Rails into Elko
The Town Started as Two Tracks and a Whistle!
The building of the transcontinental railroad was an epic event that transformed the United States. As the aptly named promoter George Train trumpeted in 1863, “This is the grandest enterprise under God!” When the Central Pacific and the Union Pacific were joined at Promontory, Utah, on May 10, 1869, a nation so recently divided north and south by the Civil War was united east and west by a ribbon of rails. Symbolically and tangibly, the transcontinental railroad fulfilled the dream of Manifest Destiny and ended the trails era of westward expansion.
Join us for the Second Saturday Event May 14
“Railroad Day”
Museum hours: Tues – Sat 9:00 – 5:00, Sun 1:00 – 5:00 1515 Idaho St, Elko | 775-738-3418 | www.museumelko.org
In the History Gallery at the Northeastern Nevada Museum is an exhibit specifically devoted to the story of the railroad rolling into this part of the Silver State. Indeed, Elko— established in 1868—and many other communities in northern Nevada owe their initial existence to the Iron Horse. For Second Saturday on May 14, Education Coordinator D’ette Mawson has put together a fun menu of activities on the transcontinental railroad geared for ages 3 to 10. As always, admission is free for this special program. In addition, the Museum Store offers a wide selection of books on rail lines in Nevada for those who want to further research the subject. The Northeastern Nevada Museum is located at 1515 Idaho Street in Elko. Regular public hours are 9:00 am to 5:00 pm, Tuesday through Saturday, and 1:00 to 5:00 pm on Sunday. Improvement
Repurpose the old into NEW! 1. Repurpose your jewelry! If you have some old bangle bracelets you just don’t wear anymore, you can turn those into really fun napkin rings for your BBQ’s and dinner get togethers! If you are really talented this is even a super original and fun house warming gift!
The snow is finally melting…we are opening our windows and doors and getting so excited to “freshen up” the house! Here are some really fun ideas that repurpose old items or excite your inner artist!
2. Plant Herbs in Florist’s Vases! You’ve got them, they are stacked up under the sink, in your pantry or somewhere so make use of them. Plant small potted herbs in vessels of various heights (add a layer of pebbles at the bottom of each for drainage). Wrap them in a heavy-stock paper, secure with twine, and label.
3. Tired of your dining room or the chairs at your bar… instead of running out and buying new ones, paint! Paint the legs, paint the backs… stencil them…anything to make them seem new again!
4. Stash Toiletries in Mismatched TablewareJust because your vanity is a catchall for makeup doesn’t mean it can’t look puttogether. Place a platter on top and fill it with seldom-seen china pieces, like a sugar bowl and a creamer, that can hold cotton balls, nail files, and brushes.

Improvement 5. This one is a little more crazy, but I just love the idea of taking that hallway closet that is stuffed to the gills with stuff you are not using‌ take the doors off and create a super cute hallway nook!
6. Lastly‌I truly believe an organized pantry can make your house feel clean as well as your whole life less hectic! I found this version of creating zones in your pantry and I loved it! So I had to share! Zone 1: Impromptu Entertaining Stock a selection of fast-fix appetizers, napkins, toothpicks, and trays in baskets. When company arrives pull one down, and you're ready to get the party started. Zone 2: Baking Supplies Keep dry ingredients in clear, airtight containers that stack neatly and show you when your stock is low. Place mixes, frostings, and other ingredients on a nearby shelf. Zone 3: Easy Weeknight Meals Put a week's worth of dinner fixings front and center in sturdy bins. Divide each bin by meal. (Plan and shop for several meals at once, then sort the nonperishable ingredients for each, including side dishes, into bins or baskets. Attach a label and the recipe. Now that meal preparation time is cut in half, you'll have more time to relax after work.)
Zone 4: General Food Storage Group food by type (veggies, fruits, soups, etc.) and arrange in rows on the shelf. Stairstep shelves put the back row of cans in view. Zone 5: Lunch on the Run Store lunch items, utensils, napkins, and bags together to make packing easier. This arrangement also makes preparing weekend lunches a snap. Zone 6: Quick Breakfasts Keep morning meals in an easy-access spot. Breads can fit in an undershelf basket, and a double-decker turntable makes the most of a corner. Zone 7: Tools and Appliances Hang bulky or seldom-used utensils from hooks mounted on the wall or back of the door. If space allows, store specialty appliances in the pantry, too. 22

Improvement Re-Thinking the American Dream So many people consider owning your own home to be the “American Dream” but others have decided it’s more important to be free! Free from doing maintenance to a home; Free to come and go as you please; Free to use the amenities that come with living in a complex; and Free to move when you’re ready without worrying about current housing market or the cost of preparing and selling your home. There can be great financial & personal benefits to renting as opposed to buying. Here are 10 things to consider.
1. No Maintenance Costs or Repair Bills A definite advantage that renters have over homeowners is that they have no maintenance costs or repair bills to pay off. When you rent a property, your landlord is responsible for all maintenance and repair costs. If an appliance stops working or your roof starts to leak, you do not have any financial responsibility to have these things fixed. Homeowners, on the other hand, are responsible for all of their own repair, maintenance and renovation costs. Depending on what the repair is, these costs can be quite extensive.
2. Access to Amenities Another financial benefit to renting over buying is having access to amenities that would otherwise be a huge expense. Renters may have access to luxuries such as an in-ground pool or a fitness center with no additional charge to tenants. If a homeowner wants to match these amenities, he or she can expect to pay thousands of dollars in installation and maintenance costs.
3. No Big Down Payment Another area where renters have the better financial deal is upon signing. You do not have to have a large down payment saved up to move into a rental property.
4. Shaky Market Conditions Renters don’t have to worry whether the housing market is up or down when they want to move. If you plan to stay in your home well into retirement, your risk may be reduced but what if you’re not sure or you plan to retire elsewhere. What will the market be like when you’re ready to go? Will you have to ride out a downturn to avoid taking a loss?
5. You Want Maximum Flexibility There are many circumstances that require you to remain flexible - if your job has you moving in a few years; if you are nearing retirement and planning to move; if you’re new to town and are not sure you will like it; if you are starting a new job and have not built up job seniority or security. Meeting the requirements of your lease may offer you a lot more flexibility and savings then buying and selling a home in a short period of time.

www.RubyVista.com · 775-401-6060 6. Flexibility to Downsize In today's economy, many people struggle to make ends meet. By renting, you have the option to downgrade into a more affordable living space at the end of their lease. When you are a homeowner, it is much more difficult to break free of an expensive house because of the fees involved with buying and selling a home.
according to the Independent Insurance Agents and Brokers of America. Meanwhile, the average homeowner's insurance policy cost ranges between $25 to $80 per month.
9. No Real Estate Taxes
Rent amounts are fixed for the span of the lease agreement. While landlords can raise the rent with notice, you are able to budget more efficiently since you know the amount of rent you are required to pay.
An obvious benefit that renters have over homeowners is that they do not have to pay real estate taxes. Real estate taxes can be a hefty burden for homeowners. Although property tax calculations can be complex, they are generally determined based on the estimated property value of your house. With houses getting larger and larger, property taxes can be a significant financial burden.
8. Lower Insurance Costs
10. Lower Utility Costs
Homeowners may need to maintain a homeowner's insurance policy and renters would be wise to invest in a renter's insurance policy. Luckily for renters, renter's insurance is much cheaper and it covers quite a lot. The average cost of renter's insurance is just $12 per month,
With homes getting larger and larger, it is often much more affordable to heat and power an apartment or small rental home as opposed to a larger home. Rental properties typically have a more compact floor plan, and renters can expect lower utility costs.
7. Fixed Rent Amount
The Bottom Line While owning a home may be beneficial over a long period of time, for many people renting is the better option. There are plenty of examples that show how renting can save consumers a considerable amount of money. The choice of whether to rent or buy your own home is a personal one. Before making a hasty move, review the details and make the financial decision that is right for you and your family. W W W. E V E R Y T H I N G E L K O . C O M

Garden Landscaping We're all looking for plants that are easy to grow so we can spend more time enjoying them and less time maintaining them. It starts with a plan/design that creates places to spend more time relaxing with friends and family, outside. Landscapes that include a mix of colorful annuals, hardy perennials, and sturdy shrubs are both visually appealing and also provide food and shelter to attract a range of songbirds and beneficial insects. from intrusive surroundings. Many
Annuals: Provide all summer color provide spring flowers, summer fruit,
in ground and containers strategically placed to optimize enjoying the flowers and the bees, butterflies, and hummingbirds that they attract and sustain. Lasting just one season, annuals include flowers that are available in a wide-range of colors. Vegetable gardens also benefit from colorful annuals as they draw pollinators into the area.
Perennials: Plants that winter over and typically have a bloom time; early, mid, or late season. Many are longlived like Peonies and Hemerocallis/ Daylilies and will last for generations and will continue to grow each year filling an area with colorful flowers and attractive foliage through the changing seasons. Thought of as a value since they are planted just once rather than each year.
beautiful fall foliage, and give structure to an otherwise one-dimensional winter landscape. Available in a range of mature heights and shapes, shrubs are the backbone of the landscape design providing four-seasons of interest.
Gardening 101: Add organic amendments to improve the soil, promote root development, and conserve water through summer. Select plants with similar light and water requirements forming diverse plant communities within the landscape. Avoid the use of chemicals to eradicate pests so beneficial insects can thrive and keep detrimental pests in check. Consider Xeriscaping that makes a low-maintenance, waterwise landscape both attractive and sustainable.
Shrubs: Provide privacy and a sense of enclosure as we avoid views and noises

The Sagebrush Steppe in Bloom Often people driving through the Great Basin, especially on the freeway, only notice the expanse of sagebrush and dry ground as it whizzes by their window. Those of us who live here know that there is much more to be found in these seemingly barren areas. Take a walk out into the sagebrush this time of year and you will be rewarded by a mosaic of spring wildflowers. Some are low to the ground and hardly visible while others put on a brief but spectacular show. Many of these plants have adaptations which help them survive with limited water. • Thick waxy coatings on the stems and leaves • Hairiness which helps reduce evaporation from leaf surfaces • Ability to store water in plant’s tissues • Low amount of surface area by having small leaves, round leaves, rolled leaves, folded leaves • Entire life cycle carried out during the moist time of year (annuals) that survive the dry periods as seeds. A good field guide for this area is: Sagebrush Country: A Wildflower Sanctuary by Ronald J. Taylor. Bristlecone Audubon’s mission includes providing education to the public. In that effort we offer presentations, field trips, articles and other outreach to the community. For further information contact Lois Ports at 775-738-4270 or ports@frontiernet.net.
MAY FIELD TRIP: There will be an International Migratory Bird Day field trip held on Saturday, May 14th. We will be meeting at the intersection of Lamoille Highway and the Lower Lamoille Road at 8:00 a.m. From there we will carpool and bird along Lower Lamoille Road. Dress for the weather and bring binoculars, field guides, lunch and water. Cameras are optional.
MAY MEETING: Our next meeting is scheduled for Thursday, May 19, 2016 at 7:00 p.m. in room 208 of the DCIT Building on the campus of Great Basin College (1050 Chilton Circle, Elko, NV). Pete Bradley will present Nevada’s Tree Roosting Bats: Silver-Haired Bat.

As the 2016 season has come upon us there is much excitement following the great even year Giants or the young rising Cubs or any team, with hopes and dreams that their team will finally win it all. Already the league as a whole has an astonishing 184 homeruns. But two players have started their season off with a bang, veteran Robinson Cano and Colorado Rockies rookie Trevor Story. Both players hit four homeruns through their first three games. Cano is going into his third full season with the Seattle Mariners where he had a batting average of .314 in 2014 and .287 in 2015. Despite being known for his 25+ homerun power in his last four seasons with the Yankees, Cano has only been able to hit 14 home runs in 2014 and 21 in 2015. Not only have his home runs been below average in the past few years but also his RBI’s haven’t been as impressive as they were when he was with the Yankees. Cano, had, 109, 119, 94, and 107 RBI’s from 2009 through, 2013 with the Yankees; where as he only produced 82 and 79 RBI’s in his past two seasons with the Mariners. Obviously Cano’s numbers are still very solid, but will
we be able to see the MVP Cano we once saw in Yankee stadium? Cano didn’t hesitate to start his 2016 season out with powerful beginning. In just three games Cano is 4 -13 with 4 home runs and 7 RBI’s. Not only has Cano’s power been proven but his confidence as well. On Wednesday April 6th, Cano hit two homeruns, the second coming in the top of the ninth inning. But as he touched home plate following his second homerun, Cano pointed to a fan in the audience.

But why? According to reddit-user atr0038, the fan was heckling Cano pretty intensely, when he was at-bat. “ I was siting in the sixth row at this game behind home plate slightly to the left,” said the reddit-user. “The best seats I’ve ever had. This guy was talking huge S*** to Cano right to his face when he was on deck in the 9th. Cano stared him down and was pissed. After he hit that HR, he pointed at the guy on the way back to the dugout.” Now talk about over coming the odds. Not only is it the beginning of the season where there is a lot of pressure to improve and impress the coaching staff; but also Cano dealt with this fan. Reddit-user atroo0038 continued, “The guy said, ‘You suck Cano, and you’re going to choke. That’s why the Yankees got rid of your ass. He continued to talk crap to him, right in front of the netting. The way Cano was looking at that dude, and swinging that bat today, I knew he was going to homer.” If that’s how Cano is going to perform under pressure this season, one can only expect great things from

the 11 year veteran who hopefully returns to the MVP caliber player he once was. Cano is 5-17 with 4 home runs and still 7 RBI’s. Much like Cano, Trevor Story hit four homeruns through his first three games. No other rookie has hit three, or more homeruns in his first three games. Story is from Irving, Texas where he played shortstop and pitched, throwing up to 96 mph. Initially Story was going to play baseball at LSU but quickly decided to go to the MLB following $915,000 signon bonus with the Colorado Rockies. Story is now 7-19 with 6 homeruns and 11 RBI’s just in his first four games. He hit his first two homeruns off of veteran pitcher Zach Greinke who just signed with the Arizona Diamond Backs for $206.5 million dollars. That $915,000 signing bonus must look pretty great right now. Story is currently batting second in the Colorado Rockies lineup following Charlie Blackmon who is leading off. Then Carlos Gonzalez and Nolan
Arenado follow Story in the lineup. Now that doesn’t look like a bad top of a lineup. Who will continue on this hot streak? The veteran, Cano, who has proven his abilities in prior years; or is it time to put even more faith into the youth of the league in Trevor Story? Both players are right in the middle of each of their lineup; Story being surrounded by Blackmon, Gonzalez and Arenado; and Cano batting third followed by Cruz and Seager. One could only expect great things from each offense this season.

The Ins and Outs of All-Inclusive Resorts CONTRIBUTED BY SUE BRADFORD OF JOURNEYS AROUND THE WORLD
Have you dreamed of vacationing in a place where you didn’t have to pay for your dinner at a restaurant or where you could order a couple of tropical cocktails and then just walk away without starting a tab? What if I told you places like this really exist, they are not a dream and they are just as amazing as they sound. They are the all-inclusive resort and you can find them located in Mexico, the Bahamas and the Caribbean (not in Hawaii, actually there is only 1 all-inclusive resort in the entire United States and it’s in Florida). Here is some advice for you on picking the right one for you. 1. Budget: Not all resorts are created equal, and depending on the amount of money you are willing to spend, your experience can and will vary. Be honest with yourself about how much you can afford to spend and know that you may not get all the amenities at the 3-star resort that you would get at the 5-star resort. 2. Food options: Food is always included at an all-inclusive resort, but the types of restaurants and the variety of food options can vary greatly. With some resorts you only get to eat at the buffet restaurants, but other resorts allow you unlimited dining at a la carte restaurants. Please know what you are getting before you go, so you are not disappointed in your dining options once you get there, especially if you are a foodie.

3. Tipping: Please be aware of the tipping policy at the particular resort that you choose. Some companies have strict no tipping policies in force, and the employees can actually be terminated if they accept one. If that’s the case, please don’t risk the employees job no matter how much you appreciate their hard work. Tell their supervisor or the general manager of the resort. That will benefit them more than a few extra bucks. 4. Water Sports: Most all-inclusive resorts have non-motorized sports included on site. These are things like Hobie Cats, Paddle boards, water kayaks, etc. Many resorts charge extra for things like snorkeling, water skiing, scuba diving and so one. Make sure you know what’s included before you go, so you are prepared for an extra cost. 5. Excursions/Spa/Golf: These things are usually not included in your bill and will be charged to your room on resort. Remember this when you are thinking about your budget. You are going to want to do extra things off the resort, like a local tour or a round of golf, or splurge on a massage or even a romantic dinner on the beach. All of these things make your trip that much more memorable. 6. Advice: Don’t be afraid to call me, your local travel agent for help if you need it. Did you know there are over 200 all-inclusive resorts in the Cancun/Riviera Maya area alone? With so many all-inclusive resorts out there, it’s really tough to search through them all and make a good choice. That’s what I am here for, to help you make the best choice for you and your vacation. My services are free of charge and I pride myself on customer service. I hope to hear from you.

ALKALINE COCONUT OIL
HAMMOCK CHAIR
Inside this jar is the only 100% pure and alkaline coconut oil in the world. This oil is extracted from wildharvested coconuts without using heat, chemicals, or toxic solvents. This uniquely formulated oil protects tooth enamel and dental fillings while it removes plaque, freshens breath, and whitens teeth, naturally. Oil pulling is an ancient tradition that naturally reduces stains, bacteria, and plaque on teeth. Coconut oil has been found to be an ideal choice because the lauric acid binds with the bacteria in the mouth during the swishing, or "pulling" process. After a few minutes, you spit out the oil and with it all of the funky stuff that leads to bad breath, inflamed gums, and plaque buildup. You will want to make sure you are using an alkaline oil, as other oils are acidic and can harm tooth enamel and dental work.

Khoury's Wine of the Month
Pink is Pink!
So what really is the difference? When you find yourself at Mother’s Day brunch and your grandmother orders a glass of Rose, why does the waitress feel the need to say “we only have White Zinfandel”? Aren’t they just one in the same? Pink is pink right? Au contraire mon frère! They actually each have their own story. Rose wines have been made in France for a very, very long time. The style of wine is not particular to one type of grape but the more common suspects are Grenache, Mouvedre and Syrah. Rose is made by only allowing the freshly pressed juices to rest on the grape skins for a brief amount of time therefore limiting the amount of color that is transferred in the fermentation process. The wines tend to be dryer and lighter in color than White Zinfandels. A great choice for a light, summer wine. White Zinfandel was actually an accident! Really! In the 1970’s, in an effort to make his Zinfandel (as in Red Zinfandel) a darker and more intense wine, Bob Trinchero decided to remove some of the juice. His thinking was that the remaining Sutter Home Zinfandel would take on a deeper color if there was a concentration of liquid. The problem now was, what do you do with 500 gallons of pressed grape juice that is light pink and sweet? Well, you call it White Zinfandel of course! And you bottle it and cross your fingers. Now, I probably don’t need to mention that Sutter Home White Zinfandel didn’t fail at the box office but I will say that it did go through a few modifications to become the sweet, refreshing, summer wine that it is today. So, depending on whether or not your grandmother would like a traditionally light, dryer blush wine or a sweeter ballerina pink wine, you now know the difference! Dazzle her with your knowledge.

Vanilla Raspberry Muffins Makes 12 Muffins
Great for a high tea or a Sunday brunch. I love these with raspberries, but you can easily use any berry you prefer. It’s very important not to overbake these, so please stay close to your oven when baking them. If you don’t have rice flour, feel free to omit it. 1-1/4 cup/160 g all-purpose flour 2 tbsp brown rice flour 1 tsp baking powder 1 tsp baking soda 1 cup/200 g sugar, plus more for sprinkling 1/2 tsp kosher salt 1 cup + 2 tbsp/255 g unsalted butter, cubed, at room temperature 2 eggs 3 egg yolks 2 tbsp vanilla extract 3 tbsp buttermilk
1. Position a rack in the middle of your oven and preheat to 375°F/190°C. Line one 12-cup muffin pan with 12 paper liners. 2. In a stand mixer fitted with the paddle attachment, mix both flours, the baking powder, baking soda, sugar, salt, and butter on low speed until lumpy but starting to come together. 3. With the mixer on low speed, slowly pour in the eggs, egg yolks, vanilla, and buttermilk. Mix until just combined. Scrape the sides of the mixer bowl well, making sure everything is incorporated. Gently fold the berries in by hand, trying hard not to crush them. 4. Fill the muffin cups three-quarters full with batter and sprinkle with sugar. Bake until the muffins just barely spring back to the touch, about 20 minutes.

Brussels Sprouts and Bacon Frittata Serves 6
There are so many great obvious food combinations – peas and carrots, peanut butter and jelly, tomatoes and mozzarella, and, of course, Brussels sprouts and bacon. Why fight it if it just works. FILLING 8 slices thick-cut bacon, chopped 1 tbsp extra-virgin olive oil 1 tbsp unsalted butter 1 onion, chopped 1 tsp kosher salt 2 sprigs fresh thyme 2 cups/180 g Brussels sprouts, thinly sliced, plus 1 cup/35 g Brussels sprouts leaves 1/2 tsp freshly ground pepper CUSTARD 10 eggs 2 tbsp crème fraîche 2 tbsp grated Parmesan 1 tbsp chopped fresh parsley 2 tbsp unsalted butter 3 tbsp grated Gruyère
vegetable mixture to the custard and continue scrambling. When the eggs are about 30% set, sprinkle with the Brussels sprouts leaves, top with the Gruyere, and transfer to the oven for 8-10 minutes, until the frittata is cooked through and browned on top. If the frittata doesn’t show signs of browning, place under the broiler for 2 minutes, but watch it like a hawk! 6. Immediately transfer the frittata to a plate by running a spatula around the edges and underneath to free it from the pan. Serve hot or at room temperature. This keeps well, refrigerated, for up to 3 days. These keep well, tightly wrapped at room temperature for up to 2 days.
1. Preheat your oven to 475°F/240°C. 2. To make the filling; In a large sauté pan over medium-heat, sauté the bacon in 2 tsp of the olive oil and the butter, until browned. Add the onion, ½ tsp of the salt, and the thyme and sauté until soft, about 10 minutes. Add the sliced Brussels sprouts and sauté for about 5 minutes longer, until soft. Transfer the vegetable mixture to a bowl and set aside. 3. Toss the Brussels sprouts leaves in the remaining 1 tsp olive oil, remaining ½ tsp salt, and the pepper. Set aside. 4. To make the custard: In a mixing bowl, whisk together the eggs, crème fraîche, Parmesan, and parsley. Set aside. 5. In a 10-in cast-iron or other ovenproof sauté pan, melt the 2 tbsp butter over medium-high heat. Pour the custard into the pan and stir, lightly scrambling the eggs. Slowly add the

Mini Strawberry Galettes Serves 10-12 1 batch Everyday Flaky Dough (see below) 4 tbsp/55 g unsalted butter 3 cups/460 g halved strawberries 2 tbsp brown sugar 2 tbsp granulated sugar, plus more for sprinkling 1/4 tsp kosher salt 1 batch Egg Wash (see below) Powdered sugar for dusting (optional)
1. Allow the flaky dough to soften at room temperature for 10 to 20 minutes, depending on the temperature of your house, before rolling. The dough should be cold, but malleable. 2. Melt the butter and toss with the strawberries. Set aside.
3. In a separate bowl, combine the brown sugar, granulated sugar, and salt. Set aside. 4. On a lightly floured surface, roll the dough to a 14-in/35.5-cm square, and about an even 1/8-in/3-mm thick. Trim the edges to make them even and slice into nine 4-inch squares (that’s three squares down and three across. Transfer them, evenly spaced, to two greased sheet pans. Press any scraps together and re-roll. You should get at least one more square. If you’re feeling especially efficient, you might get another three. 5. Toss the sugar mixture with the strawberry mixture. Evenly pile the strawberry filling into the center of each square, leaving a 1-in/2.5-cm border all around. Lightly brush the border with egg wash. Fold the border over the filling like a picture frame. Press the corners to seal. Freeze for at least 20 minutes, or up to 1 month, tightly wrapped. 6. Preheat your oven to 375°F/190°C. When ready to bake, brush the crust with egg wash, sprinkle with sugar, and bake from frozen until deep golden brown, 30 to 35 minutes. Transfer to a cooling rack to keep crisp. Dust with powdered sugar if you’re so moved. These are best the day they’re made, but keep, tightly wrapped, at room temperature, for up to 2 days.
Everyday Flaky Dough Makes 1 batch
We use this incredibly versatile dough at Huckleberry for an insane number of different things. It’s that versatile. We use it for our Thanksgiving pies, crostatas, quiches, chicken pot pies, anything really. 2 cups/ 250 g all-purpose flour 1/4 cup/50 g sugar 1/2 tsp baking powder 3/4 tsp kosher salt 1 cup/ 220 g cold unsalted butter, cubed 1/4 cup/60 ml water
1. To mix with a food processor, pulse the flour, sugar, baking powder, and salt once to blend. Add the butter to the work bowl and pulse about three times until pea-size pieces form. Pour the water over the flour mixture and pulse another three times until the dough is only just starting to come together. To mix by hand, combine the flour, sugar, baking powder, and salt in a very large bowl. Stir to blend. Add the butter, working it between your finger tips until the pieces are pea- and lima bean-size. Add the water and lightly toss to distribute. 2. The dough should be shaggy, dry, and clumpy. Dump it onto a clean work surface to bring the dough together by hand. (Do not flour the counter, as you do not want to add any more flour to the dough.) 3. Begin by firmly pressing the entire surface of the dough with the heel of your palm. Toss and squeeze the dough to redistribute the wet and dry patches. Repeat, pressing thoroughly again with the heel of your palm, and continue pressing, tossing, and squeezing until the dough begins to hold together. But be sure not to overwork the dough! It should stay together but you should still see pea-size bits of butter running through. 4. Press the dough into a disc 3/4-in/2-cm thick, wrap tightly in plastic, and refrigerate for at least 1 hour, or freeze for up to 1 month. 5. When you’re ready to use the dough, if refrigerated for longer than 1 hour, allow the dough to warm up at room temperature for a few minutes. If frozen, thaw in the refrigerator overnight before shaping. The dough should feel cold to the touch but malleable. Never allow the dough to become too soft or warm. Chill as needed while working.

Hashimoto’s Thyroiditis Taking A Naturopathic Doctor’s Approach Contributed by Blake Myers, ND
A Little Background: Hashimoto’s Thyroiditis is an autoimmine thyroid condition characterized by the immune system attacking the thyroid gland and ultimately causing some level of destruction to the gland. It is the number one cause of hypothyroidism in people over 6 years old in the United States. As with the majority of autoimmune conditions, Hashimoto’s effects women more than men, around 10-15 times more, with the most common years to see this condition being ages 30-50.1 The incidence increases with age in both men and women and thyroid failure is seen in up to 10 percent of individuals.2 Focusing on the Real Issue: The first important step in thinking about Hashimoto’s, or any autoimmune disease for that matter, is that the tissue, in this case the thyroid gland, is not the problem. The thyroid is actually working fine. Inflammation and immune system dysfunction are the real problems. All autoimmune disease are inflammatory in nature. Does this mean you need an anti-inflammatory drug? No! It means we need to address the cause of the inflammation and the immune dysfunction.
Gut Health: The health of the gut is potentially involved in nearly all chronic illnesses. 70-80% of our entire immune system is located in the lining of our gut.3 Let that sink in for a moment. 70-80% of the system that protects us from outside “invaders” like bacteria, viruses, and fungi, is in our intestines! In the case of Hashimoto’s Thyroiditis, the immune system has mistakenly recognized the thyroid as foreign and is actively attacking the gland. So what causes immune system dysregulation in the gut? The gut microbiome (the microbial ecosystem) is a major player in immune system function. The health of our microbial ecosystem is dependent upon a healthy balance of all the various organisms that inhabit it, largely bacteria and yeast. If one type of organism, or especially a “bad” organism, overgrows and is over represented, this is called dysbiosis (an imbalance of the microbial ecosystem). With dysbiosis, a couple of detrimental things can happen.
1. Immune system dysfunction begins to take place.
Gut bacteria regulate and balance of the immune system. This is one reason why we need to maintain healthy gut flora.

As a Naturopathic Doctor (ND), I am always working to understand the root cause of disease and illness, not simply treat symptoms, while the disease process goes on unchecked. By treating the root cause(s) of illness, healing takes place and symptoms improve. I want to share with you how I, as an ND, think about Hashimoto’s Thyroiditis and addressing the root cause of the issue.
2. The other major problem with dysbiosis is that a condition termed “leaky gut” can occur. This “leak” allows things to get into the blood stream from the intestines that normally wouldn’t. The immune system gets exposed to a wide variety of foreign materials, which can be inflammatory and trigger immune responses that can confuse the immune system into not adequately differentiating self from non-self. Other causes of “leaky gut” are anything that causes inflammation in the intestines like food sensitivities for example.

Ways to Heal Leaky Gut: 1. High quality, high dose, and broad strain probiotic. This helps crowd out some of the “bad” guys and replaces them with “good” ones. The probiotic bacteria also help regulate the immune system. 2. Eat fermented foods. There are many types, and the nice thing is, fermentation is really easy to do on your own. Sauerkraut is as easy as chopping vegetables, adding salt, and letting it sit for at least a couple of weeks. I highly encourage everyone reading this to look up recipes online for fermented foods and to begin incorporating them in at least a few days a week. 3. L-Glutamine – This is a nutrient that is a preferred fuel source for intestinal cells and therefore helps them do their job. 4. Do an elimination/re-challenge diet of some sort to find out if there are any food sensitivities of which you haven’t been aware. 5. Bone broth every day for at least a couple of weeks to a month. 6. Digestive enzymes and/or Betaine HCL might be helpful for a time to ensure all nutrients from foods are as bioavailable as possible. 7. Turmeric – This is an amazing herb that helps soothe gut inflammation. Further Root Cause Recommendations: Anti-inflammatory Diet – This means a whole foods diet, avoiding all refined foods such as refined carbohydrates, seed oils (soy, corn, cottonseed, etc.), flour, and so on. Your food should be as close to the earth and as far from a package as possible.
Exercise – It doesn’t have to look like anything special. You just need to move your body for all of the positive immune system effects. Walking after meals is a favorite recommendation of mine. Sleep – Getting at least 7 hours of uninterrupted sleep a night is essential. Addressing any sleep problems such as insomnia or sleep apnea is foundational to decreasing inflammation and healing. Stress Management – Stress will come. How we respond to it is what matters. It is imperative that we all have stress coping/ management mechanisms, especially with a disease like Hashimoto’s. Mindfulness meditation, breath training/practice, and exercise, are all great ideas. You have to find what works for you. These are complex topics. Some of the things you can do yourself. Many times, it is helpful to have the guidance and support of a trained professional who can individualize the treatment approach. My wife, Dr. Sarah Sue Myers, and I are Naturopathic Doctors here in Elko. We moved to Elko in March 2016 to bring the residents of Northern Nevada our expertise on the human body and how to stimulate healing from disease. We are accepting new patients at Morning Star Health Center where we work with infants to the elderly, and with any form of suffering, from headaches to autoimmune disease, to anxiety and depression. We commonly work with individuals with diabetes and cardiovascular disease and provide guidance and support for those who have been told there aren’t any options for them.

GET READY FOR SUMMER
Propane Cylinder Safety CO NTRIB U TED B Y JULIE A. KRAUS, WEST ERN STAT ES P ROPANE
As the warmer weather continues, more families will enjoy outdoor barbeques, camping and family outings. A lot of these outdoor activities include the use of portable refillable propane cylinders. It is important to keep these propane safety tips in mind while you are out enjoying this summer’s festivities. Can you smell it?
What does propane smell like? Propane smells like rotten eggs, a skunk’s spray or dead animal. Odorant is added to the propane to help consumers detect the odor. If you are unclear of the smell of propane, or would like to educate your family on propane safety and smell, please contact Western States Propane for free safety information which includes a scratch and sniff.
Leak Detection
Before using your propane cylinder for the first time this season, it is important to inspect the cylinder and gas appliance for leaks. This should also be done on a regular basis during use. To check for leaks you can apply thick soapy water to the connections between the cylinder valve and the regulator outlet. Slowly open the cylinder valve and watch for bubbles. If bubbles appear, tighten the connection and repeat the process. If bubbles continue to appear, bring the appliance and cylinder to Western States Propane for inspection.
Cylinder Requalification
All refillable propane cylinders must be re-qualified at regular intervals. This should only be performed by trained individuals at facilities which have been registered with the Department of Transportation. Cylinders which are out of date may not be refilled until they have been requalified. Western States Propane is a registered requalification facility.
Transportation/Storage
Always transport and store propane cylinders in a secure and upright position; always close the cylinder valve and seal with a plug even if the cylinder is empty. NEVER keep a filled cylinder in a hot vehicle and always place the cylinder in a well ventilated area of the vehicle. Proceed directly to your home or destination and remove the filled cylinder from your vehicle. Never store or place a propane cylinder indoors or in an enclosed area such as a basement, garage, shed or tent. Cylinders should never be stored in an area with excessive W W W. 73
heat (120 degrees or higher) near a stove, fireplace/ fire pit or other heat sources. When a propane cylinder is exposed to high heat, heat builds up pressure inside the cylinder which may cause the pressure relief valve to release propane. This could result in serious injury. While barbecuing, never store a spare cylinder under or near your barbecue grill. DO NOT smoke or have any ignition sources in the area while handling or transporting cylinders.
OPD Valves
Make sure your cylinder is equipped with an OPD – Overfill Prevention Device. An OPD valve is a safety feature which helps prevent small refillable propane cylinders from being overfilled. Cylinders with an OPD valve have a special triangular hand wheel with the letters “OPD” on the valve. Cylinders between the sizes of 4 – 40 lbs. may not be refilled unless an OPD valve has been installed on the cylinder. Most new cylinders are equipped with an OPD valve. If you have an older cylinder which does NOT have an OPD valve, bring your cylinder to Western States Propane. As long as your cylinder meets the cylinder requalification specifications, we can install a new OPD valve in your tank and perform the cylinder requalification.
Damage
Never use a damaged cylinder or a cylinder which has been in a fire. Prior to a cylinder being refilled a pre-visual check is performed. This pre-check includes checking for cracks or leaks, bulging, serious denting or gouging, defective valves, defective or leaking pressure relief devices, damage to the cylinder valve, valve protection, cylinder foot rings, out of date requalification, evidence of physical abuse, fire or excessive heat damage, and excessive rusting or corrosion. PET ADVICE COLUMN
One of the worst fears of any horse owner is colic. Colic is abdominal discomfort – it can virtually be caused by anything from dehydration, to a build-up of gas, to a twisted gut. While there are many folk remedies and ol’ wives’ tales about treatments for colic, occasionally a veterinarian needs to be involved. Here are some signs of colic and some do’s and don’ts of at-home colic management.
Managing Equine Colic Pet Personals
There are many causes of colic, and therefore, many symptoms. The most common signs include in appetence, teeth-grinding, kicking at the belly, and sweating. Other signs can include drooling, diarrhea, rolling (sometimes quite violently), and not passing manure. The severity of the symptoms doesn’t necessarily match the severity of the disease. By far, the three most common types of colics I’ve seen in Northeastern Nevada include; gas colic, sand colic, and impactions. Gas colics arise from overactive bacteria that give off gas as a waste product. A change in diet (such as a different hay source, alfalfa hay, getting into the grain bin, and even some supplements) can provide enough sugars to fuel the overgrowth of bacteria. These colics can be extremely painful. Typically, these colics resolve on their own with pain management or with basic colic treatment from the veterinarian. The second type of colic commonly seen in this region is sand colic or colitis. This occurs when sand, dirt, or rocks accumulate in the large colon. Feeding on the ground, eating dusty hay, living in a dirt lot with stubby vegetation, or

having limited mobility (like in a stall) are all factors that predispose horses to sand colic. Sand colics can be so severe that surgery is necessary to remove all of the sand. A simple test to look for sand is to mix fresh manure with water in a ziplock bag – the sand will settle to the bottom. Be sure to test the manure for 3-4 days in a row to estimate the amount of sand. Any amount of sand calls for attention. Fortunately, there are psyllium-based products such as SandClear that can be fed that help to bind sand and move it on out. These products are available here locally and generally need to be fed 7-10 consecutive days out of the month. The most seasonal type of colic is an impaction. These typically occur when the food material in the intestines dries out and turns hard and can’t pass through normally – the horse is worked hard and sweats, water freezes over or is otherwise inaccessible, water tastes bad – you that have horses know that they always have the silliest reasons for not drinking water. These can be quite dangerous and usually need some veterinary care. The simplest (though not always the easiest) method to prevent these types of impactions is to always allow your horses access to a clean source of water. Feed near the water trough to
Alan Cuthbertson, DVM Michael Perchetti, DVM
encourage them to drink in small amounts frequently. Thoroughly soaking grass and alfalfa cubes or hay in water for at least an hour before feeding will increase the moisture content of the feed within the intestines. Unfortunately, feed material isn’t the only cause of impactions – hair, enteroliths (rocks that are actually made in the intestine), or baling twine can also get lodged in the intestines. If you suspect an impaction colic, it is best to contact your veterinarian and visit with them about treatment options.

IF YOU SUSPECT YOUR HORSE IS COLICKING, PLEASE: - DO provide free access to clean water. - DON’T feed the horse anything – even to test the appetite! This can cause further blockage of the intestinal tract. - DO seek veterinary assistance if the horse is uncomfortable (continues to colic) for more than three hours. By the time the horse is painful, the intestines can be seriously damaged – early treatment can result in a better outcome.
Elko
Veterinary Clinic
- DON’T deworm your horse during an episode of colic. The dead worms can also cause an impaction in the intestines. - DO be judicious with banamine (flunixin meglamine). Banamine is an NSAID commonly given to help with colic pain. Banamine is processed in the liver and kidneys. When the horse becomes dehydrated (which is very common with colic), banamine accumulates in these organs and becomes toxic. Banamine should be given every 8-12 hours – if the horse needs more pain control before then, please seek veterinary assistance. Do not give banamine if your horse has been on phenylbutazone (bute) or other NSAIDs or steroids. - DON’T give banamine in the muscle. The additives in banamine can cause an extreme reaction, resulting in an abscess or infection. Injectable banamine should be given IV (intravenous) only. Horses can have seizures if banamine is given in the artery (goes to the brain first). If you are not comfortable giving banamine IV, it is better to give it by mouth. - DO walk the horse around if you safely can. Horses in pain can be unpredictable and can roll violently, putting both you and the horse in danger. If you cannot walk the horse safely, cover up sharp or hard edges such as gates or rocks with something soft to reduce the damage caused by the horse rolling.
