One-pan cooking

We're cooking delicious weeknight suppers that are perfect for fall! And, it's all done in one pan, hands off, on the table in less than an hour!

Supper’s Secret Weapon | The Sheet Pan Why does a sheet pan work so well? 1. Metal conducts heat very quickly and effectively 2. The low rimmed sides allow heat to surround the food efficiently 3. A half-sheet pan fits in standard ovens with room for air circulation 4. A sheet pan offers plenty of roasting space for quick cooking.

Load everything on a sheet pan – vegetables, meats, whatever place in a hot oven.

The entire meal is ready in under an hour!

Sheet Pan Cooking Tips: 1. Use a hot oven to quickly roast foods: 425-450 F 2. Arrange food in a single layer only 3. Don’t overcrowd. Allow oven air to surround the food 4. Resist the urge to open the oven door to prevent heat loss and slowing of the cooking 5. Coat roasting foods with a little olive oil, sprinkle with salt, especially vegetables 6. For super easy clean-up, line the pan with parchment paper or foil

Roasted Sausage & Red Grapes with Polenta & Gorgonzola

Serves 4

The basics of this dish are a well-balanced equation – sweet fruit, salty meat, mild polenta, and sharp cheese. Prefer spicy sausage? Yes. Tomatoes instead of grapes? If that’s what you’ve got. Goat cheese for Gorgonzola? Fine. Just keep the basic balance, and dinner will hit all the right notes.

Olive oil cooking spray 1 tube (18 ounces) precooked polenta 1 small red onion, sliced into 1/4" thick half-moons 2 C red seedless grapes 2 T extra virgin olive oil

1/4 t kosher salt 6 links hot or mild Italian sausage (1-1/2 lbs total) 1 t fresh thyme leaves 2 T crumbled Gorgonzola cheese

LET’S COOK: 1. Preheat the oven to 425°F with one rack about 4 inches from the broiler and another in the center position. Mist a sheet pan with cooking spray. 2. Remove the polenta from its packaging and slice it into 1/4- to 1/2-inch-thick rounds. Place them in a single layer on the prepared pan. 3. Toss the red onion and grapes with the olive oil and salt in a medium-size bowl. Scatter them over the polenta. Arrange the sausages evenly around the grapes and onions, and prick each sausage once or twice with a fork. Sprinkle all with the fresh thyme leaves. 4. Bake until the sausages are cooked through and the grapes are starting to wrinkle about 30 minutes. 5. Remove the pan from the oven and turn the oven to broil. Scatter 2 tablespoons of the Gorgonzola over the sausages. Broil to melt the cheese and brown the sausages, 3 minutes. [Watch carefully!] 6. Serve the sausages over the polenta, onion, and grapes.

Weeknight Cooking Strategies

A lot of days turn out differently than we plan. Our intentions for cooking a healthy supper become derailed by any number of unexpected daily events. Filling your repertoire with a few weeknight strategies can keep your cooking on track!

Double Down – When cooking, make a double batch and freeze the extras. Deliberately create “freezer finds.” Your future self will thank you! Be Realistic – Choose your menu carefully; limit complex preparations. Focus on one dish made well. Prepare your pantry – Devise three or four go-to menus that you can make from just pantry items, and keep those ingredients stocked and ready.

Pork Tenderloin with Squash, Apples & Onion Serves 4-6

Roasting a pair of lean pork tenderloins is one of the simplest ways to ease into a world beyond beef and chicken – and let me tell you, this new world is a juicy and flavorful one. Butternut squash, apples, red onion, and garlic are a sweet, savory, autumn-inspired backdrop for the rich, tender meat, but feel free to swap out the winter squash and apples for whatever’s in season.

4 cups chopped, peeled butternut squash 2 Granny Smith apples, peeled cored, and cut into 3/4" chunks 1 large red onion, cut into 1/2"-thick chunks 3 cloves garlic, thinly sliced 1/4 cup extra virgin olive oil

1-1/2 t kosher salt 1 t chopped fresh thyme leaves 2 pork tenderloins (1 lb each), fat trimmed 2 t dried herbes de Provence 1 t ground mustard 1/2 t freshly ground black pepper

LET’S COOK: 1. P reheat the oven to 450°F with a rack in the center position. Line a sheet pan with aluminum foil or parchment paper. 2. T oss together the squash, apples, onion, garlic, olive oil, 1/2 teaspoon salt, and the thyme on the prepared pan until well combined. Spread out the vegetables evenly. 3. Place the pork tenderloins on a plate. Pat them dry with a paper towel, then rub them with the remaining 1 teaspoon salt, the herbes de Provence, ground mustard, and pepper until coated on all sides. Place the tenderloins on top of the vegetables in the sheet pan, leaving some space between the two pieces of meat. 4. Roast the pork and vegetables for 15 min, then flip the tenderloins over. Continue to roast until the vegetables are browned and an instant-read thermometer inserted into the thickest part of the pork registers 145°F, an additional 10-15 min. 5. Allow the pork to rest, loosely covered with aluminum foil, for 10 minutes before transferring them to a cutting board to slice.

Herbes de Provence used in this recipe are a dried blend of savory, marjoram, rosemary, thyme, oregano, and occasionally lavender. It’s a delightful mélange of flavors that is perfect for roasting and grilling occasions.

Chicken Parmesan

Serves 4-6

Chicken Parmesan is one of those classic Italian-American dishes, a favorite of pretty much everyone with taste buds. Pasta is the traditional accompaniment to Chicken Parmesan, but a green salad and some toasted, crusty bread are also great alongside.

Olive oil or cooking spray 1-1/2 cups panko breadcrumbs 2 teaspoons garlic powder 2 teaspoons dried oregano 2 tablespoons sweet or smoked paprika 1 teaspoon kosher salt 1/2 cup all-purpose flour

1/2 teaspoon freshly ground black pepper 2 large eggs 4 - 6 boneless, skinless chicken breasts or cutlets, each about 1/2" thick (about 1-1/2 lbs total) 1 jar (24 oz good quality marinara sauce) 6 - 8 slices provolone cheese 1/4 cup shredded Parmesan cheese

LET’S COOK: 1. Preheat oven to 400°F with a rack in the upper third. Generously mist a sheet pan with cooking spray. 2. Stir together the panko, garlic powder, oregano, paprika, and 1/2 teaspoon of the salt in a large bowl to combine. In another large bowl, whisk together the flour, the remaining 1/2 teaspoon salt, and the pepper. In a third shallow bowl, whisk together the eggs. 3. Dip each chicken cutlet first in the flour mixture, shaking off any excess, then in the eggs, and finally in the panko mixture, patting to coat thoroughly on both sides. Place the breaded chicken cutlets on the prepared pan. Mist the chicken with cooking spray to lightly coat. 4. Bake the chicken until the panko has browned and the cutlets are almost entirely cooked through (they’ll no longer feel squishy when you poke them), about 15 minutes. 5. Remove the pan from the oven. Top each chicken cutlet with about 1/2 cup marinara sauce (use up the jar) and the provolone and Parmesan, and return to the oven. Bake until the cheese is melted and bubbly, an additional 10 minutes. Serve hot.

Baked Chicken Fajita Roll-Ups

Make Ahead Breakfast Sandwiches

Recipe and photo: ihearteating.com

Recipe and photo from Jamie Cooks It Up!

Ingredients:

Ingredients:

• 1 Tbsp. olive oil

• Pinch brown sugar

• 14 eggs

• 12 small croissant rolls

• 1/2 onion, diced

• 1 C. shredded Mexican cheese blend

• 1/4 tsp seasoned salt

• 1 (9 oz) pkg deli ham

• 1 red bell pepper, seeded and diced • 1 clove garlic, finely minced • 1/2 Tbsp. taco seasoning

• 2 C. shredded cooked chicken

• About 12 small (fajita-sized) flour tortillas

• 2 Tbsp milk

• salt and pepper

• 1 (6 oz) pkg sharp cheddar cheese slices

• 1 Tbsp. freshly squeezed lime juice

Preparation Preparation 1. Preheat oven to 415 F. Line a baking sheet with foil; lightly coat foil with cooking spray. 2. In a large skillet over medium low heat, warm olive oil. Add diced pepper and onion, and cook until veggies are soft. Stir in garlic, and cook until fragrant, about 30 seconds. Add taco seasoning, and cook for 30 seconds. Stir in lime juice and brown sugar. Add chicken, and stir to combine. 3. Remove skillet from heat. 4. Lay tortillas out flat. Add about 1 ½ - 2 tablespoons of filling to the outer third of each tortilla. Sprinkle cheese evenly over chicken filling. Tuck the top and bottom in, and roll tortilla up. 5. Place seam side down on prepared baking sheet. Lightly mist tortillas with nonstick cooking spray. Bake 15-20 minutes, or until crisp. 6. Serve with sour cream, guacamole, and salsa, or your favorite dipping sauces.

1. Preheat your oven to 400 degrees. 2. I nto a large bowl crack 14 eggs. Add 2 Tbsp milk, 1/4 tsp seasoned salt and some salt and pepper. 3. Whisk it vigorously with a fork. You want it to be kind of frothy. 4. Spray a 9x13 pan with cooking spray and pour the eggs into it. 5. Bake for 15 minutes, or until the eggs puff up and are cooked through. 6. Allow them to cool for about 5 minutes, then cut them into 12 rectangles the same size as your croissants. 7. Grab some pre-made croissant rolls. Mini or full sized. 8. Add a slice of egg to each one. Top it with some ham and cheese. Split each cheese slice in half, placing one part under the ham and one part over it so the melted cheese would help to secure the ham in place. It helps speed up the process if you cut them all, then add all the egg, then all the cheese ham cheese. 9. Spray a 9x13 pan with cooking spray and place the sandwiches inside. 10. Cover tightly with tin foil. Pop it in the fridge until you are ready to serve. 11. P re-heat your oven to 400 degrees. Pop the covered pan into the oven and bake for 15 minutes or until the sandwiches have heated through and the cheese is melted and wonderful. Serve and enjoy!

In ancient times humans looked to the flight and songs of birds to predict the future. Today once again, birds have something to tell us. Bristlecone Audubon will be showing the documentary, THE MESSENGER at their meeting on Friday, Sept. 9 at 7:00 pm in room 130 of the Greenhaw Technical Arts Building at Great Basin College. Carter Engineering, LLC is sponsoring this showing of the award winning 90 minute film.

There is no charge and everyone is welcome to attend. For further information contact Lois Ports at 775-738-4270 or ports@frontiernet.net

THE MESSENGER, a documentary by award-winning filmmaker Su Rynard (Dream Machine, Kardia) chronicles the struggle of songbirds worldwide to survive in turbulent environmental conditions brought about by humans and argues that their demise could signify the crash of the ecosystems globally, akin to the disappearance of honey bees and the melting of the glaciers. For thousands of years, songbirds were regarded by mankind as messengers from the gods. Today, these creatures – woven inextricably into the fabric of our environment – are vanishing at an alarming rate. Under threat from climate change, pesticides and more, populations of hundreds of species have dipped dramatically. As scientists, activists and bird enthusiasts investigate this phenomenon, amazing secrets of the bird world come to light for the first time in this acclaimed and visually thrilling documentary. Beautiful slow motion photography illustrates the power and beauty of these delicate winged creatures that have been praised and eulogized across cultures and throughout time.

Find out what’s killing our songbirds, and what can be done about it. As in ancient times, songbirds may once again be carrying a message to humans – one that we ignore at our own peril.

“ The Messenger is riveting, emotionally engaging, and visually extravagant from the first frame to the last. Up-to-the-minute facts on how birds communicate about environmental change are interwoven with gripping stories about the perils faced every year by these amazing world travelers. This is a must-see movie for anybody who values the natural world or wonders about its relationship to humans.” - John Fitzpatrick

The MLB is at a turning point with the youth of the league seemingly taking over the reigns as the league leaders.

SPORTSDAY.DALLASNEWS.COM

Baseball’s current stars are the Carlos Correa’s, Bryce Harper’s, and Chris Bryant’s of the league who are all 24 years of age and under. But with the youth of the league quickly filling roster spots the MLB is saying goodbye to some of the hardest hitters to play the game. Totaling 1,419 home runs in the majors, Alex Rodriguez, Prince Fielder, and Mark Teixeira have all announced their retirements. Despite being forced out by injury like Fielder, it’s just time to hang them up for the duo of Yankees, Rodriguez and Teixeira. “Doctors told me I can’t play Major League Baseball anymore,” explained emotional Fielder in his press conference on Wednesday Aug. 10th. Fielder just completed his second spinal fusion surgery in the past three years. His last appearance on the DL (disabled list) from his first neck surgery made him miss all but 42 games of the 2014 season. Last season Fielder batted .305 with 23 home runs and 98 RBI (runs batted in), which helped lead the Texas Rangers to win their Division Title. This season Fielder was batting .212 with eight home runs and 44 RBI.

Prince Fielder has been in a Major League locker room since he was a little boy. His father Cecil Fielder played in the Majors for 13 seasons with the New York Yankees and the Detroit Tigers from 19851998. Like Prince, Cecil was a power hitter leading the league in homer runs in both the 1990 season (51) and the 1991 season (44). Ironically, both Prince and his father finished their MLB careers with 319 career home runs. In Prince’s 11-year career he played for the Milwaukee Brewers, the Detroit Tigers, and the Texas Rangers. Prince finishes his career with a .283 batting average with 319 home runs and 1,028 home runs. Fielder is a six time All-Star (2007, 2009, 2011-2013, 2015) with three Silver-Slugger Awards highlighting the League’s best hitter (2007, 2011, 2012) and was the NL home run leader in 2007. Mark Teixeira of the New York Yankees announced on August 5th, that he will be retiring at the end of the season. The 36 year-old veteran is currently on his final year of his 180 million dollar, eight-year contract. Teixeira is ranked number 55th on the all time home run leader list with 404 career home runs, and is ranked fifth highest for most home runs

by a switch hitter. Teixeira has played for the Texas Rangers, Los Angeles Angels, Atlanta Braves, and the majority of his career with the New Yankees. Teixeira is a 3-time All-Star (2005, 2009, 2015) and he is a five-time Gold Glove award winner for top defensive first-basemen (2005, 2006, 2009, 2010, and 2012). Lastly Teixeira won the Silver Slugger award in 2004, 2005, and 2009. In 2009 he was also the home run and RBI leader. Teixeira has a career batting average of .269 with 404 home runs and 1,282 RBI. On Sunday, August 7th the New York Yankees and Alex Rodriguez announced that Rodriguez’s 22year baseball career will be coming to an end on Friday August 12th in New York against the Tampa Bay Rays. This season Rodriguez is batting just .203 with nine home runs and 29 RBI. Rodriguez hasn’t been playing that much this season due to his lack of ability and describes his time on the bench as “painful and embarrassing”.

The 41 year-old veteran has played for the Seattle Mariners, Texas Rangers, and the New York Yankees in his 22-year career. A-Rod (Alex Rodriguez) is a 14x All-Star, 1996-1998, 2000-2008, 2010, and 2011. He won the Silver Slugger award 10 times in 1996, 1998-2003, 2005, 2007, and 2008. He is a two-time Gold Glove Award winner, and a five time home run leader and he is also on the list of exclusive players with 3,000 career hits. A-Rod has a career batting average of .295 with 696 home runs (ranked 4th highest) and 2084 RBIs. Rodriguez is still owed seven million dollars for the remainder of this season and is guaranteed another 21 million dollars for next season. Despite not playing next season the Yankees are choosing to keep him around as an advisor to the team. These three players have definitely made their impact on the game. For the last ten years these players were at the pinnacle of the game setting the status quo through their ability. Even though they won’t be on the field any longer their stats and their stories will continue to live on forever. No one will remember Fielder’s hilarious triple in the in the

2012 All-Star game or Teixeira breaking his slump by accidentally wearing C.C. Sabathia’s socks. But their awards and acknowledgments will keep their names in baseball conversations forever. However one legend refuses to hang his cleats up just yet. On Sunday August 7th, Ichiro Suzuki collected his 3,000th career hit against the Colorado Rockies in Denver from triple off of the wall. Suzuki is a 42 year-old veteran who started playing professional baseball in Japan in 1992 for the Orrix Blue Wave. In 2001 he made his debut for the Seattle Mariners where he collected at least 200 hundred hits in each of his first nine season with the organization. Since then Suzuki has played for the New York Yankees and the Miami Marlins. His career batting average in the MLB is .314 with 113 home runs and 750 RBIs.

Unlike Teixeira, Rodriguez, and Fielder where their stories will be heard forever, Suzuki explains he wants to play until he is 50 continuing to give us stories to share for years to come.

VACATION DESTINATION

Disneyland - FOCUS ON -

CONTRIBUTED BY SUE BRADFORD OF JOURNEYS AROUND THE WORLD

Is a family vacation to the happiest place on earth in your travel plans? If you follow these simple tips, you can make the most of your time there, plus stretch your Disney budget just a little further. Who doesn’t love that!!

• Plan your trip during the slowest times of the year for the smallest crowds. This includes any time after the first week of January until the end of February. Any time in May. Any time after Labor Day until the 2nd week of November, avoiding the week of Halloween. Doing this will ensure that you have shorter wait times in line for your favorite rides and you can enjoy more of the park. A reminder, some of the most popular rides are closed for maintenance during the slow season, so check the Disneyland website or app to make sure your favorite isn’t due for a checkup during your visit.

• Considering staying at a hotel that has a kitchen or renting a house in the Anaheim area. The cost of food inside the park is simply astronomical. Consider a hotel or house with a kitchen, so you can meet back at home base in the late afternoon, eat a nice home cooked meal and then head back to the park for the evening. Also pack sandwiches and snacks for the day in a backpack. Your wallet will thank you later.

In fact, get your fast passes and then get in line for these rides right after you have the fast passes in your hands. Then you can basically ride two times in a row, if you time it right. I promise, you won’t be sorry you did. Also, get your fast pass for the World of Color show FIRST THING IN THE MORNING too. It will sell out before lunch. Guaranteed. • When you enter Disneyland Park on your first day and you walk down Main St. USA, at the castle turn to the left and hit all the rides in Adventureland, Frontier land,

New Orleans Square and Critter Country first. If you time it right, you will have little to no wait on the Jungle Cruise, Indiana Jones(remember Fast Pass), Pirates of the Caribbean, the Haunted Mansion and Splash Mountain. Your family will be amazed at your skills. • Stay in the park until closing and be sure to experience all the wonders of Disneyland at night. The electrical parade is still as magical as it was when we were all kids and the fireworks on nothing short of spectacular. Do not miss the World of Color show on the California Adventure side either. It was a highlight for everyone in our family on our last trip.

With a little planning your, Disneyland vacation will be magical for everyone. That’s where I come in. Contact me, your local travel agent today and have me help you plan your perfect trip. Fall Gardening Plant Bulbs Cage Trees Cutback Perennials Amend Soil

Fall is such a wonderful season to be working in the gardens surrounded by beautiful seasonal color. Whether planting, starting a new garden project, or simply engaging in maintenance chores, temperatures are typically dry and moderate, so there is less chance for plants, and us, to be stressed by heat. I remind myself that every chore I complete now will improve and ready the gardens and landscape for winter and allow more time for enjoying both next spring. Pruning back herbaceous perennials (plants whose upper growth dies back through the winter months) now has three advantages: Spring growth will be hardier and healthier than growth that would otherwise have to force its way through dead, matted foliage or be damaged by even the gentle removing of dead foliage next spring. Removing foliage now will eliminate potential breeding havens for pests to overwinter. Aesthetically the garden

is "winterized" leaving no dead remains to clutter the landscape. As you cut back the perennials the ground becomes exposed causing an increase in the soil drying out. Since many perennial roots are near the surface, continue watering while daytime temps are warm. After cutting back the perennials, I apply a slow-release fertilizer and topdress with amendments. I use Osmocote at the rate of 1 pound per 100 sq. ft. of garden area. Since it's temperature activated, the fertilizer will not become available to the plants until next spring-early summer when the plants need it. I think of

adding amendments including, peatmoss, compost, manure, and finely chopped bark materials, as feeding the soil rather than feeding the plants. Amendments improve soil tilth and allow plants to develop stronger roots.

trees and shrubs as they move through the landscape, but the real damage occurs in fall when bucks scrape their antlers against the tree's trunk causing enough damage to result in tree loss. Some cages have been so mauled they need be discarded (better them than the trees). The wire mesh comes in 4'x50' and 5'x50' rolls, is easy to install, and also protects young evergreens.

light to reach the center of the plant, strengthen new branches, and allow winter winds to pass more freely through the plant. Likewise, trees are pruned to remove unhealthy branches and add shape and structure to the plant. A saws-all with pruning blade is my tool of choice for pruning large branches. Remove the weight of the branch then prune remaining branch.

After the trees and shrubs lose their leaves, they can be pruned. Without their leaves it is easy to see the branching structure. Thin overgrown shrubs by pruning older branches at ground level. This will sacrifice some spring flowers but will allow more

Fall is a great time for weekend projects that include creating or restoring gardens by improving the soil with organic amendments and planting bulbs and flowering shrubs for early spring color. These garden walls are east to install, hold the soil in place, and provide a durable edging over the years. Install the weed barrier

Once the heat of summer passes, the sprinkler system irrigation clock can be scheduled for less frequent watering. Our controller has been set to water during the early morning hours for one-30 minute cycle, twice a week. After the last mowing for the year and the leaves have been raked,

first so the base tier is on top of it. Avoid planting up directly against siding where plants can be crushed under the weight of snow as it melts off the roof. Tulips, Daffodils, and Muscari are just a few of the beautiful spring flowering bulbs to plant through fall. Look for late-season varieties and select the largest sized bulbs available. Walkways are perfect candidates for weed barrier covered with rock products that are clean, easy to walk on, and provide quick-snow melt. "Cage" the trunks of trees to prevent trunk damage. Deer will browse on

I’ll schedule a lawn aeration. The lawn should be watered, but not soaked, just before the aeration and I have learned (the hard way) to flag sprinkler heads to avoid their being damaged by the heavy aeration equipment. I like to apply an end-of-the-season lawn fertilizer and Ironite after the aeration and just before a cold rain or wet snow is in the forecast. The fertilizer will then be available for the lawn next spring. Most of the gardens which include trees, shrubs, and perennials are on soaker hoses and will be thoroughly soaked before draining faucets for the season.

Newmont’s Legacy Fund Supports Nonprofits in Northern Nevada Building and sustaining profitable and responsible mining operations depends, in part, on the success of local efforts to improve the health and wellbeing of current and future generations. In Nevada, the Newmont Legacy Fund provides an opportunity for our employees to support their preferred local nonprofit organizations and to invest in ongoing community sustainability through the Newmont Endowment Fund. Since 2010, Newmont has matched employees’ donations to the Legacy Fund, dollar for dollar, generating $12.014 million for local organizations focused on providing social services to our communities. Recently, the Legacy Fund partnered with the University of Utah’s Nonprofit Academy for Excellence in Elko and the University of Nevada’s Excellence in Nonprofit Management Institute in Winnemucca to sponsor nonprofit sustainability and strategic planning workshops titled, “Strategic Planning for Nonprofits.” Approximately 90 nonprofit organizations, which receive funding through the Newmont Legacy Fund in Nevada, attended these professional development courses, one in Elko and one in Winnemucca. The courses focused on teaching nonprofit professionals to think strategically to help their organizations move into a more sustainable future with topics ranging from sustainability to fundraising best practices and optimized workflows were covered at the full-day workshops. Judy Andréson, Executive Director for the Family Resource Center in Elko, attended the workshop in Elko and wrote a letter to the editor of the Elko Daily Free Press about her experience:

“This is a wonderful opportunity for those seeking consultancy from nonprofit practitioners who can provide leadership, management, research and custom support. […] Many thanks to [Legacy Fund Executive Director] Nancy Ostler and the entire Legacy Fund team, who are doing an excellent job in supporting the nonprofit community. Kudos also to Newmont employees whose support of our work provides us with an opportunity to improve the quality of life for Northeastern Nevada residents.” The Elko workshop was day one of a five part series of the Nonprofit Academy for Excellence offered by the University of Utah. Newmont is working with the University of Utah to bring the entire series to Elko. Newmont encourages all local northern Nevada nonprofits to take advantage of this professional development opportunity. To learn more about future nonprofit workshop sessions please contact Nancy.Ostler@newmont.com. Newmont would also like to thank all the employees who donate both their time and money to support development and skills building in northern Nevada. The Nomination Hello, My name is Tessa Overholser. My mother Laura Eklund is always giving back to our community.

Glam Squad Winner

Laura Eklund

My mother is on the board for the Elko Cancer Network which is a non-profit group with the mission of helping cancer patients and survivors in our area. Laura has volunteered in their awareness efforts by helping with cancer screenings and collecting donations to help with some of the financial strain many cancer patients have. She is also on the Equestrian Park board in Carlin, her home town. For the past five years my mom has given hundreds of hours to ensure the Equestrian Park has events and funding. This has been a priority for her because it's a fun and safe environment for families in our community, specifically her own, this is way last yet she joined the board. Laura does set up, runs the bar, and clean up for almost every event held at the park. She can be seen volunteering at many other activists like the Chili Cook off and many others. On top of her community involvement she brings her efforts to our neighborhood as well. Ever since I was a kid I remember the street my mom lived on looked bad and dirty. I've only ever seen one person working on their yard, that's my mom. My mom also cleans the other yards. When she isn't at work providing for my siblings and I, she is making the neighborhood look nice. She pulls the weeds, mows seven other yards, waters yards, and picks up trash. For anyone that knows my mom it has become a joke to ask, "who's yard are you cleaning today?" This summer she's expanded past our neighborhood and can be seen throughout Carlin helping people (or doing it for them) with their yards. She wants our hometown to look nice and be a town people want to live in. For all these reasons and many more I'm nominating my mom, Laura Eklund. I believe this reward should go to someone who's bettering our community and its people. I know you might think I say this because she's just my mom but even I am at fault, like many others she's helped, for not showing my gratitude or even saying "thank you." She will be the first one to offer her help where it's needed but be the last one to expect a thank you. I think she needs a spa day, a thank you, for all she does and all her hard work and efforts. Thank you.

… Health Tips …

THE CONNECTION BETWEEN

CHIROPRACTIC CARE AND NUTRITION Healthy foods are not the only necessity for a healthy body. Contributed by Dr. Todd Wendell of Ruby Mountain Chiropractic

You try to purchase organic products. You make sure to steer clear of highly processed, GMO foods. You even do the bulk of your grocery shopping around the perimeter of the supermarket, buying products packed full of nutrients with a short shelf life. In theory, you’re nailing the whole idea of healthy eating. But what if we told you that consuming all of these healthy foods without an optimally functioning nervous system was like storing them in a refrigerator that had been unplugged?

DISRUPTED NERVOUS SYSTEM, DISRUPTED DIET

CAN CHIROPRACTIC MAKE A DIFFERENCE?

Your nervous system influences every single part of your body, and when it comes to your food, digestion is no exception. When the nervous system is not balanced and experiencing disruptions, chances are that no matter how nutritious your meal is, the nutrients that your body needs won’t be properly stored, broken down or even entirely used.

Through chiropractic care, our job is to help you get your spine (and the portion of the nervous system it protects), to work optimally. Precise chiropractic adjustments and custom fit rehabilitation are used to improve the motion and position of individual spinal bones. As they do, some patients report enhancements in other aspects of their health as well.

WHY? The nervous system is responsible for telling your body what it needs to do with its fuel. If a disturbance is present, the messages sent between your brain and body will go unread. While you may be eating three square meals a day, your body isn’t reaping the benefits that it should, leaving you to wonder why you don’t feel as good as you thought you would.

Throughout history herbalists have been a vital part of the worlds health foundations. The hanging gardens of Babylon are depicted with healing plants all around, ancient Sumeria has early records of medical care via plant treatments. The Egyptians had the first formal training facilities recorded for herbal education as far back as 2900 B.C. The Egyptians were also known to use herbs for cooking, medical care and even in the preparations of their died Pharaoh's before being placed in their tombs. Many cultures use herbs as part of many spiritual rights and beliefs. One of the fathers of medicine, Hippocrates has written accounts of plants being used to aid of numerous health issues. Asian cultures have used herbal healthcare regiments throughout the ages and into to present times, in India herbal healthcare is called Ayurvada Medicine and it is a balance of spiritual and herbal treatments and strengthening. When it comes to herbal health aid we look at a total package; we aid in helping the physical ailments, mental issues and whole spirit empowerment. Many times when a person is having a physical issue it roots from an emotional upset in their life, further causing a health issue. In early time herbalists were known as wise women or medicine women in the group. They are the women to take a sick child to, find out the safe plants to put in a winter stew and the person out in the middle of the night birthing the whole villages babies. Something to keep in mind is herbal health aids are meant to be used as a immune system support or an illnesses symptoms reliever not A CURE FOR ANY DISEASES OR ILLNESSES. The whole family can seek aid with a herbalist, from the children to the family pets too. Herbs are just like the pharmaceuticals of today, in fact every pharmaceutical made today began as a plant base. They can cause allergic reactions and medical interaction

with both other herbal supplements and standard pharmaceuticals. Some people can take some herbal aids and it work and it not work at all for other persons. There is a HUGE mistaken impression that because a herbal aid or supplement is all natural or herbal that it is safe and cannot hurt the taker or will not cause the same reactions that a prescribed medication can cause, this is simply incorrect. The person taking the herbal aid needs to be aware of any reactions, or interactions that can happen with their prescribed medications. You should always maintain open communication with your physician, a certified trained herbalist and Always educate yourself on your health and healthcare treatments. Herbs can aid in such things as heartburn, cold/flu, digestive ailments and so many others. Herbs are used around the world for everything from cooking, to making cleaning products, for healing and used in spiritual beliefs. We like products made from all natural items, and or customized to our likes and needs because it helps us feel in control of our lives and products. Herbs are in our everyday lives without most people taking them into account, our cooking uses pepper, salt, garlic and many other spices too. All these spices and herbs benefit our cooking by adding flavor to the food and benefits our health too. Diets are an everyday item in peoples minds and sometimes they work but I believe and many herbalists believe a lifestyle change is best for us, so we can look at the positive changes as permanent not temporary. Herbs should be kept in a dark, cool, dry place, best in glass containers to extend the life of the herb, and never in direct sunlight. They can be used for so many different items, from beauty products to teas, tinctures, pills and much more. I use herbs in vapor steams to help with

Tea | Beauty | Health Aid | Cooking respiratory issues. Make teas for health issues and nervine calming. One of my favorite ways to use herbs is tea making. There is nothing better than a hot cup of tea on a sleepless night or a cold day, to warm you up and boost your immune system. I make herbal steam tea bags to throw in a hot shower to help your breathing when sinuses are clogged. A cool summer iced tea to aid the upset stomach from to much BBQ. These are all forms of teas to help the body. I was re-educated when I started my herbal training in that tea bags get thrown in a mug and pour hot water over it to make a good cup of tea. Think of this as herbal tea 101: you must check the herbs your using and see what form of cooking method is best for the particular herbs. There are two methods of cooking herbs the first is infusion of herbs. The herbs are placed in a loose leaf tea strainer pour the boiling water over the herbs and cover the tea cup to keep the medicinal content in the cup. Steep the herb mix 15-20 minutes at minimum. The second method of cooking herbs for a tea is decoction, you place the water in a pot add the herbs and boil the whole thing with a lid on it to cook and steep for 15-20

minutes, then strain the herbs and drink. Again I remind you that you should always speak to your physician before taking and using any form of herbal aid, and continue seeking information on your own healthcare and speaking to a trained herbalist about any questions, concerns or reactions to any herbal care being taken. When looking at herbal products always keep track of any allergens, care instructions and product storage to maintain the products shelf life. If you find yourself using a herbal product and having a reaction STOP USING IT immediately and consult your herbalist and healthcare practitioner. I am fond of making herbal beauty products because I like to know whats in my products and many people I have spoken to seem to like that fact to. It also makes it easier to customize my products to my family and the people I make items for. I make homemade face masks, hair rinses, bath salts and other products. You are welcome to try one of my foot scrubs while getting a pedicure with Casey at The Mane Salon( 2715 Argent Ave, Elko NV 89801) or swing by Spotted Tailgate Designs in Chique Unique and Antiques (608 Commercial Street, Elko NV 89801) to meet with me and ask questions or buy goodies too.

SAFETY COLUMN

GENERAL SAFETY GUIDELINES FOR PROPANE CO NTRIB U TED B Y JULIE A. KRAUS, WEST ERN STAT ES P ROPANE

What is propane? Propane, which is also called LPG, LP Gas or Liquefied Petroleum Gas is a widely used American made energy source. Propane is a liquefied petroleum gas that is primarily a byproduct of domestic natural gas processing, though some propane is produced from crude oil refinement. United States propane supplies are becoming increasingly abundant due in large part to increased supplies of natural gas. Propane is a safe, clean-burning, versatile, and an economical energy source when properly used. The below information is designed to give you and your family the information you need to safely and comfortably enjoy all the benefits propane has to offer. You must take on a significant role in keeping your family safe, be sure that all family members know and understand what to do in case of a propane emergency. It is important to become familiar with the parts of your propane system so that you can take quick and appropriate action in case of a leak or other emergency. In the event of a propane emergency situation contact your propane service provider immediately. Your propane service provider will dispatch a qualified service technician to handle everything once they arrive to your home or business. If you are unable to contact your propane service provider, call 911 immediately. Before help arrives, there are some specific and significant things which you can do to protect yourself and your family until a qualified service technician or emergency response personnel arrives to your home or business. Propane has a very strong and unpleasant scent that smells like rotten eggs, a dead animal or a skunk’s spray. Propane manufactures add the smell to help alert you if propane is present, which can create a safety hazard. If you smell propane, extinguish all smoking materials and other open flames. Do NOT, operate electric switches, light matches or use your

home or cell phone unless you are in a safe area to do so. Any spark in the area where propane gas is present may ignite the gas. This could include the spark of a light switch, telephone, fan, or refrigerator motor, even static electricity from walking across a room.

Can you smell it? It may be hard to smell propane for the following reasons: · They have a cold, allergies, sinus congestion, or another medical condition. · As people age, their sense of smell can become less sensitive. · The propane smell may be in a location where it is not detected by people in other areas of the home or business. · If the smell of propane is present in the air over a period of time, “odor fatigue” can occur. The nose “gets tired” and a person no longer smells the propane odor. · Tobacco smoke, cooking odors, and other strong odors can mask the smell of propane. · Sense of smell can be reduced due to the use of tobacco, alcohol or drugs. · Odor loss can occur · The smell of propane may not be strong enough to wake someone who is sleeping. If you are unsure about your ability to smell propane, please contact your propane service provider or Western States Propane for a Propane Safety brochure which includes a scratch-and-sniff test. Consider installing a propane gas detector which would sound an alarm if propane is present. When considering a propane gas detector, quality is important. Make sure the unit you are purchasing is listed by Underwriters Laboratories (UL). It is important to install and maintain propane gas detectors in accordance with the manufactures instructions.

Trust your nose! Never ignore the smell of propane. Even if the smell is faint or if no detector is sounding it is important to make sure you treat it as an emergency and act immediately. Propane vapors are heavier than air and for this reason they may accumulate in low-lying areas such as basements, crawl spaces, ditches and along floors. Air currents can sometimes carry propane vapors elsewhere within your home or business. If you smell propane, immediately get everyone out of the home, building, vehicle, trailer or area. If it is safe to do so, close the propane tank supply valve. Do not re-enter the area until the qualified service technician advises it is safe to do so. Do NOT turn on the propane system yourself, let the trained propane service technician perform required leak/pressure testing and fix any problems which may exist. Once the leak has been fixed, the qualified technician will relight all of your propane gas appliances and let you know when it is safe for you to re-enter your home. Make sure everyone in your home or business knows what propane smells like and what to do in the event you smell propane. It is important to learn about your propane system and to make sure you can safely shut off your tanks and identify shut-off valves, regulators, and safety relief valves and know how they operate. Contact your propane service provider today and request an appointment for an Annual Safety Check. For additional questions, comments or safety information, please contact Western States Propane at one of our convenient Nevada locations.

Monica is very near and dear to our hearts, Monica has been a State Farm adjuster for 19 years and has spent countless hours assessing local losses, answering our many questions and being there when she is needed most. Monica grew up in Elko and went away for college but later came back to her beloved home town to raise her family. Monica married the love of her life Steven and they recently celebrated their 25th wedding anniversary! Monica said she has loved Steven her whole life and at 18 knew he was the one. They have two daughters together, Breezy and Claire. When Monica and her family moved back to Elko her goal was to spend more time with her children. But in the 90’s mining took a little bit of a slump and she recalled that things were a little tight at home, so she prayed for a job. Monica compelled to do so, got in her car one day and left her house in Spring Creek, headed for Elko to buy

a Newspaper. In the Newspaper she saw a listing for a job opening as a State Farm adjuster, the rest she says is history. For those not familiar with what an adjuster is or does, they are the first on any insurance team to evaluate a catastrophic loss and get the ball moving on a claim. Monica recalled a loss involving an elderly couple in their 80’s who came back from vacation only to find that their home was broken into and set ablaze. The couple made such an impression on Monica and her family that they became friends. Monica’s husband would go and shovel their driveway in the winter and they would have dinners together. “They touched my heart, I will always remember them” Monica’s position is a unique one as she meets people at what is considerably the most vulnerable moments of ones life. She is there after a fire destroys a home and all of its memories, she

is there when a wind storm hits and tears apart a roof, she is there when a pipe burst in the dead of winter and floods a basement. She puts her life on hold, to tend to others. Monica is special and phenomenal at what she does, she goes above and beyond her job description. Her concern is not only to asses a loss but to get to know our clients on a personal level and to honestly hear them. “It’s not about just settling their loss, I like to talk to them and get to know their story.” We are so grateful for you Monica! Thank you for all that you do and for always taking care of our insured’s. You are truly a good neighbor. We are saddened by your resignation, but know we are so grateful for the years you dedicated to State Farm! Monica’s parting wisdom, “Here's what I learned by working with State Farm: connect with people. Share your story, and let them share their story. It makes a difference. Also, if your toilet is "running," fix it before it floods your house…;)”

PET COLUMN

Winston Here is a story of this boy’s LIFE STRUGGLES and survival it also brings to light the importance of rescues and the tremendous amount of JOY and pain rescue offers.

The story of Winston below is from his original rescuer:

Pet Column

My name is Sarah Buku, I am a temporary foster mom for pets in need and have been taking care of strays since I was about 10 years old. This story is not about me, though. It's about my favorite foster dog whose name is Winston. I found Winston at the home of a potential cleaning client, I was there giving a quote. Winston was running amuck in the yard and was incredibly thin, it was November in Michigan, freezing outside and he had no food or water set out for him. The owner was hospitalized and the people caring for him stated that they knew he was being abused- they told me the dog was stubborn and stupid and he never listened. But I knew why! Winston was deaf. The caretakers surrendered Winston to me. I began working with him right away, taking him to the vet and teaching him sign language. He was 37 lbs when I took him in and after vet care he ended up as a beefy 51 lbs, he responded wonderfully to his other doggy brothers and our children and was a joy to be around. With patience, his sign language vocabulary SOARED! He knew sit, stay, kennel, outside, cookie, good boy and also his name! Winston is a purebred English Setter and he LOVED to run- often escaping if the door was left ajar. He escaped out of a hole in my fence the first time, I chased him 6 blocks before losing him and began posting frantically on local garage sale and animal rescue sites. He had been caught and taken into a home a few blocks from my house and thanks to social media at 11:30 p.m. that same night I was able to contact the individual who’d rescued him and then brought him back home. We then moved into a new home with my fiancé shortly thereafter. One day in February Winston decided to run and jump into the creek behind our home…. But then realized how cold the water was and gave up swimming. He was just too cold, so he placed his head onto an ice mound in the midst of the creek and treaded water there. I had to jump into the water to retrieve him and then had to treat him for frostbite (as well as myself ). Luckily, he was fine. On two other occasions Winston went running and decided that rush hour traffic was appealing on a major highway near our home. The first time the dog catcher caught him and released him back to me (his first arrest!) The second time he stopped two lanes of traffic while my fiancé ran to save him and once again- he was perfectly fine. After that incident, we decided that Winston needed more training in a yard setting with an actual fence. He was not getting a good quality of life living with us as temporary foster providers because he needed lots of space to run around a fenced yard. On suggestion from one of the Facebook sites and through Marcy Borelli I reached out to Above and Beyond English Setter Rescue group and we arranged for them to take over fostering Winston. They

90

were happy to work towards finding him a forever home. It was one of the hardest things I’d ever had to do, I always grow attached to the dogs and cats that I foster, but he held a special place in my heart. Above and Beyond welcomed him with open arms and this is where Winston’s journey became even more incredible. I drove him to Monroe County, MI and from there after spending a few weeks with Jennifer Cloherty, he began his travels to TN to live with a foster who had trained deaf dogs in the past and had space available. Winston seemed to flourish in his newfound life and was charming people all along the way. Above and Beyond carefully screened many applicants before finally choosing a furever home for him with a woman whose name is Monica, but he had a LONG way to go in order to get to her! On the weekend of August 6th he began a journey to Oregon where he would finally be home. However, tragedy struck on Sunday August 7th. While traveling through Nevada near the town of Winnemucca, Monica hit a bump in the road near Mile marker 28 on 140, her car was totaled as it flipped over 3 different times before coming to a stop. When she came to Winston was nowhere to be found, he had been harnessed into the car but none of the rescue crew were able to find him that day. Monica is still in the ICU from what I have been told, but is expected to recover. Of course, I assumed the worst for poor Winston- alone in the desert, unable to hear any traffic sounds should he run onto the highway and worse yet, even if he wasn’t injured from the accident I worried that my sweet boy would have trouble finding water and would surely die of dehydration or starve to death. I was a sobbing mess of tears when I received the news on Monday night and immediately began sharing any Facebook updates that I could in hopes that someone in NV would see the post and recognize Winston, or help by joining a search party to look for him. I sincerely considered hopping on a plane to go and look for him myself. THIS is where the story becomes the most incredible and heartwarming story I’ve ever personally had a hand in. Winnemucca Animal Rescue Group along with many others joined in on a desert search, we received word that he had been sighted on Monday night, but ran away. On Tuesday afternoon (August 9th) Jo Graham found Winston. (I’m still awaiting the amazing details of this part of the story.) He was taken into custody by Officer Leslie Bravo (his 2nd arrest in his short 1 ½ years of life, which I believe makes him a felon). Officer Leslie escorted him personally to the vet; miraculously, all he suffered from were fleas and two spots of road rash. After food and water, this sweet Setter got to go with another foster mommy for rest and relaxation.
