Ruby Mountain Hot Air, Inc. is excited to announce the 12th Annual Ruby Mountain Balloon Festival to be held september 2629th in elko and spring creek, nv.
The balloon festival this year will consist of nearly forty balloons coming from Nevada, California, Oregon, Utah, and Arizona. The first activity associated with the balloon festival will be the school programs held on Thursday, September 26th. Several pilots and crew take their balloons to local schools and give a presentation on the history of ballooning and the avionics of balloon flight. We've hit that time of year when gardens, farmers' markets, and grocers are bursting with fresh produce. Our trugs, baskets, and market bags are filled with colorful choices and healthful inspiration. August is about to fly by as one crop peaks, quickly replaced by the next prize. It's nearly too much of a good thing! If only we could stretch a bit of summer into the cooler months ahead....
Fresh Fruit Preserves Carrying fresh fruit flavor forward takes many forms. Each option allows the fruit's full flavors to be captured and preserved for use on our morning toast, filling pastries, glazing meats, or complementing cheeses. Different terms define specific fruit preserves:
Jam - Crushed fruit along with its sweetened juices comprise jam. Its ideal
consistency is a soft spread where a spoonful holds its shape somewhat, though is still easily spread. Jams typically feature one fruit without any spices or other flavor additions.
Jelly - Juice is extracted from fruit, sweetened, and gelled naturally, or with the addition of pectin. The result is a clear product that holds its shape until spread. Good jelly sparkles in color and clarity, free from any cloudiness, and also spreads easily. preserves - While often a generic term, "preserves" also has a specific
definition when speaking of fruit. Fruit preserves refer to whole or chunks of fruit suspended in a heavy syrup or fruit jelly. In this form, the fruit is often used as a topping or pie filling.
Marmalade - Most common with citrus fruits, marmalade consists of a soft, clear jelly with pieces of fruit expertly suspended throughout. Many marmalades include the citrus peel which yields a desirable bitter taste contrasted with the jelly's sweetness.

Conserves - A bit more complex, conserves are a sweet sauce made from one or more fruits along with a dried fruit, (raisins, dried cherries, etc.), and nuts (almond, walnuts, pecans, etc.). The right conserve mix is a divine accompaniment to meats or as a stand-alone condiment.

Jams, jellies, and their cousins, are thickened fruit by definition. The slight gelling of the cooked fruit allows it to be spreadable yet hold its own as opposed to a liquid juice. Achieving the ideal gelled state is the primary trick in mastering the craft of homemade jams and jellies.
The science behind successful jams and jellies is relatively simple. Understanding some of what is happening in the process will enable you along the way and build successful results.

Release the Pectin Too Little, Too Much - Balance is key when making jellies and jams. The amount of sugar used must match the amount of pectin held in the fruit. The acidic balance must be present. Too little heat, and the sugar will not dissolve, water will not be evaporated, and enzymes that inactivate pectin are not disabled. Too much heat or overcooking, and the natural pectin will be debilitated.
How to Know What's Right
- Fortunately, there are generations of cooks before us that have experimented with different fruits and various proportions. Follow their lead! Use a reputable recipe and follow its instructions. Do not improvise on the amount of sugar, the volume of fruit, the quantity of acidic ingredient, or the cooking times.
Is It Ready? - Our featured author recommends testing the pectin content of cooking mixtures by using the spoon test. Dip a clean teaspoon in the cooked fruit, lift, and tip the spoon's contents back into the pan. If the drops are fall slowly and appear thick, the jam or jelly is ready. Better yet, use an instant-read thermometer. When the mixture has reached 230-235째F (soft ball stage), it's ready. Jams and jellies will continue to thicken as they cool

Dissolved in the fruit's juices, sugar impacts the fluid balance in individual cells. Water is released from the fruit in the presence of sugar, and along with the water, pectin is also released. The balance between sugar and fruit is critical in setting the gel.
A slightly acidic environment also helps the pectin to be released from the fruit. The ideal pH for jams and jellies is between 3.2 and 3.4. Without this acidic environment, the jam and jelly may not gel. Fruits may be naturally acidic, or assisted with lemon juice.
Heating the fruit mixture accomplishes many things. With heat, the sugar is able to dissolve and turn into its simplest form. Heat evaporates water allowing a more concentrated and flavorful mixture. Heat also kills any bacteria held on the fruit.

Why make your own jam or jelly? There's great satisfaction in mastering a new skill, or reconnecting with an old proficiency. With your own crafted jars you are able to buy or harvest locally, control what goes in your food, and enjoy the flashback to summer available with each bite. The science behind successful jams and jellies is relatively simple. Understanding some of what is happening in the process will enable you along the way and build successful results. Jams, jellies, and their cousins, are thickened fruit by definition. The slight gelling of the cooked fruit allows it to be spreadable yet hold its own as opposed to a liquid juice. Achieving the ideal gelled state is the primary trick in mastering the craft of homemade jams and jellies. Gelling occurs thanks to pectin. Pectin is a naturally occurring substance in plants that helps to give them their structure. Pectin is present in every land plant, and especially prevalent in fruits and seeds. {1} Locate what fruit is in abundance and a good
source. Find a trusted recipe where the balance of sugar, acid, and cooking times have been perfected by a predecessor.
{2} Wash the fruit, pat and air dry. Remove any spoiled or overripe pieces.
{3} P repare your jars and rings. The task here is to
create a sterile environment that will allow the preserves to last for months unrefrigerated. Immerse clean jars in boiling water for 10 minutes. Heat the jars lids and rings in a saucepan.
{4} C ook the fruit and sugar according to the recipe. Test for doneness.
{5} F ill a large stockpot half full of water and bring to a near boil. Place a rack in the bottom of the pan so that the glass jars are not directly touching the pan's bottom. Have another pan or teakettle ready with hot water.
{6} Fill the prepared jars with the water fruit mixture using a canning funnel keeping the rim and jar threads clear of any fruit mixture. Apply the lid and clamp into place with a jar ring. Tighten the ring only to fingertip tightness, no need to over tighten.
{7} L ower the warm jars into the hot water bath with jar tongs. Add additional hot water until the jars are covered by at least 1 inch of water.
{8} B ring the water to a boil and start timing the processing according the recipe.
{9} When the jars have processed to the required
time, remove from the hot water bath with the jar tongs. Place them on a cooling rack to cool with plenty of space in between the jars. During cooling, do not disturb or tip the jars. You may hear a satisfying "click" as the jam cools; the lids are being drawn inward as a vacuum forms through the temperature change.
{10} C heck the seal. The center of each lid should be
indented inward. This is indicative of an adequate vacuum inside. If the center of the lide can be depressed and pops back, the seal is not good. Refrigerate and use those jars soon, or reprocess in the boiling water bath.

Smart Jam & Jelly Making Tips Tip #1: Fruits that are perfectly ripe, or even under-ripe, gel more easily than fruits that are over-ripe. Our featured cookbook recommends using "three parts just-ripe fruit to one part underripe, avoid overripe fruit altogether." Overripe fruit has less acidity and less pectin.
Tip #2: Small batches of jam or jelly work better and gel more reliably than larger batches. Larger batches take longer to evaporate and the lengthened cooking time breaks down the pectin.
Tip #3:
What if the fruit is ready, but you aren't. Freeze the bounty until you're ready to make the jam or jelly. By waiting, there's the added bonus of cooler weather and a more comfortable kitchen.
Tip #4: Store canned jams and jellies in a cool, dry, dark place in order to preserve their appearance and flavor. Store opened (or inadequately sealed) jars of jam in the refrigerator.
Tip #5: Seek out the smaller half-pint or halfcup jars; they are just the right size for gift-giving. Be sure to label and date your jars.

Q&A Q: What is pectin? Must I buy it? A: Pectin is a natural food product extracted and concentrated from rich sources such as apples and citrus fruits, especially their peels. It is generally available in powdered or liquid form. Pectin occurs naturally in many fruits and is not required for jams and jellies, though some find it helpful. It has a shelf life, so check expiration dates.
Q: What is refrigerator jam? What is freezer jam? A: Both refrigerator jam and freezer jam are basically jam without the process of canning in a hot water bath. The preserves are kept fresh through the chilled temperatures instead of through a vacuum process. Both jam methods are ideal for small batches. Use a jar of refrigerator jam within a month.
Q: What types of jars should I use for jam and jelly making? A: If you plan to can your product, use mason jars that are specifically built of the proper glass and have metal lids and rings that match the jar exactly. The jars must withstand boiling water, and the closures must form a strong seal. Jars and rings may be used over and over again, but lids must be new each time.

This recent publication revives the secrets of making traditional jam, jelly, and many other sweet preserves. There is a whole generation, or maybe two, that missed learning this culinary craft at the side of their grandmother - this book fills in the gap by combining traditionally knowledge with today's ultra-modern kitchens and lifestyles. The author writes in an accessible style and includes over 200 tried, true, and tested recipes for honing jam and jelly making skills. The recipes focus on natural jams and jellies without the need for store-bought pectin or jelly kits. The book is organized logically with a chapter for each type of fruit. After all, as the author points out, contrary to finding a recipe then buying the ingredients, with jams and jellies it's the ingredients that come first with a recipe found secondarily. She patiently details the nuances of assembling the preserves and carefully explains the canning process. A great troubleshooting guide is included. Peach Jam One of our summer favorites in any form, peaches are very cooperative in transforming into jam. With just three ingredients, peaches, sugar, and lemon juice, the fruit is bubbled into a thick mixture. The taste was bright, full of concentrated peach flavor. We enjoyed it on our English muffin, and look forward to trying it as a seafood glaze sometime soon.

“Peaches are wet!” I find this sentence in two places in my notes on this fruit. To quickly cook off excess water, make your Peach Jam in a wide pan – a large skillet works well -- and don’t try to work with a quantity larger than 2½ pounds.

The juice was easily extracted from the berries and the jelly easily formed with the berries' natural pectin, sugar, and a little lemon juice for brightness and acidity. Amazingly delicious.

(Makes 5 half-pints) To ensure a good set, avoid overripe berries, and include some that aren’t quite ripe yet. I prefer to render blackberry juice with a steam juicer, but you can certainly extract your juice the traditional way: Mash 4 pounds berries in a kettle, simmer them, covered, with 3/4 cup water until they are soft (about 10 minutes), and then let the juice drip through a damp jelly bag for 8 to 12 hours. With either method, you’ll need about 4 pounds blackberries to make 4 cups juice.
4 cups blackberry juice 3 cups sugar 2 tablespoons strained lemon juice 1. Heat the blackberry juice, sugar, and lemon juice together in a preserving pan over medium heat, stirring gently, until the sugar is completely dissolved. Raise the heat to medium-high, and boil the mixture until it passes the spoon test, skimming the foam as needed. 2. Immediately remove the pan from the heat and ladle the jelly into half-pint mason jars. Add lids and rings, and process the jars in a boiling water bath for 10 minutes.

Apple Butter A bit precocious since apple season is still ahead of us, we experimented with this apple butter recipe because its always one of our fall favorites. (Makes 3-1/2 to 4 pints)
6 pounds cored and quartered apples (unpeeled) 4 cups light brown sugar 1 tablespoon ground cinnamon 1/2 teaspoon ground mace or ground nutmeg 1/2 teaspoon ground allspice

Add the cinnamon, mace or nutmeg, and allspice, and cook the mixture over low heat (or in an oven heated to 250°F), uncovered, until it is thick. This will probably take about 1-1/2 hours. You’ll need to stir occasionally at first and more frequently as the apple butter thickens.

Zucchini Bread, Summer Squash Muffins or Carrot Cake are easy in the winter when you put your food processor to work in late summer and early fall. Shred your summer harvest and place in freezer bags and freeze. What can be easier. Pre measure the amount in each bag. and write the weight or measurement on the bag so you can pull just what you need for you favorite bread. You can have a equal amount of success freezing fruit from your favorite berry bush or fruit tree. As long as you can keep the berry gremlins out of the berry patch. We all know who the berry gremlins are in the family, right. LOL. Grab a baking sheet pan, lay a sheet of parchment on it and then place your berries on the parchment. Place in the freezer. In 24 hours your berries will be ready to place in freezer bags. Freezing them in this method will keep them in good shape for your favorite pies, tarts or a great Sunday surprise of blueberry, raspberry or blackberry waffles.
Jarring Tomatoes or Pickled cucumbers is equally as easy and rewarding. Throw in fresh basil, oregano, garlic or other herbs from your herb garden and make fresh Marinara Sauce or garlic dill pickles. All very yummy and great ways to use the extra tomatoes and cucumbers from your garden. Jarring sweet treats is my favorite way to spend a cold fall day in the kitchen. Grab a freezer bag of your favorite fruit and make homemade Jams and Jellies. These can be use later to top your favorite ice cream, pancakes or waffles, crepes or biscuits. Let not forget the kids PB and J. Then of course, these are all great ways to provide good food at a lower cost. Plus bring fresh ingredients into the home for your family. I am sure all have great ideas and ways to use your garden delights. These are just a few of my favorites.

It’s Summer Time...It’s Sangria Time The long lazy days of summer are here. The hot days and warm evenings carrry the promise of backyard BBQs and front porch drinks with family and friends. Nice, cool, refreshing and unique drinks are beckoning the tastebuds of savvy consumers. Drinking a red wine punch was popular in the middle ages where they drank a concotion of wine with various spices called hippocras. Water was unsafe to drink and milk was considered a baby food. Young children and adults would drink some sort of liquid that had alcohol in it. The alcohol would take care of bactaria in the drink. Many households amde some wine and put fruits, spices and berries in the drink to liven it up. Around 200 BC, the Romans conquered Spain and planted vineyards. The red grapes grew very well in the Spanish climate. They shipped the Spanish wines to Rome. The Spanish locals would make a wine punch using red wine, brandy and fresh fruit called Sangria. Sangria translated, means blood or bleeding. The Sangria would vary from region to region, depending on the fruit grown and available in the area. Sangria was introduced to the US in 1964 when it was brought to the World’s Fair in New York City.
Traditional Sangria is made with red wine, honey or sugar, sliced fruit and brandy. Today consumers are more savvy and like to think outside the box by using white wines, vodkas as well as the traditional red wine. If you don’t have time to make Sangria, you can find Sangria bottled in your favorite markets! Eppa Superfruta Sangria is made with organically grown grapes real, organic superfruit juices, pomegranate, blueberry, blood orange and acai juices for the red and mangosteen, peach, mango and blood orange juices for the white, and comes in two varietals, Eppa Red and Eppa White. Eppa Red has sweet citrus scents of orange, lemon and lime mixing with the aroma of red wine. The taste is dark berry with hints of pomegranate, orange and red wine. Peach and mango aromas burst from the bottle upon opening Eppa White. The taste is fresh with lemon, lime and orange and finishes with mango, pineapple and peach flavors. Another Sangria worth mentioning is Slices Sangria. Slices is made in Spain using traditional Spanish wine varieties with natural fruit juices. ¼ C Fresh Orange Juice Sliced peaches, apples, oranges, berries. Squeeze of lemon juice. Sparkling water.
1 lemon thinly sliced
Mix wine, sugar, brandy, Liqueur and orange juice in a large pitcher. Add fruit and let sit overnight (at least 8 hours) in refrigerator overnight. Before serving add the sparkling water.

1 orange halved, thinly sliced 1 passion fruit, seeds removed (optional) Combine ingredients. Cover and refrigerate at least 2 hours and up to 24 hours.

The City of Elko Project Update: City of Elko crews will begin the construction season on Golf Drive doing ADA upgrades and placing new asphalt. The next area city crews will move to will be Nevada Circle and Northside Drive to begin ADA upgrades and placing new asphalt. The City of Elko will have a contractor begin the placement of Micro-surface/Slurry seal beginning around August 1st. The Connolly subdivision and Skyline subdivision will be done with this project, along with various other areas within the City.
The City of Elko has begun the paver replacement project in the downtown area running from 3rd Street to 9th Street, installing new pavers, electricity, and water for the trees in this area. This work began on June 24th. The Main City Park parking lot reconstruction also began in early June and is nearing completion. The next big project will be bidding in late summer or early fall and this project will install curb, gutter, and sidewalk along Idaho Street, from Mountain City Highway to just past Hot Springs Road, prior to new asphalt being placed during the NDOT project.

What it means and when to worry. I thought I would discuss the most common problem that we see as neurosurgeons that can lead to spine surgery. It is called spondylosis, or degenerative disc disease, and it occurs in all human beings at all levels of the spine– cervical, thoracic and lumbar. Spondylosis is a result of time and gravity, two things we can’t avoid, and that’s why 100% of the population will develop it to some degree.

A little anatomy
Why our spine goes bad
The basic anatomy of the spine is two vertebral bodies separated by intervening discs. There are 7 cervical vertebrae, 12 thoracic vertebrae and 5 lumbar vertebrae and then the sacrum with disc in between. We call this a motion segment. There are three points of contact between the vertebral body above and vertebral body below. In the front of the spine, there is the disc which connects the inferior aspect of the vertebral body above to the superior aspect of the vertebral body below and on the posterior or back portion of the spine two joints, one on the left, one on the right, that we call the facet joints.
As discs age, biochemical changes occur, they lose their water content, collapse and start to bulge. Again, this occurs in all human beings over time. As a disc slowly degenerates, the surrounding bone sees more stress and bone reacts to stress by forming more bone, hence the development of bone spurs. This is a normal aging process of the spine. Whereas 100% of us develop bulging discs and bone spurs, roughly 7-10% of people end up having surgery on the lumbar spine. About 1% of us have surgery on the cervical spine. The most common reason for this is because the nervous system, which runs

down the middle of the spine for protection, becomes impinged by either disc material or bone spurs. At the cervical and thoracic levels, the spinal cord could be pinched or the nerve roots that come off the spinal cord in the lumbar region could be pinched.
Symptoms of spondylosis The most serious condition is a pinched spinal cord that for most people is painless. The spinal cord being pinched typically results in a patient having deterioration of their gait imbalance, numbness in their hands, sometimes numbness throughout their body, loss of dexterity in their hands and in some people what we call spasticity–involuntary movements in their extremities. A pinched nerve that comes off the spinal cord at the bottom of the lumbar spine typically will cause pain. A pinched nerve in the neck will cause pain radiating down the arm. In the low back it will cause

pain down the leg which is commonly called sciatica. This could be both the result of a mechanical pressure and/or an inflammatory response around the nerve. However, not all patients with pressure on the spinal cord or nerve roots will have symptoms. Many patients can have pressure, even a ruptured disc, and be entirely asymptomatic.
When is surgery warranted? In general, a patient who has a pinched spinal cord and has symptoms that are progressive from a condition we call myelopathy would require surgical intervention to unpinch the spinal cord to prevent further neurologic deterioration and optimize the potential for neurologic recovery. A pinched nerve is a less serious condition.

The patient whose only symptom is pain can be treated with nonoperative treatments. Many patients will get better over time. Other options people can benefit from are: physical therapy or chiropractic treatment, traction, acupuncture, massage therapy and epidural steroids. Epidural steroids, performed by an anesthesiologist, are injections of cortisone around the affected nerve root. This treatment can be beneficial in some people, but unfortunately not the majority of people. The patient with a nerve that is pinched severe enough to result in loss of motor function or numbness, what we call the neurologic deficit, those individuals are candidates for surgery, again to prevent further neurologic worsening and optimize the potential for neurologic recovery.

85-95% success rate In general, the patient with a neurologic deficit due to a pinched nerve, surgical intervention is more likely to result in reversal of that deficit than nonoperative treatments. Although some patients whose deficits are mild and not particularly bothersome to them will elect not to have surgery and can improve in time. Surgery to unpinch the nerve in the neck or lumbar spine, rarely required in the thoracic spine, is a very common operation and has success rates of 90-95% for the cervical spine and 85-90% in the lumbar spine and these are the commonest procedures we perform as neurosurgeons.

Many chiropractors believe that women who experience painful menstrual cramps are likely to suffer from spinal problems, such as back pain, as well. They suggest a causal relationship between subluxations (nerve interferences) in the spine and lower back, and specific gynecological problems such as cramps. This would certainly explain why many women who see their chiropractor for treatment of their lower back pain report a subsequent lessening in the severity of their menstrual cramps. Although standard over-the-counter drug treatments (analgesics) are effective in relieving the symptoms associated with menstrual cramps, side effects, such as stomach ulcers and abdominal pain, pose potential health hazards that are far worse than the pain of menstrual cramps.

Ruby’s Treats! Chocolate, Coconut & Almond Bars 20 minutes for prep, stand for 1 hour
Ingredients: 1 - 10oz. Package of Marshmallows 3 Tbsp. Butter 1/2 Tsp. Coconut Flavoring 2 C. Sweetened Flaked Coconut 2 C. Honey Bunches of Oats with Almonds Cereal 1 1/3 C. Sliced Almonds (honey flavored if you can find them!) 1 C. Miniature Semisweet Chocolate Chips Instructions: Line a 9x9x2-inch baking dish with aluminum foil. Extend the foil over the edges of the pan, butter foil and set aside. In a large microwave-safe bowl combine marshmallows and butter. Microwave on high for 1-2 minutes or until butter is melted. Stir in coconut flavoring until smooth. Stir in coconut flakes, cereal, and almonds. Cool slightly. Gently fold in semisweet chocolate pieces. Spread mixture into the prepared pan, pressing lightly into pan. Let stand approx. 1 hour or until set. Using edges of the foil, lift the block of bars from the pan. Place on a cutting board; cut into bars.

¾ C. Whipping Cream
8oz. Semisweet Chocolate, chopped
1- 3oz. Pkg. Cream Cheese, softened
½ C. Mini Semisweet Chocolate Chips Instructions: Line a 9x9x2-inch baking dish with aluminum foil. Extend the foil over edges of pan. Lightly grease the foil and set aside. For crust, in a large bowl combine crushed cookies, butter, and the 1 oz. of melted semisweet chocolate, stirring until well mixed. Press into the bottom of the prepared pan. Chill while making filling. For filling, in a small microwave-safe bowl combine the 8 oz. of chopped semisweet chocolate and the whipping cream. Microwave on high for approx. 2 minutes or until almost melted, stirring once. Stir until smooth. In a medium bowl beat cream cheese with an electric mixer on medium to high speed until smooth. Gradually add chocolate-whipping cream mixture, beating until smooth. Spread evenly over crust. Let stand for 15 minutes. Sprinkle with the ½ C. miniature chocolate chips. Chill for 4 - 24 hours or until set. Cut into bars. Can serve with whipped cream on top.

Pediatric dentists complete an additional 2-3 years of training after dental school. This training program (residency) focuses specifically on children's dental needs as they grow and develop into adults. Because children are not simply "small adults", their dental care requires treatment specific to each child's stage of development. Dr. Dallin Young received a bachelor's and master's degree in biology at Brigham Young University. Dr. Young achieved the highest level of achievement in pediatric dentistry and became board certified in 2008. He has served children in Elko County out of his Twin Falls and more recently his Elko office's for 8 years.
We provide complete dental care for children from birth to 18 years of age. The American Academy of Pediatric Dentistry recommends children establish a dental home 6 months after their first tooth erupts or by their first year of age. Early childhood cavities can often be prevented by practicing healthy diet and dental hygiene habits and starting dental visits as an infant!
Our friendly local staff has been trained to provide excellent customer service and dental care specific to each child's age and dental development. Our new office in Elko (next to Albersons) is designed specifically towards the needs and comfort of children. We are Elko's only office entirely dedicated to children's dentistry.
Prevention of dental decay and maintenance of oral health is our primary goal. We teach optimal oral hygiene techniques and diet habits at every check-up and cleaning appointment. When there is a breakdown in oral health, we provide dental services such as tooth colored fillings, crowns, extractions, space maintenance, nitrous oxide (laughing gas), sedation, and full mouth dental restorations under general anesthesia. We will always offer treatment options and recommend the least invasive methods to effectively control dental anxiety, common with our young patients. Children's Dentistry of Elko is accepting new patients. No referral is required.

Summer Sponge Bombs Who doesn't enjoy a good old fashion water balloon fight on a hot summer day? The problem with those darn water balloons is that it takes forever to fill them all up and they are gone before you know it. Problem solved, thanks to Pinterest once again. These are called sponge bombs, just dip them into a bucket of water and play away!!!! All you need is a mop refill, a roll of drawer liner (in any color), sponges, and zip ties. Cut the sponges and drawer liner into strips and cut the mop strands off of the base and start stacking, zip it all up with a zip tie and trim the access plastic. You can also let them dry and pack them in your suitcase for the next trip out of town as they make awesome pool toys. Such a fun craft to do with the kiddos and it's even a better way to stay cool in this HOT August heat. BOMBS AWAY!!!
