Dough Ingredients 1 lb. All Purpose Vegetable Shortening 2 lb. All Purpose Flour 1 pinch of Salt 1.5 cup Water
Turkey Pot Pie Ingredients 1lb Cooked Turkey 5 oz Carrots 5 oz Yellow Onion 3 oz Sliced Mushrooms 6 oz Frozen Green Peas 1 t Minced Garlic 1 t Thyme 1 t Rubbed Sage 1/2 gallon Chicken Stock 1 cup Heavy Cream Roux to thicken
Instructions In a 2 gallon sauce pot cook the Carrot, Onion, Mushroom, and Garlic, until the onion is translucent. Season with Thyme and Rubbed Sage and stir. Add Peas Chicken Stock and Heavy Cream. Bring to a boil then thicken with Roux. Pre-heat oven to 350째. In a Kitchen Aid combine Dough Ingredients until dough is formed. Cut the dough into 6oz portions. Roll circles and lay them into foil tart pans leaving only a .25inch of dough over the lip of the pan. Ladle 5oz of Turkey pot pie filling onto pans. If you were hoping for a hale and hearty soup, but ended up with a thin, watery bowl, try removing a portion of the soup, pureeing it, then adding it back into the soup pot. Or, remove some of the liquid, reserving it for your next soup occasion. If the soup has not been seasoned yet, try simmering and reducing the soup and concentrating the flavors. A dose of beurre manie, flour and butter kneaded together, will also thicken a soup nicely as will a slurry of cornstarch and water. My soup is too thick!

Ingredients • 2/3 cup all purpose flour • 15 oz pumpkin puree • 3/4 cup sugar • 2 large eggs • 1 teaspoon vanilla • 3/4 cup evaporated milk • 2 teaspoons pumpkin pie spice • 1/4 teaspoon salt • 1/4 teaspoon baking powder • 1/4 teaspoon baking soda • Whipped cream
Instructions 1. Line a 12-cup muffin tin with paper or silicone liners. 2. Preheat oven to 350 degrees. 3. In a bowl, whisk together flour, baking powder, baking soda, salt and pumpkin pie spice. 4. In a large bowl, whisk together pumpkin puree, sugar, eggs, vanilla and evaporated milk until well combined. 5. Add in dry ingredients and whisk until no streaks of flour remain and batter is smooth. 6. Fill each muffin cup with approximately 1/3 cup of batter. 7. Bake for 20 minutes and let cool for 20 minutes.

INSTRUCTIONS 1. Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray. 2. In a large bowl, combine Panko and Parmesan; set aside. 3. Working in batches, dredge asparagus in flour, dip into eggs, then dredge in Panko mixture, pressing to coat. 4. Place asparagus in a single layer onto the prepared baking sheet. Place into oven and bake for 10-12 minutes, or until golden brown and crisp. 5. Serve immediately. Makes 4 Servings.

What you’ll need • A large plastic bag • A platter or pan that fits the turkey in the fridge • Kitchen twine • A roasting pan that fits the turkey (and fits in your oven. Check. This is important.) • A probe-style meat thermometer • A turkey • Lots of kosher salt • 1 1/2 pounds bacon • 1/2 pound butter • Fresh herbs: sage, thyme, oregano, parsley, marjoram, rosemary • Roasting vegetables: carrots, celery, onions, leeks, apples
{ Turkey } I usually cook an 18 – 20 pound turkey. Not because I have a huge family, but because I like Thanksgiving leftovers. I always buy a fresh, never frozen turkey of the best quality I can afford. If you buy a frozen turkey, you need to get it in advance and leave plenty of time for thawing. You can do a computer search for the proper method. My methods below are for a big bird, but easily adapt to a smaller one.
I dry brine my turkey for a juicy bird. I used to wet brine, which involved removing drawers from my fridge and stuffing turkey into a large stockpot full of salted water. That is a lot of trouble. Here’s my easy solution that makes for a lovely moist turkey. therunawayspoon.com

Aspen Tree Carvings In the early to mid-1900s, Elko County was home to many Basque sheepherders. They would spend the summers tending flocks in the nearby mountain ranges. One of the pastimes adopted by the herders was carving in the aspen trees while the sheep grazed or were bedded down. The smooth thin bark of the aspen made for easy carving with a knife. Carvings often included human figures, self-portraits, or depictions of animals. It was also common for herders to carve their name and a date to mark their passage across the mountains. While aspen carvings reflect unique expressions of identity and culture, some also functioned as communication between herders in these remote landscapes. Many of these carvings can still be seen throughout the area, and these photos show carvings along the Charleston to Jarbidge Road in northeast Elko County. Because aspen is a short-lived tree, the carvings are slowly disappearing with time. Today, this artwork is protected by law and people are reminded to protect these carvings for future enjoyment by others. So, next time you are driving the backroads of Elko County, take time to look through the aspen stands to see what art you can discover. Happy exploring! Photographing the Ruby Mountains

Photography can be difficult and tedious work, even if you are creating it while enjoying one of Nevada’s most beautiful landscapes - the Ruby Mountains. Today’s outdoor enthusiasts can capture roadside views of the Ruby’s in seconds with incredibly lightweight digital cameras. But it takes far longer to capture break taking views from the wilderness on top. And far longer still when trying to recreate the exact viewpoints taken in 1868 by famed Civil War photographer Timothy O’Sullivan. Travelers in the 1860s and 1870s faced huge physical challenges in traveling uncharted areas of Nevada, including a lack of water sources, unfavorable weather for travel by wagons and uncertain relations with natives. While my long horseback trip up into the Ruby Wilderness area was simple in comparison to the great western expeditions, it still required trekking 70 pounds of camera and camping gear. That was exertion enough to gain an understanding of how O’Sullivan had to rely on his team to carefully pack his cameras, glass plates and a portable darkroom up the steep side of the Ruby’s to the 10,000 feet crest. O’Sullivan was the first photographer to travel the length and breadth of Nevada. He accompanied Clarence King on his expedition of Nevada in 1867-68 and George Wheeler on his Nevada expedition of 1871. O’Sullivan photographed over 250 views in Nevada during those years using large, heavy wooden cameras and tripods. He was additionally hampered by the need to carry chemicals which he used to coat his 8x10” glass plates, and then develop the plates while they were still wet. Typically, that travel was accomplished in a horse-drawn, surplus Civil War ambulance. But mountain views required pack trips. Since 2008, I have been tracking down the locations where O’Sullivan documented Nevada and rephotographing them with a 4x5” camera. After years of anticipation, I was finally able to reach one of the pinnacles of O’Sullivan’s Nevada photography: the central crest of the Ruby Mountains Wilderness. Led by Walt Gardner, owner of Secret Pass Outfitters, we rephotographed 17 views taken 144 years earlier by O’Sullivan at Overland Lake and the crest of Long Canyon along what is now the Ruby Mountains Scenic Trail. Walt Gardner is a fifth generation rancher whose family
homesteaded in adjacent Ruby Valley in 1869. That made the historical prints I carried with me particularly interesting to Walt and his family, because they showed the conditions of the land at the time of his family’s homesteading. Despite changes in vegetation in some of the historical photographs, Walt instantly recognized the locations based on his years of experience as an outfitter. How could I not select him for the job? Creating the 17 images was an arduous, two-day 18 mile pack trip to Overland Lake, with a round trip to the crest of Long Canyon. We tested our abilities to find each and every spot where O’Sullivan had planted his tripod. Walt, with his young sons and a friend, scampered around while I labored to adjust to the 10,000 feet elevation. Totally unexpected, I found this troop of youthful sherpas carrying my 30 pounds of camera gear. It helped that I had promised the boys they could pose in the same spot where O’Sullivan had placed famed geologist Clarence King. It shouldn’t have come to any surprise to me - a teacher and a grandfather - that I found our collective enjoyment in recreating history more satisfying then the enchanting scenery. The next morning, a campfire pancake breakfast began a more relaxed morning shooting what King had named Lake Marion, but is now known as Overland Lake. The boys took to fishing while their dad and I rephotographed O’Sullivan viewpoints of the lake. This time, with the luxury of spare time, I could pause after each shot and soak in the scenery. Next time I might even take some time to fish. On subsequent trips, I had rephotographed most of the 42 viewpoints O’Sullivan shot from the Ruby and East Humboldt Mountains, as well as ones taken of the US Army Camps: Ruby and Halleck. The East Humboldt views centered around Boulder and Birdeye Lakes, including the treacherous ridge between First and Second Boulder Canyons. An untimely bout of food poisoning left me hallucinating about leaving on a Summit Air ambulance, as opposed to finishing the 22-mile pack trip to Boulder Lake. If you head to Overland Lake, or the Long Valley crest, rest assured they is still much which hasn’t been re-explored since the earliest days of Nevada’s statehood. Take time to enjoy the views. The pack horses are waiting for you…

Wild Turkey Contributed by Lois Ports for Bristlecone Audubon Chapter
The idea that Benjamin Franklin preferred the turkey as the national bird of the United States comes from a letter he wrote to his daughter Sarah Bache on January 26, 1784. For in Truth the Turkey is in Comparison a much more respectable Bird, and withal a true original Native of America... The wild turkey (Meleagris gallopavo) is native to North America, but not to Nevada. The first wild turkeys introduced into Nevada were the subspecies Merriam’s Wild Turkey. They can be found in the Carson Range and the Spring Mountains near Las Vegas. The subspecies Rio Grande Wild Turkey, native to the central plains states, was first introduced into the Overton Wildlife Management Area in February 1990. In mid-January of 2000, 23 hens and five young male turkeys were trapped in the Overton area and then transported and released at the XJ Ranch, approximately 50 miles south of Elko in the Ruby Mountains. Rio Grande Wild Turkeys have been the main subspecies released in the state and populations are now primarily located along river corridors in western Nevada, the Ruby Mountains of Elko County, Paradise Valley in Humboldt County and in eastern White Pine County and can be found in the Carson Range and the Spring Mountains near Las Vegas. In southern Nevada, they populate Lincoln County, as well as the Moapa Valley and the Overton area of Clark County. Wild turkeys have longer necks and legs as well as smaller breasts than domestic turkeys bred for the table. The tom's body feathers are black with orange, blue and green iridescent highlights; females have medium to light dull brown feathers, without iridescence. The head is feather-less and is covered by scaly skin usually a dull blue and pink except in breeding season. The males have a snood which is a soft floppy growth on the front of the head which dangles downward over the beak. The female also has a snood but it is not as showy. The wattle is a pouch-like area at the front of its neck. In breeding season, the male's face turns bright blue, and the wattles turn a bright red. Often the male turkey is pictured strutting in full plumage. He thrusts his chest forward and gobbles. (Only the male makes this gobble sound, the female makes a soft clucking or clicking sound.) His tail feathers are fanned and the wings drag along the ground. This pose is not held for long but is repeated several times a day during breeding season to attract a female. When the males are not strutting, the tom turkey looks much like the hen, only larger.

Wild turkeys travel in flocks and are very gregarious. Turkeys are omnivorous, foraging on the ground or climbing shrubs and small trees to feed. They will occasionally eat amphibians and small reptiles such as lizards and snakes. They can run up to 25 mph and despite their weight they are very agile fliers and can reach speeds of 55 mph. They live an average of 3 to 5 years in the wild and range from 5 to 20 pounds. So as you enjoy your domestic turkey dinner this month don’t forget that the original turkey dinner was a much more majestic bird that once was in the running for a symbol of the United States of America.

My family that came down from Boise to play live music at the expo last weekend lost their wedding ring in the coffee mug parking lot that Sunday morning and couldn't find it anywhere!! They thought they would never see it again and they were just devastated. Through social media she was able to connect with them and I now have the ring and will be taking it to them in Boise! That is an honest caring person that should be considered.”

These were people I have never met, and they were going out of their way to help me simply because they were empathetic to my situation. There was even a woman, who worked near the Coffee Mug, willing to search the parking lot during her lunch break.
I went to sleep that night feeling hopeful, but still unsure. I woke up the next morning with a comment under my post. It was from a woman, another stranger, letting me Cara was the owner of the lost ring. You both are a prime example of what stand up people are, and a beacon to Elko Countys wonderful citizens. Your example sends a message to all of us that sometimes the right thing to do is the simplest and most appreciated, it might just even be as simple as a post to Facebook.
“If it would have been my wedding ring I would have been so grateful to have it returned. I would hope that anyone else would have done the same thing.” Hearing this story made me reflect a little about what I’d do if I had found the ring, and honestly I would have probably just taken it to the police department and left it at that. Stephanie and Dee on the other hand used out of the box resources to do whatever was possible to get this ring to its rightful owners!

Now I’d like you, our reader to think about what you’d do in this situation… The Rasmussen’s went to a local Jeweler, used Facebook, anything possible to get the ring back to Cara. Amazing how something so simple can create such a complicated equation. There are more than a few solutions, right and wrong. Luckily, the right thing was done in Cara’s case but more often than not this isn’t so. Precious items like Cara’s wedding ring are sadly lost forever. I’d like to make this story a testimony to how amazing our community is and how a remarkable couple and a group of incredible community members somehow came together via social media to return an irreplaceable symbol; a symbol not only of Cara and her husband Chads union, but of memories made, shared, and yet to be created.

1/4 cup apple cider concentrate 2 drops dōTERRA wild orange essential oil 1 drop dōTERRA lemon essential oil 2 tsp. olive oil 1 toothpick dōTERRA thyme essential oil 1/4 tsp. salt Freshly ground black pepper
Directions: Remove giblets from turkey. Place turkey on a rack and stuff with the onion and half of the rosemary, thyme, and garlic mixture. Loosen the skin from the turkey breast and place the remaining half of the mixture under the skin. To prepare the baste, stir together the cider concentrate, wild orange essential oil, lemon essential oil, olive oil, thyme, salt, and pepper. Roast the turkey in a preheated 325-degree oven, basting every 30 minutes with the cider baste until an internal temperature reaches at least 165 degrees in the innermost part of the thigh, the wing, and the thickest part of the breast. (Some diners may want the turkey cooked to a higher temperature.) Carve and enjoy!

A One-Stop Insurance Shop The Nevada Health launched in 2014 and some 38,000 Nevadans took advantage of plans offered to state residents through the Affordable Care Act, also known as ObamaCare. Now, it is time for the second year of the government program designed to make healthcare affordable to those who previously could not afford the cost of ever-rising health care premiums. The plans offer government subsidies, based upon income. One Elko resident was able to get a plan that cost $15 per month for a $250 deductible and 95 percent co-insurance until she reached $750 out-of-pocket expense. Then it paid 100 percent. The government subsidy was $681 per month in this case. Open enrollment for 2015 on the Nevada Health Exchange is scheduled for November 15, 2014 and runs through February 15, 2015; though individuals will be allowed to start their applications as early as November 3, 2015 when the Health Exchange goes on line. The cost is the same if you work through an agent or do it yourself. Our service is free. Those who have plans on the Health Exchange currently will need to re-enroll for 2015. The OneStop Insurance Shop, formerly known as The Affordable Healthcare Pros, will be re-enrolling current customers November 15, 2014 to December 15, 2014. They will need to pay their first-month premiums by December 15, 2014 to have the plan begin on January 1, 2015. Those who wish to change their private insurance or have no current insurance can also apply on the Health Exchange or through brokers like us, and

For anyone, retirement is an important milestone, and with today’s lengthening life spans, those retiring at or around age 65 may have two decades or more still ahead of them. With that in mind, it’s vital to structure a retirement plan – including disciplined spending budgets and realistic portfolio withdrawal rates – that can help you enjoy yourself longer, with confidence you won’t outlive your money. This is especially true for women, who typically live longer than their mates. Longer retirements also mean retirees need to create reliable income streams that do not rely on dipping into their principal, at least not in the initial years of retirement. Developing an income stream usually involves working with components such as Social Security, a pension plan, IRAs, an investment portfolio and other assets. Each person’s mix of investments will be different, but the key is to not deplete them too quickly. While there are a number of sophisticated computer models that produce formulas predicting how long a well-balanced portfolio will last at various annual withdrawal rates, a little common sense may serve pretty well. It’s obvious that the more you take out each year, the quicker you’ll deplete your retirement portfolio. The key is to find a balance.

One quick tip: although many people want to celebrate retirement by splurging a little, the beginning phase of retirement is a time to be extra-cautious about spending so that more of your principal can keep working for you.

Distinguish Between Needs and Wants
A critical part of planning for longer retirements is ensuring both spouses can manage the finances. Because discussing death isn’t easy, many couples don’t acknowledge that the spouse who handles the money (usually it’s one person) may be the first to go. That can create real problems, because it means the surviving spouse may have to begin handling financial matters just when he or she is also struggling with the grief and disruption of a major loss. If you haven’t planned for one spouse to take over from the other, you haven’t planned sufficiently.
Longer retirements also call for a relentless focus on expenses. You will have to be very honest about the difference between needs and wants. Develop a detailed cash flow plan – before you retire – that shows exactly where your money will come from and where it will go. Although many people assume their living expenses will decline when they retire, that may not be true. In fact, it may take a few years in retirement before you really have a good grip on what your actual expenses are. Two of the biggest challenges for retirees are healthcare costs and inflation. Both are essentially unknowable, and both can have a major impact on your financial situation. It’s wise, therefore, to build a margin of safety into your spending plans, recognizing the reality that prices are going to rise and that you are going to have higher healthcare expenses as you age. For

The Center provides stimulating activities and socialization that boosts clients' morale and well-being." BrightPath Adult Enrichment Center is a social/medical adult day care program serving disabled or at-risk adults age 18 and up. They open their doors Monday through Friday at 6:30 a.m. and wave good-bye to their last member at 5:30 p.m. Between these hours they offer stimulating and enjoyable activities for each of their participants according to their needs, their likes and dislikes, and their capabilities while, at the same time, overseeing their health needs. Each day is carefully planned by their Program Coordinator and Activity Aides to be fulfilling as the last. All activities
are adjusted to that day’s interest. All fifteen members enjoy a varied selection of activities. To be eligible to become a member you must be at least eighteen years of age with a need for supervision throughout the day. If you are interested or have questions about your eligibility do not be afraid to contact the staff at BrightPath. Hi, my name is Lyle. I’m a crocodile and I live at the Northeastern Nevada Museum. I have lived a lot of different places but my home at the Museum is by far my favorite. It hasn’t always been that way, though. When I first moved here, there were some pretty scary moments. You see, I wasn’t a part of the original gang that has lived here for 15 years, since the Wanamaker Wing was built. I’m a relative newcomer or as the giraffe likes to call me… Newbie. I have always been the type of crocodile that is easily spooked. Once time, in Mozambique, where I was born, a spider fell out of a tree and landed on my nose. It scared me so bad I hid under a banana leaf for two days! Let me tell you something. As somebody who is usually scared of his own shadow, when I first got to the Northeastern Nevada Museum… it was the scariest moment of my life!
Do you have any idea how many animals there are in this place? When they opened up the door to my new home… WOW! There were animals everywhere! Big ones, little ones, nice ones, scary ones, some were really outgoing and said “Hi” right away. Others just looked me up and down without a word, like I was an alien or something. I wanted to shout “I’m not an alien, I’m a cuddly Crocodile. I just want to be accepted for who I am and not judged for how big my teeth are or how many spikes I have on my tail”. I didn’t yell that, though - I was too scared! There were so many big, strong, scary animals in there, like elephants and lions and hippos and the scariest one of all… a huge tiger that guards the front door. After the Museum staff left me all alone that first night, I just sat there and shivered. During the night I got up to get a drink of water and bumped into a raccoon. I was so afraid he would be mad, I didn’t dare move. Then I heard him start laughing. Pretty soon the moose joined in and suddenly all the animals were laughing - they were laughing at me. Apparently I look fierce, but I’m really not! I guess some crocodiles in some parts of the world are kinda mean, but not me. I’ve never hurt a fly! I was so relieved, I had to laugh myself, and ever since then, I have made good friends with all the other animals. Once I realized they were all going to be nice to me and all of them realized I wasn’t going to eat them, we got along just great. The raccoons still try to catch me not looking and scare the socks off me, but I know they just do it for fun. They all still call me Newbie, but I know they are just teasing! I have so many good friends at the Museum, I don’t ever want to live anywhere else. I love all my friends, even the tiger, but let me warn you, they put him on guard of the door for a reason – you wouldn’t want to get in an argument with him. Many people walk through the exhibit, looking at me and my friends, and they enjoy it very much. They can call up an app on their cell-phone which tells all about each of us. I’m not sure what this app thing is, but the visitors seem to love it and they say it makes their visit much for enlightening. I hope you come to see me at the Northeastern Nevada Museum.
