Ingredients 2 lbs Pork Skin (.5in thick by 2in long strips) 2 c of Water 1 tsp Salt 1 tsp Black Pepper

Instructions Season Pork Skins with Salt and Pepper and place them in a 1gallon Sauce Pot with water. Bring to a boil and cover for about 30min. to render the fat and stir occasionally. When water boils out turn flame to Medium High. Cook until golden brown. Remove and drain on paper towels, serve warm.

We hold to the simple theory that if it tastes good, it will be eaten. That includes healthy foods like vegetables and lean protein sources. So that’s where we’re putting our New Year’s emphasis, on some simple basics where:

Charred Broccolini with Garlic-Caper Sauce Serves 2-3 – Easy Difficulty Total Time:15 minutes – Hands-on Time: 15 minutes It’s hard to believe so much comes from such a simple recipe, but broccolini with just a few ingredients makes for a salty, savory side with bold flavor.

1 tbsp canola, grapeseed, or peanut oil 2 garlic cloves, sliced paper thin 2 tsp salt-packed capers, rinsed 1/4 tbsp red pepper flakes 1 tbsp unsalted butter 1 1/2 lb/550 g broccolini, ends trimmed Pinch of kosher salt Heat the oil in a large frying pan over high heat until wisps come off the surface. Add the garlic, capers, and red pepper flakes and cook just until fragrant, about 30 seconds. Immediately add the butter and cook until melted and slightly browned.

*Pan Roasting 101 This cooking technique is a stovetop style of preparation that is quick and easy, and works well for a number of different foods. Pan roasting utilizes medium-high to high heat for quickly cooking the foods. Like its oven roasting counterpart, it’s a dry style of cooking that uses very little oil and/or very little water.

To Pan Roast: Use a stovetop cooking pan that offers a broad cooking surface and lower sides for easy access when stirring, tossing, or turning the food. Heat the pan and one tablespoon of heattolerant oil over medium-high heat until the oil shimmers in the pan, or sizzles when a micro-drop of water is flicked into the oil. Three Citrus Relish: 1 pink grapefruit 2 blood oranges 2 tangerines 1 shallot, halved lengthwise and sliced paper thin 1 tbsp extra-virgin olive oil 1 tbsp balsamic vinegar 1 tsp honey or agave nectar 1 tbsp thinly sliced fresh basil, chives, mint, or parsley Kosher salt and freshly ground black pepper Pan-Seared Salmon: 4 salmon fillets (each 6 oz/170g) 1 tbsp canola, grapeseed, or peanut oil Kosher salt and freshly ground black pepper

For The Relish: Slice off the tops and bottoms of the grapefruit, blood oranges, and tangerines. Segment the fruit as follows: slice downward, top to bottom, along the curve of the fruit, removing the peel and pith (the white stuff inside the peel) in strips; repeat all around each fruit. For each citrus fruit, cut out the fruit segments with a sharp knife as follows: carefully slip the knife between the fruit membrane and the segment and gently cut until you reach the middle. Hook under the fruit to gently pop out the segment.


Keys to successful pan roasting 1. Use heat-tolerant oils that possess a higher smoke point such as canola, walnut, grapeseed, sunflower, or peanut oils. Olive oil, though always at the ready in our kitchen, has a lower smoke point and may create a smoky kitchen when cooking with mediumhigh to high heat. 2. Use a quality, heavy-bottomed pan that distributes heat evenly. This includes multiply stainless steel sauté pans, cast iron skillets, and enameled cast iron vessels 3. Don’t overcrowd the pan. If the pan is overloaded, the foods will tend to steam instead of roast. Instead, make larger quantities in two batches, or in two different pans. 4. Serve pan-roasted foods immediately when done; there’s deliciousness at the “just done” point that disappears when the food cools.

Combine the shallot, oil, vinegar, honey, herbs, and salt and pepper in a non-reactive bowl and toss to evenly coat. Let set at room temperature for at least 15 minutes before serving. For The Fish: Heat a large heavy-bottomed pan over high heat. (The pan is heated when you place the fish in and it sizzles loudly.) Liberally season the salmon with oil, salt, and pepper. Place the fish, skin-side down, in the hot pan and decrease the heat to medium. Do not move the fillets. Cook until well browned and cooked about three-fourths of the way through, about 3 minutes. Turn the fillets and cook until medium-rare (just barely pink in the center), about 3 minutes more. Serve immediately, topped with the relish.

Soroptimist International of Elko is a service organization for professional women. Their goal is to make a difference for women and children through volunteer community service work. In Elko they are best known for “The Train Park�. They also constructed the awning over the main barbecue pit in the Elko City Park, purchased a module in the Johnny Appleseed Park, donated to Northside Elementary Outdoor Education project and purchased trees for the downtown beautification program. Other


projects include the exam room at the Terraces Elko Senior Center, screen doors for the senior residents of the Woodlands Apartments. This year we are planning a new program for young women in the Elko County area. The Program “Dream It, Be It” is a career guidance program. The goal is to provide the resources they need to pursue their career goals. This will include providing girls with the information on goal setting, pursuing goals and overcoming setbacks. Providing mentors and trusted adults

Ingredients: 1 Medium Banana 1 teaspoon almond extract 2 tablespoons raw almonds 1 tablespoon baking stevia 3 tablespoons pistachios 1/4 cup unsweetened almond milk maple syrup for garnishment Add all ingredients into the blender. Blend on a low speed until the banana is smooth. Don’t fully crush the pistachios and almonds. Place the blended mixture into a dish. Do some tastes test. If you need more almond extract or stevia, stir it in. Cover the dish with foil and freeze for about an hour. You don’t want to leave it in there too long or it’ll be too hard to scoop. If you do happen to leave it in there too long, you can let it defrost in the refrigerator for about twenty minutes. Using an ice scream scooper, place the ice cream on the plate and garnish with almonds, pistachios and maple syrup for extra pizzazz!

Ingredients: 1 Medium Avocado 3 Medium Eggs 1 Cup Whole Wheat Flour 1/2 Cup Unsweetened Cocoa Powder 1/3 Cup Hot Water 1 Tbsp Vanilla Bean Paste or Vanilla Extract 6 OZ Vanilla Yogurt 5 Packets Stevia 3 Tbsp Dark Chocolate Chips 3 Tbsp Honey or Agave (optional) Preheat the oven to 350 Degrees. Add the egg, avocado, and yogurt to a mixing bowl and mix on high until combined. Mix in the vanilla and Stevia. Add the water to the cocoa powder and mix. The consistency should be like icing. If it’s too thick, add water by the tbsp. Mix the chocolate into the yogurt, eggs, and avocados. Mix well. Add the flour to the

mixing bowl and combine. Adding the agave is 100% optional. You could also use honey. Grease a 5x10 baking dish and add batter to it. Spread the batter out evenly. Sprinkle the dark chocolate chips on top. Bake in the oven for 25-30 minutes. Use the toothpick method to check if they are done, they should be nice and firm. Let them cool for about 30 minutes in the refrigerator before cutting into them. You will want to keep these in the refrigerator. The cold air gives the brownies a fudgy texture and brings out the chocolate flavors! Cut the pan into 48 mini bites or 12 large brownies!

Bulleit Bourbon -neat.” Now if you were paying attention, our Wait…what? Is that really how it goes? Women don’t order bourbon. They don’t summon the barkeep for a Rye on the rocks and they surely don’t ask to see the scotch list…right? WRONG! Today thirty-seven percent of the Whisky consumers in the United States are women. That number is on a steady increase due in part to the resurgence of classic craft spirits and bartenders with the “know how” to serve them. Social media has acted as a catalyst for women with similar “spirited” interests and helped to create clubs and chat rooms to review and rate the various styles and taste profiles of whisk(e)ys, bourbons and scotches. And it’s not just American women partaking in the trend. In 2012 Bourbon/Whiskey exports in the United States exceeded $1 billion dollars. The May 16th, 2012 issue of Master of Malt Whisky Blog reports that women make up over fifty-percent of the Whisky market in France and Russia and in emerging markets in Latin America and East Asia. Impressive for countries known

Irish Whiskey in Ireland, Bourbon and Whiskey with an “e” are usually American and Canadians prefer to drop the “e”. So how does one begin her graceful transition into the world of the whiskey drinker you ask? Let’s go back to that barkeep. A songbird that acts like a bird of prey! The loggerhead shrike (Lanius ludovicianus) often sits on low, open perches such as fence posts waiting patiently for its prey. Insects, birds, lizards and small mammals are all part of the shrike’s diet. Small prey such as beetles can be eaten right away. The Loggerhead shrike can kill and carry an animal as large as itself. Small prey is carried in its beak while larger prey is carried in its feet. Lacking the talons of a true raptor this bird has to find a different approach for eating its larger prey. The bird impales these on thorns, sharp branches and often barb wire. This allows the bird to eat its prey without the need to hold on with its much too small claws. Leftover food is often left hanging and eaten later. The nick-name for this bird is the butcher bird.

“Loggerhead” refers to the unusually large size of this bird’s head when compared to the rest of its body. Loggerhead shrikes have a gray stocky body with a large blocky head. Their bill is thick and has a small hook on its end. The gray head contrasts with the wide, black mask, black bill and white throat. The wings and tail are black with white patches on the wings and some white on the outer tail feathers. Their body can range from 8 to 9 inches in length with a wing-span of up to 12 inches. The female loggerhead shrike is smaller and often has faint markings on the breast, slightly browner upperparts, and a less extensive face mask. The juvenile resembles the adult, but is a paler brownish-gray, with fine barring above and below, a browner face mask, a buffy bar on the wing and a pale base to the lower beak The Loggerhead Shrike is found in the Great Basin year around. Where it is a resident they usually live in pairs on

permanent territories. Some pairs will spend the entire year on one territory. This shrike usually builds its nest in a thorny tree or shrub such as a large sagebrush. The female does the majority of the building using sticks, grass and bark strips. The bulky cup like nest is lined with plant fibers, moss, grass and animal hair. Sometimes even paper or cloth have been used. The female incubates from 1 to 9 eggs for about 15 to 17 days. During this time she is fed by the male. Both adults feed the chicks which leave the nest at around 16 to 21 days old. The young shrikes become independent after three to four weeks but have been known to stay with the adults for up to three months.

21st AnnuAl FundrAising BAnquet Over twenty years ago, the concept of giving something back to mule deer was a dream of Emmett Burroughs. As Emmett traveled around the country, hunting and filming mule deer, he realized that many of us take this awesome species for granted. Think about what the world was like in 1988. Mule deer had been extremely abundant; right up until the winters of 1983-84. Across the West, the record snowfall lingered long into spring and early summer. Many mule deer and black-tailed deer perished; mostly starving for lack of food covered by snow and from cold temperatures. A few years later, Emmett observed that mule deer populations had not rebounded from this die-off. Many factors contributed to mule deer not coming back; loss of habitat, predators, poaching, highways crossing through the middle of transitional ranges, and subdivisions being built on winter ranges. State wildlife agencies were busy

trying to grow more elk and dealing with endangered species issues. On top of that, funding to state wildlife agencies was in decline. Mule deer management, which had been a staple of most fish and wildlife agencies, was taken for granted. It was as if mule deer, which were at one time ‘the’ premier big game species, were no longer worthy of prominence. Emmett gathered together a few of his close friends and acquaintances and asked them to think back at how much they had taken mule deer for granted. He challenged them with the famous words, “We must give something back to mule deer and black-tailed deer.” In July 1988, the Mule Deer Foundation was incorporated and now is your chance to give back!

Locals generally dine on tapas while out for a night of drinks. Most bars and restaurants in Andalusia sell tapas. Seafood, often within Paella, is also common in Andalusia. Serrano ham is another regional gastronomic element. The Andalusian highlands have low humidity and cold winters ideal for curing this typical Spanish meat. Tourists will see shanks of serrano ham dangling from the rafters in most taverns and restaurants throughout Andalusia. The ham is cured and then sliced wafer-thin. It can be eaten as is or combined with tapas, cheese or melon. Olives are prevalent in the region and are used in many dishes. The Andalusian city of Seville is famous for its manzanilla olives. This greenish-brown olive grows abundantly in the region's fertile soil and warm climate. Locals enjoy these olives with tapas or in salads and numerous other dishes. Another well-known and commonly eaten food of Andalusia is Gazpacho. Gazpacho is a cold tomato soup with bread crumbs, garlic, olive oil, raw cucumbers and peppers. The people

of Andalusia often serve this refreshing dish in the spring and summer as a lunch starter before the main entree. The north-African roots in Andalusian gastronomy are also evident in the region's kebabs. Cities like Cordoba, Seville and Granada were once Moorish bastions, and numerous kebab shops can be found easily. There are two kinds of kebab. The doner kebab consists of pita bread, vegetables, spices and lamb fresh off the spit. There are also traditional shish kebabs made from lamb and chicken. Andalusian Shish kebabs are simply skewered chunks of meat that have been grilled with a dash of olive oil and spice. My staff and I will miss all of our loyal customers and meeting new friends along the way. We have treasured our time together and being a part of the Downtown Elko family. Over the past 7 years (where did the time go) we have made so many great memories and have been a part of some fantastic events. The first week we opened we were flooded with love and support. We received a garden full of flowers and many notes of encouragement. The people of Elko really let us know they were happy we were here. We could feel the love and support. One of our favorite stories to tell is the first week we were open we had the honor of dressing three generations in one family. This let us know that great fashions and quality products know no age. We have so many more memories from surprise birthday parties, to helping ladies dress their new bodies after weight loss or new babies and gently pushing peoples comfort zone to show them they could put a little trend and sass in their wardrobes and have some fun doing it! Then there were the Wine Walks and other store events; We are a group that loves to have fun, whether we are dressing up as martini girls from the 60’s or making sugar cookies that look like a bikinis for wine walks. If it is not going to be fun why do it? All of our in store events had great turn outs and were so much fun. People had a chance to relax and catch up with friends and if they found a few things to add to their closet even better. I think that people that came into What 2 Wear could tell we were not here to sell them something but to help them find what they needed or wanted. Many times if we did not have something to fit their needs we would send them in the directions we thought they might find it. All of that is part of small town charm. You were our neighbors, family and friends. Our goal was for you to leave a little happier than when you came in. We are going to cherish our memories from the last seven years and hold them close. We humbly say Thank you for all the support you have shown us. We loved how our customers made us part of their lives and they became a part of ours. Small towns are great and Elko is one of the best. In closing I would like to say; I know you have a choice where to shop and spend your money. With our hectic schedules of work, kids, family obligations and everyday life, convenience in shopping has become a priority. If you value that sense of community you get when you walk around downtown please make time to park and pop into your favorite small business and see what is new. Our objective with the Nominate a Good Neighbor campaign was to give recognition where it was deserved. To remind people that although it may feel like everything around us is negative, the small positives outweigh it and everyday people like you choose to brighten the lives of other community members. Along with interviewing and writing our good neighbor article it has taught our office that no small deed goes unnoticed or unappreciated. The little gestures we do every day do matter. From community members constantly volunteering to local teachers, we have heard stories that made us cry, stories that empowered us, stories that made us want to help make a change, and stories that gave us hope. Cowboys at the Museum Our Heroes Have Always Been Cowboys

If you are like most people, you love cowboys and stories about cowboys and pictures of cowboys. You can get your fill when Elko celebrates the National Cowboy Poetry Gathering in January. Every year, in the middle of the winter, cowboys from all over the world get together to talk to each other about all sorts of things. Some of their stories are a little glamorized and romantic, but most of them tell it like it is, and many of them are put into verse or visual form, as in western art.

The best collection of cowboy art in the state is at the Northeastern Nevada Museum. In addition to the museum’s permanent collection of western art, featuring legendry artists of the past, there will be two exhibits of contemporary western photographers.

John spent many of his younger years working on ranches, but then gave it up to pursue a career as an attorney. He eventually discovered a love of photography and with the combination of his early ranching experience and his photography experience, the show, Open Range was born. on loan from Darrell Armuth and Donna Hellwinkel of Reno and will be on display until February 3. The Museum of Modern Art in New York City recently bought one of Adam Jahiel’s photographs to add to their prestigious art collection. That same photo will be one of those on display at the Northeastern Nevada Museum during Cowboy Poetry.

Will James One of the most famous western artist and author of the past century is Will James. The museum is fortunate to have 54 pieces of his original art and a


signed first-edition of each of his 24 books. These were all donated by Don Frazier of Phoenix, Arizona and are in the permanent western art collection of the museum.

John Langmore and Adam Jahiel will both be on hand to visit with attendees at the Art of the West Reception, which will be held on Friday, January 30, from 5:00 to 8:00 p.m. at the museum. There will be a no-host bar, hors d’oeuvres, and western music. Call 738-3418 for more information.

Edward Borein was a contemporary of Will James and is equally well known for his western art. The museum has 10 valuable pieces of his art, donated by the late Jack Rice, who lived in Elko County for many years.

The Great Basin Gear Show The Great Basin Gear Show, sponsored by J.M. Capriola’s and the Elko Convention and Visitors Authority, is also a part of the celebration at the museum. It features western gear – saddles, bits, spurs, braided rawhide, and many other articles, made by well-known western artisans.
