Tomato Chutney
Fresh Bread on the Grill A grill mimics the high, hot temperatures of woodfired ovens, or traditional tandoor ovens, where bread dough is slapped onto the burning hot sides and cooked in seconds. Thinner breads such as naan, chapatti, and pita love the grill. Their thin character translates into fast cooking times. Thicker, loaf breads require consistent, moderate heat (350F) circulating over longer periods of time; those conditions generally require more specialized outdoor ovens than typical grills offer.
Fresh bread, hot off the grill! The grill, with its high temperature capabilities, is perfect for making flatbreads like this naan. The dough came together easily, rolled out cooperatively, and was tossed directly on the grill grate. The chutney of grilled vegetables, accompanying the naan, brought fabulous flavor to our table. The chutney was even more wonderful the next day. Makes 4 servings Naan, the yeasted flatbreads of central Asia, are traditionally baked in wood-fired tandoors, large vertical ceramic ovens that get superhot – hot enough to sear the surface of bread in seconds.

Although home cooks try to duplicate the effects of a tandoor by lining the floor of a conventional oven with ceramic tiles, the heat is never the same. We think a grill gives more authentic results, especially a charcoal grill. Like all flatbreads, the dough for naan is relatively easy to prepare. It takes about 10 minutes to mix up and 1-1/2 hours for rising. If you need to leave the dough for a few hours (or as long as a day), you can let it rise in the refrigerator. It will taste even better. INGREDIENTS: 1 teaspoon active dry yeast 3/4 cup warm water (110 to 115ºF) 1/2 cup plain yogurt 1-1/2 teaspoons ground toasted cumin seeds (see Know-How, below) 1-1/2 cups bread flour 1 tablespoon canola oil 2 teaspoons sugar 1 teaspoon sea salt About 1 cup whole-wheat flour 2 teaspoons unsalted butter, softened 2 teaspoons cracked toasted cumin seed 1-1/4 cups Grilled Tomato Chutney (see below) DIRECTIONS: Mix together the yeast and 1/4 cup of the warm water in a large bowl until the yeast is dissolved. Mix together the yogurt, cumin, and remaining 1/2 cup water in a medium bowl and add to the yeast mixture, stirring until well blended. Add the bread flour and stir vigorously for 2 minutes. Cover loosely with plastic wrap and set aside at room temperature until bubbly, about 30 minutes. Stir in the oil, sugar and salt and enough of the whole-wheat flour to make a kneadable dough. Knead on a clean work surface, using additional flour to keep the dough from sticking, until the dough is smooth and elastic, between 5 and 10 minutes. Wash out the large bowl and coat it lightly with oil. Turn the dough in the oiled bowl to coat with the oil. Cover with plastic wrap and let rise at room temperature until doubled in bulk, about 1 hour. While the dough is rising, prepare the chutney.
Light a grill for direct medium-high heat, about 425ºF. Divide the dough into four pieces. Roll each into a ball and flatten into a 1/2-inch-thick disk. Cover with a kitchen towel and let rest for 5 minutes. Lightly flour a clean work surface and roll each disk of dough into an oval about 9 inches long and 1/4 inch thick. Coat each bread with oil and stack on a plate to transport to the grill. Brush the grill grate and coat with oil. Put the dough on the grill so the disks are evenly spaced, cover, and cook until grill-marked and charred in spots on the bottom and puffed on top, about 2 minutes. Turn with tongs and cook on the other side until browned and spotted with char, about 1 minute. Remove to a plate, brush with butter, and sprinkle with the cracked cumin. Serve with the chutney. KNOW-HOW: TOASTING AND CRACKING WHOLE SPICES You will need to toast about 2 tablespoons cumin seeds to prepare the ground toasted cumin and cracked cumin for the bread and chutney. Toast the seeds (or any whole spice) by heating a small, heavy skillet (such as cast-iron) until very hot. Add the seeds, remove from the heat, and stir until the seeds are aromatic and lightly colored, about 1 minute. You can use the same heavy pan (after it has cooled down) to crack or crush the seeds by carefully pounding them on a solid flat surface (like a butcher block) with the bottom of the pan.
Grilling Tips WANT
perfect GRILL MARKS?
Beautiful diamond cross-hatching? Start with a hot grill, place your welloiled food directly on the grate. Halfway through cooking the first side, rotate the food 45 degrees. Repeat with the other side.
Clean YOUR GRILL! Today’s garlic bread shouldn’t taste like yesterday’s fish. It’s not necessarily fun, but a clean grill will yield better results and last longer. Use the manufacturer’s instructions specific to your grill for proper cleaning.

Oil THE FOOD, NOT THE GRATE Avoid excess smoke, flare-ups, and gummy grates by oiling the surface of your food just prior to grilling instead of oiling the grate. This puts the oil where it’s needed in order to prevent sticking.
KNOW THE SURFACE
Temperature
Use grill surface thermometers to your advantage. A grill lid is not necessarily reflective of the cooking temperature at grate level. Knowing the temperature at the grilling surface will help you judge the coking conditions and timing.
LEAVE
Fruits & Veggies
IN LARGER PIECES
When grilling, leave fruits & vegetables in larger pieces, then cut into smaller, bite-sized pieces when cooked. Larger pieces are less likely to fall between the grates, cook more evenly, turn effortlessly, and are easier to eat on and off the grill. TRY MEAT Rubs VEGGIES!
& Marinates ON YOUR
Experiment with different combinations of rubs and marinates on your veggies. Take care not to crosscontaminate rubs or marinades that have contacted raw meat with vegetables that you plan to grill.

Grilling Tips GRILL BY
Temperature
We’ve said it before, we’ll say it again: grill by temperature, not by time. Use the timing instructions in recipes as guidelines, then keep an instant read thermometer by your side.
Grilled Garlic Bread
Pizza on the Grill
Everyone’s Favorite! Mix 4 cloves of fresh, minced garlic with 1 stick of softened butter. If you like, add some minced herbs (oregano, chives, or minced shallots). Butter both sides of sliced French or Italian bread. Toast on a medium grill for about 2 minutes per side; tend the grill closely during toasting – it happens quickly!
A hot pizza stone evenly transfers heat to the pizza crust. Alternatively, pizza grilling experts, Elizabeth Karmel and Bob Blumer recommend shaping your pizza crust to match your grill, grilling the crust over direct heat, then flipping to add toppings. The pizza continues to cook over indirect heat until cooked and the cheeses become wondrously melted.

Fresh Vegetables on the Grill Double the flavor of vegetables by cooking them on the grill! This happens in two ways: (1) Similar to oven roasting, grill heat is a dry heat that reduces the water content of vegetables thereby concentrating their natural flavors, and (2) grill smoke and caramelized grill marks impart a desirable outdoor flavor. Firm vegetables may be grilled directly on the grate, or as large chunks on skewers. Softer, or more fragile vegetables are easily managed with a grill mat or grill basket. Toss vegetables with olive oil, or another high temperature tolerant oil, salt and pepper, and grill away! For extra flavor, marinate vegetables for 3-4 hours in your favorite marinade prior to grilling.
TIP: Grill asparagus & other long, thin vegetables as skewered rafts.
Tandoori cauliflower with Mint Chutney This has to be our new, most favored, cauliflower recipe! Cauliflower florets are first marinated in a fresh, (and super-easy) Tandoori Yogurt Marinade. The large pieces are grilled until perfectly soft and tender. The marinade flavors filling the nooks and crannies of the cauliflower concentrate while grilling. The delicious pieces are served with a fresh mint chutney that complements the grilled cauliflower to perfection with its piquant profile.

Tandoori Cauliflower with Mint Chutney Makes 4 servings Cauliflower is a member of the cabbage family. The plant's flower stalks are forced to grow in on themselves, forming a dense mass or curd. Because the stalks never fully mature, they do not become very fibrous. But they are rich in pectin, which is why grilled cauliflower is so creamy, and why overcooked boiled cauliflower turns to mush. To keep the curd pale white, the outer leaves are tied around the cauliflower head, which shields the curd from sunlight and limits the development of green chlorophyll through photosynthesis. We like to grill-roast cauliflower and jolt its mild flavor profile with Indian spices and a refreshing splash of mint chutney. Serve it as a side dish for fish or chicken or as the centerpiece of a vegetarian meal. INGREDIENTS: 1 head cauliflower, cut into large florets (about 4 cups) 2 cups Tandoori Yogurt Marinade (see below) Tandoori Yogurt Marinade Best with veal, chicken, turkey, lamb, vegetables. Makes about 1 cup. Mix everything together and use as directed in a recipe. 3/4 cup (6 ounces) plain yogurt 2 tablespoons fresh lemon juice 1 tablespoon minced fresh ginger 2 large garlic cloves, minced 1 tablespoon Garam Masala Run 1/2 teaspoon ground turmeric 1 tablespoon paprika 1 tablespoon chopped fresh cilantro 1 tablespoon minced fresh onion 1/2 tsp. red food coloring (optional) Mint Chutney: 1/2 cup fresh mint leaves and small stems 1/3 cup fresh cilantro leaves and small stems 1/2 small onion, coarsely chopped (about 1/4 cup) 1 clove garlic, coarsely chopped 1 small serrano chile pepper, stemmed and coarsely chopped (remove seeds for less heat) Juice of 1 lime 2 tablespoons water 1/2 teaspoon course salt DIRECTIONS: Combine the cauliflower and marinade in a 1-gallon zipper-lock bag. Press out the air, seal the bag, and refrigerate for 3 to 4 hours. For the mint chutney: Combine the mint leaves, cilantro leaves, onion, garlic, chile pepper, lime juice, water, and salt in a small food processor or blender. Blend until relatively smooth. Scrape into a small serving bowl and set aide. Light a grill for indirect medium-high heat, about 400ºF. Put a disposable aluminum pan beneath the grill grate over the unheated area of the grill. Fill the pan with 1/2 inch of hot water. Set the grill grate in place, brush it, and coat with oil. Remove the cauliflower from the marinade, reserving the marinade. Put the cauliflower florets on the grill so they
16

are over the pan of water. Close the lid and cook until fork-tender, 20 to 30 minutes. Dab the florets with some of the remaining marinade just before removing from the heat. Serve hot with the chutney.
Roasted Jalapeno Peppers We can make a whole meal out of these cheesestuffed jalapeno peppers! A chile pepper rack makes it all possible on the grill (or in your oven year-round). The rack has perfectly sized holes that hold the peppers upright while providing enough space for the heat to circulate and roast the peppers. Here’s the cheese stuffing mixture that we used – it’s very welcoming of embellishments and add-ins! Try petite, “baby bell” sweet peppers for a less spicy option. Ingredients 8 oz. cream cheese 8 oz. shredded cheddar cheese 1 lime, juiced 2 thinly sliced scallions 1 clove minced garlic 1 Tbsp minced cilantro Mix together well in a bowl, or in a food processor; chill until firm. Meanwhile, cut off the tops of the peppers, reserve. Core the ribs and seeds from the pepper. (A grapefruit knife with its blunt tip and serrated edge works really well for coring and seeding these small units). Stuff the peppers by rolling a tablespoon of the cheese mixture into a small log; insert into the pepper and press into place. Cap the peppers with their tops, or place a square of bacon or prosciutto over the top. Roast the peppers for about 20 minutes or until the peppers are softened and the cheese has melted to perfection.

Outdoor Patio Kitchens
For many people, few outdoor activities are as relaxing – or rewarding – as grilling and entertaining guests in their own backyard. Bringing people together over delicious food, lovely scenery, and great conversation is a staple of summertime Americana. And because our patio get-togethers hold such a predominate position in our culture, isn’t it fitting that we should strive to make our backyard as beautiful, welcoming, and fun as possible? Indeed, having an outdoor kitchen can make your patio THE hot spot to be all season long!

Many designers hold the belief that your “exterior space” should be an extension of your interior home, not something totally separate. In many ways, a patio in the summertime is like a second living room, a “home” outside of home. If you want to make your patio kitchen as awesome and inviting as possible, you’re going to need 5 things: The Grill
The grill is the foundation of your outdoor kitchen, and to many, the place where “the magic happens.” It should never be centrally located in your backyard, but it should not be too far out of the way either – the grill is still a social place, and no chef wants to be removed from the party. And truly, no party wants to be removed from its chef! The best part of an outdoor kitchen, after all, is that the host gets to be part of the conversation rather than just running in and out all the time.
The Firepit (or Brick Oven – or Both!)
The nice thing about a real fire, as opposed to a gas grill, is the sheer amount of heat you can get out of it. And when it comes to searing steaks and bell peppers, nothing beats an open flame. And it’s not like you can roast marshmallow s’mores off a gas grill either! Hence, the importance of a firepit (and/or, if space and budget allow, an open woodburning brick oven). Time to bring out the kabobs! Firepits work best with real wood for fuel, and perhaps some lava rocks to properly preserve and emit heat for effective cooking and area-warming. Firepits should be the center of attention, somewhere very prominent and accessible on your patio. They are generally in a very central location. Not only are these pits suitable for kabobstyle grilling, they are also great for keeping company warm and creating a friendly, inviting atmosphere. So be sure to bring out the bean bags, throw pillows, and comfy outdoor sofa cushions!
Sinks and Plumbing
What good would an outdoor kitchen be without a sink? This will make it easy to clean and prep all your vegetables and even wash dishes outside so, again, you can host your event and still be where the party is. For the countertop around the sink, real stone is nice but can be very pricey – it may be worth it to invest in some quality stone veneer instead. This will protect the foundations and requires little maintenance. Water can be a little tricky on the patio. If you just want cold water it’s easier, but if you want hot water as well, consider an undercounter water heater located below the sink. This is far cheaper than running additional water lines from the house, and tends to be more efficient for small-scale water heating. You’ll need to winter-proof your outdoor plumbing to keep your pipes and valves from freezing over and possibly bursting during the cold season.
The Mini Fridge
Ah, the mini fridge! This is pretty straightforward; minifridges look great installed into your primary outdoor kitchen workstation, likely near the sink. These are useful for storing food and beverages so your guests don’t need to leave the patio to grab some refreshments. Your fridge should have a dedicated outlet, as they often need lots of amperage. If you want more outlets, install them on separate circuits and mount them above the countertop so you can use your blenders, rice cookers, and whatever else you want to plug in outside.
Lounge furniture
La piece de la resistance! Great lounge furniture is the final piece of your patio living puzzle. Once you’ve got a great workstation, fantastic food, and a roaring welcoming firepit, now you just need to make your patio a cozy place for your guests to put their feet up and relax. And perhaps even take a nap after eating your tasty barbecue! Outdoor sofa sets are great around a fire pit, as are oversized throw pillows and daybeds. Materials should ideally be resin wicker (real wicker is best for indoor use as it is prone to fraying and warping with humidity and heat) and waterproof, fade-proof fabrics. Aluminum makes a great frame for these types of furniture because it is lightweight and not prone to rusting. Lots of contemporary patio furniture is designed such that re-arranging is a total breeze, which is great for impromptu gatherings. An outdoor kitchen adds sanctuary to your home and great curb appeal for resale value. For more backyard tips, or tips on buying and selling your home, give me a call. I am more than happy to help! Awe, Bahamas! Contributed by Pat and Pam of Just Right Cruises 623-9074
Off to warm waters and blue sky - Welcome to the Bahamas! When it comes to fun in the sun, the Bahamas rate right at the top with other tropical destinations. The Bahamas are made up of 700 islands and the capital is Nassau, and became a colony in 1783 and have since attained independence from the UK in 1973. The Bahamas offer some of the finest vacationing in the world, and the Bahamian people are very friendly and welcoming. Cruise lines frequent the Bahamas almost all year long, or you can also choose a land resort. What makes the Bahamas super cool is when it's cold in the states, it is nice in the Bahamas. The Bahamas are warmer in the winter with the average temperature of 60 to 70 degrees. Now that being said, they can get a cold snap and drop to 50 degrees and on very rare occasions the Bahamas can drop to 40 degrees. For those of us here in Winnemucca sometimes 50 degrees sounds like summer! Now, by now you should know me and once again I am going to tell you that I love food. The Bahamas have great food, and get this – seafood. Oh yes, how about some fresh crab, or fresh Rock Lobster, or maybe you would like to try one the Bahamians favorite foods - conch.
The Bahamian cooks prepare these in a number of ways, including fried, sautéed and curried. No matter where I go I love to try foods of the locals. At the end of your meal you must try Johnny Cakes. This dish originates back to the nations settlers and early fishermen, who blended flour, milk, butter and spices into what they called "journey cakes" and cooked them on their boats. Today in the new world the islanders eventually shortened the food's name to Johnny cakes. The Bahamian cuisine is a mixture of African and Caribbean flavors, with American and British/European influences. I found the Bahamian foods unique. Moving on, in the Bahamas they love their music and one of the most popular types of music is calypso and with that comes awesome dancing. The king of Bahamian music/festival is the Junkanoo. To experience Bahamian culture and art, you should make plans to attend Junkanoo. The Bahamian festival of Junkanoo is an energetic, colorful parade of brightly costumed people gyrating and dancing to the rhythmic accompaniment of cowbells, drums and whistles. The problem with this festival is it starts on December 26 and January 1

-- beginning in the early hours of the morning (2:00 a.m.) and ending at dawn. It is one hell of a celebration, so if you can make it, you will have a true Bahamian experience. The most spectacular Junkanoo parade occurs in Nassau; however, you can also experience it on Grand Bahama, Eleuthera, Bimini and Abaco. It is held on Boxing Day (December 26) and New Year's Day (January 1) from 2:00 a.m. until 8:00 a.m. so keep Nassau in your mind when planning your awesome vacation to the Bahamas! Ok, as I mentioned, the Bahamas are made up of 700 islands. Now of course you will not go to all 700 islands – this is just a fact (lol). But I will go over some of the best vacation places in the Bahamas. We just talked about Nassau, which is the Capital of the Bahamas. Now let's talk about other islands in the Bahamas. We will start out at Abaco - Abaco is about 175 miles east of West Palm Beach, Florida; Elbow Cay is an island approximately 6 miles long and 1/4 mile wide. It has a magnificent barrier reef that protects several miles of beautiful white sand beach and the unbelievably clear, turquoise waters that are filled with fish and dolphins. Now being a smaller island it comes with its own set of problems. It can be somewhat expensive, with hotels starting out at $130.00 a night and up and up and up! But there are some very fine resorts. I know of at least one resort that has a golf course, and that is at Treasure Cay and go figure the name of the resort is Treasure Cay Beach, Marina & Golf Resort, lol. This resort rates well as 72% ranked it number 1. I am so, about reading other peoples reviews, I will take a look at the reviews with an open mind. If you see a review on anything, look at it closely and see how many say it's great and how many say it is horrible. If it is 50/50 you should just check it out for yourself, now if it is 20% said it is great and 80% said it was bad then maybe you should heed their warning. Now for me, as long as it is clean and safe I am ready to rock and roll! Now let’s go to Acklins Island - Acklins Island is known for Bonefish - this fish can weigh up to 19 lbs. I do believe Acklins Island is one of the least known islands of The Bahamas, it has some very nice places to stay and is off the beaten path. Along its coastline are numerous hidden coves with extensive, beautiful beaches and a number of tiny, colorful, villages. This is one Bahamas Islands you should consider. The next area of the Bahamas we are going to touch on is Crooked Island. This is the place for relaxing and doing absolutely nothing. The friendly people on this island will make your stay a memorable one, and

is a perfect place for sailing and fishing. If you get the chance and you enjoy liqueurs you may wish to try a local favorite Campari liqueur. This island is a diamond in the rough, it is a very quiet and remote Island but has an abundance of bird life that thrives on the cliffs and reefs around. Crooked Island is also said to be one of the most exciting fishing destinations in The Bahamas where you’ll find bone fishing, inshore fishing, and deep-sea fishing. Let's talk about one of my favorite islands in the Bahamas, I really love this island and the people - Eleuthera, which means "Freedom" in Greek. As for places to visit, Preacher's Cave is a good place to start. It's a subterranean cave in which the Eleutherian adventurers, the few pilgrims who first landed here, took refuge and held religious services upon their arrival. You can also go to nearby Windermere Island it is an exclusive resort, often frequented by members of the Royal Family. You will find some great resorts to stay at, and they start from $170.00 per person for 7 days and up. You just can’t beat the Island of Eleuthera! Now if you enjoy world class diving, the island of Exumas is for you. Exuma consists of two main islands, Great Exuma & Little Exuma and about 365 little cays located in the center of the Bahamas Islands chain. The Bahamian iguanas live here and the 176 square mile Exuma National Land & Sea Park is located there for world famous diving. Snorkelers can't go wrong with Exuma, will find the wide, shallow coastal region teeming with life and easy to explore, while divers can explore the huge coral reef or Exuma Sound which is filled with caves, blue holes and shipwrecks. Holidays in Exuma can be enjoyed all year round. The winters tend to be drier with daily temperatures between 75° F and 85° F. Summers are between 80° F and 90° F. There are so many islands in the Bahamas that is in reach for the land traveler and is totally surreal - you just have to look or ask your travel advisor. Another super island in the Bahamas is Freeport, Lucaya, This is another island with so much to do and a lot to offer. As with the other islands the waters and temperatures are perfect. This is a larger city with great places to stay and many things to do. Now I don't want to overwhelm you with the Bahamas, but you just can't beat them, so I am going to close this travel blog in this great publication of Everything Winnemucca with a few more Bahamas islands you may wish to consider. Harbor Island, on Harbor Island, off the north coast of Eleuthera, is Dunmore
Town. The oldest and most charming settlement in the Bahamas, complete with white picket fences and friendly residents. All of Harbour Island is rimmed by pink, sugar-sand beaches, but Dunmore Town has some of the best. Salt! That’s right salt. The island of Inagua is the third largest island and produces nearly a million pounds of salt each year for a company you may know, Morton Salt Company! Inagua is home to the world’s largest colonies of flamingoes who call Inagua their home at the Inagua National Park. There, on 287 square miles, lives the world's largest colony of West Indian Flamingos. Driven almost to the point of extinction, our flamingo "fine feathered friends" now number in the thousands, more than 60,000 in fact. Now we head to Long Island Bahamas. This area has truly stunning beaches and in fact, Cape Santa Maria has one of the world’s top ten beaches - Columbus Point, located 1/2 mile north of the primary beach resort in Cape Santa Maria. This beach offers a tremendous view of the protected harbor Columbus sailed into, as well as a monument and plaque commemorating his landing. Stella Maris, which means Star of the Sea, is another primary resort area on Long Island. Stella Maris is a famous meeting place for sports fishermen and scuba divers. Other islands are Mayaguana, the easternmost island in the Bahamas archipelago, Mayaguana lies half- way between South Florida and Puerto Rico. Approximately 450 nautical miles southeast of Palm Beach, Mayaguana boasts a year round tropical climate and a tranquil, island atmosphere. Mayaguana Island, an Arawak Indian name, is the least developed and most isolated of the family islands. With unspoiled beaches and excellent scuba diving and fishing, Mayaguana Island offers a quiet and relaxing getaway for vacationers. Now the last island we will stop by is Great Harbor Cay, Great Harbor is a full-service modern resort designed for family vacations--including golf, tennis, bike rentals, diving, snorkeling and excellent restaurants. Marinaside townhouses make this location also ideal for bonefish groups from four to six fishermen, with guide services and numerous nearby flats providing excellent fishing for small and large fish. It is now time for you to think about which Island you and your family would love to visit? We have covered 11 islands and each island has something special. The Bahamas are easy to get to from the states, and we will always advise you to contact a travel service to fine tune your vacation so you don’t get any surprises. As an agent, we work hard for you making sure you get where you want. It is what we do and it's nice to know that you have a friend on your side. Until next time, may you stay well and travel safe.

Their patented “oval design” lends to more flexibility while cooking with higher efficiency than any other ceramic grill. The Kamado creates two zones for different and distinct cooking (think vegetables and steak). What is flexibility with a grill? Primo states that you can grill, bake pizza, roast a turkey, smoke, sear, braise, sauté, barbecue, caramelize, flambé, broil, fricassee, pan-fry, etc. Jeez, is there anything left? The Primo Kamado uses charcoal from whole stock hardwood giving you the same flavor as cooking over the campfire with the control of an oven. No better way to grill this 4th of July! Hunger is one of the most severe roadblocks to the learning process. Lack of nutrition during the summer months may set up a cycle for poor performance once school begins again. Hunger also may make children more prone to illness and other health issues. The Summer Food Service Program is designed to fill that nutrition gap and make sure children can get the nutritious meals they need. During the school year, many children receive free and reduced-price breakfast and lunch through the School Breakfast and National School Lunch Programs, but what happens when school lets out? Just as learning does not end when school lets out, neither does a child's need for good nutrition. The Summer Food Service Program (SFSP) provides free, nutritious meals and snacks to help children in low-income areas get the nutrition they need to learn, play, and grow, throughout the summer months when they are out of school.

You know that children who miss school breakfast and lunches are more likely to be sick, absent or tardy, disruptive in class, and inattentive. They also score lower on achievement tests. Good nutrition is essential for learning in school. So, SFSP provides an opportunity to continue a child's physical and social development while providing nutritious meals during long vacation periods from school, and helps children return to school ready to learn. In response, the Frontier Community Action Agency along with the Wade Distributing, HGH, Food Bank of Northern Nevada, USDA, and the Department of Education have teamed up to bring the Summer Food Service Program to Humboldt and Pershing Counties.

Celtic Sea Salt

Health Benefits & Usage
N at u res Corner
Some reported health benefits for natural salt include: • Regulates heartbeat and blood pressure. Even though refined salt can cause high blood pressure, natural salt with adequate water intake can help to stabilize irregular heartbeats and normalize blood pressure. In other words, if you have low blood pressure, taking Celtic sea salt can help to raise it. If you have high blood pressure, it can help to lower it. • Eliminates mucus buildup. Not only does this salt help to eliminate existing mucus buildup, but it will help to prevent it. This benefit makes it very helpful for people with allergies, asthma, sinus issues, or bronchial congestion. • Improves brain function. Sea salt is vital to the health of nerve cells and their ability to communicate and process information. This salt also helps to extract excess acidity and toxins from brain cells. • Balances blood sugars. Celtic sea salt is especially helpful for diabetics because it helps to balance blood sugars.
The balance of water and salt in the body is critical and natural sea salt helps to balance the entire body.

•A lkalizes the body. Excess acidity in the body is an underlying cause of many diseases. Salt is vital to the removal of excess acid wastes from the cells. In addition, mineral rich salt will help to maintain the optimal acid-alkaline balance.
Natural Celtic sea salt is light grey in color, which comes from the sea minerals and clay found in the salt flats. The clay ionizes the minerals in the salt, making it even more beneficial.
• Increases energy. Salt and water are the key elements for the generation of hydroelectric energy in the cells. When sodium and trace minerals are deficient in the body, fatigue will set in.
The taste of this salt is incomparable! Light grey Celtic salt is famous in the culinary world and is considered by many to be the best quality salt available.
• P rovides electrolyte balance. Natural Celtic salt will help keep the electrolyte minerals in your body balanced, releasing excess sodium and water. For problems with water retention, gradual sea salt intake can help to release excess water stored in body tissue.
This salt is moist to the touch and will retain its moisture even when stored in a cool place for a long period of time.
• Builds immunity. Regular intake of natural sea salt and its highly absorptive minerals can give you a higher resistance to illness, infections, and disease. It can also help your body to heal faster after an injury or surgery. • Promotes restful sleep. The abundance of trace minerals in natural sea salt will have a calming effect on the entire nervous system. In addition, the proper ratio of water and salt consumption can help to prevent the need to urinate during the night. • Prevents muscle cramps. Muscle cramps are often caused by an electrolyte imbalance, especially a lack of sodium. Celtic sea salt provides these minerals in the correct proportion. Your body will take what it needs and get rid of the rest, as long as you are drinking enough water.
Light grey Celtic sea salt is dried only by the summer wind and sun, and it is not refined by any processing. This coarse salt is best used in cooking. For use on the table, you can grind it with a ceramic salt grinder or a mortar and pestle. Avoid metal grinders. In order to get the full benefits of the salt, do not grind it ahead of time. To maximize the benefits of Celtic sea salt, be sure to keep your body hydrated by drinking half your body weight in ounces of filtered drinking water. Add one-fourth to one-half teaspoon of this salt to each quart of drinking water. Also remember that the more you perspire, increase your activity, or exercise, the more water and salt your body loses. Always replenish both water and salt to prevent dehydration and restore electrolyte balance.

For many, financial freedom may seem like a dream.
However, by
adhering to a monthly budget, it is possible to eliminate debt, save for future unknown expenses, and alleviate the stress that you feel each month when you pay your bills.
The first step to financial freedom lies in creating a budget; planning where you spend your money. Though it may feel overwhelming, a spending plan is necessary in order to meet your short and long term financial goals.
G et
3. Identify your discretionary expenses. This includes shopping and your daily gourmet coffee. 4. P rioritize your expenses. Identify those expenses that are necessary, and those that are desired comforts (wants). Look at which of your desired comforts can be eliminated or more efficiently managed. 5. Total your expenses and compare them to your net income. If your expenses total more than your income, then it’s time to reassess your spending habits and make cuts where your can.
N ext , a clear picture of your current
financial situation by following these few steps to create a budget :
1. List all of your fixed expenses, such as utilities, groceries, fuel for your vehicle(s) and debt payments.
40
2. List all of your irregular expenses. These expenses are due at various points throughout the year, including taxes, vehicle maintenance and vacations.
JULY 2014 | everythingwinnemucca.com
set some goals and follow a few
simple strategies to save :
- Make automatic deposits into a savings account. Sign up for your bank’s automatic transfer program and move a percentage of your paycheck to your saving account each payday.
- Price shop and ask about discounts. For example, shop around for best insurance rates and ask about discounts that you may qualify for, which can lead to savings on your premium. - Stop and think before you buy. Resist impulse buying, by waiting 24 hours before you purchase any item that isn’t absolutely necessary. Take the time to think matters through thoroughly, and rationalize whether you really need it after all.
F inally ,
eliminate your existing debt
as quickly as possible .
If
you have
outstanding balances on two or more credit accounts , use the rollover formula to pay them off .
- Make a larger payment on the account with the highest interest rate and pay the minimum on the rest of the accounts. - Once this account is paid off, apply the amount of its payment to the minimum amount you were paying on the account with the second highest interest rate. - When the second account is paid off, add that amount to the payment of the thirds account, etc. until you have paid off all of your accounts.
WINE WALK July 26th 4:00-7:00 pm glasses are sold from 3:30-5:30pm Purchase your wine glass and map for $20 at the Chamber office-30 W Winnemucca Blvd. Must be 21 and have proof of ID if requested.
If this seems like a lot of work to achieve financial freedom, it’s because it is. But the alternative is to work a lot and still not have the financial freedom that you desire. Imagine having the money to live comfortably, take a dream vacation, pay for your child’s education and maintain your lifestyle during retirement. If this is ultimately your goal, then you will want to make the time and follow these minimal steps to achieving your goal of financial freedom.

Natural Remedies for Your Children Contributed by Dr. Todd Wendell of Ruby Mountain Chiropractic
We know your children are precious and the center of your world. So we’d like to share simple, natural remedies for your child’s needs to keep them healthy and happy this summer as they get into the outdoors. Set your child up for success by avoiding a diet filled with processed foods.

Bug Bites Mixing a few drops of water with baking soda makes a paste that can quickly relieve the itching for fast and natural relief (not to mention, inexpensive)! Lavender essential oil can also be useful.
Aches and Pains Chiropractic care does wonders for children because they have spines too! Did you know adjusting a baby uses the same gentle pressure you would use to test the ripeness of a tomato? Just enough and barely noticeable, yet it allows your child to heal and live a happy life.
Mild Swelling Cucumbers help reduce slight swelling and can be very soothing for irritations like sunburns and some insect bites. So, keep cooled pieces from the refrigerator on the swollen area.
Sore Throat Honey and lemon juice is a delicious way to help soothe a sore throat and some say it works better than cough syrup. The lemon helps dry up congestion and honey creates a natural, soothing coat. For children over 1 year, combine a tablespoon of honey and lemon and serve it in small teaspoon size doses.
We love nothing more than helping your entire family grow healthy and strong. Remember we’re always here to help, answer questions and guide you in your family’s journey towards optimal health.

Colic Chamomile tea can help calm intestinal muscles and relax your child. Steep it for around 4 minutes and serve once cooled, not giving your child more than 4 ounces (120ml) a day. Also, a chiropractic adjustment may help by restoring proper nervous system control also allowing muscles to relax and the body to heal itself.
Healthy Development The birth process, growing pains, bumps; bruises and falls can really take a toll on your child’s health and development. So, with the gentlest care, we ensure your child’s nervous system is up and running, just like your child.
Healthy Diet With so many allergens to food, sensitivities to gluten and dairy, grocery shopping isn’t what it used to be. Make sure to check the labels on your foods and pay attention to your child’s behavior after eating dairy, gluten, nuts, etc. to see if they may have sensitivity. Set your child up for success by avoiding a diet filled with processed foods packed with sugars, salts and preservatives.

Paula is a wife, mother of three children and grandmother to seven. In early 2005, Paula was diagnosed with metastatic stage 4 hormonal breast and lymphatic cancer, requiring a radical mastectomy followed by (aggressive chemo and radiation therapy.) Upon completion of these therapies, she
eventually became stable enough to return to her calling of service as a massage therapist. About two and a half years ago, the unthinkable happened. The cancer was back with a vengeance! It had spread to her bones, liver and lungs. Paula's Oncologist advised more aggressive chemo for another two plus years. Paula has been hospitalized (many times) during this period with multiple side effects from the cancer, including septic shock and of late meningitis, a contribution from bone cancer which left her crippled and to date (very confused). The paramedics stated "she was moments away from passing" when they arrived. After eight days of treatment/recovery in ICU, the oncologist told her she was out of options and suggested pain management in conjunction with hospice.
The Copeland's have been financially devastated throughout this storm with past and present medical expenses. There is an alternative naturopathic medical healing center approximately two and one-half hours from where they live. We are getting down to the wire now, so time is of the essence. This is very humbling for us as we are givers not receivers. We are praying and trusting God for the necessary donations that will be required to pay for past medical expenses as well as future naturopathic cancer treatments. The cost of these treatments can range from $7-10,000 per week. If you are in a position to financially help in restoring Paula's health and extending her life to continue serving others, or if you are only able to pray for her, we will either way be eternally grateful for these gifts.

“I would love to take one of your yoga classes, but I am not flexible.” “I don’t have time to exercise.” “I’m embarrassed about being overweight and out of shape. People would laugh at me.” “Yoga is against my religion.”
A Yoga Experience Do any of these excuses strike a chord with you or with someone you know? They are typical comments from folks just like you and me, who have talked themselves out of doing something extremely healthy for themselves. I have used a couple of them myself over the years. The practice of yoga speaks to me, but that doesn’t mean it is for everyone. So when I speak of physical movement, I do not limit it to a yoga practice. I also love to ride my bike, swim, walk, dance, garden and laugh. Simply put, it is so important for human beings to move our bodies in a variety of ways in order to stay healthy. Medical science is preaching that a sedentary life style is an unhealthy life style. Our mental health professionals more and more are encouraging people to get out and exercise to improve mental health, especially symptoms of depression and anxiety. If the word ‘exercise’ brings up memories
46
JULY 2014 | everythingwinnemucca.com
of tedious, exhausting, boring, grueling workout, then change ‘exercise’ to ‘movement’. I want you to know that every time you walk instead of ride, take the stairs instead of the elevator, bend down to pick something up rather than ask your 3 yr. old to fetch things for you, or take an extra lap or two around the grocery store when shopping, you are exercising. Your body is in motion. Movement is exercise. Most of our movements are mindless. Movement with a conscious awareness of our body, mind, and spirit connection is yoga. Whenever we increase the amount of walking, bending, reaching, twisting, jumping, or climbing we are asking our bodies to work a little bit harder than usual. This increase in work increases lung capacity and makes the heart pump at a faster rate, thus bringing more oxygenated blood to our cells. Our muscles are fed and the extra fluids released through exercise take out toxins which may have built up from
inactivity. When we use our muscles, we build muscle. Muscles need fuel in the form of calories. More calories are burned, thus, the fat to muscle ratio decreases. If we get into a routine which encourages us to go beyond our ‘comfort’ zone….to stretch a little further, to hold a little longer, to breathe a little deeper, we benefit from each small improvement. Over the months and years of physical movement, that adds up to a huge improvement in overall health. Positive, obvious changes are made in our bodies when we increase movement and become intelligent about our nutritional intake. Does your lack of flexibility keep you from joining a yoga class? One of the main reasons I began yoga, was to increase my flexibility. My inflexibility caused many lower back issues. Through yoga I learned poses (asanas) designed to gradually open up the hips, hamstrings and glut muscles. And I learned to relax and breathe with the practice, rather than push through and force my muscles to lengthen. The truth is that when I forced a stretch, my muscles would contract tighter upon release, than they were originally. Over time, flexibility increased and lower back pain decreased. We simply accept where we are, beginning at our personal starting point and progress from there. It’s a waste of time to be angry with ourselves for our lack of flexibility. It’s selfabuse to force our bodies into positions we are not yet ready for. And yet, anger and force are very common in the fitness world. Yoga teaches support, consistency and patience. Do you have time for everything but exercise? Let’s go back to simply increasing movement. Make the decision today to move more. You don’t have to set aside an hour every day to perform a particular routine. Choose to stand when you could sit. While you are standing, gently sway from side to side. This takes no time away from your schedule. If you are at a desk, drop a pencil and bend over to pick it up…several times if you like. Rather than call or text someone who is in another room of your building or home, get up and walk to where they are and have your conversation. Park in the back of a parking lot, away from the entrance of a store, and sprint or walk briskly to the entrance. It’s a huge waste of time to drive around and around looking for a spot close to the front door. You could be using your energy rather than your car’s gas…cheaper and healthier. When watching TV with the family, or alone, get on the floor and do some simple stretches. Exaggerate the movement of daily routines, like drying off after a shower. Yoga encourages organic movement. Does embarrassment keep you away from class or from learning a practice you can do at home? You are your most harsh critic. Selfacceptance is paramount to change. Look in the mirror and say to yourself; this is me. This is the physical result of an accumulation of genetics and my personal thoughts, behaviors and activities. In this moment, I can be no different than I am. I can be no taller than I am, because of genetics. I cannot weigh less or more than I do because of genetics and behavior. My skin tone can be no different than it is because of genetics, age and exposure. I accept
myself just as I am. It’s impossible to be different in this moment. Some things we can’t change and some we can. Decide what you want to change about your body. Do you want more energy? Do you want to tone muscle? Do you want to lose or gain weight? Do you want to eat healthier? Then make a decision to change one behavior. You will see and feel the results of change over time. This encourages you to make another change and then another. Remember you have the rest of your life to create change. Yoga encourages self-respect and self-acceptance. Are you concerned about yoga teachings interfering with your religious practice? I have had over 1000 hours of yoga training and not once has a spiritual precept ever offended or contradicted my basic religious beliefs. The philosophical tidbits taught in yoga come from a foundation of acceptance, compassion and individual freedom. If your religion does not accept respect for life, love of life, or physical and mental health and well-being then your religion may be against yoga. A great way to begin to make changes is with the breath. The next time you find yourself stressed, self-critical, or anything but accepting of what is in front of you, simply begin to breathe. First, get comfortable and take some long slow deep breaths through your nose. When you have inhaled as much air as you can, bring in just a little bit more. When you have exhaled as much air as you can, allow a little more to leave. This practice will eventually increase lung capacity. Now count slowly, one, two, three, as you inhale. Perhaps you got to four on a full inhale, perhaps you got to seven. It doesn’t matter. Whatever number you arrived at, let your exhale be two counts longer. Count the next inhale, again the number doesn’t matter, simply let each exhale be two counts longer than each inhale. Do this for about 5 minutes, staying focused on counting and breathing. When the exercise is complete, let go of effort and breathe naturally. Feel how you feel. Notice any changes in your state of being. This is a great practice for relieving stress, accepting the moment, and quieting a busy mind. I do this when I am having difficulty going to sleep, or returning to sleep upon waking in the middle of the night. You can increase to 10 minutes if you have time, or if you are on the run, takes just a few focused breaths. A relaxed body and mind is a healthy body and mind. I hope I have addressed some of the most common concerns folks have about beginning a yoga practice. I am always open to further conversations about this topic. Do not hesitate to call and ask questions or voice concerns. I am happy to listen and to share perspectives. If you are interested in joining one of my classes or in scheduling private sessions, please feel free to call me at 623-0922. My classes will be offered throughout the summer on Tuesday and Thursday mornings at 9 am, please call me for the locations. Be sure to consult your physician before beginning any exercise program.

Children & UV Protection
Though it’s important for adults to protect their eyes from the sun, over time, our eyes allow less and less UV light to penetrate them. The eyes of a 10 year child allow 75% of UV light to pass through them to inner structures, while a 25 year old person’s eyes only allow 10% of the UV light through. Since approximately 80% of UV damage from the sun to our eyes occurs before we turn 18 years old, it’s very important that children’s eyes are shaded by wearing a wide-brimmed hat and sunglasses, and staying in shaded areas when playing outside. Limit screen time & Go Play Outside!
You shouldn’t prevent your kids from playing outdoors, however. More and more studies are showing that spending time outdoors can reduce children’s risk of developing nearsightedness (blurred vision in the distance). Instead of allowing them to pass their summer days playing staring at a screen (smart phone, computer, video games, and smart phones), encourage them to go outside to play. It’s not only good for their eye health, but keeping them active will benefit their general health as well. Adults should also take a break from staring at the screen all day and get outside occasionally to prevent eyestrain. So, to keep your eyes healthy for many years to come, be sure to protect them when spending time out in the sun this summer, and year-round.

Riding for a Cure July
26
Greetings everyone! Hope you're all enjoying summer. The 2014 Relay for Life season is in full swing, so it's time to announce this year's Riding for the Cure fundraising effort. The last two years were tremendously successful (thank you all again!) with cross- country rides along Interstate 80. This year, much to my wife's enormous relief, I'm taking a break from the freeway. However, what this ride lacks in risk will be made up for in grueling difficulty; and I'm giving you, the donors, the opportunity to decide my fate. The focus of the ride will be Winnemucca cyclist's climbing mecca, Winnemucca Mountain. The plan goes like this: the basic ride will start under the bridge at the intersection of Giroux and Melarkey and from there I will ride to the summit of Winnemucca Mountain, turn around and descend back down to the highway, turn around again and make three more consecutive ascent/ descents with the last descent taking me all the way back to the start and on my way to celebrate with food and refreshment. That's four trips up and down the mountain for a total of 59 miles with 9,000 vertical feet of climbing. That is the basic plan for achieving a fundraising level of $1- $499. Here's where you get the opportunity to make things more interesting. At the $500 - $749 level of fundraising, I will make five trips up and down the mountain, totaling 72 miles and 11,200 vertical feet of climbing. If donations reach $750 - $1,000, I will attempt six consecutive climbs with a total distance of 85 miles and 13,300 vertical feet. And if by chance my fundraising hits the $1000 mark, I'll make the first of the six climbs
by mountain bike up the front side of the mountain, just to spice things up a bit. As always, the invitation is open for anyone to join me. You don't have to match my level of insanity. You can participate at your own comfort/ fitness level; whether it's one ascent to the top or half way. Or if you'd just like to stop by during the ride to say hello and offer encouragement, that would be great as well. Also, everyone is welcome to help us celebrate (if I survive) the finish. Just be sure you like my page: www.facebook. com/ridingforethecure and follow the posts and progress updates from this page so you know when to be there. You will also find a link there to my Relay for Life fundraising page if you would like to donate to this event. If you don’t have Facebook, you can go to www.ridingforthecure.com where there is a direct link to my Relay for Life fundraising page or send an email to relayrider@gmail. com . All money raised goes directly to The American Cancer Society who in turn uses that money to fund cutting edge cancer treatments, provide support and resources to cancer patients and caregivers, and promote cancer prevention and awareness across the country. The ride will take place July 26th and kicks off at 7:00 a.m. Donations to determine the final scope of the ride need to be received by 7:00 a.m. the day of the ride. Donations received after this time are greatly appreciated, but will have no effect on the outcome of the ride. Please feel free to get involved and spread the word. As always, thank you for your support, and watch for bicycles on the road!
