April Events at the California Trail interpretive Center

Just as the emigrants were getting ready for their trip west in April, it’s a busy month at the California Trail Interpretive Center as well! The Staff and volunteers are gearing up for a month of activities and for Trail Days in May and summer 2014. During April, the Trail Center will be hosting dressmaker’s workshop with Elizabeth Stewart Clark, dressmaker extraordinaire. Clark is well known for her expertise with a focus on the 1840-1865 era. She will be offering advice and demonstrating how to make emigrant outfits for men, women, and children. Space is limited, please call the Trail Center for more information. The Trail Center and the Western Folklife Center are joining together to co-sponsor a dance at the Western Folklife Center, 501 Railroad Street on April 26. A guest caller will teach you the in’s and out’s of contra and square dancing. A fun family event for all. California Trail Days will be part of the Nevada 150 official events on May 31 and June 1st. A covered wagon camp and Shoshone camp will be set up with variety of displays and hands on activities for all ages. Displays include black powder rifle demonstrations, period music, gold panning, quilting, Native American crafts and presentations. A square dance for the public will be held on Saturday evening, May 31. A caller will give instructions for inexperienced and experienced dancers.
This is an event for the whole family and a fun time guaranteed for all! Words of the emigrants’ experiences and thoughts will come to life on weekends with readings and entries from actual journals and oral tradition. In addition, programs with topics ranging from local native Shoshone lifestyles to pioneer experiences as well as demonstrations will take place each Saturday & Sunday at 2 pm. As part of the multi-use perspective of the BLM, presenting and preserving cultural places such as the California Trail is part of the Bureau’s mission. The California Trail Interpretive Center, operated by the Bureau of Land Management, is eight miles west of Elko in I-80 at Hunter Exit 292. Admission is free. Duck Race Is the Humboldt River big enough to hold races? …it is if you’re a duck!
Duck races have been popular fundraisers in many communities worldwide for years. According to Wikipedia, a duck race is when money is donated to the sponsoring organization by adopting ducks. The ducks are dumped into a waterway and the first one to float to the finish line wins a prize for the person who adopted it. The Freestore Foodbank Rubber Duck Regatta in Cincinnati, Ohio was first run in 1994 and currently features more than 100,000 racers. In the last 20 years, the organization has raised $4.6 million, with $500,000 just last year alone. The Great Humboldt Duck Race in Elko is not quite that grand. Elko’s a little smaller than Cincinnati and the Humboldt River is a little smaller than the Ohio. What we lack in size we more than make up for in enthusiasm!

The Northeastern Nevada Museum will hold the 9th annual Great Humboldt Duck Race again this summer. The exact date can’t be determined until just before the race, because of Mother Nature’s capricious attitude. The starting line for the race is the 12th Street Bridge and the finish line is traditionally at the Errecart Bridge, although that did have to be moved to 9th street in 2013 because there wasn’t enough water in the river. That was in June. Two years before, the race was in August and the water was still very swift. The Humboldt River always makes for interesting race conditions. In 2013, the Museum teamed up with local 4H Clubs to help sell the ducks. They will be helping again this year.

No… people don’t have to furnish their own ducks. No… they don’t get to keep the ducks they adopt.
The ducks are all numbered and put into the bucket of a front-end loader, furnished by Modern Concrete. Elko’s police department stops traffic on the 12th Street Bridge and the ducks are under-way, as they are dumped into the river. Through the years, there has always been a clearcut winner, with one duck out-swimming the others and arriving at the finish line well ahead of its competition. The lucky person who purchased the winning duck receives $1,000.

Herb Crusted Salmon Ingredients
3 Cups Bread Crumb 4 Tbs. Chopped Fresh Thyme 4 Tbs. Chopped Fresh Basil 4Tbs. Chopped Fresh Parsley 2 8oz. Salmon 1 Egg 2 Tbs. Milk 2 Tbs. Olive Oil Instructions
1. Mix the Herbs and Bread Crumb in a bowl and set aside. 2. Whisk together the egg and milk in a small bowl. Dip each Salmon steak in the egg mixture, then coat evenly with the herbed bread crumbs, pressing firmly with your fingers. Refrigerate for 15minutes. 3. Heat the oil in a skillet, add the Salmon and cook over medium heat for 4-5 minutes on each side, or until tender. Serve with a green salad, if desired. In this issue we entertain you with some fast facts about eggs, explain how to make the perfect omelet, and describe a few other favorites. Eggs
A laying hen will lay an egg every 25-30 hours. The formation of an egg occurs on a two-foot long track beginning with the yolk. The egg white forms around the yolk as a protective barrier, and as a last step, a shell is formed around both the yolk and white. A hen requires 12 hours of light to be in a laying mood. A rooster is not necessary for egg production, only for the production of chicks.
Eggs have “staying power” – it takes the body about four hours to digest eggs because of the fat and protein complements. Egg whites cook faster than egg yolks, egg whites begin to set at 145 degrees F while egg yolks begins to transform at 150 degrees F. Cooks eggs over low heat generally works the best for uniform results. Eggs are considered to be safely cooked at 160 degrees F.

Keep your hard-boiled eggs separate from fresh eggs in the refrigerator by placing a drop of food coloring in the boiling water; your eggs will be color-coded for eating. Alternatively, spin an egg to determine if it is hard -boiled or raw; a hard-boiled egg will spin evenly, while a raw egg will spin with a wobble.

Egg whites will not whip well if there is any trace of fat present. For beaten egg whites, make sure that no speck of yolk is present and that both the beaters and bowl are grease-free. An egg yolk is 50% water, 34% fat, and 16% protein, while the egg white is 90% water and 10% protein. The yolk contains most of an egg’s cholesterol and 75% of its calories in addition to vitamin A, Thiamine, and Iron. The egg white contains more than half of the egg’s total protein. Chalazae (ka-LAY-zee) are the opaque, white stringy things present in an egg white. They help to hold the yolks suspended inside the egg. The chalaza does not require removal. The fresher the egg, the more prominent the chalaza may appear. Eggs on the market are commonly available in four sizes: Medium, Large, Extra-Large, and Jumbo. The difference in volume between the eggs can make a difference in some recipes. Use the size of egg prescribed in the recipe, or adjust accordingly in sensitive situation.

Eggs-cellent Omelets For breakfast, lunch, or dinner, an omelet is a great choice. French in origin, an omelet is not nearly as difficult as some might like it to appear. The secret to a great omelet is a great nonstick pan. An egg's proteins coagulate at low temperatures, and are famous for making a pan difficult to clean. A good nonstick pan alleviates many of the problems with cooking eggs whether scrambled, fried, or as with an omelet.

Step 1
Beat 2 eggs with 1-2 Tbsp of milk, (or water), in a bowl with a fork or wire whisk until evenly blended. Add a pinch of salt and freshly ground pepper. For best results, begin with room temperature eggs by allowing the eggs to set for 30 minutes after removing them from the refrigerator.

Step 2
Heat an 8-inch, nonstick skillet or sauté pan with sloped sides on medium heat. Add 1-2 tsps of butter to the heated pan. Tip and roll the pan around allowing the melted butter to coat the pan’s surface.

Pour the egg mixture into the pan. With a nonstick spatula, push on the sides of the cooking egg encouraging the liquid portion to flow into the void. Continue this motion working around the pan until no more liquid flows. Gently keep loosening the omelet from the pan along the way so that it slips around the pan easily.

Step 4
Allow the omelet to finish cooking undisturbed. Omelet fillings may be added as the “stripe” down the middle of the pan. For proper folding or rolling, avoid overfilling the omelet. Keep the omelet loose in the pan with a couple shakes of the pan.

Tip the pan forward and flip one-third of the omelet back on itself. Slide the omelet onto the plate with the folded edge first. With a tip of the pan, allow the remaining third to overlap on the folded portion of the omelet.

Fill your omelets with delicious fillings according to your taste. Here are a few of our favorite combinations: - Avocado, cheddar cheese, sour cream, salsa - Brie, sauted mushrooms, a sprinkle of thyme - Mozzarella, diced pepperoni, and tomato sauce - Chile con carne, cheddar cheese, sliced scallions - Diced bell pepper, onion, zucchini - Ham slice or dice, cheddar cheese - Tomatoes diced, and a slather of prepared pesto - Olive tapenade, diced tomatoes
Fluffy Omelets Separate the eggs and beat the whites until soft peaks are formed. Carefully fold in beaten yolks and pour the entire mixture into a heated pan. As the eggs cook, the air bubbles will be captured, and an airy omelet created.
Egg White Omelets These omelets use just the white of the egg and are often preferred for those desiring lower calories or lower fat intake. The egg whites may be frothed, (not beaten, however), prior to adding to the heated pan. The addition of herbs, tomatoes, or onion provides good flavor enhancements.
Frittatas and Tortillas Cousins to the omelet, an Italian frittata, or a Spanish tortilla (see featured recipe below) are similar egg dishes where additions, (vegetables, meat, herbs, or your choice) are added to the egg mixture prior to cooking. The result is a thick, pancake-like egg dish that is flipped halfway during cooking. The "pie" is cut into wedges and served. Two nonstick pans work well for inverting the frittata and finishing the cooking. Use a 10-12-inch heavy-bottomed skillet.

Quiche A great quiche has a creamy, custard filling encased in a tender flaky crust. Eggs are combined with milk and/or cream to form a custard-like mixture. Additional ingredients - limited only by the imagination - are added to the mixture or placed in a waiting pie shell. To prevent a soggy crust, partially prebake the shell. Use a removable bottom quiche pan or flan pan for easy presentation. Alternatively, a deep-dish pie dish will perform well for delicious quiches.

Q: Some eggs tout extra Omega-3 and Omega 6 compounds, how are these eggs different? A:
Chickens fed flax seed produce eggs with greater quantities of Omega-3 and Omega-6 compounds, essential fatty acids. Flax is high in these compounds and transfer to the egg through the chicken's feed. Omega compounds are thought to have health benefits in triglyceride and cholesterol management.

Q: What is the best way to store eggs? A: Eggs may be kept at room temperature for a few days, but degrade quickly. Refrigeration extends the shelf life of an egg greatly. The ideal storage temperature for eggs is 40F. Avoid storing eggs in the door of the refrigerator, which is typically warmer than the central compartments. Store eggs in their original cardboard carton; it helps to maintain a higher humidity environment while reducing odor absorption.
Q: My omelets are not turning out - what's wrong? A: There are some common issues that arise when making omelets. Here are some troubleshooting tips: (1) If the bottom is browning, but the top is still wet: use a lower heat setting that allows for more even cooking. (2) If the omelet can't be folded, there may be too many eggs for the size of pan. For an 8-inch pan, use a maximum of 3 eggs; for a 10-inch pan, use a maximum of 5 eggs. Also use a modest portion of filling for good folding. (3) If the omelet is sticking to the pan, use a good quality nonstick pan. Keep loosening the omelet from the bottom of the pan during early stages of cooking. A little butter added to the pan will help with sticking and will add a flavor boost.

Quiche Lorraine
Serves 8-10 ¾ lb (350 g) tart pie dough (see below) 1½ tbsp (20 g) butter, to grease flour, to dust For the filling: 7 oz (200 g) salt pork flank, derinded and cut into small strips 1 tbsp peanut oil 7 oz (200 g) Gruyère or Comté, coarsely grated 3 medium eggs 6 medium egg yolks 2½ cups (600 ml) heavy cream Salt and freshly ground pepper Pinch of freshly grated nutmeg 2 tbsp Kirsch (optional) To finish: 1½ oz (40 g) Gruyère, cut into thin flakes

Grease an 8½ -inch (22 cm) flan ring (1¼ inches/3 cm deep) and place on a baking sheet in the refrigerator. Roll out the dough into a circle 1/8-inch (3mm) thick and use to line the flan ring. Chill for 20 minutes. Preheat oven to 400ºF (200ºC). Prick the bottom of the pastry shell, line with waxed paper and baking beans or dried pulses, and bake blind for 20 minutes. Remove the beans and paper, and let cool in the ring. Increase the oven setting to 425ºF (220ºC). For the filling, blanch the bacon in boiling water, refresh in cold water, drain, and dry. Heat the oil in a nonstick skillet and brown the bacon over medium heat for 1 minute; drain. Scatter in the pastry shell, then sprinkle on the grated cheese. Lightly whisk the whole eggs, yolks, and cream in a bowl. Season with salt, pepper, and nutmeg. Then add the Kirsch if using. Pour into the pastry shell and bake for 20 minutes. Lower the oven setting to 400ºF (200ºC) and cook for another 15 minutes. Scatter the cheese over the surface and bake for a final 5 minutes.
Tart Pie Dough Makes 1 lb (480 g) This dough makes the perfect shell for tarts, tartlets, and quiche. 1¾ cups all-purpose flour 9 tbsp soft butter, diced 1 medium egg 1 tsp salt 2 tsp superfine sugar First, put the four in a mound on a surface (preferably marble) and make a well in the middle. Put the butter, egg, salt, and sugar in to the well. Using your fingertips, mix all the ingredients in the well together, then gradually draw in the flour, little by little. Then mix until all the ingredients are almost amalgamated and the dough has a slightly sandy texture. Add about 3 tbsp (40 ml) cold water and incorporate, using your fingertips. Knead the dough 2 or 3 times with the heel of your hand to make it completely smooth. Roll it into a ball, wrap in plastic wrap, and let rest in the refrigerator for 1 to 2 hours before using.

Supplies to consider using to start seeds indoors
I'll explain one example of starting a long-time favorite tomato, 'Oregon Spring'
Advice to consider
At my potting table, I start with a clean seeding tray that I fill mid-way with a well-balanced, soiless potting mix. Tomato seeds, like most veggie seeds, are large enough that I can easily handle them and space them evenly on the soiless mix at about 150 seeds per tray (we do two trays of this variety). I use a short piece of 2x4 to gently press the seeds down so they come into contact with the soiless mix, then cover the seeds with a light layer of coarse vermiculite (you can use the soiless mix). The trays are then moved onto a bench in the warmest spot in the greenhouse and watered with a misting sprayer until the vermiculite is saturated. The trays are then covered with another seeding tray that is removed each morning to vent and apply another misting. The tray stays covered until most of the seeds sprout, about 10 days. After the seeds sprout, I cut back on the misting/watering and water only when the vermiculite dries (visibly shrinks) and leave the tray uncovered. Once the

seedlings have two sets of true leaves, about two weeks later, I gently tease the roots loose and transplant each seedling into a clean, 3.5" pot, again using a well-balanced, soiless mix. I fertilize with a water-soluble fertilizer at ½ the recommended rate, every third watering. About 3 weeks later, the plants are ready for acclimating (inside at night/outside on warm days).
Growing plants from seeds can be rewarding since it allows you to watch the seedlings develop into mature plants, controlling each step of the process. When we first opened in December of 1991, we started all of our perennials, herbs, veggies, and flowering annuals from seed. Now, we buy from large growers who specialize in seedling and cutting liners for next step growers, just like us. But, there are some veggie varieties that we prefer to seed ourselves and have had great success with over the years including tomatoes, peppers, and annual herbs. In March, we started 5 tomato varieties, 5 pepper varieties, and 3 herb varieties from seed and plan to offer them in 3.5" pots starting in mid-May.

Seeds (we like Territorial Seed Company @ 541-942-9547), seeding trays, soiless potting mix, low-volume water nozzle, sharpened pencil (to tease the roots apart), and small, clean pots. 18-3.5" pots fit nicely into the tray used to cover the seed trays. A limited number of trays, pots, and blank labels are available for sale at the greenhouse.
Look for short-season varieties (72-80 days). Example: 'Oregon Spring' tomatoes at 77 days. Seeds sown first week of April, transplanted about 3 weeks later, mature by about mid-July (77 days from transplant). Sow close to the number of seedlings you plan to grow. Label varieties as they're sown and use a blank label to divide them. You can use the same tray for tomato varieties and annual herbs, and another for pepper varieties. Peppers are slow pokes and usually take up to two full weeks longer before they're ready to transplant. Remember, I sow 150 seeds per tray, so unless you're feeding a small army, a couple of trays should be plenty. Store extra seeds in an airtight container up to 3 years in the refrigerator. Once the seeds sprout, keep in a sunny location (or close to the light source if that's how you're growing) to avoid stretch.

Instead, go with a good five-day forecast and always be ready to cover if temperatures are predicted to fall below 38 degrees. Memorial Day is the earliest I would consider planting tomatoes and peppers. Brassicas, including Broccoli, Cabbage, and Cauliflower germinate quickly and can be started and planted earlier since they are much more cold-hardy than tomatoes and peppers. Squash, cucumbers, and beans are very coldsensitive and do well with a direct, in ground, sowing about Memorial Day.

Caring for your newly planted veggies and herbs Keep soil/container garden mix evenly moist. Wet/dry watering cycles can cause delayed fruiting, stem end cracks, and blossom end rot. Go easy on the fertilizer. Sure plants need feeding, but over doing it will lead to lots of leaves and few blooms. We use Osmocote , a slow-release fertilizer that lasts for about 3 months. Planting colorful annuals (especially yellow ones) in with your veggies will attract pollinators and other beneficials that keep pests in check. Know thy enemy! Check for pests, especially on the underside of the leaves. A brisk rinse with a water nozzle will knock most of them off, so avoid using chemicals.

20th Annual Fundraising Banquet PAST, PRESENT, FUTURE Over twenty years ago, the concept of giving something back to mule deer was a dream of Emmett Burroughs. As Emmett traveled around the country, hunting and filming mule deer, he realized that many of us take this awesome species for granted. Think about what the world was like in 1988. Mule deer had been extremely abundant; right up until the winters of 1983-84. Across the West, the record snowfall lingered long into spring and early summer. Many mule deer and black-tailed deer perished; mostly starving for lack of food covered by snow and from cold temperatures. A few years later, Emmett observed that mule deer populations had not rebounded from this die-off. Many factors contributed to mule deer not coming back; loss of habitat, predators, poaching, highways crossing through the

middle of transitional ranges, and subdivisions being built on winter ranges. State wildlife agencies were busy trying to grow more elk and dealing with endangered species issues. On top of that, funding to state wildlife agencies was in decline. Mule deer management, which had been a staple of most fish and wildlife agencies, was taken for granted. It was as if mule deer, which were at one time ‘the’ premier big game species, were no longer worthy of prominence. Emmett gathered together a few of his close friends and acquaintances and asked them to think back at how much they had taken mule deer for granted. He challenged them with the famous words, “We must give something back to mule deer and black-tailed deer.” In July 1988, the Mule Deer Foundation was incorporated and now is your chance to give back!

Elko Outdoor Adventure Club is one of many free organizations hosted on meetup.com that are dedicated to connecting and building local communities around the world. Our community members are from all over North Eastern Nevada including Winnemucca

The Elko Outdoor Adventure Club meetup group came together as a way to meet new friends, discover new trails and haunts in this great region, and to learn new outdoor skills. Activities are member hosted and reflect the varied interests of the group. Upcoming activities range from a camping trip to explore Berlin-Ichthyosaur State Park, hiking in
Lamoille Canyon, camping at the Sun Tunnels and Spiral Jetty for the summer solstice and learning to dance (social dancing is good exercise and it allows folks to get to know one another in a safe setting, that and you are not likely to be cold, bug bitten or rained on). In the past we have attended the Moonlight Snowshoes hosted by BLM, Forest Service and Cedar Creek Clothing; visited hot springs; hiked various trails in Lamoille Canyon, rock climbed, disc golfed and hiked to Hennen Lake. There have also been potlucks and gatherings at local eateries. For those looking to start out we are hosting a no drop walk most Wednesdays around Elko to help us get into shape for our summer adventures. (No drop means we won’t leave you in the dust no matter what). New members, of any ability, are always welcome to join and explore the outdoors with us. The Mirror Mirror Project started as a spontaneous idea to get some women together, dress up as Little Red Riding Hood, and take some pictures. One of the ladies fell in love with her photo, saying she had never felt so good about having her picture taken before. The idea blossomed from there. Every month photographers Ashley Lortie and Savannah Johnson choose a theme. Previous themes include red riding hood, ice queen and masquerade. They then invite any interested women to dress up and get their pictures taken. Participants are encouraged to interpret the theme and dress however they like, the more creative the better. The goal of

The Mirror Mirror Project is more than just producing gorgeous pictures, but also to raise the confidence and self-esteem of all involved. The photographers want all women to see how beautiful they truly are. The project is an outlet for women, most of whom are wives and mothers, to leave their lives and become someone else for a couple of hours. When asked about The Mirror Mirror Project, the participants had nothing but good to say. Shayla Ray said “You feel like a kid again playing dress up”. Corine Sanchez- Houzer added “I love the feeling of confidence I have and the photographers make me feel amazing”. When asked if she would do it again Melissa Nelson said “Oh yes! I have bought my future outfits already!” The Project not only makes women feel great but as Colleen Shoaf put it “…I could see some possible friendships blossoming out of this experience.” New talents are also discovered as participants explore new makeup techniques and hairstyles. All women involved are extremely supportive and encourage new participants to join in and have fun. Negative attitudes or comments are the only things not welcome at the photo shoots. The project is open for anyone, in any situation to join. Savannah and Ashley have also expanded the project to include senior photo shoots to those whom would be otherwise unable to have them done. They are asking for nothing in exchange for their time, talent and effort put into the project, but are doing it from the goodness of their hearts. In addition to working on The Mirror Mirror Project, both photographers take care of their families, along with running full time professional photography businesses, Savannah Johnson Photography and Ashley Lortie Photography. The Mirror Mirror Project is a nonprofit project, there is no charge for anyone wishing to be involved. Any and all donations are more than welcome. Ashley and Savannah are always on the lookout for anything they can use for The Mirror Mirror Project. Rule #2 Seeing the bride before the ceremony is an absolute no. However, that's not the case anymore. It's been considered bad luck to see the bride before the wedding, and if you're wanting to stick with tradition than that's great. Some brides are wanting to capture that "first look" on camera. It's a cute moment and a private moment shared between the bride and groom, instead of all their guests. Plus, it gives brides more time to capture photos before the ceremony instead of after. Rule #3 Your wedding party must all match. Not the case anymore. While matching bridesmaid dresses are great, think out-of-the-box and have your bridesmaids where different styled bridesmaid dresses or different colored dresses that are in the same color family. Some dresses look better on some bridesmaids, while not so great on others. This gives them the option to feel comfortable and
even wear their dress again. Plus, your wedding will stand out and everyone will look great. Rule #4 You absolutely must have a garter and bouquet toss. Not so much. Your single friends are not a fan of being singled out and ushered to the middle of the dance floor to try to catch the wedding bouquet or garter. You can still play a game, like the Newlywed Shoe Game. Rule #5 – Honeymoons must be taken right after the wedding. Again, a lot of couples are opting to take their honeymoon a few weeks after, if not months after. All that stress of the wedding and then hurrying around trying to clean up and say bye to guests is a lot. So, some couples are taking it all in and enjoying it minute by minute by not having to be on a time constraint. Plus, you can save your money longer to take a better honeymoon. This year Soroptimist International of Elko (SIE) is marking a milestone as the organization celebrates its 65th Anniversary. SIE was chartered on November 19, 1949 and shortly thereafter Mary Cornish (then Elko’s Librarian) was sworn in as the organization’s first President. In the last sixty-five years SIE has had scores of members, performed countless hours of community service, and have spearheaded several community initiatives… yet, the organization remains largely unknown to Elko’s populace. SIE is part of Soroptimist International of Americas (SIA). SIA, headquartered in Philadelphia, PA, USA, is one of four federations comprising Soroptimist International (SI), which is headquartered in Cambridge, England. In short, Soroptimists can be found in 120 countries and are over 80,000 members strong. Locally, SIE is comprised of 17 active members and they work to “make a difference in Elko.” What is a Soroptimist? The word ‘Soroptimist’ origin comes from the latin words ‘sorop’ which means ‘woman’ and ‘optimis’ which means ‘the best’. In short, Soroptimist

means ‘best for women’ and Soroptimists are women at their best, working to help other women to be their best. SIE supports this concept by fundraising year-round in order to support several programs that improve the lives of women and girls in Elko. As a 501(c)(3) charitable organization, SIE also depends on outside contributions from people, organizations, and businesses who support the Soroptimist mission. Soroptimist International of Elko hosts monthly ‘themed’ Bunco games on the first Saturday of each month at the Commercial Casino, from 5:30pm to 8:00pm. “Hula on Over to a Lei’d Back Luau” is the next ‘themed’ Bunco game, taking place on Saturday, April 5th. The monies raised at Bunco are donated to the Nevada Health Services Mammovan and SIE’s Delegates Fund. SIE’s fall golf tournament raises money for the ‘Women’s Opportunity Award’ (WOA) and the ‘Violet Richardson Award’ (VRA). The WOA assists women who provide the primary source of financial support for their families by giving them the resources they need to improve their education, skills
and employment prospects. The VRA honor girls who donate their time and energy to causes that make the community and world a better place—such as working to end discrimination and poverty, assisting women and children who are victims of domestic violence, or mentoring young girls. SIE has already selected their 2014 WOA and VRA winners and will award them $1,000.00 and $500.00 (respectively) at their Recruit, Orientation and Retention (ROAR) event in May 2014. Next month Soroptimist International of Elko will be holding their 40th Annual Wine, Beer, and Whiskey Tasting event at Stockmen’s Hotel and Casino in the upstairs Convention Rooms. The annual event takes place on Saturday, April 19, 2014 from 6pm until 9pm. The theme is “Wine for the Women, Beer for the Horses, and Whiskey for the Men” and is sponsored by Southern Wine and Spirits, Stockmen’s Hotel and Casino, Party Time Rentals, Petite Tangerine Photography, and Stonerock Sound and Lighting. The evening events include a DJ and country dancing, a silent and live auction, raffles, “People’s

A Lift Up.org is an Elko non-profit organization (501(c)(3)) which assist individuals and families who are transitioning from devastation to independence. A Lift Up.org offers clothing and essential-living items at no cost to people in need who are referred by local organizations, churches, or city, county and state aid programs. Also proceeds from the evening will be used to fund The Magic School Supply Bus, an SIE project since 1987.

These Landscaping Tips Will Help Sell Your Home Potential home buyers form their first impression of a home from its curb appeal. Yet often a home's outdoor landscaping is overlooked, or underdone, in the preparation for the sales process. An attractive and wellmaintained landscape can add as much as 10% to the value of your home. Ideally the time to get started cleaning up your yard is about a month before you plan on showing your house. That should give you enough time to get everything looking just right and not leave the impression that you simply waited until the last minute to put things in order. Follow these tips for sprucing up your yard to help your home sell quickly. Spruce up outdoor containers. Touch up the mulch. Plant some instant color. Seasonal color makes the landscape pop as well, and flats of annuals are also relatively inexpensive. Go for a splash of several colors or a more monochromatic scheme, whatever fits in with the look of your home. Shape unsightly or overgrown trees & shrubs. Tend to perennial beds. Tidy up herbaceous plants, such as annuals and perennials, that don't look as good as they should. Door Cleaning Tips Start with the front, bedroom, closet and bathroom doors first before any other cleaning as they see the most use and often get dirtiest. Dust doors first. Remove the surface dust before applying any type of cleaning solution. Jumping straight to wiping down a door will just spread the loose dirt and dust around, creating a bigger mess. Paper towels work best. Use paper towels when it comes to wiping down door surfaces. Sponges and regular towels can hold tons of bacteria. Using a heavy-duty paper towel ensures that bacteria doesn’t transfer dirt and debris from one door to the next. Front Door Tackle the front door first because it’s probably the dirtiest. Start by dusting the door and getting rid of as much loose dust as possible. Use a mixture of gentle dish soap and water to scrub down the door, and then dry with a paper towel. Tip: Take note of the door's paint/stain finish. If it’s a wood door with staining, use a furniture wax or polish to wipe down and give the door a beautiful, clean glow. Tip: If you have a painted front door, make sure to use a diluted cleaning product that won't strip off the color. Inside Doors Dust and remove loose dirt and then get rid of any scuff marks caused by kids or animals. Next, use a diluted water and dish soap mixture to remove remaining dirt. Dry with paper towels. Raw Kale Salad with Lentils and Sweet Apricot Vinaigrette By Gena Hamshaw - - - Serves 4-6
2 bunches curly kale, center ribs and stems removed, washed, dried, and chopped finely 1/4 cup olive oil
Salad of
1/4 cup apricot preserves
Kale and
1 1/2 tablespoon apple cider vinegar
Lentils.
1 1/2 tablespoon freshly squeezed lemon juice 1/2 teaspoon sea salt 1 pinch black pepper 1 cup puy or beluga lentils, (substitute brown lentils if they’re what you have), rinsed and picked over 1 cup red cabbage, shredded

1. Whisk together olive oil, apricot preserves, apple cider vinegar, lemon juice, sea salt, and black pepper. 2. Turn kale into a large mixing bowl, and massage 6 T of the dressing into the salad. You’ll need enough dressing for the salad to be well coated and start taking on a “wilted” texture. Set aside. 3. Place lentils in a small saucepan with enough water to cover them by 3-4 inches (approximately 2 1/2 cups). Bring water to a boil, then reduce heat, add a pinch of salt, and let the lentils simmer for 20-25 minutes, or until the lentils are tender but not mushy. 4. Allow lentils to cool slightly and add them, along with the cabbage, to the kale, and add another 2 T vinaigrette. Use hands to combine. Add extra dressing as needed, and season to taste.

With the Easter holiday right around the corner, and the Easter bunny on his way, New Year’s resolution goals of improved health and physical fitness will be put to the test. With the temptations of caramel filled eggs, rainbows of jelly beans, boxes of marshmallow peeps and endless amounts of chocolate rabbits, Easter can very easily play part in what could be a major setback in your progression to meeting your fitness goals. Here are some alternatives to Easter candy to make this a healthier, but still enjoyable, holiday for you and your family.
1. Dyed Easter Eggs - Many kids prepare their own hype for the holiday by dyeing and decorating hard boiled eggs with their parents the previous night. Stick about three to four refrigerated eggs around their basket and encourage your child to eat them later on.

Parkinson’s disease is a progressive disorder of the central nervous system affecting over 1.5 million people in the United States. Clinically, the disease is characterized by a decrease in spontaneous movements, gait difficulty, postural instability, rigidity and tremor. Parkinson’s disease affects those over 60 but, increasingly is affecting people in their 20’s through 50’s. It does not discriminate. There is treatment to ease the symptoms, but there is not yet a cure. Here in Nevada, the American Parkinson Disease Association, Inc. (APDA) is hard at work helping to “Ease the Burden and Find a Cure.” It is a disease that affects many people personally in Nevada, as they are living with the disease or are caregivers. With the help of the APDA, Elko area residents started a support group in 2011 which meets once a month, connecting with Reno through the Universityof Nevada.

The group meets the first Friday of each month for information and support sessions with a Reno Parkinsons Support group via tele-conference. They are able to provide information, referrals, patient and family support. They discuss issues and share information and articles particularly relevant to Parkinsons, The goal is to provide mutual support and resources covering all aspects of the disease and to strive for help for those affected. At present there are 11 active members of the support group and several non active. Membership requires a desire to learn about Parkinsons, having Parkinsons, being a caregiver or relative of someone with Parkinsons. April 11, 2014 is World Parkinson’s Day. The Mayors office is scheduled to present a Procolamation in support of April as Parkinsons Disease Month to the group at the April meeting . In a recent newsletter article I talked about some simple ways to recharge your health this month. The response was great so I decided to include in this month’s Everything Elko. I’m here to remind you that health goes beyond just your physical condition! Remember there are six aspects of your health that need attention:

While life is hectic, we know you can do this. Why? Because it’s important, refreshing and fun! Try to do something on the list each day. Do your best and you’ll be feeling refreshed and ready to take on the world (oh, and don’t forget to get a friend involved, too). Shall we get started?
Rid your life of a stressor you’ve been avoiding. Do your laundry, deal with the stack of bills that’s been staring at you or initiate that tough conversation you’ve been meaning to. You’ll feel so much better after the weight has been lifted.
Lets Start with Your Mental Health
Make time for the things you love most. Take a walk in the park, enjoy a picnic, read a book, get a manicure/ pedicure, watch the sunset or take a walk with a loved one. Sounds delightful, doesn’t it!
Make the best out of every moment in life! Our mental health affects the way we think, act and how we handle and get through life. It has to deal with issues such as anxiety, decision making, and simply put, our sanity. It’s often overlooked, unmentioned and sometimes forgotten about (sadly). But, it’s just as important as your physical health, because after all, all the pieces of our health come together for your overall wellness. So, this month, focus on the forgotten: Set an exciting goal. Look for that new job you’ve been wanting, sign up for a 5k or challenge to keep your mind focused on something new and positive. Take a break. Take a nap, watch that romantic comedy you’ve been wanting to, or plan that weekend getaway you so badly need. You deserve it, and you need it.

Keep it positive. Life is always going to be hard, so you might as well make the best of it! Plus, your positivity influences those around you, so make someone smile today with a brighter, refreshing outlook on life!

Next up, Your Social Health! Your social health is how well you maintain healthy, positive relationships with those around you. By nature, we’re social creatures. So, it’s important that you have a sense of belonging and that your social needs are met and fine-tuned. So, here’s a few ideas to help your social life flourish this month: Call a long-time friend and setup a coffee date to catch up. Plan it! You know that ladies night out, weekend getaway or social event you’ve been craving? Now’s the time to send out the email or texts and get it on the calendar.

Happy Hour Pick up the phone. Call that long-time friend you haven’t talked to in months (or years)! It will feel so good to catch up. Join forces. Call a friend to get groceries with you or ask a friend to do this health challenge too, it’ll be even more fun to share the experience with someone! Find a sense of community. Whether joining a nonprofit or volunteering somewhere for an afternoon, remember that your health is just as important as the health of your community, so give back. Avoid unhealthy relationships. We all have them, but life’s too short to let other people get you down! Make an effort to spend time with people who are positive, happy and who will encourage and support you! Itching to plan a picnic or call your old friend? Great! We’re here to help you achieve true wellness. And, while we believe chiropractic is part of your wellness, there’s so much more to your health. Let us know if you’re going to give this a try, we’d love to support and encourage you along the way. Tell your friends and get started! You’ll have a better chance to stay on track when you have accountability. Plus, doesn’t planning movie night sound fun? 3/4 C. all-purpose flour 1/2 tsp. baking powder 1/4 tsp. salt 4 large eggs 1 Egg white 2/3 C. granulated sugar
2 tsp. vanilla extract 1 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1 2/3 C. finely shredded carrots Powder sugar for dusting
Frosting:
4 oz. unsalted butter 4 oz. cream cheese
2 C. powdered sugar 1 tsp. vanilla extract

Heat oven to 350°F. Coat bottom and sides of a 15 1/2 x 10 1/2 x 1-in. rimmed baking sheet (jelly-roll pan) with nonstick spray. Line bottom with wax paper; spray paper. Have ready a medium or large finemeshed strainer or a sifter. Stir flour, baking powder and salt in a small bowl until combined. Beat eggs, egg white, granulated sugar, vanilla and spices in a large bowl with mixer on high speed 8 to 10 minutes until thick and tripled in volume. Fold in carrots. Holding strainer or sifter over bowl, shake or sift flour mixture over egg mixture. With a rubber spatula gradually fold into eggs until just blended. Spread in prepared pan. Bake 15 minutes, or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 5 minutes, or until pan is just cool enough to handle. Meanwhile lay a clean kitchen towel (not terrycloth) on countertop. Dust confectioners' sugar evenly over towel, covering area the size of the cake. Invert cake on towel, remove pan; carefully peel off paper. Dust cake with confectioners' sugar. Starting at a narrow end, roll up cake and towel. Place on wire rack; cool completely. Meanwhile make frosting: Beat cream cheese and butter in a large bowl with mixer on medium speed until blended and smooth. On low speed beat in confectioners' sugar and vanilla until blended; increase speed to medium and beat 1 minute. Remove approximately a cup of the frosting; cover and refrigerate remaining frosting 30 minutes to firm. To assemble: Carefully unroll log. Spread evenly with 1 1/3 C. frosting. Roll up from same end as before, using towel as an aid. Carefully transfer to a platter; coat with remaining frosting and sprinkle with nuts. Refrigerate 20 minutes before piping carrots onto nuts.

Do you want to start the warmer weather with a great event? If you answered “yes” to those two questions then you must be ready to attend the 26th Annual Just Desserts fundraiser hosted by The Friends of the Elko County Library! Mark your calendars for Saturday, May 3, 2014 from 5:30 – 8:00 to partake of the offerings at the Elko County Library! This is the 26th year that the Friends have held the annual fundraiser, and we are anticipating it to be the best yet. Tickets for the event are $15.00 and can be purchased at the Elko County Library prior to the event or at the door the night of the event. Your ticket gives you access to desserts that range from cakes, cookies, truffles, a chocolate fountain to fruits, cheese and crackers, and scrumptious bars. You will also be able to taste an assortment of wines, beers, specialty coffees and margaritas! Where else could you have such a delectable evening for $15.00? Individuals and businesses have donated their time, money, and talent to provide an amazing evening where you can indulge in food and drink that will overwhelm your senses. Each year local businesses and individuals donate items for the silent auction. Gift baskets, wine, balloon rides, blankets, pictures, guns, and jewelry are among some of the many items that the Friends have auctioned off in past years. Items donated will be available for viewing starting March 17th. As usual, there is a wide variety of items to please everyone! The silent auction opens at 5:30 and will close at 7:30 the night of the event.
This year’s entertainment will be provided by the local band Southwind and Singer/Musician Debby McDaniel. Southwind’s trio has been playing together for about 20 years and have entertainment Just Desserts attendees for a number of years. They have recently recorded their first CD, “It’s About Time”! Debby McDaniel has been performing in Nevada for the last thirty years. Her repertoire covers music from the ‘50s to now, both country and contemporary. By purchasing a ticket to “Just Desserts” you will be entered into the door prize drawing. This year, first place is $1,000.00 and second is $500.00. Those that can’t attend but wish to support the library by purchasing a ticket, only need to return the stub to the library prior to the event and their ticket will be entered into the drawing. The Friends of the Elko County Library is a volunteer group that was formed in 1990. The Friends meet every third Tuesday at noon at the Elko County Library. The Friends have raised and donated almost $200,000.00 to the library since its inception. These funds have been used to purchase books for adults and children, magazines, reference materials, audio books, downloadable materials, and furniture such as shelving. Funds have also been used to purchase public computers, assisted in the purchasing of the bookmobile and the operational costs of the bookmobile, adult and children’s programming as well as other library needs. The Friends of the Elko County Library have a scholarship that is awarded each year in memorial of Julia Doren who was a member of the Friends Group. “Without the Friends of the Elko County Library, the library would not be able to provide all the services available to the community. The library is extremely thankful for the support it receives from the Friends”.
