What’s New at the Museum?
2015 has brought exciting new aspects to the museum. In the Wanamaker Wing, an iPad has been installed with an interactive and informational map of the animals. Visitors can explore the app on the iPad or download the same app onto their personal Apple devices. The app, featuring colorful icons of the exotic animals on display, enables museum patrons to take self-guided walking tours through the extensive exhibit in six different galleries encompassing more than 20,000 square feet. By clicking on the icons, visitors can access educational and fun information about each animal, from its place of origin and eating habits to scientific classification and natural predators. After months of hard work, the museum is now proud to offer free coloring books to visitors, full of puzzles, animals, stickers, and educational information all pertaining to Northeastern Nevada and our award-winning exhibits. Here are two of our favorite puzzles and one coloring scene for you or your little ones to enjoy before the family can stop by for the real thing. We hope to see you soon!

Directions Mix Berry Filling - Combine first seven ingredients in large saucepan. Cook over medium heat until mixture thickens and begins to boil, stirring occasionally, 12 to 14 minutes. Continue to boil 2 minutes, stirring constantly. Transfer berry mixture to a bowl and cool completely. Cover and chill. Crumb Topping - Combine and mix all ingredients by hand in a bowl and set aside. Do not over mix. Preheat oven to 400°. Spoon the mix berry filling into the pie crust. Sprinkle crumb topping over the pie and place on a baking sheet. Cook until the crust is golden and the filling is bubbly for about 1 hour. Cool on a pie rack. Contributed by Gold Dust West

Everyone loves the captivating flavors of caramels! They’re a great treat that spans the fall and holiday season, and a fun, unique gift to give to friends and neighbors.
The perfect caramel is chewy, yet melts wonderfully in the mouth. A good caramel is soft and easy to eat, but not so soft that it puddles about. Beyond the superficial looks, how the caramels taste is of prime importance. They should be buttery, with a rich caramel flavor without any hint of

burnt sugar. A prominent vanilla flavor is wonderful, or if you choose other flavor accents they should shine through without dominating the base caramel flavor. The ideal caramel has a smooth texture free of any sugar crystals.
Handcrafted Caramels Makes 120 - 140 caramel pieces (depending on size)
Ingredients: Vegetable oil 3 cups heavy cream 3 cups granulated white sugar 1 cup brown sugar, packed 2 cups light corn syrup 1-1/2 teaspoons Kosher salt 1/2 cup (1 stick) unsalted butter 2 teaspoons vanilla extract

(3) Increase the heat to medium. Continue stirring until the cream-sugar mixture reaches a boil. Stop stirring. Using a brush dipped in warm water and wash down any sugar crystals that may have formed on the edge of the pan. Allow the mixture to cook, without stirring, until it reaches the firmball stage, around 248°F as measured on a candy thermometer clamped to the side of the pan. (If you do not have a candy thermometer, use a water test to check for the appropriate sugar stage. A drop (approximately 1/4 teaspoon) of caramel in cold water should form a firm ball, yet be pliable.)

(2) Wipe the interior of a large saucepan, (we use our 5.5 qt. Dutch oven) with a light coating of oil. Measure the heavy cream, sugars, light corn syrup and salt into the pan. Over medium-low heat, stir the ingredients together until well-combined and the sugar is dissolved.

(1) Prepare a 9 x 13 rimmed pan prior to starting to cook. Oil (with a tasteless vegetable oil that stays liquid at room temperature) the bottom and sides of the pan well. Line the pan with a criss-cross of parchment paper cut to match the pan’s size with a little extra at the ends; avoid any wrinkles in the corners. Set aside.

(4) Remove the caramel from heat, add the butter and vanilla stirring until melted and well-combined with the cream-sugar mixture. (Cutting the butter into half-inch cubes will help to efficiently melt and distribute this key ingredient.) (5) Carefully pour the caramel into the prepared, lined pan. Allow the caramel to set and cool to room temperature. This will take several hours or overnight. (For evenly sized caramels, make sure the pan is setting on a level surface.) (6) Once cooled, lift the sheet of caramel from the pan to a safe cutting surface. The caramel should retain its shape. Neaten the edges of the caramel to remove the rounded edges. Cut the caramel slab vertically and horizontally in desired sizes and shapes with a long-bladed cook’s knife. We suggest 1-1/4-inch by 1/2-inch pieces, or 1-inch squares. Wrap the pieces in nonstick wrap such as parchment paper. Store at cool room temperatures for up to 2-3 weeks.
Basic Vanilla Caramel: Once you’ve mastered the basic caramel, experiment with creating other flavors – Halve the quantity of vanilla extract and substitute another flavor extract such as orange, butter rum, almond, or another complementary flavor. Instead of full batches of one flavor, split one batch by pouring half of the molten caramel into a separate pot and adding the alternate flavor prior to spreading on a pan.
Embellish & Garnish: Dress up your caramels with a garnish and present them in a box. Add the garnish after the caramels have cooled. Consider garnishes such as fleur de sel, other specialty salts, crumbled gold leaf, a few cacao nibs, chopped nuts, a candied flower petal, luster dust, or your favorite sprinkles.

Use the right utensils. Choose your stirring and scraping utensils carefully, ones that do not conduct heat. As well, avoid the wooden spoon that you use when sautéing onions – residual flavors may show up in the caramels!

Practice sugar safety. Take care around hot sugar preparations. Avoid splatters or touching the molten mixture; it can stick to your skin and burn quickly. Needless to say, don’t lick the spoon until it has cooled.

Use a thermometer. Sugar changes character at different temperatures. The one key trick to successful caramels is to use a candy thermometer that lets

Choose a good cutting surface. Once the caramels have cooled and set completely. Loosen and lift the parchment from the pan and transfer to a cutting surface. Keep the parchment in place as you cut. Avoid cutting while in the pan – knives may damage the pan’s surface. (Use a different board than the one you use for chopping onion and garlic.)

Measure for evenly-sized pieces. Trim the edges of the caramel slab to remove any rounded edges created by the pan’s shape. Use a ruler to mark rows and columns in the caramel.
8. Cut only what you can wrap. Don’t cut more pieces than you have time to wrap. A nice soft caramel will begin to “wilt” if left to sit unwrapped for several hours.
9. Pick the right wrap. Choose
a wrapping paper that will release the caramel without sticking. Cut squares of parchment paper or waxed paper that match the size and shape of your cut caramels. Twist the ends is opposite directions.

This is the ideal pan for spreading the caramel mixture in this recipe. Cut caramels will have a half-inch height.
Vanilla is an essential flavor for great caramels and in a lot of holiday baking. Choose the brand that we think is best!
Technique: Cooking with Sugar Sugar is such a simple ingredient, yet the results vary greatly based on how much temperature is applied. The kitchen chemistry that goes on when sugar is heated involves breaking chemical bonds and creating new ones. As sugar is heated, water is able to hold more and more sugar in a liquid suspension – something called supersaturation. As a sugary liquid boils, evaporation occurs further increasing the sugar concentration. Here are some of the stages that sugar goes through as it heats:
230-235° | Thread Stage 80% Sugar Concentration Sugar cooked to this stage will be syrupy and clear in character. 235-240° | Soft-Ball Stage 85% Sugar Concentration The sugar dropped in a cup of cold water will form a soft, pliable ball. When removed from the water and placed in a spoon, it will spread and flatten.
245-250° | Firm-Ball Stage 87% Sugar Concentration A drop of sugar in a cup of cold water will form a firm ball. When removed from the water it will keep its shape but can still be squished between your fingers.
250-265° | Hard-Ball Stage 92% Sugar Concentration The sugar dripping from a spoon forms threads. A drop in cold water forms a hard ball that will not flatten between your fingers.
270-290° | Soft-Crack Stage 95% Sugar Concentration Smaller, tightly packed bubbles appear on the surface of the cooking sugar. When dripped into cold water, the sugar forms flexible, bendable threads.
300-310° | Hard-Crack Stage 99% Sugar Concentration Sugar at this stage is very hot. A drop placed in cold water forms hard, brittle threads that crack when bent.
320-338° | Caramel Stage 100% Sugar Concentration Sugar at this stage is caramelizing. There is no water left in the sugar; it is a light amber at the low end of the range, and a dark amber as it becomes hotter.

Nevada State Register of Historic Places Recognizes
The George G. Berry House The George G. Berry House has become the latest addition to the Nevada State Register of Historic Places. The State Register is a list of properties in Nevada that reflect the history and traditions important to Nevadans. George G. Berry, a prominent political and judicial figure in early northern Nevada, constructed this house in 1874 as his permanent residence during the early development of Winnemucca. Berry invested in newspapers and mining claims in the area, supported the development of Nevada’s Democratic Party and served as the district judge for Humboldt County. He was also a crucial player in establishing and surveying of the town of Winnemucca in 1874. Berry left Winnemucca in 1881 after mining in Nevada began to decline, eventually settling in Tombstone, Arizona. The home also helps tell the story of Basque heritage in Nevada. The modest Queen Anne served as a residence for the Legarza extended family from 1908 to 2010. The Legarza and Dufurrena families, who occupied the house during this time, were part of the larger immigration of Basques to the western United States. Their story is part of the long-term ethnic diversity of
most early western towns that is sometimes lost amid the romanticized image of cowboys and gold mining. Juan M. Legarza and his family were among the many Basques in Humboldt County who ranched in the surrounding mountains and valleys, establishing a permanent operation along the Quinn River in 1922. The home in Winnemucca became a regular stop for family members well into the 1990s, as they traveled between various businesses and ranching locales throughout the region. The house represents nearly a century and a half of diverse history within Winnemucca and Humboldt County, and joins 154 other resources throughout Nevada listed in the State Register. Property owners with questions about the program or how to list their property in the State Register are encouraged to contact the Nevada State Historic Preservation Office. The State Register of Historic Places, with its companion program the National Register of Historic Places, is managed by the Nevada State Historic Preservation Office and reviewed by Nevada’s Board of Museums and History.

The single-leaf pinyon pine, Pinus monophylla, was designated the state tree in 1953. The Nevada state legislature declared the bristlecone pine, Pinus longaeva, as an additional state tree in 1987. Both of these trees can be found in the Ruby Mountains and other areas of Elko County. Although, very few single-leaf pinyon pine trees are ever found north of the Humboldt River in Nevada. The single-leaf pinyon pine is the only pine species that has only one needle in each bundle on the branch. It is typically found in the middle elevations of the Great Basin but can range from 3,200 feet to 9,700 ft. In our region it is often found in a mixed woodland with Utah Juniper. Covering millions of acres on mountains surrounded by desert it is an important source of food and habitat for many animals. Pine nuts, seeds of this tree, are eaten by most birds and

many mammals including mice, squirrels, chipmunks, deer and even desert bighorn sheep. Pine nuts contain protein, fat and carbohydrates in similar amounts to pecans, walnuts and peanuts. Historically the Great Basin Indians relied on the pine-nut crop with the oldest records carbon dated at about 6,000 years of age from firepits excavated in central Nevada. During the mining boom from 1860s and 1870s the single-leaf pinyon was the main source of charcoal used in smelting the silver ores. Bristlecone pine trees are considered the oldest non-clonal trees in the world. The oldest known living tree at 4,841 years is named Methuselah and is located in the White Mountains of California. The oldest bristlecone tree was actually cut down in 1964 while it was still alive at the ripe old age of 4,900 years! This tree called Prometheus was

growing on Wheeler Peak (now part of the Great Basin National Park). Bristlecone pine trees are typically considered a timberline tree found from 9,000 to 11,500 feet in elevation. It often grows on exposed ridgelines where the tree takes the full force of wind and ice. Capable of growing to heights of 60 feet or more, most ridge top trees rarely exceed 15 to 30 feet in height. Since diameter growth continues throughout life they can have massive trunks. It is estimated that they grow about an inch in diameter every 100 years so the wood is extremely dense. The short needles are in bundles of five and grow densely along small branches about a foot in length. Most pine needles live only for a few years but the needles of the bristlecone can remain on the branches for up to forty years. In very old trees there is often only
a narrow strip of living tissue that connects the roots to a handful of live branches. While other species of trees that grow nearby suffer rot, bare bristlecone pines can endure, even after death, often still standing on their roots, for many centuries. Rather than rot, exposed wood, on living and dead trees, erodes like stone due to wind, rain, and freezing, which creates unusual forms and shapes. Bristlecone pine trees can be found on the ridgelines above Thomas Canyon and on Pearl Peak in the Ruby Mountains. At Great Basin National Park there is an interpretive trail that leads to a grove of bristlecone trees on Wheeler Peak. There are also bristlecone trees that can be accessed on the rugged four wheel drive road to Mount Washington on the west side of the park.

Edgar Allan Poe was born in Boston on January 19, 1809 and was the first wellknown American writer, author, and poet. Best known for his tales of mystery and the macabre, Poe was one of the earliest American writers of the short story and is widely considered the inventor of the detective fiction genre. He was also an instrumental contributor to the emerging genres of horror and science fiction. Poe influenced literature around the world. In 1845 he published his poem, The Raven, to instant success. On October 7, 1849, at age 40, Poe died in Baltimore. The cause of his death is still unknown and has been attributed to alcohol, brain congestion, cholera, drugs, heart disease, rabies, suicide, tuberculosis, among other theories. Edgar Allan Poe’s work appears throughout pop culture in literature, music, films, and TV to this very day.
Poe & Pints will feature four tasting “flights” from the kegs of the award-winning, Renobased Brasserie St. James Brewery along with pieces from arguably one of the most popular American authors of the nineteenth century. Literary selections include Hop Frog, The Black Cat, and the classics The TellTale Heart, and The Conqueror Worm among others. Complementing the event, 2nd-level Cicerone Adam Cooper from Southern Wine and Spirits will be our guest to demonstrate the art of craft beer tasting. Similar to a wine sommelier, a cicerone guides tasters through the tasting process including recognizing the character, note, and aroma of a microbrew.
Directing Poe & Pints for the second time is local director, actor, and community volunteer Frank L. Sawyer. The project was first conceived of by Mr. Sawyer in 2014 and developed further by Jennifer Anderson, Managing Partner of Duncan LittleCreek Gallery, and local artists including John Wright, Derek Burwell, and Erika Patrick. Frank has directed such shows as The Last U.S. Mail Stage Robbery, Bard in the Yard I, II, and III, Much Ado About Nothing, Lysistrata, I Do! I Do!, The Odd Couple, The Zoo Story, Talk Radio, and Bringing it All Back Home among others. Joining the group in the event’s planning, production, and performance are local actors and volunteers

The process begins with excessive motion in a joint that eventually leads to a wearing-down of cartilage. As a result, inflammation develops within the joint, and movement becomes painful. These changes generally appear later in life, but if mechanical or hereditary defects are severe, signs can appear in younger pets. How will you know if your pet has arthritis? They may start having trouble going up or down stairs or trouble getting up from a laying position. Other symptoms of arthritis include joint pain, stiffness or tenderness at the site, a subtle or even severe limp, and sometimes swelling, which can indicate fluid buildup. There are many ways to assess the degree of arthritis including, careful palpation of the joints, lameness evaluation or radiographs (x-rays). Unfortunately there is no cure for arthritis, this is a condition that must be managed and treatment is critical to slow progression. There are many treatment options to provide relief for pets with arthritis. You should always work with your veterinarian to develop a treatment plan. Never give your pet over-the-counter human medications without a veterinarian’s approval. Some human medications can be harmful or even fatal to animals, even in small dosages. A well-balanced treatment plan should include three parts: pain management, behavior, and diet. Pain management involves the use of anti-inflammatory medications, targeted pain medications, cold laser treatment and acupuncture. Elko Veterinary Clinic offers cold laser therapy and has had great success treating many painful conditions with low level laser therapy. Behavioral aspect of arthritis treatment involves low impact exercise and physical therapy. Regular exercise helps to keep your pet fit and feeling good and to avoid the “weekend warrior syndrome”. Just like in humans pets must “use it or lose it”. Other behavioral components of treatment would include using elevated feeding dishes, using pet ramps or pet steps, and providing regular low impact exercise to loosen sore joints. Moist heat and a heated bed may soothe aching joints and a firm, orthopedic bed can make resting and rising more comfortable for your pet.

California trail interpretive center
j october j The California Trail Interpretive Center has shifted into our fall/winter hours and schedule. We are now open Wednesday through Sunday, 9-5 and closed Monday and Tuesday. Admission is still free! Two special events planned this month. On October 17 and 18 will be the first annual Humboldt River Rendezvous. Mountain men and fur trappers first made their way through northern Nevada in the late 1820s. They trapped beaver, hunted and traded with the local Shoshones and Paiutes. Games of chance, games of skill and trading opportunities will be presented at our Rendezvous. Join us in period dress or modern clothes and see mountain men re-enacting the old ways. FREE! Over the Nevada Day weekend, October 31 and November 1 will be the annual Great Basin Native Market at the Trail Center. Hours are 9-5 each day. Learn about the history and traditions of Great Basin Native Americans through workshops and demonstrations. Enjoy Shoshone songs, native foods, and the traditional use of Nevada plants. The show features handmade traditional Shoshone, Paiute and Washoe crafts, collectibles, jewelry, and much more for sale.
Other programs during the month feature pioneer skills that would have taken place while on the Trail. Some will be illustrated talks while others are hands on including biscuit making, flint and steel fire starting, beginning crocheting, tomahawk throwing, pioneer kid games and more! And…chores for the kids – water carrying, clothes washing, and cow pie fetching. There was fun in the evening for all ages – horseshoes, cat’s cradle, hopscotch and others. Life wasn’t all work as the pioneers traveled west! These family-friendly events are free and open to the public. Pumpkin Pie Pancakes (recipe by Kelly Senyei, photo by justataste.com)
INGREDIENTS :
2 C. all-purpose flour 3 T. sugar 1 tsp. cinnamon 1 tsp. allspice 1 C. canned pumpkin purée 1 1/2 C. whole milk
2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. ginger 1/2 tsp. salt 1 lg egg 2 T. veg. oil 2 T. vinegar
DIRECTIONS:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, allspice, ginger and salt. Set the bowl aside. In a separate medium bowl, whisk together the pumpkin purée, milk, egg, vegetable oil and vinegar. Add the wet ingredients to the dry ingredients and stir just until combined. (The batter will be lumpy. Do not over mix it or your pancakes will be dense.) Heat a large nonstick sauté pan over medium-low heat and add just enough oil to coat the bottom of the pan, allowing it to heat for 2 to 3 minutes. In batches, scoop 3 to 4 tablespoons of batter into the pan to form pancakes. Cook the pancakes on one side until bubbles appear in the center, then flip them once and continue cooking until no longer doughy in the center. Serve the pancakes with your choice of toppings, including maple syrup, fresh fruit, nuts or whipped cream.

INGREDIENTS:
1 C. pumpkin puree 3 Tbsp. coconut oil 3 Tbsp. almond butter 4 Tbsp. unsweetened almond milk ½ banana 1 scoop vanilla protein powder 1 heaping tsp. cinnamon ½ tsp. pumpkin pie spice 3 packets stevia or 2 Tbsp. of pure maple syrup INSTRUCTIONS:
Heat coconut oil in a saucepan at medium heat. Add in pumpkin puree and saute until warmed (about 3 minutes). Meanwhile, in a bowl mix together almond butter, stevia or maple syrup, banana,and almond milk. (The mixture may be a little clumpy from the banana but that is fine!) Add the almond butter mixture to the saucepan with the pumpkin and oil and stir together. Stir in the cinnamon, pumpkin pie spice, and protein powder. Transfer the entire mixture to a food processor or blender and process/blend until smooth. Pour the mixture into a muffin mold/brownie pan/cake pan and garnish with cinnamon. INGREDIENTS: 7 oz. pineapple juice 3 Tbsp. pumpkin purée 1 tsp. honey (more or less to taste) 1 big lemon, juiced 1/4 tsp. vanilla extract 1/4 tsp. cinnamon 1/8 tsp. ginger dash nutmeg dash allspice or cloves 3 oz. dark rum INSTRUCTIONS: Pour all ingredients into a blender and blend well. Fill two double old fashioned glasses with ice. Pour the mixture over ice and garnish with a dash of cinnamon.

INGREDIENTS:
1 cup whole wheat flour ½ cup oats 1 tsp baking powder 1tsp baking soda 1 tsp salt ¼ cup sage 2 cup pumpkin puree (fresh or canned) ¼ cup olive oil 1 tbsp apple cider vinegar INSTRUCTIONS:
If you are using fresh pumpkin, cut the pumpkin into big chunks and cook until soft. You can use the skin also. Once it’s cooked, blend it into a smooth puree. Mix all the dry ingredients until well combined. Chop the sage into small pieces and throw it into the dry mixture. Add the pumpkin puree, olive oil and vinegar and stir well. Do not over mix the dough. Scoop the dough into the muffin tray and bake in a preheated oven at 320 degree F. bake for about 30 to 35 minutes or till the toothpick inserted comes out clean.

2nd Anniversary! This years PUMPKIN FESTIVAL marks the Harley and Me Petsitting 2nd Anniversary and we couldn’t be more excited. IT ALL STARTED WITH A GREAT DANE NAMED HARLEY. We were heading out of town and needed our dogs watched for a long weekend. I did not want to kennel Harley due to joint pain. A friend of mine suggested a pet sitter that would come to our home! How perfect- Harley does not do well outside of her comfort zone. So keeping her in her space with her bed was a perfect idea. I set up 3 interviews and was turned down by ALL 3 because of the breed or size of my dog. I was so frustrated but I decided to call one more. Thank goodness I did! I found an AMAZING pet sitter that we used for 2 years. We moved from Las Vegas to Elko and now live in Spring Creek. It was about a year after moving that I decided I wanted to start my own pet-sitting business and be that AMAZING pet-sitter for someone else. I would not turn away ANY pet. Big/Small, Hyper/ Grouchy, Puppy/Old and needs medications. I wanted to do more than house pets, so we care for FARM and RANCH pets as well. Maybe you work for the Mine and your pet needs walked during the day - Yeah we do that too. While your away we also water plants, put out your garbage, gather chicken eggs and collect your mail and packages!
I want you to feel comfortable and have PEACE OF MIND that your pets are being cared for - We will keep you posted with texts and pics. I want to thank ALL my furry clients for the past 2 years. I could not have done it without each and everyone of you. My hope for this year is to continue on building my business. Ruby Mountain Resource Center (RMRC) provides “thrift store shopping” for the communities of Elko, Spring Creek, Carlin and Wells. This meets a need for those people who cannot afford shopping in the local mall stores. RMRC also provides a “drop-off” location for thrift store resale items that would otherwise be taken to the landfill. This helps with landfill over-dumping. RMRC is the oldest non-profit agency in Elko County to act as a training center for adults with disabilities. We currently serve 16 adults in this capacity. These individuals are employed in the two thrift stores operated by RMRC. RMRC also offers confidential paper shredding to local businesses and government agencies. A number of the adults work in the shredding room and have mastered this skill. RMRC sells large bags of cut rags to local car services, fire departments, car washes and auto-mechanic businesses. Our individuals cut the rags and stuff the bags for sale. RMRC employs seven adults with disabilities in the green house which was acquired in 2012. This next year, RMRC hopes to employ more individuals and have a greater selection of plants and vegetables for sale. RMRC offers food, shoes, clothing and hygiene products to the homeless citizens in our community. RMRC has a food pantry available to them and clothing is available from our stores. The homeless can also receive backpacks, sleeping bags and tarps when they are available.
