Cowboys at the Museum

Our Heroes Have Always Been Cowboys Who doesn’t like cowboys? Stories about cowboys, pictures of cowboys, hanging out with cowboys. Whatever it is, most people are fans of cowboys. Have no fear, for you can get your fill at the Northeastern Nevada Museum when Elko celebrates the National Cowboy Poetry Gathering this January. Every year, in the middle of winter, cowboys from all over the world get together to talk to each other about all sorts of things. Some of their stories are a little glamorized and romantic, most of them tell it like it is, and many of them are put into verse or visual form, as in western art.

Fast, Easy, Scrumptious

Whole Grain Goodness CONTRIBUTED BY MANDI RATLIFF OF CUCINA FRESCA

We're encouraged to have 3-5 servings of whole grains each day, yet rarely do many of us reach that target. Discovering new ways and more occasions to incorporate whole grains in our lives will result in all kinds of health benefits.

Wholly Grains WHAT IS A WHOLE GRAIN? The benefits of grains arise from their complex structure. Grains of most types are comprised of three parts: the outer hull, the endosperm, and the germ. Choosing grains and grain products with a mix of all three of these grain parts defines “whole grain.” Choosing whole grains means greater nutritional benefits – B vitamins, antioxidants, complex carbohydrates, plant-based protein, and fiber.

QUINOA IS QUICK & NUTRITIOUS. We found this preparation of quinoa especially delicious. The tiny quinoa seeds are steamed for a few minutes while the very flavorful sauce is prepared. The sauce was pesto-like with its base of cilantro and nut pairing of pumpkin seeds. Garlic, a chile, salt, olive oil, and a splash of lime juice charged the flavors further. Finely diced red pepper and scallions finished the dish. Delectable whole grain dining in minutes!

Pumpkin seeds are rich in minerals and complement the already highprotein, high-mineral quinoa.

Mexican Quinoa with Pepitas & Cilantro In a 2-quart pot with a tight-fitting lid, bring the water to a boil. In a medium bowl, rinse the quinoa with warm water, pour off most of the water, then drain in a fine-mesh strainer. When the water boils, add the quinoa and bring it back to a boil. Reduce the heat to the lowest setting, cover, and simmer for 15 minutes. The water should all be absorbed, and small holes should have formed on the surface of the grain. Let stand, covered, for 5 minutes, to finish steaming. In a large sautĂŠ pan over high heat, dry toast the pumpkin seeds. Shaking the pan, move the seeds over the heat until they begin to pop. Remove from the heat and put them into a food processor or blender. Add the cilantro, garlic, jalapeĂąo, salt, and cumin and process, scraping the sides down frequently, until all the ingredients are well minced. Gradually add the olive oil and lime juice, processing until smooth. If serving immediately, stir the cilantro mixture, bell pepper, and scallions into the quinoa while still warm. Otherwise, chill the quinoa and add the remaining ingredients when it is cool.

Tip:

Look for the Whole Grain Stamp as you buy food. This international symbol, sponsored by the Whole Grains Council, identifies the grams of 100% whole grain ingredients per serving in the product.

Fact:

Eating an average of 2-5 servings of whole grain foods each day an lower your risk of cardiovascular disease by almost one-quarter.

Whole Grain Profiles It’s a big world when it comes to grains and finding delicious ways to incorporate more whole grains into your family’s diet. Challenge yourself to vary the whole grains in your kitchen: QUINOA Pronounced “keen’-wah,” or “keen-oh-ah,” the grain is gluten-free, and easily digestible. Of South American origins, this grain is lauded for its high 12-18% protein content, and the completeness of its protein profile. Quinoa cooks quickly by steaming for 10-12 minutes in hot water or stock. It graciously accepts all types of flavors and add-in’s. COUSCOUS Couscous is a preparation of semolina, a type of hard wheat. Cracked pieces of the hard wheat are misted and rolled together forming small, round pellets. The pellets are coated in finely ground flour and dried Couscous is a staple in Mediterranean cultures and comes in different sizes. Choose whole grain varieties of couscous instead of processed couscous.

AMARANTH Tiny and round, amaranth holds a nutritional storehouse. Like quinoa, it has a complete protein profile and is high in calcium. Termed “brown caviar,” the outside remains crunchy while the inside is tender when cooked. Avoid overcooking and drain excess water if necessary. Amaranth is gluten free and may even be popped like popcorn. BUCKWHEAT This up-and-coming grain is really a pseudograin and is related to the rhubarb plant. It has a nutty flavor that is often milled into flour. Roasted, buckwheat is known as kasha. Hulled, they’re called buckwheat groats. They are naturally gluten-free. OATS A breakfast and baking favorite, oats are almost always found in whole grain form. Known for their digestibility, the different forms of oats, (old-fashioned, quick, steel cut, etc.), vary based on the different processing techniques of steaming and flattening.

BARLEY Similar to wheat, barley is a type of grass. The outer covering of barley is inedible, so it is often sold as “hulled” barley. The hulled barley still has a bran sheath encasing its endosperm and kernel. Barley is an able substitute for rice. MILLET Millet seeds are tiny and round and a great substitute for other grains. With origins in China and Eastern Asia, millet has been a valuable food source for thousands of years particularly in dry climates. Millet is gluten-free. BULGAR Bulgar, also spelled “bulghur,” is cracked wheat that has been parboiled and dried. (Cracked wheat differs from bulgur in that it is not pre-cooked). It cooks quickly and has a rich, nutty flavor. It is available in different sizes for customized cooking. BROWN RICE Another grain from the grass family, many types of rice are available. Generally, the shorter the rice, the stickier it is when cooked. Long-grain rice works well in grain salads. It’s estimated that rice provides more than 20% of the calories that all humans ingest!

Pots & Pans 101

Any culinary adventure, including cooking whole grains, is highly dependent on the cooking vessel. A quality pot can make the difference between success, and less than success. We say this not only because we sell a lot of quality cookware, but because we have found it to be true in our own cooking lives. If you haven’t experienced good cookware, you’re in for a treat! The heavy-bottom will conduct heat evenly across the contact surface and up the walls. A tight lid will keep the steam inside the pot doing its work on the grain. Here are a few things to consider when investing in a quality piece of cookware.

Maple-Cinnamon Granola Bars Makes 8 bars

INGREDIENTS 1 cup old-fashioned rolled oats 1/2 cup crisped brown rice cereal 1/4 cup whole wheat flour 1/4 cup brown sugar 1/4 cup soy protein powder or nonfat powdered milk 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1/4 cup peanut butter 1/2 cup maple syrup 1 teaspoon vanilla extract 2 tablespoons canola oil DIRECTIONS Preheat the oven to 350°F. Lightly oil an 8-inch square baking pan. In a large bowl, mix the oats, rice cereal, flour, brown sugar, soy powder, cinnamon, and salt. In a small bowl or food processor, whisk together or process the peanut butter, maple syrup, vanilla, and canola oil until smooth. Stir the wet mixture into the dry one, and use your hands to combine them thoroughly. Scrape the mixture into the prepared pan, and use wet hands to pat it evenly into the pan. Bake for 20 minutes. Using a bench knife or stiff metal spatula, cut into 8 bars by dividing it into 4 one way, then cutting it in half in the other direction. Put the pan back in the oven for 5 minutes. The bars should be golden brown. Let cool completely, then carefully cut the bars apart and separate them from the edges of the pan before removing. Store in a tightly closed tub or bag for up to a week, or freeze for a month.

The New Whole Grains Cookbook By Robin Asbell. Published by Chronicle Books, San Francisco, CA. Copyright 2007. Available at your favorite bookseller! We were looking for a new angle on cooking more with whole grains, and this book came our way at just at the right moment. Whole grains are healthy for us, but we've often felt comprised on taste or texture with our strategy of simply substituting whole grains in traditional recipes. Ms. Asbell has taken a fresh look at whole grain cuisine and expanded it beyond the 1970s stereotypes by appreciating each grain for what it is and calling upon rich global traditions for their preparation. We were introduced to a repertoire of now easily available whole grains that expanded our horizons beyond the usual choices, then enabled with complete instructions on turning them into appetizing dishes. Her offerings range from breakfast to breads, hot and cold sides, soups and entrées, and delicious desserts. Any resistance or objection to cooking and eating whole grains quickly dissipated with this timely collection of recipes. A great handbook for reaching the healthy 3-5 servings of whole grains per day!

DOWN YOUR DRONE AND

HELP PROTECT NEVADA

The Nevada Division of Forestry (NDF) encourages owners of unmanned aircraft systems (UAS), also known as drones, to keep them on the ground during a fire and let firefighters and aircraft work to stop fires as quickly and safely as possible. Due to recent incidents in which drones have interfered with manned aircraft involved in wildland firefighting operations, NDF wants drone owners to understand that flying drones interferes with the protection of lives, property and Nevada’s natural resources. “If they fly, we can’t,”says Nevada Firewarden, Bob Roper. “It’s a major risk to pilots, ground personnel and aircraft. There may also be civil and/or criminal consequences that Nevada operators need to know about.” Often a temporary flight restriction (TFR) is put in place around wildfires to protect firefighting aircraft. No one other than the agencies involved in the firefighting effort can fly

any manned or unmanned aircraft in such a TFR. Anyone who violates a TFR and endangers the safety of manned aircraft could be subject to penalties. Even if there is no TFR, operating a UAS could still pose a hazard to firefighting aircraft and would violate Federal Aviation Regulations. “If you endanger manned aircraft or people on the ground with an unmanned aircraft, you could be liable for a fine ranging from $1,000 to a maximum of $25,000,” said FAA Administrator Michael Huerta. “Know the rules before you fly. If you don’t, serious penalties could be coming your way for jeopardizing these important missions.” More information can be found at: http://knowbeforeyoufly.org. The Nevada Division of Forestry is a division within the Nevada Department of Conservation and Natural Resources. The Division coordinates and manages all forestry, nursery, endangered plant species and watershed resource activities on certain public and private lands. The Division provides protection of life, property and natural resources through fire suppression, prevention programs and provides other emergency services as required.

Crescent Pepperoni Roll-Ups

BUFFALO CHICKEN CUPS PREP: 5 COOK: 40 TOTAL: 45 MINS

INGREDIENTS 1 can refrigerated reduced fat crescent rolls 40 slices turkey pepperoni 4 pieces of Weight Watchers mozzarella string cheese, cut in half garlic powder pizza sauce

INGREDIENTS: 2-3 boneless, skinless chicken breasts 2 Tbsp. olive oil 1/2 tsp. smoked paprika 1/2 tsp. chili powder 24 wonton wrappers 1 Tbsp. butter, melted 3 scallions, sliced thinly 1/2 cup cayenne hot sauce 1/2 cup blue cheese crumbles

INSTRUCTIONS Preheat oven to 375. Unroll crescent rolls and separate into 8 triangles. Place 5 slices of turkey pepperoni on each crescent roll. Top pepperoni with string cheese half and roll up. Sprinkle crescent rolls with garlic powder. Place rolls on baking sheet and bake for 12-15 minutes, or until golden brown. Serve with a side of warm pizza sauce.

DIRECTIONS:

Preheat oven to 350F. Brush chicken breasts with olive oil, and then sprinkle evenly with the smoked paprika and chili powder. Place in a baking dish and cook for 20-30 minutes, or until the center is no longer pink and the juices run clear. Remove chicken and let cool, then shred. Meanwhile, fit a wonton wrapper into each of 24 mini baking cups, pressing the wrappers carefully but firmly into sides of cups. (Be careful to keep the corners of each wonton wrapper open; otherwise you will not be able to fill them!) Bake for 5 minutes or until very lightly browned. Keep wontons in baking cups. In a medium-sized bowl, stir together the melted butter and hot sauce. Add the chicken and stir until well coated. Then fill each wonton cup with a tbsp or two of chicken, and then top with a pinch of blue cheese. Return wonton cups to oven and cook for another 5-10 minutes, or until cheese is soft and melty. Remove and top with sliced scallions, and serve warm. Best served immediately.

BIRD ADAPTATIONS FOR

Winter Survival CONTRIBUTED BY LOIS PORTS FOR THE BRISTLECONE AUDUBON CHAPTER

After the first cold wave most perching birds migrate to southern regions to avoid the lack of food, such as insects, small mammals, and fish. They need to go where lakes and streams stay open all year. By December most of the migrants have left leaving the few species of passerines, raptors, and waterfowl that feed on seeds, shriveled berries, small rodents, and fish in open water areas.

such as hawks and owls don’t have this problem and can survive on less food at lower temperatures. The golden eagle can live on two jackrabbits each week and can survive the cold winds and snow of winter.

Smaller birds may also conserve energy during the long nights of winter by congregating and huddling in hollow trees or brush where they can increase their body heat by 30°F. Like mammals, birds will shiver to generate internal body heat, but at a great cost to their energy supplies. A small bird such as a chickadee has a proportionally larger heart than most birds and must pump warm blood to the brain and blood vessels at a rate of 400 times per minute in the roost and 800 times per minute when flying and feeding during the day.

Winter birds develop 30 to 70% more feathers to withstand the cold. Most of the feathers are down feathers which are close to the skin and contour

Birds such as raptors, gulls, and waterfowl can roost on the ice of lakes and small birds like chickadees can roost in a dense stand of conifers because there is little

Small birds such as house finches, goldfinches, pine siskins, juncos, and chickadees have the disadvantage of having a higher ratio of surface area to body mass. This means that the

smaller winter birds must eat 1 to 3 times their body weight each day to survive. Larger birds

36

feathers which lie over this protective down. During very cold days of -10° to 30°F birds will fluff up their feathers to hold in the warmer air. Some birds, such as waterfowl, gulls, and herons use an oil to cover their feathers and further maintain an insulated body temperature.

fleshy tissue in their legs, typically just bone and ligament. Birds also have what is called a “counter current system in their feet in which the warm arterial blood moves directly over the veins bringing warm blood back into the body. Their solid bills do not have any blood vessels so there is no heat lose there, but birds will perch with their bills beneath their feathers to generate a warmer temperature going into the lungs.

During periods of two to three days of snow storms, small birds are able to slow down their breathing, their heart rate, and their metabolism. During this period they will be in a type of torpor similar to hibernation. But birds cannot store enough fat to last them past two to three days. So if the storm, snow, and cold winds continue they will most likely die. Bristlecone Audubon will meet on Thursday, January 14, 2016 at 7:00 p.m. in Room 208 of the DCIT building (1050 Chilton Circle) on the campus of Great Basin College. Joe Doucette from the Nevada Department of Wildlife will be there with his rehabilitated Greathorned to share his knowledge of owls. Everyone is welcome. CONTRIBUTED BY CLARKE, DOUGLAS R -FS

Our backyard of public lands in Elko County provides many opportunities for winter recreation. These opportunities include SNOWMOBILING, skiing, ice fishing, BIRD WATCHING, sledding and many more. Being prepared for the outdoors in winter will help make your winter activities fun and safe. Here are my top ten items to consider. This is not a complete list and you should do additional research as needed. 1. Dress appropriately. Dress in layers with the right kind of boots, clothes, and outer layers. Being able to add and remove layers as you move about will keep you from overheating or getting too cold. Wool, silk, and fleece clothes are much better than cotton clothes. 2. Make sure your equipment is in order. Depending on your activity be familiar with your equipment and makes sure it is in good working order. Bad equipment that breaks away from home can ruin your trip and leave you stranded in the back country. 3. B ring a survival kit with you. Always carry a small survival kit with you. Include first aid supplies, emergency shelter, matches, flashlight and extra food/ water in this kit. You can add other items as needed such as medication, duct tape, multi-purpose tool, etc.

4. Have plenty of food and water. In winter you need plenty of calories to keep you warm, and you will also need lots of water to keep your body in good condition. Avoid the alcohol and limit your caffeine intake when outdoors too.

6. Watch the weather. Check the weather forecast before you head out and take extra precautions for bad weather or change your plans until the weather improves. 7. Let someone know your plans. Always tell a family member, friend, or neighbor where you are going and when you expect to be back. 8. Know your limits. Whether it is your physical condition, your training, or your skill level try not to push yourself too far. Keeping within your comfort zone will make for a better adventure. 9. Sun protection. Carry and use sunscreen and sunglasses. Sunlight reflecting off the snow can give you an bad sun burn and can hurt your eyes. 10. Make sure your vehicle is ready for winter travel. You need to make sure your vehicle can get you to your destination and back without any troubles. Check all fluids, fill up your gas tank, and make sure you have the right winter tire for your trip.

5. Know your surroundings. Before your trip, do research on the area you are going too. Check into the area, including access, road conditions, snow conditions, and avalanche risks. Get a good map and bring it along also. JANUARY 2016 | EVERYTHINGELKO.COM

PET ADVICE COLUMN

Pet Personals

A New Year's Resolution for your Pet New Year’s resolutions are solutions to make our lives easier, more organized, and more meaningful. We buy gym memberships, organic fruits and veggies, and foreign language books – we set aside money for traveling, for healthy snacks, even to pay off our credit card debt. We organize our finances to match the upcoming year’s expenses. And then Fluffy gets into the Valentine’s Day chocolates…. The emergency fees, IV fluids, hospitalization, and medications all start to add up. And suddenly that Jamaican vacation becomes a fantasy – oh well, you say, there’s always next year. But it doesn’t have to be that way. Here are two tips that will help you take care of your “furbaby” AND take that hunting trip next fall with your nephews.

Pet Insurance

From expensive hunting dogs, to quality cowdogs, to the family bedwarmer, an accident or emergency can cause much agony and grief. Pet insurance is one way to decrease the financial burden of veterinary care. While it seems a bit yuppy to have insurance on your pets, this is one of the fastest growing markets in bringing peace of mind to pet owners. The top three pet insurance companies are Nationwide (previously VPI), Healthy Paws, and TruPanion. Each company is unique in what they can offer, but all do offer a variety of programs to fit a wide variety of pets and their owners’ budgets. You can select your monthly premium based on your combination of coverage plans, deductibles, and percent of reimbursement. Unlike human policies, pet owners have the freedom to pair their finances to the benefits they receive. Also, unlike human policies, there are no preferred providers so you can stay with your regular veterinarian. This is possible because you pay for your veterinary services upfront and submit your receipts (claims) for reimbursement. The insurance company then mails you a check for the amount based on your reimbursement plan. The four basic types of coverage are (1) Emergency (hit by a car), (2) Emergency and Illness (parvo virus), (3) Emergency, Illness, and Routine, and (4) Full Coverage. Depending on the plan, pet owners can be partially or fully reimbursed for emergency care, routine vaccinations, spaying or neutering, or dental work – just to name a few services. Most of pet insurance companies are available for consultation or preapproval 24/7 so you will always know exactly what you will be reimbursed for. However, the downside to these plans is that pre-existing

56

JANUARY 2016 | EVERYTHINGELKO.COM

conditions are not covered – pet owners cannot be reimbursed for old injuries or diseases that are already being managed by a veterinarian. This means the best time to insure your pet is now. Puppies and kittens as young as eight weeks can be insured. This allows for the surgery or medical management for animals predisposed to diabetes, hip dysplasia, kidney and liver disease, and many other diseases that can severely

compromise the quality of life. Pet insurance helps owners to afford expensive, but essential veterinary care without accepting financial hardship.

Savings Account

Setting up a savings account for your pet is an alternative to pet insurance. However, this requires a bit more discipline as you must regularly set aside money into that account and keep it there. That way, when your pets need it, it will be just an ATM machine away.

Loving Hearts caring for Furry Faces

Accidents and emergencies are distressing emotionally, physically, and financially. Pet insurance or an emergency account, are two ways to help relieve the monetary liability. The bottom line is that veterinary expenses are a major factor of pet ownership, and being prepared for the unexpected can make the difference in the quality of life of our beloved animals.

Residential Fire Sprinklers! Put SLEEP on Your To-Do List

TIS THE SEASON FOR RESIDENTIAL FIRE SPRINKLERS! CONTRIBUTED BY JOSHUA CARSO, FIRE MARSHAL, ELKO FIRE DEPARTMENT

The City of Elko Fire Department is pleased to spread safety cheer during the holiday season. This year, safety comes to town in a new way…Residential Fire Sprinklers! Although fire sprinklers are a common loss prevention technology in our commercial buildings, residential fire sprinklers have yet to become mainstream within single family homes in the Elko area…until now! The City of Elko Fire Department and Braemar Construction are pleased to announce the inclusion of the first residential fire sprinkler systems to be installed within the City of Elko within a single family dwelling. The systems were installed by the licensed fire protection contractor Extreme Fire Protection from Reno Nevada. Fire sprinkler contractors are required to be licensed by the Nevada State Contractors Board and the Nevada State Fire Marshal’s Office. Contractors are also required to follow local and state adopted fire codes and installation standards as referenced in NFPA 13D, the installation standard for one and two family dwellings and manufactured homes. The National Fire Protection Association (NFPA) states that eighty (80) percent of all fire deaths occur in the home. The inclusion of residential fire sprinklers in single family dwellings is a reliable life safety and property protection tool to combat and reduce the fire threat and the risk of mortality. The inclusion of a residential fire sprinkler system works to help keep fires small allowing occupants the necessary time for escape and emergency personnel to arrive. The risk of injury or death decreases by approximately eighty percent (80%) when the home is equipped with a residential fire sprinkler system. When coupled with a working smoke alarm, residents have a drastic increase of survivability in a fire event. The key to successfully reducing the risk of injury and death caused by fire in our residential dwellings within the City of Elko and elsewhere, is taking a proactive approach. Through sound education practices, early

warning, early suppression, and quick response by fire service personnel, we as a community, can minimize the effects of a hostile fire. Common myths about residential fire sprinklers often wrongly deter the general public, stakeholders, and policy makers from installing or making residential fire sprinklers a required component of single and one and two family dwellings. The most common misconceptions or false statements are: • Fire sprinklers are just too expensive to install • Fire sprinklers go off accidentally • If one sprinkler goes off, they all go off • Fire sprinklers cause extensive water damage (worse than fire damage) • New homes don’t burn • Smoke alarms provide adequate fire safety There are many resources which provide information to counter these myths and false statements. Proven documentation produced by the National Fire Sprinkler Association (NFSA), NFPA, and the Home Fire Sprinkler Coalition each provide real world studies and information which counter these false accusations. The foremost complaint associated with residential fire sprinklers is cost. The national average, according to NFPA, is $1.30 per square foot. In Northern Nevada, the average cost per square foot climbs up to $2.00 per square foot. During the construction of the Tuscany Townhomes located on Khoury Lane in Elko Nevada, the installed residential fire sprinkler systems produced an average cost of 2.75 per square foot or $6875.00 per unit.

Sleep...

Sleep...

Sleep..

AFTER THE HOLIDAYS,

Do You Need to Put Sleep Back on Your To-Do List? | CONTRIBUTED BY DR. TODD WENDELL OF RUBY MOUNTAIN CHIROPRAC TIC |

Chiropractic care can help you get better sleep so you’ll have more energy to get through your day. With a lengthy to-do list, including shopping, entertaining, and a whirlwind of festivities of the Holidays, sleep sometimes gets shortchanged during this busy season. Here are a few ideas that might help ensure you get the sleep you need to stay refreshed and energized all season long! Eat and Drink to Induce Sleep If sleep is elusive during this busy season, a warm cup of chamomile tea before bed may help induce slumber. Likewise, eating tryptophan-rich turkey before bed might also help. Other natural sleep enhancers include warm milk, nuts, seeds, and bananas. These contain tryptophan and magnesium, which may also induce sleep.

66

JANUARY 2016 | EVERYTHINGELKO.COM

..

Take a Natural Approach While there are numerous over-the-counter sleep aids on the market, taking the natural approach is encouraged as supplements typically don’t have unwanted side effects. Magnesium, GABA and valerian root are often used to promote sleep.

Check Your Bedtime Rituals Just as children are likely to have a bedtime routine; adults can also benefit from having a pre-bed routine. A warm bath about an hour to an hour and a half before bed is relaxing and may enhance sleep. Reading may also calm a busy brain and allow you to ease into a blissful state of sleepiness. Avoiding all electronics, (TV watching, cell phone, computer or tablet use) is advisable as the stimulation from the artificial light can make it difficult to shut down.

Seek Chiropractic Care We encourage you to visit us regularly during this festive season. Because chiropractic aims to reduce nerve interference, your body may function better, and your sleep may improve as a result.

When you experience regular, restorative sleep, you’ll have more energy to tackle the many to-dos of the season and enjoy the festivities in the process!

TWO-WEEK

HEALTHY EATING MEAL PLAN

BREAKFASTS If your house is anything like ours, breakfasts are a whole lot less like the Leave It To Beaver sit-down-at-thetable kind and a lot more like the oh-gosh-I-should-grab-something-quick-before-work kind. So this list is a lot of grab-and-go style breakfasts, with a few weekend-style breakfast thrown in. • Greek Yogurt Bowls with Banana, Berries and Granola—Want to save some cash? Make your own yogurt and your own granola. • Apple Pie Spinach Smoothie, Whole Wheat Toast with Peanut Butter—Adding whole wheat toast with peanut butter is one of my favorite ways to round-out a breakfast with whole grain carbs and healthy fats and protein. Not into toast? Feel free to sub in whole wheat English muffins or bagels. • Herbed Egg and Turkey Cups, Fruit, Whole Wheat Toast with Peanut Butter—These cups hold in the fridge for a while, so feel free to make up a big batch on the weekend and stash them for grab-and-going come Monday.

76

JANUARY 2016 | EVERYTHINGELKO.COM

•W hole Wheat Cottage Cheese Pancakes with Maple Syrup •A pple Cinnamon Slow Cooker Steel Cut Oats—Don’t think you have time for steel cut oats? The slow cooker is your friend. •W hole Wheat Toast with Peanut Butter, Apple Slices and Cinnamon—This one of my favorite grab and go breakfasts! Carbs, protein, and fat—all in a handheld yummy slice of toast. •H eat and Eat Quiche Breakfast Sandwiches, Fruit—Just like the cups, these can be made ahead and stashed in the freezer.

LUNCHES In our house, leftovers are the king of lunch, and you’ll have a lot of leftovers thanks to cooking dinners every night. But I’ve included a few lunch ideas that aren’t leftovers for variety. • Easy Black Bean Quesadillas—A lunchtime staple around here. Plop a whole wheat tortilla in a skillet over medium heat, spread on some salsa, black beans and shredded cheese, top with another tortilla. When the cheese has melted, flip the quesadilla over and cook until crisp. Remove from pan, slice into quarters and serve with salsa, guacamole or sour cream for dipping. If you want, you can make your own tortillas, too (so yum). • Salad in a Jar, Whole Grain Crackers—Use a quart-size jar and some source of protein (chicken, tofu, beans, etc.) for a filling and crazy easy lunchtime salad.

• Curried Chicken Salad over Greens—You’ll see below that we’re roasting a chicken for one of the dinners. You’ll use the leftover chicken meat for this salad. One of our favorites! • Leftovers—Learn to love ’em! You’re going to be cooking 14 different dinners over the course of this two-week plan, you’re bound to have delicious, healthy, ready-to-eat leftovers for lunch. Embrace ’em! Promise me you won’t let all that delicious food go to waste, k?

SNACKS I think snacking is super important to keeping up with a healthy eating plan. Not only does it help keep your blood sugar regulated and your belly from grumbling, but the fact is, snacking is fun! And it’s a fun way to help break up the day. • Ants on a Log—Kids and adults alike love these. Fill celery stalks with peanut butter and top with raisins. Crunchy, creamy and sweet! Plus, the fat and protein in the peanut butter goes a long way to help your belly feel satisfied between meals. • Veggies with Hummus—Dipping carrots, celery, cherry tomatoes, sweet peppers, and cucumbers into hummus is a great way to get in some veggies and some protein. Just watch your hummus portions! Those dips add up fast. I like to measure out an amount of hummus into a bowl instead of dipping straight from the container. You can also make your own hummus and adjust it to be lighter by going easy on the oil. • Peanut Butter Cookie Date Balls—It used to be that dates were a “weird” food only available at health food stores, but I’ve now seen them even at my small town grocery store.

• Fruit—Fruit is the original grab-and-go snack! Make sure you stock up on your favorites at the store. Grab some fresh pears, apples, bananas, clementines, or whatever else fruit looks good to you and reserve it just for snacking. • Sweet and Spicy Roasted Chickpeas—Satisfy that need for a crunchy afternoon snack with these guys. Make up a big batch on the weekend for easy snacking. •A ir-Popped Popcorn—You might be used to salty, buttery movie theatre popcorn, but the plain air-popped stuff is actually flavorful and at only 30 calories per cup, a great filling snack! It’s also crazy cheap. A bag of kernels runs about $2 and will last you forever. Don’t have an air-popper? No worries, just put 1/4 cup of kernels in the bottom of a small brown paper back, fold the top down, lay flat in the microwave and microwave at 100% for 2-4 minutes, or until the popping slows down. HEALTHY EATING DINNERS Alright, up until now, we’ve been repeating recipes, but dinnertime is where we switch it up. Variety is the spice of life! But just because you’re making different dinners almost every night doesn’t mean you have to be stuck in the kitchen for hours and hours. I’ve included lots of quick, weeknight-style dinners that work for even the craziest days plus some slow-cooker meals that take just a few minutes in the morning. You’ll also find a lot of meatless options, because I’m a big fan of keeping meals meatless frequently (it also helps free up some grocery budget to splurge on more expensive free-range, organic meats).

• Slow Cooker Ham ‘n’ Beans with Cheddar Yogurt Cornbread—This is one of my favorite winter meals because it’s delicious and crazy affordable. If time is too crunched to make cornbread, sub in a hunk of crusty whole grain bread. • Wheatberry Cabbage Rolls with Steamed Broccoli— These are a weekend meal, but they make a ton, make awesome leftovers and are incredibly delicious! • Toby Ziegler’s Roasted Chicken with Roasted Root Veggies—Roasting a whole chicken may sound intimidating, but it’s actually a crazy easy one-pot dish. • Penne Rosa with Shrimp with Garden Salad—Feel free to skip the shrimp for a bonus meatless dinner. • Mexican Lentil Stuffed Shells with Garden Salad—Toss some avocado, cilantro and lime juice on the salad for a Mexican twist. • Slow Cooker Lasagna Soup with Salad and Garlic Bread—This is hands-down one of my favorite soups on this blog. So yummy and comforting! • Shrimp and Grits—This recipe is sized to serve one, but you can easily multiply it. • Vegetarian Thai Quinoa Chili—For the ultimate chili experience, serve it topped with chopped cilantro, avocado, shredded cheese, chopped onions and sour cream. Yum! • Open-Face Hummus Tuna Melt with Steamed Broccoli—Tuna melts are total comfort food for me, and with this hummus twist, they stay light and healthy.

78

JANUARY 2016 | EVERYTHINGELKO.COM

• Buffalo Chicken Bites with Sweet Potato Tater Tots— Utensil-free night! Perfect for a Friday night movie night or a game night. • Portabella Cheesesteaks with Roasted Potatoes— An oldie-but-a-goodie! This recipe is still in constant rotation in our house. Make sure you use whole grain buns (whole wheat bread even works) to get the most nutrition. • Black Bean Burgers with Kale Chips and Roasted Potatoes—Not a kale chips fan? No worries, just sub in another green veggie (steamed broccoli, sautéed green beans, etc.). The black bean burger recipe makes quite a few, so freeze up the extras and they’ll be ready for quick lunches and dinners later. • Homemade Pizza with Whole Wheat Crust— Customize this pizza to suit your family’s likes and dislikes. Our favorite combo: pineapple, feta and bacon. Yum! • Leftover Night—If you haven’t used up your leftovers for lunches, now is the time to clear out that fridge. Bring out all the 1/2 cups of this and one serving of that, heat them up and let everyone pick their poison. Today is also a great time to freeze and meals that you have a lot leftover (like say, the black bean burgers or the chili).

TREATS I believe life without chocolate is not a life at all—I make sure to always include treats in my menus. Life is too short to avoid dessert! And treating yourself a little bit everyday with healthier options is a great way to make sure you stay on track and don’t end up bingeing on processed cookies from the store.

• Dark Chocolate Squares—You can buy individually wrapped dark chocolate squares or break a full-sized bar into squares for individual servings. These squares are a great way to add a little bit of a treat to your workday lunch.

• Chocolate Chip Almond Butter Cookies—These cookies have a weird ingredient in them (sucanant), but you can easily sub in brown sugar or cane sugar.

• Banana Soft Serve—I like to eat my banana soft serve straight up, but you can doctor it with peanut butter or cocoa for a really fun treat!

Kellie said, “Judy is my employer, but she’s also the most selfless and giving person on the planet. She has a huge heart for service and is always focused on giving back to the community and helping people in need. She’s also so humble! She is always behind the scenes, in the trenches getting the work done and not out there asking for recognition or a pat on the back. But she deserves so many thanks for her constant hard work and dedication to the Family Resource Center and our community.” Judy and her husband have been married 25 years. They moved to Elko from Pacific Grove, California and have spent almost 16 years in Elko. Judy is the Executive Director of the Family Resource Center. If you are not familiar with exactly what the Family Resource Center is or does, they are a non-profit human social services agency. They work on a case management model which means that each individual seeking assistance is assigned to work with a case manager. These case managers meet with each individual to determine what made the person come to the FRC and what they can assist them with. Case managers can meet with each individual as many times as needed, building a relationship and getting a better view of the person’s current life crisis in order to develop a plan of action to assist in improving their quality of life and help them reach their goals. The Family Resource Center’s ultimate objective

80

JANUARY 2016 | EVERYTHINGELKO.COM

is to help every individual seeking assistance become self-sufficient. They provide them with a safe and secure environment and the tools necessary to develop skills and prevent high crisis situations that they would be unable to deal with without help. The Family Resource Center provides individuals and families assistance by teaching them how to make a simple budget, providing parenting classes, signing up for health care programs, and even providing access to food. The Family Resource Center truly goes above and beyond! They are not always able to help individuals seeking help with things like cash assistance or immediate emergency needs, but in those cases they are able to direct them to someone who can help and are able to stay in contact with them to see that they are getting their needs met. In the last fiscal year the Family Resource Center has assisted 15,763 members of our community!

“It takes a lot of work, but my staff is extraordinary. We are committed to helping people help themselves.” Judy has been the Executive Director for the Family Resource Center for 3 years. She said that her biggest struggle the first year as the Executive Director was updating policies and procedures and training her staff. “It was tough finding the right staff and developing a solid infrastructure.

It took a lot to get everything into place.” Today, Judy commends the Resource Center’s all female team. “We are like a family.” She says her fabulous team not only focuses on helping and improving the quality of life for community members, but they also make sure to back each other up and practice their own self-care in order to do their jobs at the highest level. They have done an amazing job implementing the model Judy put in place. Judy also expressed how grateful she is to have an amazing Board of Directors, not only do they donate their time but they also donate funds annually to help ensure the continued operation and success of the FRC! The Family Resource Center is primarily grant funded, but they do rely on community contributions to help provide for those in need. “If it wasn’t for nonprofits, society could implode. The needs we meet on a daily bases are huge.” Recently the FRC organized the first annual Puppy Love 5k, a fundraiser that allowed people to run or walk a 5K fun run with their dogs, and the response from the community and local sponsors was incredibly enthusiastic. The fundraiser not only raised funds for the FRC, but they were also able to donate $1,800 to the Elko Police Department K-9 unit for a new training suit.

her that much more deserving of being our Good Neighbor. Our community would be lost if we did not have members like Judy. People who get their hands dirty, stick to the grind and don’t feel the need to seek for a nod of approval. Thank you for your service Judy, but most of all thank you for your commitment to make sure every community member has a resource.

You are the epitome of a Good Neighbor.

The Family Resource Center accepts cash and food donations. www.elkofrc.org 331 7th Street 775-753-7352

“I believe my purpose in life is not to be self-satisfied, I become who I am from giving. Life isn’t about me, it is about who I can help, and where I can make a difference. Every day I get to make a difference in someone’s life.” ”I love the difference FRC is making in Nevada. That’s who I am. It’s all about service.” Judy used the term “servant leadership heart” and how important it is to have it, and that her team most certainly does. It is the behind-thescenes people like Judy that don’t always get the consideration they deserve, nor do they search for it. Judy’s only goal is to make sure that the people of Northeastern Nevada have someone to turn to when they are in need. Her humbleness only makes
