More info: 738-3066 29th National Cowboy Poetry Gathering - Elko, NV Mon, January 28th - Sat, February 2nd The National Cowboy Poetry Gathering, the nation's greatest celebration of the American West, its people, culture and traditions, will take place January 28 to February 2, 2012, in Elko, Nevada. Every winter cowboys, ranchers, rural and urban people have traveled en masse to this small high desert community, to join with friends, family and others who care about the rural West. Together, they listen to poetry and music, learn about cowboy culture in the U.S. and around the world, experience great art, watch western films, learn a craft, and gather to eat, drink and swap stories. Produced by the Western Folklife Center, the National Cowboy Poetry Gathering was started in 1985 by a small group of folklorists and poets, and has become an annual ritual for thousands of people who value and practice the artistic traditions of the region, and are concerned about the present and future of the West. Hundreds of cowboy poetry gatherings have since taken hold across the West and the nation over the last 28 years, as the Elko Gathering has reinvigorated a tradition that never ceased to be a part of the lives of cowboys, ranchers and rural westerners. In 2000, the U.S. Senate recognized the cultural value of this tradition and the event responsible for its renaissance when it passed a resolution naming the Elko Gathering the “National” Cowboy Poetry Gathering. Great Basin College Annual Film Fest Elko, NV Fri and Sat, February 8th-9th and Fri and Sat February 15th-16th Attention movie goers and film fans!! Great Basin College's annual Film Festival has been slated for two upcoming weekends: February 8th and 9th, and February 15th and 16th. This is the eighth year the college has brought culturally diverse films -- typically not seen in the Elko area -- to local audiences. Movie goers can purchase individual tickets or a Film Festival pass at the Berg Hall Controller's Office in advance OR at the door. General admission tickets are $7 each ($5 for students and senior citizens). A Festival Pass for all four films is $20 per person. The Festival kicks off Friday, February 8th with the popular dinnerand-a-movie event featuring "To Rome with Love." A 6 p.m. Italian buffet in the college solarium precedes the Woody Allen film which begins at 7 p.m. in the the GBC theater. February events at the california trail center

The California Trail Interpretive Center will be holding two great events during the month. On February 2nd, the center will be hosting its second Pioneer Poetry event starting with a showing of the television series Wagon Train from 10am – 1pm. At 2pm, the main event will begin with selected poetry and journal entries from emigrant, Shoshone, and mountain man perspectives. Local poet Richard Hooton will recite some of his original works written specifically for the event. He has also recited at the Trail Center in the past as well as for the Will James Society’s events.

Primitive bow maker Kent McAdoo will give a talk and demonstration on the craft at 12pm on Saturday, February 23. This is a unique opportunity to observe and see the different techniques, materials and methods used during the construction of these early hunting weapons. Visitors will be able to watch the fabrication of a primitive bow and ask questions of the process. As part of the many aspects of the BLM, presenting and preserving cultural places such

Making Whoopie…

Pies! These handheld sweet treats look like sandwich cookies, but are really made from cake, even though they're called pies. Regardless of terms, whoopie pies are officially in season!

What’s a Whoopie Pie?

Not a pie at all, traditional whoopee pies are two thin chocolate cakes sandwiched around plenty of white frosting. From the basic chocolate and vanilla formula of the past, a whole host of varieties have since taken the stage. Theories regarding the origin of whoopie pies are many and their primary ownership contested. A favorite legend stems from Amish country in southeastern Pennsylvania. Leftover cake better was dropped by the spoonful on flat baking sheets, and filled with leftover frosting. The cake sandwiches were placed in children’s lunchboxes where, when found, elicited the exclamation of “whoopee!”

Head to the coal-mining country of western Pennsylvania and the term, “gob,” is heard for whoopee pies. “Gob” references a lump of dark coal refuse, but also became the moniker for the sweet, filled cakes neatly populating coal miners’ lunch pails in days past. Head northeast to Maine, and you’ll find plenty of passion for whoopee pies and claims of sole ownership and origination. In fact, the whoopie pie is the Official State Treat of Maine. (It was in the running to be Official State Dessert, but lost out to blueberry pie). Wherever and whenever these confections came to be, we’re grateful and happy to enjoy them. There’s a practicality to whoopie pies that cupcakes can’t match; frosting is held neatly between two cakes making them packable and neat in the hand.

“Whoopie,” a 1928 Broadway musical with music by Walter Donaldson and lyrics by Gus Kahn, was produced by Florenz Ziegfeld. The comedy with its twists and turns highlights the wonders and complications of love. The song, “Makin’ Whoopie,” performed by Eddie Cantor is just one of the songs made famous by this production. The term “whoopee,” officially an exclamation of excitement, gained double entendre status as an intimate term designed to evade censors.

The Classic

Mastering the classic version of any recipe is always a great place to start a new venture. The classic version of a whoopie pie is chocolate cake with a white vanilla frosting – familiar partners now presented in sandwich form. This whoopie cake recipe showcases chocolate well; it’s not overly sweet – the filling takes care of that. The frosting is a classic buttercream whipped to just the right consistency for easy piping.

Tip:

All flavors of whoopie pies can be baked ahead of time and frozen. Once completely cooled, freeze the cakes in a single layer. Once frozen, the cakes can be stacked, wrapped, and kept in the freezer for up to one month. Avoid stacking prior to freeing as the cakes may stick together. As needed, remove the whoopie cakes from the freezer, thaw, fill, and enjoy.

Tip:

Most fillings and frostings can be made ahead of time and kept refrigerated for up to one week. When ready to fill your whoopie pies, bring the filling to room temperature for easy piping or spreading.

Mixing a Better Batter

For great whoopie pies the recipe must produce a batter that spreads just enough, but not too much. The batter is thicker than regular cake batter. It should drop onto the baking sheet and retain its shape. As the mounds bake, the batter will spread. In 8-10 minutes they should bake into thin, nicely domed cakes that, when touched, spring back.

Cakes are basically flour, sugar, fat, and eggs. The balance between these ingredients is what makes the perfect cake. “If you have too much four and/or eggs, the cake will be dry. If you have too much sugar and/or fat, the cake may be gooey or not set.”(Bakewise by Shirley Corriher, p. 13) Complex formulas guide bakes as they develop their own specialties. Tip: To make whoopie cakes that are the same size, use a small scoop to measure out equal amounts of batter. A one tablespoon-sized scoop makes and ideally sized whoopie pie.

On the underside of a piece of parchment paper, draw circles approximating the finished cakes. Leave space between the circles for the batter to spread. Place the parchment on a baking sheet (penciled side down), and place the baking pan on a culinary scale. Add batter to the center of each circle until 15 grams is reached, about 1 tablespoon. Takes cakes will be exactly the same size when baked.

Whoopie Pies For My Valentine

Classic Whoopie cakes might be round, but during February they easily adapt to the shape of the season, hearts. And, what better cake to bake than the well-known Red Velvet. The white cream cheese frosting highlights the cake’s color and shape – and, of course, tastes delicious! They will melt your heart!

Tip:

To pipe heart shapes, place batter in two angled teardrops with an open tipped piping bag. It takes a bit of practice, so don’t be discouraged. Pipe a few hearts to perfect your technique, bake them to assess the results, then adjust your piping routine to mimic the best heart shapes.

Red Velvet Cake is a nostalgic favorite with its moist and tender crumb. Different than traditional cake recipes, the batter is more acidic in nature than most cakes due to the use of buttermilk, and in some recipes, the addition of vinegar. This acidity inspires the cocoa to release its anthrocyanins that are red in color. Over time, red food coloring has also been added to the mix to accentuate the redness. Natural red coloring can be made from boiled beets, crushed strawberries, raspberries, or pomegranate juice.

Fabulous Fillings

Putting potentially messy frosting between two cake layers makes all the sense in the world for transporting the treats. Any frosting that goes well with cake and has a little body to it is perfect for filling whoopie pies. A classic buttercream frosting – butter, powdered sugar, and flavorings – is always appropriate and a good place to start. The filling should be thick enough to hold its shape between the cake layers, but soft enough to be easily piped.

Q: Is a “Moon Pie” the same as a “Whoopie Pie”? A: Moon pies and whoopie pies share a similar sandwich structure and the misnomer of “pie,” but are entirely different treats. A moon pie holds a marshmallow filling between two graham cracker cookies that have been submerged in a chocolate coating (or strawberry, vanilla, banana). Just like whoopie pies, moon pies are delicious, too! Pipe Filling on the flat side of half the cakes with an open tip or an offset spatula. Top with a second cake pressing slightly to bring the frosting to the sandwich’s edges.

What is powdered sugar?

Also known as confectioners’ sugar or icing sugar, powdered sugar is cane sugar ground to a powder. The fineness of the powder is described by “X’s,” the more X’s in the descriptions, the finer the powder. Powdered sugar typically contains anti-clumping agents, up to 3% cornstarch or some other agent. For smooth icing, we find it helpful to sift powdered sugar; this breaks up any lumps and removes any hard clumps that may have formed. Because of the anti-clumping and anti-caking agents in powdered sugar, it is usually not desirable for mixed drinks or beverages even though it dissolves instantly. Instead, use bar sugar which is a superfine grind of granulated sugar.

1 pound of powdered sugar = about 4 cups sifted Make your own: Using a blender pulverize 1 cup of granulated sugar with 1 tablespoon of cornstarch or arrowroot. (Blenders work better than food processors in this situation.)

Whoopie Pies What is Marshmallow Cream?

Marshmallow cream became associated with whoopie pies at some early point in their history. Known by the trade names of Marshmallow Fluff, or Jet Puffed Marshmallow Crème, It’s typically sold in jars and found near ice cream toppings at the grocer. Marshmallow cream is like a spooonable, spreadable marshmallow, extremely thick, and super sticky. Mixed with powdered sugar, butter, and flavorings, the result is a favorite whoopie pie filling for anyone with a sweet tooth. Make your own: Regular large marshmallows, melted and thinned with a few teaspoons of corn syrup will make a workable substitute for marshmallow cream.

These crunchies are great eaten out of hand, but when ground in a food processor or blender, the powder becomes a powerful natural flavoring agent.

February is the month of love and romance. Valentine’s Day is celebrated in many countries around the world. Valentine’s Day is very inscrutable and puzzling. To us, February is the month of love and romance, however, the many Saints named Valentine or Valentinus, were all martyred. One legend states that Valentine fell in disfavor with Emperor Claudius, Emperor of Rome, because he was secretly marrying young soldiers to keep them out of the war. Therefore, Valentine was imprisoned and fell in love with the daughter of his jailer. Before he was executed, he sent a letter to her signed “from your Valentine.” With this Romeo and Juliet type of history, Valentine’s Day is the perfect day to celebrate with cards, candy, flowers and sparkling wine.

What is the difference between champagne and sparkling wine, you ask? Champagne comes exclusively from the Champagne region of France. Technically it is the only sparkling wine that may be referred to as champagne. “Bubbles” from other regions in the world are referred to as “sparkling wine.” These other regions give France a run for their money by producing wonderful , sparkling wines that are often less expensive. I have a couple of wines that are perfect for that special day, but will not ruin your pocketbook. Mumm Napa Brut Prestige is from California and is best described as a “fun friend.” This sparkling wine is elegantly styled and complex and has won more medals at major wine competitions than any other wine in its class. Upon opening the wine, you get a wonderful floral, yeasty smell. The first taste is of crisp apple and melon. The finish is crisp and lingering. The Wine Enthusiast gave this wine 90 points. Spain produces fine sparkling wines called Cava. Freixenet Cordon Negro is the number one imported sparkling wine. It has a wonderful fruity, zesty style that tastes of apple, peach, spice and lime, with a smooth finish. Prosecco is an Italian white sparkling wine that is dry or extra dry. It is very versatile as a base for a plethora of cocktails, including Bellini’s. Enza Prosecco begins with an aroma of apple, pear, honeysuckle and peach. The same flavors continue on the palate, finishing smooth, crisp and refreshing. Whatever you choose for your Valentine’s Day remember what Mark Twain said;

8 large garlic cloves

1 cup balsamic vinegar

8 cups 1-inch-thick slices cauliflower florets, (about 1 large head; see Tip)

2 T finely chopped rosemary

1/2 cup packed dark brown sugar

2 tablespoons extra-virgin olive oil 1 teaspoon dried marjoram 1/4 teaspoon salt

2 T packed dark brown sugar

Equipment: 2 large roasting pans

2 T balsamic vinegar 1 t cayenne

Freshly ground pepper to taste

8 pounds baby back pork ribs (8 racks; see cooks’ note, below)

2 tablespoons balsamic vinegar

1 cup water

1/2 cup finely shredded Parmesan cheese PREPARATION 1. Preheat oven to 450°F. 2. Toss cauliflower, oil, marjoram, salt and pepper in a large bowl. Spread on a large rimmed baking sheet and roast until starting to soften and brown on the bottom, 15 to 20 minutes. Toss the cauliflower with vinegar and sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.

Marinate and roast ribs: Mince and mash garlic to a paste with 1 teaspoon salt. Stir together with rosemary, brown sugar, vinegar, cayenne, 1 tablespoon salt, and 1 teaspoon pepper. Rub evenly all over ribs and transfer to roasting pans. Marinate, chilled, 8 to 24 hours. Preheat oven to 425°F with racks in upper and lower thirds. Pour 1/2 cup water into each roasting pan and tightly cover pans with foil. Roast ribs, switching position of pans halfway through, until meat is very tender, about 1 3/4 hours. Remove pans from oven and transfer ribs to a platter. Make glaze and grill ribs: Add 1 cup hot water to each roasting pan and scrape up brown bits. Skim off and discard fat, then transfer liquid to a 10-inch skillet. Add vinegar and brown sugar and bring to a boil, stirring occasionally. Boil until reduced to about 1 cup, about 15 minutes. Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas); see Grilling Procedure. Brush some of glaze onto both sides of racks of ribs. Preheat oven to 180 C.

Preparation Put oven racks in upper and lower thirds of oven. Line 2 large shallow baking pans (17 by 11 inches) with foil. Put pans in oven and preheat oven to 500°F. Pat wings dry, then toss with oil, salt, and pepper in a large bowl and divide between preheated pans, spreading wings in 1 layer. Roast, without turning, until golden and tender, about 35 minutes. While wings roast, simmer vinegar, soy sauce, and sugar in a 1- to 1 1/2-quart heavy saucepan, stirring occasionally, until reduced to about 1/3 cup, 12 to 14 minutes. • To make syrup, combine sugar, cinnamon, star anise and a glass of water in medium saucepan over medium-high heat, and bring to boil. • Add about 50 ml of the vinegar to the syrup and then place pears in shallow ovenproof dish and pour syrup over them, leaving the spices in the dish for the time being. • Cover with foil and bake until the pears are tender for about half an hour. • Remove them from oven and allow them to cool until just warm. • Serve pear halves, sliced horizontally and drizzle generously with balsamic vinegar – put a dollop of fresh ricotta and chopped walnuts on the side.

Balsamic Grilled Vegetables From www.familyfreshcooking.com Ingredients 2 Portobello Mushrooms cut into 1 inch pieces 12 ounces Green Beans, trim ends and cut in half 8 ounces Cherry Tomatoes 1 Red Onion, cut into bite sized chunky pieces a handful of Garlic Cloves, skins removed a few splashes of Olive Oil a few splashes of Balsamic Vinegar Garlic Salt to taste Smoked Paprika to taste Black Pepper to taste Optional Garnish Fresh Herbs Your favorite cheese Preparation Preheat your grill (I use a gas grill) to medium high heat. Toss all your chopped vegetables in a large bowl with enough oil and balsamic for an even thin coating. Put them in your grill basket. Grill with the lid closed for about 15-20 minutes until the veggies are slightly charred and cooked to your liking. Toss every few minutes to ensure that they are not burning and they cook on all sides. Notes Grilled vegetables are more a cooking method than anything that would require precise measurements. Feel free to experiment will all kinds of veggies. Just be sure to watch closely, denser ones will take longer to cook. If you find certain ones are quick grillers, then prepare your selections in batches. Chop vegetables so they are relatively similar sizes. Experiment with seasonings and sauces for different flavor combinations. Use whatever you have on hand. Zucchini, asparagus, bell pepper, squash, etc. would be great too.

What Is a “Pinched” Nerve?

The term, “pinched” nerve is really a misnomer. To understand why, you need to know about “motion segments” in the spine. A “motion segment” is made up of two adjacent vertebrae (bones), the disc that acts as a “shock absorber” between them, and the muscles and ligaments that keep them together. Nerves that carry communication signals between the brain and the body exit the spinal cord from each motion segment. If either vertebra in a motion segment is out of place, or turned even slightly from its proper position, pressure can be exerted on the nerve trunk. So… what is commonly referred to as a “pinched” nerve is really a displaced vertebra! What causes a bone in the spinal column to become out of place? Well, displacement can occur as the result of a fall, an accident, an injury, a repetitive movement (heavy lifting on the job), staying in the same position for a long time (working at a computer all day) or sudden twists and stress. Each nerve root is made up of millions of little fibers (like telephone cable) that leave each side of the spinal column, above and below each vertebra. When a vertebra moves out of its normal position, even slightly, pressure on a nerve root affects nerve impulses that go out to different parts of the body. The symptoms of vertebral pressure on a nerve root include pain, a burning sensation, tingling or numbness down one side of your body, perhaps in your arm or leg. You might also experience headaches, stomach or intestinal problems, sciatica, a stiff neck, insomnia, asthma, allergies, or any number of illnesses as a result of nerve interference caused by the displaced vertebra. Chiropractors are trained to identify these areas of “displacement,” which we call subluxations. Once we locate the misplaced bone, we move it back into place using a very specific adjustment. This takes the pressure off the affected nerves, so that they can re-establish proper communication throughout the body, allowing health and healing to take place. Falls, accidents, injuries and heavy lifting can all cause bones in the spinal column to become displaced, resulting in what’s commonly – and incorrectly – known as a “pinched nerve.”

My Hot Valentine Blondies Ingredients:

8 tbsp. unsalted butter, melted 1/2 c. packed light-brown sugar 1/3 c. granulated sugar 1 large egg 1 tsp. pure vanilla extract 1 c. all-purpose flour 1 tsp. salt

Directions: Preheat oven to 350 degrees. Grease an 8-inch square baking pan with butter; line pan with a piece of parchment paper, leaving a 2-inch overhang on two sides. Butter paper. In a large bowl, whisk butter and sugars together until smooth. Whisk in egg and vanilla. Add flour and salt; mix just until moistened. Fold in 1/2 c. each white chocolate chips and red hots. Transfer

Love is Respect has identified many different types of behaviors that happen in relationships and asked their National Youth Advisory Board to rank how healthy or unhealthy they feel that behavior is. things to keep in mind: In healthy relationships, partners have an open line of communication and talk freely about their problems. They are respectful of what each other has to say and value each other for who they are. They are honest and can develop and maintain trust, but they are able to keep personal things to themselves. Both partners have a say in how things go in the relationship and make decisions together, especially those regarding sex. Healthy couples spend time together, but also enjoy spending time apart. In unhealthy relationships, partners have trouble communicating and often fight when they try to talk about problems. They may just avoid talking about problems completely. Partners are disrespectful to each other, untrusting of each other and often tell lies. Couples sometimes feel crowded or notice that they are spending all of their time with each other and little time with their friends. In unhealthy relationships, partners may pressure each other into having sex. An important note — unhealthy relationships are NOT necessarily abusive. In abusive relationships, the abusive partner communicates in a way that is hurtful or insulting. They aim to have power and control over their partner. Signs of abusive relationships include if one person denies abusive behaviors, intimidates them or isolates them. Abusive partners may force their partner to engage in sexual behaviors. Dating Abuse Statistics (www.loveisrespect.org) Young adult dating violence is a big problem, affecting youth in every community across the nation. Learn the facts below. Too Common • Nearly 1.5 million high school students nationwide experience physical abuse from a dating partner in a single year. • One in three adolescents in the U.S. is a victim of physical, sexual, emotional or verbal abuse from a dating partner, a figure that far exceeds rates of other types of youth violence.

•N ew Hampshire is the only state where the law specifically allows a minor of any age to apply for a protection order; more than half of states do not specify the minimum age of a petitioner. • Currently only one juvenile domestic violence court in the country focuses exclusively on teen dating violence

Lack of Awareness • Only 33% of teens who were in a violent relationship ever told anyone about the abuse. • Eighty one percent of parents believe teen dating violence is not an issue or admit they don’t know if it’s an issue.

• One in 10 high school students has been purposefully hit, slapped or physically hurt by a boyfriend or girlfriend.

• A teen’s confusion about the law and their desire for confidentiality are two of the most significant barriers stopping young victims of abuse from seeking help.

• One quarter of high school girls have been victims of physical or sexual abuse.

1. A sk your school nurse or Principal to make dating abuse brochures and quizzes available to students.

• Girls and young women between the ages of 16 and 24 experience the highest rate of intimate partner violence -almost triple the national average. • Violent behavior typically begins between the ages of 12 and 18. • The severity of intimate partner violence is often greater in cases where the pattern of abuse was established in adolescence. • About 72% of eighth and ninth graders are “dating".

Long-lasting Effects • Violent relationships in adolescence can have serious ramifications by putting the victims at higher risk for substance abuse, eating disorders, risky sexual behavior and further domestic violence. • Being physically or sexually abused makes teen girls six times more likely to become pregnant and twice as likely to get a STI. • Half of youth who have been victims of both dating violence and rape attempt suicide, compared to 12.5% of non-abused girls and 5.4% of non-abused boys.

Learn the warning signs and what to say to a friend in an abusive relationship and teach others. 4. • Help fellow students “break the silence” • Promote other ways to deal with anger and conflict resolution • Beware of jokes, movies, TV programs, advertising, and music that are demeaning to women and may promote violence against women What can a friend say and do? ~Listen calmly and take concern seriously. ~Reassure your friend that nobody deserves to be abused.

Dating Violence and the Law • Eight states currently do not include dating relationships in their definition of domestic violence. As a result, young victims of dating abuse often cannot apply for restraining orders.

~ Suggest talking to a trusted adult; a counselor, teacher, family member, and or call a community or national agency for advice.

~Realize the situation will not change overnight.

Safety Pin Bracelet For this months pinterest DIY I will be "grading" a safety pin bracelet, some super cute Valentine's hair for the kiddos, and a quick party decorating tip for any occasion outside. You will need lots of safety pins. The size of the pin is up to you. You can use really large ones for a large cuff or really tiny ones. You will also need some sort of elastic cord and of course beads.

The beads must comfortably fit on the safety pin so choose your pin and then decide on the beads. I like seed beads but, any bead that fits on the pin can be used. Add a bit of texture by mixing your beads. Okay, the tricky part for me was tying the elastic cord, I could never get it to knot so for this reason alone I'm giving this project a C+. Sure, mine turned out cute and all but I could not wear it due to the "tying" issue.

Now for the Party Decor, I saw this outdoor picture of pink balloons on Pinterest, and they seemed to be floating just barely off the ground. Well once I read how easy it was to do, I just knew I had to try it somewhere, and where better than my Daughters 8th Birthday party at the park. All you do is tie helium filled balloons to ribbon and put them in the ground using golf tees. Simple to do and simple to remove when its time to clean up. This DIY is a definite B+. I would have given it an A but if the wind blows the balloons do not have the same affect, and you could have a hard time finding Helium these days. lol

Valentines Day hair for the kids Items Needed: brush, comb, spray bottle, hairspray, 4 rubber, bands, 4 bobby pin, accessories.

Time Requirement: 10 minutes. To begin part hair on left, Then part hair down the center of back to create two sections of hair, Flip each section with a *Topsy-Tail Tool*. If you do not have one, do this by loosening the ponytail. Then create a hole in between the rubber band and head… then push hair from BOTTOM TO TOP through the hole. On a normal flip, you would do it from top to bottom. So be careful and make sure you go from BOTTOM TO TOP on this hairstyle. Starting with the left side, divide ponytail into two sections. Twist each section–make sure you twist each on in opposite directions. The left section you will twist counter clockwise (to the left) and the right section you will twist clockwise (to the right).This will help the hair form a curve like a heart. I also bobby pinned the curve of the heart to help it stand out a little. Bring the ends of the twists together and secure with a rubber band…Repeat these steps on the right side and add bows.
