Calendar of Events been done before, but Buster Blue has found a place inhabited only by their own off-kilter creation. The six members utilize an arsenal of unlikely instruments, including horns, banjo, accordion, chains, and even a wellplaced bucket. Their intention to revisit the American musical traditions with a present day edge may have much to do with their upbringing in the small town of Gardnerville, Nevada mixed with their experiences traveling throughout the United States. Their diverse backgrounds and upbringings help give color to their music, as well as make it difficult to pigeonhole them to a genre. www.busterblue.com. 518 Commercial St in Elko. Tommy the Safety Cat: Bloody Noses

+ Bloody noses are a problem no matter what the season and after speaking with The Hemophilia Foundation of Nevada when they were in Winnemucca this July, Tommy the Safety Cat has been busy spreading the message to children and their parents about how to effectively treat a bloody nose. With a bloody nose it is important never to lie down or tip your head backwards. The reason for this is that the blood from the nosebleed will flow down to the stomach and make you feel sick or go into the lungs and cause problems like pneumonia. Instead, sit upright and tilt your head forward only slightly. Pinching the bottom of the nose closed with a tissue will help the blood begin to clot. Pressure can also be applied on the bridge of the nose (for no more than 10 minutes) for stubborn nose bleeds. Tommy certainly gets excited about this part! It is the very best way to slow the nosebleed (and it is yummy‌). Tommy knows that applying ice will constrict blood vessels, slowing down blood flow. The best place to apply ice for a nosebleed is through the mouth (the cold goes through the roof of the mouth directly to the bleeding in the nasal area), so an ice pop (in your favorite flavor of course), will do the trick. Tommy’s Mom uses the ice pops that come in their own little plastic packet as it protects the ice pop from any blood that could drip from the nose. Many people get nosebleeds from time to time, but nosebleeds that happen very frequently or that last longer than 20 minutes may not be normal. The Hemophilia Foundation of Nevada has information that may help with those types of nosebleeds and can be contacted at: 702.564.4368.

SEPTEMBER 2013 | everythingelko.com

Contributed by Mandi Ratliff of Cucina Fresca

Like going back to school, it's one of our favorite fall rituals, making an apple pie (or two...). Imagine juicy wedges, layered atop each other, cradled in a delicate crust browned to golden perfection. The only thing that improves the moment is a scoop of our best vanilla ice cream. Recipes from The Apple Lover’s Cookbook by Amy Traverso. Published W.W. Norton & Company, Inc., New York, NY. Copyright 2011. Reprinted with permission of the publisher. All rights reserved.

Getting to the Core from Tree to Table From Eve’s Hand in creation’s garden to the teacher’s desk and on to any number of small electronic devices, the apple rules the fruit world as the icon for all that is good and sustaining. Apples are one of the few fruits that we buy by the variety. Bananas are bananas, but apples come as Red Delicious, Braeburn, Honeycrisp, Granny Smith, or one of the other 7500 varieties. From this vast diversity, about 300 varieties are grown commercially in the U.S. Interestingly, over time, both politics and economics have influenced the apple varieties available to us and where they’re grown. Until the 1990’s, U.S. orchards provided the world with apples with over half of the apples sold being Red Delicious. Research efforts around the Red Delicious variety aimed toward larger apples with darker coloring. Ironically, those cosmetic characteristics were delivered at the expense of great apple taste. Other varieties, such as Granny Smith, Gala, Honeycrisp, and Braeburn, have recently gained shelf space pushing the Red Delicious to less than a quarter of the apple offering. Pacific varieties such as New Zealand’s Gala and the Japanese Fuji, grew popular in the U.S. orchards primarily for exporting purposes.

In the 1990’s came the “apple crash.” Between 1980-2000, spurred by newly opened trade policies, Chinese orchards grew by 750 percent and began to supply apples to the foreign markets previously serviced by U.S. growers. The upside of this situation was that the previously exported Pacific varieties were now marketed domestically bringing more choice to the local market.

Recipe Notes The Recipe prescribes cooking the apples until not quite tender. The apple slices are then cooled prior to filling the pie crust.

Early fall is a great time to make apple pie, before any competition arises from the pumpkin and pecan pies that share the Thanksgiving table. We’ve made a lot of apple pies in our lifetime, and are constantly interested in improvements on the classic recipe. This version is simple, not overly sweet or excessively spiced. The crust was very cooperative, and tasted as good as the filling—ad we’re quite picky about our crusts! We joined the other judges in awarding this recipe a blue ribbon and filing it under the “keeper” category.

1. Shrink the apples allowing more fruit per cubic inch of pie.

2. Eliminate the gap between the fruit and the top crust. 3. Reduce the chance of the pie’s juices overflowing the dish. 4. Achieve a perfectly browned crust without undercooking the apples.

recipe

Free-form apple-pear cranberry tart Rustic Tarts are anything but rough or crude. In fact, we think they’re totally elegant. This super-easy tart blends four fruits – apples, pears, cranberries, and oranges – into a luscious sweet treat. The crust is easily made and handles superbly. Orange zest and an imperceptible hint of cloves brought out the fall fruit flavors in a fabulous way. We’ll be making tart several times this season! Makes 8 medium servings
Active Time: 45 minutes – Total Time: 1 hour, 20 minutes,
plus 30 minutes chilling time.

I love the rustic look of this tart filled with sliced apples, pears, and cranberries. Rather than baking it in a pie plate, you simply roll out the crust into a circle, fill it with fruit, and fold the sides up around the filling. It’s sweet and tangy, doesn’t require any fussiness on your part, and makes an impressive Thanksgiving centerpiece. It’s best served with vanilla ice cream.

a ball, then press into a disk and wrap in plastic wrap. Refrigerate for at least 30 minutes.

EQUIPMENT: Parchment paper; lg rimmed baking sheet FOR THE CRUST:
1-1/4 C (180 g) all-purpose flour
1 T granulated sugar
1/2 t kosher salt
8 T (1 stick; 113 g) chilled unsalted butter, cut into small cubes
1 large egg yolk mixed with 2 T ice water

FOR THE FILLING:
 2 medium (or 1-1/2 large) firm-tart apples

(about 12 ounces total)
1 large ripe pear, such as d’Anjou or Bartlett
1/2 cup (103 g) plus 1 teaspoon granulated sugar
1 tablespoon cornstarch
1 teaspoon freshly grated orange zest
1/8 teaspoon ground cloves
1/3 cup fresh or thawed frozen cranberries
1 large egg, beaten well 1. First, make the crust: In a medium bowl, whisk together the flour, salt, and sugar until well combined. Sprinkle the butter cubes on top and use your fingers to work them in (you want to rub your thumb against your fingertips, smearing the butter as you do). Stop when the mixture looks like cornmeal with some pea-sized bits of butter remaining (try to work quickly so the butter doesn’t melt). Sprinkle the egg yolk-water mixture on top and stir with a fork until the dough begins to come together. If needed, add one more tablespoon of water. Turn the dough out onto a lightly floured surface and knead three times. Gather into

2. Meanwhile, preheat the oven to 400° F and set a rack to the second-from-the-bottom position. Peel, core, and cut the apples into 1/4-inch-thick wedges. Peel and cut the pear into 1/2-inchthick slices. Gently toss together in a bowl and set aside. In a small bowl, combine 1/2 cup sugar, the cornstarch, orange zest, and cloves; set aside. 3. On a lightly floured surface, roll the dough into a circle about 16 inches wide and 1/8 inch thick. The circle doesn’t have to be perfect – this is a rustic dessert – but try to get it as round as possible, even if that means cutting little dough off one side to add to the other. Transfer the dough to a baking sheet lined with parchment paper. 4. Arrange half the apple and pear slice over the dough, leaving a 2-1/2-inch border all around. Sprinkle half the cranberries over the apples. Sprinkle half the sugar-cornstarch mixture over the fruit, then repeat with the fruit and then the sugar mixture. Fold the sides of the dough up and over the edge of the filling, allowing the dough to drape over itself at each fold. Brush the dough with the beaten egg, and sprinkle all with one teaspoon of sugar, Bake for 10 minutes; lower the temperature to 375° F, and bake until golden brown, about 25 minutes more. Let cool on a rack for at least 30 minutes, then transfer to a serving platter and serve warm.

Recipe Notes Dried cranberries may be used if fresh or frozen cranberries are unavailable. Simply steep the dried berries in hot water for about 15 minutes or until fully plumped. Don’t worry if the tart appears juicy when removed from the oven. As it cools, the juices will reabsorb and thicken. Make it easy on yourself! Roll the crust into a circle on a piece of parchment paper. Transfer the crust onto an unrimmed baking sheet, fill and bake. The parchment paper eliminates moving the fragile dough and protects the pan during baking.

Apple care Q&A Q: What is the best way to store apples? A: They are best stored in the crisper drawer of your refrigerator, because apples will deteriorate fast if not kept in a cool environment. Apples emit ethylene gas that, when packaged with other fruits such as bananas, kiwis, peaches, plumbs, and pears, will hasten their ripening. This same gas may damage certain vegetables including broccoli, cabbage, cucumbers, and leafy greens; store apples separately from these items. Get more info from: New York Apple Association

Q: I know apples begin to brown once cut, but why? A: Apples, like bananas, pears, potatoes, and other fruits and vegetables, contain an enzyme and ironcontaining phenols that react with oxygen (oxidation). When exposed to the air, a brown color appears on the surface. The browning can be slowed by: (1) adding an acidic component such as lemon juice, which acts to reduce the pH, (2) submersing the fruits or vegetable in water reducing air exposure, or (3) stopping the reaction through cooking.

Q: Why are apples waxed? A: Apples have a “Natural” wax that is partially removed when preparing a harvest for shipment. Apples may have added wax applied to reduce moisture loss and to improve their appearance. The wax typically used is a natural plant based, non-petroleum coating such as carnauba wax derived from palm tree leaves or shellac. These coatings are approved for food use and generally thought to be safe. It is rare to find wax on organic apples, though it is possible and still be properly labeled as “organic” if the wax also qualifies as organic.

Before you go off and start building up your wine cellar, you might want to consider how many different glasses you will need to be a true wine snob. We gave this a little thought after sharing the Josh Cabernet and the Shannon Ridge wines with you in the July and August issues. You have probably just been staring at them on your kitchen counter, contemplating the proper stem wear to truly enhance the bouquet of each glorious bottle! Well fear not. Here is the crash course!

First and foremost, if they ARE on your kitchen counter, hopefully they are laying down. Did you ever wonder why wine racks are always at a convenient little angle? It’s not so that you can see the label but rather to maintain moisture on the cork. If the bottle’s cork becomes to dry air is able to penetrate the bottle thus ruining your wine. Have you ever opened a bottle and thought “WOW, this sure does smell like wet cardboard!” That is never a good thing.

actually serves. Some wineries use the punt for packaging purposes. Champagne bottles are often stored, tucked within each other top to bottom this way. Some people will say that the punt creates an area for the sediment within the bottle to collect still others believe that the bottle sits better on an uneven surface if it has a punt. Next time you order a bottle of wine with dinner watch to see if your server uses the punt as a method for holding onto the bottle.

Second, what’s up with the bottom of the bottle? That concave area in the bottom of the bottle is called a Punt. There are a couple of different ideas as to what purpose it

You may wonder what made two women (two homemaking mothers at that) decide to open a gun store. Let your curiosities be quenched! It started with our husbands talking, and doing what women do best, we took it over and put the wheels in motion! We enjoy the thought of helping people in our community be prepared for emergencies, and also to help support their 2nd amendment rights. Do you want your school to WIN FREE grant money? Join us Saturday, September 21st at the Everything Elko Expo from 9am - 2pm at the Elko Convention Center to kick off CELEBRATE MY DRIVE!! We need our local high schools to get involved and win! Starting October 18th until October 26th. Everyone can vote one time each and every day!

57

Celebrate My Drive® is the State Farm® community signature program inviting agents across the U.S. and Canada to rally around and support teens as they learn to drive and get ready for the road ahead. As a signature program, Celebrate My Drive reasserts the Company's leadership in the teen driver safety space and focuses efforts to grow and help customers “get to a Better State”. The program differentiates State Farm from others and makes an impact on one of society's biggest concerns: preventing teen crashes, reducing injuries and ultimately saving lives. Getting a driver's license brings new joy and freedom, but the first year behind the wheel can be one of the most dangerous. There's no better time to help teens and their families stay safe both behind the wheel and in the passenger seat. While many teen driver safety programs use scare tactics designed to frighten teens with the possibility of bad outcomes, Celebrate My Drive takes a new approach. By celebrating with teen drivers as they earn their licenses instead of scaring them, State Farm is blazing a new trail, one that is gaining momentum across North America. Research shows teens are more receptive to positive messages than negative, and Celebrate My Drive is grounded in positive reinforcement, encouraging them to drive safely and enjoy the road ahead. The 2013 Celebrate My Drive message is as simple as 2N2: 2 eyes on the road and 2 hands on the wheel! Plus much more - so make sure you come out and enjoy this event with the entire family! Let’s rally together as a community and win some grant money from State Farm Insurance!!!

Let’s win this grant money right here in Elko County...tell your friends, family, teachers, EVERYONE!!

There are two ways to get involved and help your favorite school win one of three cash prizes:

Back to School

Nutrition Contributed by Courtney Nalivka of Northeastern Nevada Regional Hospital

With the sound of alarm clocks and school bells being heard throughout the house and neighborhood, it's important to ensure your child's health is number one as the school year begins. Providing nutritious meals and encouraging physical activity are necessary for your child's growth, development, and building healthy habits for the rest of their life. Here are some tips to get your child’s school year started on the right track. Start the day out right with breakfast. Research has shown kids who eat breakfast tend to have higher school attendance, less tardiness and fewer hunger-induced stomachaches. They also score higher in academics, have better concentration, solve problems quicker, and have better muscle coordination. If you are running behind in the morning, quick, healthy options include instant oatmeal topped with nuts or raisins, low-fat yogurt with sliced fruit or whole-grain toast with peanut butter. Keep lunchtime interesting by planning lunch together with your kids. Encourage them to pack their own lunch items so they are less likely to be throwing their food away or trading with other kids. Let your kids pick a new fruit or vegetable they have never tried to keep them engaged in planning their lunches. Plan holidaythemed meals for lunch. For example, pack an all red lunch for Valentine’s Day or put a fortune cookie in their lunch box to celebrate Chinese New Year. Offer different choices of foods to prevent boredom: High protein sources include tuna, peanut butter,

59

SEPTEMBER 2013 | everythingelko.com

turkey, or beans; different sources of whole grains include whole grain tortilla, breads, or crackers, and rotate a different fruit of vegetable with each lunch. Keep your child’s lunch box safe and clean. Wash lunch boxes and bags daily with warm, soapy water. Teach your kids to wash their hands before, during, and after preparing and eating lunch. Make sure your counters are sanitized to prevent cross contamination. Try packing a moist towelette or hand sanitizer in your child’s lunch box. Perishable foods such as dairy or meat products should not be left unrefrigerated for more than two hours. However, if your child is unable to put their lunch in a refridgerator you can keep it safe by packing their lunch in an insulated bag and including an ice pack. Consider packing snacks such as trail mix, individual boxes of cereal, granola bars, whole fruit or dried fruit, or whole grain crackers with peanut butter that don’t require refrigeration. If your child is going to eat the school

lunch meal you can review the menus a week at a time and pick out the meals your child will eat. School lunches are balanced and provide dairy, protein, grains, vegetables, and fruits, which will give their brain the fuel it needs to get through the afternoon at school. Use “ChooseMyPlate” (www. choosemyplate.gov) as a guideline for choosing lunches at school or packing a lunch at home. Encourage 60 minutes of activity per day for your kids to strengthen muscles and bones, to promote a healthy body weight, build selfesteem, and improve learning and social skills. Make physical activity a family event to promote healthy habits for everyone. Encourage after school activities or participation in school sponsored athletics. For more information about your child’s nutrition visit www.kidseatright.org, www.choosemyplate.gov, and www.homefoodsafety.org. You can also call the Courtney Nalivka, MS, RD, LD, Clinical Dietitian at Northeastern Nevada Regional Hospital at 748-2094.

Art is so much more than learning to paint or play an instrument. It’s about self-expression, independence, collaboration, problem-solving, critical thinking, creativity, and confidence to name a few. Throughout history, the arts in its many forms have vividly told stories of generations past. Cultivating an appreciation and love of the arts in our children is a responsibility that every parent should embrace. Did you know?

According to the International Child Art Foundation, "research indicates that a child who is exposed to the arts will have a better chance to grow up to be more creative, imaginative, expressive, confident, self-reliant and critically thinking."

Young people who participate in the arts are: • 4 times more likely to be recognized for academic achievement • 3 times more likely to be elected to class office within their schools • 4 times more likely to participate in a math and science fair • 3 times more likely to win an award for school attendance • 4 times more likely to win an award for writing an essay or poem

Critical

Thinking

&

Problem

Solving

Long gone are the days when arts classes were part of every day education. As budgets grow smaller and classes grow larger, access to the arts is a dwindling commodity.

As exposure to the arts in schools vanishes, it is up to parents to create such opportunities or seek them out in their communities.

Arts-focused classes are quickly being replaced with activities that are meant to prepare kids for (and I’ll be blunt) standardized tests. The absence of the arts in schools leaves many children without a healthy forum in which to express themselves. Without a means of positive selfexpression during the day, the enjoyment of school can diminish and many negative behaviors may follow.

At Academy of the Arts, we understand that many parents don't always have the time or the artistic prowess to guide learning in the arts. That's why we've created a wide variety of arts programs in one location so that multiple family members can enjoy a variety of classes at the same time. There's no need to drive all over town to experience the arts!

Our arts classes allow students to engage their critical thinking and problem-solving skills, both of which are invaluable skills in every day life. Here

are

some

self

confidence

examples

• In dance class, students are often asked to synthesize what they've learned during a lesson and apply it in a unique way by creating their own choreography.

Aside from engaging critical thinking and problem solving skills, the study of the arts contributes to increased selfconfidence.

• In tumbling class, students may be asked to navigate through a series of obstacles and apparatus (balance beam, floor mats, inclines, and octagonal tumblers, etc.) as a means of gauging understanding.

While the structure of each type of arts class may vary slightly, the end goals are for students to gain an appreciation of the art form, learn skills and execute them with confidence and precision, and demonstrate those skills publicly through demonstrations and performances.

• In a piano lesson, a student may be having difficultly remembering the notes on the staff. Our teachers help them brainstorm interesting pneumonic devices that are meaningful and memorable to him/her. • In Kyokushin Karate classes, students must demonstrate proficiency in Kata (dynamic moving exercises) to achieve higher belt ranks. • In acting class, students are often asked to improvise. Improvisation requires students to assess their own skills and apply that knowledge immediately to create characters with or without scripts. The ways in which the arts positively affect lives is truly endless. Each person experiences the arts in his or her own way. While one student may gravitate towards self expression through dance, another may choose the language of martial arts or acting. Supporting and encouraging your child to discover themselves through the arts by creating their own unique voice is certainly a worthwhile endeavor. If a child is able to engage their critical thinking and problem solving skills in an arts classroom, just image what he or she can do with those skills in any other setting - in school, in the community, in a career, for the world!

In any group arts class, students are taught to work independently as well as with others. Students gain a tremendous amount of skills in his or her preferred art form independently in a group setting (i.e., learning the French terminology and execution of skills in ballet or Japanese terminology in Karate). Students then practice these skills as a group thereby creating a dynamic learning environment. The confidence and self-worth gained by learning skills independently, working as a group to demonstrate proficiency, and taking to the stage can be life changing. Even with our youngest performers, the confidence gained throughout a season is quite remarkable. When teachers sit in the audience and direct the children continuously, they never learn to rely on their own abilities to succeed.

Finding the Right School

Finding the right performing or martial arts school is critical. There are a number of factors a parent must take into consideration such as the facility, scheduling, teacher qualifications, and approach to teaching.

DIY

Contributed by Shippy Chic

In the spirit of "Back to School" I'm am ready to do some more "Grading"! These Pinterest projects were put to the test and they all scored very high. Scentsy Cheat: Make your house smell like fresh laundry. Snag some Downey UN-stopables and sprinkle into your Scentsty plug ins and your house will smell amazing. There are several different scents in stores and when you are ready to change the scent, they pop out of the Scentsty very easily. Pretty darn easy if you ask me. A+

Gift for a Friend: Wrap an apron inside a mason jar and attach a recipe on it for a quick and unique gift. I found coordinating ribbon and wrapping paper to tie it all together. So adorable!

A+ 75

Glitter Magnets:

This project was a little more time consuming but a blast for the kiddos. You will need to find flat clear flat back 'marbles', E6000 glue‌.the mother of all glues, glitter, a paint brush, varnish, and little helpers (the kids). Put a dab of glue on the flat side of your marble and then dip or sprinkle glitter onto it. You can keep the colors solid or mix it up a bit, get creative. It needs to dry for at least three hours and then you can put your varnish right over the glitter. I actually let that dry overnight and then glued the magnets onto the backs with the E6000.

going for), then use your wire and secure the middle. Start pulling and un folding to create your desired shape, but be careful as the tissue paper tears very easily. You can also trim your paper before you start the stacking process to make different sizes. These really add a wow factor to any party, and the color choices are endless. A+

B+ because it did require some time and the smell of the glue lingered in my house for hours.

Party Decor: Take tissue paper and lay tissues on top of one another and then fold like a fan. Take a pair of scissors and cut both ends after it is folded, (cut into a point or a half circles, depending on what look you are SEPTEMBER 2013 | everythingelko.com
