Freshly Baked Muffins We have this thing about Lemon-Poppy Seed Muffins – we love them! It’s one of those foods that require sampling whenever some come our way. This pretty much means that we’re experts on the topic (albeit, self-proclaimed). Our conclusion for this version of Lemon-Poppy Seed muffins is that they rate very, very high! The texture was very light without being too cake-like. The muffins burst with lemony flavor just the way we would expect, and the light crunch of the poppy seeds completed the experience.
Lemon-Poppy Seed Muffins Makes 6 jumbo muffins, or 12 standard muffins
Lemon and poppy seeds are a popular pairing. This batter is much looser than the batters for the other muffins in this chapter and so results in a very light, lemony muffin. It’s best to use an immersion blender to emulsify the melted butter into the batter. You’ll need a 6-cup jumbo muffin pan [or 12-cup standard muffin pan], muffin papers, and a pastry bag with a 3/4–inch plain tip (optional). 1-1/4 cups cake flour - (161 grams) 1/2 +1/8 teaspoon baking powder - (3.4 grams) 1/2 teaspoon kosher salt - (1.7 grams) 1 cup + 3 tablespoons granulated sugar - (234 grams) 1/2 cup + 3 tablespoons eggs - (170 grams) [about 3 extra large eggs] 3/4 teaspoon vanilla paste - (4.5 grams) 6.8 ounces unsalted butter, melted and still warm - (194 grams) [about 10 Tbsp.] 1/4 cup fresh lemon juice - (60 grams) 1 tablespoon (generous) grated lemon zest - (6 grams) 1-1/2 teaspoons poppy seeds - (4 grams)
22
For the Batter: Sift the cake flour and baking powder into a medium bowl. Add the salt and whisk to combine.
To Bake the Muffins: Preheat the oven to 425°F (standard). Line the muffin pan with the muffin papers and spray the papers with nonstick spray. Transfer the batter to the pastry bag, or use a large spoon, and pipe or spoon the batter evenly into the papers, stopping 3/8-inch from the top (135 grams each for jumbo; 67 grams for standard).
Combine the sugar, eggs, and vanilla paste in a deep medium bowl and mix with an immersion blender. Add the dry ingredients in 2 additions, mixing until just combined. With the blender running, pour in the butter in a steady stream, and continue to mix until the batter is smooth. Add the lemon juice and blend again to combine. Fold in the lemon zest and poppy seeds (see Note). Transfer the batter to a covered container and refrigerate overnight, or for up to 36 hours.
Place the pan in the oven, lower the oven temperature to 325°F, and bake 34 to 37 minutes, [20 to 25 minutes for standard size muffins], or until the muffins are golden brown and a skewer inserted in the center comes out clean. Set the pan on a cooling rack and cool completely. The muffins are best the day they are baked, but they can be wrapped individually in a few layers of plastic wrap or stored in a single layer in a covered container at room temperature for up to 3 days or frozen for up to 1 week.

Perhaps it’s just the season, but these muffins hit the spot! Full of all the autumn spices that pumpkin loves, they baked into perfect little domes, moist and dense with flavor. Perfectly fine on their own, the cream cheese frosting caps the presentation for both the eye and palate. (Just like the bakery, a secret tunnel in the muffin’s core is filled with just a little more frosting.) These would be perfect for celebrating Halloween, or perhaps a Thanksgiving morning brunch.
Pumpkin Muffins
Makes 6 jumbo muffins/12 standard muffins
These are great simply frosted with cream cheese frosting, but we pipe some frosting inside the muffins as well. For Halloween, these muffins dressed up as pumpkins. You’ll need a 6-cup muffin pan, muffin papers, a disposable pastry bag, a pastry bag with an Ateco #865 French star tip (optional), and a 1-3/8-inch round cutter (optional). 1-1/4 cups + 3 tablespoons all-purpose flour – (200 grams) 1/2 teaspoon baking soda – (2.3 grams) 3/4 + 1/8 teaspoon ground cinnamon – (2.2 grams) 1/4 teaspoon ground cloves – (0.6 grams) 1/2 teaspoon freshly grated nutmeg – (0.5 grams) Pinch ground allspice – (0.1 grams) 1/2 teaspoon Kosher salt – (1 gram) 1 cup + 2 tablespoons granulated sugar – (222 grams) 1/4 cup +3 tablespoons canola oil – (100 grams) 3/4 cup +2 tablespoons pure canned pumpkin puree or fresh pumpkin puree – (210 grams) 1/4 cup +2-1/2 tablespoons eggs – (100 grams) [about 2 extra large eggs] 1/2 cup + 1/2 tablespoon golden raisins (optional) – (80 grams) 1-1/4 cups Cream Cheese frosting (see below) – (286 grams) For the Batter: Place the flour in a medium bowl. Sift in the baking soda, cinnamon, cloves, nutmeg,
and allspice. Add the salt and whisk to combine. Combine the sugar and oil in the bowl of a stand mixer fitted with the whisk attachment and mix on low speed for about 1 minute. Add the pumpkin, increase the speed to medium-low, and mix for about 1 minute, until smooth. Reduce the speed to low and add the eggs in 2 additions, mixing for about 15 seconds after each, or until just combined. Add the dry ingredients in 2 additions mixing on low speed for about 15 seconds after each, or until just combined. Remove the bowl from the mixer stand and scrape the bottom of the bowl to incorporate any dry ingredients that may have settled there. Fold in the raisins, if using. Transfer the batter to a covered container and refrigerate overnight, or for up to 36 hours. To Bake the Muffins: Preheat the oven to 425°F (standard). Line the muffin pan with muffin papers and spray the papers with nonstick spray. Transfer the batter to the disposable pastry bag and cut ½-inch of the tip from the bag; or use a large spoon. Pipe or spoon the batter into the papers, stopping 1/2-inch from the top (140 grams each for

jumbo; 70 grams for standard). Place the pan in the oven, lower the oven temperature to 325°F, and bake for 45 to 48 minutes [25 to 30 minutes for standard], or until the muffins are golden brown and a skewer inserted in the center comes out clean. Set the pan on a cooling rack and cool completely. To Fill the Muffins: Using the round cutter, cut through the top of each muffin, stopping 1/2-inch from the bottom, and carefully remove the center (or use a paring knife to remove the centers). Transfer the frosting to the pastry bag with the star tip and fill the cavity of each muffin with 35 grams/2-1/2 tablespoons of the frosting [less for standard sized muffins]. Then pipe a rosette in the center of each muffin. Refrigerate uncovered for about 30 minutes to firm. The muffins are best the day they are completed, but they can be refrigerated in a covered container for up to 3 days. Unfilled muffins can be wrapped individually in a few layers of plastic wrap or stored in a single layer in a covered container at room temperature for up to 3 days or frozen for up to 1 week.
Cream Cheese Frosting Makes 572 grams/2-1/2 cups [Note: this recipe makes twice the quantity needed for these muffins, but is easily halved]. 1 pound cream cheese - (572 grams) 1-1/4 cups + 1 tablespoon powdered sugar - (152 grams) 1/4 vanilla bean, split lengthwise Place the cream cheese in the bowl of a stand mixer fitted with the paddle attachment and mix on low speed until smooth, about 2 minutes. Scrape down the sides and bottom of the bowl, add the sugar, and pulse on the lowest speed to combine. Scrape the seeds from the vanilla bean, add them to the mixture, and mix for 2 to 3 minutes, until completely smooth. The frosting can be used at this point or refrigerated for up to 3 days. If it has been refrigerated, let it sit at room temperature until just cool to the touch, then transfer to a mixer fitted with the paddle attachment and beat until smooth.

Muffin Tips: Dark pans absorb and retain more heat than lighter, shiny pans. Reduce the over temperature by 25 degrees F when using dark pans. Rest the batter for as long as 36 hours to allow the liquids to moisten all of the flour.

wrong choice of bean or roast – it’s all about your personal preference! Good Grinds Grind freshly roasted coffee beans immediately before brewing to maximize the flavors and volatile aromas. Match the grind to the type of brewing method to be used. For example, a very fine, powdery grind is needed for the preparation of Turkishstyle coffee, while a coarse grind would be appropriate for Fresh press methods where the coffee steeped. Fine and medium grinds are appropriate for drip methods common to most automatic coffeemakers. Brewing systems Gone are the percolators of the olden days that produced many a pot of questionable product. Today, brewing systems are built specifically to brew a better cup of coffee. - Drip brewers - Extracting Espresso Forced steam brewers - Pour over Brewing
French presses Enjoying a revival, French presses are another great tool for making a good cup of joe. Utilizing a steeping method instead of drip brewing or forced steam, the press allows brewing and serving in a single pot. French presses are available in many sizes and styles, but all use a springpowered method for corralling the grounds at the bottom of the pot just prior to pouring.
Enjoy your coffee immediately after brewing! Hot plates or warming burners will lend a burnt flavor to the coffee. Instead, keep brewed coffee in insulated carafes.

Khoury's Wine of the Month
Washington Wines United States, Italy, Spain and France… If you are a newcomer to the world of wine and all that it has to offer, you might be tempted to choose tonight’s bottle based on its geographical origin. The United States, Italy, Spain and France have been long time producers of some of the world’s highest rating wines and with good reason. A recent study by the University of Adelaide in Australia tells us that 21.19% of global wine production comes from France with Italy, Spain and The United States following respectively. These regions have proven that with their desirable climates and proper soil, vines will thrive and thus reward the vintner with an award winning grape. Now, with that said, each of these countries has a virtual smorgasbord of growing regions within itself. For example, The United States is most commonly known for the wines produced in Napa Valley and Sonoma but one area is quickly becoming a major wine producer.
Washington State is home to more than 750 wineries.
The majority of these wineries are located in the south central portion of the state covering rolling hills and weaving along glorious mountain ranges. Cabernet Sauvignon grapes are the primary varietal grown for red and Riesling grapes win the bulk of white wine grapes grown here.
There are already several of these great wines right here in Elko. Tonight, when you reach for a bottle of wine, reach deep into The Evergreen State. You’ll be pleasantly surprised! OCTOBER 2014 | everythingelko.com

Pictures of Smith Lake and hikers headed to Smith Lake. Taken by Doug Clarke.
Off the Beaten Path – Hiking to Smith Lake October is a nice month for hiking in Elko County. The fall temperatures are pleasant, the air is clean, and the fall colors are out. One recommended day trip is the hike to Smith Lake, which is located in the East Humboldt Mountains. Access is via the Angel Lake Scenic Byway (State Route 231) outside of Wells. The drive is great and provides good views of the country you will be hiking in. The trailhead, with ample parking, is at the end of the Lake Scenic Byway. The hike is a short one, approximately 1 and ½ miles in length, which makes it a good trip for families. The trail climbs away Angel Creek through open mountain shrub and snowbank aspen stands. Along this stretch hikers have nice vistas of Pilot Peak, the Pequop Mountains and Spruce

Mountain to the East. After about a mile the trail enter stands of pine trees. The shade a welcome respite and it is a great spot for a short break. It is about another half mile to the lake that is surrounded by high mountain peaks. Once at the lake you will be amazed at the wonderful scenery. Whether you arrive at the lake ready to fish, have a trail lunch or to view wildlife you are sure to enjoy this trip. As with any backcountry hiking, be ready for changing weather and trail conditions and bring extra clothing, food and water. Since October is hunting season here, wear some orange and be on the lookout for hunters. It is also recommended you call the Wells Forest Service Office at (775) 752-3357 and ask about current conditions.

The Colors of Fall L Submitted by Lois Ports, Bristlecone Audubon Chapter
As fall progresses the days get shorter and shorter. It is time for the trees to get ‘ready’ for winter. The leaves of trees and other plants contain four main pigments: carotene, anthocyanin, tannin and the photosynthetic pigment, chlorophyll. As the most abundant pigment, chlorophyll is what gives leaves their green hue in spring and summer. During winter, there is not enough light or water for photosynthesis. Trees and plants will rest, and live off the food they stored during the summer. As they begin to stop producing food the green chlorophyll disappears from the leaves. As the green fades we start to see what we consider the colors of fall. These colors have been there all along but they were covered up by the green of the chlorophyll. Anthocyanins give us the bright reds and purples. Most anthocyanins are produced in the autumn, in response to bright light and excess plant sugars within leaf cells. Chokecherry and geranium leaves are among the plants which display these colors in the Ruby Mountains. Carotenoids produce yellow, orange, and some browns. Have you noticed that quaking aspen trees will show a patchwork display of yellows, oranges, and greens in the canyons of the Ruby Mountains? This is because aspen reproduce by sending sprouts up from the root system. This creates groups of trees which are genetically identical to each other, clones. As the days shorten and the chlorophyll fades the clones will start to show the colors of fall. While one clone will be yellow a neighboring clone may still be green. In some areas the clones will turn orange. It is the combination of all these things that make the beautiful fall foliage colors we enjoy each year. Be sure to take a drive up into the Ruby Mountains to enjoy the show.
Bristlecone Audubon invites you to attend their meeting on Friday, October 24, 2014 at 6:30 p.m. We meet in room 208 of the EIT building at Great Basin College. The presentation will be Bats of the World. For more information contact Lois Ports at 738-4270.

Painting is prepping, so prepare your patience. When introduced as a painter I often hear a similar complaint from do-it-yourself homeowners. “I don’t mind painting but I hate to prep.” I inwardly smile at this because the actual application of paint makes up about 20% of the work. The other 80% is the prep & clean up. In short, painting IS prep. But preparation doesn’t have to be a daunting task. There are tools and tricks that will simplify the process. Here are 3 tips that will make short work of the prep work and get you painting faster.
Contributed by Andy Roe - President, Roe Painting, Inc.
1) Invest in a hand masker Nothing will help you cover items you don’t want paint on like a 3M Handmasker. This device efficiently applies tape and paper at once. With paper sizes of 6, 9 or 12” it covers the perimeter in no time.
Remember the old saying, “If you fail to prepare, you prepare to fail.” A little bit of prep goes a long way and will yield sharper, cleaner results that you can admire for years to come.!
2) Don’t trust the tape After watching a 3M commercial for Blue tape, DIYers often rush out to buy the product and are shocked when their lines don’t look like the lines in the commercial. The truth is, even with the best tape, paint often bleeds behind it leaving a line that isn’t always straight. Use an angle brush to “cut in” up close to the tape. Less paint on the tape means less paint under the tape too. If you have to trust tape, use “Frog Tape.” It is green and comes in it’s own sealed container.
3) Select the right roller nap Each roller cover has a “nap” to it. Nap is available in various lengths, so use the one recommended for the surface you’re painting. In general, the longer the nap, the more paint it will hold. For most textured walls, a 3/8” nap will hold enough paint, while not excessively spitting as you roll.

Good Neighbor's
Heather Howes was nominated by Morgan Hitt and Russel Fetters C ontributed by S habonya D utton of S tate F arm , written by K elsie C reamer
Heather Howes is Shabonya Dutton State Farms Good Neighbor for October. Morgan said “Heather is the sweetest and most caring person I know! She's always doing things for friends and neighbors even if that means driving to Carlin! She always makes sure everyone is taken care of before herself. She's always the first one to call when I have something I can't quite figure out or just need to talk. She's an awesome 6th grade teacher at Flag view elementary that goes above and beyond for all the kids and they love her.”
Heather has been teaching for 9 years now and loves it! But her path to teaching started in a Library.
Before Heather decided to become a teacher she was working as a librarian. One of her closest friends was a 1st grade teacher and she would bring her class on a field trip to the library once a year. This particular field trip Heather had the opportunity to gather the kids Heather Howes around for story time and read them a story; after all was said and done Heather has lived in the Elko area for her friend suggested she become a 26 years. Heather was born in Montana but considers teacher as she was so great with the kids! And just Elko her home. This last year Heather and her like that Heather a single mom raising two kids made the bold decision to go back to school at age 30. husband moved from Carlin to Elko. Heather graduated from GBC and said “I’m very thankful for the education I was able to get here in Elko.” Heather said she loves Elko and that it’s a melting pot, there are people that move here from all over. Heather is a 5th and 6th grade special ed teacher at Flag View. “This has been a great opportunity I’ve been given by Flag View to work with the kids.”

OCTOBER 2014 | everythingelko.com
“I wanted to be a good role model to my kids and I wanted to show them that if you want to do anything, you can.” I asked Heather what motivates her to keep teaching, she replied “My love for human kind. Everyone deserves a chance…everyone deserves kindness and someone helpful in their life.” As Heather said
this I couldn’t help but agree and think how beautiful her words were, it’s obvious she is passionate about teaching.
Teaching isn’t just a job, it’s a promise that every day they will chose to positively influence our youth in hopes of a brighter future and a better tomorrow.
To find teachers like Heather who love their job and their students is an amazing thing. As a teacher their responsibilities are high, their duties endless and they have what I believe to be the most severe obligation to the children that come into their classroom, as every word they speak and lesson they teach last a lifetime…it affects their students and it molds them into the upstanding citizens they will soon be.
Heather said “I believe if you can do it you should!” “If I wasn’t a teacher I would have to help people in some way” Heather you are truly a good neighbor and a wonderful asset to our community, thank you for all that you do and for making that promise to positively influence our future every day.
You can submit your nominee for Shabonya Dutton State Farms good neighbor by email to kelsie.creamer.k9f0@statefarm.com with a subject name of Nominate your good neighbor

Hidden Cause A common cause of headaches is from spinal bones in the neck that aren’t supporting the head properly. You might not notice your reduced ability to turn your head. But these subluxations affect nerves, muscles and even the blood supply to your head. Our thorough examination detects subluxation patterns that could be causing your headaches. If subluxations are present, you’re likely to benefit from chiropractic care.
Compensation Reaction Go online and take a range of motion test @ http://www.elkochiropractor.com/info/headaches/ Some are surprised to learn that their headaches are being caused by problems in their lower back! The upper spine compensates, shifting the head off center, causing headaches. While we can’t guarantee results, we have a high success rate with practice members who get headaches. History of Halloween Halloween
is
one
of
the
oldest holidays with origins
going back thousands of years. The holiday we know as Halloween has had many influences from many cultures over the centuries.... from the Roman's Pomona Day, to the Celtic festival of Samhain, to the Christian holidays of All Saints and All Souls Days. Hundreds of years ago in what is now Great Britain and Northern France, lived the Celts. The Celts worshipped nature and had many gods, with the sun god as their favorite. It was "he" who commanded their work and their rest times, and who made the earth beautiful and the crops grow. The Celts celebrated their New Year on November 1st. It was celebrated every year with a festival and marked the end of the

"season of the sun" and the beginning of "the season of darkness and cold." On October 31st, after the crops were all harvested and stored for the long winter, the cooking fires in the homes would be extinguished. The Druids, the Celtic priests, would meet in the hilltop in the dark oak forest (oak trees were considered sacred). The Druids would light new fires and offer sacrifices of crops and animals. As they danced around the fires, the season of the sun passed and the season of darkness would begin. When the morning arrived the Druids would give an ember from their fires to each family who would then take them home to start new cooking fires. These fires would keep the homes warm and free from evil spirits. The November 1st festival was called Samhain (pronounced "sow-en"). The
festival would last for 3 days. Many people would parade in costumes made from the skins and heads of their animals. This festival would become the first Halloween. During the first century, the Romans invaded Britain. They brought with them many of their festivals and customs. One of these was the festival know as Pomona Day, named for their goddess of fruits and gardens. It was also celebrated around the 1st of November. After hundreds of years of Roman rule, the customs of the Celtic's Samhain festival and the Roman Pomona Day mixed becoming one major fall holiday. The next influence came with the spread of the new Christian religion throughout Europe and Britain. In the year 835 AD, the Roman Catholic Church would make
November 1st a church holiday to honor all the saints. This day was called All Saint's Day, or Hallowmas, or All Hallows. Years later, the Church would make November 2nd a holy day. It was called All Souls Day and was to honor the dead. It was celebrated with big bonfires, parades, and people dressing up as saints, angels, and devils. But the spread of Christianity did not make people forget their early customs. On the eve of All Hallows, Oct. 31, people continued to celebrate the festivals of Samhain and Pomona Day. Over the years, the customs from all these holidays mixed. October 31st became known as All Hallow Even, eventually All Hallow's Eve, Hallowe'en, and then - Halloween.
The Halloween we celebrate today includes all of these influences, Pomona Day's apples, nuts, candy, and harvest, the Festival of Samhain's black cats, magic, evil spirits and death, and the ghosts, skeletons and skulls from All Saint's Day and All Soul's Day.

Battle Born You see it everywhere. It’s been the theme of the Nevada Sesquicentennial celebration all year. But what does it mean. Are we ready to fight? Were we ready to fight in the past? Do we just like to fight? Let’s look at some dates that will explain it. The first skirmish of what would become the Civil War happened in 1859, and at that time, the area that is now Nevada was part of the Territory of Utah. Abraham Lincoln was elected President of the United States in November 1860 and the Southern states started seceding from the Union shortly after, in December of that year. On March 2, 1861, Nevada was made a Territory of the United States. Although there were not nearly enough people here to become a territory, most of the population sided with the North in the war, so Nevada seemed a desirable addition, as far as northerners were concerned. Most of the people living in the new territory wanted to be separated from Utah, so it as a win-win, except for Southern sympathizers. The new Territory of Nevada wasn’t as big as it is now, though. The eastern boundary, between Utah and Nevada in 1861, was the 116th Meridian, which is between Carlin and Elko, so the area that would become Elko, some eight years later, was not part of the new Territory of Nevada. This was changed the next year, when the eastern boundary of Nevada was extended to the 115th Meridian. Now the boundary was just a couple of miles west of Wells, so everything
that is presently between Wells and Wendover was still part of Utah In 1864, the Civil War had been raging for several years and President Lincoln was up for re-election. Many in Washington feared that he would not be elected, so there was a push to change Nevada’s status from a territory to a state, so it would help his cause. A Constitution was drawn up for Nevada, and in rush to get things done before the election in November, the Constitution was telegraphed to Washington. It was the longest ever send by wire up until that time. It was 16,543 words, and took two days for the entire transmission. It cost $4,303.27, which adjusted for inflation, would have been $62,295.77. The whole scheme was successful, Nevada was made the 36th state on October 31, 1864, and the new citizens voted in the election several days later in November. None of it turned out to be necessary, as Lincoln won by a landslide, but Nevada became a state during the Civil War and hence, the motto, Battle Born. This new state still did not include the area that would become Wells and everything east, north and south of that town. That was not added to Nevada until 1866, when the 114th Meridian became the present-day boundary between Nevada and Utah. There were other changes in 1867, which added the southern tip of Nevada to the new state, with the land being taken away from the territory of Arizona, and it became the area it is today. But now when you celebrate Nevada’s 150th Birthday on October 31, you know why it is Battle Born.
