If so, it’s time to share your inner artist with ARGENTUM -- Great Basin College’s literary and arts magazine. “The magazine is devoted to encouraging artists and authors to create and display their work,” says editor Lora Minter. “We want to celebrate and recognize local art, and share it with local audiences.” Originally ARGENTUM was open only to the GBC community, but last year submissions were accepted from anyone 18 years or older who lives in a community served by GBC. “We were very pleased by the quality of submissions that went before our judges,” Minter says. “What fun it was to see the wealth of creative talent displayed by students, staff and faculty, and by community writers and artists.”

In honor of Women’s History Month, the California Trail Interpretive Center will be giving three FREE presentations in March. Please, join the California Trail Interpretive Center for these presentations representing women from different walks in history at 2pm on Sundays. Women were often uprooted only to bloom in a foreign environment, allowing their strength and personalities to shine through. Some women were Native American, some came against their will, others came full of golden dreams. Most came and stayed so the family would have stability. The first presentation will take place on March 3, where Shania Cook will talk about the “Feathered Heroes” who were female warriors, artists, activists and tribal leaders who have inspired her. These Native American women represent tribes all across America and are remembered, respected, and never forgotten. On March 10, Jan Petersen will talk about “Elko County Women.” This presentation discusses the sinners and saints of early Elko County, women who made the desert their home, struggled against the odds and helped their families persevere. Some of these women were of Italian, Chinese or Basque descent. Maybe you will learn something about your own family if they have been in the area long enough. Finally, on March 17, Tiffany Cusick will talk about “The Real Gold-Diggers: Women Prospectors.” The presentation will focus on Frances Williams, Lillian Malcolm and Firminia “Mina” Sarras, among others. These women labored in a man’s world and often had to hide their identities as women to survive. Some were successful and towns were named after them, others were less fortunate. On March 24 at 2pm, the California Trail Interpretive Center will be showing The Big Trail. The movie features John Wayne in his first starring role and was directed by Raoul Walsh. John Wayne leads hundreds of settlers across treacherous cliffs, through brutal snowstorms, Indian attacks and buffalo stampedes to their destiny out west in Oregon. Along the way, he loses his heart to a beautiful pioneer woman whose love he never stops trying to win. Come see the exhibits and multi-media presentations at the California Trail Interpretive Center. As part of the multi-use perspective of the Bureau of Land Management, presenting and preserving cultural places such as the California Trail is part of the Bureau’s mission. The California Trail Interpretive Center, operated by the BLM, is eight miles west of Elko on I-80 at Hunter exit 292.

Short of a spring break adventure to some place energetically foreign or exotically new, we can gain plenty of culinary inspiration through a virtual trip that's as close as our own kitchen! While classic paella originated in the city of Valencia and boasts chicken, rabbit, snails, and peas, there is no single paella – recipes vary with every cook. However, there are some key elements shared across all paellas.

An introduction to Spanish cuisine would be incomplete without some focus on [Paella]. This classic preparation is based on layers of flavor produced with ingredients and technique. The result is a dry rice dish boasting plenty of complex flavors and dotted with chunks of meat, seafood, or vegetables.

Rice ~

Saffron ~

Rice, [Arroz], was introduced to Spain by Arab invaders in the 8th century. The fertile valleys around Valencia in northern Spain, became rice paddles through the implementation of complex irrigation canals.

Saffron gives Paella its distinctive flavor and color. Harvested by hand, saffron threads are the pollen carrying stigmas of a fall-flowering crocus, Crocus sativus. There are only three stigmas in each flower. Saffron threads are a rich maroon color, but impart a distinctive yellow color to paella.

The favored rice for making paellas is [Bomba] rice. Bomba rice is an heirloom variety that matures slowly, forms dense, ovoid grains. It absorbs 50% more liquid and flavors than other varieties, and the individual grains retain their shape. Other short-to-medium grains such as [Arborio], may be substituted for bomba rice. Avoid sushi rice or any long-grain rice. The finished paella should feature dry, individual grains cooked to al dente perfection, neither sticky, or creamy.

It’s best to purchase saffron in its whole form, saffron threads; like all spices, flavor is retained better when kept whole. (Beware of saffron powder; it does not retain its freshness and may be diluted with other, less expensive powders such as turmeric). Crush saffron threads into a powder with a mortar and pestle. For paella, rinse the mortar and pestle with some hot stock to capture every bit of the precious spice.

Paellera ~ The phrase, “paella pan” is redundant since paella means “pan.” Perhaps a more correct term to use is [Paellera] – a pan in which paella is made. A paellera has a broad base and shallow, sloped sides, and comes without a lid. Its shape is key to making an excellent paella. The rice mixture in the pan should be no more than ½-inch in depth. This facilitates the evaporation of the liquid and formation of the much-desired crust. Paella is served directly


from the pan. It’s brought to the table as part of the presentation, not unlike the grand moment of bringing the Thanksgiving turkey to the table. Paella was traditionally a peasant dish made for lunch over an open fire in the fields. Today, an open fire or grill set-up is still a great way to make paella. The smoky flavors of a grill add to the flavor and taste dimensions. But, great paellas may also be made on the stovetop and finished in the oven.

The rich, complex flavors of paella are built in layers. The first flavor layer develops while sautéing the fresh meats or seafood in the paella pan. The seared meats impart their flavors to the hot olive oil and carry forward to subsequent stages.

The second flavor layer forms in the making of the [Sofrito]. A sauté of garlic in olive oil and grated tomatoes forms the simplest of sofritos. Paprika adds color to this stage. Reduce the sofrito until it has a thick consistency, then stir in rice until coated.

The third flavor layer is the stock. A complementary stock, (chicken broth for a chicken paella, or shrimp stock for a seafood paella), will be absorbed by the rice. Saffron is added to the paella as part of the liquid stock.

The fourth flavor layer forms as the [Socarrat]. The socarrat is the thin layer of rice at the bottom of the pan and along the sides that has toasted to a golden brown. This caramelized and tasty crust is a highly desirable element of any paella.

Tools for this recipe ~ Many kinds of paella exist – Levante, Valencian, and others based on where you find yourself in Spain. This paella recipe features seafood. [Chiringuitos] are seaside food stands. It’s that kind of dish – one meant to showcase the catch of the day. Use whatever seafood is favored and fresh. We substituted class juice for shrimp stock and scallops for monkfish. Aromatics formed the paella’s base while paprika and saffron produced the alluring color and flavor. Come summer, the Spanish flock to the water with the determination of fish. Awaiting them on the beach are chiringuitos, humble seaside establishments that are to the Spanish coast what clam shacks are to New England. There is usually a pretty terraza with a view of the sea and a menu that revolves around salt-baked fish, lacy fried baby squid, clams in salsa verde, and invariably a simple but irresistible mixed seafood paella, such as this one. Feel free to play with the seafood assortment here, substituting mussels for the clams and small scallops for the monkfish, but keeping the proportions pretty much constant. A good seafood paella is a minimalist affair, with few other ingredients besides seafood and rice. As the flavor depends on a good rich fish sock, I strongly recommend using Shrimp Shell Stock or another well-reduced flavorful fish or seafood stock. And don’t skip the allioli for serving.

[Paella Pan] A broad shallow pan is an essential element for a successful paella. Liquids are easily absorbed and reduced, and a tasty bottom crust is formed.

[Mortar & Pestle] Saffron is best purchased whole as saffron threads. Crush whole saffron into a powder with a mortar and pestle. Rinse the mortar with hot water and add to the stock.

[Sauce Pan] Keep temperatures consistent at each paella stage. Heat and keep the liquid stock at a simmer. Add hot stock as needed while the rice cooks to al dente tenderness. MARCH 2013 | everythingelko.com

Served as a hearty tapa, or as an entrée, the combination of chicken, parsley, roasted red peppers, ham and Fontina produced a delicious blend of flavors. The layers were rolled together, breaded, then fried into deliciously golden cylinders. Cross-cut slices revealed beautiful layers of color creating a feast for the eyes. The thin crust provided just the right amount of crunch.

Classic flamenquines (Andalusian fried pork and serrano ham rolls) tend to be a bit pig-intensive and hefty. Not this updated chicken version, which I tasted in the Andalusian city of Osuna. Normally the rolls are layered with only ham and chopped parsley and garlic, but here they are made brighter and moister by the addition of piquillo peppers and luscious melting cheese. Sliced, the rolls turn into delicious, colorful pinwheels that can be served as a tapa or a light luncheon dish.

Technique ~ Whether beef, veal, pork or chicken, pounding meat to a thin, even thickness is a technique worth mastering. Thin, even pieces will cook faster, and consistently. In the above recipe, the thin pieces are layered with other ingredients and rolled together.

[1] Butterfly or slice thick meat or chicken breasts to that they are no thicker than 1/2 –inch.

[2] Place the meat in a plastic bag or between two sheets of heavier plastic wrap.

[3] Sprinkle water between the meat and plastic to prevent sticking.

[4] Pound with a meat mallet beginning at the edges and working toward the center.

Recipe note ~ Originally a signature dish of Cordoba, traditional [Flamenquin] is made with pork loin and simple layers of parsley, garlic and Serrano ham. The layers are similarly rolled together, breaded and fried. The Andalusian version above deviates from this tradition by using chicken and roasted red peppers. [Flamenquin], translated as “little Fleming,” presumably connected the golden crust of the fried cylinders with the blond-haired Flemings that had immigrated to Spain in the 1500s.

Frequenting the tapas menu everywhere, these albondigas, (or meatballs), are not your mother’s meatballs. This version of meatballs is a delightful concoction of flavors – veal, pork, applesauce, mushrooms, onion, and pancetta. The meshing of flavors resulted in something close to addictive! We cooked the entire batch at once, and stored the extras. They reheated wonderfully as a quick appetizer the next day. This recipe also features an Almond and Saffron Sauce for dipping – a delicious accompaniment for these meaty morsels.

FOR THE MEATBALLS: 3 tablespoons olive oil
3/4 cup finely chopped white onion
1 very large Portobello mushroom (about 4 ounces),
wiped clean with a damp paper towel and finely chopped
2 slices white sandwich bread, crusts removed
1/3 cup milk
10 ounces ground veal
10 ounces ground pork
2 to 3 ounces sliced pancetta, minced (see note)
1 large egg, beaten
3 tablespoons unsweetened applesauce
3 tablespoons minced fresh flat-leaf parsley, plus chopped parsley for garnish
1-1/2 teaspoons sweet (not smoked) paprika
2 teaspoons freshly ground black pepper
1-1/2 teaspoons coarse salt (kosher or sea), or more to taste
All-purpose flour, for dusting the meatballs
Crusty bread, for serving

FOR THE ALMOND AND SAFFRON SAUCE: (OPTIONAL) 3 tablespoons olive oil
1/2 cup finely chopped white onion
Reserved chopped Portobello mushroom
1 medium-size ripe tomato, cut in half, peeled, and seeded, 2 tablespoons medium-sweet sherry, or 1 large pinch of sugar
1/4 cup dry white wine
1/2 cup chicken stock or broth
1 slice (about 3 inches round and 1/2-inch thick), baguette, cubed
2 medium-size garlic cloves, coarsely chopped
8 toasted almonds, coarsely chopped
2 tablespoons finely chopped fresh flat-leaf parsley
1 small pinch of saffron, pulverized in a mortar and steeped in a 2 tablespoons very hot water

1. Make the meatballs: Heat 1 tablespoon of the olive oil in a medium-size skillet over medium heat. Add the onion and cook until translucent, about 4 minutes. Add 2 cups of the chopped mushroom, reserving the rest for the sauce, if making. If not making the sauce, add all the chopped mushroom here. Cook, stirring, until it releases and reabsorbs some of its liquid, about 5 minutes. Let the mushroom mixture cool. 2. Place the bread and milk in a small bowl and let soak for 5 minutes. Drain, squeeze out the excess liquid, and finely crumble the bread. 3. Place the crumbled bread and the veal, pork, pancetta, egg, applesauce, parsley, paprika, pepper, salt, and the mushroom mixture in a large bowl. Gently knead the meatball mixture with your hands just until all the ingredients are thoroughly combined; do not overknead. 4. Spread a thin layer of flour on a large plate. Wet your hands, then break off a piece of the meatball mixture and shape it into a 1-inch ball. Dust the meatball in the flour, shaking off any excess, then gently toss it between cupped hands to give it shape. Repeat with the remaining meatball mixture, placing the floured meatballs on a small baking sheet. 5. Heat 1 tablespoon of the olive oil in a very large skillet, preferably nonstick, over medium-high heat. Add half of the meatballs and brown all over, shaking the skillet so that the meatballs brown evenly. If you plan to serve the meatballs in the sauce, cook them for 3 to 4 minutes. If serving without sauce, cook them until cooked through, about 7 minutes, adjusting the heat so that the meatballs don’t burn. Using a slotted spoon, transfer the meatballs to a bowl. Add the remaining 1 tablespoon of olive oil to the skillet and cook the remaining meatballs in the same fashion. If serving the meatballs without the sauce, let them cool for 5 to 10 minutes, then sprinkle with the chopped parsley and serve with crusty bread. If you are making the sauce, don’t clean out the skillet. 6. Prepare the sauce: Heat 1 tablespoon of the olive oil in the skillet over medium heat. Add the onion and cook until translucent, 2 to 3 minutes. Add the reserved chopped mushroom and cook for 2 minutes. Add the tomato and cook, stirring, until it

Recipe Notes ~ begins to caramelize, 6 to 7 minutes. Add the sherry and wine, increase the heat to high, and cook for 1 to 2 minutes. Add the chicken stock, stir, then stir in the meatballs. Reduce the heat to very low, cover the skillet, and cook for 10 minutes.

7. Meanwhile make the picada: Heat the remaining 2 tablespoons olive oil in a small skillet over medium heat. Add the bread cubes and cook until they begin to brown, about 2 minutes. Add the garlic and almonds and cook until fragrant and just beginning to brown, about 1-1/2 minutes. Using a slotted spoon, transfer the bread, garlic, and nuts to a mini food processor. Add the parsley and saffron and pulse until the mixture is ground. 8. Gently stir the picada into the skillet with the sauce. Cook until the sauce is flavorful, 2 to 3 minutes. Remove the skillet from the heat and let cool, 5 to 10 minutes. Garnish with additional parsley, if desired, and serve with crusty bread. Serves 8 to 10 as a tapa, 4 to 6 as a light main course. Note: Freezing the pancetta for 20 minutes will make it easier to mince.

Meatballs exist in nearly every cuisine. These tips make meatballs easier no matter what country you’re celebrating.

[1] Finely chop all added vegetables, (onions, mushroom, herbs). This will even out the flavors and avoid awkward chunks when rolling the mixture into balls.

[2] To prevent sticking while rolling meatballs, wet your hands with water, or olive oil.

[3] Dust the formed meatballs with flour by rolling them on a plate sprinkled with flour. The very light coating of flour helps to form a better outer crust. [4] When frying meatballs, a nonstick pan is nearly essential. Fry the meatballs in batches while avoiding overcrowding in the pan.

[5] As an alternative to frying, meatballs may be baked in the over at 400 F. Place the meatballs in a single layer on a rimmed sheet pan that has been coated with olive oil. Shake or turn the meatballs every 7 minutes to allow an even crust to form. [6] Freeze meatballs, (raw or cooked), on a baking

"Tis the luck of the Irish".... As the late great George Bernard Shaw stated, "whiskey is liquid sunshine." This "liquid sunshine" has an interesting background and is one of the most ancient and greatest styles of whiskies in the world. Invented by medieval monks, Irish whiskey was used to heal a variety of illnesses. Whiskey comes from the Gaelic term "uisce beatha" meaning water of life. An old Gaelic proverb translates as; "What whiskey does not cure, cannot be cured." To this day a person of Irish descent will happily prescribe a glass of hot whiskey with cloves if you are suffering from a cold or the flu. Try it with hot water, lemon and honey. Furthering the popularity of Irish whiskey were Queen Elizabeth, who made it fashionable and Czar Peter the Great of Russia, who declared “Of all the wine of the world, Irish spirit is the best." By the 19th century business was flourishing with Irish whiskey the most popular whiskey in the world with over 160 distilleries.

To compete against the Scotch Whisky Industry, in 1966 John Jameson & Son, John Power & Son and the Cork Distilleries Company combined to form the Irish Distillers Group (IDG). Old Bushmills joined in 1972. They successfully re-launched their famous brands such as Jameson, Powers, Paddy, Redbreast and Bushmills. After a long battle with Guinness, Gilbey's and Cantrell & Cochrane, Pernod-Ricard, a big gun in the international spirits market, purchased IDG in 1988. Now, IDG has their global distribution network. Some say that the rejuvenation of Irish Whiskey in the U.S. was due to San Francisco's Buena Vista Cafe. Owner Jack Koeppler was served an Irish Coffee at Shannon Airport in 1952 and was obsessed with recreating this drink. Together with San Francisco Columnist, Stanton Delaplane, they did recreate the popular drink in the U.S.

Alas, the bubble then burst. Arnas Coffey (an Irishman) invented a patent still which the traditional Irish rejected and the Scots pounced upon. Next, Ireland's War of Independence (1919-1921) limited overseas markets. Ireland won freedom, but lost their biggest consumer, England.

The United States, number 2, was in the Prohibition Era and was passing off bootleg whiskey as Irish destroying its integrity. WWII was the final straw. Most small distilleries closed for good.

Water filters are rated based on the following criterion: 1. Reducing Contaminants in Drinking Water When understanding a drinking water filter’s contaminant reduction capabilities, there are two important criteria to consider: NSF Certification and chlorine reduction capability. First, make sure the filter you are considering is NSF Certified to Standards 42 and 53. The National Sanitation Foundation (NSF) is the most credible third-party testing organization and “NSF Certification” is considered the Gold Standard for thirdparty certification in the industry. NSF Standard 42 addresses chlorine, taste, odor and particulates. NSF Standard 53 addresses specific healthrelated contaminants, such as Cryptosporidium, Giardia, lead, volatile organic chemicals (VOCs) and MTBE (methyl tertiary-butyl ether) that may be present in public or private drinking water. NSF Certification ensures the filter has been rigorously tested and confirmed by NSF to fulfill the manufacturer’s claims for these standards. Second, check the filter manufacturer’s product data sheet to get the full story of contaminants they actually reduce or remove. Chances are good that if a filter reduces chlorine, lead, mercury, VOCs and MTBE, it most likely reduces everything else as well. VOCs (Volatile Organic Compounds), which include a large number of known carcinogens, like chloroform and benzene, are difficult to reduce through most purification processes, which make it hard to pass the NSF 53 certification test.

2. Installing a Drinking Water Filter Most drinking water filter systems are easy to install and pitchers require no installation at all. Filters that attach to or mount on your faucet are easy to install and are compatible with most standard faucet fixtures. Under counter and reverse osmosis systems require an extra hole in your sink for an additional drinking water faucet. Luckily, the holes made for drinking water faucets and soap dispensers are standard in size. If you have a sprayer or soap dispenser you don't use, you can remove them and use the existing holes for the drinking water faucet. If you don’t have any additional sink holes on your counter, you can have a plumber create a hole, which will typically cost around $100-$200. Most people will opt for the convenience of an under counter water filter if possible. Countertop water filters are an excellent alternative if the under counter water filter is not an option.

3. Cost of Drinking Water Filters A quality drinking water filter should last for years, not months. To ensure ongoing performance and efficiency, you will need to replace the filter cartridges on a regular basis. How often? That depends on the drinking water filter system and the amount of water you use through the system. Once you determine the cost and frequency of filter replacement, you can use this information to calculate the cost of owning a drinking water filter and your cost per gallon of clean, filtered drinking water. You should take into account the initial price of the system and how often you need to change the filter (filter capacity) to calculate your first year and ongoing cost of ownership.

Outdoor Winter Fun? Every winter, many newcomers arrive in Elko County, and many are from warmer climates such as the southeastern United States, where snow rarely falls. One of their first questions is often, “What can I do outdoors with my family to get some exercise and enjoy the snow?” This article provides information on several activities that are great for the whole family. The Humboldt-Toiyabe National Forest and other public lands in this area provide a huge variety of terrain for recreation of many kinds and for all abilities and ages. The Ruby and East Humboldt mountain ranges have several access points for people to hike, snowshoe, cross- country ski, and take the kids sledding. In the Rubies, Lamoille Canyon, sometimes called “The Other Yosemite,” is a beautiful recreation area with access for all of these winter sports. Lamoille Canyon is located 20 miles from Elko. While the road is not maintained or plowed in the winter, it is possible to park at various locations depending on the snow conditions. There are good areas to hike, snowshoe and sled in the Powerhouse and Lamoille-Talbot Trailhead area if the road is too snowy to drive up higher. The East Humboldts have good access via the Angel Lake Road (located around nine miles above Wells), which occasionally has snowdrifts here and there, but when clear, it is drivable to the Angel Creek Campground turnoff to begin either hiking, snowshoeing, or skiing. There are also gentle hills near the parking area that provide good sledding areas for the family. When the snow is packed hard or roads are clear, winter hiking is just as much fun as summer trips, and there is very little specialized gear required. On some trails and roads, especially in Lamoille Canyon, there is enough foot and snowmobile traffic to pack the snow hard enough to walk on without snowshoes.

While it is important to watch for icy spots, hiking with a pair of ski poles for balance is not only a great workout, but can help get you up the slick areas. In the early mornings, when the snow is still frozen, hiking on the hard snow can be great fun. When the weather is warm mid-day and into the afternoon, the snow gets very soft and can be a bit of a slog, but early mornings are a great time for a winter hiking workout. Snowshoeing is excellent exercise and if you can walk, you can snowshoe. The wonderful thing about snowshoes is that they allow one to travel comfortably across the snow without sinking in as deep as you would with just your boots. Snowshoes can be purchased at just about any outdoor store and come in a variety of colors, sizes, and shapes, with different binding systems depending on the brand. They are sized based on body weight and there are many brands that offer snowshoes sized for kids. They can be worn with any warm, wellfitting winter boot that is comfortable for walking. A pair of ski poles will help with balance and provide an even better workout, but are not required. Want to try snowshoeing? Borrow some gear and join us for the second of our “Snowshoe by Moonlight” winter series, presented by the U.S. Forest Service, BLM, and Cedar Creek Clothing. The first moonlight event of the winter was on January 26 at the California Trails Center, eight miles west of Elko at Hunter Exit 292, and the second will be on February 23 at the Angel Creek Campground above Wells, just off the Angel Lake Road. The third and final snowshoe event of the season will be March 23, location to be decided. Nevada State Parks has also joined the series and started off the winter with a January 6 snowshoe at South Meadows in South Fork State Park, around 20 miles south of Elko.

We look forward to continuing to work with State Parks on future events and encourage folks to enjoy the snow on all our public lands. Cross-country skiing is one of the best aerobic exercises. While it does require more practice, skill, and specialized gear, it is lots of fun and adds variety to your winter-outdoor activities. To set yourself up for cross-country, or Nordic, skiing, you will need skis (a wax-less base is best if you are just starting out), poles, and specialized ski boots that fit in the bindings mounted on the skis. Local outdoor shops will provide you with exact fittings and the expertise for the right gear for you to either rent or purchase. While there are no set tracks on the local National Forest, the packed snow in Lamoille Canyon or the road around the Angel Creek Campground are great places to ski. The hills are relatively gentle and allow even beginners to test their gear and skills in a beautiful winter mountain setting. On a final note, before heading out, tell someone where you are going and when you expect to return, bring extra food, water, warm, and dry clothes. A good daypack is a must for any winter adventure, so that you can carry the essentials. Try not to travel alone and if you do, again, always let someone else know what your arrival and departure plans are. If you have recently moved to Elko County and are new to winter and snow sports, there are many fun ways to head outside with your family, get some exercise, and enjoy the sunshine and local mountains. You don’t have to spend a lot of money and you don’t have to travel far - an outdoor recreation playground is just a short distance from your backyard.

The trick is to add more without looking overdone!

Your nighttime look should be an amped-up version of your daytime makeup!

Step 1. Clean up- Use blotting papers to remove any oils or build up from throughout the day. Step 2. Eyes- For a sultry nighttime look, use darker shades of your daytime eyeshadow to enhance your eyes. Add some to the creases above your eyes, then use the same shade around the outside corners and under your bottom lashes. Add eyeliner to the top, you can use liquid liner if you want to give it a little more to your look. Caution: avoid using new mascara over old mascara because it can cause clumping

Step 3. Skin- You don't need as much blush as you do during the day. Since you've been awake all day and your blood has been pumping well and doing a good job of giving you a rosy complexion. In your nighttime look you need to spice it up with a little sparkle! Use a shimmer powder to highlight your cheekbones, chin, forehead and neck. If you really want to take it to the next level add some to those sexy shoulders,collarbone,and cleavage!

Step 4. Lips- To take your pout from day to night apply lip color that is a few shades darker than your natural lip color and top it off with a high-shine lip gloss. BE CAREFUL Take care in going heavy on the eyes not to overdue it on the lips. For example: if you want those red Betty Paige lips, have your eyeshadow on the lighter side. Trying to highlight both will leave you looking less like a hottie and more like a circus clown!!!

I remember growing up, not that long ago…as a kid you drank out of a fountain in school, in the airport and in many other public places. One thing was missing in our house: cases of bottled water. I guess that is the way I grew up and today I still drink water from the faucet. Why is all this a big deal? Well the question has come to my attention several times: which is better, Municipal water or bottled? And honestly my go to answer was always municipal for one reason: waste… I couldn’t see anything wrong with it and you didn’t create hundreds of thousands of empty plastic bottles. And that was the extent of my knowledge and that was a strong enough argument for me. Hey I have heard that ignorance is bliss, right? I am a curious person and set off to figure out what were the real differences and advantages…and I was shocked! After quite a bit of research my opinion actually hasn’t changed, the reason and arguments have however. Evocative names and labels depicting pastoral scenes have convinced us that the liquid is the purest drink around. “But no one should think that bottled water is better regulated, better protected or safer than tap,” says Eric Goldstein, co-director of the urban program at the Natural Resources Defense Council (NRDC), a nonprofit organization devoted to protecting health and the environment. Yes, some bottled water does come from sparkling springs and other pristine sources, but more than 25 percent of it comes from a municipal supply. The water is treated, purified and sold to us, often at a thousandfold increase in price. Most people are surprised to learn that they are drinking glorified tap water, but bottlers aren’t required to

list the source on the label. This year Aquafina will begin stating on labels that its H2O comes from public water sources. And Nestlé Pure Life bottles will indicate whether the water comes from public, private or deep well sources. Dasani acknowledges on its website, but not on the label itself, that it draws from local water. Bottled water is regulated for safety, but it really is a tricky topic. The EPA regulates tap water, while the FDA oversees bottled. Yet FDA oversight doesn’t apply to water packaged and sold within the same state, leaving some 60 to 70 percent of bottled water, including the contents of water cooler jugs, free of FDA regulation, according to the NRDC’s report. In this case, testing depends on the states, but the NRDC found that they often don’t have adequate resources to oversee bottled water, in some cases lacking even one full-time person for an entire state. The FDA requires bottlers to regularly test for contaminants, but the agency considers bottled water a low-risk product, so plants may not be inspected every year. According to one FDA official, it’s the manufacturer’s responsibility to ensure that the product complies with laws and regulations. Some bottlers turn to NSF International, a trade group that conducts yearly unannounced inspections of plants, looking at the source of the water and the treatment process, and testing for contaminants. Other companies belong to the International Bottled Water Association (IBWA), which also performs annual unannounced tests to ensure the plant is up to FDA standards. IBWA has its own regulations, some of which are stricter than the FDA’s.

Bottlers don’t have to let consumers know if their product becomes contaminated, but sometimes they pull their products from stores. In fact, between 1990 and 2007, this happened about 100 times, says Peter Gleick of the Pacific Institute in Oakland, California. Among the reasons for recall: contamination with mold, benzene, coliform, microbes, even crickets. The transparency is what is amazing… as I am sure that there are some places in the states and in the world, where bottled water might be your better choice, but I can say that I have called the Water Department in Elko and on top of being very nice, prompt and open, they give you any information you could want to know about your water. You can even log onto their site at www.ci.elko.nv.us and go to the water department tab and look at the report or go down and talk to a live person. Can you do the same as easily with say Aquafina? Probably not. So on top of the water being almost free (not quite) it is in good shape, and that brings me to my final point fluoride. Some people shy away from municipal water because they add manmade fluoride. In Elko, as far as I can tell from the report, municipal water is not a significant source of that drug. Am I against it in general? No. I do have a problem with cities adding it into the water supply that it’s citizens drink. If you go to a doctor and as a patient he feels you need to be prescribed some fluoride or you are lacking it, that is a different story all together. There is a great resource about fluoride and it’s benefits or lack there of (depending on your opinion) http://www.fluoridealert. org/ it can really help you make a decision on the subject for yourself. So bottom line as most things in life, educate yourself. Don’t take things for granted, call your city and ask what is and what is not in your water… make a decision use a home filter if you don’t like the flavor or dab a bit of lemon in it. But I am asking that you don’t just assume something is bad or good. I am glad that the water in Elko is regulated the way it is and that I can feel safe giving it to my family. Don’t get me wrong there are occasions I am sure where the water sources get compromised, but they will let you know and then turn to a good high quality bottled water until the city can rectify the problem.


International Motivational Speaker, Author Coming to Elko

Craig Valentine, Toastmasters International 1999 World Champion of Public Speaking, will be the keynote speaker on May 3 and 4, 2013, at the Toastmasters, District 15 Spring Conference. Mr. Valentine is an international motivational speaker, author, speech coach and storyteller. The educational conference on leadership and public speaking will be at Great Basin College. The conference, open to the public, will provide useful and beneficial educational sessions by experienced speakers and leaders. In addition, there will be two speech contests: Tall Tales and International speech. Mr. Valentine says about himself,” As a 10-year old I was once called “Daffy Duck” because of the enormous lisp I had when I spoke. For years after that I concentrated on each word that left my mouth, and I have now turned myself into a public speaker. Craig Valentine is also the CoFounder of the World Champion’s Edge program, which helps up-and-coming speakers turn their presentations into huge profits. Valentine is the author of the groundbreaking book, The Nuts and Bolts of Public Speaking, Co-Author of the book, World Class Speaking, and contributing author for the book Guerrilla Marketing on the Front Lines. He has an MBA from Johns Hopkins University and he is certified as a Co-Active Coach and a Guerrilla Marketing Coach. He is the co-leader of the Guerrilla Marketing Coach Certification Program and he is a recognized expert in the Master Business Building Club. RACE SERIES Getting you ready for the Ruby Mountain Relay!

The Ruby Mountain Race Series is a collective group of 6 different road races that range in distance from 5Ks to a half marathon and of course, the 184-mile Ruby Mountain Relay. All of the races are unique to their location and all offer a taste of the beauty that exists here in Elko County. These races are designed to be for the beginner runner that just wants to try something new all the way to the accomplished racer. The Race Series was initiated as a way to widen the Ruby Mountain Relay family circle and encourage those who might need a little direction in their preparation for the 2013 Ruby Mountain Relay being held on August 16-17th. In fact most of the race courses are run on sections of the actual Ruby Mountain Relay course. The series started in October with the Serial Thriller 5K Run/Walk but it’s not too late to jump in! The next 5K race will be the Health & Fitness Fair 5K Run/Walk coming March 9, 2013 with a start and finish at the Elko Convention Center. (Not part of the official series) The Ruby Mountain Race Series is mileage progressive so the following race jumps up to a distance of 6 miles on April 27, 2013; the STARR VALLEY SPRING RUN OFF 10K Run/Walk near Deeth, NV after which is the much anticipated 1st annual LAMOILLE CANYON HALF MARATHON on June 22, 2013. KT Services Coach USA will be providing bus services to Roads End at the top of Lamoille Canyon for one of the fastest half marathon courses in Nevada. On July 27, 2013 it comes back to another fun 5K & Kids One-Miler at the Wells Car show just in time for the crowning jewel, the Ruby Mountain Relay on August 16-17, 2013!

You also won’t want to miss the Cowboy Color Chase family fun run/walk 5K in conjunction with the Elko County Fair on August 30, 2013. Color Chase participants are also invited to participate in the fair parade, just after the race concludes, and be part of the Color Chase Festival with even more COLOR to enjoy! Fun Autism socks are being sold during the registration process to help raise money for the Northern Nevada Autism Network and for you to wear during the Color Chase.

Grow Your Own S pring S chedule

Workshop series available Elko begins April 3 The University of Nevada Cooperative Extension’s spring “Grow Your Own” gardening series will run from Apr. 3 through May 22. The upcoming session will include eight two-hour weekly workshops featuring a back-tobasics guide to great harvests in Nevada. Classes will be held in Elko via videoconference at the Elko County office of the University of Nevada Cooperative Extension, 701 Walnut Street, Elko. Western Area Horticulture Specialist Heidi Kratsch said the “Grow Your Own” series is a workshop that provides information on growing food in our harsh, high-desert climate. “We provide unbiased information on both conventional and alternative gardening methods — information people won’t find anywhere else.” “No matter where people live, whether they have an apartment with a small patio or a house with an acre of land, they will find topics of interest,” Kratsch said. “We talk about growing in all kinds of situations and are helping people to be more self-reliant.” The cost to attend individual courses in Elko is $15. Those interested in registering for all eight sessions pay only $60. Full course participants will receive a USB-flash drive containing gardening resources. Workshops will be held from 6-8 p.m. on Wednesday nights.

Easter Nest Cookies! We don’t always believe in taking short cuts....but sometimes you have to. So these cookies could be created easily with store bought sugar cookie dough, store bought frosting and all you are left to do is create! Or...you can skip the shortcuts and start from scratch!

Classic Sugar Cookie Dough (or use your favorite cookie dough!) 2 3/4 c. Flour - sifted 1 c. butter 1 tsp. baking soda 1 1/2 c. white sugar 1/2 tsp. baking powder 1 egg 1 tsp. vanilla extract Preheat oven to 375 degrees F. In a small bowl, stir together flour, baking soda, and baking powder. Set aside. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto an ungreased cookie sheet. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Quick Vanilla Cream Frosting 3 c. confectioners’ sugar 1-2 tbsp. whipping cream 1 c. butter 1 tsp. vanilla extract Mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes. Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency. Once your cookies are cool, frost them with a drop of frosting. Then sprinkle coconut on the tops...you can use white, or simply dye small amounts of coconut any color you’d like! Then top with your favorite jelly beans!

Crafting: Pass or Fail Contributed by Shippy Chic

I sure hope I have saved a lot of you DIY'ers some time and trouble by putting these pinterest projects to the test. Let's face it, some can be a major FAIL! For instance, the Jolly Rancher suckers: The website simply states to line up three jolly ranchers on some wax paper on a cookie sheet and bake at 250 degrees for about 6 mins. Sounds easy enough, except the wax paper sticks to them, I even tried another batch and turned the wax paper shiny side down and it still stuck. So for this reason I give this a C-. I would have given it an F except my kids still ate them and told me that they were really good and the wax paper came off eventually. Yuck!!

Easter Decor: Another craft I found was a cute Easter Egg tree made out of plastic eggs, a foam cone, and some plastic grass. Pretty darn easy if you ask me, it was soooo simple. Just hot glue the eggs around the foam and where there are spaces fill in with grass. This gets and A+ because it was such a quick and easy project, plus it was fairly inexpensive too. You could also get a bit more creative and glitter your eggs if you wish to have a little more bling. All blue robin eggs would make a unique centerpiece as well, the possibilities are endless.

Embellished Lip Glosses: This project required glitter tape which I could not find, so I decided to put my own spin on it and use trimmed down scrapbook paper, and ribbon. TIME WARNING: Be careful, there are so many patterns and colors of paper and ribbon out there that you could literally spend hours just deciding which ones to choose. So maybe have and idea in your head on your color scheme before you hit the store. I purchased all kinds of things to embellish, lipgloss, chapstick, tic tacs, etc... All I did was wrap the paper around and and hot glued the seam. Same technique with the ribbon. I thought they turned out great and it was pretty fun. This gets a B+ just because it was a bit time consuming.

Under the Weather Gift: I wanted to share another awesome idea, This was more like a "put it together" rather than a "craft project", and it was something I pinned and kind of forgot about until my sister was feeling ill. Just fill a coffee cup with a travel tissue pack, an herbal tea bag, honey, a few cough drops, a lemon, and some chapstick. Tie a ribbon around the neck of the honey bear (I forgot on mine) and its complete. It would be a thoughtful little "something" you could leave on a co-workers desk if they were feeling a little under the weather. Another A+.
