Ingredients Pie Shell 7 cups All Purpose Flour 1¾ cup Cake Flour ¼ cup Powdered Sugar 1 ¾ cup Vegetable Shortening ¾ cup Butter cubed Pinch of Salt 4 each Egg 1oz Vinegar 2 cup Cold Water

Fruit Filling 2lbs. Gala Apples Peeled and Cored 8oz. Frozen Cranberries ½ cup Brown Sugar 3 T All Purpose Flour ½ t Cinnamon Pinch of Salt 2oz Butter Cubed

Directions Pie Shell 1. I n a kitchen aid, blend the flours, sugar, shortening, butter, and salt. 2. I n a separate bowl whisk the egg, vinegar, and water. Pour over the dry ingredients incorporating all the liquid without over working the dough. 3. D ivide the dough into four disks. Cover with plastic wrap and store in the fridge. Fruit Filling 1. Peel and core apples then slice thin. 2. Mix all ingredients by hand in a bowl. Preheat oven to 450°. Spray the bottom of the pie dish with pan coating. Roll out the dough to make a bottom crust. Place into pie dish. Add fruit filling. Roll out the 2nd disk and use to cover pie. Crimp edges shut with a fork. Egg wash top and sprinkle sugar over pie. Collar with foil and bake for 15min. Decrease temperature to 400° and bake for an additional 45-50 minutes.

Share good times EAT, DRINK AND BE MERRY! Caramelized Onion & Cheese Squares A savory, thin, biscuit-like crust forms the foundation of these savory squares. The first flavor layer is comprised of sautéed onions and thyme. Then, two types of cheese, dolloped here and there, top it off. The result is a fabulous taste sensation – perfect for nibbling while sipping your favorite wine. The crust is mixed easily and quickly patted into shape. The onion-thyme topping, sautéed to silky tenderness, lends a savory character that is subtle, yet distinct. Plan to serve the squares warm from the oven, or at room temperature shortly thereafter.

To make the crust: In a medium bowl, stir together the flour, baking powder, and salt. Make a well in the center of the mixture. In a measuring cup, whisk together the milk, olive oil, and melted butter. Slowly pour the milk mixture into the well, stirring until just blended and the mixture comes together into a rough mass. Turn out the dough onto a lightly floured work surface and roll out into a 10-by-13-in/25-by-33-cm rectangle. Transfer the dough to a baking sheet/tray. Pierce the dough all over with a fork. To make the topping: In a large skillet over medium heat, melt the butter with the olive oil. Add the onions and cook, stirring frequently, until softened and lightly browned, about 10 minutes. Add the thyme, sugar, and salt and pepper to taste, reduce the heat to low, and cook, stirring frequently, until the onions are soft and caramelized, about 20 minutes.

Makes filling for 2 sheets of puff pastry
 Approximately 96 mini-palmiers

Makes filling for 2 sheets of puff pastry

(1) 8.5 oz. oil packed, julienned, sun-dried tomatoes
 2 cloves garlic, sliced

1 cup roasted almonds
1/4 cup sugar
2 teaspoons almond extract
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Drain the tomatoes reserving the oil, squeeze the tomatoes dry. In a food processor, process the tomatoes and garlic together until a smooth paste has been formed. Add drips of the reserved oil as needed to make a very thick paste.

PESTO PALMIERS
 Makes filling for 2 sheets of puff pastry
 Approximately 96 mini-palmiers

1/2 cup, packed, basil leaves, washed, patted dry
1/2 cup, packed, parsley leaves, washed, patted dry
1 cup grated Parmesan cheese
1/3 cup pine nuts
2 cloves garlic
1/4 teaspoon salt
2-3 tablespoons olive oil Mix all ingredients, except the olive oil, in a food processor and process until finely ground. Add 2 tablespoons of olive oil and continue to process. Add additional oil if needed to make a very thick paste.

Directions Mix all ingredients in a food processor and process until finely ground.

To Make the Palmiers:
Follow the process for any of the three fillings. 1. Using prepared frozen puff pastry, defrost in the refrigerator until pliable, yet still chilled.

6. Place the rolls on a baking sheet and chill in the refrigerator until firm, about 1 hour.

2. On a lightly floured surface, unfold one sheet of puff pastry and roll out to a 9” x 14” rectangle.

7. Preheat the oven to 400°F. Slice the roll, crosswise, in 1/4-inch slices and place on a baking sheet lined with parchment paper or a baking mat. If necessary, chill slices on the baking sheet.

3. Apply filling of your choice all over the rectangle in a thin, even layer. 4. Beginning long edge, roll the puff pastry in a tight roll to the rectangle’s midpoint. Repeat on the opposite long edge. 5. Repeat with the second sheet of puff pastry.

8. Bake in the preheated oven for 8-10 minutes, or just until the edge begin to turn a golden brown. 9. Cool the palmiers on the baking sheet for 1-2 minutes, then transfer to a cooling rack. Serve warm or at room temperature. DO-AHEAD: Make the fillings ahead of time, roll the puff pastry logs and freeze until ready to bake and serve.

For BEST RESULTS: Basil is a very tender herb that readily oxidizes and browns. Use half basil and half Italian flat-leaf parsley to achieve and keep a bright green color in the finished pastry. Use only a very thick pesto paste, (minimal olive oil), for filling these little palmiers. A pesto that is too thin will encourage the pastry roll to unfurl and lose its tightly rolled shape during baking.

Here’s a holiday food that’s also healthy! We found it suggestive of some of our favorite French bean preparations, so it was an immediate favorite for us. White cannellini beans are mashed with aromatic onions and garlic, then finessed with three different fresh herbs and a spritz of fresh lemon juice. We served the spread, as suggested, as a topping on freshly toasted bruschetta – a hearty and satisfying small bite. This fantastic spread is good to serve on its own with grilled bread, or

you may want to add an array of toppings. As with other bean dips, the wines here can vary from subtle, to enjoy the light earthy essence

Basic Bruschetta, or crackers for serving Roasted red bell pepper strips, pimientos, seeded and chopped piquillo peppers, chopped black or green olives, anchovy fillets, caramelized onions, or capers, or a combination for garnish

Heat the olive oil in a large sauté pan over medium heat. Add the onion and garlic and cook, stirring often, until softened and lightly golden, about 5 minutes. Add the beans, parsley, chives, thyme, and salt and pepper to taste and cook, stirring occasionally, until the beans are heated through and the flavors have blended, about 10 minutes. Remove from the heat and let cool slightly. When the bean mixture is cool enough to handle, transfer to a food processor. Add the crème fraîche and lemon juice and process until smooth. Taste and adjust the seasoning with salt, pepper, and lemon juice, if necessary. Process again if needed just to combine.

BASIC BRUSCHETTA Makes 12 toasts, serves 4 to 6 Bruschetta are simply grilled crusty bread slices rubbed with garlic and brushed with olive oil. They can be prepared on a charcoal or gas grill, in a grill pan, or in the oven for the desired crunch and a little pleasant charred flavor. Cook as many slices as will fit in a single layer and turn them only once, until they are nicely grill-marked or golden brown and crispy. 6 1/2-in/12-mm slices country or sourdough bread 3 large cloves garlic, peeled and cut in half lengthwise About 1/2 cup/120 ml olive oil To grill the bruschetta, prepare a medium-hot fire for direct grilling in a charcoal grill/barbecue, preheat a gas grill to medium-high, or heat a stove-top grill pan over medium heat. Arrange the bread slices in a single layer on the grill rack or in the pan and grill, turning once, until they are golden brown and crispy and slightly charred around the edges, about 3 minutes per side. Transfer to a platter. Run the garlic halves over one side of the bread and brush lightly with the olive oil To make the bruschetta in the oven, preheat to 450°F/230°C/ gas 8. Arrange the bread slices in a single layer on a baking sheet/tray and bake, turning once, until golden brown and crispy, about 3 minutes per side. Transfer to a platter. Rub the garlic halves over one side of the bread and brush lightly with the olive oil.

The Humboldt-Toiyabe National Forest is the perfect place to cut a live tree and enjoy a family outing in the backcountry of Elko County. Permits and cutting instructions can be obtained from the Forest Service office in Elko at 2035 Last Chance Road (738-5171) and the Wells office at 140 Pacific Ave (752-3357) from Monday - Friday. Permits can be bought for pinyon pine, juniper and sub-alpine fir. Each species has its unique and wonderful characteristics. From big and wide pinyon to tall and skinny sub-alpine firs, there is a tree for every home. As with any winter activity, be prepared for the weather and road conditions when you head out for your adventure, and don’t forget the camera to capture your trip.

Christmas Bird Count Prior to the turn of the century, people engaged in a holiday tradition known as the Christmas "Side Hunt": They would choose sides and go afield with their guns; whoever brought in the biggest pile of feathered (and furred) quarry won. Conservation was in its beginning stages around the turn of the 20th century, and many observers and scientists were becoming concerned about declining bird populations. Beginning on Christmas Day 1900, ornithologist Frank Chapman, an early officer in the then budding Audubon Society, proposed a new holiday tradition-a "Christmas Bird Census"-that would count birds in the holidays rather than hunt them. So began the Christmas Bird Count. Thanks to the inspiration of Frank M. Chapman and the enthusiasm of twenty-seven dedicated birders, twenty-five Christmas Bird Counts were held that day. The locations ranged from Toronto, Ontario to Pacific Grove, California with most counts in or near the population centers of northeastern North America. Those original 27 Christmas Bird Counters tallied around 90 species on all the counts combined. Now volunteers participate in counts in all 50 states, in all Canadian provinces, several Central and South American countries, and several Pacific and Caribbean islands. Each December, birders interesting in participating in the CBC can sign up and join in through the Audubon website. From December 14 through January 5 each year tens of thousands of volunteers throughout the Americas brave snow, wind, or rain, and take part in the effort. Audubon and other organizations use data collected in this long-running wildlife census to assess

the health of bird populations - and to help guide conservation action. The data collected by observers over the past century allow researchers, conservation biologists, and other interested individuals to study the long-term health and status of bird populations across North America. When combined with other surveys such as the Breeding Bird Survey, it provides a picture of how the continent's bird populations have changed in time and space over the past hundred years. There is a specific methodology to the CBC, and all participants must make arrangements to participate in advance with the circle compiler within an established circle, but anyone can participate. Each count takes place in an established 15-mile wide diameter circle, and is organized by a count compiler. Count volunteers follow specified routes through a designated 15-mile (24-km) diameter circle, counting every bird they see or hear all day. The Elko Count Circle includes portions of Elko, Spring Creek, and South Fork. It's not just a species tally--all birds are counted all day, giving an indication of the total number of birds in the circle that day. If you are a beginning birder, you will be able to join a group that includes at least one experienced birdwatcher. If your home is within the boundaries of a CBC circle, then you can stay at home and report the birds that visit your feeder on count day as long as you have made prior arrangement with the count compiler.


Come join the members of Bristlecone Audubon as they hold their official 26th Elko Christmas Bird Count on Saturday, December 19, 2015. Everyone is welcome and all levels of experience can participate, new birders will be partnered with experienced members. Observers meet at 7:00 a.m. at one to two locations, one in Elko and one in Spring Creek. Groups will go out on assigned routes which take an average of 4 to 6 hours to complete. We all love the intense excitement in our fur-babies when they get table scraps, but several of our holiday favorites are NOT favorites of their gastrointestinal systems. So, in order to keep this season easy on your schedule…your pocketbook…and your carpets, let’s just establish the “NO” on human foods that your pet does not need this winter. Pancreatitis (some of us may know this word very well…) is the diagnosis that is often established after we have taken radiographs and ran bloodwork on your vomiting/diarrhea dog. The pancreas is responsible for releasing digestive enzymes into the GI tract, where they are activated in the small intestine. Pancreatitis is the inflammation of the pancreas, most often caused by the intake of a fatty meal (that turkey leg, those mashed potatoes, Gram’s green bean casserole…). With this inflammation, digestive enzymes in the pancreas are activated too early, and essentially start to digest the pancreas itself. This acutely painful, and can be very serious in cases where the animal goes into shock, or the pancreas starts to hemorrhage. Clinical signs are vomiting and diarrhea, lethargy, fever, tender abdomen, and a universal “praying position”, where you may notice them trying to relax with their hind end in the air, and head and front legs low on the floor. The treatment is usually 2-5 days in the hospital on IV fluids and antibiotics, while your pet is fasted, the only way to get the pancreas to “shut off” so that it stops releasing enzymes and starts to heal. Depending on the severity of the pancreatitis diagnosed by your veterinarian, there may or may not be life time effects on the pancreas itself. But maybe your pet doesn’t like cooked and prepared meals. Maybe they are more of the paleo lifestyle, and like their meals fresh, right off the kitchen floor. Raisins, garlic/onions/leeks/shallots, avocado, grapes, chocolate (ESPECIALLY dark and un-sweetened baking chocolate), raw bread dough, alcohol, mushrooms, and ANY sort of

sugar, especially xylitol, are extremely dangerous to your pet, and can have immediate and serious repercussions on them that could result in a very costly, long-term hospital stay/ treatment. Cooked bones from the ham, the turkey bones left after dinner, or the skeleton of that T-bone steak, are not safe for your pet to chew on (chicken bones aren’t the only bad guys here!). After the heating process associated with cooking meat, we have broken down the proteins, and relative integrity of that bone, making it very soft, and easy to shard and break apart. Those shards don’t come out easily, or…they don’t come out at all. And I can promise you that Santa did NOT promise your best friend an exploratory surgery for Christmas. Now, I realize, that after reading this, you are sure that your little buddy is going to hate your guts and think you are the worst mom…EVER. But trust me on this. Steam some fresh veggies, give them a bit of mashed pumpkin or yam, some warmed high quality canned dog food SATURATED in dog gravy from Petco, and 1-2 frozen banana cubes for dessert… they won’t even care to notice what your family is enjoying for dinner! Stand firm, say “NO!” to table scraps, and have a very safe and happy holiday season!


Elko's very own native born and raised, Bobby Jack Davis always had the love as a child for drumming. Thru out the past Davis has sat in with many bands that where formed in his hometown. Bobby came from a long line of entertainers thru his mothers side that were featured on the Lawrence Welk show and a big part of the Bakersfield sound. However his true make up is Rock and Roll, growing up in the era of Beatles to the Monkees. Here today Davis frequents the famous Boyce and Hart from past to present. Boyce and Hart partnership made a breakthrough with a song recorded by Chubby Checker, "Lazy Elise Molly', in 1964. They went on to write hits for Jay and the Americans 'Come a Little Bit Closer', Paul Revere and the Raiders 'I'm Not Your Steppin Stone', and The Leaves 'Words'. The latter two songs provided the Monkees with B-sides in 1967. The duo also wrote the theme song to the daytime soap Days of Our Lives. Davis values all advice that he can get from the late Tommy Boyce's wife here today. Recently Bobby Davis decided to create a band instead of joining others, and the Beach Party Surfers USA was born. Beginning encouragement was from his friend who was born and raised in Southern California, Don Smith aka

Surfer Don and his 1965 Fender guitar and amp. Bobby has taken on his son Shane Alan Davis to play guitar along with Dan Beeler, singer and keyboards and long time friend Kevin Duffield on bass. "The band has been very successful from the start, with many visits from thru out the world hitting the web site", quoted Davis. Beach Party Surfers band is recognized by the way they play big hits from the past that are well received by many, plus the songs that they have written. "We have great response when we sneak them in on our song line up", Kevin quotes. The band has agreed to spending time this winter to write more songs to add. "We have reached beyond our hometown and now it's time to create further" quoted Shane. The band has been able to collect a captive audience in Japan which has brought them support from Blue Star Guitar Company, Gotemba Shizuoka Japan. "You know you are spinning in the right direction when the international music scene has reached out to you" Dan quotes. Right now the band is underway negotiations kicking off 2016 by teaming up with California Surf Bands to play Los Angeles and Orange County area.

- 11TH ANNUAL ELKO -

Regional Interfaith Christmas Crèche Exhibit Exhibit “When the time for this Savior’s advent was at hand, an angel was sent to announce to Mary that she was to be the mother of the Son of God. Then a host of angels was commissioned to sing on the night the baby Jesus was born. Shortly thereafter an angel would announce to Joseph that the newborn baby was in danger and that this little family must flee to Egypt for safety. When it was safe to return, an angel conveyed that information to the family and the three returned to the land of their heritage. “From the beginning down through the dispensations, God has used angels as His emissaries in conveying love and concern for His children.” (The Ministry of Angels, Elder Jeffrey R. Holland, Quorum of the Twelve Apostles, The Church of Jesus Christ of Latter-day Saints.) Angels, will be the feature of this year’s Elko Regional Interfaith Christmas Crèche Exhibit, along with hundreds of nativities of every shape and size, from the world over. Last year, for the 10th Anniversary, the exhibit asked for handmade nativities. The response was incredible, handmade nativities and commercial nativities numbered more than 1,100 — the largest local response to date. Recognizing the important role of angels in the events surrounding the birth of Jesus Christ, and the tender feelings many have for angels in their own lives today, the Crèche Committee desires this year to fill the exhibit with a “multitude of heavenly host” and hopes angels will receive the same enthusiastic response as did the handmade nativities. Angelic music will also be heard during the exhibit. New groups have been added to the music line-up this year. Spring Creek Elementary School Honor Choir and the Great Basin College Choir join the

schedule of favorite groups such as the Mountain View Elementary School Choir, Spring Creek High School High Expectations Choir, Elko High School Choraliers, The Miner Chordsmen, and the Elko Handbells. Following tradition, the exhibit will culminate with the annual community Messiah Sing-Along, now in its 22nd year, and sponsored by the Elko Religious Leaders Association. The Messiah is followed by a devotional broadcast from Salt Lake City, which includes the Mormon Tabernacle Choir. Since the first year of the exhibit, children have been asked to draw a picture of the Nativity, which has usually been the traditional Mary, Joseph, and baby Jesus in a stable. This year children have been asked to draw a specific scene from the story that include angels, such as the angel appearing to Mary, or to the shepherds. To the see nativity as envisioned by children is always fun and insightful. Once again, the exhibit is pleased to be partnering with Joshua Tree Shelter to collect gifts for the homeless. Gifts of boots, hats, gloves, thermal underwear, socks, flashlights, tarps, hand warmers, and sleeping bags can be brought anytime during the exhibit. The exhibit opens Thursday, December 3, at 3001 N. Fifth Street, inside the Elko West Stake Center of The Church of Jesus Christ of Latter-day Saints, and continues through Sunday December 6. The exhibit is open 11 a.m. to 8 p.m. each day, and free to attend. The musical performances begin at 10:30 a.m. on Saturday.

Look closely at the supplements you’re taking to ensure that you’re getting the nutrition you need.

Earlier this year, a New York Times article explained how the New York State Attorney General in the U.S. accused major retailers of fraudulently labeling several of their supplements. Some of these supplements include ginseng, gingko biloba, St. John’s wort, valerian root and more.

It was also found that some of these stores weren’t including all of the additives to their supplements on the ingredient list! Navigating the Confusing Shelves The world of supplements can seem confusing at first. The shelves at retail shops carrying nutritional products are overloaded with everything from vitamin A to zinc. Just taking a look at the supplement section feels overwhelming! Each product has different formulations, with different doses and percentages on the label.

Some Helpful Tips The most important tip we can offer is to try to get enough nutrients from foods first rather than relying on supplements. As sometimes that is not always possible, here are some basic tips to help you navigate the complicated world of supplements: • The reputation of the brand manufacturer, their suppliers, and their record of quality are helpful, but most important is what is actually in the supplement.

• Buy drugs at drug shops and health foods at health food shops. • Check for companies that are GMP (Good Manufacturing Processes) certified. • Do your research. To benefit optimally from a supplement, there’s a specific dosage for a specific person, at specific frequencies and durations. • Read the labels carefully. Choose a supplement based on your research and not just what the label says. • Looking for a particular nutrient? Add the following phrases to your Google search: “most bio available” or “most absorbable form.” • Seek out a natural health care practitioner that can make the best recommendations for you. Amanda is a person who you can go to in a time of need and not feel judged or embarrassed. I have seen Amanda hand out money to people in need. Give a home to a person in a tough spot. She is the most kind hearted person I know.” Everyone knows at least one person who seems to have this natural way of making you feel at home and safe, that person for many is Amanda. She is the person that in the midst of disaster will stop all that she is dealing with just to be your shoulder to cry on. The person you know you can turn to even though you haven’t spoken in months. She puts everyone else before herself. She’s more than just a mother, a friend, a co-worker, a role model…she is a fighter. She is strong, stronger than most will ever have to be in their lifetime. When it comes to describing how amazing she truly is words like devoted, compassionate, resilient, all seem to fall short. How do you begin to describe someone who’s touched the lives of so many? Whose capacity to love is boundless? Whose ability to put others needs before her very own make you yourself strive to be a better person? It’s seems impossible… Often with small towns everybody knows everybody. In this particular case I feel privileged to say I know Amanda and her family very well. My siblings and I grew up with her kids, my family

became a part of her family and when I think of my Childhood there are thousands of memories that flood my mind involving them…some that will forever make me laugh and others that bring me to the brink of tears. I couldn’t have imagined our lives without Amanda’s influence and when I say her love is boundless please understand there is much more power behind the words than I could convey because that love was felt, that love was experienced first hand. “I've heard it said that people come into our lives for a reason, bringing something we must learn. And we are led to those who help us most to grow if we let them and we help them in return. Well, I don't know if I believe that's true but I know I'm who I am today because I knew you...like a comet pulled from orbit as it passes a sun, like a stream that meets a boulder halfway through the wood. Who can say if I've been changed for the better? But because I knew you I have been changed for good.” Lyrics from the song “Good” Written by Stephen Schwartz for his musical Wicked We undervalue the strength of a kind smile or a listening ear. Amanda has turned many lives around, more so than she probably will ever know. You are the most giving spirit and those around you consider themselves lucky to be a part of your life. People are better for knowing you and for being able to experience the love your family gives. Your heart is pure and your intentions good. We could use more Amanda’s in the world.

California trail interpretive center

j DECEMBER j December is holiday time with friends and family at the California Trail Interpretive Center. We would love to have your family visit with us during December! As emigrants settled in their new homes in the west, they were excited for Christmas and other holidays. Life on the trail was behind them. New cultures were experienced and old traditions followed. Come celebrate pioneer Christmas with us on Saturday, December 19 from 10 to 2. Kids can learn how the pioneers made holiday decorations. Come make your own paper snowflakes, tin lantern, and ornaments. Other December programs on Saturday and Sundays at 2 p.m. include Elko’s history in pictures, trail history, native perspectives and hands on demonstrations. Saturday programs are generalinterest, and Sunday programs are kid-oriented. The Trail Center’s store is ready for Christmas shopping! We have toys and gifts for kids – and grownups of all ages. Our books cover historical subjects of local, state, and regional interest. Gift

suggestions include Nevada shaped ornaments and cutting boards, historical toys, Made in Nevada jam, local Spring Creek honey, clothing and hats and more. There are lots of unique pioneer and western gifts for the hard to fill Santa order. Admission is always FREE. The Trail Center is open Wednesday-Sunday from 9-5., closed Monday and Tuesday.
