Contributed by Laura Oki, Friends of the Elko County Library The Friends of the Elko County Library will be hosting their annual “Just Desserts” on Saturday, May 4, 2013 from 5:30 – 8:00 at the Elko County Library. This is the 25th year that the Friends have held the annual fundraiser and we are anticipating it to be the best yet. Tickets for the event are $10.00 and can be purchased at the Elko County Library prior to the event or at the door the night of the event. Besides wonderful desserts that range from cakes, cookies, a chocolate fountain to fruits, cheese and crackers, an assortment of wines, beers, specialty coffees and a margarita bar are also available for attendees to partake in. Community members have donated their time to provide amazing entertainment for the event. Each year local businesses and individuals donate items for the silent auction. Gift baskets, wine, balloon rides, blankets, pictures, guns, jewelry and guns are among some of the many items that the Friends have auctioned off in past years. The silent auction will close at 7:30.

Everyone who buys a ticket to “Just Desserts” will be entered into the door prize drawing. This year, first place is $1,000.00 and second is $500.00. Those that can’t attend but wish to support the library by purchasing a ticket, only need to return the stub to the library prior to the event and their ticket will be entered into the drawing. The Friends of the Elko County Library is a volunteer group that was formed in 1990. The Friends meet every third Tuesday at noon at the Elko County Library. The Friends have raised and donated over $180,000.00 to the library since its inception. These funds have been used to purchase books for adults and children, magazines, reference materials, audio books, downloadable materials, and furniture such as shelving. Funds have also been used to purchase public computers, assisted in the purchasing of the bookmobile and the operational costs of the bookmobile, adult and children’s programming as well as other library needs. The Friends of the Elko County Library have a scholarship that is given each year in memorial of Julia Doren who was a member of the Friends Group.

“Without the Friends of the Elko County Library, the library would not be able to provide all the services available to the community. The library is extremely thankful for the support it receives from the Friends”.

Loads of

Lemons Contributed by Mandi Ratliff of Cucina Fresca

There's a harvest of tart going on right now. Gregarious and bold, friendly with so many foods, lemons declare their potent flavors with puckering yellow audacity this time of year.

To know lemons is to love them… Every cook knows about the magic of lemons, but each of us could benefit further by including more of the bright, fresh flavor in our cooking. Lemons can be the dominant flavor in a dish, or simply lend a secret sparkle. Using lemons brings to our diets a healthy dose of Vitamin C, a load of antioxidants, and a tantalizing aroma to the kitchen.

Types of Lemons Domestically, the most common lemons are the Lisbon and Eureka varieties. The Lisbon strain is harvested during the winter and spring and is generally seedless. Eurekas are ready in the spring, through summer, and into the fall; they have a slightly rougher skin. Meyer lemons have become quite popular but are actually a cross between a lemon and sweet orange. They have a very thin skin and are more delicate in nature. Globally, other lemons are legendary; for example, Italy’s lemons from Sorrento or the Amalfi Coast.

19

APRIL 2013 | everythingelko.com

Choosing and Storing Choose a lemon that is bright yellow without any green tinges, soft spots, or blemishes. When held, it should feel heavy for its size. Store lemons at room temperature whenever possible for maximum flavor. If not using within a few days, lemons may be stored for up to four weeks in the crisper drawer of the refrigerator.

Two Favorite Parts Lemons are used not just for their bright, acidic juice (pH = 2-3), the zest contains essential lemon oils that are potent flavoring agents. The juice is contained in the lemon’s vesicles that are partitioned into sections – usually 8 to 12 sections per lemon. The oils reside in the colored portion of the skin and are accessed by scraping the lemon’s surface, or zesting.

Friends of Lemons So many foods are complemented by lemon. In fact, we can’t think of a food item or recipe that isn’t improved by a twist or squeeze of lemon. Nor is it surprising that lemons pair especially well with other foods grown in the same climate – olives, oregano, mint, garlic, basil, artichokes, and so many more. *Use lemon instead of salt to brighten foods

Tart, meet tangy. Tangy, meet tart. For the simple appetizer, lemon pairs with basil in adorning chevre with plenty of added flavor. Chevre, with its naturally tangy profile, is enhanced with a double dose of lemon, zest and juice. At 50 calories per ounce, chevre is a great choice for a cheese appetizer. Serve this lemony, herbed, soft cheese with crostini or your favorite crackers. We even used the leftovers in a delicious omelet the next morning.

Chic Chevre How to Zest The oils in the lemon’s skin hold powerful flavor potential. Access the oils by scraping the yellow portion of the rind and breaking the oil glands located on the surface, a technique known as zesting. An average-sized lemon will produce about 2 tablespoons of zest. Choose an organic lemon, scrub well with warm soapy water to remove any dirt or coating. Scape just the yellow portion with a zester or grater. (Avoid including any of the white pith; it has a bitter quality and very few of the desirable lemon oils).

http://www.acornadvisors.com/2012_KNews/02-16-12_ Lemons/Recipes_Lemons/CFNV_Chevre.html

Zest over a bowl to capture overspray - With a zesting tool, scrape the yellow skin from the lemon producing tiny little yellow ribbons. - With a grater, hold the lemon and scrape the grater across the yellow part of the lemon’s skin. - With a grater, hold the grater and move the lemon across the grater’s blades.

How to Juice More juice will be released from the lemon when it’s at room temperature. To quickly warm a lemon, place in a bowl of warm water, or microwave for 30 seconds. Roll the lemon on the countertop applying pressure with the palm of your hand. This rolling will help to break the vesicles, the thin-walled cells that hold the lemon’s juice. Strain the lemon juice to remove any seeds and pulp prior to using in the recipe.

Avgolemono Greek Soup This classic Greek soup takes everyday ingredients and turns them into a creamy comfort soup in a matter of minutes. It has all the feel-good power of chicken soup, but with greater flair owing to the healthy dose of lemon juice. Our version of this soup uses pastina, tiny pasta stars, but any rice, orzo, or other petite pasta shape will return delicious results.

Zesting & Juicing Tools Microplane citrus grater The tiny blades on this grater are ideally sized to return a fine, feathery zest with plenty of oils released in the process.

Citrus Reamer Need to squeeze just one lemon? Use a citrus reamer to get thejob done quickly and efficiently. Chef’N Citrus Juicer

For squeezing a number of lemons (or any citrus) a juicer is indispensable. With a squeeze the juices are released.

Preserved lemons & greens with lemon-honey vinaigrette Preserved lemons are a staple of Moroccan and South Indian cuisines. Fresh lemons are pickled in a brine of salt and their own juice. The result is a condiment that tantalizes the sour and salty taste buds all at once. Preserved lemons complement a salad of fresh greens dressed with a lemon-honey vinaigrette. This vinaigrette is tart, yet with a hint of sweet. Try it!

Vinaigrette

http://www.acornadvisors.com/2012_KNews/02-16-12_ Lemons/Recipes_Lemons/CFNV_Preserved.html

Dressed, Ready-to-Go

Keeping lemons

Homemade dressings are far superior to bottled dressings in every way. Substitute lemon juice for vinegar in salad dressings. Just maintain the vinaigrette ratio of 3 parts oil to 1 part vinegar (or in this case, lemon juice). Add garlic, herbs, and plenty of black pepper to the emulsion. Fresh dressing will keep for 1 week in the refrigerator. *Use lemon instead of vinegar in any recipe

Too many lemons? You might try preserving as described above, but you can also freeze any extra zest or fresh lemon juice until needed. Apportion zest into tablespoon-sized mounds and wrap into individual packets. Freeze juice in ice cube trays until solid, then package in a container or freezerproof wrap.

Lemon Garnishes The bright color and our Pavlovian response to anything lemon, makes it a great garnish. Here are a few ways to accessorize food with lemons:

21

Zest Dust. Sprinkle a bit on vegetables, seafood, or dessert.

The perfect lemon tart Exquisite and stunning to serve, this tart is deceptively simple to make. The crust is quickly mixed with a fork in a bowl and patted into the tart pan with just your fingertips. The filling is also readily assembled and bakes to golden perfection with a short stint in the oven. The lemon filling tastes divine and perfectly complements the tender crust. How to Sweeten Lemons Candied lemon peel showcases the entire rind of the lemon with sweet success. Trim the rind into Âź-inch strips leaving the white pith intact. Place the pieces in a saucepan and bring to a boil, then drain; this step removes some bitterness. With fresh water, boil the peel in a solution of equal parts sugar and water for 30 minutes. Drain, allow the peel to cool; it should appear translucent. Roll and dredge each piece in granulated sugar, allow to dry. Dip in chocolate if desired. Store in an airtight container.

Chicken Piccata A favorite entrée for many of us, chicken piccata is an easy stovetop dish ready in less than 30 minutes. The light dusting of flour on each cutlet creates a thin crust. The sauce by itself has a lusty, rich flavor that dissolves over the sautéed chicken breasts in a beautiful melding of flavors. 4 boneless chicken breasts
1 egg
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
 6 tablespoons butter, divided
2 tablespoons olive oil
2 tablespoons shallots, finely minced
2 cloves garlic, finely minced
1/2 cup lemon juice (about 2-3 lemons)
1/2 cup chicken stock
1/4 cup dry white wine
2 tablespoons capers, drained and rinsed

Shortbread with Lemon Curd Bar Shortbread with Lemon Curd Bars
These cookies are a combination of two of my all-time favorite things shortbread and lemon curd. They last longer than you would think, at least 4 days in the refrigerator, and the crust never gets soggy. Makes 16 bars. 1 cup all-purpose flour
1/4 cup packed dark brown sugar
1/2 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into small pieces
1 cup Lemon Curd (below) or store-bought lemon curd, chilled
Confectioners' sugar for dusting

Recipes from Luscious Lemon Desserts by Lori Longbotham.

APRIL 2013 | everythingelko.com

1. Pound the chicken breasts to an even thickness, less than half an inch. For very thick chicken breasts, butterfly them by cutting in half. 2. In a small bowl, whisk the egg with 2 tablespoons of water to make an egg wash. Pour the egg wash on a rimmed plate. On another plate, mix the flour, salt, and pepper. Dip both sides of each chicken breast piece in the egg wash, then dredge in the flour mixture until coated. 3. Heat a large skillet over medium-high heat. Add 2 tablespoons of the butter and 2 tablespoons of olive oil and allow to heat. 4. Place the coated chicken breasts in the hot skillet. Allow the chicken to cook on the first side until golden. Turn, and cook the second side until also golden and the chicken is cooked through. 5. Place the finished chicken on a heat tolerant plate, and place in a 200°F oven to keep warm while the other cutlets are sautéing and while the sauce is made. 6. In the skillet, sauté the shallots for 1 minute. Add additional olive oil for sautéing the shallots if needed. Add the garlic and sauté an additional minute, or until the garlic is fragrant. 7. Add the lemon juice, chicken stock, and white wine to the skillet. Stir and scrape up the browned bits. Reduce heat to a simmer and allow the juices to reduce by half. 8. Whisk in the remaining 4 tablespoons of butter. Add the capers. 9. Plate the warm chicken breasts and ladle the sauce on top. Garnish with lemon slices.

1. Position a rack in the middle of the oven and preheat the oven to 350°F. Have ready an 8-inch square baking pan. 2. Whisk together the flour, brown sugar, and salt in a medium bowl and break up any lumps with your fingers. Cut in the butter with a pastry blender or 2 knives used scissors-fashion, until the mixture resembles coarse crumbs. Knead the dough until it comes together. Transfer the dough to the baking pan and press evenly into the bottom. Bake for 20 minutes, or until light golden brown. Let cool in the pan on a wire rack.

 3. Spread the lemon curd over the crust. Refrigerate, loosely covered, until ready to serve. 4. Just before serving, lightly sift confectioners' sugar over the Lemon Curd and cut the cookies into 2-inch squares. Store in an airtight container.

Lemon Curd
Lemon Curd is a luscious, bright yellow, tangy custard made with butter instead of milk. It is like a creamy preserve, only eggs are used instead of pectin as thickening agents. It has a shorter shelf life than preserves, but will last several weeks, tightly covered, in the refrigerator – but only if forgotten. Usually it disappears rapidly, often by the spoonful at midnight. This spread is popular in Great Britain, where it’s eaten on toasted bread or cake, on scones fresh out of the oven, in tart fillings, and in trifle. This thick lemon sauce is also excellent over fresh fruit, gingerbread, angel food, or pound cake. Lemon Curd: Makes about 1-1/2 cups. 1/2 cup (1 stick) unsalted butter
3/4 cup sugar
1/2 cup fresh lemon juice
3 tablespoons finely grated lemon zest
Pinch of salt
6 large yolks

1. Melt the butter in a heavy medium saucepan over medium-low heat. 2. Remove the pan from the heat and whisk in the sugar, lemon juice, zest, and salt. Whisk in the yolks until smooth. 3. Cook the mixture, whisking constantly, until it thickens and leaves a path on the back of a wooden spoon when a finger is drawn across it; do not allow the mixture to boil. 4. Immediately pour the Lemon Curd through a strainer into a bowl. Let cool to room temperature, whisking occasionally. Refrigerate, covered, until ready to serve. (Lemon Curd keeps for a month in the refrigerator and for about 3 months in the freezer.

Luscious Lemon Desserts by Lori Longbotham. Published by Chronicle Books, San Francisco, CA. Copyright 2001.

For the last course of the meal, dessert, the combination of tart and sweet appeals to us every time! An official lemon aficionado, Ms. Longbotham has graciously assembled a suite of recipes that showcase the sweet side of lemons. In this book, the full gambit of desserts are addressed – cakes, tarts, pies, puddings, custards, soufflés, mousses, cookies, and many frozen confections. The recipes are expertly presented and accessible for all levels of cooks. If the recipe titles don’t make your mouth water, the fabulous photography by Alison Miksch will! Asserting the focus of this book, the author humorously notes, “This book uses approximately 176 lemons.” We think you’ll enjoy each and every lemon!

Spring: The Flavor of

Vodka Contributed by Laura Jaeger of Southern Wine & Spirits

This is the month where we spring forward and Spring is officially under way. It is a month of renewal, new beginnings, budding trees and plants and warmer weather. Vodka has gone through many new beginnings in recent years. First, we discover the shrouded mystery of the origins of vodka. The Russians claim that they developed it while the Polish say the same. But the word Vodka derives from the Russian word “voda”, which means water. You decide, but it can be said that 3 countries played a significant role in Vodka’s history. There are several new vodkas that I think are wonderful and worth the mention. American Harvest is an Organic Spirit which has a proprietary blend of organic ingredients added. It is handcrafted in small batches from organic winter wheat grown on a family owned and operated, sustainably managed American farm. It is distilled and bottled in Rigby, Idaho, using water from aquifers deep beneath the Snake River plain. This results in a distinctly smooth, (and boy, do I mean smooth), silky, spirit with a crisp clean taste. This vodka has no additives or preservatives and makes a mean dirty martini. Another Vodka is Tahoe Blue Vodka. The story is a funny one…. Matt, a South Shore resident, was sitting in a bar with a friend and came up with a “real cool” bottle for vodka. Well, he had the bottle. He now had to come up with product for the bottle. Matt was a beer guy. He did not like the bite that vodka leaves behind. He searched high and low for a great distiller to make that vodka. He found a boutique distiller in Mountain View, CA who would produce the vodka using a blend of 50% sugarcane, 25% grape and 25% corn. This vodka is blended and distilled in small batches, using Alambic stills. This vodka is smooth and crisp. A portion of Tahoe Blue proceeds go to the organizations that protect the clarity of the Lake. Finally, I would be remiss if I didn’t get a flavored vodka mention. Skyy infusions Wild Strawberry is one of the new flavors in the Skyy Infusions line up. Skyy Infusions is made with natural ingredients. I had a bottle of Skyy Infusions Wild Strawberry opened on my desk. Someone walked by my office and asked where the strawberries were.

Spring: The Flavor of Vodka

This vodka is that true and I would recommend you try this one with lemonade. However their newest flavor is Skyy Infusions Moscato. This vibrant spirit blends succulent Moscato grapes with premium Skyy Vodka, creating an entirely new, sexy vodka flavor. Try Skyy Moscato with ginger ale. Whatever your flavor of vodka is, just remember what Ron White said;

“I believe that if life gives you lemons, you should make lemonade….And try to find somebody whose life has given them vodka, and have a party.”

Break t a w a y

s

Contributed by Erin Gerber of Just Travel

The time is upon us for the kids to be out of school and for all of us to take a break from the sometimes chillier weather and to head to warmer destinations to relax and re-connect. Here are some ideas for your next getaway!

Mendocino, CA

Stay: Agate Cove Inn This farmhouse and collection of cottages are set on a bluff above the Pacific, about a three-hour drive from San Francisco. There are wildflower gardens on the grounds, as well as cypress and redwood trees. If you stay between December and April, you’ll have a chance to see whales passing by out at sea. You can also take part in lawn games such as croquet, badminton, and bocce. A full breakfast and Wi-Fi are included.

Utah

Stay: Lodge at Red River Ranch, Teasdale, UT A little over three hours from Salt Lake City, this lodge is set on 2,000 acres a few minutes from Capitol Reef National Park and is also accessible to Arches National Park and Zion National Park. There are 15 guest rooms and suites with rustic furnishings, wood-burning fireplaces, and private balconies or garden patios. The 3-story tall Great Room has a floor-to-ceiling fireplace, game area, and a piano. But you won’t want to linger inside for too long—the lodge is in a prime spot for fishing, hiking, horseback riding, and rock climbing.

Colorado

Stay: Vista Verde Guest Ranch, Steamboat Springs Looking for something fun, different, and outdoorsy? A day where the kids will return back to your private cabin exhausted and eagerly awaiting the following day’s activities? That’s the Vista Verde Guest Ranch, where rates include meals and all beverages; horseback riding; guided hiking, biking, and fly-fishing; river rafting and kayaking; kids’ and teens’ programs; evening barn dances and rodeos; and shuttle service to and from Steamboat Springs.

Kauai, Hawaii

Stay: Grand Hyatt If you can swim, then you can surf. At least that's what the folks at Kauai Surf School believe. Families can arrange for group sessions so the whole crew can wipe out and encourage each other to hop back up again. Group lessons maintain a ratio of 4 students for every instructor, ensuring that everyone has ample time to catch some waves. The Grand Hyatt is a family-favorite with an amazing pool complex including saltwater lagoons and freshwater pools with waterfalls, grottos and a 150- foot slide. Parents don't need to feel guilty about dropping off the kids at Camp Hyatt where kids ages 3-12 can learn the hula, meet the resident parrots or make cool cultural crafts.

Dominican Republic

Stay: Club Med Punta Cana The beauty of an all-inclusive vacation is that you can put your wallet away and relax once you reach your destination. This Spanish-speaking nation is quickly becoming one of the hotter spring break spots in the Western Hemisphere. The weather is usually perfect no matter the time of year, save an occasional tropical storm; and the laid-back atmosphere requires you to do little else but bask in the sun and relax all day long. The Club Med Punta Cana caters to families with oceanfront family suites and even simplifies your packing by making baby essentials, like bathtubs, strollers and even baby food, available for your use. There are activities galore for parents and kids to enjoy together including infant classes at the Baby Gym and catamaran adventures. Supervised camps are included in your package price for kids over 4 years of age.

If it’s too late to plan your vacation, these destinations will still be around next year, so plenty of time to start planning now! If you are desperate to get away or have something planned, then here are a few “last minute” spring break ideas.

Hit the Great Outdoors

No matter where you live, chances are there is a campsite of sorts within a short driving distance. A weekend with Mother Nature requires little planning, So pack up the tent, sleeping bags and portable stove and take it outdoors!

Be a tourist in your own town

Whether you live in New York City or rural Nevada, you’ll more often than not find your region rich in culture and heritage. Head to Tuscarora, Jiggs or the Lamoille Canyon with your camera and start snapping photos!

Wherever the travel road may take you, enjoy spring break and spending time with the family!

You do not have to travel far to take part in the Great outdoors, as our public lands provide plenty of opportunities for outdoor activities. Here is a sample of recreational opportunities within a short drive of Elko.

Hiking -

While most of the Mountain trails will be under snow for a few more months, there are a few snow free hiking trails worth checking out. The South Meadows Trail at South fork State Park is a nice easy trail for family hiking. This trail follows the Humboldt River and provides opportunities for wildlife viewing. The new LamoilleTalbot Trail will be the first hiking trail in Lamoille Canyon to be free of snow. This trail is perfect for viewing spring wildflowers and views of Lamoille Valley. South of Jiggs is the Toyn Creek Trail. This trail follows the old roadbed alongside Toyn Creek and here you get a close-up view of beavers at work in the stream.

Birdwatching –

Elko County is home to over 100 bird species. Most of these species are migratory and have just started to return to Elko County for the season. The Ruby Lake Wildlife refuge is one of the best spots for bird watching. Swans, geese, ducks, shorebirds and songbirds are abundant. Pack a lunch and bring your binoculars and field guide for a pleasant day trip.

Fishing –

Mountain Biking -

The back roads of Elko County provide many places for Spring mountain biking. The Adobe Mountains just north of Elko. Follow north 5th Street out of Elko for a few miles and you will arrive at a network of dirt roads overlooking Elko. Another area for good riding is the road system along the South fork of the Humboldt River. This area can be reached by taking Bullion road west of Elko towards the river. Road conditions are changing in April and riders should be ready for dust, mud and water on the roads.

Camping -

Four area campgrounds are open and ready for April outings. South Fork State Park and Wildhorse State Park campgrounds are ready for campers. South Ruby Campground, adjacent to the Ruby Lake Refuge also has one loop open. Plus the Zunino Reservoir campground near Jiggs is open. The first campout of Spring is a treat after our long winters and should not be missed. The nights will be cold, so remember to bring plenty of wood and warm clothing for a nice evening fire.

The ice is leaving the area reservoirs including South Fork and Wildhorse Reservoirs. Here shore fishing should be good throughout April. Ruby Marshes is also a favorite with local fishermen and the water will be ice free in April. In Owyhee, the reservoirs on the Duck Valley Reservation are known for their large trout and excellent float tubing fishing. Don’t forget to buy a new fishing license before you head out.

We all have areas in our landscape that need some attention. Once you've zeroed in on the area, here are seven simple steps that may help change a problem area into a garden you can enjoy through the changing seasons.

Colorscapes Greenhouse and Nursery Annuals, Perennials, and Shrubs Open 8-4 Monday-Saturday www.colorscapesgreenhouse.com

753-5000

Start with a plan/design that defines the intent of the garden. • Designs for hedging, screening, or as a garden backdrop are straight or curving strips. Density can be increased by zigzagging line patterns with tall shrubs to the back or center. Most shrubs are as wide as they are tall; using a mix of varieties adds interest. • Designs for a mixed border garden with a clear front to back pattern incorporate tall shrubs toward the back, flanked by medium sized shrubs and tall perennials, tapering to shorter varieties. Perennials can be arranged in groups or ribbons. • Two-sided-view designs have medium sized shrubs or tall perennials in a curving or straight line pattern down the center and tapering down. Typically, the average garden width is equal to two-thirds of the mature height of the tallest planting.

47

APRIL 2013 | everythingelko.com

Establish edges to define where the garden begins and ends.

Choose plants that intent of the design.

• E dging is available in a range of materials. Criteria can include ease of installation, durability, aesthetic qualities, and availability for future installations. Using consistent edging material for nearby areas as they're developed adds continuity to the site.

• Plants with similar light, soil, and water requirements are a starting point. Shopping with a list of possibilities, pictures of the area, or with a picture from a magazine that appeals to you are also ways to increase your chances of finding the right plants.

• E dging should not be confused with hardscapes including buildings, fencing, or walkways. Edging used between garden and lawn needs to be wide to minimize grass encroachment. Do those needed fixerupper chores to hardscapes prior to planting.

Improve soil for plant root development and water conservation. • I work new beds 10-12 inches in depth with a tiller then topdress with 2-3 inches of organic amendments. Bring the tiller tines up and incorporate the amendments into the top 4-6 inches of soil. Machinery can be rented or digging by hand is always an option. • The time and energy spent breaking up compacted soil and preparing a garden for planting will pay off in the long run. I prefer to use organic amendments. Rejuvenating an existing garden? If it's a really cool plant, lift it out for saving, otherwise... toss it.

Establish how the garden will be most easily, yet efficiently, watered. • In-ground systems with flexible poly and rigid risers are easy to install, manageable, and reliable, but are less water-wise, risk saturating blooms with water, and are blocked as plants mature. Gardens need less water than lawn so system will need its own zone. • Connected emitters on a drip system, low-volume soaker hoses, and drip tube systems are water-wise, but need to be constantly monitored to ensure that they are delivering enough water to thoroughly soak the entire root zone of all plantings. • Our 5,000 sq.ft. lawn is on a pop-up system and most gardens are on soaker hoses and drip tube systems. We average 28,000 gallons of water through July and in August to maintain our landscape, the greenhouse and nursery, and for use in the home.

best

serve

the

• You may shop strictly by color, for edibles, to bring in birds and beneficial insects, ease of maintenance, plants suggested by a trusted retailer, or because you love to be around plants. Add some personal touches, and the garden will be just what you want.

Topdress with a slow-release fertilizer and 2-4 inches of mulch. • Do this before when planting plants in 6" or smaller pots fairly close to one another. Do this after for bigger perennials and shrubs. I apply a 14-14-14 slow-release fertilizer combined with iron at the rate of one pound per 100 sq.ft. of garden area. • Mulching is an important step since it will deter weeds, conserve water, and improve the tilth of the soil. Gardeners have their own favorite, I like those that break down within two seasons, feeding the soil and the organisms that make healthy plants possible.

Water newly planted gardens thoroughly and frequently until established. • Even water-wise plants need to be kept evenly moist while roots work their way into the soil, especially those planted in July-August. Once established, after one full growing season, continue to water thoroughly, but less frequently. • All plants need a supply of oxygen to the roots, so avoid over-watering once the plants are established. As temperatures rise in July and August, we increase watering to twice a week. A deep, thorough watering is better than light, frequent watering.

Pizza Barn

Pizza Barn From that moment you walk through the squeaky barn doors and take that first step on the red cobblestone floor of the original barn or the hardwood of the addition. The smell of handmade pizza dough and the freshest ingredients permeate your senses and you know you're in Elko's favorite place for pizza...the Pizza Barn! Many a soccer team, t-ball team and championship team has celebrated at "the barn." How many birthdays or celebrations have you had at the Barn? Do you remember Sandy horse?...that horse has seen more miles than the blackjack challenge winners at the Elko County Fair and she still puts a smile on the face of her riders, every ride. Everyday!!

“Serving Elko’s FAVORITE pizza for 30 delicious years!” It is a sad, but true fact that over ½ of all independently owned restaurants fail within the first five years of business. On March 20, 2013 the Pizza Barn celebrated its 30th year of operation. In 2012, Pizza Today Magazine listed The Pizza Barn as one of the top 100 Independently owned Pizza Restaurants in America! The folks at Pizza Barn would like to especially thank their loyal and repeat customers for their continued support and patronage and state that it is an honor to live and operate a small business in a community like Elko. Although many things have changed over the years, some things have remained constant. Our dough recipe has never changed, it is still made from scratch and rolled out fresh every day. Our five cheese blend of monterey jack, mozzarella, provolone, cheddar and parmesan cheeses give our pizzas a flavor that is unmatched anywhere. We always use the finest pizza

toppings available, along with the freshest produce to ensure that EVERY PIZZA, EVERY DAY is the best you can eat. Our staff is like family. Our restaurant has become a family favorite. From our party packages, video games and Sandy horse, internet jukebox and big screen TV, we have always created an open, casual, relaxed and fun atmosphere to eat. We try hard to keep our independent look. Whether it be our seasonal pizzas like the have-a-heart, chili-dog, or Oktoberfest pizzas; or special discounts when you wish a “Happy Birthday” to our three Golden Retrievers. We want the Pizza Barn to be fun, unique and better than any other pizza chain restaurant. Come in today and wish us a “Happy Anniversary!” We look forward to serving Elko the best pizza for another delicious 30 years in the Best Small Town in America!!

Happy Honkers When Chellie Smietana and Spring Dykstra first met almost a year ago, they had no idea they would become friends, let alone that they would have things in common. For instance, both of their mothers were named Kathy and both had breast cancer. This common denominator, combined with good friendship and a common drive to give back led them on their adventure towards the Race for a Cure. Here are their stories.

Race for a Cure

Chellie Smietana and Spring Dykstra have formed a team, Happy Honkers, and will be participating in the Susan G. Komen Race for a Cure in Salt Lake City, Utah on May 11, 2013. If you would like to sponsor these gals or join their team, you can go to www.komenutah.org , click on “Donate online”, then “Make a Gift”. You can also check Chellie and Spring out on Facebook or mail a donation to the address below and make sure to note that the donation is for the Happy Honkers team.

Chellie's Story

My mom, Kathy, was first diagnosed with breast cancer in 1993. Her surgery was sucessful and in 1998 she was given a clean bill of health. Unfortunately, in 2001 she was re-diagnosed with breast cancer and she passed away in December of 2003. She was a very kind and vibrant person and is missed very much. Since losing my mom I have known several people who have been diagnosed with and survived breast cancer including my mother-in-law Sandy and my husband's grandmother Lou. I am very excited at the chance to participate in the Race for the Cure and to raise money for an excellent cause.

APRIL 2013 | everythingelko.com

Spring’s Story

My first brush with cancer was in January of 1992, at the age of 16, when I found a large tumor in my left breast. I was in surgery the day after I found the tumor. It was about the size of a ping pong ball. I will never forget looking at my mom, Kathy Dykstra, and saying, “Mom, I don’t wanna die.” She hugged me and assured me everything would be fine. Fortunately, the diagnosis came in, I had a benign fibroadenoma. Later that year, while doing my monthly self-breast exam, I felt three more lumps. By March 1993, I was back in surgery. Three more lumps removed, and the diagnosis of fibroadenoma, fibrosis and fibrosing adenosis, all benign. Finally, I had a clear bill of health and I could get back to being a Senior in high school. I didn’t have another brush with cancer until 2004. That’s when my mom was diagnosed with ductal adenocarcinoma breast cancer. The day she got the news from the doctor, she and my dad had been out and about, gambling at the local casinos and she called me. The first thing she said to me was, “Well I wasn’t lucky at the casino and I wasn’t luck at the doctor either.” Humor truly is the best medicine and my mom, a nurse, is really good at administering the medicine of humor. Although my mom has always kept her head up and fought the good fight, she soon got a low blow when my dad was diagnosed with cancer the following year. My mom was now a grandmother, a mother, a wife, a daughter, a sister, a patient and a nurse. That’s a lot for anyone to take on. One blessing was that her cancer wouldn’t require any chemotherapy. She had a lumpectomy and radiation and has been in remission ever since. I am blessed to still have my mom here but, unfortunately, we lost my dad to his cancer in 2010. My mom has always been strong, resistant, full of faith and strength and a true inspiration to me as a mother and a wife. I am taking this new opportunity to participate in the Race for the Cure because my mom inspired me to do so and I want to honor her and all people affected by cancer.

is the latest and greatest marketing buzz word. It has replaced “New and Improved.” We hear there is value in the car we purchased -- more miles to the gallon. We hear there is value in our laundry soap which gets our clothes not only cleaner, but brighter. And who doesn’t want cleaner brighter clothes? Then add the word “Super” to Value. Super Value is so much more than “new and improved.” In fact, the retail grocery chain, Albertson’s, is now SuperValu. So what do I expect when I hear value? I hear, “I’ll get my money’s worth.” I hear, “You won’t waste my time.”

Value

will not be a buzz word, but a reality at the Toastmasters District 15 Spring Conference on May 3-4, 2013 in Elko when World Champion of Public Speaking, Craig Valentine, entertains and enriches those attending. Mr. Valentine is an international speaker, author, speech coach and storyteller who will give you tools that will enhance your speaking and communication skills. Craig’s unique style of capturing an audience’s attention and demonstrating proven techniques for better speaking have made him a successful and much sought after speaker. Craig will be the Keynote Speaker on both Friday and Saturday nights, May 3rd and 4th at 7:00 pm. The public may attend the Friday night session for only $20. In addition, students are encouraged to hear Craig speak and attend the educational workshops for only $10. Early registration is $100 for the entire conference. You’ll get your money’s worth listening to and learning from Craig Valentine.

Value

of having Elko host an International District Conference. Sunrise Toastmasters Club is going all out to say, WELCOME! Great Basin College is the venue for the eight educational sessions on Saturday morning and afternoon. The educational presenters consist of three Regional Directors, the 2012 District 15 International Speech Contest winner, and professionals who excel in their fields of expertise. The Saturday night banquet will be at the Red Lion where the 2013-2014 District officers will be installed and Distinguished Toastmasters will be recognized and honored. You won’t waste your time driving to out of town venues. Speakers and educational presenters of great worth and value are coming to Elko!

What is Toastmasters? Toastmasters is a nonprofit education

and leadership organization that teaches public speaking and leadership development. Toastmasters’ mission is to provide a supportive and positive learning environment which gives members an opportunity to develop communication and leadership skills. Toastmasters clubs are a safe place which foster self-confidence and personal growth. Toastmasters provides building blocks for strong competent leaders in the work place and public service. Each week, Toastmasters helps more than a quarter million people of every ethnicity, education and profession build their competence in communication so they can gain confidence to lead others. Where is the FUN we hunger for after a long week at work? The wildest, funniest stories will delight and tickle your funny bone during the Tall Tales competition on Saturday morning. Paul Bunyan has nothing on these creative storytellers. Saturday afternoon will showcase talent throughout District 15 as contestants will share humor, inspiration, and/or tears during the International Speech contest.

TOP 5 TIPS FOR

SPRING

MAKEUP Contributed by Jamie Zach

1. FOCUS ON YOUR FACE

3. LASHES, LASHES, LASHES

It's very important to protect your face from those beautiful sun rays that are finally making there appearance in Elko! So make sure you are are using a moisturizer with an SPF protection of at least 15 or higher!!

This is always going to make your makeup pop wether its day or night! Lash extensions are always a great choice as long as you make sure and take care of them properly, and if you have the patience for the grow serum's, there are some great ones out there on the market!

OUR WOMANLY RESPONSIBILITY: as woman we all know that our husbands and boyfriends don't always know how important it is to wear SPF, So make sure and remind them.. We want them looking just as sexy as us for the future!

2. YOU ONLY NEED A LITTLE Sometimes as woman we feel like the more the better, well when it comes to tinted moisturizer that is not the case. A little goes a long way! I recommend only using a thin layer before you apply your base foundation, wearing to much will start to wear you down if your not careful!

4. SPARKLE This season the sparkle is in! It's going to give that little bit of extra you are looking for! Try an eyeshadow with a sparkle of green, blue or a soft rosé for a great spring look!

5. GO FOR THE GLASS Lip gloss is so easy and always beautiful, just throw a little on- with or without the sparkle! Remember less is always more girls!

* Don't forget our skin is the most important thing when it comes to looking young and fresh so make sure that you're protecting it from those harmful sunshine rays!

Crafting: Pass or Fail Contributed by Shippy Chic

Letter "R" I found a box of patio lights and I discovered this letter "R" at our local Real Deals store and knew right away that I wanted to fabricate the charming "Vintage Marque Lights" that I have been seeing floating all over Pinterest. With a little help from my husband this project was a HUGE success. First he laid paper over the "R" and measured where we wanted the lights, next he took a drill bit and drilled the holes so the lights would fit properly, (because it was a metal "letter" and not wood like some of the ones on Pinterest, he decided to make the holes slightly bigger than the bulb so there would be no chance that the two metals would touch, electricity is a funny thing). SAFETY FIRST!!! Next step was to unscrew the lights and set the cord behind the letter (it had a hollow back, thank goodness) then proceed to put them back into each other. We plugged it in and waw-la!!! It's beautiful, I love the way this turned out. You could literally put this anywhere, I have also seen this done with the word "JOY" and set on a fireplace mantel during the holidays, use your imagination and go crazy. The only reason I am giving this a B is because it required power tools and the metal shavings can be dangerous. But other than that I am super pleased with the way this unique project turned out.

Lipstick

Glitter Nail Polish

Making your own lipstick sounds pretty daunting but it's actually pretty easy if you follow the instructions on Pinterest. I'm guessing most lipstick owners always have unused lipstick stuck in the bottom of their tubes, it's too much to throw out but too little to glide onto your lips. Thanks to Pinterest I have found a brilliant way to not let that leftover lipstick go to waste. Take a small cosmetic spatula or toothpick and scrape lipstick onto a spoon, you can even mix colors together to create your very own color, next heat the spoon until it melts, then poor into a small tub until it sets up, ( I put mine in the freezer and it set up in about 30 seconds). Super easy and you might have just created a shade that everybody wants but only you have!!! A+ for sure.

Ever tried to find a glitter nail polish but couldn't find the right hue or one that had enough glitter in it? Shop no longer, with all the endless glitter possibilities at the craft store you can have a plethora of your own unique shades. I bought a very inexpensive top coat and mixed silver and gold glitter together for my color. Its was super easy, pour a little of the top coat out so your bottle does not overflow, dump the glitter that you want to use onto a piece of paper and mix it around until it is evenly distributed, than take the paper and create a funnel and pour mixture into the bottle, shake or roll until it is mixed and polish away. It may take two or three coats but it seemed to glide off the brush well and it stayed on great. Another A+!
