It gives us tremendous pleasure to introduce the first issue of Hot Summer. Being lucky enough to call Marbella home, we recognised the need for a magazine that focused solely on that integral part of Marbella life, the beach! Marbella is blessed to have over 50 beach clubs and hundreds of beach restaurants, so the task of selecting the best that this vibrant town had to offer wasn’t an easy task, believe us! What we did have, however, was “insider knowledge” – many of the Hot Summer team have lived in Marbella for many years and a lucky few were fortunate enough to be born here! This issue also features two iconic beach clubs - an interview with Ocean Club’s Head Chef Andreas Nygren. And, as Nikki Beach celebrates its 20th Anniversary globally and its 15th Anniversary here in Marbella, we reveal the history behind the iconic beach brand. Without doubt, one of the most important factors in enjoying summer is the food – and when it comes to enjoying food and drink, Spain, takes the gold. From traditional to cutting edge, you will find a tempting variety at Marbella’s beach restaurants. Let’s start with the classics. One of the most famous Spanish dishes is, of course, paella. Paella is a traditional rice dish originating in Valencia. There are are three common types of paella: Paella Valenciana (white rice, vegetables, chicken, duck and rabbit meat, land snails, beans, and spices), Seafood Paella (rice, seafood, and seasoning), and Paella Mixta, which is actually a freestyle mixture 56

There is an argument that anything tastes good deep-fried. What is beyond doubt is the scrumptious crunch-meets-chewy gastronomic experience of battered squid. Especially when doused in freshlysqueezed lemon and served with alioli. I’ve always thought alioli was – a Spanish mayonnaise with lots of garlic. Well, I couldn’t be more wrong. Apparently, this garlic mayonnaise popular all over Spain called alioli is neither Spanish, nor French, and not even Italian – it actually

originates in the Middle East, according to Celebrity Chef, Jamie Oliver, and I have no choice but to believe him. The main thing is that it tastes great with almost everything. Away from the traditional Spanish dishes, international flavours have also had an influence. It would be hard to imagine any beach restaurant or club that does not serve sushi, for example. Always beautifully presented, the Japanese cuisine always seems to hit the spot whether you are eating it on a sun lounger, at the bar or sitting at a restaurant table overlooking the shimmering Mediterranean. Sonora Beach Sonora Beach has been attracting a chilled out crowd of locals and visitors in the know for years. With a relaxed bobo vibe, many were worried that Sonora would lose some of its soul when owner Javi decided the time was right for a reboot and a revamp. They need not have worried. There has been a quiet food revolution going on in Marbella over the past few years. CHEF’S SPECIAL What’s new at Ocean Club this year? We are building on from what we were doing last year. We aim to be diverse. We have a lot of different nationalities working together at Ocean Club so we aim to keep it as international as possible. We want to be creative, and keep it light and fresh. What are the specific challenges of Ocean Club? Firstly, you need to be very organised as there is a lot of food going out every day. To do it with the quality that we do requires organisation. That’s the biggest challenge and I put that down to creating the right mentality within the team. A lot of the team has been coming back to work at Ocean Club for years and others I brought in when I came. In the kitchen we have 12-15 different nationalities alone, so we can use that when we create our food. I try to use everybody, obviously. If you make sure that the team feels a part of what you do it’s going to bring out the best in them. We also work with local providers as much as we can– all our vegetables are local.

We also have value providers - we import our Wagu meat from Chile for example and the King Crab comes from Alaska What would you say are Ocean Club’s signature dishes? I think that the Singapore Crab captures what we are trying to do – it’s a seafood medley with an Asian touch to it and that is what we are doing here. The King Crab Tatar is also especially good. We sell a lot of finger food such as Club Sandwiches, Pizzas – our menu is very diverse and we cover every area and in addition to our regular menu we have a specials menu of 15-20 dishes, where we keep it interesting for our regular customers. Finally, are you looking forward to summer 2018? Yes absolutely! I’ve been in Marbella for 13 years – I came over from Sweden – it’s a nice place and I think that Ocean Club stands out from a lot of places that we have around here in terms of the product that we deliver. We had great feedback from last year and we are looking to improve on that and be creative!

Nikki Beach is associated with glamorous events, chic beach vibes, music, fashion and fine dining. The brand, which has 14 locations across 11 countries, is famous for plush ambience and high-flying clientele. The story, however, begins with a terrible tragedy…

Nicole Penrod was only 18 years old when she was killed in a car crash. A year after her death her devastated father, Jack, decided to establish a beach club for Miami’s boho community on South Beach to celebrate the life of his daughter. The original Nikki Beach began as a memorial garden and café. “The building of a garden by the sea was my therapy to be able to cope with losing my daughter, Nicole”, explains Jack. In fact, Jack planted all of the trees that stand there today whilst his wife, Lucia created a butterfly garden. “This was a project of love, not business” The space was so beautiful that a group 126 l HOT SUMMER 2018

of nightlife promoters asked if they could host their “Beehive” event there. Jack thought that it would continue the spirit of his daughter with its mix of chilled surfers, artists, musicians, aspiring models, and locals. This laid back approach helped create the “barefoot luxury” identity that has been the hallmark of Nikki Beach ever since. Nikki Beach Miami celebrates 20 years in December this year. The original Nikki Beach boasts one of the best addresses in the World: 1 Ocean Drive, Miami Beach. It attracts jetsetters, celebrities, VIPs and locals alike, many of whom return time and time again. “Each location combines the elements of everything that Nicole

In 2002 Nikki Beach opened its second location in Saint Tropez, with supermodel Naomi Campbell hosting the opening party with a white themed party that endures today for Nikki Beach globally. And in the winter that year, Nikki Beach opened in Saint Barth, with Marbella launching in 2003. This year marks the 15th Anniversary of Nikki Beach Marbella and since opening its doors on one of the finest white sandy beaches in Marbella it has welcomed thousands of guests, including many stars of stage, screen and sport. “One of our first events was our ‘Amazing Sundays’ which really took Spain by storm and put us on the map” Marion Roman, now Regional Director of Operations and back then restaurant manager at Nikki Beach Marbella remembers. “Beautiful people, great music and live entertainment, delicious food and incredible amounts of Champagne against the backdrop of the stunning natural beach. It became the place to be on a Sunday. We attracted the local elite, international jet setters and celebrities. People flew in from around the world for our parties and still do,” Since opening in Marbella, Nikki Beach has expanded to Thailand, Greece, Dubai, Turkey, Italy and Barbados as well as a Hotel and Resorts division in Thailand, Greece, Turkey and Dubai, with more exciting projects in the pipeline this year. “Nikki Beach was opened to celebrate the life of my daughter Nicole and the brand’s growth symbolizes the years she has tragically missed out on. I keep the wonderful memories of an amazing young woman,“ says Jack. “To see what my little girl Nicole did for us and the Nikki Beach family has left me speechless”. 128
