Elko County’s premier bicycle club is gearing up for warmer weather and sunny days. If you want to get out and cycle with a great group of people on some scenic and challenging routes, try becoming a member of Elko-Velo. The club hosts time trials every Tuesday at 6:30 p.m. Locations alternate between Lamoille Canyon, West Elko exit and exit 321 (Secret Pass). The courses offer some great views and challenging rides. Come try for a personal record or just to have fun. Elko-Velo’s premier event is the 8th Annual Lamoille Canyon Hill Climb scheduled for August 10. This 3,000-foot climb travels 12 miles to Road’s End. After a refreshing coast downhill, riders are treated to a feast in the Lamoille Grove along with a raffle for some local merchandise thanks to our generous sponsors. The first 75 registrants receive T-shirts and swag bags and there are prizes for 1st place finishers and course record. at the Western Folklife Center In May, the Western Folklife Center began monthly jam sessions and bi-monthly dance nights in the Pioneer Saloon and G Three Bar Theater. These evenings have been lively and fun opportunities to gather together to share music and dancing in a low-key, friendly environment. Jam On!
On a warm spring evening, the Western Folklife Center’s Pioneer Saloon reverberated with the mellow tones of mandolins and fiddles, guitars and lap dulcimers, and even a homemade cigar box guitar. Musicians took turns leading tunes and weaving harmonies to a medley of Appalachian ballads, Western songs, and Celtic tunes. The second Wednesday monthly jam sessions at the Western Folklife Center kicked off with 14 musicians and a couple dozen music lovers. For 29 years, the Western Folklife Center has hosted the National Cowboy Poetry Gathering during the cold days of winter. The fun has often carried on into the night, with skilled musicians jamming together in cafes, fireplace nooks, restaurants, and hotel rooms around town. When local musicians wondered out loud why we should have that much fun only once a year, I asked what they had in mind. The idea for a monthly jam came from local musicians Ken Harriman and Susan Lawrence of the band Southwind, who wanted to see more participatory music in town. “We’re hoping to get more people involved in the music scene in Elko. I know there are musicians out there who have no opportunity to get out and play with someone. We want people to be able to dust off their instruments, learn from each other and have fun,” says Lawrence. The Folklife Center asked Southwind to help lead the jam because they know so much great music, and they’re interested in helping new musicians learn. We hope other musicians will attend and bring their own tunes too, to make this truly a community event. Jams are held every second Wednesday from 6:00 to 8:00 pm, at the Western Folklife Center. Musicians of all levels should bring their fiddles, mandolins, guitars, banjos or other acoustic instruments and join in. We’ll be playing old-time, country, western and Celtic music, with support from Southwind and other community musicians. The bar will be open, and music lovers are invited in to hear some tunes and make new friends. Admission is free.
Let’s Dance! I am a social dance addict, there’s no question about that. When I moved to Elko last year to work at the Western Folklife Center, my first thought on seeing the building’s G Three Bar Theater was, “What a great dance floor!” An idea was born. When I was small, I learned to waltz in the kitchen with my mom. Growing up, I spent weekends and evenings learning dances from around the world. Dancing became my way to express my sense of joy and freedom. But I knew that most people didn’t see it that way. So many people sit on the sidelines when music is playing because they don’t want to look silly. They miss out on the fun. Not to mention that it’s a great way to meet people. (Guys, girls love a man who can dance.) I wanted to get people up and moving by teaching them some moves and giving them the confidence to dance. With the second and fourth Thursday dance events at the Western Folklife Center, you have the opportunity to do that. We will teach couple dances like swing, two-step, waltz and more. We started with swing in May and June, since it’s a very popular dance among young folks right now – and it works to so many kinds of music. Also, a friend told me, “You gotta teach me to swing dance before my friend’s wedding this summer!” In July, we’ll be adding the two-step and a little waltz. After that, I’ll be asking the crowd what they’d like to learn. Let’s Dance is designed to be more than dance classes for beginners. Experienced dancers are invited to show up at 7:00 pm to meet people, share moves, and have a great time. We want this to be a community event that’s low cost and enjoyable. Let’s Dance! is every 2nd and 4th Thursday at the Western Folklife Center. Dance classes start at 6:00 pm, with open dancing from 7:00 to 9:00 pm. The cost is $5 for the lesson, $5 for the dance only, or $8 for both. We also welcome volunteers who can participate for free in exchange for some help.

The Basques, the Indians of Europe Contributed by Joxe Mallea-Olaetxe For many people Elko, Nevada is a showcase of the Old West and its culture. It used to be a cow and sheep town, and now is known as a gold town. Mining and ranching were the early engines in the development of the West, and no wonder many Basques came to Elko to raise sheep. For decades Elko has been a favorite town for many Basques, for those who live there or come to visit its great festivals. But some people may be asking, who are the Basques, anyway? Just as Elko was a Western Shoshone territory many years before it became a ranching hub, there is evidence that the earliest people in Western Europe
were Basques, Euskaldunak (as they call themselves). This was long before there was a Spain, France, or even Europe. Some twenty-five years ago while working on my Ph.D. at the University of Nevada, Reno, I started writing and calling the Basque the “Indians of Europe.” Though the designation may not be the most felicitous, I thought that the American audience would easily and quickly grasp the message I wanted to convey by it. Indeed, everyone I talked with said that they got it. My argument for using the appellation rested on the linguistic and cultural “mystery” surrounding

the origin of the Basques and the fact that their ancestral homeland was at the center of the Paleolithic cave paintings. (Granted that prehistoric paintings are also found in other parts of the world). Much attention was given to the paintings in southwest France and northern Spain, because they were considered the first art work of people like ourselves. The oldest are assumed to be over 30,000 years. The French were happy to believe that the Cro-Magnon people (named after the Cro-Magnon cave) were the ancient artists, but who were the CroMagnon, really? Where had they come from? What language did they speak? These questions remain mostly a mystery. To me the biggest mystery was why French and Spanish, and other European, historians were not connecting the dots. Right in front of their noses, they had a people everyone was calling a “mystery,� the Basques. The Basques occupied roughly the same territory as the Cro-Magnon, albeit a smaller
one. They are racially distinct from the French and the Spanish with the highest incidence of Rhnegative blood in the world, and they still speak a language that has no-known relatives in Spain, France, or the world. The Basque patriarch of prehistory, Jose Miguel Barandiaran, maintained throughout his long career that the Basques were Cro-Magnon, but prominent French and Spanish historians had no comment. A French student learns about the Hallstatt culture and the Gauls as one of the earliest historical people of France, while in Spain a student would read about the Iberians, Celtiberians, and Numancia as the representatives of old Spain. Wedged between France and Spain live the Basques, the oldest people of them all, but there is no mention of them in the textbooks. Even today there is little to be found in the publications sanctioned by the French and Spanish national states. Politics play a large role in this interpretation, or exclusion, attributable to

the fact that the Basques are keen in demanding home rule and Madrid and Paris are not letting go of their antiquated ideas of nationalism and territorial integrity.
been lost. Denying it muddles the waters, because if they had arrived more recently their trail would still be warm. But nobody has ever found that trail...until now, until we were able to read our DNA “book.”
Linguistically and historically scholars designate the Basques as a pre-Indo-European people, that is, they were in the present homeland before the IndoEuropean speakers--Celts, Greeks, Romans, Germans, and so on--appeared in European history. This is a rare consensus about something dealing with Basques. Many scholars also agree that the Basques have lived in situ for a minimum of 5,000 years. But if we go back 10,000 years and ask who else lived there, the answer is nobody else. If we go back even further in time to 30,000-40,000 years ago, we find Neanderthal people living in the wider region.
Geneticist Spencer Wells has been hunting and collecting human DNA all over the world and according to him the Basque DNA marker shows up in Western Europe some 30,000 years ago. He says that this DNA was found earlier in central Asia, where the Burushaski language was spoken. Some linguists find similarities between Burushaski and Euskara (Basque language). (Incidentally, buru means head in Basque.) Today the Basque DNA is found in large parts of Western Europe and the British Islands. The German linguist Theo Vannemann says that the root name of some mountains and rivers all across Europe is Basque.
The simplest explanation is that the Basques have lived in the Pyrenees for a long time, long enough that the trail of their journey from point A to point B has

older concept of nationalism. American Natives held similar views. You do not need an ID card because you either speak the language or you do not. You cannot forge an ID card like this. Therefore, we could very well argue that Euskal Herria was the original name of Europe. Euskal Herria before it was Europe. Who knew? Is it not uncanny that the first two letters of Euskal and Europa (Europe) are the same? There is a strong parallelism between the Native Americans in the United States and Euskaldunak, which means Speakers of the Eusk (Basque) language. Not too long ago, the Indians inhabited this whole country of ours, but the Europeans showed up with a different culture and more lethal weapons and slowly the Natives were pushed into smaller territories and finally into reservations. The same thing happened in Euskal Herria, where Euskaldunak were swarmed
by more numerous people bringing agriculture and speaking Indo-Europeans languages. The Basque native culture was overwhelmed and eventually survived only in the Pyrenean “reservation.” That’s how Old Euskal Herria became Europe. Scholars are astounded by the fact that the Basques have survived so long as a distinct people and culture in a sea of Indo-European speakers. French and Spanish are strong cultures and the Basques, who today only number 3 million, reside in between the two populations. Will the Shoshone language survive in Elko? Will the Basque language survive in Elko? This year the Basques are hosting the 50th anniversary of their 4th of July Elko Festival. Are we going to see a 2063 Basque Festival? The Indians of America and Europe survived for millennia; what is another fifty years?

What is a Stone Fruit Peaches, Nectarines, Apricots, Plums, and Cherries are all stone fruits. A thin skin encases succulent flesh that surrounds the seed inside. The large pit, or seed, is very hard – like, well, a stone. Botanically speaking, these fruits are “drupes,” and are members of the genus Prunus. Through grafting and hybridizing, many varieties of each fruit exist in different locales. For peaches, the flesh may be white or yellow, and the pits either “clingstone” or “freestone.” Nectarines are a variety of peach but without the genetic code for fuzzy skin. This issue’s featured cookbook explains that nectarines are not reliably grown from seed, but rather from nectarine-producing branches grafted onto peach trees. Similarly, recent hybridizations of stone fruits have produced a flurry of specialty stone fruits: pluots (70% plum + 30% apricot), apriums (75% apricot + 25% plum), plumcots (50% apricot + 50% plum), and one of the latest on the scene, peach-a-rines (50% peach + 50% nectarine).

Though classic ice cream recipes call for a base of egg custard, this easy recipe is thickened with sweetened condensed milk. 1-1/2 pounds (3-4) ripe peaches, peeled, pitted, and sliced o(r 3 cups canned or frozen slices) 1/2 cup sugar 1 tablespoon peach brandy or vanilla extract 2 cups half-andhalf cream, chilled 1 cup low-fat milk, evaporated milk, or vanilla soy milk, chilled 1 can (14 ounces) sweetened condensed milk, chilled 1. Crush the peaches in a large bowl with a potato masher, to make about 2 cups. 2. Add the sugar and brandy and let stand for 30 minutes, stirring occasionally until the sugar has dissolved. 3. Add the cream, milk, and condensed milk and stir to mix. Pour into an ice-cream maker and freeze according to the instructions.

Tip 1
Freeze the ice cream maker’s insert very well (e.g., overnight), prior to making ice cream. Better yet, always store the insert in the freezer so that it is always ready to go. Obtain extra inserts, (if you’re really into ice cream making), so that there’s always a unit available for churning.
Tip 2
Chill all of the ice cream’s ingredients prior to mixing and placing into the ice cream maker. Also, once mixed, a short stint in the freezer or refrigerator helps to cool the mixture allowing it to freeze better.

How to P ick, Ripen, Peel a Peach Choose peaches that have been tree-ripened, and not picked too early. As our cookbook author states, a red blush does not necessarily indicate ripeness. Rather examine the “background color” of the peach; if it shows a greenness, it may have been picked too early. It may grow soft, but never with the sweetness or flavor of a perfectly picked peach. A ripe peach should feel heavy for its size and have a pleasant aroma.
Crush amaretti and add to the peach ice cream, or sprinkle on top. The subtle almond flavor marries well with fresh peaches, and the crunch is most pleasing!

If possible, leave stone fruits on the countertop to ripen naturally. They usually become ripe within a day or two. To hasten ripening, peaches, like other fruits, may be placed in a brown paper bag; this captures and concentrates the fruit’s natural ethylene gases that promote ripening. If peaches are picked too early they will never really ripen. Or, if they are stored at cool refrigerator temperatures in transit before fully ripening, they’ll develop an undesirable, flavorless, mealy texture. Fully ripened fruits may be stored in the refrigerator for a few days to forestall spoilage.

Peel a peach When you don’t want the fuzz, a serrated peeler will do the job on soft peaches and tomatoes alike. Or, score an “X” on the bottom of each peach, drop them in boiling water for 30 seconds, then immediately plop them into ice water. This blanching routine will “cook” just the skin making it easy to grab with a paring knife and peel away.

Choose your own flavors with whatever fruits are in season: Combine peaches and plums, apricots and nectarines, apricots and plumcots, peaches and cherries, or any two stone fruits. Serve with yogurt, custard, or sour cream sweetened with honey. 1 cup sifted all-purpose flour 1/2 cup firmly packed brown sugar 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/2 teaspoon nutmeg 6 tablespoons butter, sliced, and chilled 3 pounds stone fruits of your choice, pitted and sliced (about 6 cups sliced) 1/2 cup granulated sugar 1. Preheat the oven to 375°F. 2. Mix the flour, brown sugar, cinnamon, ginger, and nutmeg in a medium-sized mixing bowl. Cut in the butter with a pastry blender or knife until the mixture forms large crumbs. 3. Toss the fruits with the granulated sugar in a 2.5 –3 quart baking dish and spoon the flour mixture over the top. 4. Bake in the middle of the oven for 40 minutes, or until golden.
Tip 2
Start with very cold butter. Dice into ½-inch cubes and add to the flour mixture. Mix the butter with the flour mixture sparingly leaving pea-sized pieces of butter in place.

Use a food processor to quickly and evenly mix the crumb mixture. To mix the topping, use the “pulse” button 7 or 8 times. Remember, you’re going for a coarse texture.

Make a double batch of the crumb topping. Freeze the other half for up to 6 months. A fruit crisp or crumb-topped pie is quicker than ever with this step done ahead of time.
Tip 5
Enjoy all the flavors of fruit crisp with lower calories. Slice peaches in half, pit and place in a baking dish. Fill the well of the peach with a teaspoon of crumb topping. No need to peel the peaches. Trim a small piece from the bottom of the peach, if necessary, to stabilize and level the peach half. Bake for 20-30 minutes until the peaches are tender and the crisp topping browned.

How to Whip Cream A fruit crisp or summer pie nearly begs for a dollop of freshly whipped cream! It’s easy to make, and much tastier than prefabbed frozen or canned versions: - Chill 1C. of Heavy Cream, 2T. powdered sugar, and 1 t. of vanilla extract in the refrigerator. Chill the bowl and whisk utensil, too. - Whip the cream with an upward circular motion that incorporates the maximum amount of air. (Stirring does not efficiently add air). - Test progress by assessing the type of peak made when the whisk is lifted; soft peaks that droop slightly are perfect for dolloping on crisps.
Tip:
An immersion blender with its whisk attachment makes quick work of whipping cream. Or, a pressurized siphon injects air into sweetened cream as it is served.

To draw out juices – macerate Soaking fruit in liquid, naturally formed or as added liquid, is a process called maceration. In each of our featured recipes, sugar is added to the sliced fruit. In less than a minute, water from the peaches is drawn out and forms a fruity syrup. This occurs through nature’s balancing act, osmosis, where the molecular density provided by the sugar coaxes water from the peaches’ cells in an attempt to balance out the fluids.
To thicken juices Heat and sugar draw out the fruit’s juices. Thicken the juices with a tablespoon or two of instant tapioca, or with a slurry of cornstarch dissolved in cold water. Either of these thickening agents will retain the juice’s clarity. (Thickening with flour mixtures will create a more opaque appearance).

Make this with peaches, nectarines, apricots, or plumcots – whichever fruit your family loves and is in season. This makes a sweet snack and adds a lovely chewiness to salads, and grain dishes. Simply dice and sprinkle over, or stir into the dish. 4 pounds fully ripe fruit, pitted and sliced (about 8 cups) 1 cup sugar 1 teaspoon ground cinnamon 1. Preheat the oven to 150°F.
Fruit Leather If a bushel of summer fruit comes your way, preserve some of it for the future. It’s easy to make your own dried fruit sheets from pureed fresh fruit. We chose apricots to experiment with. A thin layer of puree dried to just the right consistency for rolling up and freezing for another day.
2. Puree the sliced fruit in a food processor or blender. 3. Place the pureed fruit in a large, heavy pan. Add the sugar and bring to a boil over medium heat. Stir until the sugar has dissolved, about 3 minutes. Remove from the heat and allow to cool until just barely warm. 4. Line three jelly-roll pans with wax paper and spread with the fruit mixture so that it is 1/8 to 1/4 inch thick and comes to within 1/2 inch of the edges.

5. Bake with the door propped slightly open (to allow the moisture to escape for about 3 hours. The fruit leather should be slightly sticky and pull away from the wax paper. (If not, leave it in the oven until it does start to pull away). 6. Lift up about 1 inch and start rolling it over in the wax paper. Place in a plastic bag or wrap in plastic. Store in the refrigerator for up to 1 month or in the freezer for up to 6 months.

If you have tons of fruit, but not a lot of time to dehydrate and turn it into leather, make the puree, and freeze it until ready to dry in the oven or dehydrator.

If drying your fruit leather in the oven, use silicone baking mats to line sheet pans. Microwave safe plastic wrap also makes a good lining. (Parchment paper, usually good for non-stick needs, doesn’t hold up during the longer drying times. Wax paper may be used in low temperature situations, but be aware of wax melting into the puree).

Homemade fruit leather lacks the preservative of commercial varieties. Roll up and store in airtight packaging for a week at room temperature, 2 months in the refrigerator, or up to 1 year in the freezer.
Experiment with complementary spice combinations, essential oils, or citrus zest in your fruit puree.

Add a small amount of lemon juice or apple cider vinegar for a splash of brightness in the flavor. This will also help to prevent browning with fruits that oxidize readily.

In today’s world of fast paced lives, even quicker deadlines and the need for variety, we sometimes forget to buy local. We have all heard it and sometimes try and often default to what seems easiest and quickest. Being a business owner has its challenges and a part from the day to day operations, you try to do what is best for the environment, community and of course your clientele.
For the most part, our providers offer some sort of organic, well controlled product. In the case of our focus today, we can easily find the origin of our beef, pick where it’s coming from and have a reasonable idea of the life that animal has lived. I say reasonable because nowadays who really knows. But you can only hope that this is true and when you buy a good product from a dependable source it is not riddled in a web of lies. The beef we purchase for the restaurant is from Idaho, as is the pork. You might ask… Elko is a ranching town?… follow up question: why not buy your beef from Elko? Well I can say we did, and in this article I will walk you through the process and some things to think about. You will see the challenges and benefits along the way. Some time ago we were approached by the Van Normans and at that time we had discussed buying a half beef. Seems
simple enough, but the process in Elko is a bit involved. Most importantly you need the beef to be processed by a USDA approved butcher; which we do not have in Elko. Therefore, the beef must go to Reno to be butchered and then brought back to Elko. Wolf Pack Meats is a very good quality shop and they will hang the beef to dry age it before prepping it into the cuts you request. For the restaurant, we request primals… which are basic cuts that we butcher to our liking. Depending on ones skill level, or how much work you’d like to do, you can request the meat butchered however you prefer. Second difficulty you don’t get it next day. This is the reality for a good quality product that you pick and discuss with the actual rancher. So if it seems like the process takes a bit more time and energy than just going to the store, well it does… you are actually part of the process. In my opinion that is a good thing.

Local Beef The Van Normans were kind enough to pickup and deliver the product themselves, which eliminated that obstacle. Now, the challenge?..... storage. You have to realize that half a beef is approximately 450 pounds of meat. When I said challenge, it is really much more about being organized.
If you are new to butchering, you might ask what comes in a half beef? Fillet, NY, Rib eye, short ribs…what else? That is where you have several choices… look at it as a challenge and be creative as a lot of it is going to be new to you, worse case you can always just grind it all up into burger! LOL!
So now to the meat… as I mentioned earlier, we request primals, so none of the meat is ground into burger meat, I had trim which I prefer because that gives me the flexibility to grind it to what I like… say if I am making chili or a burger or a meat sauce… I can fine tune the meat to my exact needs. Of course then you need a grinder to do that… really just takes a bit of forethought.
Really with a bit of work, you can do some amazing things. When I was a kid and first started photography one of my mentors once told me:” It is easy to take a good picture of something pretty… it is challenging to take a gorgeous picture of something mundane.” Same here; take some butter, a fillet and lobster tail and that is a good dinner… but what did you do? One piece that I loved and hadn’t had in a while was the hanger steak. Oh my… the flavor,

the texture… in my eyes goes far beyond even the flavor of a flank steak. I could go on and on about each cut and tell you how amazing the whole animal is…from the short ribs, to the flank steak, bone in rib eye and the fillet. Perhaps a whole other article. So now in a restaurant setting you have to realize that each beef has two of everything… but if you buy half, well it is hard to serve a flank steak as a special as it is small… same goes for the skirt. The fillet we turned around and had a surf and turf Petit Fillet… so that we could get enough portions. Is this a problem? No, just again a bit of forethought and organization. So bottom line: is the product any different, yes and in so many ways. The quality is there, the
flavor (think that the whole animal was aged and prepared by a professional) the price is a bit more, but that is what you can expect from a high quality product. One word of caution: keep in mind that you must pay the butcher. Take that into account. In the restaurant and at home; each have their sets of challenges… room is probably the key factor. And think ahead… you have to have some sort of plan or you will be overwhelmed. Key questions… where are we putting it? How am I going to have the butcher prep it? and most importantly, who am I having over to share this fantastic local product?! I would encourage you to try it if you and your family enjoy beef, it is a great product and can be fun too!

Ingredients • 1 1/4 cups granulated sugar • 2 tablespoons cornstarch • 2 tablespoons all-purpose flour • 1/2teaspoon apple pie spice or ground cinnamon • 2 1/2cups thinly sliced, peeled apples • 2 1/2cups frozen unsweetened sliced rhubarb • 1 cup frozen red raspberries • 1 RecipeAlmond Star Crust • Water or milk • Coarse sugar (optional)
Directions 1. In a large bowl, stir together yogurt and almond extract or vanilla. Fold in whipped topping. 2. To serve, in six 12-ounce glasses or dessert dishes, alternate layers of the berries with layers of the yogurt mixture. Makes 6 servings. From the test kitchen • Prepare parfaits as directed through Step 2. Cover and chill for up to 1 hour.
Directions 1. In a large bowl stir together granulated sugar, cornstarch, flour, and apple pie spice. Add apples, frozen rhubarb, and frozen raspberries; toss gently to coat. Let stand about 45 minutes or until frozen fruit is partially thawed but still icy. 2. Meanwhile, preheat oven to 375 degrees F. Prepare Almond Star Crust. On a lightly floured surface roll one pastry ball into a 12-inch circle. Ease pastry circle into a 9-inch pie plate without stretching it. Stir fruit mixture; transfer to pastry-lined pie plate. Trim pastry even with pie plate rim. 3.Roll remaining pastry ball into a 12-inch circle. Using a 1/2- to 1-inch star-shape cutter, cut out pastry to make 28 to 30 tiny stars; set aside. Using 2- and 3-inch starshape cutters, cut remaining pastry into stars. Reroll scraps to cut additional stars. 4.Lightly brush edge of pastry in pie plate with water. Place tiny stars in a single layer on edge of pie. Place remaining stars on top of pie (some filling will show through). If desired, lightly brush cutouts with water and sprinkle with coarse sugar. 5. Cover edge of pie loosely with foil. Place pie on middle oven rack. Line a baking sheet with foil; place on bottom rack to catch any drips. Bake for 50 minutes. Remove foil from pie. Bake for 25 to 30 minutes more or until pastry is golden and filling is bubbly. Cool on a wire rack.
A lmond Star Crust
ingredients 2 1/4 cups all-purpose flour 1/4 cup butter, cut up, or shortening 1/4 cup ground toasted almonds 1/4 teaspoon almond extract (optional) 1 teaspoon salt 1/2 - 2/3 cup ice water 1/2 cup shortening directions 1. In a large bowl stir together flour, ground almonds, and salt. Using a pastry cutter, cut in shortening and butter until pieces are pea size. If desired, sprinkle with almond extract; toss gently with a fork. Sprinkle 1 tablespoon of the water over part of the flour mixture; toss gently with fork. Push moistened pastry to side of bowl. Repeat moistening flour mixture, using 1 tablespoon of the water at a time, until all of the flour mixture is moistened. Gather flour mixture into a ball, kneading gently until it holds together. Shooting, blending, sipping – there is no other hard liquor more deitious or expressive than tequila. This robust, rich libation is the national drink of Mexico and a symbol of its people, pride and heritage. Tequila has recently emerged from the harsh, cheap buzz or a mere ingredient to a margarita, to a delicious sipping spirit and the star of a new generation of cocktails. Tequila was first distilled in the 1500s near the city of Tequila, which was not officially established until 1966. The Aztecs previously made a fermented beverage from the agave plant called octli or pulque. When the Spanish conquistadors ran out of their brandy, they began to distill agave. Around the 1600s, the Marquis of Altamira began mass producing tequila in a factory in the territory now known as Jalisco.

There are several classifications of tequila, each with its own characteristics. There are two things that make tequila tequila. First, is where it’s made. Second, is where it’s from. Only products made in the Mexican state of Jalisco and in small areas of four other states – Nayarit, Guanajuato,Michoacan and Tamaulipas – can legally be called tequila. There is a mantra following tequila; All Tequila is Mezcal, but not all Mezcal is Tequila. Tequila, and its cousin Mezcal, are made by distilling the fermented juice of agave plants in Mexico. The agave plant is a spiky-leafed plant. Many confuse it as a cactus, however, it is part of the lily family and is related to the century plant. By Mexican law, the spirit called Tequila can be made from only one particular type of agave (Blue Weber) and can be produced only in specifically designated geographic areas, primarily in the state of Jalisco, in westcentral Mexico. It is kind of like champagne. Only sparkling wines made in France’s Champagne region and made with “methode champagnois,” can legally be called champagne in the EU. If the bottle does not say 100% blue agave, the
tequila is mixto, ande may have been distilled fom as little as 60% agave juice with other sugars. Mezcal is made from the fermented juice of other species of agave and is produced throughout most of Mexico.
Blanco (or Silver) – This is 100% Blue Agave tequila that is distilled then bottled. Because there is no aging, blancos tend to have a stronger agave flavor. Good blancos are earthy and smooth. Because they are less expensive than aged tequilas, many people prefer them in margaritas.
Reposado( or Rested) – 100% Blue Agave tequila is aged in oak barrels for at least 2 months, but less than 1 year. During the aging, the tequila absorbs some of the characteristics of the wood they are aged in. Anejo (Aged) – 100% Blue agave has been stored in oak for at least 1 year. Distillers usually pay careful attention to this premium product. Anejos are usually aged in smaller oak barrels. Anejo is usually where the most complex and interesting flavors are found.

“Take It Outside” Summer Hiking Series Contributed by Tiffany Jones of Cedar Creek Clothing
Cedar Creek Clothing is teaming up with the U.S. Forest Service, the Bureau of Land Management’s Elko District, and the Northeastern Nevada Stewardship Group to offer three summer hikes culminating in an overnight backpack trip. The guided hikes are free and fun for the entire family. The hikes begin July 20th in connection with National Public Lands Day. Subsequent hikes are planned for Aug. 24th and Sept. 21st. One week prior to each hike, there will be a free program on backpacking, hiking and first aid at Cedar Creek Clothing beginning at 10 a.m.. Hikers will have the option of hiking to Lamoille Lake which is about 4 miles round trip or the more adventurous in the group could continue to Liberty Lake which is 8 miles round trip. outdoors. I advocate using a mix rather than single variety plantings in an effort to create diversity in the landscape. Mixed garden designs incorporate large, individual/ specimen plantings along with shrubs at 6' and under, accented by groupings/drifts of colorful perennials. Planting individual varieties in large garden designs provides contrast and interest as the eye moves from area to area guided by pathways of narrow, curving strips of lawn or pavers. Shrubs that turn to shades of yellow, orange, and red continue their seasonal interest into fall as gardeners spend the last warm days of the season out in their gardens. Vibrant, fall colors are a sought after trait in shrubs since gardens are often viewed from indoors through the changing season. They also provide a vertical element to an otherwise one-dimensional view as we look out into the gardens through winter.
Avoid the overwhelming task of taking on the entire landscape in one season. Divide the landscape into areas (some designers refer to these areas as rooms) and fully develop one area before moving onto the next. Start with a plan, it can be sketched onto a napkin or precisely drawn to scale. You can do it yourself, or have it professionally done, either way, it's a necessary start to a successful finish.

Summer time is now in full swing, and if you’re looking for a great vacation, either with the family, as a couple or solo, why not head to a National Park to indulge in wildlife viewing, breathtaking scenery and a way to get away from the hustle and bustle of modern-day life. The United States has fifty-nine National Parks to choose from; following are just a few that I think should be on your radar, whether you can go this year or next, I recommend trying to visit at least one of these in your lifetime!
However, all of them offer something different and inspiring.
Denali National Park and Reserve, Alaska
Acadia National Park, Maine
Denali is six million acres of wild land, bisected by one ribbon of road. Travelers along it see the relatively low-elevation taiga forest give way to high alpine tundra and snowy mountains, culminating in North America's tallest peak, 20,320' Mount McKinley. Wild animals large and small roam unfenced lands, living as they have for ages. Solitude, tranquility and wilderness await, along with so many activities that you won’t feel wanting for more to do.
Acadia is the first National Park East of the Mississippi, set on the rugged coast of Maine and is known for its beauty and diversity, which is home to many plants and animals and the tallest mountain on the US Atlantic Coast. This park encompasses over 47,000 acres of granite domed mountains, woodlands, lakes, ponds and ocean shoreline. Visitors come to Acadia to hike those granite peaks, bike historic carriage roads, or just relax and enjoy the scenery! There is also Junior Ranger programs and kids’ activities to choose from.
Grand Teton National Park, Wyoming
Though Yellowstone is more of the obvious choice when thinking of Wyoming’s National Parks, this year choose Grand Teton instead. Explore over two hundred miles of trails, float down the Snake River, or visit the Craig Thomas Discovery Center to view films or listen to guest speakers on a variety of subjects. Located in northwestern Wyoming, this National Park protects stunning mountain scenery and a diverse array of wildlife. The park’s mountain range is very popular among climbers, hikers and photographers. Over 300 species of birds call this place home, so this is a must visit for any bird enthusiast.

Biscayne Bay, Florida
Biscayne National Park, located just a few miles from the city of Miami in south Florida's Miami-Dade County, is home to the longest stretch of mangrove forest remaining on Florida's East Coast. The park protects part of the third-largest coral reef system in the world and the longest stretch of mangrove forest remaining on Florida's east coast, providing habitat and nursery grounds for most of the region's important commercial and recreational fish and shellfish. Travel to Biscayne to dive, snorkel, canoe, kayak, windsurf, or fish! The park also harbors many endangered species, including the West Indian manatee and American crocodile.
Death Valley, California/Nevada
Death Valley is world renowned for its extremes, home to our nation's driest, hottest, and lowest place, but also sporting mountains over 11,000 feet high that experience below-zero weather and snow. Over 600 plant species have been found in Death Valley, with at least 55 endemic to the park and its vicinity. In addition, 17 species of mammals, fish, and snails that live in Death Valley occur nowhere else in the world. Also found in this park are desert tortoise, coyote, kit fox, ringtail cat, bighorn sheep, and a diversity of lizards, snakes, bats, squirrels, and birds, including red-tailed hawk and roadrunner. This is truly a very unique place!
And don’t forget about our very own here in Nevada, Great Basin National Park! We visited this park last year with the kids and had a great time. The park is home to 5,000-year- old Bristlecone Pines and Lehman Caves, which were quite stunning and beautiful. The park also boasts some of the darkest skies, and at night they have a presentation at the visitor center, complete with a couple of telescopes that you’re able to look through.

My project started around eight weeks ago. I have been working with a good friend for five years now. We both work full time and two years ago she bought a piece of property out in Burner Basin hoping to be able to build something for her and her 3 children to live in. She purchased a military size tent and has been living in it ever since. She also has an RV that she uses for cooking and restroom purposes. She does not earn enough money to support her family and purchase or build something better to live in. She does not receive assistance from the children’s father, so I thought it would be a great opportunity to do a community project and help this family get a real home. Directions 1. Preheat oven to 350 degrees. Line an 8-inch-square metal baking pan with foil and spray lightly with nonstick cooking spray. 2. Combine the graham cracker crumbs, 3 tablespoons of melted butter in a bowl and mix until the crumbs are moistened. Press the crumbs evenly into the bottom of the pan and bake at 350 degrees for 7 minutes. Allow crust to cool on wire rack. 3. Turn the oven temperature up to 400 degrees and prepare the brownie layer.
S'mores Bars Crust: 1 C graham cracker crumbs, 3 T unsalted butter; melted, 2 T sugar Brownie: 8 T unsalted butter, 4 oz unsweetened chocolate, 1 1/4 C sugar, 1 tsp vanilla extract, 1/4 tsp salt, 2 eggs, 1/2 cup flour Topping: 20 large marshmallows; cut in half

4. In top of a double boiler set over barely simmering water, or on low power in a microwave, melt butter and chocolate together. Stir often, and remove from heat when a few lumps remain. Stir until smooth. 5. Stir in sugar, vanilla and salt. Stir in eggs one at a time, followed by flour. Stir until very smooth, until mixture pulls away from sides of bowl. Scrape batter into prepared pan and bake for 18 minutes. 6. Let cool completely, then lift out using the foil and place brownies onto a broiler safe pan. Move your oven rack about 6 inches from your broiler and preheat your broiler to low. 7. Layer marshmallows (sticky side down) across the top and toast under the broiler until golden, (watch this like you have never watched anything before‌it can burn QUICK), about 2 minutes. Cool and cut into squares.

Who is young life for? Everyone is welcome in Young Life! Our programs are custom-made for kids throughout their adolescent years. Young Life is the name of our organization and is also the term we use for our program with high school students. We call our middle school program WyldLife. Young Life College is our program for college and university students. Young Life's multicultural/urban ministry, focused on kids in diverse cultural communities and those in economically-depressed areas, is arguably the largest
of its kind in the United States. We refer to our ministry to kids with disabilities as Capernaum and to our work with teen moms as YoungLives. In a partnership with Military Community Youth Ministries, Young Life reaches military teens through a program called Club Beyond. The small Town/Rural initiative brings Young Life to communities of fewer than 25,000 people, and Amicus is our student exchange and hosing program for international kids.

Young Life doesn’t start with a program. It starts with adults concerned enough about kids to go to them, on their turf and in their culture, building bridges of authentic friendship. These relationships don’t happen overnight — they take time, patience, trust and consistency. So, Young Life leaders log many hours with kids around the world — where they are, as they are. Leaders faithfully attend football practices in the Minneapolis suburbs, mingle with teenagers at a mall in Stockholm and play pick-up soccer with former child-soldiers in Liberia. We listen to their stories and learn what’s important to them because we genuinely care about their joys, triumphs, heartaches and setbacks. We believe in the power of presence. Kids’ lives are dramatically impacted when caring adults come alongside them, sharing God’s love with them. Because their leader believes in them, they begin to see that their lives have great worth, meaning, and purpose. This is the first step of a lifelong journey; the choices they make today, based upon God’s love for them, will impact future decisions ... careers chosen, marriages formed and families raised. All ripples from the time when a Young Life leader reached out and entered their world.
