The freshest luxury ingredients to create winning flavour combinations
But the restaurant scene is not all about cutting edge cuisine, and Marbella allows old favourites to thrive alongside the newcomers, contributing to the cosmopolitan and colourful mix of cuisines. Puerto Banus continues to attract the crowds, especially in the high season, but among the madness that is the Port in summer, you can still take refuge in some superb restaurants. Refurbished and reimagined, Don Leone has been a Puerto Banus institution since the 70s, and continues to draw the crowds, as does the Red Pepper, another legendary restaurant, still producing great Greek food with a view of the port and the superyachts that you never tire of seeing. “Newcomers” to Puerto Banus include the Restaurant Lounge La Habana, which serves the freshest fish and shellfish while also enjoying super views, while El Gaucho de Banus showcases the best in Argentinean cuisine, fused with contemporary influences. Just a short stroll along the quay, La Pappardella has provided an authentic slice of Neapolitan cuisine with its rich flavours, for over 20 years, while Naga, recently renovated with a stylish interior and terrace brings authentic Thai cuisine to Banus. If you want the party to continue after your meal, then Finca Besaya is a must do. When the food ends, the fun begins in this beautiful country house setting. Mosh continues to set the trend bringing a metropolitan vibe to Nueva Andalucía, so make sure you wear your designer gear. If you want to dine beachside then Amai at Ocean Club offers superb cuisine in one of the most popular beach clubs in Marbella, while La Sala by the Sea has a popular Thai inspired menu in a more intimate setting. Situated on the beautiful, popular San Pedro Boulevard, Mr. Gourmet Burger might be, for many, a surprise inclusion in the inaugural Dine Marbella publication, however Mr. Gourmet Burger, is by far the ‘best burger restaurant’ in Marbella. Ahead of the trend when it opened, Mr. Gourmet Burger uses only the freshest luxury ingredients to create winning flavour combinations. Just west of Marbella, L’Oriental is a beautiful Lebanese restaurant, with genuine hospitality and incredible food – the desserts are a must - while The Robin Hood Inn has a traditional English pub feel, with covered terraces for those summer evenings (see page 120). Baltazár Bar & Grill Kempinski Hotel Bahia reached new culinary heights with the launch of ‘El Paseo Del Mar’ last year. Spain is a country that takes its gastronomy seriously. Vila do Grove has been providing authentic Galician cuisine in Marbella for almost two decades. Vila do Grove has one of the most inviting shaded terraces in Nueva Andalucia, enjoying the best of the Mediterranean weather, but step inside and you are instantly transported to Galicia. The interior features stone and wood, with beamed ceilings, while the bar area displays an impressive array of tapas. There are tanks full of crayfish, lobster and crab, while smartly uniformed waiters unhurriedly but professionally go about their business. The restaurant may be under new owners and management, but they knew better than to mess with a winning formula. “It was important for us to preserve the style that Villa da Grove had when it opened 19 years ago”, explains Elizabeth “And we will continue that energy and enthusiasm. We are still offering the same menu with the same dishes and the same drinks, and with a new owner and a new management team we are looking forward to welcoming new clients, and welcoming back old ones”. As you would expect from Vila do Grove, the chef is from Galicia, and the menu features some of the most iconic Galician dishes. “ The pulpo a la gallega - octopus in Galician style - probably the most famous Galician dish in the world – is always popular. It’s difficult to find the authentic pulpo a la gallega in Marbella. We also have one of the finest meats in the world, baja rubia galleja, cooked on the stone that is very important to the texture and the taste, and Tarta Santiago, which is a famous and typically Galician dessert”. As well as this, Vila do Grove also offers a vast array of home made and fresh tapas that change daily and are very popular with clients, as well as some delicious freshly baked breads. Upstairs is an impressive dining area, is perfect for events, product launches and celebrations, as well as an atmospheric and intimate private dining room. “ “Our clients are looking for something a little different,” says Elizabeth “Somewhere quiet but also welcoming”. Positioned at the helm of the food and beverage departments of both the Marbella Club and Puente Romano hotels for the past seventeen years, there are few people who live, work and breathe in the glamour of old school Marbella elegance as John Thomson. John is as much a part of the fixtures and furnishings as the hotel’s Roman Bridge and he is every inch as elegant as his stylish surroundings. We are seated in the exquisitely designed and furnished Owner’s Lounge of Nobu, combining modern art with quirky collectables to create an environment that is unique, inviting and so comfortable that you don’t want to leave. This is Nobu Marbella. It’s modern yet classic. Fashionable yet timeless. And this is what has made its sister hotels, The Marbella Club and Puente Romano, withstand the hands of time, continuing to grow and prosper despite Marbella’s passing fads and fashions, now allowing Nobu to fit seamlessly into the fold. A brief history It’s almost impossible to write about the history of Marbella without mentioning the Marbella Club Hotel. This, after all, is where it all began. Princ e Alfonso of HohenloheLangenburg first discovered the old country farmhouse on the edge of the Mediterranean in 1947, declaring it one of the most beautiful places he’d visited in the world. The hotel’s sensational Club atmosphere, exclusive weekly parties and of course a service that was second to none, saw stars such as James Stewart, Ava Gardner and Audrey Hepburn flocking to Marbella, and The Marbella Club soon became one of the most exclusive luxury destinations in Europe. Through the swinging 60s and 70s, the town of Marbella grew, as wealthy visitors invested in the area, creating luxury developments and residential areas
with golf courses, marinas and polo fields, while the Marbella Club Hotel , secured its reputation as the hottest destination for European aristocracy, playboys and Hollywood movie stars. The 80s, however, were not kind to the Marbella Club, but in 1993, local businessman David Shamoon purchased the hotel and began an enormous renovation project to bring it back to its former glory. This was the beginning of the Club’s rebirth and set the standard for all projects to come. The Marbella Club was completely modernised yet Shamoon was insistent that none of the hotel’s charm be destroyed. That ethos is what

has undoubtedly enabled the brand to grow and evolve so admirably. The Evolution Under the meticulous direction of brother and sister Daniel and Jennica Shamoon, this oasis on the Golden Mile has evolved into ten hotels around Europe; four here, one in Ibiza, three in the Baltics and one in London (the stunning Townhouse in Belgravia) I ask John what he thinks has made the brand so successful and he’s keen to stress the siblings’ extraordinary vision, an innate sense of style, determination, focus and purpose as well as a dedication to the key values that created the Marbella Club’s original success. Wherever possible there is a desire to preserve history, to maintain character and add to the location’s natural beauty, emphasising its charm, whilst complementing with modern design and the highest quality finishes. Quality is another word that cannot be overused - from the standard of its restaurants and the upkeep of the stunning tropical gardens, to the service, which is always faultless, the bar has been set high. Equipped with a wealth of knowledge and experience in the business, the Shamoon siblings were intent on expanding in the right market in key locations. Each project is entirely different, with its own character and appeal, but maintains the same excellent standard and service. I ask John what the biggest challenges have been and he breaks into a broad grin, as he recounts the incredible
renovation of Nobu Ibiza, describing it as their most ambitious project yet. “Jennica oversaw the entire process from conceptualisation to the finishing details, as they stripped the hotel bare, gutted it and rebuilt it from its skeletal structure, to create Ibiza’s number one hotel; an island paradise set in lush gardens with pool and all the necessary amenities… it’s quite simply a masterpiece.” He’s also eager to discuss The Lodge, located only an hour and a half away from Marbella in the skiing resort of Sierra Nevada. The exquisite design of the chalet-style hotel, was overseen by Daniel and is an example of boutique hotel excellence. The Plaza - Marbella’s buzzing hotspot “Probably one of the greatest successes”, John smiles, “has been the transformation of the Plaza here at the Puente Romano. Not only is it the heart and soul of the resort, but it has become undoubtedly the meeting point for socialites, partygoers and locals in Marbella”. Stylish, yet relaxed, with a whole variety of restaurants and bars around it, the atmospheric square is as inviting in the winter, with its candles, heaters and plush upholstery, as it is in summer with live music events and cocktails. Then of course, everyone’s tastebuds are catered for around the square; tapas with a twist at Bobo, authentic Italian flavours at Serafina, spicy delights at the Thai Gallery, a Michelin star experience at Dani García, seafood, sangria and sunsets down at at El Chiringuito, a healthy alternative at Rachel’s, a funky dining experience at The Monkey Club and even something for those with a gluten intolerance at Celicioso. And then of course, there is Nobu. Open seven days a week and serving up to 400 covers a night in the busy summer season, Nobu is the epitome

of urban, contemporary dining and John assures me that I won’t have a better dining experience in Marbella. “Of course it’s my favourite,” he smiles, “have you been yet?” I woefully admit to not yet having visited Marbella’s branch of the celebrated Japanese restaurant, although I have been to the London ones. Nobu opened a year ago in Marbella to great media frenzy, as co-owner, Robert De Niro, flew in for the momentous occasion.
John explains that Nobu prides itself on its impeccable service, standard and quality of food around the world and that all of its chefs undergo a meticulous training programme. “Head chef Eleni Manousou runs a tight ship here in Marbella, with strict standards, serving high volumes and using only the very best produce — and of course, highly skilled chefs and sushi master, Satoru Hashimoto in the kitchen.” John begins to describe the exquisite menu and I wonder if he has seen me licking my lips, because before I’ve had time to finish my notes he invites me to sample the Omakaze Menu.
The Omakaze menu is a three-course set menu that has been specially created by Nobu’s head chef and it will be running from Sunday to Thursday in both spring and autumn, for just 60€ a head. Oak Garden & Grill Oak Garden and Grill is part of the hugely successful Sala Group. Converted from a private villa next to La Sala, the restaurant features an open wood decked terrace with wooden beams, wonderful olive tree and plenty of climbing plants that give Oak a superb atmosphere. Lights hang from the beams and the cork tree in the middle of the terrace and candles on the tables. It really is one of the most beautiful settings in Marbella. The kitchen is open plan and features a huge grill that is crucial to the incredible flavours. The base of the grill is first lined with charcoal to ensure that the heat is maintained and that the steak achieves a crisp caramelised exterior with a pink or red centre that can only be achieved by 78

using charcoal. The grill is then covered with aged oak that creates a unique flavour, due to the sugar crystals in the slow burning oak that caramelizes in the intense heat. This produces a fruity scent that combines with the distinctive smokey fragrance of the wood. The menu features several outstanding dishes including Norwegian Salmon Tartare, Chargrilled Fillet Mignon with Half Lobster, Brochette of Premium Galician Beef PicaĂąa, Thai style grilled Sea Bass and Papaya Salad or Langoustine and Sea Bass Peruvian Cervice. Red Pepper A genuine Puerto Banus legend, the Red Pepper has been one of the most popular restaurants in the jet set marina for years. PASSION AND INNOVATION. El Gaucho de Banus brilliantly fuses traditional Argentinean cuisine with international influences, as Giles Brown discovered.
As the saying goes, there is a time and a place for everything. And in a busy and bustling Marbella gastronomic scene, where it seems that every new chef on the block is trying to outdo each other with a ‘nouveaux cuisine creation’, there is something refreshingly honest about a restaurant that goes back to basics. Situated on the front line of Puerto Banus, El Gaucho de Banus has been bringing superb dishes to a growing legion of foodie fans for five years. Sitting on the large terrace, as champagne corks pop from the super yachts, amiable owner Humberto Gacioppo, explains a little about El Gaucho’s philosophy. “Our main aim is to bring the true taste of Argentina to the client, but because we are in Marbella, which is a very cosmopolitan place, we combine this with an international outlook. 96

“My philosophy is that you have to put your heart into your cooking, and as the owner of El Gaucho I created the kitchen with this in mind. As the restaurant flourished, we discovered new ways of cooking that were not too different from Argentina – due in no small part to the strong links with Spain”. One of the things that strikes you when you speak with Humberto, the restaurant quietly buzzing with staff going about their business with an unhurried but totally professional way, is his passion. Passion is a word that is often used too lightly when describing people’s work, but with Humberto it truly shows. Cooking has been an important part of Humberto’s life from an early age “My grandmother taught me how to cook. I learnt how to cook by standing beside her at the oven when I was a child, and

I even have a photo of me standing by her in the kitchen” he smiles. “Later in life I travelled to a variety of places, including the United States, Canada, Mexico, Colombia – and I have picked up influences from all of them in my cooking. It’s very important to realise that even though El Gaucho de Banus provides an authentic Argentinean taste, we have used international influences too.” Humberto isn’t afraid to shake things up in the kitchen and to experiment. “The octopus I cook in my own way, for example. We grill the octopus, but I add the mashed potato that my grandmother taught me how to make, with crème cheese! People say that it sounds crazy, but when you try it – it’s really good!” That willingness to listen to what the clients want and adapt the menu accordingly is another factor behind El 98

As you would expect, the meats at El Gaucho de Banus are truly outstanding, with four different types sourced from Argentina. As well this, however, the restaurant offers Halal products, pastas, vegetarian options, salads, fish and homemade desserts. Sitting down to eat with Humberto, his wife and business partner, Noelia Thames and his family was one of the best afternoon dining experiences that I have enjoyed in Puerto Banus for a long time. We started with a selection of grilled vegetables, Baked provolone
cheese seasoned with oregano and paprika., as well as Tower of roasted vegetables: zucchini, pepper, grilled onion, pumpkin, carrot and spinach with mozzarella cheese and some delicious Spicy fried chicken wings, as well as Humberto’s Braised octopus ‘Gaucho’ style on a potato pure with soft bacon and cheese sauce. Needless to say, after such a build-up, the mashed potatoes were amazing! And then came the meat dishes. It is safe to say that no one knows their meat quite like the Argentineans, and the texture and flavour of our dishes were outstanding, while the stone cooked chateaubriand melted like butter in our mouths. Even though our willpower and rapidly expanding waistlines forbade us from having ‘just one more slice’, we couldn’t help ourselves! We finished off with some beautifully presented desserts, including moreish chocolate crepes, as well as pear served with a chocolate sauce (diets were certainly out of the window by this point) with Humberto’s children and their friends made short and joyful work of a huge, multi-flavoured and multilayered ice cream sundae. After the meal I grabbed a coffee to recover and check my notes in El Gaucho’s comfortable lounge area, modeled on Humberto’s living room (“It’s the same as my house”, he told me). It’s the perfect place for a coffee, cocktail, or even holding a business presentation, and has already proved popular for events. “What I want to do” Humberto told me as I left El Gaucho de Banus “is to create the best service, the best product and the best atmosphere”: He has done that quite brilliantly. How did you start cooking? In my family my grandmother and uncle always used to cook - my uncle was a chef - and as well as that my mother is an amazing chef. She cooks at home, but for me she’s the best chef in the world! Those three people made me fall in love with cooking, so when I was at school and had to decide what I wanted to be, I told my mother that I wanted to be a chef. I became a chef and a few years later a friend called me and asked if I wanted to do a trial in Matsuhisa Athens, because they were looking for chefs. I was free at that moment, waiting for a seasonal contract to begin, so I thought i would try as I had nothing to lose. I went, I tried, the chef liked me and offered me a job. I started at the bottom and after nine years became the first female executive chef at Nobu! What are the challenges in designing a menu for the Marbella clientele? People in Marbella are always looking for fresh products, and so my challenge is to create special dishes each day, because I have a lot of regulars who come back, so they need something new. I take a lot of influence from Spain because, to be honest, I love the food here. I try to travel a lot and to taste different things, and the things that I like I try to adapt to a Japanese style. The shrimps pil pil, for example, the same process but we add some sake and shichimi. I’m always trying to take the best recipes fro Spain and give them a little Japanese influence. At Nobu Marbella we try and keep the food simple. Nobu Matsuhisa says that
simplicity gives you the best flavour. Make the dish simple, with simple ingredients, and you can make something really great. We have all of Nobu’s Signature dishes such as Yellowtail Jalapeño, thin sliced salmon, Beef Kobayaki and then there is the Black Cod, which is the most famous dish, and then there are my signature dishes, using a lot of fresh fish and shrimps, and even sea urchins. You are the first female Executive Chef in Nobu. What was it like making your career in the macho world of cooking? It was a long and hard way for me. When I started out, I worked with people who didn’t want women to progress in the kitchen - “Ah you are a woman, you should be in the kitchen of your house!”. It’s true that it was very difficult, but what was the biggest challenge for me was to prove that I was better than a man!”I’m thankful to Nobu Matsuisha for giving me the chance to be Executive Chef of Nobu Marbella. What are you looking forward to in summer 2019? I believe that this will be our best season. I have a lot of ideas and I’m already working on new dishes for our specials. The new Nobu book is out as well, which features all the chefs from around the world, so we are going to get a lot of business out of that And finally, what advice do you have for any young girl who wants to become a chef? Dario, tell Dine a little about your background I was born in Genoa in north of Italy but my father is from Napoli so I grew up between the north and the south. I’ve always cooked - when I was at cooking school I worked weekends in small kitchens and pizzerias. At 16 I had to do my national service, and I became a cook in the marines, based in Rome and preparing meals for officers and heads of state. After that I worked in Cibo restaurant in Holland Park in London, and also worked in Andorra. Being a chef is a really good job if you want to travel! What is the philosophy of the restaurant? This is a Neapolitan restaurant. We prepare traditional classic dishes but presented in a contemporary way. We don’t want to interfere with the authentic taste of the dish, and I always use the freshest products available according to the season. There are a lot of restaurants in Marbella that provide fusion or a combination of influences. But in my experience it is the traditional dishes, cooked professionally, that always work.
How do you keep the menu exciting? Italian cuisine is constantly evolving. I don’t cook in exactly the same way as I did when I was in London, but I still like to prepare dishes using the traditional recipes, cooked in a traditional oven, but presented in a modern way. People normally think that Italian cuisine is all about the pasta and pizza, but Italian cuisine is very varied, and it is wonderful. I try to diversify the menu for the client, so every day we have fresh pasta, or some style of meat. I also try and use fish that isn’t so well known and has minimum impact on the environment. I speak with the fishermen to find out what is freshest on the day and prefer to make a Carpaccio with salmon or tuna, which is more sustainable. What are you looking forward to this summer? In summer it is all about the menu and about the quality of the food. It’s a lot of work and sometimes it feels as if the whole world comes here - Italians of course, as well as English, and we have many Arabic clients. But the main thing is to continue with the high quality and service as always, so our clients can enjoy the tastes in a new way. DINE MARBELLA 2019

What brought you to Marbella? I’m originally from Cadiz, and came to Marbella 30 years ago, when I had the great opportunity to work In this super location. Since then I’ve worked at the Marbella Club Hotel, Hotel Puente Romano and Cafe del Mar amongst others. I love cooking as you are always learning something new every day! What makes Restaurant Lounge La Habana different? Our philosophy is to offer our clients the best service and the best products and to bring out the distinctive tastes and true flavours of each dish. As well as this we have dishes with an Asian touch. At the moment I am working on a rabo de toro fusion dish that mixes traditional cooking with Thai cuisine, for example. All the kitchen staff work in the same direction. They know how to cook meats, paella in the same style as the chef, so I have every confidence in them.
What do you find your clients want from a restaurant? Ninety percent of our customers are foreigners, and the first thing that they want to do is taste our paella. At Restaurant L ounge La Habana, our paella is special. Nothing is preprepared and everything is made to order. The clients come for one thing and then stay for another when they have seen the menu. We have meats from Galicia and Asturias, as well as tuna from Barbate. We are a hidden gem - a secret for those who know and the views from the terrace are some of the best in Puerto Banus, especially at night. Are you looking forward to this summer? I think that 2019 is going to be a great season. People continue to come, the golfers are back and Marbella is still wonderful place with its gastronomy, golf and great customer service. ZOZOÏ RESTAURANTE Dine Marbella speaks to Maxime Lenoir, executive chef at Zoizoï, about his influences, passions and why the restaurant is not just another job.

What is the philosophy of the restaurant? The philosophy at Zoizoï is quite simple. We are the type of restaurant that you would find in Brussels and other cities in Belgium, offering Belgian style brasserie and bistro food. The most important thing at Zoizoï is that we respect the produce itself. What was your background before coming to Zoizoï? I studied at Belgian cookery school and when I completed my studies a worked in various places, opened my eyes to the possibilities. I moved to Spain and became a cookery teacher at Le Cordon Bleu, a private cookery school in Madrid and one of the best in the world, where we taught the classic French styles and classic techniques. Finally, I moved to Marbella and came to Zoizoï four years ago. What are the signature dishes at the restaurant? Belgians love their meat and the Américain Zoizoï is a classic hand cut steak tatar prepared in a Belgian way. The filet of sea bream is covered with thin scales of zucchini, baked in the oven and served with a butter blanc sauce,
a classic French recipe. The foie gras is completely home made, using 100% French duck liver, salt, pepper and a touch of Armagnac, served with a warm brioche and seasonal chutney. Are there any special challenges for creating a menu for a Marbella clientele? I aim to bring an international touch to the dishes here to reflect the cosmopolitan nature of Marbella. This means that you will find Vietnamese, Thai, French even Arabic influences on the menu, and all prepared to the same high standards of Belgian cuisine. What are you looking forward to this season? Well, I hope that we are full every day! At Zoizoï we are not a team – we are a family. We all share the same aim – to keep our clients satisfied – and because we are all close, it gives us the ability to accomplish that aim. This year we will continue onwards with the quality that our clients know. It’s not just a job at Zoizoï, it’s much, much more than that. And you asked me earlier what my favourite plate was at Zoizoï? That’s easy. My favourite plate is always the one that comes back empty!

The Italian restauranteur and philanthropist, Sandro Morelli, shares the secret to his happiness with Natalie Rose Kern
It is the most perfect spring morning in Marbella when the taxi drops me off on the Golden Mile for my next interview. There isn’t a cloud in the sky, palm trees sway gently in the breeze and birds are chirping as I wander down the pretty entrance road to the restaurant Villa Tiberio. And what an entrance it is! Tropical flowers and lush green plants and trees line the little lane and I look up in wonder as I pass under a beautiful arch of pink and purple bougainvillea in bloom; it is glorious! I stop for a moment to take a couple of photographs for Instagram and suddenly I catch the time - 10.58! I collect my belongings and skip over a hose pipe snaking from a nearby flowerbed
where a gardener is watering the adelfas in the shade. “Buenos Dias!” I call out to him with a wave, as I hurry past. “Buenos dias!” I hear him call back, as I approach the restaurant’s foyer. I arrive with one minute to spare and am greeted by a friendly hostess. “I have an eleven o’clock interview with Sandro Morelli” I tell her and she smiles. “Did you not see Mr Morelli? She asks me, “You must have passed him on your way in, he is with his plants” She says “He is with his plants” like one might say “he is with his children” and as I think back on him later on that day, it makes much more sense. “Ahhhhhhh the gardener!” I exclaim, and she laughs “yes, that’s him”. in bloom, and dotted about the lush vegetation are an array of sublime statues. From Roman gods, to Greek heroes and Italian sculptures. It is a veritable hidden paradise, situated right in the the middle of Marbella. “Coffee?” Mr Morelli calls out to me and I join him on the sunny terrace where he has changed out of his wellington boots. He places two chairs side by side, facing out towards the gardens and I sit down beside him, bathing in the morning sunshine. “Listen!” He tells me. And I listen… I can’t hear a sound, except for a chorus of birds tweeting and singing and Sandro breaks into a grin “They are welcoming you!” He smiles, “Is there anywhere more beautiful than this?” Here was a man in love with his life.

I make my way back up the lane, “Mr Morelli” I call, extending my hand as I approach him. “How may I help you?” he asks, setting down his hose and stepping out of the flowerbeds, trousers tucked into the top of his wellington boots. “We have an interview scheduled..” I begin and he flashes a mischievous smile at me, “Do you think millionaires don’t water their own plants?” He asks with a thick Italian accent. “Go on down to the gardens and I will join you!” If the entrance is pretty, then the gardens are magnificent! I meander past the fountain, where bright orange birds of paradise are scattered under majestic palm trees. There are rose bushes, rhododendrons and agapanthas
From humble beginnings... Born in Naples to a poor family, Sandro had a humble start in life. At eighteen, he moved to London where he got a job as a washer-upper in the kitchen of the Brampton Hospital. Shocked at how bland and flavourless English food was at that time, he encouraged the chefs to add herbs and spices, inspired by the dishes his mother had taught him as a boy growing up in Italy. He soon became a cook and eventually chef of the kitchen. He took his enthusiasm with him to the kitchen of the Ritz and then to the Cavendish Hotel on German Street where his Italian flair saw him progress for ten years, until his reputation preceded him and finally he opened his own restaurant, Barbarella, on the Fulham Road. With an endless stream of celebrities through its doors, from Charlton Heston to Frank Sinatra, Barbarella was the height of fashion and Sandro enjoyed the glamorous life in South Kensington during what he describes as “London’s best years”. It was in fact one of his celebrity friends who first introduced him to Marbella. Sean Connery had a villa on the beach and was a member of the Aloha Golf

If you make the world around you better, then the world you live in will be more beautiful Club. Sandro came to visit and discovered a house for sale. The villa itself was small, but with 7,000sm of grounds, Sandro fell in love with it and in 1989 Villa Tiberio was born. Of course there have been changes and renovations over the years, but as the Marbella landmark celebrates its 30th year in business this summer, I ask Sandro what the secret is to his success. “It is beautiful” he begins, “and when it is natural beauty, you can never take away from it. Look at the nature, listen to the nature, this is an oasis of beauty in a world of concrete, and buildings, and skyscrapers and ugliness.” Sandro spits the words out and his distain got the modern world is evident. “Cities are ugly to me. The buildings are getting higher and they shut out the sunlight. Everyone scurries about and no one seems happy to be alive. In Marbella though life is different, I wake up in the morning, the sun is shining, I go out into my garden, swim in my pool, pick oranges from my tree for my orange juice, I water my plants, life is beautiful.” The gift of giving “I care for my gardens with love and this is one of the secret ingredients that so many forget. But probably the biggest secret to my happiness is giving it back” Sandro admits. The Italian millionaire now dedicates his life to helping those less fortunate than him. From raising sponsorship and 114

donations, to hosting fundraisers, charity has become one of the most important parts of Sandro’s life. His primary goal is to invest in the future generations and to help children to grow up in a world away from war, poverty and starvation. Sandro berates the society in which we live and the injustice of billionaires and corporations getting ever richer, as countries invest in nuclear weapons and children die of war or hunger and his passion is evident. “Wait here!” He tells me and, moments later, he returns with a large laminated letter from Children with Cancer UK, thanking him for his donation of 40, 000€ that his summer party raised last year. We later tour the gardens where Sandro names all of the plants and flowers for me and proudly recounts the history of each of the marble statues. But even as he points out Venus the Goddess of Love and his extraordinary replica of the great Rodin sculpture The Kiss, none of them make his eyes shine with as much pride as this letter.
Sandro has raised hundreds of thousands for charity over the years, including Unicef and Children with Cancer, and his fundraising continues to be a fundamental part of his effort. He works closely with the local charity Cudeca so that he can witness first-hand the work that they do and the many people they help in our community. He strongly believes that it is the duty of all of us, no matter our origin or our nationality to help those who are less fortunate than us in our communities. To lift each other up, to support each other, to share our wealth and if each one of us did this, then the world would certainly be a better place. “If you make the world around you better, then the world you live in will be more beautiful.” He smiles and I am reminded of the poignant Italian film “La Vita e Bella” As Sandro and I say our goodbyes and he returns to his plants, I know the reason that his world is beautiful… It’s because he has made it so.

MASTER CHEF Dennis Wellerfors
Natalie Rose Kern meets Dennis Wellerfors, whose ceaseless drive and quest for perfection have taken his distinctive style international. I’ve come to meet top chef, Dennis Wellerfors at his Nueva Andalucia-based restaurant, Noellas. It’s a busy Wednesday lunchtime and the restaurant is packed. Dennis has just arrived from Malaga airport, after travelling from a chateau in Bordeau where he was cooking up a storm for an exclusive corporate event. We take a table in the corner to discuss his passion for food. Although food has become his ultimate passion, it was in fact his other great passion, motorbikes, that first brought Dennis to Spain from Sweden, sixteen years ago. Following his career as an international motocross rider, he was based first in Alicante and then in Marbella and—as is so often the case—the rest is history… Having trained as a chef in Sweden, he took up a job in one of Puerto Banus’ most fashionable restaurants, Pravda, and within six months he was the head chef there. It was 2004, business was booming in Marbella, everyone was spending and Puerto Banus was a hub of commotion, swarming with fashionistas and socialites seven nights a week and the ultimate playground for millionaires. riding took a backseat as Dennis forged ahead on the restaurant scene, creating an unprecedented buzz at Pravda as he concocted exciting, innovative menus that thrilled diners. In 2007 he was in charge of the kitchen when the uber trendy, Room Dining & Living, opened its doors; a restaurant that he believes changed the whole dining experience in Marbella. With a high city vibe, urban decor and a funky club atmosphere, Room was fully booked every night and Dennis’ kitchen promised an extraordinary gastronomic experience. I dined there on a handful of occasions and it was indeed an affair to remember. There was nowhere else with such a buzz, dark lighting, a live DJ spinning tunes— and then of course there was the food, which I can only describe as looking too good to eat. I mention this memory to Dennis and he smiles, “This is what I try to do,” he explains, “I want the dining experience to be a treat for all the senses, I aim to create dishes that are a feast for the eyes, before the mouth.” It is perhaps this that sets Dennis apart with his menu creation. He has meticulous

I want my food to excite and entice eye for detail and exquisite presentation, ensuring that each dish— however small or simple—is a visual work of art. “I don’t believe in piling food onto the plate,” Dennis explains, “Each dish is carefully crafted, not only from the flavours and textures, but the colours and arrangement on the plate. I want my food to excite and entice you before you have even tasted it.” Dennis enjoyed a busy season by the sea, at the Beach Lounge in San Pedro, before taking on the kitchen of Los Naranjos Golf Club. This was a novel idea for the golf club that only opened for lunch, and an exciting project that Dennis was all too eager to undertake. Having crafted an international menu with distinct Scandinavian influence and that certain Wellerfors flavour, Dennis breathed new life into Los Naranjos, which soon became a buzzing hotspot for dining out at night in the golf valley. Ever chasing new challenges and projects to get his teeth stuck into, Dennis opened up the stunning Guey restaurant in Nueva Andalucia in 2010, which was packed every night. Sensationally stylish with large decked terraces, Guey offered all the flair and fashion of the Banus-based restaurants but with the added seclusion of the gardens of Nueva Andalucia. In 2011 Pravda was reopened under new management and Dennis returned as head chef and co-owner and thus a new era at Pravda began. As Dennis recounts memories of each restaurant, the obstacles that he has overcome and the many challenges and successes he has encountered along the way, his hunger is evident. As a perfectionist, hardworking, driven and disciplined, Dennis sets his own goals and is not satisfied until he has accomplished 118

his aim—in most cases surpassing his own expectations. He is forever looking for ways to advance is craft and continues to hone his skills, bringing all of his experience into each new project. In 2013, Dennis began catering for private events. From friends’ parties and open houses for real estate companies, to weddings and corporate events, his catering business began to grow, as did his kitchen and his team. His reputation in Marbella preceded him and, with his wealth of experience and his distinct signature style, it was not long before Wellerfors Catering went international. From Stockholm to Paris and London, Dennis now travels around Europe catering for exclusive events and corporate functions. He also works as a consulting chef, designing menus for new venues and events. He opened Noellas in 2017, and has built up a loyal clientele who flock to the restaurant each lunchtime for his sublime gravlax, salmon and Scandinavian delicacies. His team has continued to grow and, in the busy summer season, he caters for stag and hen dos, weddings and a steady stream of parties. Whether it’s a huge function of 450 people or a dinner party for six, Dennis ensures that he delivers exactly what the client is after. From designing bespoke menus to decor and service, Dennis strives for nothing less than excellence and oversees each event personally. He also teaches cooking classes for team building events and is a skilled kosher chef; creating unique kosher menus for exclusive events that are innovative and exciting. Between overseeing the running of Noellas restaurant, cooking and concocting creations for new clients and travelling around Europe to entice diners with his cuisine, I wonder if Dennis has time for anything else. “I have a few exciting projects in the pipeline right now,” he smiles, “My plans for the future are mainly more cooking and more creating… and I suppose getting some sleep.” DINE MARBELLA 2019

THE ROBIN HOOD INN For more than 30 years The Robin Hood has been the quintessential English pub on the Costa del Sol, as Giles Brown reports.
When it opened in the early 80s, situated in Benamara, under original owners Paul and Pam, the “throbbing Robin” as it was nicknamed, quickly became popular with the small British community. Along with the (now demolished) Club Leisure Sport next to it, The Robin Hood Inn became the social hub for both expats and tourists alike, attracted by the authentic pub feel and live music and Paul and Pam even appeared in the The Sunday Times Magazine’s “A Life in the Day” feature. It was also the place to watch sports – I watched England lose on penalties to West Germany in the Italia 90 semi finals on a summer’s evening. pub business in the 90s, The Robin Hood Inn lost some of its sparkle, but when Yolanda took over in 2014 the group was determined to breathe new life into the venue “We brought the pub five years ago.” says Yolanda “I have always loved English pubs and this is a little bit of England. It has become an iconic building, a focus for the community and a traditional pub”. It may be on the Costa del Sol but the owners of The Robin Hood Inn have got the look down to the last detail. It really has that “Olde Worlde” feel with lots of wood paneling, great touches such as golfing memorabilia and a vintage clock on the wall, a working fireplace, and there is even an authentic pub sign depicting the great man himself. “We have had a great experience, with so many good reviews and great memories. The staff love working here and have a great relationship with the customers” The Robin Hood Inn also has a long bar with traditional beers on tap, as

well as a large covered patio area. If you want to watch the sport on one of the Flat screen TVs but still keep the kids entertained, there is a designated children’s activity area with a supervisor. There is also a basement area that has been converted into a fantastic games room, complete with two pool tables, a billiard table and even table football. Marbella may have been many things, but in terms of dining it was very much a rural restaurant backwater. So, it is proof of just how much Marbella has evolved as a gastronomic destination that the town is now home to four Michelin starred restaurants. Report: Giles Brown

If, twenty years ago, you had predicted that Marbella would have a Michelin starred restaurant, you would have been laughed off your table. DANI GARCIA Now one of the bestknown chefs in Spain, it’s impossible to mention Michelin in Marbella without bringing up Dani, the gastronomic genius behind the town’s foodie revolution. His restaurant Dani Garcia at Puente Romano was the galvanizing force behind the huge success that La Plaza has become. Dani shocked the restaurant world when, shortly after winning his third Michelin star, he announced that he would be closing the venue in December.
SKINA Small but perfectly formed and tucked away on a side street of the Old Town, Marcos Granda opened Skina Restaurant in 2004 with his wife, María Isabel Salamanca. The couple’s obvious passion for the finest food, wines, and gastronomy in general saw Skina achieve their first Michelin star in 2009. EL LAGO Located to the east of Marbella in a beautiful lakeside setting, Restaurante El Lago has been quietly getting on with the craft of creating stunning cuisine since 2000. An innovative restaurant that is justly famous for its creative cuisine, founding chef Diego del Rio, along with restaurant manager Paco Garcia, have been lauded for their dedication in bringing Andalusian products to the fore. El Lago has held a Michelin star since 2005, and current chef Juanjo Carmona continues to highlight the best of the region.
MESSINA Husband and wife duo Mauricio Giovanni and Pia Ninci achieved their first Michelin Star for Messina in 2016, which has been renewed in 2017 and 2018. With a menu that changes seasonally using mainly fish and crustaceans from the Mediterranean alongside local products from AndalucĂa, Mauricio is able to express his technique in simple yet elegant dishes.
