Kids of All Ages at the Museum Second Saturday and TNM

At the Northeastern Nevada Museum, newly appointed Education Coordinator D’ette Mawson plans special events and special programs for children of all ages. The highly popular Second Saturday—for kids in the 3-10 age range—will continue and has programming planned through June. This activity takes place from 10:00am-12:00pm on the second Saturday of each month. Admission is free. Have fun with art and craft projects, then stick around to explore the museum. Children must be accompanied by an adult. On March 12, there will be a Dr. Seuss birthday scavenger hunt. Meet the Cat in the Hat and hear a story. For April 9, enjoy plant pets and an animal safari in the Wanamaker Wing. The May 14 Second Saturday will toot the whistle on the story of the transcontinental railroad through Elko County. On June 11, kids are set to create their own time capsules. New this year is an activity for a slightly older group of young people. Scheduled on Wednesday, March 16, from 4:00-5:00pm, is Teen Night in the Museum or TNM. All in the 12-18 age range are welcome to play Museum Jeopardy! (which is based on the longtime television game show Jeopardy!, hosted by Alex Trebek). Contestants will answer questions on history and pop culture to win prizes. CRÊPES sweet savory &

Light and delicate, sweet or savory, crêpes are realizing a renaissance and gaining renewed appreciation as an impressive, yet deceptively easy entree or dessert presentation.

French in origin, crêpes are found at the fanciest of restaurants, and simultaneously on the streets as a popular walking snack food. Not many foods have this range of performance in popular culture. Once the rage in the 60s and 70s, crêpes are currently enjoying a renaissance along with the current flashback fascination with those decades. It’s a welcome redux on a favorite food. Crêpes are a high/low sweet. They can be the finish of a luxe meal or a snack you pick up at an outdoor stand and eat on the run. Perhaps the most famous crepe dish is crêpes Suzette, a dish that’s attributed to a mistake. In 1895, Henri Charpentier, who would later become a great chef, was a young waiter in Monte Carlo charged with serving crêpes to the Prince of Wales, who would later become the King of England. In that age of tableside service, Charpentier had a pan of liqueurs at the ready to make a sauce for the guest, when the alcohol went up in flames. The waiter may have been young, but he was resourceful – he quickly slid the crêpes into the pan of boiling liqueur, swirled them around, and, with extraordinary élan, presented them as Crêpes Princesse, honoring

Suzanne, Edward’s daughter, who was at the table. Later the name was changed to Suzette, ostensibly at the prince’s request. Not surprisingly, the paper-thin pancakes get simpler treatment on Paris streets, where crepe stands are abundant. Often you’ll see a stand about the size of a telephone booth attached to a café or on a street corner, and when you go to markets, you’ll find mobile crepe and waffle trucks, usually with lines of eager snackers in front of them. The most popular toppings for snack crêpes are sugar and butter (put a pat of butter on a hot crepe, spread it as it melts, and sprinkle with sugar), jam or marmalade, Grand Marnier (a splash creates a crêpes Suzette moment), Nutella, or, for a splurge, Nutella topped with thin slices of banana. The crêpes are made on large round griddles: the batter is smoothed over them with a long wooden spatula, and then, when both sides of the crepe are cooked and the topping has been added, the spatula is used to fold the crepe into quarters. You end up with a four-layer triangle of crepe that, wrapped in a piece of waxy paper, is not just delicious, but the best hand warmer on a winter’s day. Usually street-corner crêpes are made with the simplest ingredients, but when you’re making crêpes at home, there’s no reason not to make them with a little extra butter and a spoonful of dark rum, so that even if all you do is sprinkle them with sugar, you’ve got crêpes with a lot of flavor. BUTTER & RUM CRÊPES Fancy and Plain
(Crêpes Suzette-like) Makes about 10 crêpes

Crepe batter is very quick to make, but it absolutely must rest in the refrigerator before you use it – it needs the rest and chill to become perfectly blended and to thicken. 2-12 hours or more is ideal. Crêpes: 2 T sugar

3/4 cup whole milk

Grated zest of 1/2 lemon

3 T unsalted butter, melted

Grated zest of 1/4 orange

2 t Grand Marnier (optional)

Pinch of salt

1 T dark rum

2 large eggs

1/2 cup all-purpose flour

Canola oil

Sauce: 1/3 cup honey

1/3 cup fresh orange juice

1/4 cup fresh lemon juice

7 T unsalted butter

Filling: Lemon Curd To Make the Crêpes: If you’d like, put the sugar and zests into a bowl and rub the ingredients together with your fingertips until the sugar is moist and very fragrant. Rubbed or not, put the sugar and zests in a blender or food processor. Add the salt, eggs, milk, rum or vanilla, and Grand Marnier, if you’re using it, and whir to blend. Pour in the butter and whir until the mixture is well blended. Add the flour and pulse the machine to incorporate it. Make certain the flour is blended, but don’t mix the batter too much. Pour the batter into a pitcher or a large measuring cup with a spout, cover, and refrigerate for at least 2 hrs. When you’re ready to make the crêpes, sprinkle a dinner plate with sugar, and keep the sugar bowl close by. Check

LEMON CURD Makes a generous 2 cups 1-1/4 cups sugar

1 T light corn syrup

4 large eggs

About 3/4 cup fresh lemon juice

8 T unsalted butter, cut into chunks In a medium heavy-bottomed saucepan, whisk the sugar and eggs together until blended. Whisk in the corn syrup and lemon juice and then drop in the chunks of butter. Put the saucepan over medium heat and start whisking, taking care to work the whisk into the edges of the pan. If

the batter: it should be just a bit thicker than heavy cream. If it seems a little too thick – it should pour easily – thin it with milk, stirring it in a drop at a time. To make the crêpes, you’ll need a seasoned or nonstick 7-1/2-inch-diameter crepe pan or a similar-sized skillet. Rub the pan with a lightly oiled crumpled paper towel and put the pan over medium heat. When it’s hot, lift it from the heat and pour in 2 to 3 tablespoons of batter; as soon as the batter is in the pan, swirl the pan to spread the batter in a thin, even layer. If you’re new at this, the easiest thing is to pour in more batter then you need, quickly swirl the pan, and then pour the excess batter back into the pitcher. Return the pan to the heat – use a small spatula to cut off the tail that formed if you poured back the batter – and cook until the top of the crepe is set. Run the spatula – an offset icing spatula is great for crepe making – around the edges of the crepe and take a look at the underside: if it’s browned, flip it over, a job best done with your fingers. Cook until the underside is speckled with brown spots (t will never be as brown or a s pretty as the first side). Transfer the crepe to the sugared plate, sprinkle it lightly with sugar, and continue with the rest of the batter. To Make the Sauce: If you have an immersion blender, this is a good job for it; if not, use a whisk. Melt the honey in a microwave oven or in a saucepan over low heat. Cool the honey for 5 minutes, then add the orange and lemon juices. Blend or whisk in the butter, adding it a tablespoon at a time. You’ll have a smooth, slightly thickened sauce. If you want to fill the crêpes, spoon some lemon curd onto the upper-right-hand quarter of each crepe, fold the crepe up from the bottom, so you cover the filling, and finish by folding the left half of the crepe over the right, forming a triangle. If you’re not filling the crêpes, fold them in quarters. Arrange the crêpes on plates, drizzle the sauce over them, and serve immediately.

your whisk is too big to clean the edges of the pan, switch to a wooden spoon or a silicone spatula. Keep heating and whisking the mixture without stopping. After about 6 to 8 minutes, you’ll notice the curd starting to thicken – it won’t be very thick, but the change is easily perceptible. When the curd is thickened and, more important, you see a bubble or two burble to the surface and then pop immediately, remove the pan from the heat. Scrape the curd into a heatproof bowl or a canning jar or two. Press a piece of plastic wrap against the surface to create an airtight seal, and let the curd cool to room temperature. Chill before serving.

making

CRÊPES Crêpes are thin, delicate, egg-based pancakes. While intimidating at first, making crêpes couldn’t be easier! The batter is quite cooperative and did not stick while cooking.

TIP Don’t overmix the batter – it should be smooth with not too many bubbles and the consistency of heavy cream.

MIX

1. Mix together well, the eggs, milk, and any flavorings. 2. Add the melted butter and mix well.

STORE

Crêpes may be made just prior to enjoying, or made ahead of time and stored for future use. Once the crêpes have cooled, stack and wrap well with plastic wrap. Crêpes may be kept for up to 2 days in the refrigerator. Or, freeze the well-wrapped stack of crêpes and thaw in the refrigerator or microwave when ready to use. A slip of wax paper between the crêpes assists in keeping them from sticking to each other.

3. Add the flour, stir to just combine. 4. Refrigerate and let the batter rest for at least 2 hours or overnight. The flour changes composition as it rests.

TOOLS

A crepe pan with its very shallow sides is the easiest, but the crêpes were also easily made in a nonstick skillet, and a regular stainless skillet as well.

TIP Add just enough batter to coat the surface in a thin layer. Pour off any excess. 1. Heat a shallow pan over medium heat. 2. Swipe the cooking surface with an oiled paper towel. This may be necessary only for the first crepe, but repeat between crêpes if required. 3. Pour 2-3 T of batter, onto the hot pan and immediately swirl the batter to cover the cooking surface. The batter will cook quickly. 4. Lift the crepe, as the batter loses its wet look, and check the browning on the underside. If nicely golden, flip the crepe with a broad silicone spatula.

Remove the finished crepe from the pan and place on a waiting dinner plate. Crêpes may be stacked as they are removed from the griddle. To Make the Filling: In a skillet, melt 2 tablespoons of butter, add the quartered mushrooms and sauté until the mushrooms are tender, about 4-5 minutes. Add the sliced scallions and sauté an additional minute. Add the shrimp and quartered scallops, and sauté for one minute. Add the dry white wine and allow to simmer for 1-2 minutes. Remove from heat and set aside. Meanwhile, in a saucepan, make the béchamel sauce base by melting 4 tablespoons of butter until bubbly. Add all at once, 4 tablespoons of flour and whisk vigorously together. While continually stirring, allow the roux to cook and the flavors to develop for 2 minutes. Add the milk and continue to whisk.

Once incorporated, add the chicken stock, and any pan juices from the seafood mixture. Whisk the sauce until smooth and thickened. Season with salt and pepper to taste. Add the mushroom and seafood mixture to the béchamel sauce and stir to combine. Add three-fourths of the grated cheese (6 ounces) and stir to melt the cheese and incorporate it into the sauce. To Assemble the Crêpes: Place approximately 1/3 cup of the filling in a line at the center of each crepe. Roll and fold the crepe into cylinder. At this point, the filled crêpes may be plated and served with a dollop of sauce on top and a garnish of chopped parsley, or the filled crêpes may be placed in a casserole, sprinkled with the remaining 2 ounces of cheese, and baked for 30 minutes until heated through thoroughly and the topping cheese nicely melted and browned.

Improvisation with

CRÊPES Crêpes, like tortillas, crostini, or other fresh breads, are a versatile vehicle for an endless array of fillings, toppings, and sauces. Crêpes beg for improvisation and are the perfect place to unleash some culinary creativity. Also, like the French, a favorite use of crêpes is as a vehicle for leftovers.

CLASSIC SWEET Crêpes Suzette Sweet crêpes with a classic citrus butter sauce with Grand Marnier, flame and serve warm. Crêpes Belle Helene Place sliced, poached pears on top of folded crêpes with ice cream and drizzle chocolate sauce. Bananas Foster Crêpes Warm bananas in brown sugar, cinnamon, rum, and butter; flame and serve on vanilla ice cream. Street Crêpes Top a warm crepe with butter and sprinkle with sugar. If you like, add a swipe of jam or marmalade.

FAVORITE SAVORY Spinach Crêpes Wilt fresh spinach and add to a creamy béchamel sauce. Fill the crêpes with the spinach mixture, top with fontina cheese.

Fresh Goat Cheese & Roasted Red Peppers Spread fresh, herbed, whipped goat cheese on crêpes, place a few strips of roasted red pepper on top, fold and enjoy. Ham and Cheese Layer a few caramelized onions on a crepe, sprinkle with diced ham, and strong grated Swiss cheese. Fold and warm the crepe.

QUICK & TASTY Hot Fudge Sundae Crêpes Fill crêpes with vanilla ice cream, fold or roll, drizzle crêpes with hot fudge, top with whipped cream and a cherry. Nutella Crepe Smear a tablespoon of Nutella on a crepe, fold and eat out of hand. Fruit Pie Crêpes Fill crêpes with any pie filling, fold or roll, make it a la mode with a scoop of vanilla ice cream. Jam or Marmalade Spread a spoonful of your favorite jam or marmalade on a crepe, roll or fold, enjoy plated or eat out of hand. Nut Butter Crêpes Apply a spoonful of your favorite nut butter – almond butter, hazelnut, or even peanut butter. Sliced bananas always seem to complement nut butters. Fresh Berry Crêpes Add a dollop of sweetened mascarpone cheese to a crepe, top with fresh fruit. Roll the crêpes and top with whipped cream and/or drizzle of chocolate sauce.

Mushroom Crêpes Saute a mixture of cremini, shitake, oyster, and bella mushrooms in butter flavored with a clove of crushed garlic Add in a tablespoon or two of cream cheese or a chunk of Brie. When all melty, fill the crêpes, roll or fold, top with extra mushroom mix.

Guinness Corned Beef with Cabbage

St. Patrick's Day Punch

Guinness Corned Beef with Cabbage SteamyKitchen.com Servings: 6 Prep Time: 5 minutes

Cook Time: 4 hours

Ingredients For the Corned Beef • 2 bottles Guinness beer • 2 tablespoons brown sugar • 3½ lb uncooked brisket for corned beef • 1 T pickling spice • 1/2 onion • 1 head garlic, halved

For the Vegetables • 1 head cabbage • 1 T cooking oil • 4-5 carrots, cut into 3/4-inch chunks • 1 lb red potatoes, cut into ¾-inch chunks • 2 T freshly minced fresh parsley

Preparation 1. Preheat oven to 300F. (You can use a slow cooker instead of cooking in oven.) Rinse and pat dry the brisket well. In a large pot, whisk together the beer and the brown sugar. Snuggle in the brisket, it should almost be completely covered by the beer. Add the pickling spice, onion and the garlic. Bring to a simmer on the stovetop, uncovered is best so you can keep an eye on it. Boiled-over beer is no fun to clean. 2. Once it begins simmering, cover the pot and place in oven to roast for 4-6 hours, flipping meat once during halfway point. Remove from oven. Spoon out 2 cups of the corned beef braising liquid to cook the cabbage. 3. To make the vegetables, cut the cabbage into 8 wedges. In a separate large, wide pot, heat up oil on medium-high heat. When hot, add the cabbage wedges and cook until browned, about a 3-4 minutes. Turn to brown the other side. Add in the carrots and potatoes. Pour in the reserved corned beef cooking liquid, bring to a simmer and cover the pot. Turn the heat to low and let cook for 10-15 minutes. Use tongs or a large spoon to carefully remove the cabbage and reserve. Continue cooking the carrots and potato another 5-10 minutes or cooked though (pierce with fork to check doneness). Sprinkle with parsley and plate up with the cabbage. 4. Slice up the corned beef and serve with the cabbage and vegetables. Pour a bit of the sauce over the corned beef just before serving.

Turkey Vultures - A HARBINGER OF SPRING The Turkey Vulture (Cathartas aura) has been absent from our skies since late fall. Vultures cannot survive the cold temperatures of our winters so they migrate south into southern Arizona and Mexico. Even though the appearance of vultures roosting in the Elko City Cemetery, the “tree” streets of Elko and the Lamoille Grove can be upsetting to many, to me they signal the end of winter and first true sign of spring. These birds are now slowly beginning their flight back north to their breeding grounds. Most years they make their appearance in our area by the middle of March

778-0606 the souvenirs you need to bring home for everyone. The list goes on and on. 3. What room type are you thinking about for that beach vacation or cruise: With resorts and cruises it’s all about location, location, location. How important is an ocean view to you? Did you want a balcony stateroom while on your cruise? The room type and location can greatly affect the cost of your trip. Just moving your trip to a resort off the beach is one example of a way to save money on your vacation budget. 4. What type of travel experience are you looking for? Is this your dream honeymoon and you want a romantic and relaxing trip? Or are you traveling with a group of friends for a birthday and you want something really upbeat and fun? Are there going to be children on this vacation? Different vacation destinations have different vibes and offer different experiences. Make sure you choose right one for you and everyone else in your travel group so no one is disappointed in the trip. 5. Keep checking those airline rates. The fares for flying can change not only daily, but hourly. Yes, that’s right I said hourly. What you see now, may not be the fare down the line. Check for flights out of different airports. Maybe it is worth that 4-hour drive to the next closest airport to save hundreds of dollars on your vacation.

42

MARCH 2016

Just don’t forget about the airport parking fees, hotel & meal costs towards your final budget. 6. Or, you can just call your local travel agent and let them do all of the above for you and more: Set up an appointment and meet them. Here you can ask questions about their services and what they can do for you. They can offer you their professional advice about your plans and possibly give you firsthand experience on where you want to go. A real live person to help you every step of the way, from reservation to travel and return home. Deal with someone who really cares, not a .com company who takes your money and offers no support if there is a problem down the line.

TED BY A CONTRIBU

As the 2016 season inches closer, San Francisco Giants fans can begin to expect another great season to come. With the addition of Samardzija and Cueto, the Giants starting rotation will most likely look like: 1. Madison Bumgarner 2. Johnny Cueto 3. Jeff Samardzija 4. Jake Peavy 5. Matt Cain

The Giants have won all three World Series in the last three even years. Is there room for a fourth Championship in their trophy case? The additions of Jeff Samardzija and Johnny Cueto make the Giants starting rotation look very promising. With the loss of Ryan Vogelsong and Tim Lincecum from their starting rotation, General Manager Bobby Evans needed to look for suitable pitchers to fill their shoes. Both Samardzija and Cueto have had very promising careers up to this point. Statistically Samardzija is coming off one of his worst years yet going 1113 with a 4.96 ERA (Earned Run Average) in 32 starts. But he’s had several good years in the past pitching for the Cubs and the A’s. In his eight-year career Samardzija has a record of 47-16 with a 4.09 ERA. Pitching lower in the starting rotation should take some stress off of him. Surprisingly, GM Evans was able to acquire one of the league’s biggest free agents Johnny Cueto. In 2015 Cueto went 11-13 with a 3.44 ERA in 32 starts last year. Despite falling under .500 last season, Cueto’s career win-loss record is 96-70 with a 3.3 ERA.

Now that doesn’t look like a bad 2,3 punch to follow Madison Bumgarner this season. “He’s a lefty version of me,” said Samardzija in an interview with ESPN. “Grumpy all the time on the mound. Swinging out of his shorts. I’m big fan of Madison. Depending on how healthy Cain stay this year, Chris Heston might be starting in the fifth slot of the rotation throughout the year. Heston threw a no-hitter last season. The Giants haven’t completely given up on Tim Lincecum in his search for a new contract. Lincecum is looking for another starting pitching job in the league where as the Giants are more interested in him coming out of the bullpen in relief. Lincecum has been successful coming out of the bullpen in recent years for the Giants. He had a lot of success as a starting pitcher winning back-to-back Cy Young awards for the Giants in 2008 and 2009, but he is a different pitcher than who he was in those years. General Manager, Evans was able to acquire outfielder Deonard Span. Giant’s fans hoped Evans would sign Justin Upton or Jason Heyward; but the organization hasn’t been known to sign “big” named position players in recent years. We all saw how getting Carlos Beltran went. In 2015 Span had a batting average of .301, with 22 RBI’s (Runs Batted In), and 5 HR’s (Home Runs). Span will likely be splitting time with Angel Pagan in Center and will also be seen playing in left field as well.

Walking onto a team where players already have rings must feel pretty good as new member of the team.

15-

Each even year there are a few new faces that end up being really crucial going down the road to post season, in 2010 there was Cody Ross, Juan Uribe, and Edgar Renteria. In 2012 we saw the additions of Hunter Pence, Gregor Blanco, and Brandon Crawford. Then in 2014 Michael Morse, Jake Peavy, and Tim Hudson were added to the mix.

In 2015 the Giants finished 84-78 only trailing the Los Angeles Dodgers who finished 92-70 clinching the NL West. With these new additions it’s hard not to expect great things from the 2016 Giants. Will Posey and Bumgarner be able to lead the Giants to win what could be their fourth pennant in six years further solidifying their dynasty?

2017 Ford Raptor The Ford Raptor has nothing more to prove off or on-road. When it first hit the market in 2010 it revolutionized the market for stock off-road vehicles of which has yet to be matched. For 2017 Ford intends to just improve that lead a bit more. “Not just leaner but meaner” Ford proclaims as this beast is powered by the twin turbo eco-boost V6 while shedding 500 pounds with an aluminum body. The eco-boost will be tweaked to get 500 hp while the 10 speed transmission will allow for greater gas mileage and versatility on and off-road. The redesigned transfer case and off-road modes likening the Land Rover climbing and off-road options leaves the 4 wheel drive as an understatement. Ford also improved the running clearance over the first generation and kept Fox Racing taking the shock at the head of the suspension. All in all this redesign is sure to perform as its parent did and you can bet the streets of Elko will showcase this beast soon.

Diabetes

IN YOUR PET

March is the month of Mardi Gras. Mardi Gras is a holiday that is for celebrating things we love and things that bring us joy. For everyone here at Elko Veterinary Clinic this means celebrating that special human animal bond that we have with our furry best friends! One thing that can interfere with that very special bond is a chronic

illness such as diabetes mellitus. Mellitus is a Latin term that means “Honey Sweet” due to the elevated blood sugar levels that the condition produces in the urine and blood.

Diabetes is a disease of the beta cells in the pancreas that produce the hormone insulin. Insulin regulates the level of glucose in the blood stream and controls the delivery of the glucose to the tissues in the tissues of the body. In simple terms, diabetes mellitus is caused by the failure of the pancreas to regulate blood sugar. Diabetes affects both cats and dogs. The clinical signs seen in diabetes mellitus are related to the elevated concentrations of blood glucose and the inability of the body to use glucose as an energy source. The four main signs seen with uncomplicated diabetes mellitus are increased thirst, increased urination, weight loss and increased appetite. You may also see cloudy eyes and generalized weakness. There are two type of diabetes. Type I diabetes mellitus, also called insulin dependent diabetes mellitus, results from the near-complete destruction of the pancreatic beta cells. This is the most common type of diabetes in dogs. As the name implies, dogs with this type of diabetes require insulin injections to stabilize blood sugar. Type II Diabetes Mellitus, also called non-insulin dependent diabetes mellitus, is different because some insulin producing cells remain. However, the amount of insulin produced is insufficient, there is delayed response in secreting it, or the tissues of the body are relatively resistant to it. Type II diabetes may occur in older obese dogs and most cats.

MARCH 2016

Diabetes is diagnosed based on the presence of typical clinical signs (excess thirst, excess urination, excess appetite and weight loss). The presence of persistently high level of glucose in the blood stream and the presence of glucose in the urine is easily revealed with routine bloodwork and urinalysis. Treatment requires one or more daily insulin injections and most importantly all require some sort of dietary change. The diet must be fed on a consistent schedule: the same food in the same amount on the same schedule every day. Treatment must become a part of the pet’s daily routine. When your pet is first diagnosed, frequent monitoring may be required before the pet becomes well regulated. Finding the right type of insulin and the right dose takes time. Different insulin varies in the terms of onset, peak and duration of action. Regular blood glucose curves with your veterinarian are required to get your pet’s diabetes under control with appropriate insulin therapy. Untreated or improperly regulated diabetes may lead to changes in the acid-base balance of the blood. This may cause vomiting, dehydration, weakness, depression, coma and eventually death. Due to the increased glucose in their urine and blood diabetic pets are also predisposed to other illnesses such as urinary tract infections and mouth infections. Diabetic pets also frequently develop cataracts which can lead to blindness.

Veterinary Clinic There is a large financial and personal commitment that is required for owners of pets with diabetes. The initial diagnosis and regulation costs can be significant especially if complications arise but treatment and maintenance costs (special diet, insulin and syringes) are minimal. Keeping a close eye on your pet with diabetes is very important. Things can change quickly and some pets can be difficult to keep regulated. It is important that owners pay close attention to all instructions related to the administration of medication, diet and home monitoring. One serious complication that can arise is hypoglycemia, or low blood sugar, which can be fatal. Just like in human diabetes is becoming increasingly common in pets as well. Please remember that it can be controlled and quality of life can be maintained. Once diabetes mellitus is properly regulated, the prognosis is good as long as treatment and monitoring are consistent. Most dogs with controlled diabetes live a good quality of life with few symptoms of disease. Everyone loves sugar but we know too much can be a bad thing and the same is true for our furry friends.

HOROSCOPE Contributed by Janet Boyer

Taurus

Sagittarius

April 20 - May 20 Earthly Taurus, you may feel weighed down by financial concerns this month, especially with tax time approaching. You don’t have to go it alone! Find a trusted financial advisor (often free via your local library) to help get your money issues organized and to ease your mind.

November 22 - December 21 Fiery Sagittarius, this month may find you on the outside looking in. Being five steps ahead sometimes leaves you feeling isolated and misunderstood. Better to be ahead of the pack with loads of wisdom than gaining membership to a club of the clueless.

Gemini May 21- June 21 Airy Gemini, hope for a better future is here! Surround yourself with positive people, uplifting messages and awe-inspiring images. What we “feed” grows bigger, so take the time to cultivate wonderment and joyful anticipation.

Aries

March 21 - April 19 Fiery Aries, you have so many gifts to bring to the table this month! Like Father Christmas bearing presents to expectant children, what you offer to friends, groups and loved ones is immeasurable. Value your contribution!

Cancer June 22 - July 22 Watery Cancer, now’s not the time to cruise on past successes or assumptions. Look towards summer for vacationing or a well-earned rest; for now, though, tend to what’s working and thriving… lest it slip through your fingers via inattention.

Leo July 23 - August 22 Fiery Leo, drop the mask and bravado: people will respect you more when they find out that you struggle, too. You often make things look oh-soeasy and it is (for you) but you’ll find support when you need it most by daring to be authentic and “real”.

Aquarius January 20 - February 18 Airy Aquarius, what is it that you think you can’t live without? (Hint: look to where you spend your time, energy, money and thoughts). Then ask yourself: how is this helping me? How is this harming me? Your worth shines brighter than any bling, status symbols or approval ratings. Selling out is selling yourself short.

Pisces February 19 - March 20 Watery Pisces, dig deep into reservoirs of courage, because this month will test your patience. Grace under pressure is key, especially when faced with seemingly insurmountable tasks or impending opposition. Don’t lose your cool and you’ll come out on top.

or Not ??? Out of simple curiosity…I decided instead of just being a skeptic, I would try it. So what is this you ask? It is your own personal shopper who sends you fashion in the mail!

How does this work? You start by creating an account. Creating an account really means answering a lot of questions about yourself! Your style, colors and patterns that you really like or dislike, questions about height, weight, dress size how you prefer your clothing to fit, whether or not you would consider yourself to be curvy or not and characterizing your proportions. Then there was an interesting section that had 4 or 5 outfits and it would ask you to rate the outfits anywhere from Hate It to Love It! This of course was followed by more questions about body parts you’d like to flaunt or hide etc and how much you like to spend financially in different categories i.e. tops, pants, skirts, outer layers, jewelry and shoes.

W W W. E V E R Y T H I N G E L K O . C O M

Really I could lay out two amazing positives right away about using a program like this. First, I learned a lot about what I really do like and dislike when it comes to clothing. Secondly, gaining an overall feel of what I would like my closet to look like and therefore myself. These positives were accomplished by completing a section of the account creation which only wanted you to check the boxes that pertained to the style of clothing you like: bohemian chic, glamorous, preppy, romantic, classic, edgy, and/or casual chic. You’d be surprised how fun it is to see what you check and what you skip…they ask what colors and prints to avoid as well as what occasions you usually dress for i.e. business casual/work, cocktail/special, laid back casual or date night/night out.

There are other ways to really help your stylist learn more about you, you can link your pinterest, twitter or Linkedin profiles to your StitchFix profile, or not. At the end of your style profile, they have a section called your final thoughts….I found myself summing up my style in a short paragraph and learned more about what I like and what I don’t like! - lets face it what you choose to wear does say a lot about you! So after you fill out your style profile you can order a “fix” you can do a one time fix, you can schedule one to arrive every week, once a month - whatever works best for you, your schedule and your budget!

Ok budget…I know that was my number one concern… what are we talking about here? Well in each fix comes 5 items. If you keep all 5 items they give you 25% off your entire order. If you keep at least 1 item you do not pay the styling fee. Yes, styling fee… this is a $20 fee that you only pay if you do not keep any items. Not going to lie, I was really excited to get my first box and couldn’t wait to see what was in it! So it arrived…right on time and wrapped to perfection. A note from my stylist was inside that was specific to me with a few styling ideas for the items that my fix contained….then the items… I received

a summer dress, a pair of shorts, a t-shirt, a sweater and a bracelet. I know it is winter… but I had told my stylist that I was going on a warm destination vacation and would like some items for the trip…she listened! In total honesty….all the pieces that came in my fix I had never seen before and not sure I would say I would ever pull off of a shelf and try on…so that’s good and bad…I was so surprised to find that I really loved every single item…the dress fit perfectly and was again something I wouldn’t have normally grabbed…the shorts were fun and a total different style from my usual… the t-shirt

was comfy, stylish and cute…the sweater is a great layering piece and the bracelet was stunning! With that being said, I did not keep the entire fix. In your package you also have a return bag that has a prepaid label on it, any items you do not wish to keep you simply put back in the package and drop in the mail. That’s it! You only pay for the items you keep and then the best part is the feedback…you can either log on to their website or use their app and “check out” this is where you get to tell them which pieces you are keeping and which you are sending back and why!!! They say the more details you give them the better they get at sending you the perfect fix!

My verdict?? to StitchFix or not??? YEP! looking forward to my next fix and can’t wait! If you’re feeling the bug and want to give it a try….www.stitchfix.com/referral/6745718

… Natural Health Tips …

BONES or

Nerves

Contributed by Dr. Todd Wendell of Ruby Mountain Chiropractic

We live our lives through our nervous systems. Whether it’s enjoying a sunset, digesting dinner or warding off an infection, our nervous systems control everything. Better nervous system = better life. Our culture is focused on blood, such as pulse, blood pressure and cholesterol. These largely result from nervous system directions. So even the smallest nervous system disturbance can dramatically affect the way your whole body works. Since the moving bones of the spinal column are so close to the spinal cord, and the 31 pairs of nerve roots that branch out from it, many people think chiropractic is all about bones. But I see myself primarily as a nerve doctor, not a bone doctor. The spinal column is merely where we find the location of nerve disturbances between the brain and body. Reducing nervous system tension allows your body to work normally so health can return.

… Natural Health Tips …

ENERGIZE your WORKDAY

Naturally

It’s two in the afternoon, and you’ve had too many starchy foods for lunch. The result: your energy level has taken a nosedive. Combatting a slump during the workday doesn’t have to include copious amounts of caffeine. Try these natural energizers to keep you plugging along ‘til five or beyond. Conduct meetings or take phone calls on your feet. Stretch, do simple exercises or take a brisk 10-15 minute walk. If possible, consider getting a standing desk or a treadmill desk.

Satisfy hunger and avoid that slump with a high-protein snack such as almonds or a boiled egg. Avoid sugar as you’ll likely experience a crash, which may make you sleepier. Drink more water. While you should limit caffeine, drinking a cup of green tea can provide the perfect pick-me-up and many health benefits. Visiting us for regular chiropractic checkups is another great way to keep your body healthy and energized!

SPREAD THE GOOD NEWS While the pharmaceutical industry spends millions promoting prescription medications, natural chiropractic care has survived for over a century. How? By delighted patients telling others. Good old-fashioned word of mouth has helped those who had previously lived with persistent, pesky pain to seek gentle, natural chiropractic care. If you’ve experienced the benefits of chiropractic care in your life, then there’s no time better than now to share how chiropractic has helped you. Encourage someone to visit us and allow us to locate and reduce the cause of his or her pain naturally, without drugs. How can you explain chiropractic care? Simple. The focus is on reducing nerve interference, usually along the spine because the moving bones of the spinal column are common culprits producing the nerve interference. Share your story with others so their body can do what it was designed to, and they can get back to enjoying those activities they love.

Will the Affordable Care Act impact your taxes?

MYTHS

Debunked CONTRIBUTED BY H&R BLOCK

There are a lot of changes to this year’s tax code – 46 to be exact – as a result of the Affordable Care Act (ACA). What’s most important is to be aware if your taxes – and your annual refund – will be affected. Tax experts at H&R Block address common myths associated with the ACA and how they may impact your taxes: MYTH: If you chose not to have health insurance in 2014 and don’t qualify for an exemption, you will have to pay a penalty of $95. FACT: The penalty for 2014 is calculated one of two ways. If you or members of your household don’t have health insurance that qualifies as minimum essential coverage, you’ll pay whichever amount is higher: • •

$47 per child, $95 per adult, up to $285 per household % of annual household income less the filing 1 threshold – In many cases this amount is actually higher and likely to be the amount of the fine that you will face.

MYTH: If you have short-term medical coverage, accident or disability only, or travelers insurance, you don’t have to worry about the ACA. FACT: Under the Affordable Care Act, almost everyone is required to have health insurance that meets the requirement for “minimum essential coverage.” Plans that meet this requirement include a health insurance plan through your job, federal or state Marketplace plan, COBRA or retirement plan, or a government plan like Medicare, Medicaid, TRICARE or CHIP. If you don’t have one of these, you may face the ACA tax penalty.

76

MARCH 2016

MYTH: The Advance Tax Credit I receive in 2014 is based on my 2013 income. FACT: Your 2014 tax credit is based on your estimated income for 2014. If you provided an estimated income at the time of enrollment, you will need to reconcile your taxes. MYTH: I have two kids and neither my husband nor I have access to health insurance from our employers. I’m signing up for health insurance on the Marketplace because the government will give me a subsidy to help me pay for my monthly premiums. FACT: Whether or not you receive a tax credit from the government for purchasing insurance on the Marketplace depends solely on your individual situation and your household income. Your income must fall within certain guidelines to qualify for a tax credit.

MYTH: A tax credit, subsidy and advance are all different. FACT: A tax credit, subsidy and advance all mean the same thing – government assistance in paying for health insurance plan premiums.

W W W. E V E R Y T H I N G E L K O . C O M

MYTH: I got my health insurance plan from the Marketplace and received a tax credit to help pay for my insurance premiums. I know this won’t impact my taxes because I already calculated my 2014 estimated income and submitted it at the time of enrollment. FACT: If you and/or a member of your household received the Advance Premium Tax Credit in 2014, the credit will need to be reconciled when you file your taxes. The Advance Premium Tax Credit amount that you received was based on an estimate of your household income and your expected family size. So when you file your taxes, the amount of Advance Premium Tax Credit you received will be reconciled against what you were actually eligible for based on your actual household income. This could impact your tax refund or taxes due. For example, if you signed up for health insurance in the Marketplace and estimated your income at $38,000, you could receive a tax credit of $2,700 to help pay for insurance. But let’s say you got a promotion and your actual income for the year came out to $46,000. In this scenario, your tax credit decreases to $1,500 and you will owe the difference at tax time, lowering your tax refund by $1,200.

The ACA will have the biggest tax implications for those who received the Advance Premium Tax Credit (also known as a subsidy) or those who did not have health insurance coverage. One way to plan ahead this tax season is to learn more about how the ACA might affect your tax refund by visiting an H&R Block office on Jan. 8. Most H&R Block offices nationwide will be open for 12 hours straight, from 9 a.m. to 9 p.m., so you can come in without an appointment and speak to an ACA Specialist who can provide you with a no-charge ACA Tax Impact Analysis – your personalized review of how your taxes may be affected by the Affordable Care Act. So, come on in to our local office on 11th St. Our phone number is 775-738-4026. Call us to make an appointment or to just ask a question. We will be glad to help you.

FINANCIAL FOCUS

HOW SHOULD YOU RESPOND TO MARKET “CORRECTION”?

As an investor, you may be gaining familiarity with the term “market correction.” But what does it mean? And, more importantly, what does it mean to you? A correction occurs when a key index, such as the S&P 500, declines at least 10% from its previous high. A correction, by definition, is short-term in nature and has historically happened fairly regularly – about once a year. However, over the past several years, we’ve experienced fewer corrections, so when we have one now, it seems particularly jarring to investors. How should you respond to a market correction? The answer may depend, to some extent, on your stage of life.

So, to avoid being forced into selling, you need to be prepared. During your retirement years, try to keep at least a year’s worth of cash instruments on hand as well as short-term fixed income investments. By having this money to draw on, you may be able to leave your stocks alone and give them a chance to recover, post-correction. And it’s important to maintain a reasonable percentage of stocks, and stock-based vehicles, in your portfolio, even during retirement – because these investments may provide the growth necessary to help keep you ahead of inflation. Consequently, as a retiree, you should have a balance of stocks and stock-based vehicles, along with fixed-income vehicles, such as bonds, certificates of deposit, government securities and so on. Being prepared can help you get through a correction – no matter where you are on life’s journey.

“She is a great mother to our kids and a wonderful wife. She is dedicated to changing people’s lives for the better and has made it her mission to help people lead healthier lifestyles and achieve their goals. She is so selfless and driven. She is just amazing! I’m so proud of everything she has accomplished and to call her my wife.” Tara and her husband Jaime have been happily married for 4 years and have 3 children. They have lived in Elko for 2 years. Tara’s passion for fitness was ignited by her very own desire for self-improvement and that spark ignited a fire in Tara. It all began when Tara started a Beach body challenge group “I was 3 months postpartum with my 3rd child and I was struggling with really bad postpartum depression and anxiety. I was constantly eating fast food. I didn’t know a thing about clean eating, what calories really were and I was suffering…I was always tired, anxious and all around unhappy.” After Tara’s first challenge group she decided to become a coach. themselves! “My friends and family started noticing my weight loss and I was starting to feel more alive and happier. I had a “glow” about me. So they wanted to do what I was doing!” That’s when Tara’s coach suggested she start coaching. Tara recalled thinking to herself “This is what I’ve been missing for so long! If I can do this, than any person can and I want to be the one to help them!” Tara said that her drive to continue on her coaching journey is definitely that she gets to help people who were suffering like she was. “I love being able to stay at home with my kids and help others, mainly moms who are struggling with anxiety and depression and have no idea what to do!” Tara has been able to lose a total of 30 pounds and says she has been able to create way healthier eating habits for her and her family. “When I started this journey I had ZERO self-esteem. I was constantly putting myself down and had really bad body image issues. I would constantly say negative things about myself and my body. I never thought I would be “fit” or truly happy with myself!”

THE BIRDS & BEES Teaching your children about love, intimacy, and sex is an important role all parents must play. Finding the right atmosphere is difficult, and some parents avoid or postpone what can be an uncomfortable discussion. However, it’s important not to put it off. Each year about one-million teenage girls become pregnant in the United States.

The Family Resource Center staff cares about the health and well-being of youth and wants to equip parents with the tools required to make it easier to talk with their children. Please join Family Resource Center staff on Thursday, March 3 at either 5:30 or 6:00 p.m. for a short presentation on learning how to talk to your children about healthy relationships,

During 2011, there were 3,867 Nevada girls between the ages of 15 and 19 who became pregnant. Every year three million teens in the United States contract a sexually transmitted disease. In 2011, young people aged 13-24 accounted for about 21% of all new HIV diagnoses in the United States. In Nevada, more than 11,000 Chlamydia cases were reported in 2012 with 66.5% of those cases occurring in those younger than 25-years old.

Crochet is Gaining Momentum

CONTRIBUTED BY CRAFT EUPHORIA

"LOVE OF CROCHET" MAGAZINE

For reasons unknown to me, Crochet has long been thought of as: ugly, bulky, only doilies, only if you want to make a quick afghan etc. etc. Then there are the many horror stories of how one will enter into a yarn store to be told negative things about it (personally this has never happened to me) or that a certain yarn will not look good if it’s crocheted. Not anymore, everywhere you look there is crochet AND it is beautiful, drapey, fitted, and noticeable. There are all types of hooks and accessories all geared toward crocheters to help them get the job done. There are many people who are really working hard (yes I have noticed) to prove that crochet is a very worthy hobby that everyone should try. Many books have recently hit the shelves, with more coming, that will certainly throw some of the nay sayers into a tail spin. Yes I truly think that there will be jaw dropping, OMG’s all over the place with all the new stuff coming. Every single day I am totally amazed at all the new designs that are presented out there and I am thinking at this point that a second job may be in order for me…..to be able to buy all the new books and gadgets. Of course many of us who are in love with crocheting knew all along that our craft of choice (yes they don’t call me the Crochet Queen for nothing) would be fabulous, popular and famous. Thanks to many of the hard working people who help promote this art.

Modular Crochet BACK IN PRINT Oh I had such big plans for keeping up with this site but life does tend to get in the way when you own a business, still do custom crochet and lots of other irons in the fire. But this news just can NOT wait, look what I found Modular Crochet this is simply amazing and probably about the most popular crochet book EVER. Yes crochet has never really gotten a good reputation for making garments as some see it as being stiff, un moldable so to speak, no drape and on and on. Ok throw all that out the window and get your copy of this book right now. You will not be disappointed and it does show you how to make some pretty simple but yet at the same time over elegant crochet pieces that you can customize to fit your various needs. If you have never seen this book, I suggest you ask around to other crocheters and get a glimpse inside. Everything is simply fabulous to make, Yes you can use any type of yarn, super easy to follow patterns and I guarantee when you get started you will get filled up with a ton more of ideas to put your own twist on the various patterns. Please spread this news around as I am positive it will sell out very quickly.
