Tuesday, June 9 - Thursday, June 11 Promoting Health Among Teens is an evidence-based program that encourages youth, ages 9 to 12, to remain, or become abstinent as a means of preventing teen pregnancy and STDs. Students learn about adolescent development, pregnancy prevention and sexually transmitted diseases. They also learn refusal skills, identifying and handling peer pressure and utilizing learned negotiation skills. Classes are free of charge and Graduates receive a backpack full of school supplies. • 4th of July at the museum • Movies in the park! Join us for our annual Classic Film Festival as we screen films that were shown throughout Elko’s past, starting at dusk on Saturday July 18th and Saturday 25th.

Grass stains. Pink watermelon smiles. Excited laughter and pleasant screams. Independence Day, like many holidays, is a day that reminds us of what it’s like to be a child. Unlike other yearly celebrations, however, the 4th of July is a time specifically dedicated to our country’s diverse history and the Northeastern Nevada Museum is the perfect place to celebrate with tradition, education and family-friendly fun.

America’s birthday is not only about fireworks, parades and barbecues, but also an annual reminder of how and why our country declared independence. Here at the Northeastern Nevada Museum, we are honored to sponsor a 4th of July event that combines entertainment for all ages as well as a tribute to our American history. There will be a pie walk, tug-of-war and bean-bag toss, as well as threelegged races, sack races and an egg race! Have your children

Balsamic BBQ Sauce 1 cup Balsamic Vinegar 3/4 cup Ketchup 1/3 cup Brown Sugar 1 Garlic Clove, Minced 1 Tablespoon Worcestershire Sauce 1 Tablespoon Dijon Mustard ½ teaspoon Salt ½ teaspoon Ground Black Pepper

Directions For the Sauce; combine all ingredients in a sauce pan. Cook on medium heat for 15minutes stirring occasionally. Turn heat to medium low and cook until it begins to thicken. For the Chicken Skewer; Soak skewers in water for 10min. Build skewer in any order you like. Cook skewer on your grill until chicken is fully cooked. About 15 minutes. Plate with your favorite Summer BBQ Side Dish and top with Balsamic BBQ Sauce. Yield: 2 Skewers

Hamburgers are nearly as American as mother and apple pie. With an entire summer season of outdoor grilling and al fresco dining ahead, it’s time to refresh your burger-making skills and inject some fresh inspiration for kicking those burgers up a notch!

Better Burger Basics Grandpa used to call hamburgers, “chopped steaks” – presumably a throwback to leaner days when anything but ground beef was a splurge. Calling them “steaks” temporarily elevated the moment. But, there is no need to apologize for a good burger, then or now! Burgers are an affordable, hands-on food that’s perfect for easy entertaining, or a quick supper. Here’s a refresher on making great tasting burgers:

1. Choose your meat well Ground beef comes in different varieties – most frequently ground chuck labeled by the percentage of lean meat included in the mix. Our burger guide, Bobby Flay, recommends using 80% ground chuck. As ground beef goes, 20% is a high percentage of fat. But it’s the fat component that adds big flavor to beef cuts. In ground form, it’s like evenly placed marbling that we revere in a good steak. Add olive oil to leaner versions of ground meat to enhance juiciness and flavor. This doesn’t necessarily reduce the overall fat content, but it does substitute a better, healthier type of fat and optimizes the richness and moistness of the end result.

2. Form the Patties Divide the meat into 6 ounce portions, or the desired size. Gently form patties without compacting or smashing the meat together; this will help to keep the burgers tender once cooked. Moisten your hands with a little water for less stickiness when forming the patties. Bobby Flay recommends burgers that are 3/4-inch thick. Press a good thumbprint in the center of the burger. Mr. Flay’s theory here is

that as the meat cooks, the proteins shrink and contract. The center depression disappears once the burger cooks and contracts resulting in a perfectly level burger ready to accept any number of toppings. To paraphrase another “flayism” – let the meat star; if you want add-ins, make meatloaf.

3. Prep for Grilling Once the patties are formed, store them covered in the refrigerator until the grill is ready. Generously season both sides of the burger with kosher salt and freshly ground pepper. Brush canola oil on the burger patty surfaces to reduce sticking to the grill.

4. Grill Correctly Place patties on a grill prepared to medium-hot heat. Additional oil may be brushed on the grill grate to reduce sticking. Allow the burgers to cook quickly, about 4 minutes per side, but this will vary based on the meat, size and actual grill temperatures. Resist, resist, resist using your spatula to “flatten” the burgers – this action releases the juiciness that you want to keep! Do use a spatula to turn the burgers and not a fork – forks pierce the seared surfaces allowing juices to escape.

Use an instantread thermometer to check the temperature at the center of the burger. Undercooking meat is undesirable, but more often, there is a tendency to overcook meat robbing the burger of flavor and yielding a dry result. A thermometer provides confidence in the grilling experience and promotes the best result possible. Serve while hot!

Garlic Butter Burger Who doesn’t like garlic bread? Take that pleasure and apply it – times three – to your next burger presentation. We knew it would be good by definition, but the result exceeded our expectations in flavor and aroma. The first layer of the chopped garlic, shallot, parsley and butter mixture is slathered

Basting both the burgers as you cook them and the buns before you toast them with a savory garlicky butter adds a whole new dimension of flavor to a classic burger. Try adding a few tablespoons of fresh herbs or a few dashes of Worcestershire sauce to the butter for even more flavor. 12 TBSP (1-1/2 sticks) unsalted butter, slightly softened 4 cloves, garlic 1/2 small shallot, chopped 3 TBSP chopped fresh flat-leaf parsley leaves Kosher salt and freshly ground black pepper

ANOTHER “FLAYISM”: Use soft hamburger buns for your burgers – the kind that holds the burger and toppings in place and is easy to bite into. Bobby recommends saving artisan or hard crusty rolls for another occasion.

1. Combine the butter, garlic, shallot, and the parsley in a food processor and process until smooth; season with salt and pepper to taste. Scrape into a bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld. The butter will keep in the refrigerator for up to 24 hours. Bring to room temperature before using. 2. Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper. 3. Brush the buns with about 4 tablespoons of the butter, using roughly 1/2 tablespoon for each half. 4. Cook the burgers, using the oil, (on the meat surfaces), and brushing them every 30 seconds with the remaining garlic butter. 5. Meanwhile, toast the buns. Place the burgers on the bun bottoms, cover with the bun tops, and serve immediately.

Stay Safe Around Ground Beef! As with all ground meats, the odds of contamination are increased over whole cuts of meat. Naturally-occurring bacteria residing on the surface of the meat become incorporated when ground. Respect these bugs – the bacteria cannot be seen, smelled or tasted. Follow these guidelines for basic food safety: - Choose ground beef from a reputable purveyor, check the freshness date - Use ground meat within 1-2 days of purchase or freeze until ready to use - Defrost frozen ground beef in the refrigerator, not on the kitchen counter.

What is chimichurri?

Argentinean Burgers -

Herbal and tangy, chimichurri is a thick slurry of parsley, oregano, garlic, shallots, vinegar and olive oil. It’s an Argentinean condiment that’s nearly a mandatory companion to grilled meats in that region of South America. The version here employs smoked paprika for just a hint of smoky flavor. Other versions might feature red pepper flakes, capers, cilantro, or other complementary herbs and spices.

Serves 4 Argentineans are well-known for their beef and for their love of the grill. Just about everything that comes off of the Argentinean grill is garnished with chimichurri, a bright herbaceous mixture of fresh parsley, garlic, red wine vinegar, and olive oil. It could very well be the national condiment. Knowing what an affinity grilled meats and chimichurri have for one another, it makes sense that a burger would benefit from a dose of vibrant chimichurri as well. Rings of deep red onion and slices of slightly salty Manchego cheese finish the burger to perfection.

Leftover chimichurri can be used inside a morning omelet, smeared on toast, spread across steamed broccoli, as a chip dip, and in our grilled cheese.

CHIMICHURRI 2 cups packed fresh flat-leaf parsley leaves 1 tbsp fresh oregano leaves 4 cloves garlic 1 tsp smoked sweet Spanish paprika 3 tbsp red wine vinegar 1/2 cup extra-virgin olive oil Kosher salt and black pepper BURGERS 1.5 lbs ground chuck (80% lean) or ground turkey (90% lean) Kosher salt and black pepper 1-1/2 tbsp canola oil 4 slices Manchego cheese 4 hamburger buns, split; toasted if desired 1/2 red onion, sliced 1/4-inch thick


1. To make the chimichurri, combine the parsley, oregano, and garlic in a food processor and pulse until coarsely chopped. Add the paprika, vinegar, and oil, season with salt and pepper, and process until smooth. Scrape into a bowl. Let sit at room temperature for 30 minutes before serving. The sauce can be made 8 hours in advance, tightly covered, and refrigerated. Bring to room temperature before serving. 2. Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper. 3. Cook the burgers, using the oil [on the meat surfaces], and topping each one with a slice of cheese and a basting cover, [foil tent], during the last minute of cooking. 4. Place the burgers on the bun bottoms and top with a large dollop of the sauce and sliced onion. Cover with the bun tops and serve immediately.

Burger Alternatives Not into red meat or any meat? Ground turkey (90% lean) makes a great burger worthy of any of the recipes here. Liberal use of oil while grilling will keep the turkey burgers from drying out. Or, for a vegetarian version, try portabella mushrooms as a substitute. Their earthy taste accommodates a host of spices and toppings while fitting neatly inside a hamburger bun. As well, try experimenting the bean-based “burgers” on the grill and in the bun.

Place mild poblano peppers on the grill, turning frequently, until blistered. Remove the peppers and allow the steam to loosen their skin while the burgers grill. Once grilled to perfection, stack the burger on the bottom of the toasted bun, coats with a healthy dose of the thick queso sauce, and adorn with strips of roasted peppers and a few crumbled tortilla chips. It’s a remarkable burger experience.

3. To make the queso sauce, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk, increase the heat to high, and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the cheese until melted; season with salt and pepper. Keep warm.

This is one seriously delicious cheeseburger inspired by the flavors of the Southwest, personal favorites of mine. A luscious, gooey queso sauce made with Monterey Jack cheese takes the place of sliced cheese and makes a secure bed for roasted and diced poblano chiles. Blue

Kosher salt and freshly ground black pepper 1. Preheat the oven to 375°F. 2. Put the chile on a rimmed baking sheet, rub with 1 tablespoon of the oil, and season with salt and pepper. Roast in the oven until the skin of the chile is blackened, about 15 minutes. Remove the chile from the oven, place in a bowl, cover with plastic wrap, and let the chile steam for 15 minutes. Peel, stem, and seed the chile and then coarsely chop it.

McGill Depot LISTED IN THE NATIONAL REGISTER OF HISTORIC PLACES

The Nevada Northern Railway – McGill Depot in McGill, Nevada, has been listed in the National Register of Historic Places. The National Register is the nation’s official list of cultural resources worthy of preservation. The Nevada Northern Railway built the McGill Depot in 1910 in to serve as the passenger and freight hub for the town of McGill during its days as a prominent center of Nevada’s copper mining economy. Built in the Craftsman style, the McGill Depot is nestled against the Duck Creek Mountains in eastern Nevada. McGill was a copper smelting hub for various mining companies throughout the twentieth century. The railroad depot provided an important connection for the community from its construction in 1910 to 1941, when passenger service ended on the line. During that time, the Nevada Northern Railway provided several daily trains for workers, shoppers and school children between McGill and nearby Ely, as well as service to broader railroad networks of the American West. With assistance from the state’s Commission for Cultural Affairs grant program, the Nevada Northern Railway Museum has completed partial

restoration work on the depot in anticipation of its future use as an interpretive center for Nevada’s railroad history. The McGill Depot joins 372 other buildings, sites and districts throughout Nevada listed in the National Register. Property owners are encouraged to contact the Nevada State Historic Preservation Office if they have questions about the program or how to nominate their property to the Register. The National Register of Historic Places is kept by the National Park Service, with significant support from the Nevada State Historic Preservation Office and Nevada’s Board of Museums and History. The National Register of Historic Places was established in 1966 to recognize historic resources throughout the country that are worthy of preservation. To be eligible for the National Register, resources should be 50 years of age and should not only ‘tell a story’ important to local, state, or national history but should retain strong physical evidence of that story.

Elko County Transit Department operates a transit system called GET (Greater Elko Transit) in the Elko and Spring Creek area with limited service to Ryndon and Osino. This is a public transit system, which means that it is open to everyone in the public.

GET (Greater Elko Transit) My Ride’s BLUE LINE CIT Y ROUTE

Historically, the service has operated what is known as ‘demand response’ or ‘on-demand’. This service requires passengers to call into dispatch and schedule appointments. Although this service has had a positive effect for the community, it has seen so much growth in the last year that Elko County has responded by adding a city route, known as the Blue Line to their service. The Blue Line City Route is scheduled to begin operation on June 1, 2015. The route will run a 1 ½ hour loop around the city that covers between NNRH, Adobe Middle School and the Red Lion area. The hours are from 6:30 AM to 5:30 PM, Monday

through Friday. The Blue Line’s last pickup is at 5:00 PM and has a ½ hour of delivery time for the passengers on-board after the last pick up. The Blue Route is what the transit industry calls “deviated”, which means that it can leave its route for direct pickups and deliveries. This deviation comes with rules, which you can call dispatch and ask about. They will be using 2 city coach buses (seen in picture) to operate this route. These buses were donated by Utah Transit Authority. The addition of the buses to the GET My Ride fleet is what made it possible to begin this route.

The addition of the Blue Line has led to some other changes to the service. Although they will be keeping the demand response service, it will be trimmed back some to make room for the Blue Line. Trips for

Fare zones are being applied to the service areas. The fare media (bus passes and tickets) is being streamlined into a single punch card that will allow passengers to move between zones and the Blue Line seamlessly. There are grants available that cover the fare of seniors and veterans. These require registration with dispatch.

June 28th, the Lamoille Grove and surrounding area will become abuzz with excitement, food booths and craft venders. The Lamoille Country Fair was created the last Sunday in June by the Women’s Club 40 years ago to maintain and improve their club house. The Fair today not only helps maintain the clubhouse, but has become one of the club’s two main fundraisers to help support their community involvement with charities throughout the Elko area. The Fair has become one of the more popular craft extravaganzas in Elko County which has an attendance of 5,000 to 8,000 people at this one day event. This event begins at 8am and continues until 4pm. Park and ride wagons provided by Branch 155-Early Day Gas Engine & Tractor Association are available at the entrance to the community of Lamoille. More parking is available in Lamoille in two separate locations, for a donation to Boy Scout Troops 850 and 85. There is no admission charge to visit crafter’s booths which can include jelly, jewelry, iron yard decoration, goat soap, creative interior wall designs, wood working, and yard ornaments. Upon entering the main entrance to the Fair your taste buds will be enticed by the smells of the many food booths to sustain one through the shopping experience. Sit in the shade in the large tent that has been provided by The Event Source to relax, and enjoy your meal provided by the food vendors in the food court which will include Indian tacos, fry bread, tacos, chili cheese fries, barbecue, hamburgers, corn, wok noodle chicken in rice.

For the thirsty, there is the Lamoille Woman’s club Famous Lemonade. The Lemonade starts with fresh squeezed lemon juice and is topped off with a leaf of fresh mint. While visiting the Fair, don’t forget to get tickets for an opportunity to own the Lamoille Woman’s Club Quilt made by club member Terri Bennett, “Ruby Sunset”. When you have finished shopping and the kids are wanting something to do; take them to the kids area that will not only have the bouncy house provided by U B Jump N, but also games, and face painting provided by M.O.P.S. of Elko. Battle Born Wrestling Academy and the Spring Creek Junior football League will have a fundraising dunk tank. They will be dunking local law enforcement officers, city officials, and fire department personal. A few projects and causes that this even helps benefit are: Veterans, CADV, Harbor House, the Lamoille Church and School House. This year it is also providing two scholarships


for Spring Creek High School Seniors, and a scholarship at GBC for a woman reentering the workforce. Donations have also been given to Bright Path Adult Enrichment Center, Spring Creek Volunteer Fire Department, Horizon Hospice, Tree of Life Memorial, Spring Creek High School Music Department, and Elko Country Fair for their Indian Arts Exhibit as well as The Quilt Exhibit.

If you are volunteering, and we hope you are, then there is likely a volunteer manager that makes the volunteer experience good enough for you to come back each time. Nevada Volunteers, the Governor’s Commission on Service, is pleased to announce that the nomination process for the 2015 Governor’s Points of Light Award ceremony is open. Nevada’s most prestigious volunteer recognition, the Governor’s Points of Light Award is an opportunity to shine the light on Nevada’s brightest volunteers. Unlike other volunteer recognition programs, Points of Light finalist are chosen by a group of judges representing rural, northern and southern Nevada, non-profit and for-profit organizations, along with the volunteer manager professional community. Inaugurated in 2001, the Nevada Governor’s Points of Light Awards ceremony highlights regional impacts along with the private and public partnership across the nonprofit and corporate sector in volunteerism. Nevada Volunteers transports 3 finalists in each category (a total of 21 individuals) to the Nevada Points of Light Awards ceremony luncheon, which is October 8, 2015 at Bally’s Las Vegas, where the Award recipients are announced. IGNITING CREATIVITY

We do it with music! What’s the most fun in a Music Together class? Hands down, it’s “Play Along” time. Toward the end of every class before the lullaby I dump an assortment of rhythm instruments, a small tub of shakers, and 8-10 drums in the center of the circle. Children rush to grab an instrument, and we “jam”—me, children, and parents with an original Music Together “Play Along” piece. Everyone has an instrument; there are no spectators here, everyone, playing and singing.

Out of that “chaos,” though, emerges beauty. I’ve come to love “chaos” because it contains many all possibilities. The first few lines from the Old Testament in the Bible speak of beauty from chaos. Our blue globe of light emerged from something “without form, void (unorganized), and dark.”

As we adults provide young children with a rich environment of music and movement we watch them follow that mysterious inner urge to teach themselves! That’s how the brain connects at this young age.

Each child has an instrument he chooses by himself/ herself. No one instructs how to play or what to do so every child experiments, testing what a tambourine, for example, might do. A tambourine could end up on the head or strung along an arm. Only much later will the child discover, by herself, it can make music, too!

During the “Play Along” I notice before me children under 5, each child playing and learning—by himself, by herself. No one is teaching. They learn by playing. What, though, is play? As Mr. Rogers said in the 50’s on his T.V. program, “Mr Rogers’ Neighborhood,” “Play is the child’s work.” Play is the Child’s Work! Play is chosen and controlled by the child. It’s fun and challenging enough to keep the child’s interest, and there are no rules imposed by adults, no adult order, or adult guidance. Adult input is only that of support in this child-designed experimentation. As they experiment neuronal connections in the brain are coming together growing thicker as the brain adds patterns. It’s beautiful. The urge of each child to teach himself is beautiful, and the eagerness of 10-12 children as

June is busting out all over at the California Trail Interpretive Center! Beginning June 1, 2015 the Trail Center will be open seven days a week from 9 am to 5 pm - still free admission! Like the pioneers getting ready for the trip west, we are gearing up for summer events!

Throughout June history interpreters at the California Trail Interpretive Center will present daily programs featuring pioneer skills that would have taken place while on the Trail. Many of these are hands on including biscuit making, flint and steel fire starting, beginning crocheting, tomahawk throwing, knife sharpening and more! And…chores for the kids – water carrying, clothes washing, and cow pie fetching. There was fun in the evening for all ages – horseshoes, cat’s cradle, hopscotch and others. Life wasn’t all work at the pioneers traveled west! These family friendly events are free and open to the public.
