Green Bean, Snap Pea, and Pesto Salad with Cherry Tomatoes and Fresh Mozzarella Serves 6 For impromptu entertaining on a summer evening, this is your salad, your side dish, your everything. So just throw some steaks on the grill and you’re all set. Or even better, start a beer-can chicken roasting on the grill while you make this salad. It will take you a little bit of time to prep the vegetables, but prepared pesto (preferably a good one from the farmers’ market or one made locally) is a time-saver here.
Ingredients: Kosher salt, 8 oz./225 g yellow wax beans, trimmed and halved
You may not be in the habit of using whole or torn herb leaves in a salad, but with basil, in particular, larger pieces give you a welcome burst of flavor without the bitterness that comes when basil is chopped too much (especially with a dull knife).
lengthwise 8 oz./225 g sugar snap peas, tails removed 8 oz./225 g small red and yellow cherry tomatoes or grape tomatoes, halved 6 oz./170 g mini-mozzarella balls (1in/2.5 cm), quartered 1/4 cup/60 ml prepared basil pesto 1 tsp. white balsamic vinegar 1/2 tsp. fresh lemon juice, and more if needed 1 Tbsp. extra-virgin olive oil 1/3 cup/45 g toasted pine nuts 20 to 30 large fresh basil leaves, torn in smaller pieces Freshly ground black pepper 1. Fill a large saucepan two-thirds full with water and add 2 tsp. salt. Arrange a few layers of dish towels on a work surface or a sheet pan to drain the beans and peas. Add the beans to the boiling water and begin timing immediately. Boil until the beans are tender to the bite, 4 to 8 m inutes. (Begin tasting after 4 minutes;

the timing varies greatly, depending on the age of the beans and how quickly your burner returns the water to a boil.) Use tongs to lift the beans out of the water and spread them out on the towels to let them cool and to let excess moisture evaporate. Put the snap peas in the boiling water and cook until they’re bright green and just slightly softened, about 2 minutes. Drain on towels and let cool. 2. Season both the tomatoes and the mozzarella with a pinch or two of salt. Put them in a large mixing bowl and add the wax beans, snap peas, and 3/4 tsp. salt. In a small bowl, whisk together the pesto, vinegar, 1/2 tsp. lemon juice, and olive oil. Pour over the vegetables and mix and toss well. Add the pine nuts and basil and season with several grinds of fresh pepper. Toss well and let the vegetables sit for 5 to 10 minutes. Toss again and taste, adding more salt, pepper, or lemon juice as needed.
Summer Food Safety 1. On warm days, food should not be left out for more than two hours. 2. On days above 90F, do not leave food out more than one hour. 3. Avoid cross-contamination while preparing the food. 4. Pack raw meats and poultry separately from fresh or cooked foods.

Colorful Chinese Kick-Slaw Serves 4 or 5 It’s not only refreshing but colorful, too, with the red cabbage, orange carrots, and green snow peas. The flavors hold up well, so it could be made ahead. But I think the texture suffers some, so I recommend assembling it pretty close to serving time. Put this out for any summer buffet, or use it as a bed for grilled flank steak or swordfish.
Ingredients: 1/2 small head red cabbage (about 9 oz/255 g)cored and thinly
I call this kick-slaw because it’s got kicky flavors – ginger, garlic, lime, and sesame.
sliced 5 oz./140 g snow peas, tails trimmed, each cut sharply on a diagonal into 3 pieces 4 oz./115 g carrots, shredded (use the large holes of a box grater) 1/2 tsp. kosher salt 2 tsp. minced garlic 1 Tbsp. finely chopped fresh ginger 1 Tbsp. fresh lime juice 2 Tbsp. orange juice 2-1/2 Tbsp. hoisin sauce 1 Tbsp. soy sauce 1/2 tsp. sesame oil 1-1/2 Tbsp. peanut oil 1/4 cup/15 g chopped fresh cilantro 1. In a large mixing bowl, combine the cabbage, snow peas, and carrots. Sprinkle with the salt and mix well. 2. In a small bowl, combine the garlic, ginger, lime juice, orange juice, hoisin sauce, soy sauce, sesame oil, and peanut oil. Mix well and pour over the cabbage mixture. Mix thoroughly, add the cilantro, and mix again. Serve at room temperature.
Conquering the Cabbage It’s a terrific, versatile vegetable and one head of cabbage produces a generous quantity of whatever dish it becomes. But, tackling a cabbage head sometimes feels daunting – it’s a large, hard vegetable and rolls around easily. Conquer the cabbage by cutting it in half first, then carving out the hard core. Further tame it into perfect coleslaw shreds in one of four ways:

There are few things we love more than our own comfy bed. And though it’s a place where we spend a huge amount of time, very rarely do we give it much thought. Sure, we focus on things like silky soft sheets, sturdy mattresses that meet our comfort criteria and cool headboards, but there are some really interesting facts about this room in our home. Read on to find out our favorites.

Directions: Preheat oven to 350F. Spray two 8-by-4-inch loaf pans with floured cooking spray; set aside. In a large bowl combine the eggs, coconut oil, buttermilk, sugars, vanilla, and whisk to combine. Add the flour, baking powder, baking soda, nutmeg, optional salt, and stir to just incorporate; don't over mix. Stir in bananas. Stir in pineapple (if using frozen, just add it frozen, no need to thaw it first. If using fresh or canned, make sure it's well-drained or it could waterdown the batter). Pour batter into prepared pans and bake for about 45 minutes, or until top is golden and set, a toothpick inserted in the center comes out mostly clean (banana bread is gooey and it may not come out perfectly clean). Allow bread to cool in pan for about 15 minutes before removing and transferring to a wire rack to finish cooling.

What is
Comfrey?
Contr i b u ted by yo u r fr i ends at N at u res Corner
Words are revealing, and when you look at this herb’s many names, you can see what practical uses people have made of it. The common name Comfrey stems from the Latin word conferta, meaning to unite. Its official botanical name is Symphytum officinale – Symphytum means to “make grow together” and officinale refers to a monastery storeroom for botanical remedies, the pharmacy of its day. Comfrey has had popular names such as: Knitback, Bruisewort, Knitbone, and Boneset. Comfrey is sometimes used on the skin to treat wounds and reduce inflammation from sprains and broken bones. Comfrey roots and leaves contain allantoin, a substance that helps new skin cells grow, along with other substances that reduce inflammation and keep skin healthy. Comfrey ointments have been used to heal bruises as well as pulled muscles and ligaments, fractures, sprains, strains, and osteoarthritis. In the past, comfrey was also used to treat stomach problems. However, it has toxic substances called pyrrolizidine alkaloids that damage the liver and can lead to death. Comfrey is no longer sold in the U.S., except in creams or ointments. The United Kingdom, Australia, Canada, and Germany also have banned the sale of oral products containing comfrey. The dangerous substances in comfrey are also absorbed through the skin, so harmful amounts may build up in the body. Be careful if you use an ointment containing comfrey and never use it on broken skin. Always consult with your physician prior to using any supplement or herb when treating medical conditions.

Some fun facts about Comfrey • Travelers in the Middle Ages carried comfrey as a talisman to protect them and used it in magic spells to attract money.
• Early American settlers carried precious comfrey seeds with them from Europe-only to discover the plant already growing in their new land.
• Comfrey roots have been used to dye clothes brown, to tan leather, and to spin Angora fleece.
• In the 1800s, Europeans planted comfrey to attract bees, birds and butterflies to gardens. It was also widely used as fodder to make animals strong and resilient.
• A healthy comfrey plant will live more than two decades. • Comfrey is richer in nitrogen and phosphorus than many commercial fertilizers. It is used by many organic gardeners to fertilize crops, to break down foods in compost heaps, and as mulch.
• Native Americans used comfrey leaves as pouches. When they folded a leaf, its small hairs stuck together like Velcro!

Buying selling a little information about Contingencies
Contributed by Janet Jacaway, Real Estate Agent for Vision
Buying and selling a home at the same time is a daunting task. Many factors play into a contingency, and the experience has nightmare potential. Your dream home may be more affordable, but unloading your current one may be harder. In a perfect world, you would coordinate the closings for both properties on the same day, providing a seamless transition from your old home to the new one. But the real world tends to be messier than that. While taking out another mortgage remains an option, shouldering two mortgages is harder now than it used to be. Not only is it harder to get approved for a second mortgage, but your home may take six or more months to sell.
For more help on buying or selling your home, give me a call. I am more than happy to help! I have access to all the listings in Winnemucca and can show you any property—regardless of whose sign is in the yard. Come experience what it feels like to have a professional on your side! Here are some coping strategies to help ease the transition. If you sell your home first … The fear of selling your home before you've purchased a new one is obvious: You're homeless. But experts agree that this scenario is more attractive than the alternative, which is to buy a new home before your current one has sold. The advantage is that you have the cash to buy your new house. In the meantime, however, you might be considering moving into your moving boxes. Some better alternatives:
1. Rent your house In many short-term situations, the new homeowners will allow you to rent back your old home provided you cover their costs — particularly if you've already signed a contract to purchase another home. The process: Draw up a contract that includes a provision allowing you to stay put for a set period of time — say, 30 days. In exchange, you agree to pay the price of the new mortgage, property taxes, utilities and homeowners insurance. Keep in mind, this may be a whole lot more expensive than what you're used to. Assuming your home has appreciated nicely in value, the new owner's expenses are probably much higher than yours were.
2. Move in with loved ones If you need more than a month, you might need to move out of your old home and in with parents, a sibling or a friend. If that's not an option, consider a temporary apartment or the local Best Western.
If you buy your new home first … No one relishes the idea of owning two primary residences and doubling up on costs. In fact, it even makes the mortgage companies uneasy, which is why you'll need to qualify for both loans. If you don't qualify, you'll have to sell your old home first. Provided you can qualify, here are ways to help you come up with the down payment on the new home before you have the proceeds from the old one.
1. Tap your home equity The cheapest way to come up with a down payment for your new home is to borrow money via a home-equity line of credit. Depending on your credit score, your interest rate should be anywhere from half a point to one percentage point above the prime rate. Even better, the interest is tax-deductible up to $100,000. Once you sell the home, you simply pay off the loan.
2. Consider a bridge loan If you can't tap the equity in your home, you could take out a bridge loan, also known as gap financing. It allows you to borrow money for a down payment on the new home based on the amount of equity you have in your first house.
3. Borrow from your 401(k) If you need only a little bit of money for a down payment, or want to supplement a homeequity line of credit, you could borrow from your 401(k). Most employers allow workers to borrow either 50% of their vested balance or $50,000, whichever is less. You then have the next five to 10 years, depending on your company's rules, to repay the loan.

Sometimes in life we make excuses to not work out, not eat healthy, not get enough sleep, not go to the doctor… but why? Let’s rethink those excuses and focus on why we should care about health and our bodies. It’s not about having time, it’s about making time. You’re valued. Your loved ones adore you! No matter how many or few, near or far, they cherish you and need you around for a long time. You deserve health. You deserve to feel your best, to have energy, be happy and move easier. You truly deserve to live the incredible life you’ve been blessed with. You can. Health is about being better than you used to be. Your fitness is all
mental; your body won’t go where your mind doesn’t push it. So push yourself and you’ll be amazed at what you’ll achieve. You have time. One hour is roughly 4% of your day. So work smarter, not harder and get up early enough to take care of yourself each day for that jog, gym class or stroll around the park. It’s not about having time, it’s about making time. You’re in charge. There are many aspects of life that are far beyond our reach, out of our control. But the way you treat your body, the way you care for yourself, you can control that. “Life is 10% what happens to you and 90% how you react to it.” – Charles R. Swindoll
Why Should You Care About Your Health?
44
august 2014 | everythingwinnemucca.com
You’re an example. So much about parenting, leading and living is about setting the example. If you want to inspire others to do good, be healthy and enjoy life, then go out there and do the same! You’ll enjoy it. It’s amazing how much feeling goes into your health. Taking care of you is the gift that keeps on giving. By eating right you’ll feel great, by sleeping enough you’ll feel energetic and through exercise you’ll feel empowered and happy. In the end, we’re all blessed. Don’t take for granted the opportunity you have to live the most incredible life. We’re here to remind you of this because we value you, we know you deserve it, we know you can and we know your best life is just around the corner!

Aqua
Yoga
Aqua Yoga? Why in the world would someone want to practice yoga in the water? There are actually many benefits to an aquatic yoga practice. In fact, the same benefits which are included in a regular ‘yoga on the mat practice’ are included in a water practice. Yoga improves overall physical, mental, emotional and spiritual health both in the water and on the mat.
Let’s begin with the breath. We have learned from both Western and Eastern medicine that proper breathing techniques can have a positive effect on our physical, mental and emotional health and well-being. In yoga we learn to expand (the belly goes out) on the inhale and contract (the belly comes in) on the exhale. This is called diaphragmatic breathing. We use the diaphragm as our main respiratory muscle. Improper breathing can actually cause pain in the muscles which are not designed to assist in normal breathing. These include lower back, neck, pectoral and jaw muscles. A yoga practice focuses on deep breathing, which encourages relaxation of mind, body and spirit. It also uses proper diaphragmatic breathing, which focuses on using only the muscles designed for regular breathing. Thus there is a greater opportunity to keep our secondary breathing muscles healthy and pain free. A breathing practice in the pool actually gives us an additional benefit. The water acts as a natural resistance to our muscles while breathing. The abdominals must work harder, thereby getting an additional workout as the diaphragm becomes stronger in the process for the same reason. Water is a wonderful support for joints and muscles. Therefore an aquatic yoga practice places less stress on the muscles and joints. The water’s buoyancy may create a situation where a person can do poses in the water that they are unable to do on the mat. The resistance of the water also helps to create more strength than on the mat in some poses.
There is a wonderful atmosphere of playfulness that naturally occurs as we learn to maneuver in the water. It’s just plain fun to move in and out of poses with the added element of water to our practice. Laughter releases our body’s chemicals that support a positive outlook on life, as well as giving us a sense of community that we get from group play. Here are a few poses to do in the water. Each of these is designed to increase strength, flexibility, relaxation and stamina. I invite you to try them out for yourselves if you are familiar with yoga. If not, it’s best to consult a trained yoga instructor before attempting them. Proper alignment and breathing techniques will prevent injury.
The Mountan Pose (Tadasana): Begin by standing up in the pool, feet hip width apart. Find your connection to the earth as you push gently down through your tailbone and feet. Engage the muscles in your legs by hugging your thigh bones and pelvis with those muscles. Stand firm, yet not ridged as you lift up through your spine, all the way to the base of the skull. Roll your shoulders back and drop the scapula down towards your waist. Arms are gently dropped to each side, palms open. Chin is parallel to the water. Take 5 to 10 deep breaths from the diaphragm (as described in the second paragraph). Call in your energy and simply feel how you are in your body.
Sidebend: From here you can lift your arms overhead and bend to each side, being careful to bend at the waist directly over your hip. Keep your legs strong, as in Tadasana. Do not drop your chin forward, but keep your head back and in alignment with your spine.
Some research supports the idea that a higher percentage of range of motion is gained by doing appropriate exercises in the water rather than on land. Poses may be held longer with the additional support of the water. Therefore greater flexibility may be gained in the water. Water has a naturally soothing effect on people. It’s both nurturing and inviting. Since relaxation is key in reducing our reaction to the stressors in our lives, water yoga improves our ability to reduce the negative effect of stress.

Leg Stretch:
Backbend:
Walk to the side of the pool and facing that side, lift one leg up in front of you and press your foot onto the side with both legs straight. Stand up tall and then, from your hip joints, gently bend forward and lean towards your lifted leg. Reach your arms out to hold your leg. Take 5 to 10 breaths, gently moving deeper into the pose as your breathe. Repeat with other leg.
Turn around facing away from the wall of the pool. Bend your knees and lean your head back on the edge of the pool. Grab the side of the pool with a hand on either side of your face. Now press into your feet and attempt to straighten out your arms. Expand your chest upward as you arch back, looking towards the sky. Take 5 to 10 deep breaths in the pose, and relax.
Knee to Chest (Apanasana):
Savasana:
Standing upright as in Tadasana, bend one knee and bring your bent leg up as high as your can towards your chest. Place both hands around the bent knee and squeeze your leg towards your torso. If you are able to do so, place your hands under your heel and lift your bent leg up and in towards your chest at the same time. Be sure to keep the spine upright. Do not bend towards the bent leg, bring the leg to you. Take 5 to 10 deep breaths and repeat on the other side.
If you can float on your back with no assistance, do so as you relax all your muscles. Place a noodle under your feet and shoulders if necessary and completely relax. Let the water rock you gently. Keep your focus on your breath and your body. If your mind takes you into story or drama, simply come back to your focus and breathe. Relax in this pose for about 5 minutes, giving your body, mind and spirit a chance to integrate your asana practice.
Forward Fold (Uttanasana): Face the side of the pool and bring both legs up over the edge of the pool between your hands, which are holding onto the side of the pool. Now slowly straighten both legs up in the air. As you do so, pull your torso towards those legs with your arms. Keep your spine long as your bend through the hip joints. We don’t want to encourage a rounded upper back. Take 5 to 10 breaths in this pose. Lengthen on your inhale and move closer towards your legs on your exhale.
Abdominal Strengthener: From the Forward Fold, simply bend your knees over the side of the pools edge. Bring your hands behind your head and relax your elbows back. On the inhale lengthen your spine back on the water and gaze upward. As your exhale contract the abdominal muscles and bring your torso towards your bent legs. Be sure to keep the elbows dropped back and relaxed. This will engage your core muscles, rather than your arms, face and shoulders. Repeat 5 to 10 times.
I hope you find the information in this article beneficial. You can adapt any stretches that you are familiar with to the water if you remember to stay within your unique abilities and strengths. I tell my students to come to their edge in any asana practice, but don’t cross it until your body does so without struggle. Consult your physician before beginning any exercise program. My ongoing yoga classes are Tues. and Thurs. at 9 am. If you would like more information on my yoga classes, or you would like to experience a private stress management, hypnotherapy, or reiki session, please call me at 775 623-0922.

When school resumes in August, educators, parents, and students will strive to improve reading levels. According to the Common Core Curriculum, “Students will be challenged and asked questions that push them to refer back to what they’ve read.” Yet, according to Ida Chung, OD, FCOVD, and President of the College of Optometrists in Vision Development (COVD),“students who have eye coordination and eye movement problems struggle to read and have trouble remembering what they read which will make this task nearly impossible. That’s why we observe August as International Children’s Vision and Learning Month , to help educate the public on this vital issue.” Getting to the root of a child’s reading struggles can be difficult. Parents typically see multiple experts often starting with the basics, which includes an eye exam.
It makes it tough for parents when they suspect that their child has a vision problem yet the experts say nothing is wrong. For example, Jeremy Doernemann was a good student and got good grades; his problem was he couldn’t get anything done in school. His mother, Donna, explains, “First and Second grade were not as bad as Third and Fourth Grade. That is when he really struggled. I dreaded coming home from work, because I knew the 'Homework Hell' would begin… I asked the Pediatric Ophthalmologist several times if Jeremy’s struggles at school were related to his eye problems. He said ‘absolutely not.’ He said it had nothing to do with his ability to learn and concentrate. I didn’t agree with him but I did not know what to do and who to turn to.” Jill Anderson ran into a similar situation. Her daughter Morgan avoided reading and struggled with reading
comprehension. In an effort to find out why her daughter struggled, Mrs. Anderson states, “I took Jill to a general eye doctor who told us her vision was fine and she didn’t need any help.” Fortunately for both Jeremy and Morgan, their parents found out about optometric vision therapy and now they no longer struggle with reading and schoolwork. Mrs. Doernemann shares, “Vision Therapy changed my son’s life. There are no more tears! Jeremy is able to work faster on homework with better concentration. I no longer hear him say, ‘I CAN’T DO IT!’” Nine months of tutoring at a prominent learning center and Morgan had no major improvements. After doing optometric vision therapy, her mother proudly states, “Reading is much easier for her. Morgan’s grades have improved and her confidence has greatly improved.”
Taben Randall was one year behind in math and writing. Taben was very fortunate that the school nurse actually discovered that his right eye did not track smoothly. His teacher had heard of vision therapy and provided some contacts for his parents to pursue. Taben’s father, Timothy Randall, is pleased to report that testing, on the Woodcock Johnson III test, before and after vision therapy shows that over the course of only 18 months, “Reading gained 4 grade equivalents, Math gained 3 grade equivalents, and Writing gained 3 grade equivalents." “It is our hope that this year’s observance of International Children’s Vision and Learning month brings greater awareness of the visual link to reading and learning . A lot of children and their families are struggling unnecessarily,” states Dr. Chung; “When a vision problem is at the root of a child’s difficulties with reading, optometric vision therapy can make all the difference.”

Imagine the horror and outrage if 95 passengers died in a plane crash every day, 365 days a year. That is the impact of suicide on our families and communities, as 95 people per day die by suicide in the Unites States. Nevada has the 5th highest rate in the nation at 18.4/100,000 and suicide is the 6th leading cause of death for Nevadans. http://dhhs.nv.gov/Suicide The Nevada Coalition for Suicide Prevention (NCSP) invites you to join us on Saturday September 13, 2014 for Winnemucca’s 6th Annual Walk in Memory Walk for Hope. The purpose of the walk is to connect with one another in our local community as well as being able to connect to the other communities statewide in preventing suicide. The walk helps connect one another to others who have lost a loved one to suicide in reducing isolation and providing support and validation for the feelings survivors do experience. The walk provides a safe and comfortable environment where participants can talk about their feelings and the issues suicide has brought to their lives.
For more information please contact the Walk Coordinator, Alaine Nye at 775-623-9003 or fcaahumboldt@ gmail.com. National Suicide Prevention Lifeline, With Help Comes Hope 1-800-273-TALK www.suicidepreventionlifeline.org
By connecting and talking to one another we can learn new ways of coping with our situation by hearing how others have coped with their loss as well as to come to a sense of hope that we will survive our loss too. The Suicide Prevention Community Walk will be taking place on this date in nine communities statewide including Douglas County, Elko, Henderson/Las Vegas, Pahrump, Pyramid Lake, Mesquite, Reno, Yerington, and Winnemucca. The Nevada Coalition for Suicide Prevention is dedicated to partnering and collaborating with local and state individuals and organizations for the development and implementation of evidence based suicide prevention, intervention, and postvention strategies and programs in the State of Nevada. The Frontier Community Action Agency (FCAA) has partnered with the NCSP in coordinating the walk here in Winnemucca, as our community does have a great need in supporting those survivors of suicide loss. This year marks Winnemucca’s 6th Annual "Walk in Memory - Walk for Hope" community suicide prevention awareness walk which will take place on Saturday, September 13, 2014; registration will begin at 8:00 a.m. at the Winnemucca Community Garden, 151 W. McArthur Ave. Winnemucca, NV 89445. Each person walking is asked to complete a registration form. If you are unable to participate in the walk here in Winnemucca, you can register on line by clicking on the community you want to participate in. Walk participants are asked to donate $20 per individual, which includes a t-shirt connecting us to one another as we support and encourage one another throughout the walk.
All walkers are welcome and any donation is gratefully accepted, as all the contributions go to the Nevada Coalition for Suicide Prevention to advance its mission. To register online or for more information on the individual communities please visit the website www.nvsuicideprevention.org. Complete the registration form and then complete the PayPal feature as if you do not complete the PayPal feature you will not be considered preregistered. Participants can also print out the registration PDF form, complete, and either mail it in to the address on the form or bring it with you to the walk in your community. To participate on a team, go to the drop down box and select a team already there or enter the name of a team in the “new team” area. The walk coordinator for Winnemucca is the FCAA’s Program Director Alaine Kliewer-Nye who is a survivor of suicide as well. Kliewer-Nye lost her boyfriend to suicide in 2004, a great uncle in 2005, and in 2006 she lost a co-worker. She is passionate because of the loved ones she has lost to suicide as well as other friends and families who have been affected in our local community over the past 8 years since her return back home. Kliewer-Nye has training and experience in coping with suicide loss and has been mentored by Jan Bassier, Misty Vaughan Allen, and Linda Flatt with the NCSP. This walk is held annually to remember those who have died from suicide and also to raise awareness and funds to support local prevention efforts. We hope to see you September 13, 2014. If you are unable to donate $20 for a t-shirt, wear purple and join us to increase awareness and prevent other suicides from taking place.
