Ingredients 2 Tablespoons Unsalted Butter 1 Cup Finely Chopped Yellow Onion ½ Cup Finely Chopped Celery ¼ Cup Finely Chopped Red Bell Pepper ¼ Cup Finely Chopped Green Bell Pepper 1 pinch Salt 1 pinch Cayenne 1 Tablespoon Minced Garlic 1 Pound Lobster Meat ¼ Cup Chopped Green Onion 2 Tablespoons Finely Chopped Parsley 1 Tablespoon Lemon Juice 1 Tablespoon Whole Grain Mustard ½ Cup Mayonnaise 1 ½ Cups Dry Fine Bread Crumbs 1 Cup Vegetable Oil ¼ Cup All Purpose Flour 1 Tablespoon Cajun Seasoning 2 Eggs 2 Tablespoons of Water
Directions 1. Melt butter in a small saute pan over medium heat. Add the onion, celery, bell pepper, and garlic. Season with salt and cayenne. Cook until vegetables are soft, about 5 minutes. Cool for 5 minutes. 2. In a mixing bowl, combine Lobster meat, green onions, parsley, mustard, mayonnaise, cooled veggies, and ¾ cups of the bread crumbs. Mix well and divide the mixture into equal size portioned 1-inch patties. 3. In shallow bowls, combine flour with 1 teaspoon of cajun seasoning. In another whisk the egg with the water. In a third bowl, combine the remaining ¾ cups of bread crumbs and 1 teaspoon of the cajun seasoning. 4. Heat the 1 cup of oil to 360 degrees F in a large saute pan. Dredge the cakes first in the flour, tap off any excess, then the egg wash, let excess drip off, then dredge the cakes in the seasoned bread crumbs coating evenly. 5. Lay the cakes, 3 to 4 at a time, in the oil and fry until lightly golden. 4-5 minutes on each side. Garnish with lemon and enjoy with your favorite tartar sauce. FEBRUARY 2015 | EVERYTHINGELKO.COM

Our consciousness is raised this time of year regarding how we might feel better while eating well. So many choices are placed in front of us everyday. Consistently choosing well can frequently be a challenge. But, small choices can accumulate and propel us in the directions we desire. In the coming year, we plan to focus on making positive food choices for something instead of having to make so many negative choices against something. Here are a few shifts that are on our list as we start the year:

• 2 medium russet (baking) potatoes, about 6 ounces each • 3-1/2 cups (16 ounces) cauliflower florets • 1-1/2 cups Swanson 33% less sodium chicken broth* • 1-1/2 cups 1% reduced-fat milk • 1/2 cup light sour cream • 6 tablespoons chopped fresh chives • 3/4 teaspoon kosher salt • Freshly cracked black pepper • 10 tablespoons shredded reduced-fat sharp cheddar cheese • 3 slices center-cut bacon, cooked and crumbled
*Read the label to be sure this product is gluten-free. Pierce the potatoes all over with a fork and microwave on high for 5 minutes. Turn them over and microwave until tender, 3 to 5 minutes longer. (Alternatively, bake at 400°F for 1 hour or until tender.) Let cool. When cool enough to handle, peel and coarsely chop the potatoes. Set a steamer basket in a large pot and fill with about 1 inch of water Bring the water to a boil over high heat. Add the cauliflower, cover, and steam until tender, 5 to 6 minutes. Drain, remove the steamer basket, and return the cauliflower to the pot.
Set the pot over medium heat and add the broth, milk, and potatoes. Bring to a boil. Use an immersion blender to puree the soup until smooth. Add the sour cream, 3 tablespoons of the chives, and season with the salt and black pepper to taste. Reduce the heat to low and cook, stirring occasionally, until thick and creamy, 8 to 10 minutes. Remove the pot from the heat. Ladle the soup into 5 soup bowls. Top each with 2 tablespoons of cheese, and divide the remaining chives and the bacon among them. Serve hot.

Cruciferous vegetables are one of the most potent disease-fighting groups of foods out there. You’ve likely heard all about broccoli’s benefits, but cauliflower offers some health perks, too. The veggie contains glucosinolates, compounds that may have anticancer properties, according to some studies.
Pureeing Tips
You’ve probably heard this already, but it’s true! Once relegated to being the leftovers on the raw veggie tray, cauliflower has gained new life and respect! As a cruciferous vegetable it’s up there on the list of superfoods. When cooked, it mellows into something deceptively rich-tasting. It pairs nicely with potatoes in this soup, (or in mashed potatoes), and reduces the calories without any compromise to taste or flavor.
A smooth, creamy soup is a wonderful presentation. An immersion blender works magic in the soup pot. They’re easy to use directly in the pot without any awkward hot transfers to a blender. While in use, to break any suction that the handheld blender might have, tip it at an angle before lifting. If you like your soups a little chunky, remove a portion prior to pureeing, then add back into the pot as the last step. Use a lid and apply very low heat when reheating thick pureed soups.

For the soup: In a medium nonstick skillet, heat the oil over medium heat. Add the onion and garlic and cook, stirring, until soft, about 3 minutes. Add to the slow-cooker along with the broth, tomato sauce, chipotle in adobo, cilantro, beans, tomatoes, corn, cumin, and oregano. Add the chicken breasts. Cover and cook on low for 4 to 6 hours. Remove the chicken, shred it with two forks, and return it to the slow cooker. For the toppings: To serve, ladle into 6 serving bowls and dividing evenly, top each with 2 tablespoons of cheddar, scallions, cilantro, avocado, and sour cream (if using).

A Little Oil:

If you’re not a fan of the smoky taste of chipotle peppers, you can replace them with other spicy chiles, such as jalapeños or serranos.
This and many soup recipes begin by sautéing onions, garlic, and other aromatics in a little olive oil. As a plant-based oil, olive oil is a healthy choice when used in moderation. Not only does a little oil add to satiety and slower digestion, it also serves to bloom and dissolve flavor compounds that do so only with heat and a little oil. The light sautéing process adds greatly to building big flavor.
Spicy foods satiate appetites. Whether you enjoy mild or off-thecharts quantities of heat, food will taste better when flavored well. Among the many flavor makers in this soup, chipotle peppers in adobo sauce are included. If you’re unfamiliar with this ingredient, chipotles are dried, smoked jalapeno peppers, and adobo sauce is a tangy red sauce. It’s readily available at most grocers in a small can. One cautionary word, these peppers and their sauce are potent – much more than one might guess; a teaspoon or two for this full recipe is about right for us, and we like it hot! Freeze the rest of the can in small, usable portions.
Cheese, Sour Cream, Avocado: These items are not necessarily on the “low calorie” list, but used in moderation, they offer a burst of visual appeal and just enough flavor to satisfy. Avocados, calorically dense, feature monosaturated oils, a healthier type of fat.
This traditional Italian soup receives a makeover in this recipe. It’s a simple soup assembled in about 20 minutes and loaded with nutritious greens and beans. Beginning with an aromatic base of sautéed onions, this brothbased soup develops character with the addition of greens, cannellini beans, and a customary dose of soup pasta. Flavors build as each layer is added. The result is a delicious soup that you’ll love for lunch or supper. It tastes good, and you’ll feel good after eating it!

ITALIAN ESCAROLE AND WHITE BEAN SOUP
Italian Escarole and White Bean Soup Serves 6 I love the old-world, rustic flavors of this hearty soup. Credit for this recipe goes to my friend Julia her parents emigrated from Sicily to America, and cooking is in her veins. Italians are known for feeding large families on tight budgets with peasant dishes such as this, and beans were often used because they are inexpensive, filling, and nutritious. This dish takes about 20 minutes to make, start to finish. Leftovers are great for lunch. • 10 ounces ditalini pasta (use brown rice pasta for gluten-free) • Kosher salt • 1 teaspoon olive oil • 1 medium onion, chopped • 8 cups (64 ounces) Swanson’s 33% less sodium chicken or vegetable broth* • 1 (15-oz) can cannellini beans* rinsed and drained • Freshly cracked black pepper • 1 head escarole, leaves washed and torn • Freshly grated Parmigiano-Reggiano cheese, for serving (optional)
*Read the label to be sure this product is gluten-free. Cook the pasta to al dente in a pot of salted boiling water according to package directions. Drain and set aside. Heat a large nonstick pot over medium heat. When hot, add the oil and onion and cook, stirring, until golden, 3 to 4 minutes. Add the broth and beans and bring to a boil. Season with black pepper to taste, and then add the escarole. Cook until the escarole wilts, about 15 minutes. To serve divide the cooked pasta among 6 serving bowls. Ladle the soup over the pasta, sprinkle with Parmesan, if desired, and serve.

If cooking at home more is key to your healthier eating plan, a prepped pantry can be a lifesaver on busy days. Keep frozen greens in your freezer, the rest of the ingredients on the shelf, and in minutes, this fabulous soup can be ready.
Substitute any number of leafy greens if escarole is unavailable. We used kale in our version, and found it to be a great way to incorporate this superfood into our menu. Kale, while wonderful raw in salads, becomes ultimately palatable when wilted such as in this soup. Spinach would also be a good substitute choice for this recipe.
We so enjoy pasta, that when a regimen eliminates it, life feels compromised. This soup is proof that a little pasta can go a long way toward satisfaction. The recipe calls for the pasta to be cooked separately from the soup, a great idea for keeping pasta toothsome and not mushy.
COOKBOOK REVIEW Over the years, we’ve made the rounds of dozens of “healthier eating” cookbooks. Why would we be interested in another one? Because, fresh ideas and recipes are always necessary for staying on course. Originating in the blogosphere, Ms. Homolka strives to present recipes that have big flavor, while reducing caloric overhead. She has accomplished her goal well throughout this cookbook. She understands, first hand, that “diet foods” can be boring, and therefore, ultimately unsuccessful. By focusing on taste, everyday

food can be healthful, interesting, and enjoyable. The recipes focus on fresh ingredients, a basic of big flavor cooking. Each entry is very doable and accessible for busy lifestyles. The emphasis is on plant-based eating, though in some recipes she includes meat and other favorites such as cheese and pasta, but in sensible quantities. To us, this is realistic eating in a healthy direction. We’re so glad we found this book and are looking forward to cooking our way through its pages.

One box of Fruit Roll-Ups Permanent Marker Parchment paper (do not use regular paper or it will stick to the treat) One 2” round cookie cutter DIRECTIONS:
Write a message with a permanent ink marker on parchment paper. Unroll one Fruit Roll-Up (any flavor you prefer and cut into four squares. Stack the four squares on top of each other and cut with the 2” round cookie cutter. Place message in the center of the stacked circles and fold in half, like a taco. Grab the corners and crease in the middle, pinching to form the fortune cookie shape. Pinch the shape together in the middle until it sticks and stays folded. Pass them out to your Valentine’s! You can also place them in a bag and tie with ribbon!

Pinch stevia OR an additional Tbsp. sugar 2-3 tsp. coconut oil or vegetable oil 3 Tbsp. milk of choice, regular, almond, coconut 1/2 tsp. pure vanilla extract DIRECTIONS:
Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Either microwave 30-40 seconds OR cook in a 350F oven for about 14 minutes. If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for it to cool before trying to remove it).
DIRECTIONS:
Slice the zucchini very thin. In a medium bowl place the sliced zucchini and add the salt, parmesan cheese, garlic and vinegar and toss to coat. Set a wire rack on a large baking sheet and arrange slices on the baking rack. Place in oven at 275 degrees for approximately 50 minutes. Allow to cool before serving.

Why is it here and not there ? Doesn’t every retailer want to be on the cutting edge? Don’t they see the potential of the new products that we see on TV and the internet? Of course they do and of course they want their piece of the action. It never fails though, when a new item hits the market and builds up speed (nowadays faster than ever due to social media) it takes an act of congress to get it in the door of some of our local stores. Yet, sometimes by then… it has already run out of stock. So we wait…and… we wait! We often read about shopping local and keeping our “mom and pop” businesses going. This doesn’t stop with gift shops and clothing stores. It also applies to everyday needs such as milk, laundry soap and wine! Yes, wine! Independent store owners have the opportunity to be the first to the market with some of the world’s fastest growing wine labels and for that matter, beer and spirits as well. They offer competitive pricing and in some instances, tasting right at that very location! So the next time you can’t find the wine that everyone is talking about, try one of your local and hometown independent retailers. You might find that and so much more!

Even though winter birds do not have their showy breeding colors they still can provide a splash of color to our winter days. Members of the finch family are seen frequently at feeders. It is important to these small seed-eating songbirds to keep your feeders full especially when heavy snow covers their normal food supplies. These birds also need fresh water daily when water sources are frozen.
The House Finch is probably one of the most recognized birds using bird feeders year around in our area. The males typically have a red breast and forehead with brown streaking on the majority of their body. Occasionally you will see variants that appear yellow to orange colored. The females are drab overall with
blurry gray-brown streaks. The Cassin’s Finch is another winter visitor to feeders. At first glance, especially the females appear very similar to the House Finch. The female has much stronger, crisp streaking. The male has a rosier pink color and instead of a band of red
on the forehead, there is a crown which is often raised. Both male and female have a distinct patch of brown on their cheek. The Gray-crowned Rosy Finch and the Black Rosy Finch are high alpine species that flock together during the winter. The Black Rosy Finch are year

21ST ANNUAL FUNDRAISING BANQUET Over twenty years ago, the concept of giving something back to mule deer was a dream of Emmett Burroughs. As Emmett traveled around the country, hunting and filming mule deer, he realized that many of us take this awesome species for granted. Think about what the world was like in 1988. Mule deer had been extremely abundant; right up until the winters of 1983-84. Across the West, the record snowfall lingered long into spring and early summer. Many mule deer and black-tailed deer perished; mostly starving for lack of food covered by snow and from cold temperatures. A few years later, Emmett observed that mule deer populations had not rebounded from this die-off. Many factors contributed to mule deer not coming back; loss of habitat, predators, poaching, highways crossing through the middle of transitional ranges, and subdivisions being built on winter ranges. State wildlife agencies were busy
trying to grow more elk and dealing with endangered species issues. On top of that, funding to state wildlife agencies was in decline. Mule deer management, which had been a staple of most fish and wildlife agencies, was taken for granted. It was as if mule deer, which were at one time ‘the’ premier big game species, were no longer worthy of prominence. Emmett gathered together a few of his close friends and acquaintances and asked them to think back at how much they had taken mule deer for granted. He challenged them with the famous words, “We must give something back to mule deer and black-tailed deer.” In July 1988, the Mule Deer Foundation was incorporated and now is your chance to give back!

around residents of the Great Basin that nest in the alpine tundra of our highest mountains. The Gray-crowned Rosy Finch is a winter visitor that is not known to breed in our area. The storms of winter will force these birds down into lower elevations in search of food. Residences close to the mountains in Spring Creek and Lamoille can be treated to the sight of these colorful mixed flocks visiting their yards during the day. The birds will return to their nighttime roosts in caves, rock crevices and abandoned mines. The Gray-crowned Rosy Finch is dark brownish overall with a gray hind crown and pale rosy feathers on its wings and underbelly. There are two forms seen in our area, the Gray-Cheeked or Hepburn’s has gray which extends to the nape of its neck. The Black Rosy Finch has a black body overall and a gray hind crown. Bristlecone Audubon invites everyone to attend their meeting on February 27, 2015 at 6:30 p.m. in room 208 of the EIT Building at Great Basin College. CARSON CITY, NV – In celebration of America Recycles Day, the Nevada Division of Environmental Protection’s Nevada Recycles program partnered with the Las Vegas Sands Corp. in a statewide recycled art contest to raise awareness of and interest in recycling. More than 100 artists statewide, ranging from students in kindergarten through 12th grade to adults, submitted photos of their artwork composed of recyclable materials. In 2013, Nevada’s recycling rate was 25%. Nevadans (including the tourist population) throw away about 5.7 pounds of trash, per person, per day. That’s about three million tons of trash going to a landfill every year. “It’s exciting that our first statewide recycled art contest attracted such an impressive collection of creative artwork. If you’re like most couples, you’re watching your pennies this year and looking for ways to romance your sweetheart on Valentine’s Day without breaking the bank. The following list will help.

Create an at-home spa day for your mate. Deliver the gift in a basket filled with inexpensive candles, bubble bath, rose petals, facial mask and scrub. Then give your mate time to enjoy it. When he/she is done, heat up towels in the dryer for drying off.
Use a bar of soap to draft a love note on your bathroom mirror. Or, if you shower first, write a love note to your sweetheart in the steam on the mirror. And of course ladies can use their favorite shade of lipstick.

Create a favorite drink together. Try all kinds of ingredients. Enjoy taste-testing. Be sure to record the ingredients, so you can make the “your” drink again on Valentine’s Day year after year. Also a good gift to include is new glasses for this date. Put them up and save them for only Valentine's Day. 3
Does your sweetheart wish to go to Paris or London. Take her to a local bakery that has similar coffee, teas or pastries that one could find in those cities. Share the scrumptious dessert and latté together. 4
Guys or Gals…When you make that special dinner…Just like when you go to a fancy event and a “dinner menu” is put on each plate describing each food item, do something similar. For example, on your menu, write “Spaghetti & Meatballs, made with passion to be with YOU.” Don’t forget to give your “event” or “restaurant” a name at the top of the menu.

Plan a scavenger hunt. Write clues and place them in envelopes, and place the envelopes around town. Make the final clue a doozey of a destination. 7

Jot down some meaningful words on a piece of paper – “Can’t wait to wrap my arms around you tonight!”; “What’s for ‘dessert’?”; “You make me happy every day!” – and tuck it in a conspicuous location to be easily discovered during the day. 8
Write “I love you because….” notes and insert them into balloons. Blow up the balloons, and spread the balloons throughout your bedroom for your Valentine to pop and capture each message.

Guys…If you want to cook dinner, remember, she doesn’t care what you make. There are many easy recipes on food web sites that look like you spent hours in the kitchen. Be imaginative and set the table special. Play romantic music softly while you dine. Leave the clean-up until morning! HERE IS A GREAT EASY RECIPECreamy Pesto Shrimp What you will need: - 1 pound linguine pasta - 1/2 Cup butter - 2 Cups Heavy Cream - 1/2 teaspoon ground black pepper - 1 Cup grated Parmesan cheese - 1/3 Cup Pesto - 1 pound fresh large shrimp, peeled and deveined Directions: Bring a large pot of lightly salted water to a boil. Add linguine pasta a boil 8-10 minutes. Drain. In a large skillet melt butter over medium heat. Stir in cream and season with pepper. Cook 6-8 minutes stirring constantly. Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed. Blend in Pesto, and cook 3-5 minutes until thickened. Stir in shrimp and cook until they are pink, about 5 minutes. Serve over hot linguine.
Make chocolate covered strawberries together. Doing this at home allows you to get messy and have as much fun as you can together! EASY RECIPEWhat you will need: - 16 ounces milk chocolate chips - 2 Tablespoons shortening - 1 pound fresh strawberries with leaves - Toothpicks Directions: In a double boiler melt chocolate and shortening, stirring occasionally until smooth. Holding them by toothpicks dip each strawberry into chocolate. Place strawberry on a pan lined with waxed paper. Feel free to get creative with the decorations- Drizzle melted white chocolate Roll in mini chocolate chips Pair this desert with Rose Champagne or Red Zinfandel.
A great wine to pair with this entrée is Pinot Gris. Enjoy

Raul is a founding member of the senior games, and proudly said that his mother visits yearly just to participate. Raul’s gym senior program has been going on 1 year now and is still going strong! He offers the classes all year round. I asked Raul why he chooses to do all that he does and he responded “I feel that that’s what God wants me to do, so that’s why I do it. Why not pass it on?” “I just want to do Gods work and service. He has always provided for me and I want to give back to the community, this is home for me.”
As the saying goes, “You are what you put back in to this world.” And Raul is a giving, caring and faith driven man. It takes dedication and motivation to never give up on your dream, and to build off of that dream. What Raul does is so much more than just having a Gym and running classes/ training, it is giving people the opportunity to positively change their lives for a healthier and brighter future and has made it accessible for all ages.

I’m Tilly the Teacup. I live at the Northeastern Nevada Museum, in a case with lots of other teacups and saucers and teapots and silverware, and other fancy things people used to
We didn’t always live here, in this nice exhibit case at the museum. How did we get to the museum? Each of us has a long story about our lives in the olden days. I’ll tell you about mine. I started out in England, where I was made in a china factory. There was a whole set of us; teacups, saucers, dinner plates, dessert plates, bowls, a teapot, a sugar bowl, and some other pieces. We all matched. We had the same design – a dark red rim around the top with pretty gold stripes below. We were quite different from the other sets made at that time. Most of them had flowers on them. We were so proud that we were

We were carefully packed and put in a crate that was loaded on the ship and we sailed with them to America. From New York, where the ship landed, we went to St. Louis, a city on the Mississippi River in the middle of America. We were unpacked and used for a short while, but our family decided to travel to the West, and again, they

We were quite different from the other sets made at that time. Most of them had flowers on them. We were so proud that we were different from all those flowery dishes.
carefully packed us in a crate and loaded us on a wagon, to travel to Utah. There weren’t nearly as many of us as at first. You see, we were quite fragile and many of us had been broken or lost. There were little children in our family, and they were not as careful with us as they should have been. The journey across the plains was slow and tortuous. Even though the wagon moved slowly behind the plodding oxen, the ground was very rough and bumpy and we were glad we were carefully packed. We finally arrived in Lehi, Utah, and lived there for a few years. They used us only on special occasions, but we kept getting broken, and soon there were not many of us left. One of the little girls in our family, who was only seven years old when we crossed the plains, grew up and married a man who moved his family to Ruby Valley, Nevada. She took me, my saucer, and the sugar bowl with her to her new home. We lived there for many years. After she grew old, her daughter ended up with the three of us. She lovingly cared for us for many years, and then decided we should be where more people could see us, and enjoy how old and still beautiful we were and learn about our world travels. She donated us to the Northeastern Nevada Museum in Elko. We were kept in a safe storage place for many years. Then one day, a great-great granddaughter of the little girl we had crossed the ocean and the plains with, was working at the museum and decided I, and many others like me, should be put out where people could enjoy us. They put together a nice display, with lots beautiful things to looks at. There is fine china and silver and pretty lace things on display. Now every day visitors pass by and look at us, and think how beautiful we still are. We enjoy the attention, and telling visitors about dinnerware’s amazing history.
Most of the other dishes in the exhibit have flowers on them. I still think we’re the prettiest!

Exhibits at the California Trail Center are now complete! Recently, the Center installed its final exhibit telling of emigrants and immigrants who had hopes and dreams of a better life arriving by various transportation means in California. For most gold seekers their destination was Sutter’s Fort and Sacramento. There, they rested up, resupplied and learned of other opportunities in gold country. An international migration was sparked by the California Gold Rush and resulted in the birth of Sacramento and the new state of California. The exhibit includes hands on activities for children. Kids will have the opportunity to learn what a bag of gold could purchase in 1849, and will be able to build their own small log cabins.
