Getting together with others is one of the most special parts of the holiday season. And, where there's people, there's food to be served! It's a great time to bring out some holiday fare and serve it with a little flair.

cubes with olive oil, but not too much. Spread the pieces on a baking sheet with plenty of space in between. This allows the squash to roast and caramelize, and not steam while cooking.
december 2014 | everythingelko.com
Directions: 1. Whisk together all of the aioli ingredients in a bowl; store in the refrigerator until ready to serve. 2. Wash the squash well. Cut both ends of the squash to create a flat surface for cutting. 3. Peel the squash with a vegetable peeler or knife. (One minute in the microwave will make peeling easier.) Cut the peeled squash just above the bulbous portion, then in half lengthwise. With a spoon, scoop out the seeds and membranes. 4. Slice the squash in 1-inch slices, then cut into evenly-sized cubes. (The squash pieces will shrink in size during roasting.) Toss the diced squash with 2 tablespoons of olive oil until coated. Spread the diced squash in a single layer on a lined or oiled baking sheet. Avoid over-crowding on the pan so that roasting (instead of steaming) can occur unimpeded.

5. Roast the squash in a 400°F oven for approximately 30 minutes, or until the squash’s surfaces become slightly caramelized. Every 10 minutes flip the diced squash with a large turner. Actual roasting time may vary according to the size of the dice and the density of the pieces on the baking pan. 6. Allow the squash to cool. Skewer the squash pieces with toothpicks and serve with the herbed aioli.
Do Ahead: Prep and cube the squash ahead of time, and roast an hour or two ahead of party time. Or, roast a day ahead and refrigerate the caramelized cubes then serve at room temperature. The dip may be mixed a day ahead of time.

An iconic flavor of the season, peppermint mocha appears in seasonal beverage choices, cookie trays, and candy treats around this time of year.
2. Heat the olive oil and butter in a large skillet over medium-high heat. Add the shallots and sautÊ for 3 to 5 minutes, or until crisp and golden brown, stirring the shallots to make sure they don’t burn. Drain on paper towels and then transfer to a small bowl and set aside. 3. Arrange the bread or crackers on a platter. Place a small spoonful of dilled sauce on each. Arrange a salmon slice, rolled up to look like a rose, on top of each bread slice or cracker. Top with a dollop of the dilled sauce and sprinkle with the crispy shallots. Serve immediately.

A rich dark chocolate custard formed the base while added coffee and peppermint flavors put it over the top! Making custard from scratch is supereasy and tastes so much better than prefabbed versions. You’ll find each spoonful a decadent delight.

Peppermint Mocha Cordials
Directions:
Makes about 3 cups One of our favorite holiday flavors is peppermint mocha whether in beverage form, or this spoonable variety. We like to serve small portions in tiny appetizer bowls or cordial glasses. Ingredients: 2 cups whole milk 1 tablespoon espresso granules, (or 2 tablespoons of espresso (1 shot) or very strong coffee) 6 large egg yolks 1/2 cup sugar 1/3 cup cornstarch, sifted 1/4 teaspoon salt 1 teaspoon pure vanilla extract 4 tablespoons (1/2 stick) unsalted butter 8 ounces bittersweet chocolate, melted

3. Over medium heat, place the saucepan. Cook the mixture, continuously whisking. The mixture will begin to thicken, then reach the boiling point. Remove from heat. Add the vanilla and peppermint extracts. Add the butter, one tablespoon at a time, whisking until melted after each addition. Add the melted chocolate in small increments also whisking continuously with each addition.

4. Transfer the mixture to a large glass bowl and allow it to cool, stirring periodically. Once completely cooled, place the chocolate custard in a large disposable zipper bag, and store in the refrigerator until ready to serve.

5. To serve, cut off one corner of the plastic bag and pipe the custard into cordial glasses or small bowls. Garnish with tiny candy canes, or crushed peppermint and serve with small appetizer spoons.
Do-Ahead: The custard may be made a day ahead of time and stored in the refrigerator until serving time. We like to store the custard in a plastic zipper bag that, with a corner cut away, can be transformed into a piping bag for filling the tiny dishes.
For Best Results: The only trick to homemade custard and creams is to temper the eggs when assembling. Do this by first adding small amounts of hot liquid to the beaten egg yolks, then gradually adding the remaining hot liquid with constant whisking.
Entertaining Tips: When hosting, offer a toast to friends and good fortune in the coming new year. As a guest, toast the host and the generosity of the season.
Cookbook Review Seriously Simple Parties By Diane Rossen Worthington. Published by Chronicle Books, San Francisco, CA. Copyright 2012. Sharing food, conversation, and fun with others is such an important part of life. However, the tasks of assembling those precious good times can sometimes become overwhelming. This cookbook solves the food portion of that dilemma with pages of inspiration. It’s logically organized according to various food categories, beverages, appetizers, soups & salads, light entrees, meat entrees, side dishes, and desserts. The entries span the calendar year and emphasize fresh, seasonal flavor. Party food need not be fussy or fancy to be enjoyed with others – it does need to be delicious, however, and this book demonstrates just how to accomplish that. You’ll find the recipe doable, and the results delightful.

Wrap
Wrapping gifts can be fun and inexpensive by thinking outside of the norm. Engage your family in some creative fun this year by embracing this holiday gift wrapping challenge. Three elements must be incorporated in the wrapping: brown craft paper, ribbon and a decorative item of their choosing. The rest is left to each person’s imagination and creativity. The photos shown illustrate how vastly different, yet exquisite and personal, each package can be. Get creative, have some fun, and don’t worry if you run out of wrapping paper, ribbon or bows! Simple brown craft paper can go from drab to fab by grabbing a pencil eraser, dipping into white paint, and creating your own polka dot paper. Hand your child a marker and ask them to draw snowflakes or a snowman for a handmade piece of art. What grandparent wouldn’t cherish such a personal touch? Short on wrapping paper or craft paper? Grab a newspaper, a map or pages from a songbook or magazine. The options are endless, and the search for unique and creative materials is a fun challenge! Add embellishments that accompany the gift inside, or are personal to the receiver. Giving a gift to a baker? Embellish with cookie cutters, wooden spoons or a vintage set of measuring

cups. For the avid golfer, adorn the package with golf balls, tees, tee markers, etc. For the wine lover, a festive bottle topper or corkscrew would make the perfect accessory. Perhaps you are giving a gift to a little boy who loves cars, create a “street” with black construction paper, white marker and top with a toy car. Watch his face light up with excitement before he opens the gift! The options are endless, yet show that time, love and individual attention were given to each gift. Ditch the boring old wrapping paper and store bought bows! Get creative making bows from maps, newspaper, cupcake liners, paper doilies, balloons, etc. Want to give your gift a rustic flare, wrap in twine or burlap, and embellish with elements from the outdoors. Perhaps you have a flare for glitz and glam, wrap your gift with glitter ribbon, paper, or a glitter dipped feather. With so many alternatives, you can create a festive, yet inexpensive masterpiece with limitless possibilities. By embracing items that you already have on hand, tapping into your creative side and recruiting your family for an afternoon of fun, wrapping gifts will become a cherished memory and the end result will be gifts that are almost to pretty to open!

Elko Christmas Bird Count Contributed by Lois Ports for the Bristlecone Audubon Chapter
Prior to the turn of the century, people engaged in a holiday tradition known as the Christmas "Side Hunt": They would choose sides and go afield with their guns; whoever brought in the biggest pile of feathered (and furred) quarry won. Conservation was in its beginning stages around the turn of the 20th century, and many observers and scientists were becoming concerned about declining bird populations. Beginning on Christmas Day 1900, ornithologist Frank Chapman, an early officer in the then budding Audubon Society, proposed a new

holiday tradition-a "Christmas Bird Census"-that would count birds in the holidays rather than hunt them. So began the Christmas Bird Count. Thanks to the inspiration of Frank M. Chapman and the enthusiasm of twenty-seven dedicated birders, twenty-five Christmas Bird Counts were held that day. The locations ranged from Toronto, Ontario to Pacific Grove, California with most counts in or near the population centers of northeastern North America. Those original 27 Christmas Bird Counters tallied around 90 species on all the counts combined.
The data collected by observers over the past century allow researchers, conservation biologists, and other interested individuals to study the long-term health and status of bird populations across North America. When combined with other surveys such as the Breeding Bird Survey, it provides a picture of how the continent's bird populations have changed in time and space over the past hundred years.
Audubon Christmas Bird Count circles in the western hemisphere This year marks the 115th count and over 70,000 observers from 17 countries participating within 2,350 count circles are expected to be counting birds on their assigned date. Each individual count is performed in a “count circle” with a diameter of 15 miles. Observers are broken up into small groups and follow assigned routes, which change little from year to year. Observers count every bird they see or hear all day. It's not just a species tally--all birds are counted all day, giving an indication of the total number of birds in the circle that day. In most count circles, some people also watch feeders instead of following routes. All individual CBC's are conducted in the period from December 14 to January 5 (inclusive dates) each season, and each count is conducted in one calendar day.
Merry Christmas
Imagine this: You can be part of the largest, longestrunning animal census on the planet! Come join the members of Bristlecone Audubon as they hold their official Elko Christmas Bird Count on Sunday, December 14, 2014. Everyone is welcome and all levels of experience can participate, new birders will be partnered with experienced members. Observers meet at 7:00 a.m. at either: 1050 Sewell Dr., Elko, NV or 556 E. Charlwood Ct., Spring Creek, NV. Groups will go out on assigned routes which take an average of 4 to 6 hours to complete. At 4:30 p.m. all count information is turned in at the annual pot luck dinner where the data is compiled and preliminary results can be announced. For more information contact: Lois K. Good Neighbor's
Cami Stephenson was nominated by Marci Crigler! C ontributed by S habonya D utton of S tate F arm , written by K elsie C reamer
Cami Stephenson is Shabonya Dutton State Farms Good Neighbor for December. “Cami is a special Ed teacher at Northside and she is always willing to do anything for anyone. My babysitter quit one summer and while Cami was teaching summer school she watched my daughter, and would take her with. She is an inspiration to me. I don’t know how she does what she does. She never bats an eye about doing what needs to be done and is always willing to listen. She is such a good person.”
Cami has been a Special Ed teacher for 24 years, she is a mom of 3 and has been married 24 years.
I asked Cami what sparked her interest in becoming a teacher and she said, “I wanted to be a teacher since I was 10 years old. I remember being in 4th grade, I was going to school in Wells and I had a teacher named Mrs. Robinson. She was flamboyant, southern, and had great big Cami blonde hair (she giggled after saying). I I’ve stated before in a previous Good can just remember being in her class and neighbor article how passionate and dedicated that environment making me want to be a Teacher. teachers have to be as they influence our youth. It is positive driven people like you Cami that allow children to progress and be given the privilege to experience the sensation of inspiration, and to be allowed creative freedoms in a positive environment. You are a Good Neighbor, and a shepherd to our future. Thank you for all that you do!

The late Dr. James W. Parker once said, “Develop a compassion to serve that is greater than the compulsion to survive.” We often find ourselves and gain better health through serving and helping others. Serving others can be as simple as opening the door for someone, sincerely listening, and giving a smile. When we meet the needs of others, we become happier. This increased happiness can decrease our stress levels and promote healthy serotonin function in the body. This allows our bodies to properly digest food and enjoy good health. While good health is a blessing from service, we shouldn’t always ask, “Well, if I serve someone, what will I get in return?” Almost like giving a gift to get a gift. You may not immediately get something in return, other than the satisfaction of making someone’s life happier. Embrace each new day and look for opportunities to serve and live a life of abundant health this Holiday season and beyond!

Does selecting the
“Right RealtoR” Really Matter? YOU BET IT DOES! It’s vital to understand how to select your Realtor, ask your friends and family, interview more than one realtor, and DON’T JUST SETTLE FOR CALLING THE PERSON ON THE YARD SIGN, get your own real estate representative. It’s just like selecting any other service professional – from your accountant to your family doctor – it’s important to do your homework before deciding on a real estate agent. It’s equally important to find an agent who will work hard for you to get the job done. Although your uncle’s friend may ‘dabble’ in real estate, ask yourself...
“Are they really qualified to help me buy or sell my home?” ABILITY MATTERS…WILL YOU RECEIVE PROPER REPRESENTATION? EXPERIENCE MATTERS…IS THIS A CAREER OR A HOBBY? PRODUCTION MATTERS…ARE THEY AMONG THE TOP PRODUCERS? EDUCATION MATTERS…DO THEY ATTEND REGULAR CLASSES?
YOU MATTER TO US…choose wisely! ASK YOUR RE/MAX GOLD REAL ESTATE AGENT THESE QUESTIONS TODAY…..

Annual Elko Crèche Exhibit Featuring Handmade Nativities to Celebrate its 10th Year
Margie Elwood’s Favorite Nativity Handmade nativities will be the feature of this year’s Elko Regional Interfaith Christmas Crèche Exhibit, December 4th through 7th, at The Church of Jesus Christ of Latter-day Saints West Stake Center, 3001 North Fifth Street. Throughout the years, many of the nativities displayed have been handmade, from a simple child’s craft to fine art. For the 10th anniversary the Crèche organizers wanted to highlight the handmade items and sent out the invitation to individuals and groups to make something new for this year’s exhibit. While the organizers hope that many will have taken the opportunity to make something new for this year’s exhibit, many handmade nativities that have been on display previously, will again be displayed this year, along with a special commemorative quilt.
Since the Crèche Exhibit began in 2005, sitting most often in a corner of the exhibit, is a nativity scene crafted in 1995 by the children of John and Margie Elwood. That year the children decided to make a surprise gift for their mother. After digging through their craft box, the children crafted a nativity scene from clothespins and fabric scraps, held together using glue and safety pins. Tin foil was used to make the wise men’s gifts, cotton balls for the sheep, and wax paper for the angel’s wings. The family had learned to make ‘ojos de dios’ or little stars made from popsicle sticks and yarn, which the children used for the star that led the shepherds to the baby Jesus. This nativity is Margie’s favorite because the children thought to do it on their own, and made it as a gift for her. She loves to put this nativity in the exhibit to honor her children and to show love for Christ. Margie said there’s nothing more special than a gift a child makes for you.
The Nativity of Steel Five years ago, Val Esplin wanted to make his own nativity to display at the exhibit. As welding is one of his hobbies, he decided to make a nativity scene from metal. That year was the first year Esplin displayed his original metal nativity. The entire piece is made of carbon steel with steel wool for the sheep’s wool, titanium and brass for the crowns and a trumpet made from brass. This was his first time making figurines of metal. He spun the figurines on a metal lathe, heating up the metal so he december 2014 | everythingelko.com

could bend, mold and shave the piece into what he wanted. He would then weld on the ears, arms, legs and accessories to each person. Mary is his favorite figurine because it took some time to figure out how to make the shawl but once it was made, he loved the look of it. Esplin said it was satisfying being able to take chunks of metal and turn them into something beautiful. To him, it was a perfect way that he could show his love for the Savior and be able to share that with those attending the exhibit. Since that year, he has made a new nativity each year for the Crèche Exhibit. Although the metal one was fun, it took a lot of time, so he moved on to carving nativities out of pallet wood using a scroll saw. They take a steady hand and attention to detail and he loves the challenge. Making art for the exhibit is enjoyable for him because he gets to show his love for the Savior and help spread cheer during the Christmas season.
Norma Smith A special hand-knit nativity—complete with wise men, shepherds, animals, an angel, and, of course, the holy family—has been seen at the Crèche Exhibit each year. Norma Smith, who at the time was legally blind— one

eye being glass, knit the nativity scene in 1980. While she enjoyed tatting the most, Norma was skilled in many handcrafts and able to knit fast, like a machine. She had a photographic memory and brilliant mind and often could recreate items without using a pattern. Being deeply religious, when Norma saw a knitted crèche, she got the idea to knit a nativity, and that is was she did. Gwen Thacker, Norma’s daughter said that Norma and was very excited about the project and was disappointed when she only received a red ribbon for it at the County Fair. Norma learned to knit from “the old German lady down on the corner” and taught her the German method of knitting, which could be one reason why many people, when seeing the nativity, think that it is crocheted. Norma passed away at the end of December in 1981. Thacker is proud to display the nativity at the exhibit each year, in honor and remembrance of her mother.
Made by the Hand of God Several years ago, artist Lynne Kistler set out to learn the technique of smoke drawing and having difficulty mastering this technique, Lynne turned to God in prayer. The outcome of that prayer was that God would be the artist and Lynne would be the pencil. With Lynne being an instrument in His hands, Lynne was able to create the smoked art drawings. These drawings were Christianthemed and each time a drawing was made, God also gave Lynne the verse of scripture that went with the drawing. Her smoked drawings became popular and Lynne was asked to make Christmas cards. She thought she would do that and one afternoon set out to create a smoked drawing for these cards. Many hours later all she had to show was a lot of wadded up paper.
The Interfaith Crèche Exhibit is open from 11 a.m. to 8 p.m. each
day with musical performances Thursday and Friday evenings,
Saturday afternoon, and Sunday afternoon and evening.
Along with the exhibit and musical performances, there will be a live re-enactment of the Christmas nativity story, Thursday and Friday evenings from 5 p.m. to 8 p.m., and Saturday from 1 p.m. to 5 p.m. Once again the Exhibit will be collecting items — or gifts — for the homeless. These gifts will be given to Joshua Tree Shelter for distribution. Some of the items needed are white over-the-calf socks, heavy gray socks, men’s and women’s outdoor wear, long underwear and sleeping bags. More information, schedule of performances, and complete list of gifts for Joshua can be found at www.elkocreche.org or www. facebook.com/elkocreche.
After much frustration, and a prayer, she remembered “the rule” — God was to be the artist, and she was to be the pencil. It was then that the piece “Immanuel With Us” was created, with the hands of God, the dove (Holy Spirit), Mary and the baby Jesus. Lynne first shared this piece with the exhibit in 2011, and will again have it on display this year.
The Anniversary Quilt To commemorate the Crèche Exhibit’s tenth year, Francine Berrett, has made a quilt for the occasion. Berrett and her daughter, Laura Cooper, designed the quilt, which was inspired by a stained glass piece hanging in Cooper’s home. Named “O Holy Night,” the quilt features a manger scene in the center with ribbons surrounding the scene. Inscribed on the ribbons are the themes from each of the previous Crèche Exhibits. Hand appliquéd and machine quilted by Berrett, the 65 by 72 inch quilt was made using the stain glass technique and uses batik fabrics. Barrett, who lives in Salem, Utah, has been involved with the Crèche Exhibit from the beginning and has been a featured quilter at the 2009 through 2011 exhibits. Berrett now only uses nativities to decorate her home in honor of Christ’s birth, instead of a Christmas tree. She delights in collecting and making nativities, especially making pillows and blankets depicting nativity scenes. She loves Jesus Christ and loves to support the Crèche Exhibit and honor Christ during the Christmas season by making her quilts and donating them for display.
