Both these organizations provide a valuable service to our community and all proceeds will remain in the Elko area. So far, we have raised over $82,000 for charities through this tournament. People are welcome to bring photos of their lost loved ones - we will have 3 inch buttons for them to place the photos in, if they want. White Cane Day - Elko, NV Saturday, September 13th The Elko Host Lions Club and the Spring Creek Ruby Mountain Lions will be at local stores in Elko and Spring Creek giving out white canes for a monetary donation. All donations will benefit local children and adults that have vision problems and can’t afford eye exams and/or glasses. They also take care of surgeries such as cataracts or other vision problems. � The secret to a good-looking and a good-tasting tart lies in its three parts: the crust, the filling, and the topping. Try the Fresh Raspberry Tart recipe, and you'll find out just how easy it is to make an outstanding tart

with a pie, (although it's pretty important there, too). The tart crust may be more cookie-like in sweet tarts, and more like a flavorful shortbread in savory tarts. Match the tart's main message with a complementary crust choice. Types of Crusts - There are many different types of crusts all based on the basics: flour, salt, butter, (or other fat), and water. Variations come in the form of differing proportions, or enrichments of sugar, egg, and flavorings.

Pâte Brisée - This traditional French crust version is enriched with egg yolks and has a greater proportion of butter than a shortcrust pastry.

Pâte Sucrée - Similar to pâte brisée, this crust has the addition of powdered sugar for added sweetness along with a bit of vanilla. Flaunt your Crust- From a basic crust recipe, additions such as, lemon zest, herbs, ground almonds, and so on, add nice dimension to a tart. Leave your guests curious and asking, 'What's in that crust?' Making Great Crusts -- Good crusts are all about creating pockets of air betwixt and between layers of flour. Butter seems to be the fat of choice for tarts. The flour and butter are blended together with the flour encasing the bits of butter. Achieving a "breadcrumb"


ďż˝ consistency is crucial; avoid mixing the flour and butter too much. When the crust bakes, the small particles of butter melt creating the desired air pockets and layers. The Ultimate Finishing Secret - The secret to gorgeous fresh fruit tarts is the glaze that enrobes the final fresh fruit layer. The simplest glaze is melted jelly or preserves. Gently heat 1 cup of preserves. Just as it melts, thin slightly with a tablespoon or two of water. Strain to remove any fruit pieces or seeds. Brush and dab the melted preserves on top of the fresh fruit taking care to also cover any spaces between fruits. Chill for at least 20 minutes to set the glaze. Apricot preserves are often our glaze of choice because of its slightly tart taste, (no pun intended), and because its subtle coloring allows the fruits' natural coloring to predominant. Red currant jelly is another favorite that we like to pair with red fruits.

fresh raspberry tart

(Serves 6 - 8)

A tart that celebrates the perfect marriage of raspberries and cream. This is simplicity itself to make, but must be assembled at the last moment to keep the freshness and crispness of the crust. I like to sweeten the cream with a little strained homemade raspberry jam and I add a dash of framboise (raspberry liqueur) if I have it. ** Variation: I sometimes lightly toss the raspberries in the jelly (you may need a bit extra jelly to do this), coating them completely without breaking them. I then spoon them over the surface in higgledy-piggledy fashion. * Note: You may like to brush the inside of the pie crust with melted white chocolate before filling -- this will keep the crust crisp, and make the tart even more of a special treat! You could also decorate the top with white chocolate curls (use a chocolate with a low cocoa solid content, bring it to room temperature, and shave with a potato peeler.

2 - 3 tablespoons homemade raspberry jam
2-3/4 cups heavy cream, or 1-1/4 cups heavy cream mixed with 1-1/4 cups crème fraîche or sour cream
2 tablespoons framboise, (optional)
1-1/2 lb. fresh raspberries (5 cups)
1-1/4 cups raspberry or red currant jelly (any berry 
preserves will do)
a falsebottom fluted tart pan, 8 inches in diameter
foil or parchment paper and baking beans

the base, chill or freeze for 15 minutes, then bake blind [see newsletter instructions]. Let cool.

Bring the dough to room temperature. Preheat the oven to 400°F.

Put the raspberry or red currant jelly into a small saucepan and warm it gently until liquid. Brush over the raspberries to glaze. ** Put into the refrigerator to chill and set for 10 minutes only before serving (no longer or the tart will go soggy).

Roll out the dough thinly on a lightly floured work surface, and use to line the tart pan. Prick

Press the raspberry jam through a strainer to remove the seeds, then put into a large bowl. Add the cream and framboise, if using. Beat until thick and just holding peaks. Spoon into the pie crust and level the surface. Cover with the raspberries, arranging a final neat layer on top.

The

Swainson’s Hawk The Swainson’s Hawk is a familiar sight in our area. It is known to nest in the city of Elko and Spring Creek as well as more remote areas of Elko County. Swainson’s Hawks build their nest at the top of trees or even on the ground. The two foot diameter nest is made from a loose bundle of twigs and grasses. They raise one brood of young a year. From one to five eggs will be incubated for 34 to 35 days. The young are born naked and helpless. The adults feed their chicks a diet of rodents, rabbits, and reptiles. The nestling period usually takes from 17 to 21 days. After breeding season the adults will switch to a diet made up of mostly insects, especially grasshoppers and dragonflies. These hawks often forage on foot, running after insects and small mammals with their wings partly outstretched. They’ll also perch on pivot sprinkler rigs or fence posts, and then pounce on their prey. Few people watching these birds realize what long-distance travelers they are. In late August and September, nearly the whole North American population of Swainson’s Hawks migrate to Argentina for the winter months. For the northern most breeding birds, this equates to a journey of more than 12,000 miles.

Swainson’s Hawks will congregate into large flocks numbering into the hundreds and even thousands in some areas. Migrating hawks take advantage of the currents formed by warm air and soar on these thermals with their wings and tail spread wide. When they reach the top of the thermal they fold their flight feathers back, close the tail feathers and soar south covering great distances moving from thermal to thermal. Their migration route narrows as the birds move south following the Intermountain Flyway. HawkWatch International runs a Raptor Migration Project in the Goshute Mountains south of Wendover, NV. Each year, from August 15 through November 5, between 18,000 and 25,000 migrating raptors from up to 18 species are counted at the site, one of the largest concentrations in the western United States and Canada. More than 55,000 raptors have been banded at this site since Steve Hoffman began conducting these standardized counts in 1983. Long-term trends in raptor populations are tracked using the data collected each year. The dry, steep trail up to the Goshute site is 2.5 miles and increases in elevation by 1,800 ft. Those interested can contact Hawkwatch International (hawkwatch.org 800-726-4295) and join them for a day or longer as they work with these magnificent birds.

My Ride Expecting Service Changes Most people think of public transit system belonging to a big city, like the infamous New York subway system weighing in at a whopping 1.71 billion rides in 2013. As a fun fact; New York is roughly half the size of Nevada in land mass and is home to over 19 million people. Elko County is one-third the size of New York with 3% of the population density. Yet, we still have public transit available right here in Elko Nevada (although it is like an ant compared to a giant). GET (Greater Elko Transit) My Ride is a public transportation service that is operated under the jurisdiction of the Elko Board of County Commissioners. The service also has a small advisory committee that helped outline the “2015 GET My Ride 3-Year Plan� and will continue to shape future plans for the transit service.

Carmela Fredrick is Shabonya Dutton State Farms Good Neighbor for September. Ciana is Carmelas’ niece, Ciana started off by saying “She is always giving more than she needs to. She also has a way of making people who aren’t family feel like family.” Carmela is the owner of Blooms & Grooms Bridal Boutique Chapel and Florist. She is a close friend and customer to our team here at State Farm. It is our complete delight to have her nominated as our September Good Neighbor. I especially could not wait to write this article, as our Nominee is as close to me as you can get, she is my inspiration, my guide, my confidant, my cheerleader, but most importantly…she is my Mother. Tristin my younger brother nominated her also and although I had an infinite amount of reasons as to why he might have, I asked him why anyway and he said “She is a go getter! She is always volunteering and running around. She is such a hard worker. She would help the world if she could!” To that, I could not agree more. I know this first-hand to be true. Growing up I had the privilege to witness daily how giving and selfless Carmela is, whether it be donating to local groups, volunteering her time to countless events, to scooping up an abandoned dog and giving her

a place to call home. She never ceases to amaze me. It’s hard to put into words just how amazing she is. She is so bright and bubbly, she could light up any room with her smile and that distinct laugh of hers. Her kindness is endless, her giving nature is infectious and anyone that knows her adores her… that is the true beauty of someone so giving. One of her greatest contributions to our community, I feel has been her pay it forward effort by taking arrangements to our deserving Elkonians. I will never be able to forget the day she came across “Random act of Flowers” It’s late, I get a call from her so I answer and she starts off with her voice cracking and sniffling “Kelsie, I just watched this video and posted it to my Facebook, you need to watch it. I’m doing it.” If you aren’t familiar with Random Acts of Flowers the objective of the program is to recycle and repurpose flowers and take the arrangements to different community members. After a little help from social media, word of mouth and donations of old vases from supporters Carmela and her team have been able to deliver smiles to unsuspecting recipients.


Her next and most recent venture is Avons walk for Breast Cancer in Charlotte, NC this October. Carmela and a friend were so inspired by our June ’14 Good Neighbor Terri Sirotek, that they decided to go to Charlotte and do the walk as well! Thank you Mom for being not only my inspiration but so many others, it is men and women like you that empower upcoming generations and show them what drive, perseverance, heart and dedication can take you. Not giving up on your dreams and fueling your passion every day has impacted more people than you know.

Search and Rescue Elko County Sheriff's Search and Rescue Team is comprised of 25 - 30 volunteers from the community along with deputies and detectives who share their skills and knowledge in training and emergency response to serve the county in times of need. Typically we are called out about a dozen or so times a year with some cases running into multi day operations. We have a really great group of people on the team who are very active and involved in the program. The SAR team trains together twice a month, integrating classroom, skill building and field work into full scale mock search scenarios three to four times a year. Many are already trained as EMT's, Fire Fighters and on Mine Rescue teams, but all SAR field responders train extensively together and some gain additional specialty skills and certifications in rope rescue, HAMM radio operations, Mounted, 4x4 and K9. In June we hosted our second national level search and rescue technician certification course here in Elko in which an additional eight responders from Elko county, two from Lander county and one from Humboldt county earned certifications. The State of Nevada has been very supportive in recent years in providing sar responders with this course, search management, NIMS and statewide mutual aid response scenarios.

In the past few years we have had many searches where we have called in, and utilized, these neighboring teams resources. Knowing and having trained with these responders makes everything run more smoothly. Balloons in Early Nevada Manned flight in balloons had been going on for over 80 years by the time Nevada became a state in 1864. Aeronauts (balloonists) had made flights across countries, the English Channel, and close to 30,000 feet above the ground. The first free flight in America was in 1793. These balloon flights were made in gas filled (hydrogen or coal gas) or hot air (smoke) balloons. The gas balloons were expensive and dangerous to fill and operate but had flight durations of hours and days, while the hot air balloons could stay up only for minutes or hours. Many balloonists were doing barnstorming tours beginning in the spring thru fall during the mid-1880s in America. They would perform exhibition flights at fairs, carnivals and special events. Newspapers often had articles on the latest exploits by aeronauts. During the Civil War balloons were used for observation platforms to view enemy movements relaying them down to commanders on the ground. Six to eight balloons made approximately 3000 ascensions. Most of those were gas balloons used by the Union forces. The sole hot air balloon was used by the Confederates. It ascended fewer than five times with less than successful results before it was retired in May 1862. A month later it was followed by a gas balloon dubbed the "silk dress" balloon that flew until it was captured by Union forces on July 4. Thus, ballooning was well established by the time Nevada became a state in 1864. Nevada's early balloonists were the same itinerant aeronauts who were doing exhibitions across America. These aeronauts were paid performers, to provide thrills and entertainment to visitors at fairs, Fourth of July celebrations, and other events. Because of the remoteness of Nevada and the unavailability of gas, most of the balloons used were of the smoke variety. Smoke balloons did not have an onboard heat source. Once they were inflated, they were released and would soon cool and return to Earth. Often the aeronaut would be on a trapeze bar or other open rigging to provide extra thrills for the audience. After 1887, parachute drops became another variation on the descents to keep the crowds entertained. The aeronaut would be attached to a parachute under the balloon and it would be released to climb as far as it could go, often a couple thousand feet. Upon reaching

its highest point, the aeronaut would unlatch the parachute from the balloon and descend. The balloon meanwhile would then flip over, spill its hot air and return to the ground, often before the parachutist. Excerpts from early Nevada newspapers: State Fair Attractions Weekly Gazette and Stockman (Reno, Nevada) August 30, 1900 ...Robert Earlston, the aeronaut, is probably the bestknown man in his line of business in the United States. ...One of the features of Mr. Ralston's performance is in dropping from 100 to 250 feet from his balloon with his parachute absolutely closed. The young man is now giving his exhibitions throughout California and is billed to appear at the California State fair, after which he will come to Reno. WENT UP IN BALLOON AT CARSON CITY Nevada State Journal May 30, 1905 J. C. Mars the aeronaut, accompanied by his wife and son, returned last evening from Carson. Mr. Mars made an ascension at the capital city Sunday afternoon. A large crowd witnessed his daring flight into the air and was well pleased. However, Mr. Mars states that because of unskilled help the ascension was not as successful as he would have desired. In going up he nearly struck a railroad train and heavy ballast prevented the balloon from rising more than 1300 feet. In dropping with his parachute he struck the chimney on a roof, wrecking it, but fortunately not injuring himself. Mr. Mars has completed arrangements to make an ascension at the opening of the State Park next Sunday afternoon. Did you know Bing Crosby was named Honorary Mayor of Elko in 1948? If you are over age 50, you may already know this. If you are younger than that, you may very well wonder who Bing Crosby even was, and why he was the Honorary Mayor of Elko, and why anybody cares. In the 1930s he was considered the leading singer in America. His recording of White Christmas is the best selling song of all times. He sold more than a halfbillion records (ask your grandmother what a record was) and had 383 chart singles, 41 of which were #1s. He was also a movie star, and received Academy Awards for four of his songs, for Best Actor in Going My Way, and for his audio recordings. He received a Grammy for Lifetime Achievement Award. He is one of only a few people to have three stars on the Hollywood Walk of Fame – one for motion pictures, on for radio, and the third for audio recordings. In 1947, he was looking for someplace where he could have some privacy, and have a better environment than Hollywood for his four sons. He happened to visit Elko County and he said “It sure looks like good country to bring kids up in.” He bought one ranch, and then several others. He eventually owned seven different ranches, mostly in the northern part of the county. He described ranch life as “an oasis of enjoyment in a hurly-burly world.” He became a local favorite with the people in Elko County. They treated him just like the rest of their neighbors, and he returned the favor. In his book, Call Me

Lucky, he said he had lived here for some time, and “I haven’t been asked for an autograph, or to do a benefit show, or to contribute to a charity, or to do anything but mind my own business.” In 1948, Bing was given the title of Honorary Mayor of Elko, a position he held until his death in 1977. He was also adopted into the Western ShoshonePaiute Indian tribe on July 25, 1950 He was given the name of Sond-Hoo-Vi-A Gund which means Man of Many Songs. During a hunting trip in Canada, and still in his dirty hunting clothes, Bing attempted to check into a hotel in Vancouver, British Columbia. The desk clerk refused to register him as a guest because he thought the famous crooner was a bum. It made the national news. The Silver State Stampede committee read the story and made arrangements with the Levi Strauss Company in San Francisco to make two Levi tuxedos – one for Bing and the other for the actual Elko Mayor, Dave Dotta. They were presented on June 30, 1951, as part of the festivities of the rodeo. Inside the tuxedos were leather patches that said: “Notice to hotel men everywhere. This label entitles the wearer to be duly received and registered with cordial hospitality at any time and under any conditions.”

Bing arranged for the world premier of his movie, Here Comes the Groom, to be held in Elko in 1951. Newsmen, movie stars, Nevada Governor Charles Russell, Utah Governor J. Bracken Lee, and many other dignitaries attended. CBS radio broadcast the street show live, coastto-coast, with nearly everyone in Elko in attendance. The movie was shown a number of times at both the Hunter and Rainbo theaters; they sold 1,200 tickets for the event. The whole event netted nearly $10,000, which Bing donated to the hospital building fund. When it became apparent that none of his boys were interested in ranching, he sold the ranches but remained in contact with many of the friends he had made while living here. The Dotta family donated Dave’s tuxedo to the Northeastern Museum, and when Frank Williams succeeded Dave Dotta as mayor of Elko, Bing Crosby gave his tuxedo to Williams, telling him this is what Elko Mayors wear, so you should have it. Williams’s daughter, Barbara Mentaberry, gave it to the museum, and both tuxedos are on display in the Bing Crosby exhibit at the museum. Stop by and see this piece of Elko County history.
