Calling all authors, artists and other creative types!

Is there a hidden poem or short story in your desk drawer? Have you captured a unique moment in time through photography? Are you particularly proud of a painting, sculpture, piece of jewelry, a ceramic bowl or piece of fabric art you’ve created? If so, it’s time to share your inner artist with your community and ARGENTUM -- Great Basin College’s literary and arts magazine. ARGENTUM is open to any person 18 years or older who attends or works at GBC or who lives in a community served by GBC. “We are always very pleased by the quality of submissions that go before our judging panel,” says Lora Minter, magazine editor. “It’s a lot of fun to see the wealth of creative talent alive and flourishing in our neck of the woods.” The deadline for submissions is March 17, 2014, at 5 p.m. Anyone who writes, draws, takes photos, paints, sculpts, creates jewelry, ceramics, or fabric art is encouraged to submit their work for consideration. Those accepted for inclusion in ARGENTUM will be recognized during an art show at the college in April. All submission details can be found online at www.gbcnv.edu/argentum. Work must be submitted digitally and must include a completed submission form. There are length restrictions for written pieces and specific formatting guidelines for digital submissions. Lincoln Day Dinner ★ February 7 ★

The Elko County Republican Party (ECRP) annual Lincoln Day Dinner on Friday, February 7, will feature a forum during which Nevada Lieutenant Governor candidates Mark Hutchinson and Sue Lowden will make statements and answer questions about their positions, experience, and qualifications for Nevada’s second-highest office. The dinner will be held on Friday, February 7, 2014 at the Elko Boys and Girls Club and will be catered by Luc Gerber of Luciano’s and A Frenchman and A Redneck restaurants. Festivities will begin at 5:30 pm with a VIP reception where attendees will have an opportunity to meet local, state, and federal Republican officials. Attendance at the VIP reception is $25.00 per person. No host cocktails will be served beginning at 6:00 pm at the Elko Boys and Girls Clubs of Elko at 782 Country Club Drive in Elko, followed by dinner at 7:00 pm featuring a prime rib carving station, salmon in basil-lemon sauce, salad, balsamic vegetables, and Parmesan potatoes. Dinner will be followed by the candidate forum, an auction and raffle items. Cost for dinner is $65.00 per person or $500.00 for a table seating eight persons (VIP reception is separate at $25.00 per person). History, tradition, and culture come alive this month at the California Trail Interpretive Centerwith presentations every Saturday and Sunday at 2 p.m. for visitors and local residents. Sunday’s programs will offer activities for children and youth. The programs will be interactive and hands on. Interpreters will present programs about Black pioneers on the California Trail, “Chippin In,”how children were part of the family’s survival during the trip west, and “Seeing the Elephant,” what did this expression mean to the emigrants? Shoshone beading demonstrations and hands on activities for all ages will be held on February 8. A special interactive program for kids, “Whoooo’s There In Nevada?” takes place February 16 with Interpretive Specialist, Kelsey Johnson. The finer points of “Geocaching” will be led by Reggie Jarvis February 23. Recent arrivals in the Trail Center’s store for Christmas and beyond celebrate Nevada’s upcoming 150 years of statehood with flags, books and decals. Trail Center commemorative Christmas ornaments are great presents for those hard to gift people. Many other western themed items are available in the store as well. AND… Everybody loves books. All of the volumes - for big and little kids- have Trail, western history and Nevada subjects. All sales support programs at the Trail Center. The California Trail commemorates important aspects of American history in the 19th century. While the trail helped open the West to

settlement, inspiring romantic movements in art, literature, and cinema that have had a tremendous impact on American culture, it also dramatically affected and impacted Native American cultures, changing their way of life. Owned and operated by the BLM, the California Trail Interpretive Center is on property donated by Maggie Creek ranch established in 1870. The location looks toward the canyon where infamous Hastings Cut-Off joins the main portion of the California Trail. Additional partners in the venture are the City of Elko, Elko County, the state of Nevada and the Southern Nevada Conservancy.

This facility is the result of the hard work and dedication of a number of Elko groups and residents who lobbied for, and were successful, in getting the “California Trail Interpretive Act of 2000” passed through Congress. The stated purpose of this act is “…to provide the public with an interpretive facility devoted to the vital role of trails in the West in the development of the United States.” Experience some of what the pioneers and natives encountered. Understanding the past leads to an understanding of oneself, and a stronger sense of belonging to a community. Visit the California Trail Interpretive Center located on I80, Hunter Exit 292. S trawberry , B anana & P ineapple J ello Ingredients 4C Fresh Strawberry Cleaned and Sliced 4C Banana Peeled and Sliced 4C Pineapple Canned Crushed (Drained) 4 6oz Boxes Strawberry Banana Jello 8 C Hot Water 3C Sour Cream

Use a Glass Rectangle Baking Dish

Instructions Boil Water and add the Jello, stir until it’s completely dissolved. Pull from the heat and add the fruit. Put half of the Fruit Jello mix into the baking dish and refrigerate for about 2hours or until it sets. Leave the other half at room temperature. Once it sets smear a layer of Sour Cream with a spatula. Pour the rest of the Fruit Jello mix on top of the Sour Cream layer and refrigerate until it sets.

Stir-Fry Techniques With the imminent arrival of spring, this is a great time to adopt and develop some stir-fry cooking skills. Make it your "thing" to master this season! Stirfries hold the possibility of endless variety; they're easy to make several times a week while producing very different meals each time. Here are some tricks to cooking hot and fast:

- Cooking over high heat makes things happen quickly. Peel, chop, cut, measure EVERYTHING in the recipe first. This is essential for good stir-fry results and allows all of the ingredients to be at their prime in the finished dish.

- Beginning with the ingredients that take the longest to cook, keep the primary cooking action in the center of the pan that's where it's the hottest. Move the cooked ingredients up the sides and add the next layer to the center of the wok stirring vigorously in that sweet spot.

- When prepping the ingredients, dice, cut, chop, or julienne each ingredient into bite-sized pieces of relatively even sizes. Choose to prepare your ingredients in thin slices or matchsticks so that the heat from the surface can quickly get to the center of the food.

P lan the S equence of E vents - With all of

the ingredients prepped, literally line everything up in the order that it will go into your wok or pan. Some vegetables will take longer to cook than others. For example, beans, peppers, broccoli, asparagus will take longer than sprouts, zucchini, cabbage, or bok choy. S tart H ot, K eep it H ot - Before adding any food to the pan, allow the pan to become hot, add any oil to the pan and allow it to become very hot - about 30 seconds. To test if the pan is ready, flick a minute drop of water in the oil; it should sizzle vigorously. When adding the different layers of ingredients during cooking, allow the pan to return to full heat before adding more ingredients. Start it hot, and always keep it hot! K eep it M oving - Because the pan is very hot, it is essential to keep the food moving while cooking. This is what's behind the technique's name "stir-fry." The surface of the food becomes hot quickly and transfers the heat inward.

C hoosing a W ok

When choosing a wok, there are a few characteristics to consider. The first consideration is what heat source will be used with the wok - gas or electric burners, ceramic top, or induction stovetop. Different woks are specifically made and matched to different heat sources. Shape - Woks have rounded bottoms and either set atop a ring for stability over the burner, or on a specialized burner grate. Obtain a wok ring that best matches your burner's configuration. Other woks have a flatter bottom that sit like a more traditional pan on top of a burner, yet still feature high, concave sides. Â Size - Choose a size of wok that meets your most common cooking requirements. A 12-14-inch wok is usually perfect for home cooking and meals for 2-4 people. Material -Carbon Steel and Cast Iron - Traditionally, woks have been made of carbon steel or cast iron. This type of surface requires seasoning and re-seasoning to prevent


â?ˆ rust and to foster a naturally non-stick environment. Many woks in the West go unused because of the diligence involved in seasoning the pan and keeping it in top-notch condition. In Asian cultures, wok maintenance is not an issue - the wok is used frequently enough that the pan becomes seasoned and stays seasoned with no effort. Material - Nonstick Surfaces - For many of us, a nonstick wok offers just the right amount of practicality and purpose. However, choose a non-stick wok wisely; some nonstick surfaces are not suitable for high temperature cooking. Newer, safer, nonstick surfaces are now available and have been applied in some great new wok styles. With nonstick surfaces, very little oil is required allowing the stir-fry dish to be a healthy preparation. Handle Style - When cooking with high temperatures, handle considerations become an important feature. A long handle with an opposing helper handle works well.

To keep things moving while stir-frying, a good stirring utensil is essential! A good utensil for stir-frying has a long-handle to keep the hand a safe distance from the high temperatures. Traditionally, bamboo or wooden spatulas have been used in wok cookery and still prove a good choice. Many of the newer silicone spatulas also work well at high heat, and have a bit of flexibility allowing them to conform to the curved shape of the pan. S piders

A "spider" is a very good wok tool! The broad basket of this long-handled utensil features an open weave resembling a spider's web. Food scooped with a spider drains very quickly. Beyond pairing it with a wok, a spider is versatile in scooping any food from boiling water, or a handy strainer when draining a pot.

Rice Wine - Most stir-fries in Ms. Chen's cookbook use just a teaspoon or two of rice wine. This mildly flavored wine serves to dissolve the essential flavor oils found in the other ingredients. Such oils are only dissolvable with a bit of alcohol - oil and water won't unleash their flavors. The alcohol will evaporate away, but only after working its extra bit of magic.

Stir-Fry Tips When serving rice with your stir-fry, start it first before starting your prep work. In a microwave, the rice will cook quickly and hold well as you assemble your stir-fry. T ip # 2 : Check out Asian specialty markets for unique ingredients. You'll find a wide selection of many key ingredients and usually at a lower price than the supermarket's specialty food aisle.

Soy Sauce - Like many other foods, special yeast and microorganism fermentation processes turn grain or soybeans into a rich brown liquid that is salty and full of the "fifth taste," umami. There are many variations of soy sauce specific to different regions of the world.

T ip # 3 : Use oil that can tolerate high heat well when stir-frying. Oils with high smoke points (the point at which they begin to burn) include these refined oils: canola oil, safflower oil, peanut oil, soybean oil, and corn oil. Oils with lower smoke points should be avoided in stir-frying; they include olive oil, butter, sesame oil, and many animal fats.

Hoisin Sauce - While "hoisin" means seafood, there is no fish present. This sauce includes water, sugar, soybeans, vinegar, rice, salt, wheat flour, garlic, and chile peppers. The sauce may be used for glazing, dipping, or as a sauce component.

T ip # 4 : If liquid is gathering in the bottom of the pan while stir-frying, this is an indication that the pan is not hot enough or that it is overloaded. The wok or pan should be so hot that any water in the ingredients evaporates quickly while cooking.

Oyster Sauce - This sauce is made from broth leftover from cooking oysters. The broth is greatly reduced from its original state until it becomes a dark, viscous sauce. It does not have a fishy smell or flavor, but is full of rich flavors that complement many stir-fries.

T ip # 5 : When starting a stir-fry, once the pan is hot, drizzle any oil being used around the pan. This will heat the oil faster compared to pouring the oil into one location all at once.

Black Bean Sauce - This sauce is also an essential condiment in many Chinese stir-fries. It is made from fermented black beans that are salty, bitter, and sweet all at once. Garlic and soy sauce are added to form a thick sauce or paste. A little goes a long way with this magical ingredient.

Ginger - This aromatic provides essential flavor to many stir-fry dishes. Peel away the thin brown skin on the nubby surface by scraping it away with a spoon. Buy small, usable quantities. Leftover ginger may be stored in an odor-proof bag or container in the refrigerator or freezer.

T ip # 6 : After washing or cleaning any vegetables, pat them or "spin-dry" them to remove any excess water. This will help reduce any water accumulation during stir-frying. T ip # 7 : To easily slice meats into thin, thin sheets for stir-frying, freeze the meat for 30-45 minutes, or allow frozen meat to partially defrost. Slice the meat across the grain to create naturally tender pieces.


Q & A's Q: What is the difference between light and dark soy sauce? A: Light soy sauce comes from the "first pressing" of the fermented beans. Dark soy sauce is darker, thicker, and aged longer. Light soy sauce is saltier than dark and is used more as a condiment or table seasoning. Dark soy is sweeter due to added molasses and used more in cooking than at the table. Q: In the ingredients list on my soy sauce, I see acid-hydrolyzed vegetable protein. What is this? A: This is a protein form that has been broken down into components through the introduction of water and acid. This ingredient is often used in soy sauces that skip the fermentation step and have garnered the nickname of "cheap man's soy sauce." The dark color in these sauces is not natural, but added caramel coloring. Read the label before buying. Q: How do I season a carbon steel wok? A: Seasoning is easy and an important step for setting up a new wok, or refurbishing an older steel wok. Clean a new wok well to remove any waxy, protective coating from the manufacturer. This will expose the bare metal. Rub heat-tolerant oil into the surfaces of the metal. Facilitate the bonding of the oil to the pan by heating it and rubbing on the inside surface. Allow the pan to cool, then rub away any excess oil. Repeat this process three or four times. Keep the wok in a seasoned state by avoiding detergents and soap when cleaning. Simply wipe the wok clean, rinse with plain water if necessary, and dry immediately and thoroughly.

The beginning chapters of the book focus on setting the stage with succinct and informative discussions of stir-fry technique, equipment, and key ingredients. ❈❈❈ Stir-fried Pork with Asparagus With asparagus season just around the corner, put this stir-fry on your "must-try" list. The hoisin sauce added just a hint of sweetness that complemented the pork perfectly. The seared asparagus concentrated the vegetable's flavor and the pork browned quickly over the high heat. The light covering of sauce exceeded our expectations in taste and flavor. I keep a few individually wrapped boneless pork chops in the freezer for easy last-minute stir-fry dishes like this one. Hoisin sauce lends a delicate sweetness to the dish, which enhances the natural goodness of fresh asparagus.


Serves 3 to 4. 1 pound asparagus 2 T S P s cornstarch 1 T S P C hinese rice wine or dry sherry 1 /2 pound boneless pork chops 1 tbsp dark soy sauce 2 T B S P s hoisin sauce 1 tsp sugar 3 tbsps canola oil 1 garlic clove , sliced

(1) Snap or cut off the tough ends of the asparagus, and if desire, strip off the small leaves on the spear up to 2 inches from the tip. Cut on the diagonal into 2-inch lengths. (2) In a medium bowl, whisk together the cornstarch and wine. Cut the pork into 1/4-inchthick strips the same length as the asparagus. Add to the cornstarch mixture and mix well. In a small bowl, whisk together the soy sauce, hoisin sauce, and sugar. (3) In a wok or stir-fry pan, heat 1 tablespoon of the oil over high heat until hot but not smoking. Test by dipping a piece of asparagus into the oil; it should sizzle. Add the asparagus and stir just until they turn a darker green, about 30 seconds. Add 1/4 cup water, cover the pan, and cook over medium heat, stirring occasionally, until tender, 3 to 5 minutes, depending upon the thickness of the spears. Transfer the asparagus and any liquid to a platter. (4) Add the remaining 2 tablespoons of oil to the same pan and heat over high heat. Add the garlic and stir until the oil is hot and the garlic sizzles. Stir up the pork mixture, add to the pan, and cook, stirring constantly, until the pork is no longer pink, 2 to 3 minutes. Add the soy sauce mixture and stir for about 20 seconds. Return the asparagus to the pan and stir for another 30 seconds or so, until well mixed. Serve immediately.

Another favorite for just about everyone, this easy beef and broccoli dish will become a regular at your

table! We served this stir-fry over rice noodles, which made for a little extra fun. The sauce is based on prepared oyster sauce, but lends no fishy component whatsoever. We purchased double the beef, sliced it all, and froze half in a thin package for a quick supper sometime in the near future! (1) Slice the steak with the grain into long strips about 2 inches wide. Then slice the long pieces against the grain into 1/8-inch thick slices. In a medium bowl, whisk together the soy sauce, cornstarch, wine, and sugar. Add the beef and mix well. (2) Trim and peel the broccoli stalks, Chop the flower heads from the stalks and cut into florets. Slice the peeled stalks into bite-size pieces. (3) In a wok or stir-fry pan, heat 1 tablespoon of the oil over high heat until the oil is hot but not

smoking. Test by dipping a piece of broccoli into the oil; it should sizzle. Add the broccoli and stir constantly for about 30 seconds. Stir in the broth, reduce the heat to medium, and cover the pan. Continue cooking, stirring occasionally, for another minute or two until broccoli is tendercrisp. Remove from the pan and spread out on a plate. Do not pile into a bowl, as the heat generated by the broccoli will overcook the pieces on the bottom.

(1) In a medium bowl, whisk together 1 tablespoon of the soy sauce, the salt, and cornstarch. Add the chicken and mix well. In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, the wine, sugar, vinegar, and sesame oil. (2) In a wok or stir-fry pan, heat the canola oil over medium-heat. Add the chiles and cook, stirring, until the chiles turn dark brown. Add the peppercorns, garlic, scallion lengths, and ginger and stir for a moment or two.

(3) Stir up the chicken mixture and add it to the pan. Cook, stirring briskly, for about 1 minute, then add the soy sauce mixture, the peanuts and the thinly sliced scallions. Turn the heat up to high and cook, stirring, until well mixed, and the chicken is cooked through, about 30 seconds. Remove and discard the chiles and ginger, if desired. Serve immediately. NOTE: You may substitute 1 to 3 teaspoons crushed red pepper for the dried chiles. Add with the peppercorns, garlic, and scallions. NOTE: To toast Sichuan peppercorns, heat the peppercorns in an ungreased skillet over medium heat until the peppercorns are smoking and fragrant. Do not let them burn. Let the peppercorns cool, then grind them in a mortar and pestle or roll with a rolling pin between two pieces of paper. Sift and discard the larger pieces that do not pass through the strainer. Store the powder in a clean, tightly lidded glass jar in a dark, dry place.

From Alaska to Zimbabwe, bird watchers from more than 100 countries are expected to participate Everyone is welcome--from beginning bird watchers to experts. It takes as little as 15 minutes on one day, or you can count for as long as you like each day of the event. It’s free, fun, and easy—and it helps the birds. Once you start watching you will be surprised how many different birds are wintering in our area. Some are year around residents, but others are winter visitors here for our milder weather compared to their far northern breeding grounds. Participants tally the number of individual birds of each species they see during their count period. Watch and count birds in your yard, a nearby park, or around the neighborhood. Then enter these numbers on the GBBC website, www.BirdCount.org. New participants must set up a free GBBC account to submit their checklists. GBBC results by species or subspecies — zoom in for details. Participants may also send in photographs of the birds they see for the GBBC photo contest. A selection of images is posted in the online photo gallery. The information gathered by tens of thousands of volunteers helps track the health of bird populations at a scale that would not otherwise be possible. The GBBC is a joint project of the Cornell Lab of Ornithology and the National Audubon Society with partner Bird Studies Canada. Scientists and bird enthusiasts can learn a lot by knowing where the birds are. Bird populations are dynamic; they are constantly in flux. No single scientist or team of scientists could hope to document and understand the complex distribution and movements of so many species in such a short time over such a large geographical area. Scientists use the GBBC information, along with observations from other citizen-science projects, such as the Christmas Bird Count, Project FeederWatch, and eBird, to get the “big picture” about what is happening to bird populations. The longer these data are collected, the more meaningful they become in helping scientists.

Emotions play a huge role in what we choose to eat. Emotions are not something we usually think of when we make food choices but they’re subconscious deciding factors. This is called primary food. Primary foods are not items that you actually consume; they are factors that influence what you eat. These “primary foods” include: ❤ Emotions

As you may have noticed, when any one of these factors change or are “off”, your diet and nutritional choices may change as well. Cherry Dark Chocolate Fudge

& More Chocolate Cookies! Ingredients: 8 ounces semisweet chocolate, roughly chopped 4 tbsp. unsalted butter 2/3 C. all-purpose flour 1/2 tsp. baking powder 1/2 tsp. salt 2 large eggs 3/4 C. packed light-brown sugar 1 tsp. pure vanilla extract 1 package (12 ounces) semisweet chocolate chunks Directions: Preheat the oven to 350 degrees. Heat chopped chocolate and butter in a microwave safe bowl in 20-second increments, stirring between each, until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt. In a mixing bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks. Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cookies are shiny and crackly yet soft in centers, 12 to 15 minutes. Cool on baking sheets 10 minutes; transfer to a wire rack to cool completely.

Ingredients: 2 1/2 C. white chocolate 7 oz. marshmallow cream 3/4 C. butter 1 C. sugar 3/4 C. heavy cream pinch salt 1 tbsp. cherry flavored gelatin 1/2 C. dried cherries 10 oz. dark chocolate, melted Directions: In large saucepan, melt butter with sugar, add cream and pinch of salt. Bring to a boil over medium high heat. Once boiling, set timer for 5 minutes and add in cherry gelatin. After 5 minutes remove from heat. In mixing bowl, add white chocolate and marshmallow cream. Pour hot mixture over this and beat with a whisk until smooth and creamy (and all chocolate is melted). Fold in dried cherries. Pour in a parchment paper lined 9inch square pan. Pour melted dark chocolate over cherry fudge and refrigerate for 4 hours or overnight. Cut into squares and enjoy!

Lexi’s PUP-sicles Valentine’s Day is a great time to show your loved ones how much you care – including your pets. I speak for all the canine companions out there when I say those extra belly rubs and hikes up in the hills make our day. My feline friends asked me to remind you that those scratches behind the ear are appreciated and they enjoy playing with the lids to your water bottles.

It is really nice of her even though I destroy them faster than she makes them. When she is really crafty she adds an empty water bottle in the sleeve because she knows I love the noise it makes. Instead of sitting on the couch with a pint of ice cream this Valentine’s Day, look to your furry companions that have loved you unconditionally every day. Sweet Potato Chews 1 Large Sweet Potato, washed & dried Preheat oven to 250°F. Line a baking sheet with parchment paper. Cut off one side lengthwise, as close to the edge as possible. Place potato on cut side to stabilize and then cut the rest into 1/3” slices. Place slices on baking sheet and bake for 3 hours (turn them over ½ way thru). Cool completely on a wire rack.

we had a kid! We are lucky to get in a date every month or two! We decided that we would try to have a date night at least twice a month. Since it can be hard to find a sitter, I decided to compile a list of dates you can plan and do at home as well as out on the town, without breaking the bank!
