revilers, nor extortioners will inherit the kingdom of God. That verse covers a number of sinners, SUPREME COURT ON JUNE 26TH, 2015

1. Fry chilled, cooked polenta in a skillet over medium heat and set aside. Wilt fresh greens in a sauté pan with 1 tablespoon of olive oil, salt, pepper and red chili flakes for 5-7 minutes. Remove greens and set aside

2. Add the eggplant to pan and sauté until soft. Add garlic and sauté for 30 seconds and add the tomatoes. Let the sauce cook for 10 minutes and stir in the greens.

Pecan Grove Driftwood, Texas A casual outdoor wedding is a breath of fresh air, literally and figuratively speaking. That is especially true if your wedding is being held at Pecan Grove in Driftwood, Texas. This magnificent venue is beyond majestic. Not because it is formal and elegant, but more because it is God’s creation in full bloom. Under a rustic arbor covered with flowers and vines dripping down from above, my grandson, Rhyan Phillips married his high school sweetheart, Alyssa Harris on March 28th of this year. Behind them, as they said their eternal vows, was the soothing sound of rushing water. The mood was so sweet as the perfect sunny day reminded them that God was with them for their blessed union. Rhyan and Alyssa compromised on the style of the wedding. Alyssa wanted it to be a little more formal, and Rhyan wanted a

simple, more casual wedding. Theirs was a perfect blend of both. This fabulous venue offered the romance of nature and the casual spirit of great Salt Lick BBQ and Texas fun. The best of both worlds. Alyssa’s gown was bejeweled with a long train trailing behind her as she walked the natural stone path to the wedding site. She carried a simple bouquet of fresh peach colored roses and other garden flowers in soft natural hues. The pavilion was decorated in a Texas rustic theme with a little lace and frill. The bride’s table was simple elegance with the cake, sitting on a giant natural wood log, demanding full attention. The groom’s table was decorated with trays made from oak log slabs attached to bark covered branches. Instead of cake, this groom wanted mini pies, so his Nana baked an abundance of apple and pecan mini pies to fill the log trays.

The center pieces on each guest table were done with candles and lanterns and some other rustic accessory items softened and trimmed out in ribbons, lace and flowers. The casual, but elegant theme was carried out in every detail of décor used in this wedding. If you are looking for a casual destination wedding, not too far away, but natural and outdoors, consider Pecan Grove in Driftwood. It is just southwest of Austin near Buda. The drive is lovely, the lodging accommodations are plentiful, and it is a great little get away for everyone attending.

Warm season grasses such as Bermuda, St. Augustine, zoysia and buffallograss should be completed early in the month. Winter over-seeding of rye can be done any time in the month. Dig, divide and replant spring flowering perennials such as iris, daylilies, Shasta daisies, coneflowers, oxalis and verbena by mid-month before the new root growth begins in preparation for fall and winter. Spring and summer-blooming perennials such as container grown roses, salvias, phlox and most all of the varieties of vines can be planted at this time. Remember to amend the soil and keep plants watered if rainfall is not sufficient for plants to become established. Wait until October when the weather is cooler to plant pansies, violas (Johnny jump-ups) and ornamental kale and cabbage. Make landscape changes at this time. Select tree and shrub varieties needed to complement or renovate your landscape. Fall planting of all trees, shrubs and perennials will allow them to establish roots before hot and dry weather arrives next year. Sow wildflower seeds early in the month into areas that are free of grasses and lightly tilled. Sow seed and lightly rake area to get seed into contact with soil before watering. Purchased acid-scarified bluebonnet seeds (process softens external seed coat) will germinate easier.

FERTILIZING AND PRUNING » Continue mowing lawns at

recommended height and don’t forget the most important fall feeding. » Apply high-nitrogen fertilizer (3-1-2 ratio) on landscape lawns and shrubs to prepare plants for fall and winter. Container plants benefit from using high nitrogen water soluble fertilizers. » Remove dead and faded flower stems and seed stalks to prolong flowering season. » Root-prune trees and shrubs (cutting the roots around the plant with a spade to stimulate new root growth) to be transplanted this winter.

trol to lawns early in the month before weed seed germinates especially to areas where grass is thin due to summer stress. Be sure to read the product label to ensure getting the right one for the type of grass being treated. » Remove webworms from pecan trees. Cut off the ends of branches as soon as the webs appear. They are difficult to control once established. Tear open large webs to expose worms for the birds. Spraying is not practical. » Spray roses suffering from blackspot and powdery mildew.

Red Onion Tart with Thyme BY MEAGAN CAMP

» 1 sheet of Puff Pastry, defrosted » 2 cups of Leeks, sliced and rinsed » 1 large Red Onion, thin slice » 1 cup of Green Onions, sliced » 1 Egg, beaten with a splash of water » 3-4 sprigs of Fresh Thyme » Salt to taste

1. Preheat your oven to 350˚ 2. Sauté the leeks, sweet onion and green onions in a tablespoon of olive oil over medium heat and add a pinch of salt. 3. Roll out puff pastry on a floured countertop and move to a sheet pan. Brush the pastry with egg wash around the edges. 4. Create a layer of onions leaving 1” border on the puff pastry and add salt. 5. Bake until golden brown, around 25 minutes. Garnish with fresh thyme and some salt. Slice and serve!

Mexican Mint Marigold TENDER PERENNIAL: 3’

Not a mint or a marigold, this Texas native is our substitute for French tarragon. The flavor is sweet and somewhat like anise. Sow seed after danger of frost has passed. Its edible yellow flowers add color to the fall landscape and are one of the last plants to flower in the garden. The seeds will reproduce freely and can take over a small herb garden.

PLANTING » Plant cool-season annuals such as

snapdragons, ornamental kale/cabbage and pinks early in the month but wait until temperatures have cooled to plant pansies and violas. » Daffodils and other spring-flowering bulbs such as Dutch iris and grape hyacinth can be put in the ground now. Other bulbs should be considered as annuals in our area and new blubs planted each year. Chill tulip and Dutch hyacinth at 45 degrees for 60 days prior to planting. » Time is right to plant seeds or transplants of lettuce, spinach and other cool season greens. Cole crops including broccoli, cabbage, kale, collards and kohlrabi are among our most dependable winter vegetables. Other vegetables to plant now include radishes, carrots and turnips. » Fall is a great time to set out perennial herbs. Thyme, oregano, rosemary, parsley, lemon balm, pineapple sage and Mexican mint marigold are some of the herbs best suited to our area. Always work a few inches of compost into soil prior to planting and mulch the plants after planting. Fertilizer will not be necessary at this time. Wait until spring to fertilize.

FERTILIZING AND PRUNING » Fertilize lawns the first week of the month

their life cycle. Leave seed pods of those you want to self-seed next year. Gather some of the seeds and dry a week or so on a newspaper to share. » Continue to feed tropical plants in containers and hanging baskets with a water-soluble fertilizer. Cut back or repot overgrown houseplants and fertilize with same fertilizer. » Spring and summer shrubs and vines (including climbing roses, wisteria, etc.) should not be pruned at this time because they have already established their buds for next year’s bloom. Prune these plants immediately after they stop blooming next year.

GARDEN WATCH » Watch for signs of brown-patch fungus

on St. Augustine lawns. Water only in the mornings and apply turf fungicide at first sign of fungus. » To prevent potential diseases and insects next year, remove all dead vegetable plants to the compost pile with the exception of tomato vines. It is a good practice to keep them out of the compost heap. » Watch for cutworms and looper caterpillars. Products containing Bacillus thuringiensis or Bt are safe to control these pests. Aphids may also present a problem on young greens. A strong spray of water or insecticidal soap will dislodge the aphids from plants. » Gather and stockpile fallen leaves to build a compost pile. Save some leaves to use as mulch for the next growing season.

Caramelized Butternut Squash BY SHEILA CLOONEN

» 2 medium Butternut Squash (4 to 5 pounds total) » 6 T Unsalted Butter, melted » 1/4cup Light Brown Sugar » 11/2tsp. Kosher Salt » 1/2 tsp. Freshly Ground Black Pepper

1. Preheat your oven to 4oo˚ 2. Cut off ends and discard. Peel squash and cut them in half lengthwise and remove the seeds. Cut the squash into 1 1/4 to 1 1/2 inch cubes. 3. Place squash on a baking sheet and add melted butter, brown sugar, salt and pepper. With clean hands, toss all the ingredients together and spread in a single layer. 4. Roast for 45-55 minutes, until the squash is tender and the glaze begins to caramelize. Turn the squash a few times with a spatula to be sure it browns evenly.

Mexican Oregano PERENNIAL

Mexican oregano is not an origanum but has an oregano flavor and is preferred in Mexican dishes. It is an attractive landscape plant with long tubular lavender flowers that bloom all summer and attract hummingbirds to the garden.

Be open and honest with yourself about what is bothering you, your expectations, and your role in any disagreement. 3. Be open and honest with your spouse. Of course do so tactfully. Sometimes we take the easy way out and avoid talking about our feelings, but shielding your spouse from your feelings can come back to haunt you as resentments build, and patterns become established that are difficult to change. At the same time, choose wisely what to bring up. Focus on what is important rather than making an issue out of every little thing. 4. When having a disagreement, allow for timeouts or breathers. Some people like to settle things right then and there while others need time to process their thoughts and feelings. Also, things can be said during the heat of an argument that can’t be taken back. Take the time to cool down and come back to the discussion later.

5. Try to look for compromises. You don’t want to have a winner and a loser. Pointing out that you are right can be cold and lonely if it distances you from your partner. 6. When asking for something to change, don’t save up all your gripes to dump at once Focus on one thing. It will be overwhelming to the other if you bring up a laundry list of problems. 7. Be specific about the change you are seeking. For example, instead of being vague and saying you want your partner to be more affectionate, explain that you would like him or her to hold your hand at the movies or kiss you goodbye. 8. Don’t expect your partner to be able to read your mind or think that your spouse can read yours. Although sometimes we do know what the other is thinking, we do not always. I have seen lots of problems develop because someone made an erroneous assumption. 9. Once an issue is addressed and dealt with, do not keep bringing it up. 10. Give each other equal time to talk so both parties feel heard. When someone else is talking,

really listen. Some people are not good listeners because they are too busy thinking about their response to really focus on the message. 11. Use “I statements” not “you statements.” When you start a statement with “you do this…” it puts the other person on the defensive and communication stalls. When your spouse does use an “I statement” and owns their feelings (“I feel…when you…) let them know they are heard. Validate their feelings.

Einkorn is considered to be the oldest form of wheat and is now being cultivated again after many centuries of being ignored in favor of the more common, processed varieties. Since it hasn’t been modified over time, some people with gluten intolerance can digest it without experiencing the issues they have when they eat other types of gluten. Now it is the darling of the alternative baking world and does well in hearty bread recipes.

Farro

Farro is a delicious grain that makes a great pasta substitute. Cook it similarly to couscous and mix in with your favorite steamed vegetables for a cold dish or add to a bolognese sauce for a heartier fall family meal.

Chia

Chia is native to America and was once a staple in the Native American diet. Relegated to 80’s nostalgia because of its use in the “Chia Pet”, chia now has found its rightful place back in food. It can be rehydrated and made into a delicious pudding or added to homemade bread as an added crunch.

Spelt

Spelt flour, made from spelt grain is similar to regular wheat and higher in fiber than its relative. You can buy the flour and use it as a replacement for whole-wheat flour or buy the grain, considered a wheat berry, and use it in a risotto recipe in place of arborio rice.

SMART FEET UNDERFOOT PICKING THE RIGHT SANDALS FOR MORE THAN STYLE BY KELLY M. WALKER, DPM

It’s summer time, and many of us trade in our sneakers for sandals, particularly flip-flops, during the warmest time of the year. When choosing proper sandals for summer, look for the following qualities: a firm arch support, a non-skid surface, and a thick heel counter. Avoid thin, flimsy, and flat sandals as well as very high, platform sandals. Also, avoid sandals that are made of non-breathable plastic, those that retain moisture, and those that irritate the skin between the toes. Keeping these tips in mind, enjoy your summer fun without the hassle of foot pain. Common summertime foot ailments include pain in the heel, pain in the arch, and pain in the ball of the foot. The most frequently encountered of these is heel pain. The bottom of the foot is known as the plantar surface. Therefore, you will see that anatomy structures of the foot may be named according to their location on the foot. The structures associated with heel pain include the calcaneus (heel bone), the plantar fascia (long ligament), and the plantar nerves. Heel pain may begin with an injury, such as stepping on an object or hard surface, where the structures on and around the calcaneus get inflamed. Another type of injury is plantar fasciitis. This is a

condition of inflammation of the plantar fascia (long ligament). The plantar fascia is composed of collagen tissue, which has an elasticity to it (it is flexible and stretches). If the fibers of the fascia are stretched past their elastic limit (such as by walking barefoot or without the support of the arch), the result is a painful, inflammatory condition. One might experience redness, swelling, increased heat, and pain to the touch at the site of injury. Others might experience the inability to bear weight at the site of injury. One last cause of heel pain originates around the ankle, at the tarsal tunnel. This is a compartment that begins in the ankle area and extends down toward the heel and arch. The tarsal tunnel houses a large nerve called the posterior tibial nerve, which runs alongside the artery and veins on the inside of the ankle. If the compartment suffers an injury by direct trauma or by excessive pronation (the heel bone rotates down toward the ground), the nerve and its branches on the bottom of the foot will become inflamed and painful. This is often a throbbing or sharp pain that travels from the ankle to the arch or toes. Wearing shoes or sandals that have a good arch support and/or a slight heel lift will often prevent injury or re-injury to the heel or arch. The good news is that many

shoe manufacturers are now producing shoes and sandals with an arch support. Stretching before arising from bed in the mornings is one of the very best ways to prevent injury or re-injury to the plantar fascia. Avoiding barefoot or sock foot walking will also reduce your chances of injuring your foot. The goal is to keep cool and wear good foot protection throughout the warm months of the year. Also, don’t forget to wear sunscreen on both the top and the bottom of your feet! The skin of your feet is very susceptible to skin cancer, such as malignant melanoma. Inspect your feet daily, and report any lesions or areas of discoloration to your physician or primary care provider. While you’ve probably read or heard plenty about the dangers of childhood obesity and the risk of concussions playing fall sports, there’s another less talked about potential hazard for students of every age: backpacks.

The first – and most obvious – is to make sure that the backpack isn’t too heavy. So what’s the rule of thumb?

If you’ve ever bought a backpack, you know that they are much more than simply a way to tote books and school supplies around. They are full-on fashion statements for many students. For some students, though, they also are the source of back pain, according to Brite Chalunkal, DO, an interventional pain management specialist on the Baylor Scott & White Medical Center – Waxahachie medical staff.

“A backpack should never weigh more than 10 percent of a student’s body weight, and it should never hang more than four inches – or five inches max – below the waist,” advises Dr. Chalunkal. Additionally, he says that the weight should be as evenly distributed as possible throughout all the compartments of a backpack.

“If there is weakness in the legs, any change in bladder or bowel function or shooting pain down one leg, parents should contact either their child’s primary care physician or a back pain specialist,” says Dr. Chalunkal. Additionally, parents should reach out to a medical professional if the pain doesn’t start to subside after a few days.

“Backpacks can lead to a number of back injuries if not used properly,” says Dr. Chalunkal. “Strains of the back muscles are probably the most common, but they can also lead to a herniated disc. Long-term they can contribute to arthritis in the back.”

Lightening the Risk

Although backpacks can pose a threat, unlike many other risks kids, teens and college students face, parents will be happy to know that neutralizing this potential problem is relatively straightforward. Dr. Chalunkal believes taking a few

Perhaps the biggest challenge parents will face in avoiding backpack-related injuries is ensuring their student wears the pack as intended.

Depending on the diagnosis, a physician may recommend physical therapy for both help recovering and to prevent re-injury by strengthening the back. Prescription pain medications also may be appropriate. A physician may recommend steroid injections for older patients, but typically not children.

“I think one of the main problems is that kids don’t wear them properly with both straps,” says Dr. Chalunkal. That can lead to unequal weight distribution, unnecessarily stressing certain areas of the back.

Of course, an ounce of prevention through proper management of your student’s backpack poundage beats a trip to the doctor any day.

Goss + Burch MARCH 7, 1992 First Baptist Dallas When I was planning my wedding over twenty years ago, I didn’t know I would end up in the catering business. However, in thinking back on that day maybe the writing was on the wall, so to speak. I grew up attending First Baptist Dallas, one of the largest churches in the country. Covering five city blocks in downtown Dallas and more than 30,000 members, my parents met and married there in 1957. Everything at our church was a major production, and I was at the heart of it all. Our 200 member choir had productions as elaborate as any Broadway musical, and our orchestra was known to rival the Dallas Symphony. I loved going to the weddings at our church because they were always an affair to remember. Growing up with so much fanfare gave me an appetite for wanting everything I do to be in grand style. When it came time for my own wedding, it was no exception. I didn’t get married until I was 32 years old, so I had years to dream big. I designed 1000 invitations on beautiful cardstock with gold calligraphy and painstakingly wrapped each one with handmade paper and a gold waxed seal. My wedding dress was made of silk taffeta with hand sewn pearls and beading that covered the bodice and sleeves. Six

bridesmaids wore emerald taffeta ball gowns and carried cascading nosegays of solid white flowers. The church’s century-old sanctuary, with its magnificent stained glass windows, was filled with candelabras cascading throughout the choir loft holding hundreds of long taper candles. Hurricane lanterns with white roses, gold and white ribbons and trails of asparagus fern-lined the end of each pew. With 800 guests looking on, my dad walked me down the aisle. Trumpets rang out from the balcony and the Dallas Baptist University Choir sang “Standing on Holy Ground” while four cameras recorded the event from every angle. Dr. W. A. Criswell, who had married my parents thirty-five years earlier, officiated the wedding and W. T. Greer brought the house down singing his incredible rendition of The Lord’s Prayer. It was a night to remember. If there was ever a time my parents were grateful they only had one child, this was it. The celebration continued with a lavish buffet and a five-foot tall wedding cake that looked more like a huge porcelain sculpture than multi-tiers of confection. There were paella stations, Caesar

salad stations and multiple buffets of assorted hors d’oeuvres interspersed with cascading fruits and cheeses. As we drove away in a white vintage Bentley to the historic Adolphus Hotel my face literally hurt from smiling so long. My husband tends to remember the event as the night he stood for hours in a rented tuxedo and uncomfortable shoes while talking to hundreds of people he didn’t know. I am grateful he endured it all for me. In looking back, I now know why I set the bar so high in our catering business. Over the years, I have tried to help my brides have that same feeling when The Doves Nest caters a wedding. From constructing a dance floor over a client’s swimming pool to covering a backyard with clear tents for a starry night, we have done it all. Whether it’s a small intimate affair with just family, or an elaborate reception where the newlyweds leave the scene by helicopter, I want their big day to be a dream come true like mine was.
