Cowboy Cookie....

Ingredients ½ c. white vinegar

I think everyone can recall the cookie bake-off between Laura Bush and Tipper Gore....well here is the best recipe:

½ c. sugar

Laura Bush’s Texas Govenor’s Mansion Cowboy Cookie Recipe

1 c. oil 2 tbsp. balsamic vinegar 2 small cans of white corn 1 can pinto beans 1 can black-eyed peas 1 can black beans 1 green, red and yellow pepper, chopped ½ medium red onion, chopped cliantro, chopped, to taste

Ingredients 3 c. all-purpose flour 1 tbsp. baking powder 1 tbsp. baking soda 1 tbsp. ground cinnamon 1 tsp. salt 1 1/2 c. butter, at room temperature 1 1/2 c.granulated sugar 1 1/2 c. packed light-brown sugar

Directions

Bring the white vinegar, sugar, oil and balsamic vinegar to a boil and let cool to room temperature. This is the salad dressing.

1 tbsp. vanilla extract

Then drain and rinse all of the canned beans and corn and put in large bowl. Add all fresh ingredients.

3 c. old-fashioned rolled oats

Pour the cooled dressing over the vegetables and stir. You may not need all of the dressing. Refrigerate overnight or at least a few hours for flavors to combine. (picture from www. annieathome.com)

3 c. semisweet chocolate chips 2 c. sweetened flake coconut

Directions Heat oven to 350 degree F. Then mix together the flour, baking powder, baking soda, cinnamon and salt in a bowl. In another bowl, beat butter on medium speed until smooth and creamy. Gradually beat in sugars to combine. Add eggs, one at a time, beating after each. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. Understanding oats.

Kilning

Oats are a grass crop harvested in temperate regions around the world. It’s a crop that’s tolerant of a wide range of growing conditions making them an accessible food source for many. Oats require minimal processing; this, too, makes them a valuable, natural source of good nutrition.

Oats are exposed to heat and moisture treatment to stop enzymatic activity that would otherwise start a breakdown of fats in the grain – a process that stabilizes the oat kernel.

Harvesting Like other grains, oats are harvested by a combine. The straw is used for bedding and some medicinal purposes, while the seeds become food for people and livestock.

Rolling The whole kernel, while softening from kilning, is flattened between two rollers. Flattened oat kernels provide greater surface area for faster absorption of water during cooking.

Frugal food Oats provide great nutritional value at a reasonable price. One serving of oats (1/2 cup) costs about 9 cents. Soluble fiber absorbs water and gives the sensation of fullness for a longer period of time. Good for weight loss situations. The protein content is higher than many grains with 5 grams of protein per half cup of oats. The antioxidant values in oatmeal are said to rival those found in broccoli! Soluble fiber in the diet helps to reduce LDL levels, the “bad� cholesterol, which, in turn, helps to improve our heart health.

BUYING OATS > Steel Cut Oats Steel-cut oats are minimally processed and commonly available. The husked oat kernel is sliced into 2 or 3 pieces. They’re also known as Irish oats, or pinhead oats. Uses: Steel-cut oats may be boiled or steamed for 15-25 minutes or until tender. Advantages: Steel-cut oats present the whole grain advantage of slowed digestion with a glycemic index of 42; a wet preparation is a hearty oatmeal, drier versions can be pilaf-like. Old-Fashioned Rolled Oats Old-fashioned rolled oats are a cupboard staple. Also minimally processed, the whole oat (oat groat) is rolled flat when moistened, then dried for long-term storage. Uses: Rolled oats are the standard form cited in most recipes, and may be used for oatmeal or in any baked good. Advantages: Regular rolled oats have the most versatility for all cooking and baking occasions. They have all of oats’ health benefits including gradual digestion with a glycemic index of 56. Instant Oats Instant or quick oats are cut oat kernels rolled more thinly than standard rolled oats. There’s no nutritional difference between old-fashioned and instant oats. Uses: Instant oats are helpful where the absorption of liquid needs to be fast, or where an easy thickener is needed. Advantages: Instant oats have maximum surface area allowing them to absorb water and cook more quickly. Instant oats “dissolve” faster and have glycemic index of 66.

Five easy ways to make “real” Oatmeal > Oats are easy to enjoy. They cook quickly in hot water or milk. Instant or quick oats are only slightly faster than rolled oats. Rolled oats have more staying power and are our preference in the methods below: For variation, use water, milk, soy milk, almond milk, or experiment with alternative liquids for cooking your oatmeal. 1. Stovetop In a quality, heavy-bottomed saucepan heat water or milk. Bring liquid to a boil, add oats and a pinch of salt. Cook over low heat for 5 minutes while stirring occasionally. Or, once oats are added, remove from heat, cover, and allow to sit for 7 minutes. Stir and serve. 2. Microwave Combine oats, liquid, and a pinch of salt in a microwavable bowl. Cook on high for 2-1/2 to 3 minutes. Stir and serve.

Start with this ratio then adjust to your preferred consistency. 3. Slow cooker Use “steel-cut” oats for this overnight method. Combine 1 cup steel-cut oats with 4 cups of liquid and a pinch of salt. Optionally, add any desired dried fruit or sweeteners. Cook overnight (8 hours) on low. 4. Overnight oats Mix together ½ cup rolled oats with 1 cup of milk, a pinch of salt and any add-ins that you like in a 2 cup lidded container. Place in the refrigerator overnight. The oats will soak up the liquid and become tender.

5. Baked oven oats This is a great method when a crowd needs a hearty breakfast. In a bowl, combine 2 cups rolled oats, 4 cups milk, 2 eggs, 2 teaspoons vanilla, ¼ teaspoon salt, and any desired dried fruit in a 2-quart baking dish. Bake in a 350 F oven for 30-40 minutes or until the center is set. Serve with toppings that guests can customize to their liking.

Making your own granola is very easy and less expensive than boxed varieties. We enjoy granola along with yogurt for the added crunch and flavor that it adds. It’s delicious on top of applesauce, or on a bowl of cut bananas. Eat it out of hand for a snack that has “staying power.� This granola version tastes great with its cinnamon personality and balanced combination of grains and seeds.

Recipe Notes Add any raisins, cranberries, apricots, or other dried fruits after the granola has baked. Dried fruits tend to toast faster than grains and can become overdone during baking. Stir the granola as it bakes, every 10 minutes. Remove the granola after the specified baking time. It may appear still slightly wet, but it will continue to dry as it cools. Purchase just the desired quantities of ingredients at food stores that offer natural foods in bulk bins; this eliminates any leftover components. Store cooled granola in an airtight container to maintain freshness.

This classic granola recipe is full of hearty, earthy, nutty flavors and is simply adorned with a handful of dried cranberries. It comes from Korinn, one of the great original bakers at Flour. Every morning, she brought in a little baggie of granola for her breakfast, and we all begged her to share because it was so delicious. Finally, she brought in the recipe – which came from her mom – so that we could make our own. We tweaked it just a bit, and now we are passing it along to you. My favorite way to enjoy this granola is layered with yogurt and fresh berries.

Mom's Granola 2-1/2 cups (270 grams) old-fashioned rolled oats (not instant or quick cooking)
1-1/2 cups (200 grams) wheat germ
1/2 cup (60 grams) sweetened shredded coconut
3 T sesame seeds
1/3 cup (40 grams) sunflower seeds
1/2 cup (50 grams) chopped walnuts
1/2 cup (50 grams) sliced almonds
2 t ground cinnamon
1 t kosher salt
3/4 cup (150 grams) canola oil 
3/4 cup (255 grams) honey
2 t vanilla extract
1/2 cup (80 grams) dried cranberries

Position a rack in the center of the oven, and heat the oven to 350 degrees F. Line a baking sheet with parchment paper. In a large bowl, combine the oats, wheat germ, coconut, sesame seeds, sunflower seeds, walnuts, almonds, cinnamon, and salt and mix well. In a small bowl, whisk together the oil, honey, and vanilla. Pour the wet ingredients over the dry ingredients and mix thoroughly until the dry ingredients are evenly coated.

Pour the mixture onto the prepared baking sheet and spread in an even layer. Bake for 30 to 35 minutes, or until golden brown. Stir the granola with a spatula or wooden spoon several times during baking to ensure even browning. Let cool completely, then add the cranberries and mix to distribute them evenly. The granola can be stored in an airtight container at room temperature for up to 1 week.

Morning glory” muffins used to be all the rage. They boasted a fiber-rich assortment of ingredients that was supposed to give you a good start to the day. I always liked the idea of them, but I was often disappointed at how heavy and greasy and overly sweet they could be. When I decided to put a morning glory-type muffin on the breakfast menu at Flour, I wanted it to be filled with wholesome, good-for-me ingredients but still be light, moist, and delicious. So, I adjusted the traditional roster of ingredients and then added a few of my own twists to create an updated version. It’s breakfast-on-the-go and the perfect start to a good morning, indeed.

Good Morning Muffins 1/2 cup (40 grams) wheat bran
1/2 cup (120 grams) hot water
1 small zucchini, grated (about 1-1/2 cups packed/200 grams)
1/2 cup (80 grams) raisins
1/2 cup (50 grams) pecan halves, roughly chopped, toasted
1/2 cup (60 grams) sweetened flaked coconut
1 apple,

peeled, cored, and chopped (about 1 cup/120 grams)
2/3 cups (150 grams) packed light brown sugar
3 eggs
3/4 C (150 grams) canola oil
1 t vanilla extract
1-1/2 C (210 grams) unbleached all-purpose flour
3/4 C (75 grams) oldfashioned rolled oats (not instant or quick

cooking)
2 t baking powder
1/2 t kosher salt
1/2 t ground cinnamon Position a rack in the center of the oven, and heat the oven to 350 degrees F. Butter a standard 12-cup muffin tin, coat with nonstick cooking spray, or line with paper liners.

Good Morning Muffins In a medium bowl, stir together the wheat bran and hot water until the bran is completely moistened. Add the zucchini, raisins, pecans, coconut, and apple and stir until well mixed. Using a stand mixer fitted with the whip attachment, beat together the sugar and eggs on medium speed for 3 to 4 minutes, or until the mixture thickens and lightens. (If you use a handheld mixer, this same step will take 6 to 8 minutes). On low speed, slowly drizzle in the oil and then the vanilla. Don’t pour the oil in all at once. Add it slowly so it has time to incorporate into the eggs and doesn’t deflate the air you have just beaten into the batter. Adding it should take about 1 minute. When the oil and vanilla are incorporated, remove the bowl from the mixer stand. In a medium bowl, stir together the flour, oats, baking powder, salt, and cinnamon until well mixed. Add the flour mixture to the egg mixture and fold carefully just until the dry and wet ingredients are well combined. Then add the bran mixture and fold again just until well combined. Spoon the batter into the prepared muffin cups, dividing it evenly and filling the cups to the rim (almost overflowing). Bake 35 to 45 minutes, or until the muffins are lightly browned on top and spring back when pressed in the middle with a fingertip. Let cool in the pan on a wire rack for 20 minutes, then remove the muffins from the pan. The muffins taste best the day you bake them, but they can be stored in an airtight container at room temperature for up to 3 days. If you keep them for longer than 1 day, refresh them in a 300 degree F oven for 8 to 10 minutes.

How to cook by weight > We like our kitchen countertops clean, unencumbered with stuff, and ready for the next culinary adventure. But, there are two items that are always out and available: the coffee maker and our culinary scale. The coffee maker speaks for itself, but the culinary scale is there for two reasons: 1. Recalibrating Portions It’s a great time of year to recalibrate portions and deal with any holiday extras that may have gathered. Knowing exactly how much food is on your plate is key to understanding and guiding your caloric intake.

by packing in a measuring cup, but did you pack it enough? These dilemmas disappear when you cook by weight. Ounces vs. Grams We always measure in grams – it’s more accurate and matches the Nutrition Facts on food listings. 1 ounce = 28.3495 grams Don’t let those decimal numbers deter you. Round an ounce to 28, or even 30 if that makes things easier.

2. Cooking Efficiently Cooking, especially baking, is easier with a culinary scale at hand. Here’s why:

Speed: Weighing ingredients is faster. Good recipes are written with ingredients listed in the order added. With a scale and one bowl, pour in the ingredient, zero out the scale, pour in the next ingredient.

Accuracy: Weighing ingredients is more accurate than volume-based measuring cups. When baking, a cup of flour means flour that has been fluffed, spooned into a measuring cup and leveled off. How much “fluffing” is correct can be highly variable. Brown sugar is measured

Improved results: With greater accuracy, your kitchen concoctions will immediately improve. Baking is more sensitive to accuracy than other areas of cooking. You’ll love the results!

Oatmeal-Maple Scones I always order oatmeal when I go out for breakfast, and we always have boxes of instant oatmeal, packages of regular rolled oats, and canisters of steel-cut oats in the pantry at home. It’s not that I like oatmeal so much, it’s that, instead, I like all the things I mix into it. I especially enjoy it sweetened with copious amounts of maple syrup. I developed this recipe when I first opened Flour as a way to get that oaty-mapley fix in a scone package. The use of maple syrup as the sweetener in this scone makes the dough extra soft so you can drop these scones onto a baking sheet, rather than patting out the dough and cutting the scones with a knife or cookie cutter. I adore scones made this way. The craggy, uneven tops are browned into crunchy, addictive bits.

1-1/2 cups (210 grams) unbleached all-purpose flour
1-1/4 cups (125 grams) old-fashioned rolled oats (not instant or quick cooking)
1-1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 cup (50 grams) pecan halves, toasted and chopped
1/2 cup (80 grams) golden raisins
1/2 cup (1

stick, 114 grams) cold unsalted butter, cut into 8 to 10 pieces
1/3 cup (80 grams) cold heavy cream
1/2 cup (160 grams) maple syrup
1 cold egg Maple Glaze:
1 cup (140 grams) confectioners’ sugar
3 tablespoons maple syrup
1 to 2 tablespoons water

Position a rack in the center of the oven, and heat the oven to 350 degrees F. Using a stand mixer fitted with the paddle attachment (or a handheld mixer), mix together the flour, oats, baking powder, baking soda, salt, pecans, and raisins on low speed for 10 to 15 seconds, or until combined. Oatmeal-Maple Scones over the top and beat on low speed for about 30 seconds, or until the butter is somewhat broken down and grape-size pieces are still visible. In a small bowl, whisk together the cream, maple syrup, and egg until thoroughly mixed. On low speed, pour the cream mixture into the flour-butter mixture and beat for 20 to 30 seconds, or just until the dough comes together. It will be fairly wet. Remove the bowl form the mixer stand. With a rubber spatula, scrape the bottom and sides of the bowl to ensure that all of the dry ingredients are mixed into the dough. Using a 1/3-cup dry-measuring cup, drop

mounded scoops of the dough onto a baking sheet, forming 8 scones and spacing them 2 to 3 inches apart. (At this point, the unbaked scones can be frozen, tightly wrapped in plastic wrap, for up to 1 week. Proceed as directed, baking directly from the freezer and adding 5 to 10 minutes to the baking time). Bake for about 40 minutes, or until the scones are golden brown on top. Transfer to a wire rack to cool for 30 minutes. To make the maple glaze: While the scones are cooling, in a small bowl, whisk together the confectioners’ sugar, maple syrup, and enough of the water to make a smooth, pourable glaze. You should have about 1/2 cup. (The glaze

can be made ahead and stored in an airtight container at room temperature for up to 1 week). When the scones have cooled for 30 minutes, brush the tops evenly with the maple glaze, then serve. The scones taste best on the day they are baked, but they can be stored in an airtight container at room temperature for up to 3 days. If you keep them for longer than 1 day, refresh them in a 300-degree-F oven for 4 to 5 minutes. Or, you can freeze them, wrapped tightly in plastic wrap, for up to 1 week; reheat, directly from the freezer, in a 300-degree-F oven for 8 to 10 minutes.

In what country on summer Solstice can you watch the sun rise through the entrance to light up the interior of a temple a thousand years older than the pyramids? Malta is the place and June 21, 2014 is the day you can join a limited group of travelers to experience this event that occurs once a year at sunrise. This World Heritage Sites of the Mnajdra and Hagar Qim temples are rich with historical and cultural information. Astronomy and astrology appear to have played a large part in the construction of these megalithic temples. Join veteran group specialist, Sarah Sweetwater for this amazing destination to experience the trip of a lifetime. “Malta is a destination that most people only spend one day off a cruise ship to visit. They miss one of the most interesting cultures in the world. In our 10 day land-based tour we will travel over both Malta and Gozo Islands.” Scheduled for June 16 – 28, 2014 this tour is limited to 16 people. Tickets for both the Solstice at the Temples and the Hypogeum have already been purchased as the number entrance tickets are limited. The Hypogeum of Hal-Saflieni literally meaning "underground" in Greek, is a subterranean structure dating to the 3000-2500 BC phase in Maltese prehistory. Thought to have been originally a sanctuary temple, it became a necropolis in prehistoric times and the remains of more than 7,000 individuals have been found. It is the only known prehistoric underground temple in the world. For those of you who are tired of all the white outside your window, try looking for colorful birds in your own backyard. By putting up a bird feeder you can bring wild birds within easy viewing distance while still remaining inside the warmth of your home. Birding can be a fun and rewarding experience for everyone in the family. It also helps the birds get through the harsh weather we have been experiencing. During the winter it is often difficult for many birds to find food. It is also important to provide daily fresh water for the birds

since their water sources are frozen over. You do not need to get to fancy with your feeding station. Many families enjoy making simple bird feeders to hang in the yard. Pine cones rolled in peanut butter mixed with bird seeds can be hung from the branches of trees. Milk jugs can be hung by the handle after you have cut out a portion of the front to allow the birds’ access to the seeds. Be sure they are thoroughly clean before adding the seed. Many species of birds are ground feeders and all you need to do is sprinkle some seed out in your yard. Try to place your feeders where the birds will have quick access to trees or shrubbery to escape predators. It may take a while for the birds to find your feeders but once they do they will begin to come on a regular basis. Once you start feeding it is best to keep feeding until at least the spring when they can find their own food sources.

• There are also many commercially made bird feeders available in many stores in town. The most popular types are the tube feeders for thistle seed, standard roofed bird feeders which have perches all the way around them, sock feeders and wire cages to hold suet blocks. Many of these same businesses also carry wild bird seed. Often some of these mixed bird seed bags will contain seeds the birds will not eat, making for waste. These also tend to create unwanted grasses come spring and summer.

Most birds in our area will be happy with black oiled or grey striped sunflower seeds. What seeds do germinate are easy to see and pull up or when left alone will provide you with bright sunny flowers in the summer. For the smaller birds, nyger or thistle seed is the best bet. Although it sounds like you are promoting the growth of weeds, these seeds have actually been pre-treated and will not germinate at all! Many of the birds we see in winter are year around residents such as the House Finch, American Goldfinch, Lesser Goldfinch, and Flickers. Eurasian Collared Dove is also present year around. The fun part of bird feeding is attracting birds that are here just for the winter. Some of these birds have come down from higher elevations or from spots much further north to survive the harsh winter. These include Cassin’s finch, Dark-eyed Juncos, Spotted Towhee, White-crowned Sparrows, White-breasted nuthatches, Red-breasted Nuthatches, Mountain Chickadee, Pine Siskins and Cedar Waxwings. In addition to these birds, residents in Spring Creek and Lamoille can attract even more unusual species of birds. Both the Black Rosy Finch and the Graycrowned Rosy Finch visit feeders. Also common at these feeders are Juniper Titmouse, Western Scrub Jay, and Pinyon Jay. For those who would like to learn more about the winter birds in our area, Bristlecone Audubon will have a presentation about winter bird identification at their next meeting on Friday, January 17, 2014. They meet in room 208 in the EIT Building on the Elko campus of Great Basing College.

Every weight-loss journey typically begins with a person walking into a gym. This story is no different. Dana’s journey began January 15, 2013 by walking into Gold’s Gym of Elko, looking for the “$24.99 deal.” At this point in her life she was talking 7 prescribed medications, was boarder-line diabetic and weighed 227lbs. Her diet consisted of mostly fast-food, snacks and 2-3 12oz sodas a day. One evening she was at home with her husband watching television and he suggested she try one of those “miracle pills.” We all know the ones…take this and lose the weight. Dana had had enough. She thought to herself, “No more excuses!”

The next morning she walked into Gold’s with the intention of getting her $24.99 deal and hitting the treadmill with the hope that with a little bit of luck, the weight would disappear. Upon entering, she was met by the owner, Jeff Watson and he took her on a tour of the facility and explained how each machine worked and what she needed to do to get started. They talked about goals and she shared with Jeff that her final goal was to be a size 7/8. Jeff explained why Dana needed a combination of weights and cardio, not just cardio as Dana had intended. He started her with a minute 30 push/pull list of excercises on the cable machines and 20 minutes after the workout on the treadmill. Every morning, she would bring her workout list and complete her workouts on her own. Dana did the workouts as Jeff told her to do and after a month of 4-5 days a week of working out on her

own, Dana signed up to train with Jeff, but only under the condition that he didn’t tell anyone because she didn’t want anyone to know…just in case she failed. Dana had a lot of changes to make to get healthy. Women tend to emotionally eat, she was no different. Habits had to change. One of her worst habits because of the nature of her job (Graveyard shift in a demanding position) she would go 5-6 hours without eating. Then when she did eat, she was filling her body with fast-food and soda. The fast-food eating and soda drinking had to stop. She would have to follow the meal plans, adhere to strict portion control and eat all 5 meals daily. Most importantly, she had to get her butt to the gym if she wanted to see results. This was something she had to work for and she knew if she didn’t do anything, NOTHING was going to change.


Dana had been working with Jeff for about 4 months and a complete stranger walked up to her in Wal-Mart and told her that she looked great and asked her how she had lost so much weight. This was a huge confidence booster for Dana that a complete stranger would recognize her success. Then, she went to work and was surrounded with cookies, cakes and pies. She indulged and then immediately felt guilty. The next day at the gym, she walked in and Jeff could immediately tell that Dana wasn’t herself. “She walked in the room like my daughter that had done something wrong.” Dana told him about the pie and all the cookies and treats. They had a heart-to-heart about turning obstacles into opportunities. Jeff explained to her that sometimes life gets in the way of our goals and living in the age of instant gratification, when we don’t see those results we sometimes get discouraged, but Dana had seen results. She felt them and others noticed them. She was eating better and she was making it to the gym 5 days a week. In addition, she was not taking any of her previous medications. She was achieving her goals and she was progressing in her work-outs. She overcame the cravings and continued on her journey. Jeff was right beside her, pushing and giving her every opportunity to succeed. He took her obstacles and turned them into opportunities for her. He showed and taught her what to do. Dana was losing weight and following her meal plans that had been designed for her. She was preparing her weekly meals and eating them on a schedule and she was meeting with Jeff on her 5 day a week routine. She would have 5 consecutive days of perfect eating and 2 of not-so-perfect days. One afternoon, she and her family were at the Elko Motorcycle Jamboree and Dana literally stopped traffic to show her husband, Jack a box jump that she had been working on at the gym. Her confidence was growing and she was able to share that with her family and they were proud and supportive of her. Then in August, she had a surgery to remove her gall bladder. Mistakenly a metal clip was left in her stomach and immediately following that surgery, Dana hit her plateau. The workouts slowed and the meal plans got a little more relaxed. She and Jeff both knew that together they had to push through this obstacle. Up until this point, Dana had been results driven, she saw the numbers falling from the scale and now she wasn’t

seeing the results she wanted. Jeff explained to her that 90% of all weight loss is mental and if she could overcome the mental aspect, she would overcome this hurdle, just like the ones before. They have done it together and neither one of them could have done it without the other. Dana is continually progressing with her weight loss goals and both she and Jeff know that with focus and dedication that size 7/8 is within her reach. She is progressing in weight and slowly progressing in speed and agility to make her workouts more difficult. This may sound cliché, but Jeff has taught Dana that this is a Journey, not a destination. It takes work and sacrifice. To date Dana has lost 57 lbs with Jeff pushing and challenging her every step of the way. They have a strong bond that is built upon trust and a very mutual respect. It is a personal relationship that most people will never experience in this lifetime. Jeff knows and understands Dana’s vulnerability when it comes to food. She like most women is an emotional eater. “It hurts me when you cheat,” he told her during a recent workout. Jeff loves his job and friends like Dana make it a job he is proud of. Jeff and his wife Mindy have owned Gold’s Gym since October 2007 and they are looking forward to opening their new location in January. How First Call Designated Driving Service got started was a night of Dillon Brannan and John Monahan sitting around talking about their long futures, and working for people who they didn't feel appreciated their hard work. So instead of just going on with their everyday life, they started to brain storm on other ways to make a living. If you make it to the gym for the number of days you set for yourself, reward yourself with something that is worth working for. Just don’t make it a giant blended caramel kiss of death with three shots, extra caramel, whipped cream and chocolate chips… That defeats the purpose. If you must have a treat, make a healthier choice comparable to your desire like a small hot chocolate with nonfat milk. That brings me to the next step:

■ P ortion control: Instead of a large, get a small. You’ll be surprised how quickly your cravings will subside with just a taste instead of a supersized gut bomb that you will regret five minutes after you eat it. If you go out to eat, get a to-go box before you start eating and box half of it to go. That will prevent you from overindulging in the first place. This will be challenging, but it will be worth it! No matter what your goal is for the New Year, make it a healthy one! All good things in life are worth working for, not waiting for. So, commit to a resolution that’s obtainable, reasonable and worth it!

The Affordable Care Act and How it Impacts Nevadans! The Affordable Care Act (ACA) is a complex piece of legislation. Although the law itself remains unpopular in recent polls, its components have proven to be very beneficial to many people. In Nevada, the Silver State Health Insurance Exchange will address the needs of the widest segments of our population through their web portal, Nevada Health Link. The pros and cons of the Medicaid Expansion have been carefully weighed by state officials

and Governor Sandoval has accepted the additional federal funding, making Medicaid coverage for the newly eligible categories effective on January 1st, 2014. A number of components of the ACA have already take effect. Nevada residents with Medicare have saved more than $8,000,000 on their prescription drugs. Preexisting condition exclusions for children are no longer allowed and beginning January 1, 2014 adults with preexisting conditions will have

the same protections under the law, thereby safeguarding thousands of Nevada residents who otherwise would not have been able to receive medical coverage. Approximately 33,000 young adults in the state of Nevada have been able to remain under their parent’s insurance plan since the implementation of this provision. These and many more consumer protections and insurance industry reforms have offered many Nevada consumers real savings. When

First and foremost, we would like to thank the community for their outstanding support of CrossFit Unrested Assurance, also known as The Box. The support from the CrossFit community here in Elko has been tremendous and we truly have the best members that have grown into a great, big family. The year 2013 has been such a growing experience for us here at CrossFit Unrested Assurance, and we would like to share some of the amazing accomplishments of not only the trainers, but our athletes as well. Jay ended up placing 18th out of 214 in his age division and 78th out of 857 overall, with 60 miles completed in 24 hours! We are very proud of Jay Rose’s accomplishment and couldn’t be happier that he is a part of our CrossFit family. We cannot wait to see what else is in store for him in the future. A few more exciting things are happening this upcoming year at CrossFit Unrested Assurance. We are happy to be introducing specialty classes that include CrossFit Endurance, CrossFit Lite, Olympic lifting and an emphasis on Boxing as part of our CrossFit program. New this year, four local restaurants will each sponsor a movie and feature unique or new food items free of charge prior to the movie – a twist on the typical concession stand.

November 22nd through 24th we had the privilege of once again being coached by two of the best in the sport: 1988 Olympic wrestler Ken Chertow and Rulon Gardner, 2000 Olympic gold medalist in Greco-Roman wrestling. This year's camp drew wrestlers from Southern California, Eastern Oregon and Idaho, as well as local wrestlers from Elko, Spring Creek, Carlin, Battle Mountain and West Wendover. What an amazing opportunity for our local wrestlers! Elko Wrestling would like to sincerely thank Port of Subs, Pizza Barn and Smiths for supporting the camp. A huge thank you goes out to Flagview Intermediate School for their unwavering support. Registration for the 2013-14 season brought over 100 wrestlers to the club and the sport of wrestling.

Elko Wrestling is proud to announce Coach Michael Nakamura's success in his international competition. The wrestling season never really stopped for Coach Nakamura. April brought the US Open in Las Vegas where he qualified for the US World team and claimed his All American Status. Training through the summer, Mike traveled to Sarajevo, Bosnia-Herzegovina to compete in the Veterans World championship. With 56 countries represented and over 800 competitors, he faced tough matches to secure a title as World Silver medalist in the Greco-Roman 63kg weight class. Now that winter is here and the snow is falling, it is time to bundle up, get outside and enjoy the many trails, slopes and activities available on your public lands.

The Bureau of Land Management, U.S. Forest Service, Northeastern Nevada Stewardship Group and Cedar Creek Clothing are teaming up to offer three free guided snowshoe hikes this winter. Each will be evening events held under the full moon sky. The first hike is set for Saturday Jan. 18 at the California Trail Interpretive Center. The event will start at 6 p.m. and last approximately two hours. Free rental of snowshoes and poles is available for the first 50 people who register or you can bring your own equipment. There will be three different hiking

— Safety — After talking to my friends at the American Red Cross, I learned a lot about Earthquake Safety that I would like to share with you:

The American Red Cross suggests the following if you are inside when the shaking starts:

• Did you know that we live in a very earthquake prone region that has a lot of seismic activity?

• Drop, cover and hold on. Move as little as possible. If you are in a bed, stay there, curl up and hold on. Protect your head with a pillow.

• Did you know that if you live in a mobile home or a home that is not attached to a foundation that your home is at a particular risk during an earthquake? • Did you know that if the building you are in was built on a landfill or another unstable soil that it is at an increased risk of damage during an earthquake? • Did you know that a doorway is no stronger than any other part of the structure and that during an earthquake you should get under a piece of sturdy furniture to provide some protection from falling objects that can injure you?

• Stay away from windows. • Stay indoors until the shaking stops and you are sure that it is safe to leave. Know that often sprinkler systems and fire alarms go off in buildings during earthquakes, even if there is no fire.

If you are outside when the shaking starts, the American Red Cross suggests: • Find a clear spot and drop to the ground (away from buildings, power lines, trees and streetlights). Stay in that spot until the shaking stops. • If you are in a vehicle, pull over to a clear location and stop. Avoid bridges, over and underpasses and power lines. Keep yourself buckled into your seat. When the shaking stops and you are driving again, be on the lookout for bridges and ramps that may have been damaged.

• If a power line falls on your vehicle, do not get out. Wait for an authority to come and help you.

• If you are in a mountainous area or near unstable slopes or cliffs, remember that landslides are often triggered by earthquakes. Watch out for falling rocks and other dislodged debris.

After an earthquake: • Prepare for potential aftershocks. Aftershocks can occur minutes, days, weeks and even months following an earthquake. In areas of water they can cause tsunami, in mountainous areas they can cause landslides, anywhere they can cause more damage to weakened structures. Each time you feel an aftershock, drop, cover and hold on. • Check yourself and get first aid (if needed) BEFORE helping injured or trapped persons. • Look around for damage and get everyone out of a building if you suspect it is unsafe. • Look for and put out small fires (the most common hazard in an earthquake). • Clean up spilled medications, bleach, gasoline or other flammable liquids immediately. • Should there be a need to open a closet or cupboard door, do it carefully as contents shift during shaking.

So I asked the Red Cross, “Is there anything I can do to be ready in case this happens?” They told me to: • Like a superhero, we should learn the escape routes in our home, schools and places that we spend a lot of time. This way we can make a safe exit when we need to. • We need to really look around the rooms of our homes, workplace and schools. We need to find a safe place near an inside wall (maybe under a sturdy piece of furniture) that we could plan to go to in case of earthquake. We need to avoid being near windows, bookcases or tall furniture. We will need to practice covering our head and neck with our arms. • We can keep a sturdy pair of shoes and a flashlight next to our beds. • Moms and Dads should make sure that water heaters, gas appliances, bookcases, china cabinets, grandfather clocks and other tall furniture are bolted to the wall studs. • Think about those heavy items like pictures or mirrors that hang on walls. If they were to fall, would they injure someone on a bed, sofa, chair, etc.? If they would, perhaps it is time to rearrange the room so they pose no danger. • Mom and Dad may want to brace light fixtures and know where gas valves are located and how to shut them off when needed. A wrench needs to be handy for valve shutoff. • Check your cabinets- are all the heavy items stored on the bottom? Will the latches and bolts hold the cabinet shut during shaking? • Pack an emergency bag with a battery, solar or crank operated radio, your emergency contact’s phone number, extra clothing, medication, supplies and a first aid kit. Keep it in an “easy access” location. • Make sure you have a plan in place for any pets that you may have.
