March is….Celebrating Women’s History Month, California Trail History, and Natural History with Critters Along the Trail. Come see and feel real skulls and pelts of animals found in northeastern Nevada. Presentations and programs are given every Saturday and Sunday at 2 p.m. for visitors and local residents. Sunday’s programs will offer activities for children and youth. The events will be interactive and hands on. Interpreters will present programs about women pioneers and their experiences on the California Trail, “Critters Along the Trail,” what animals the emigrants saw along the way West Recent arrivals in the Trail Center’s store include historic reproduction toys. Come celebrate Nevada’s upcoming 150 years of statehood with flags, books and decals. Amaze your friends and family and learn about our state with the Nevada Trivia Game. AND… Everybody loves books. All of the volumes - for big and little kids- have Trail, western history and Nevada subjects. All sales support programs at the Trail Center. The California Trail commemorates important aspects of American history in the 19th century. While the trail helped open the West to settlement, inspiring romantic movements in art, literature, and cinema that have had a tremendous impact on American culture, it also dramatically affected and impacted Native

American cultures, their way of life.

changing

Owned and operated by the BLM, the California Trail Interpretive Center is on property donated by Maggie Creek ranch established in 1870. The location looks toward the canyon where infamous Hastings Cut-Off joins the main portion of the California Trail. Additional partners in the venture are the City of Elko, Elko County, the state of Nevada and the Southern Nevada Conservancy.

march Events at the California Trail Center || Contributed by Janet Petersen ||

This facility is the result of the hard work and dedication of a number of Elko groups and residents who lobbied for, and were successful, in getting the “California Trail Interpretive Act of 2000” passed through Congress. The stated purpose of this act is “…to provide the public with an interpretive facility devoted to the vital role of trails in the West in the development of the United States.” Experience some of what the pioneers and natives encountered. Understanding the past leads to an understanding of oneself, and a stronger sense of belonging to a community. Visit the California Trail Interpretive Center located on I80, Hunter Exit 292. The Trail Center is open Wednesday through Sunday, 9-5 closed Monday and Tuesday. Admission is free. Call 738-1849 for more information or check us out on our Facebook page.

The Halleck Bar Party An Official Event of the Nevada Sesquicentennial Only a few events throughout Nevada were selected to be Official Events of the Nevada Sesquicentennial. The Northeastern Nevada Museum is proud that the Halleck Bar Party has been selected as one of them. This annual event has been happening at the Museum for the past 44 years, and this one promises to be the best one yet.

What is a Halleck Bar Party? In 1869, the Central Pacific Railroad went through Elko County and one of the railroad sidings, 20 miles east of Elko, was Halleck. In its heyday, there were two hotels, a depot, freight shed, several stores, and, of course, many saloons. In addition to the railroad, Halleck was headquarters of several ranches. Nearby Fort Halleck added soldiers to the mix, and the local saloons provided the fuel for interesting extra-curricular events. In 1916, hoping to add a touch of class to his place, saloon owner, Len Rathfon, purchased a new bar and back-bar in Salt Lake City, had it shipped to Halleck by rail, and installed it in his establishment. Years later, the population of Halleck dwindled and businesses closed. The bar and back-bar were left abandoned in the old saloon. In 1970, Art and Norm Glaser, Halleck ranchers, along with Elko attorney, Chach Evans, rescued the old relics. Art and his wife, Marianne, refurbished the bar and back-bar and presented them to the museum… on one condition… a party would be held each year and a bottle of Beefeater Gin be served over the bar. This tradition has turned into one of the museum’s major fundraising events each year. Members and friends of the museum look forward to getting together each year to celebrate Elko County’s rich heritage and unique western culture.

14

march 2014 | everythingelko.com

The 2014 Halleck Bar Party will be held on

Friday, April 11 During the evening, a children’s chorus, organized at the museum’s Second Saturday events, will lead a singa-long of Home Means Nevada and Don’t Fence Me In – the theme song for Nevada’s 150th birthday. Another special attraction will be a silent auction, featuring some of the antiques from the museum’s collections. These items are duplicates, and will be sold with the donor’s permission. As usual, there will be exhibits on display in the various art galleries that evening. The museum was recently the fortunate recipient of 10 pieces by the famed western artist Edward Borein. These join Will James’ art and books in a growing western art collection. The Elko County Art Club’s annual show will be featured, along with an exhibit, on loan from the Nevada Museum of Art in Reno, featuring works by Carmelo Otiz de Elgea of Spain. There are many other things to see while in the museum, which is owned by the Northeastern Nevada Historical Society. The history gallery includes a wide array of artifacts from northeastern Nevada’s past and a very large gun collection. The Wanamaker Wildlife exhibit has animals, in natural settings, from around the world. A gift shop features one-of-kind items by local artisans, such as photography, pottery, and jewelry, and also hundreds of books on a variety of subjects. A 90-seat theater-in-the- round is used for many community events. The late Nevada Governor Kenny Guinn once said, “This is the best museum in the state of Nevada.” Visiting the 40,000 square-foot facility, it’s easy to see what he was talking about. The Halleck Bar Party, beginning at 6:00 pm, will feature an open bar and hors d’oeuvres. A $20-per-person donation is encouraged and everyone is invited. The museum is located at 1515 Idaho Street, in the Elko City Park. For more information about the Halleck Bar Party or any other event or exhibit at the Northeastern Nevada Museum, call 738-3418 or log on to MuseumElko.org. a special

Spring Dinner

Contributed by Mandi Ratliff of Cucina Fresca

Spring brings a host of special occasions to celebrate with family and friends. Some gatherings will be casual, but others may call for a special dinner worthy of a distinctive occasion.

Spring - Fresh - Delicious - Do-Ahead - Easy A most-prized cut of meat, a beef tenderloin is a rare and special entree, perfect for a celebratory occasion. Often roasted at high temperatures, the timing and outcome can be tricky. With this “foolproof” method, the filet is slow-roasted to precise perfection. It’s become our “goto” method for tenderloins. The roast is oiled, seasoned, generously draped with tarragon branches, and slowroasted. The kitchen aromas during roasting are enticing! A side sauce of homemade basil parmesan mayonnaise topped off a remarkably tender and tasty entree.

Do-Ahead (1 Day) 1. Trim and tie the roast 2. P repare mayonnaise a day or two in advance. Refrigerate with a small piece of plaster placed directly on the surface of the sauce.

Filet of Beef - with Basil-

Jessica Hughes cell:

Serves 6 to 8

1 whole filet of beef tenderloin, trimmed and tied (4-1/2 pounds) 3 tbsps good olive oil 4 tsps kosher salt 2 tsps coarsely ground black pepper 10 to 15 branches fresh tarragon Basil Parmesan Mayonnaise, for serving (recipe follows)

Preheat the oven to 275 degrees. Use an oven thermometer to be sure your oven temperature is accurate! Place the filet on a sheet pan and pat it dry with paper towels. Brush the filet all over with the oil, reserving about half a tablespoon. Sprinkle it all over with the salt and pepper (it will seem like a lot but believe me, it makes a difference). Place the tarragon branches around the beef, tying them in 4 or 5 places with kitchen string to keep them in place, and then brush the tarragon with the reserved oil. Roast the filet of beef for 1-1/4 to 1-1/2 hours, until the temperature registers 125 degrees in the center for rare and 135 degrees for medium-rare. I place the thermometer horizontally through the end of the beef. Cover the filet with aluminum foil and allow to rest for 20 minutes. Slice thickly and serve warm or at room temperature with Basil Parmesan Mayonnaise.

how-to tie a roast Why tie a roast? Whether pork, beef, lamb, or other meat, tying a roast creates a neat bundle that promotes even roasting. Small ends of the roast can be tucked in, and a flat shape can be made more cylindrical — all with a little string. Butcher’s twine is 100% cotton string, suitable for food use. Reusable, heat-tolerant, silicone food loops also work well for tying roasts. Cut a length of string about 7 times the length of the roast. Begin by tying a loop around the roast at one end of the meat.

Tools for Roasting Meat: Le Creuset Stoneware Baker - Beautifully glazed stoneware is a functional and aesthetic pleasure. Shallow sides promote good air circulation. Wusthof Trimming and Boning Knife - This knife features a narrow blade and a sharp tip for expertly trimming roasts and excising bones from meat. Cooking Twine - so many uses for natural 100% cotton food grade string - including tying up your Sunday roast and much more!

Wind the string around the meat again. At the top, bring the string under and over the start of the second loop. Continue winding and looping the string under and over with 1-inch intervals between each turn. Bring the string (under & over) along the underside of the roast back to beginning. Cinch and shape a uniform cylinder.

Folding the Napkins A nicely folded napkin is always part of a well-appointed table when dining out, why not at home too? Here’s a nice fold to try on a spring table - a blooming flower:

Setting the Table Assembling a meal for others not only answers the daily need for food, but also provides a setting for sharing and being with others, also an elemental need. Any meal may become elevated to “special” with a few twists and touches. The setting of the table sets the mood for the occasion and provides a great opportunity for a few creative touches. Linens lay the foundation for a wonderful dining experience. A table adorned with a beautiful tablecloth, runner, or placemats defined the mood of the meal. Whether it’s crisp, white linen or cotton splashed with spring colors, linens set the stage.

Do-Ahead Set the table with linens, flatware, dinnerware, and glassware a day in advance. Cover the entire table with a lint-free, clean, white sheet, or an older tablecloth to prevent dust and pets from intruding on the pending party.

Hasselback potatoes These potatoes add a little drama to the dining table. Adapted from a signature dish of the Hasselbacken Hotel in Stockholm, Sweden, the effect of “fanned” potatoes is easy to achieve, and tastes delicious. The potatoes are roasted and based with butter until the edges become a lovely golden brown. Sometimes termed “accordion potatoes”, serve each potato whole and allow guests to slice away at the buttery, roasted layers. When serving Hasselback Potatoes with the above Slow-Roasted Filet of Beet, the two dishes may be roasted at the lower temperature at the same time. When the filet is out of the oven and resting after roasting, turn the oven up to 425 F and finish roasting the potatoes at the higher temperature for 15 minutes allowing edges to gain a desirable golden color.

Do-Ahead (Hours) The potatoes may be peeled and sliced ahead of time then kept submerged for several hours in cold water to prevent discoloration.

Tip:

Sprinkle a mixture of bread crumbs and grated Parmesan cheese on top of each potato during the last 15 minutes of roasting. march 2014 | everythingelko.com

23

How to Roast Hasselback Potatoes Step 1: Three ingredients: potatoes, butter, and coarse salt. Choose uniformly sized potatoes and peel away the skin. Trim away a thin slice to form a narrow, flat surface on the bottom. This assists the slicing and prevents the potatoes from rolling about in the pan. Step 2: Cut 1/8-inch slices along the length of the potato cutting only 3/4 of the way through the potato. Use chopsticks as a guide to prevent the knife from slicing all the way through, or for smaller potatoes, place them on a spoon. Rinse to remove any extra starch from between the slices. Drain and pat dry. Step 3: Baste the potatoes, including between the slices, with

melted butter. Sprinkle with coarse salt. Bake at 400 F for 30 minutes under a loose foil tent. Baste with butter, and roast, uncovered for another 15 minutes or until edges are nicely golden brown and the centers tender.

Green Beans Gremolata Fresh vegetables accept other flavors eagerly when paired well. In this case, green beans host brilliant lemon zest, aromatic garlic, bright parsley, grated Parmesan cheese, and toasted pine nuts. The combination of flavors and textures is appealing to the eye and to the palate. It’s an easy combination that would be equally at home on asparagus or broccoli.

Serves 4 to 6

and sauté, turning frequently, for 2 minutes, until coated with olive oil and heated through. Off the heat, add the gremolata and toss well. Sprinkle with 3/4 teaspoon salt and 1/4 teaspoon pepper and serve hot.

1 pound French green beans, trimmed

*Note: Toast pine nuts in a dry sauté pan over low heat for 5 to 10 minutes.

2 teaspoons minced garlic (2 cloves) 1 tablespoon grated lemon zest (2 lemons) 3 tablespoons minced fresh flat-leaf parsley 3 tablespoons freshly grated Parmesan cheese 2 tablespoons toasted pine nuts (*see note)

Do-Ahead The gremolata may be chopped and made ahead of time, with the toasted nuts added just prior to serving.

2-1/2 tablespoons good olive oil Kosher salt and freshly ground black pepper

What is a Gremolata?

Bring a large pot of water to a boil. Add the green beans and blanch them to 2 to 3 minutes, until tender but still crisp. Drain the beans in a colander and immediately put them into a bowl of ice water to stop the cooking and preserve their bright green color.

Do you ever see a word for the first time, then suddenly see it everywhere? Such is the case with “gremolata” - it’s an ontrend thing! A gremolata is a condiment of chopped herbs with lemon zest as its core ingredient. Parsley and garlic frequently accompany the lemon zest, but other herbs may be substituted.

For the gremolata, toss the garlic, lemon zest, parsley, Parmesan, and pine nuts in a small bowl and set aside. When ready to serve, heat the olive oil in a large sauté pan over mediumhigh heat. Drain the beans and pat them dry. Add the beans to the pan

1 cup chopped walnuts Ginger Mascarpone Frosting (recipe follows) Crystallized ginger (not in syrup), chopped, for garnish

Preheat the oven to 400 degrees. Grease 2 (9 X 2-inch) round cake pans, line the bottoms with parchment paper, and grease and flour the pans. In the bowl of an electric mixer fitted with the paddle attachment, beat the sugar, oil, and eggs on medium-high speed for 2 minutes, until light yellow and thickened. Stir in the vanilla. In another bowl, sift together the 2 cups of flour, cinnamon, baking soda, and salt. With the mixer on low, slowly add the dry ingredients to the wet ones. In a medium bowl, toss the carrots, raisins, walnuts, and the 1 tablespoon of flour. Stir into the batter with a rubber spatula. Divide the batter between the prepared pans and smooth the tops. Bake for 10 minutes, lower the heat to 350 degrees, and bake for 30 to 35 minutes, until a toothpick comes out clean. Cool in the pans for 15 minutes, turn out onto a baking rack, and cool completely. Place one cake on a flat serving plate, rounded side down. Spread half the frosting on the top (not the sides). Place the second cake on top of the first cake, rounded side up. Frost just the top of the second cake. Sprinkle with ginger and serve at room temperature.

Hardly seems like the kind of word that you want to be associated with dinner or a relaxing night in. You don’t want to have to consider the complexity of the situation or the possible solution to the quandary. When the work day has come to a close and your focus has shifted to kicking bare feet up onto an ottoman and sinking into that oversized chair with a beautiful glass of red wine, the very last thing that should cross your mind is the ratio of one varietal to another and the measurement of residual sugar. You should close your eyes and open your mind to the fact that even if you wanted to know the specifics, you never will! The Conundrum here...What do you taste? Is it sweet relief, relaxation, an overwhelming urge to pour just one more glass?? No one can argue with you because your answer is the answer to the Conundrum!

Colorscapes Greenhouse and Nursery Open Seasonally: April-July Featuring annuals, perennials, and shrubs We're all looking for plants that are easy to grow so we can spend more time enjoying them and less time maintaining them. So, here's the challenge to people looking for plants to enrich their lives: Prior planning prevents poor performance. Getting an area ready for planting will always define the difference between plants that thrive and plants that dive. So, let's change those problem areas into a place that you can enjoy through the changing seasons.

Start with a plan/design that provides a place to spend time relaxing outside. Trees and shrubs are the backbone of any design and your best starting point. Also referred to as screens, garden backdrops, and vertical elements, shrubs provide privacy and a sense of enclosure as we avoid views and noises from intrusive surroundings by creating spaces to enjoy being outdoors. I advocate using a mix rather than single variety plantings in an effort to create diversity in the landscape. Adding perennials and annuals further increases the overall beauty and adds seasonal interest. On the design, the average garden depth is two-thirds of the mature height of the tallest planting. Example: A design that includes shrubs that mature at 8' need to be a minimum of 6' in depth.

Establish edges to define where the garden begins and ends. Edging is available in a range of materials. Criteria can include ease of installation, durability, aesthetic qualities, and availability for future installations. Using consistent edging material for nearby areas as they're developed adds continuity to the site. Garden walls and other raised bed designs hold soil in place and add a vertical element to an otherwise one-dimensional view of the garden. Hardscapes including buildings, fencing, or

32

march 2014 | everythingelko.com

walkways can be used to define the front or back of the garden. To avoid plant damage and soil compaction, it's best to do those needed fixer-upper chores to hardscapes prior to planting.

Improve soil for plant root development and water conservation. I work new beds 10-12 inches in depth with a tiller then topdress with 2-3 inches of organic amendments. Bring the tiller tines up and incorporate the amendments into the top 4-6 inches of soil. Machinery can be rented or digging by hand is always an option. The time and energy spent breaking up compacted soil and preparing a garden area for planting will always pay off in the long run. I prefer to use organic amendments since they feed both the soil and the plants. Rejuvenating an existing garden? Start by digging out weeds and weedy looking plants that don't fit into the design; if it's a really cool plant, lift it out for saving, otherwise... toss it.

Establish how the garden will most easily, yet efficiently, watered.

soaker hoses, and drip tube systems are water-wise, but need to be constantly monitored to ensure that they are delivering enough water to thoroughly soak the entire root zone of all plantings. Water timers at the faucet can be used to deliver water intermittently. Our 5,000 sq.ft. lawn is on a pop-up system and programmed to receive two-twenty minute cycles, twice a week in the heat of summer. Over the past two summers, we have averaged 30,000 gallons of water in both July and August to maintain a fully developed landscape, the greenhouse and nursery, and for use in the home.

Opening for the Season on •

Select and group plants that have the same light, soil, and water requirements. Do your homework so you can shop with a list of possibilities. Pictures of the area or a picture from a magazine that appeals to you are also ways to increase your chances of finding just the right plants, but be flexible and willing to try plants suggested by a trusted retailer. Gardening is for those who love to be around plants and enjoy spending time outside caring for them.

Topdress with a slow-release fertilizer and 2-4 inches of mulch. Do this before when planting plants in 6" or smaller pots fairly close to one another. Do this after for bigger perennials and shrubs. I apply a 14-14-14 slow-release fertilizer combined with iron at the rate of one pound per 100 sq.ft. of garden area. Mulching is an important step since it will deter weeds, conserve water, and improve the tilth of the soil. Gardeners have their own favorite, I like those that break down within two seasons, feeding the soil and the organisms that make healthy plants possible.

Water newly planted gardens thoroughly and frequently until established. Even water-wise plants need to be kept evenly moist while roots work their way into the soil, especially those planted in July-August. Once established, after one full growing season, continue to water thoroughly, but less frequently. All plants need a supply of oxygen to the roots, so avoid overwatering once the plants are established. As temperatures rise in July and August, we increase watering to every five days. With our 12 gardens, we use an excel spread sheet to schedule watering days. A deep, thorough watering is better than light, frequent watering.

Avoid the use of chemicals to eradicate weeds and insects. It's a buggy world, but they're not all bad guys. The use of chemicals in the home landscape has been the leading cause of the decline in beneficial insects that keep populations of detrimental insects in check. Weed burners are easy to use and provide a safer alternative to spraying. Pulling weeds is part of gardening and if you get them before they go to seed, the chore is made exponentially easier.

Hiking the Rubies | Contributed by Chelsey Jackson |

In the past year and a half I have ventured into mountaineering and have found it to be very challenging physically, yet rewarding with a feeling of accomplishment. I am no expert by any means but I have learned a lot about what it takes to be what is commonly called a “Peak Bagger”. Peak bagging is the attempt of getting to the summit of various high peaks, usually at an elevation of 10,000 feet or more depending on the range. So far I’ve bagged 7 peaks in the western region ranging from 9,154 to 14,505 feet.

The first peak I bagged was Ruby Dome at an elevation of 11,387. The trailhead starts at the Spring Creek campground and is more diverse in vegetation than the more commonly used trails in Lamoille canyon. The trail is well defined until you get closer to Griswold Lake but there are many cairns (rocks stacked on top of each other) to guide you. Otherwise you may end up at a rock wall along the creek that is difficult to clamber over. The lake is set in a large bowl surrounded by tall granite walls; it’s a great place for camping with a great view of the city and of Ruby Dome. I then did the Ruby Crest Trail of 37 miles (by our GPS log) in two and half days and found that I also enjoy long distance mountaineering. It’s somewhat magnificent to be on a long trail placing one foot in front of the other, enjoying the scenery and the natural beauty all around. It’s very peaceful to be away from the regular routine of daily life. The Ruby Crest trail spans between Harrison Pass and Lamoille Canyon, with several trails that lead off to various locations on either side of the mountain range.

The landscape went from lush green and birch trees, then to pine trees, and low growing plants in fall colors, to a barren terrain consisting of not much more than granite boulders and dirt. One of my favorite sections of the trail was a grove of birch trees with many carvings dating back to the early 1900’s. Admittedly at times I would ache from my shoulders down to my feet while carrying a backpack of about 36 pounds. Most of the weight was for enough water to get from one source to the next, plenty of food, tent, sleeping bag, first aid kit amongst a few other things. After every hike I always reassess what I would or wouldn’t take for the next big adventure, always figuring out a way to lighten the load. All in all the scenery of our local gem is pretty spectacular, the trail is well maintained and I didn’t want this adventure to end when I could see the parking lot from the top of Liberty Pass. Should you get the opportunity to venture on the crest, I highly recommend it! I think I’ll be going back again this year.

Dolphin Swim

Contributed by Hunter Travel Adventures

Beautiful flowers and lush tropical plants greeted me as I walked into the Chankanaab National Park in Cozumel. This is the moment I have dreamt of since I was a little girl. I finally get do more than just touch a dolphin, but actually swim with them! The chatter of the dolphins spiked my heart rate as excitement raced through me. The ocean stretched out in front of me, gentle and calm, everything I wasn’t at the moment. I clicked my life vest on and waited in the warm sunshine for my turn to enter the water where the dolphins played. There were eight of us in the group and we all watched memorized by the two dolphins arching out of the water in a graceful jump. Their slick gray skin shimmered in the sunlight.

The trainer blew his whistle and the majestic animals glided toward him. He threw them a small fish, before motioning for me to step onto the underwater platform. My lungs squeezed with anticipation and I took the first step into the warm Caribbean Ocean. Water lapped at my waist and the trainer sent the dolphins to swim by me. I let my hand glide against their sleek bodies as we said, “Hello.” Have you ever been kissed by a dolphin? No? Well these dolphins gave kisses. They were sweet and very wet, but the spot on my cheek will forever remember it. Grinning from happiness, the trainer instructed me to touch their flippers. It was my first time dancing with a dolphin! I swam about 50 feet out from the platform I’d been standing on. Holding out my arms, I readied myself to grab the dolphins’ dorsal fins as they swam by. What I didn’t realize was how silently they rushed toward me. Suddenly, I felt them right behind me and quickly grabbed their fin, holding on tight. A current of water sprayed my face and my body zoomed through the water, carving a large ripple of my own in the water. What a rush!

I swam back out. Laying on my tummy with legs shoulder width apart and knees locked. Once again, they were so silent that I couldn’t hear them. Then before I could even think, I was pushed up out of the water with a dolphin’s nose on each foot. I was skiing across the water so fast it literally took my breath away! “Royal Dolphin Swim” was absolutely amazing! An ultimate dolphin encounter that I will never forget! I don’t know how I can top that experience, but I am always looking for the next Adventure. In my quest for melding two loves, Adventure and Travel, I had to name my business Hunter Travel Adventures. Shabby Shanty S omething N ew for E lko

Elko’s newest Home Décor and Antique Shop. Candy has always wanted to open a store that she could showcase not only her creations but local artisans and Antique enthusiasts as well. Thus Shabby Shanty was born. This little gem is bursting at the seams with antiques, vintage finds, and repurposed furniture. We also have an abundance of handmade treasurers. If you are looking for something unique for yourself or need a gift for that special someone this is the place you will surely find it. This shop has over thirty plus vendors who either rent their own space or consign their wares. Rex states, “We have had such a good reception from the public”, they always say “This is just what Elko needed.” New items arrive daily.

We have many fun events planned for the store. We would like to hold an annual parking lot sale, this will be an event where vendors will take advantage of the whole back parking lot behind the store to display their wares, and perhaps offer a bargain to the public. You will want to watch for that event. Also, as soon as the weather breaks watch for an exciting new look on the store front, after all the outside no way indicates all the fun things inside. Come in and see for yourself all the amazing treasurers this store has to offer. Our store hours are from 10:00 am-5:00 pm, Monday through Saturday. We are located at 178 Idaho St. in between Lee Ann’s Floral and New To You Clothing store, with lots of parking on all sides of the building.

W e extend a warm welcome to you to come in and just say H i and B rowse .

Spring Cleaning Tips Contributed by Jesse James of ReMAX

Get Green and Clean and Save Energy and Money Make your spring cleaning more rewarding with these energy saving cleaning tips. They'll not only reduce your energy usage, they'll also lower your bills. Inspect Sliding Doors If your home has a sliding glass door make sure to keep its track clean. A dirty track can ruin the door's seal and create gaps where heat or cold air can escape. Change your Air Conditioner Filter You can save 5-15% on cooling costs just by making sure your A/C filter is clean. This is easy to do, and you should change the air filter in your home two to four times a year.

Clean Your Refrigerator Coils This may not sound worth the trouble, but cleaning dust off the coils in the back of the refrigerator will make it run much more efficiently and save both energy and money. 1. Pull your fridge away from the wall and unplug it. 2. Find the coils—and the dust! (there's sometimes a plate covering the coils) 3. Use a vacuum cleaner to remove dust, or soap and water if it looks really bad. 4. Make sure coils are completely dry before replacing plate and moving fridge back.

Why Not Give Your Desk a Spring Cleaning? Put Away the Supplies Are you really using that stapler every hour? How about that pencil sharpener? If it's not a supply you're using constantly, put it in a convenient desk drawer. Lifehacker suggests using the "breadbox" rule, i.e. if it's smaller than a breadbox, put it away. Get On Top of the Paper It is easy to allow piles to build up on your desk. Monica Friel, president of the organizing service Chaos To Order, suggests opening mail near a garbage can, recycling bin or shredder and tossing it as soon as possible. Stop the Cord Madness Whether it's for your lamps, computer or cellphone charger, it's easy to let cords overrun your workspace and make you feel disorganized in the process. There are a ton of gadgets out there to keep you organized, but even a simple twist tie can make a difference. You Need T wo Pens Seriously, why do you still have a pencil holder full of highlighters, Sharpies and pencils. When was the last time you used a pencil? You probably only need two pens on your desk, so get ruthless and toss the rest. Take Post-Its Digital Post-Its can be a useful tool for reminding you of tasks, but they also create a ridiculous looking mess that can impact you more than you realize. Get in the habit of making to-do lists on your phone for more streamlined, neater organization. Do It Daily—OK, Fine, Weekly Carve out time in your schedule at the end of the day (or the end of the week, if daily feels like too much) to clean up your desk with these tips. It can help you start the next day feeling more organized and less stressed. Enjoy the Taste of Eating Right ❊ Contributed by Courtney Nalivka, MS, RD, LD, Northeastern Nevada Regional Hospital

While social, emotional and health factors play a role in the foods people choose to eat, the foods we enjoy are the ones we eat most. That is why, as part of National Nutrition Month 2014®, the Academy of Nutrition and Dietetics encourages everyone to "Enjoy the Taste of Eating Right." Each March, the Academy encourages Americans to return to the basics of healthful eating through National Nutrition Month. This year's theme focuses on combining taste and nutrition to create healthy meals that follow the recommendations of the 2010 Dietary Guidelines for Americans. "When taste is the most influential factor driving what consumers eat, it is important that we find the balance between choosing the foods we like with those that provide the nutrients we need," said registered dietitian nutritionist and Academy President Dr. Glenna McCollum. "This year's 'Enjoy the Taste of Eating Right' theme reinforces that the two choices are not mutually exclusive." The Academy strives to communicate healthful eating messages that emphasize

balancing food and beverages within an individual's energy needs, rather than focusing on any one specific food or meal. To this end, it is the Academy’s position that improving overall health requires a lifelong commitment to healthful lifestyle behaviors, emphasizing sustainable and enjoyable eating practices and daily physical activity. "Enjoying the healthy foods we eat and the physical activities we engage in is key to developing a healthy lifestyle we can maintain for years to come," McCollum said. "Every March, the Academy of Nutrition and Dietetics takes time to strengthen its vision of optimizing the nation's health through food and nutrition," McCollum said. "As registered dietitian nutritionists and dietetic technicians, registered, our members have the ability to translate sound science into helpful nutrition information that people can understand and apply to their everyday lives." Initiated in 1973 as a week-long event, "National Nutrition Week" became a month-long observance in 1980 in response to growing public interest in

To commemorate the dedication of registered dietitian nutritionists as the leading advocates for advancing the nutritional status of Americans and people around the world, the second Wednesday of each March is celebrated as "Registered Dietitian Nutritionist Day." This year Registered Dietitian Nutritionist Day will be celebrated March 12.

All registered dietitians are nutritionists – but not all nutritionists are registered dietitians. The Academy’s Board of Directors and Commission on Dietetic Registration have determined that those who hold the credential registered dietitian (RD) may optionally use “registered dietitian nutritionist” (RDN) instead. The two credentials have identical meanings.

Can Chiropractic Manage Migraines? Contributed by Dr. Todd Wendell of Ruby Mountain Chiropractic Center

Eliminate a common cause of headaches with a regular chiropractic checkup. You’re in agony, in a darkened room, with no sound. Your throbbing head feels as though it is splitting in half and you’re nauseous, maybe even vomiting. You have a migraine and you just want the pain to go away…and never come back.

What Causes a Migraine Headache?

Positive Results with Chiropractic Care

There are many triggers – the most common are:

A number of research studies have examined the effects of chiropractic care on the frequency, intensity and duration of migraine headaches. One such study, conducted for six months at the Chiropractic Research Center of Macquarie University in Australia, involved 177 participants who had migraine headaches for an average of 18 years.

• Foods, including alcohol, aged cheese, caffeine, chocolate, artificial sweeteners and seasonings (MSG) • Hormonal changes, related to a drop in estrogen levels, which may occur before a woman’s monthly period. Birth control pills and hormone replacement therapy can also trigger migraines • Medications • Stress • Too much/too little sleep • Weather changes or changes in time zone or altitude • External factors, such as bright lights, certain smells (perfume) or second-hand smoke Typical medical treatment for migraines is prescribed preventative and symptom-relieving medication.

56

march 2014 | everythingelko.com

The results of the study were impressive; most of the participants experienced positive outcomes. 72% had substantial reduction or noticeable improvement in their symptoms, including a drop in the frequency, intensity and duration of their migraines, and a decreased need for their migraine medications. Consider the All-natural Approach If you or someone you love suffers from migraine headaches, or any other type of headache, please consider all-natural, conservative chiropractic care. Ask to see our testimonials; we have many patients who are grateful for the headache relief they have experienced as a result of chiropractic care.

Although you may not read the word sugar on the ingredient list, what you’re eating could be loaded with this sweet, but silent poison. If you see the ingredients: cane sugar, beet sugar, corn syrup, corn sugar, fructose, glucose, lactose, dextrose, maltose, molasses, sucrose, xylose, or dextrin, some form of the ingredient is present. Some sugar free substitutions are used instead like maltitol or sorbitol and these can be even worse than the real stuff!

Lucy He'bert, former teacher at Spring Creek High School resigned teaching five years ago, to work full time with Young Life, with hopes to establish it here forever. Two years ago, Lindsey Mudlin came on staff as our area admin. We now have our own building at 616 Commercial Street, Elko. We serve 60-90 teens per week from Wells, Elko, Spring Creek and Carlin. In 2013 we were able to reach over 175 teens. Young Life provides safe, fun activities, mentoring, messages that address socialization, love, hope, direction, acceptance, guidance & encouragement. Trained and screened leaders enter their world with no expectation of who they should be, but with every hope for who they can become. All our efforts are directed toward good choices, behavioral development, self esteem, maturity and helping them grow in their faith. If we reach our youth in a healthy way, we hope to help with family relationships and help build a healthy community.

- 4th Annual

Jake Eary Memorial

Rodeo Contributed by Mary Branscomb

March 8th & 9th The 4th Annual Jake Eary Memorial Rodeo is slated for March 8-9 at the Spring Creek Horse Palace in Spring Creek, NV. Jakey was barely nine years old when he was killed in November 2010, and his parents, Jess & Carrie, keep his memory alive by staging this rodeo in his name. Jake was very active in junior rodeos, says Carrie, "He always dreamed of being a bullrider and talked of riding saddle broncs like his Dad." This Memorial Rodeo is for anyone, from toddlers to eighty. The events were chosen to include the whole family, as that's what the Eary's feel rodeo is about... family. New this year are High Point saddles, that will be awarded in six different divisions. "This is a rodeo that would have pleased Jakey," said his mother. "He loved all of it." It was a terrible accident that took Jakey's life that dreadful day in November, but his family remembers him with this special Memorial Rodeo and they continue the lifestyle that was important to the youngest of the family. Carrie was born and reared in Winnemucca, NV. She and her 3-year-old son, Josh, met Oregon-born Jess when he was working for Nevada First Ranching. After Jess and Carrie married, they along with Josh (now 18), Daniel (now 14) and Jake lived and worked on the Bullhead Ranch outside of Paradise Valley, NV from 1999 until 2009. They then moved to horse property in the South Fork area. Jess works as a horseshoer, helps ranching friends, and hunts and traps with his boys. Carrie works as an insurance agent for Eclipse Agency in Spring Creek specializing in farm and ranch insurance. Today, Josh is a freshman at UNLV planning to be a veterinarian. He is a member of the UNLV Rodeo

Team competing in team and calf roping and steer wrestling. Daniel is a member of the Nevada Junior High School Rodeo Association, and competes in team, ribbon and breakaway roping, goat tying, chute doggin' and bullriding. He's a two-time National Junior High School Rodeo qualifier in multiple events. Jake is rememberd for idolizing Mike Lee - a Professional Bull Riding competitor - he even wanted to change his name to Jake Lee to be his brother, not realizing the Lee was already his middle name. From an early age, Jake was a little "horse trader". Once, at age five, he traded one spur for a toy gun with a rodeo vendor, but only one because the other was his brother's and Daniel would "kick his butt". Ultimately Carrie had to ransom the spur from the vendor by paying for the toy gun.

Carrie spends a lot of time preparing for the Memorial Rodeo and helps with other rodeos as well. She says the first Memorial Rodeo was staged to help take care of funeral and medical expenses. "We never in a million years imagined that it would have become so huge. First rodeo we had 350 contestants. Second, 360. Third 375, and this year we are expecting more. Now the Memorial Fund is used for scholarships and donations to youth organizations in Jake's memory." Jess and Carrie are especially appreciative of the friends and rodeo families that have come together to unselfishly make this Rodeo what it is....an amazing tribute to Jake and his memory. The Eary's are a resilient young family able to rise above adversity and continue to contribute to the rural American lifestyle that makes the country strong.
