It is doubtful that anyone enjoys having medical tests. Even less enjoyable is having to go to the Emergency Room or being admitted to a hospital. However, residents of Humboldt County and the surrounding area are very lucky to have Humboldt General Hospital available to them. I was recently scheduled for a mammogram, blood tests, and later, unfortunately, had to make an unscheduled trip to the Emergency Room, which resulted in an overnight stay at the hospital. My experience during each of these events was as pleasant as I believe could be possible under the circumstances. I arrived for the mammogram and blood draw a little before my appointment. I was pleasantly greeted at the front counter and had a short wait before being entered into the system. While waiting, I noted that the waiting area was comfortable and various reading materials were provided. Since it was around 8 am, several hospital staff members passed by where I was seated. Almost every single one of them smiled and greeted me, as well as sharing greetings with the volunteer at the front desk. The procedures were performed efficiently,
with very little waiting involved. The staff was very gentle, and worked together to make my experience as quick and pleasant as possible. Less than a month after my scheduled tests, I was involved in an accident and was taken to Humboldt General’s Emergency Room. I was incapacitated and don’t remember a lot of what happened at the ER. I do know that if the ER had not been available, I would have had to be transported elsewhere, which would have been very inconvenient for my family, as well as costly. I had to spend the night in the hospital. Again, I don’t remember a lot of what happened, but I do remember receiving a nice breakfast, and the staff making all the arrangements for me to see my doctor for a follow-up visit. I know there are many who complain about our hospital. I have to say that my experiences at Humboldt General both as a patient and as a family member of patients in both the ER and the maternity wing have been pleasant. My family and I have been treated with respect and kindness, and have received exemplary care at Humboldt General, and are pleased to have such quality care available to us locally. --Anonymous

A handcrafted gift from the kitchen is enjoyable to make and even better to receive. Present your love of the kitchen with sweet or savory treats that simply, yet elegantly, join in this season of giving and sharing. This often quoted phrase conjures up many nostalgic images of the season -- children, dancing, and anticipation. But have you ever wondered what a sugarplum is? Popular in the Victorian era, sugarplums are a sweet delicacy of dried fruits, nuts, and wonderful spices. Finely chopped, the ingredients from a stiff paste, perfect for rolling and molding into tiny plum-like shapes. A coating in sanding sugar adds a touch of holiday glitter and a whole clove "stem" completes the charming little morsels. There are countless recipes for sugarplums, and understandably so, for they have been around since the Middle Ages. This version is loaded with spices and dried fruit, shaped to resemble frosty little plums with clove "stems." I don't know how the Victorians managed to make sugarplums, but I think a food processor is definitely a must of modern-day sugarplum projects. Depending on the size of the processor, it may be necessary to grind the sugarplum mixture in separate batches.
"While visions of sugarplums danced in their heads" Pistachio Sugarplums 4 cups (about 16 ounces) chopped pitted dates 2-1/3 cups coarsely chopped pistachio nuts 1 cup coarsely chopped dried apricots 1 cup coarsely chopped dried figs 1/3 cup brandy 4 tablespoons apricot preserves 3 tablespoons dried orange peel 2 teaspoons ground ginger 1 teaspoon ground cloves 2 teaspoons ground mace 1-1/2 teaspoons ground cinnamon 100 whole cloves for the"stems" 1-1/2 cups sanding sugar

1. Place all the ingredients except the whole cloves and the sanding sugar in a food processor and rapidly pulse the machine on and off for 1 to 2 minutes, or until the mixture is every ground into a doughy paste and begins to pull away from the sides of the work bowl. Empty the mixture onto a clean work surface and knead it by hand for 2 minutes to completely blend all the ingredients. Wrap the sugarplum mixture tightly in plastic wrap and refrigerate it for 2 hours or overnight.

Place teaspoon-sized scoops of the chilled sugarplum mixture between your palms. Roll the scoops into smooth ovoid shapes (to resemble small plums). Use a wooden skewer or the back of a dinner knife to impress a cleft along the length of each plum shape. Roll the plums in the sanding sugar and insert a whole clove into the fatter end of each sugarplum for a "stem."

3. Lay the sugarplums out on a baking sheet lined with parchment and allow them to firm up in a cool, dry place overnight. Rolling each takes a while, but it‚ the perfect task for enlisting others and sharing quality kitchen time this season. FOR EVENLY SIZED SUGARPLUMS, use a culinary scale to weigh out equal portions. We measured out 17 grams of mix per plum. This size fit well in mini paper liners, and comprised a perfect three-bite experience.

Makes approximately 36 truffles. Chocolate is always a perfect gift. Transform your favorite chocolate into melt-in-your-mouth truffles with these easy steps:
1. WARM 1 C of heavy cream to just simmering point. 2. ADD 16 oz. of your favorite dark chocolate that has been broken into small pieces.
3. STIR and mix well. The mixture should be glossy and smooth.
4. POUR into a small dish that allows the mixture to be about 3/4 - 1" in thickness.
5. CHILL in the refrigerator until firm; about 1 hour. 6. CUT the truffle mixture into even sized cubes and roll into balls, or form balls with a small scoop.
7. WHILE still warm from the heat of your hands, roll in sanding sugar, cocoa powder, cacao nibs, or a favorite coating of your own.
8. PLACE in mini-paper liners, and chill until ready to assemble for giving.

Whip the egg white with a whisk until foamy. 3. Add the brown sugar and salt to the melted butter. 4. Add the sugar and butter mixture to the foamy egg white. Mix well. 5. Add the pecans and stir to coat. 6. Spread the coated pecans on a parchment-lined baking sheet in a single layer. 7. Place in a preheated 250ºF oven for 60 minutes, stirring every 10 minutes. 8. Remove from the oven and allow to cool. The nuts will crisp further as they cool. 9. Package in an airtight container.

Include a decorative flap and tie the package with a decorative ribbon. 1. Trace the pattern onto fancy paper, or cover cardstock with wrapping paper. 2. Score the box on the indicated dotted lines with the blunt edge of a kitchen knife for neat folding. 3. Fold on the scored lines, fill, and secure the little pillow package with a ribbon.
1 teaspoon cognac 1 teaspoon baking soda 1. Using 3 tablespoons of the butter, heavily coat the bottom of a standard sheet pan (11 x 17 inches) and set it aside. 2. Combine the nuts, sugar, corn syrup, and salt in a microwave-safe bowl. Microwave the mixture on High for 3 minutes, pause the oven to stir the mixture well, and microwave on High for 3 minutes more. Pause the oven again, stir the mixture once more, and microwave on High for another minute. 3. Add the remaining 1 tablespoon butter to the brittle mixture without stirring and microwave on High for 2-1/2 minutes more. Remove the bowl from the microwave and gently stir in the cognac and baking soda, taking care because the boiling mixture may foam and sputter when you add these ingredients. Quickly pour the hot brittle onto the buttered sheet pan. Working very quickly, pick up the sheet pan with oven mitts and tilt the pan back and forth and side-to-side to spread the molten brittle into as thin a layer as possible over the sheet pan before it cools and hardens. 4. Cool the pan on a rack for at least 1 hour. Break the brittle by hand into generous bite-sized pieces. Store in an airtight container until the pillow box wrapping is completed and you are ready to assemble the gift.

Tortilla Factory Soup Caldo de Queso (cheese soup) Ingredients: - 3-4 Roma tomatoes (chopped)
- 1 tsp. Mexican oregano (available at Tortilla Factory)
- 1/2 onion (chopped)
- 1 pkg chipotle tortillas from Tortilla Factory (use half pkg cut into 1/4 inch strips)
- 8- 10 cups water - Salt and pepper to taste - 1 .5 lb. Queso fresco (available at Tortilla Factory)
- 1 pkg yellow corn tortillas from Tortilla Factory (use half pkg cut into 1/4 inch strips)
- 6 -7 roasted hatch chiles (available at Tortilla Factory)
- 1 pkg cactus corn tortillas from Tortilla Factory (use half pkg cut into 1/4 inch strips)
- 1 can evaporated milk - 3 -4 potatoes depending on their size - 2 tbsp. chicken bouillon
Do you love preparing all of your favorite recipes for your family but haven’t been able to find all the delicious homemade ingredients here in town? Look no further. The Tortilla Factory has several homemade items to help!
Step 1: In a medium size pot, heat up 1 tbsp. oil, place tomatoes and onion in pot until onion is translucent (about 3 minutes). Add water and bring to a boil. In the meantime peel potatoes and roasted hatch chiles--also removing the seeds. Once water boils, add chicken bouillon and oregano, stir and add seasoning with salt and pepper to your preference Step 2: Cut potatoes into 8 pieces, cut roasted chiles long ways or chopped which ever you prefer. Place them in pot. Simmer for about 10- 15 minutes or until potatoes are done but not too mushy. Add Queso fresco and evaporated milk and lower heat for 5 minutes. Remove from heat. Step 3: add enough oil to a pan to fry tortilla strips. Once oil is hot enough, place tortilla strips in pot and fry for about 5 minutes. Transfer to a paper towel to drain excess oil. Serve soup, place tortilla strips on top then add avocado to your preference.

Weezies Kitchen Gadgets approved recipes! Cherry-Banana Pie 9-inch Baked pie shell (below) 1 can (16 oz) pitted red tart cherries 1 Cup sugar 3 Tablespoons cornstarch 1 Tablespoon butter ½ teaspoon cinnamon 1 teaspoon almond extract 2 medium bananas Bake pie shell. In saucepan, mix cherries (with liquid), sugar and cornstarch. Cook, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. Stir in butter; cool. Stir in cinnamon and almond extract. Slice bananas in layers into baked pie shell. Pour filling over banana slices; chill until set. 9-inch baked pie shell: Heat oven to 475 degrees. Measure 1 cup flour and ½ teaspoon salt into a bowl. Cut in 1/3 cup plus 1 Tablespoon shortening thoroughly. Sprinkle in 2 to 3 Tablespoons of cold water, 1 Tablespoon at a time, mixing until all flour is moistened and dough almost cleans side of bowl (1 to 2 teaspoons of water can be added if needed). Gather dough into ball; shape into flattened round on lightly floured cloth-covered board. With floured stockinet covered rolling pin, roll dough 2 inches larger than inverted pie pan. Fold pastry into quarters; unfold and ease into pan. Trim over-hanging edge 1 inch from rim of pan. Fold and roll pastry under, even with pan. Flute; prick bottom and side thoroughly with fork. Bake 8-10 minutes.

Balsamic Caramel Corn 2 bags, plain and unbuttered microwave popcorn 8 oz of unsalted butter 2 Cups of packed light brown sugar 1 tsp of kosher salt ¼ Cup of Balsamic Vinegar ¼ Cup of light Maple Syrup 1 tsp. of baking soda Preheat oven at 200 degrees Pop the popcorn and when cool enough to handle, remove and discard any unpopped kernels. In large sauce pan, combine the butter, brown sugar, salt vinegar and syrup. Bring to a boil and stir until all ingredients are combined. Remove from heat and stir in baking soda (the mixture will foam up). Pour the mixture over the popcorn and toss to coat. Spread popcorn mixture evenly onto a baking sheet and cook for 1 hour, stirring every 15 minutes. Spread onto wax paper to dry. Enjoy!

France is the largest country in Western Europe and the thirdlargest in Europe as a whole. You will find plenty to do in this beautiful country. We will start off in Paris. Paris is not only the capital of France, but also the largest and most popular tourist destination in France. You couldn't possibly visit Paris without seeing the Eiffel Tower. Even if you do not want to visit this world famous structure, you will see its top from all over Paris. The tower rises 300 meters tall (984 ft); when it was completed at the end of the 19th century it was twice as high as the Washington Monument, at the time the tallest structure in the world. Inaugurated March 31, 1889, the Eiffel Tower would be the tallest structure in the world until the completion of the Chrysler Building in 1930. Notre Dame. The site of the Notre dame is the cradle of Paris and has always been the religious center of the city. The Celts had their sacred ground here, the Romans built a temple to worship Jupiter. A Christian basilica was built in the 6th century and the last religious structure before the Notre-Dame construction started was a Romanesque church. Bishop Maurice de Sully started the construction in 1163. The Cathedral was to be built in the new gothic style and had to reflect Paris's status as the capital of the Kingdom France. It was the first cathedral built on a monumental scale and became the prototype for future cathedrals in France, like the cathedrals of Amiens, Chartres or Rheims, just to name the most famous.

Napoleon's Triumphal Arch
Notre Dame
The arch was commissioned by Napoleon in 1806 to commemorate his victories, but he was ousted before the arch was completed. In fact, it wasn't completed until 1836 during the reign of LouisPhilippe. The Arc de Triomphe is engraved with names of generals who commanded French troops during Napoleon's regime.
Panthéon On top of the montagne Ste-Geneviève, not far from the Sorbonne University and the Jardin du Luxembourg, the Panthéon looks over the Quartier Latin. As far back as 507, this site was chosen by King Clovis - the first Frankish Merovingian King for a basilica to serve as a tomb for him and his wife Clothilde. In 512 Sainte-Geneviève, patroness of Paris was buried here. These are only some of what Paris France has to offer. Let's move on to Omaha Beach,which incorporates the beaches of St-Laurent, Collevillesur-Mer and Vierville-sur-Mer. The US 29th Infantry Division encountered a particularly difficulty landing on June 6th 1944 and it was here that the

fiercest of fighting took place. The Pointe du Hoc remains dotted with German bunkers, and shell holes are visible in the cliffs. A visit to the St-Laurent Military Cemetery is a very stark reminder of the bravery of those who gave their lives. If you go to this area you have to stop by Omaha Memorial Museum at Saint-Laurent-sur-Mer: on the actual site of Omaha Beach, the museum, which has an area of 13,000 sq ft, displays a fine collection of uniforms, weapons, personal objects and vehicles. Numerous scenes, vivid archive photos, maps and a film commented by American veterans, explain the landings on Omaha and the Pointe du Hoc. Now that you have some history about this area, here is more - like beaches. Immerse yourself in Normandy's culture: its renowned museums, monuments and concert halls offer a choice broad enough to suit all tastes. And if you happen to combine a passion for horticulture with an interest in architecture, the fine parks and gardens in

Normandy's chateaux will not disappoint you, and of course, there is food. Famous for its dairy products, like butter, milk, cream and cheese, the region is also worldwide renowned for its apples. Most restaurants in Normandy will use locally sourced products and some producers are delighted to welcome visitors.

Normandy is haute-cuisine heaven for food lovers
Ok, now that we have traveled to just a few places in France, let’s talk about transportation. Just how do you get to France from the USA. First we will talk about cruising to the Mediterranean and these cruises are very special. Most of these cruises are called transatlantic cruises. They are awesome cruises, but can be very lengthy on the average of 62 days round trip from the states. Your best bet is to travel to France via air.
and visitors seeking authentic culinary experiences. It is time to move from Normandy and head to Bordeaux France. Bordeaux is located close to the European Atlantic coast, in the southwest of France and in the north of the Aquitaine region. It is around 500 km (310 mi) southwest of Paris. The city is built on a bend of the river Garonne, and is divided into two parts: the right bank to the east and left bank in the west. Historically the left bank is more developed because when flowing outside the bend, the water makes a furrow of the required depth to allow the passing of merchant ships, which used to offload on this side of the river. In Bordeaux, the Garonne River is accessible to ocean liners. The left bank of the Garonne is a low-lying, often marshy plain. One of the biggest highlights of Bordeaux is Wine. The vine was introduced to the Bordeaux region by the Romans, probably in the mid-1st century, to provide wine for local consumption, and wine production has been continuous in the region since then. In 1855 Mouton-Rothschild was ranked a Second Growth. In 1973, it was elevated to First Growth status. What other things are there to do in Bordeaux? There is so much to do in this part of France I will only name a few, so here we go. How about a small group wine tasting tour or maybe explore the town of Arcachon before a visit to an oyster farm for a sample of fresh oysters, or climb to the top of Europe’s largest sand dune, Pyla Dune (Dune du Pyla). Then to end the day into night, there is plenty to do because the nightlife is second to none.
After arriving in France there are tour options. Motor coach travel is one of the very best ways to see hot spots in France. These travel tour companies work hard to make sure you are getting your money’s worth. You can also do a self-guided tour. We only advise this type of travel for the most experienced traveler. When doing a self-guided tour, you must have your wits about you; this could be a nightmare in a country that you are just visiting on vacation. Most travelers find the language barrier hard to overcome. With a professional tour company they want your business, so most of these businesses will speak English. There are also cruises that board in France ports. You can choose cruises around France and neighboring areas, or from France back to the states. So talk with your travel professional to find a travel plan that best fits your travel plans. Dr. Nate Swensen has returned to his home town of Winnemucca. He graduated as a Buckaroo and State Basketball Champion in 2002. He then went to Caracas, Venezuela and became fluent in Spanish while living there for two years. Not only did he graduate from Brigham Young University as the Valedictorian in the college of Exercise Science in 2008, he graduated Summa Cum Laude at UNLV during dental school. He also received the Outstanding Clinical Performance in Removable Prosthodontics Award from the UNLV dental facility, and the Outstanding Dental Student in Implant Dentistry Award from the Academy of Osseointegration. He was accepted into the Steven E. Smith Honor Society which honors students ranked in the top ten of their class. Throughout his dental career, he has been involved in multiple volunteer service clinics including Give Kids a Smile, Huntridge Teen Clinic, Ferrin Memorial Veterans Clinic and The Flying Doctors. Dr. Swensen is committed to and has a love for dentistry. When he was five years old, he told his dad he wanted to become a dentist and never waivered. Dr. Dan Debonis was his dentist growing up and shares his passion for helping people maintain a healthy living style with a happy mouth. He affirms, contrary to popular opinion, you do need to floss daily. He continued to succeed in life by marrying his first love, Mattie, and they have two daughters; Allie, 5 and Bria, 3 months old. Together they enjoy spending time on the water or at their family cabin. Dr. Swensen recently taught Allie how to swim and is now working on front flips on the trampoline. He plays his guitar to help his baby fall asleep and can grill up a mean steak. He feels his family is one of his greatest accomplishments.

The Holidays are upon us. It certainly is a time for family, friends and sharing. Stress seems to arise along with all the joy, peace and good will. Who is coming, when will they arrive and for how long? Where will they sleep? Am I cooking too much or not enough? What about Uncle Fred’s allergies to cats. Where can we put Muffy during his visit? There are parties and extra activities at school, church, work, and down the block. Do I serve the traditional alcoholic beverage even though cousin Susan just got out of rehab? We ask our children what they want for Christmas and then get annoyed when they hand us a catalogue with the desired items circled. Which little ones still believe in the literal Santa Claus? How could I have missed his visit at Walmart? I want to re-gift that blue glass bowl I got last year, but don’t dare because I can’t remember who gave it to me. And the “perfect tree” must be at the next lot. Oh my, it can go on and on.

We can’t stop the cultural madness, but we can change our reaction to all of it. We can examine the things we are told to think, feel and do over the holidays to see if those thoughts, feelings and activities truly are organic within us. We can change our “program” to one that is less stressful and ultimately more loving. What is the “perfect holiday dinner”, or the “perfect gift”, or the “perfect Christmas morning?” Instead of reaching for “perfection” from outside of ourselves, we can be perfectly content with the gifts we give and receive, perfectly happy with our family, and perfectly satisfied with the dinner we are served. It’s all a matter of making up our mind to appreciate ‘what is’. Yoga is a tool we can use to help us break away from the ‘habitual mayhem’ that seems to occur during this time of year. Simply said, it requires making the decision to take care of ourselves.
We can stop and breathe, rather than hop in the car for the third frantic shopping trip that day. We can create time and space for ourselves. Give yourself permission to sit down with a good book, to take a nap, to let someone else cook the turkey, to take a walk, to lay out on the floor and stretch like a lazy cat. There is nothing like a complete stretching routine, coupled with conscious breathing to relax and rejuvenate our bodies and minds. It doesn’t have to take a lot of time. Really, just a few minutes could make all the difference in the world of how we handle ourselves this holiday season. I do know of a yoga practice that I would love to share. It is designed to increase relaxation and decrease stressful sensations. I call it ‘coming home’. Create a time and place for yourself where you won’t be distracted. Let the family know that you’d like a few minutes to yourself and take those minutes in a room where you won’t be disturbed. Put on your most cozy sweats and roll out your yoga mat. You might even light a candle. Sit down cross legged if that is comfortable for you. Place your back against the wall is that is where you are comfortable. Sit in a chair if that is best for you. This can also be done lying down. Begin to take a few deep breaths through your nose. Notice after a while that as you inhale your abdomen gently rises and with the exhale, the abdomen gently falls. Relax your shoulders and jaw. As you breathe, lightly exaggerate the rise and fall of the abdomen with your inhale and exhale. Take several breaths noticing the effect the breath has on your body. When you are comfortable with your breath, gradually let the exhale be longer than the inhale. Begin with just a count or two longer and slowly increase the length of the exhale to where you are comfortable. There is no “right” count, so be easy with yourself. You may do this for 10 breaths or 10 minutes or longer if you like.
Seated Forward Fold: Continue taking slow, deep breaths while you begin to move your body. Come to a sitting position with your legs stretched out front. Raise your arms up above your head and lift up as you move into a forward fold. Reach as far as you can without struggle down your legs. Place your hands on your thighs, knees, ankles or feet and gently relax over your legs. Keep your spine straight as you lengthen your torso over your legs, little by little. Don’t be surprised if emotions are released in this pose. Feel free to let go in any way that is perfect for you. Hold the pose for 10 deep breaths. As you come out of the pose reach your arms out front over your legs and lift them above your head, lengthening your spine as you lift and then place your hands on the mat, by your hips.
Half Bridge: Next lie on your back with your knees bent and feet on the mat, hip width apart. Gently rock your hips side to side. Now rock those hips front to back in a pelvic tilt motion. Relax and take a breath. Push into your feet as you arch your back and lift your hips off the mat. Be sure to push into your shoulders as you broaden and release tension from your upper back and neck. Interlace your fingers underneath you and straighten your arms as you come into this pose. This will help to place the weight into your feet and into your shoulders. Just as we stretched the back of the body in forward fold, we are now stretching the

front of the body and strengthening the back and legs. Hold the pose for 10 deep breaths. Release your hands first, and then gently lower onto the mat beginning with your neck. Feel each vertebra meet the mat as you round your spine pressing into the mat. When your hips are on the mat put your arms around your knees and squeeze tight. Lift your head for one breath and then gently lay your head back onto the mat. With arms secured around your knees, rock side to side to calm the nervous system.
Child’s Pose: Slowly roll over onto your tummy and bring your knees underneath you. Stretch your arms out front and push into the heels of your hands. At the same time, press your hips towards the heels of your feet. This will stretch the spine and relax the hips. Take a few deep breaths and when that feels complete, simply lay your arms on the mat, hands placed back by your feet. Completely relax and take 10 deep breaths.
Knee Down Twist: Lie on your back and bring your right knee to your chest. Placing your arms around your knee, squeeze as in a hug. Stretch your left leg away from your torso as your bring your right knee even closer to your chest. Keep your head on the

mat. Take 5 deep breaths squeezing the right knee, then relax both legs (keeping the position). Stretch your right arm out to the right side, palm up. Look at that palm as you drop your right knee across your body to the left. Completely relax in this deep twist as you take 10 deep breaths. Allow the twist to bring fresh oxygenated blood to all your organs. Repeat on the other side. Come out of the twist and allow your body to stretch out on the mat in any way that is good for it. Repeat the breath that you began with to integrate your yoga experience. I suggest that you do this practice once a day throughout the holidays and perhaps more on especially stressful days. Remember, if you are stressed and frantic, your family and friends may take that energy on. If you are relaxed and kind to yourself, your family and friends will respond accordingly. The greatest gift you can give to those you love, at any time, is a grounded, compassionate YOU. When we experience something good, it's natural to want to tell everyone about it. Massage is no exception. Here are some ways to share your enthusiasm for massage therapy.

If it's your spouse or significant other that you're hoping to get interested in this healing therapy, perhaps a couple's massage, where two people receive massage in the same room, could be an anniversary gift. Giving someone a gift certificate allows the recipient to experience massage without financially committing to something that they might not be sure about. Some massage therapists provide specialized sport massage, something that might appeal to your golfing buddy who needs to loosen up his swing and increase his range of motion. In addition to helping people reduce pain or cope with physical injuries, the supportive touch of a massage therapist can be a powerful positive encounter during times of emotional distress. If someone in your life is dealing with grief or loss, you might recommend massage as a way for them to relax and be tended to without having to actively share their feelings, a welcome relief for many people. Here are just some of the positives that massage and bodywork can provide. You can tailor your "pitch" to your audience by focusing on those specific to their situation:

Consider inviting your "recruit" to meet your massage therapist before your next session. Be a Billboard Friends and family are more likely to follow your lead if you show them that you enjoy, and benefit from, receiving massage. If you have a regular routine and are feeling good, when you recommend bodywork to others it will be more influential. Whether it's increased range of motion, a sunnier disposition, or an improvement in posture, what you've gotten out of massage will be the best advertisement you can show them. If, after all of your encouragement, they are still reluctant, you need to respect their feelings. Not everyone is ready for the hands-on experience of massage therapy, and some may even have some serious personal issues about touch. It’s that time of year again—family gatherings, traveling, abundance of sweet treats, sparkling snow and of course, the infamous cold and flu season. Fortunately, there are many simple and organic ways to promote a healthy immune system. The immune system is responsible for identifying and attacking foreign invaders like viruses and bacteria. Similar to all biologic processes in the body, the immune system can function optimally with proper support. If the immune system is functioning properly, the amount of time and severity of symptoms from a cold and flu can be reduced. The benefits of supporting your immune system include: decreasing the severity and length of time symptoms are present and decrease your chances of becoming sick from the cold or flu. You can support your immune system a variety of ways, the most important are everyday habits that will boost your immune system and keep it strong throughout the season and the rest of the year.
HYGIENE
washing your hands multiple times per day can reduce your risk of contracting the cold or flu. Our hands touch everything and carry germs. Frequent hand washing, especially before eating, can reduce your risk.
DAILY MOVEMENT
making it a point to move throughout the day by walking or continuing your regular exercise routine can boost your immune system. According to Medline Plus, exercise can help your immune system respond to invading bacteria or viruses more quickly, temporarily raise your body temperature, which prevents bacterial growth, and decreasing the release of stress hormone (cortisol) that can temporarily weaken the immune response.
GOING OUTDOORS a recent study by Yoshifumi
Miyzazki and Qing Li in Japan, has demonstrated that being outside for one day can boost the immune activity of the body for at least one week. It also has shown that there is a decrease in the stress hormone, cortisol, and a slight decrease in blood pressure and heart rate. On a cellular level, participants in a forest hiking study demonstrated that after hiking twice a day for three days had a 40% increase in their white blood cells, which remained 15% higher one month later. These same effects are not observed with exercising alone, but actually walking outside in nature.
Nutrition
a Special Health Report from Harvard Health Publications lists eating a diet high in fruits and vegetables, limiting alcohol intake and not smoking can help your immune system to function optimally. In addition, adequate intake of vitamin A, B vitamins, vitamin C, D and E through food sources can promote a healthy immune system. It is also important to stay hydrated. It is easy to forget to drink enough water in the winter months because it is cold, but hydration will help eliminate metabolic waste and promote cellular function.
Sleep
according to the Mayo Clinic, lack of sleep can have a negative impact on your immune system. “Studies show that people who don’t get quality sleep are more likely to get sick after being exposed to a virus, such as the common cold.” During sleep, the immune system releases cytokines that are responsible for fighting infection, lack of sleep will decrease the production of cytokines. The Mayo Clinic also states, “Long-term lack of sleep also increases your risk of obesity, diabetes and cardiovascular disease.”
Staying healthy this season doesn’t have to end when this season passes. Participating in immune boosting behavior will benefit your health the entire year and for many years to come. I am wishing everyone a healthy and bright Holiday season and a Merry Christmas.

When folks start the party early then hit the roads, it's a recipe for disaster. Even a little alcohol can make some drivers more aggressive; larger quantities simply make drivers dangerous.
Avoid Aggressive Driving Behavior Plan ahead. Anticipate that traffic will be heavier and give yourself more time to maneuver in holiday crowds. Back off the speed and don't tailgate—it's one of the top triggers of road rage incidents. Another trigger? Making frequent or last-minute lane changes. Where possible, stay in the lane that will be closest to your planned exit to avoid sudden moves. Start off calm. Don't go out to shop if you're already stressed. Other drivers' actions may immediately set you on edge, prompting you to respond negatively.
Stay alert. Focus on the job of driving rather than on all the details you have to take care of. Watch the traffic patterns and keep an eye on drivers who are speeding or driving erratically. Take a deep breath. Find a way to stay calm in tense situations. Keep breathing, play holiday music or listen to a book on tape. When witnessing road rage, don't make eye contact or respond in kind to an aggressive driver. Both actions may fuel the driver's anger.

We have also seen a lot of reports of coconut oil health benefits from those suffering from hypothyroidism, as coconut oil helps boost metabolism and raise body temperatures to promote thyroid health. Restricting carbohydrates and increasing coconut oil in the diet has also led many to report losing weight with coconut oil. Candida sufferers also report health benefits with coconut oil as research now confirms, and those suffering from various skin diseases are also seeing tremendous health benefits by applying coconut oil directly on the skin. Lauric acid, for example, has a long history of use in combating pathogens, and this research has been around for more than 50 years. Coconut oil is nature’s richest source of lauric acid.

Coconut oil was once prevalent in western countries like the United States. With a long shelf life and a melting point of 76 degrees, coconut oil is a favorite in the baking industry.
You will need 3-4 silicone ice cube trays or petite fours papers with a mini muffin tin. Melt coconut oil, add maple syrup, slowly add cocoa powder (I use a small strainer or sifter to get any lumps out), and stir well until smooth. Stir in vanilla extract. Place desired amounts of shredded coconut and almonds in the bottom of a silicone ice cube tray or in small petit-fours papers in a mini muffin tin. Pour the chocolate mixture into the tray or papers, filling 3/4 full. Place in freezer for fast set up, or in refrigerator overnight. Keep in the refrigerator when not serving to maintain firmness. Notes: If doing Weight Watchers, and using the petite-fours papers, these have about 2 points each. They will vary in size and points if using silicone ice cube trays.

Fold in nuts. Drop batter by tablespoonful unto a prepared cookie sheet and bake for about 20 minutes. After 5 minutes in the oven, press cookies down lightly with a fork. Let cool and enjoy!

• ½ cup fresh basil, chopped • 1 lb. penne pasta, cooked • ¼ cup sun dried tomatoes in olive oil, chopped • Salt & pepper, optional • Grated parmesan cheese • Shredded coconut Heat coconut oil in a medium sized pan. Add garlic and onion and stir together. Add peppers and fresh basil. Cook until tender. Remove from heat and add sautéed vegetables to cooked pasta and stir everything together with sun dried tomatoes. Season with salt and pepper if desired and top with parmesan cheese and shredded coconut.

Monthly Tips #4: Unfortunately, many men are neglectful of their health. Are you one of them? According to the U.S. Department of Health and Human Services, men are more likely than women to smoke, drink, make unhealthy or risky decisions, and put off regular checkups and medical care.
Pay Attention to Your Prostate Men age 50 and older are most at risk for prostate cancer. It is the most common non-skin cancer in America, affecting one in six men. The American Cancer Society recommends that you receive either a digital rectal exam (DRE) or prostate-specific antigen (PSA) blood test every year starting at age 50. However, you should begin discussing prostate screening with your doctor as early as age 40, especially if there is a family history of prostate cancer. During a DRE, the doctor inserts a finger into your rectum and examines the prostate for any irregularities. A PSA blood test involves an amount of blood drawn from the arm, and the level of PSA is tested. Both tests can easily be performed within the doctor’s office and only take a few minutes.
Get Tested for Colorectal Cancer
Perform Regular Testicular Self-Exams
All men over 50 should be tested for colorectal cancer – or earlier if you have a family history of it. There are many ways to get your colon checked. Some tests are done every 1 to 2 years; others are done every 5 to 10 years. How often you get checked will depend on your risk. There are some tests you can do at home, such as a fecal occult blood test. Others, like a colonoscopy, must be done in a clinic or hospital. For these tests, you may need to drink only liquids the day before your test and use laxatives to clean out your colon.
Although the incidence of testicular cancer has risen in recent years, more than 95 percent of cases can be cured. Most times, the cancer is detected unintentionally or by self-examination. Routine testicular self-examination increases your chances of finding a tumor, which often feels like a pea-sized, painless lump. Testicular cancer most often affects men between the ages of 20 and 39. A colonoscopy is a procedure used to see inside the colon and rectum. It can detect inflamed tissue, ulcers, and abnormal growths. Before the process, you will be lightly sedated. Then, the doctor will insert a long, flexible tube into your anus and guide it through the rectum and colon. This usually takes 30 to 60 minutes and full recovery is expected by the next day. If you act early, you have a good chance of preventing colorectal cancer, or finding it in its early stages.

'Tis the Season' to vamp up our homes for the holidays and Christmas Decorations are in full swing. If you want a "custom Christmas Piece" I suggest you DO IT YOURSELF, I found a pretty simple craft on Pinterest. Supplies needed: Paper Mache Cones (any size) Large paper punch (any shape, I chose a heart punch)
Step one: First paint the base and the tip of the cone so when it is displayed you can't see the parchment color. Step two: Start punching out your scrapbook paper. Step three: After you have punched all the paper, take a pencil and roll the paper up slightly ( this gives your tree some depth). Step four: Start gluing your paper starting at the bottom of the cone and work your way to the top. Step five: Top off the tree with a star cut out of paper, or leave the painted point showing.
(I used glue dots and they did not hold)
This craft was pretty easy so I give this an A- , I love the texture of the Tree, and I believe a handful of these in all different colors and sizes would make a beautiful Christmas Mantle display!!!!

Here are some of our favorite kitchen pantry organizing solutions: An easy way to keep items separated and easy to find is to install some tension rods on your shelves. It can help you organize by grouping similar items together

Take the tension rod concept (as seen on the right) and apply it specifically to kitchen drawers, using wood dividers instead of the rods. Sure the drawers may not be in the pantry directly, however organizing your drawers means less items kept in your pantry and less overall clutter. When it comes to organizing, a rising tide lifts all boats. Sure, magazines are going the way of powdered wigs (extinct), but that doesn’t mean you can’t repurpose your magazine rack. Use it to store your canned goods and watch your pantry space open up. Chalkboard paint is your friend when it comes to cabinet organization. You can see here how it helps with labeling and can be an incredibly handy reference point for converting measurements when cooking or baking. Sure we all have smart phones and tablets, but you don’t want to be dealing with those things when you get in the zone in your kitchen. Just putting your spices in a pantry haphazardly is no good, and building spice racks can be time consuming and bulky. Take some mop handle holders, put them inside your pantry door and hang the spices from there. This is definitely one of those “wish I thought of that” ideas. So those are just a few ideas to get you started on attacking pantry clutter.

Organizing Tips: What to Keep vs. Toss Each season the need to go through your closets, basement, attic, garage and storage areas can be a daunting task. Choosing what to keep and what to toss is often a tug-of-war with your sentimental feelings and your home’s ability to store any more items. Before you toss everything in your attic or keep everything in your garage, here are some helpful organizing tips to make the decision process easier. While the decision will ultimately be yours at the end of the day, these important factors may make parting with your possessions a little easier, and keeping those that are essential much easier in your mind and heart.

Before you start setting your kids’ toys in a box out at the curb for the trash pickup, do a thorough de-cluttering and purging mission first. Go through each storage closet and area in your home. Throw away items that are broken and can’t be repaired and set aside items that may be able to be repurposed into a new use. For example an old wooden ladder that has been replaced by a aluminum version may just be taking up space in your garage. Consider repurposing the ladder with a coat of paint and placing it in a bathroom or other room to hang towels on for guests or put plywood shelves on for a new bookcase! Sorting through your clutter will help you prioritize what is important to you and your family members while also helping reduce many items you haven’t used or seen in years.

Along with storage needs your sentimental value of many items will change in priority. When organizing your personal items decide what past, current and future priorities you would like to hold on to, and which ones it is time to say goodbye to. Younger children that don’t play with old toys can go with you to drop them off at a charity donation site or even give items to churches or neighboring children. Once you have purged and reduced your items to just those you will keep it’s time to organize or display your keepsakes proudly. If you love to display items such as heirloom antiques, military honors, trophies and other items you hold dear – consider visiting a craft or restoration store that can give you ideas on how to keep them looking good for years to come. Shadow boxes are perfect for displaying on the wall and won’t get harmed by fingerprints and curious hands. Display boxes, curio cabinets and shelving options are also ideal for your keepsakes. For larger items you will need to decide if you have enough space to safely house your keepsake or if they will need to find another alternative for storage. Your storage areas shouldn’t be a catchall location for items in your home that you don’t think about anymore! Instead, ensure your storage areas are organized with keepsakes and items that your family cherishes and holds dear. Use these tips to help you purge, donate, repurpose and organize those items you hold dear, and those that can find a better home with someone else.

The students will learn essential, professional, leadership and care-giving skills, safety skills to prevent emergencies, how to manage real-life problems, including emergencies, and tips on finding babysitting jobs. As the holiday season quickly approaches, the Frontier Community Action Agency (FCAA) would like to take this opportunity to encourage all to extend a helping hand and share hope through helping in the community! For families facing hard times, the holidays can be an especially trying time financially, while for others this time of year can be emotionally difficult. The FCAA invites you to help bring yourself or someone else out of those shadows by getting out and volunteering! There are many great programs in our community during the holiday season, which bring light and caring to our community. Helping wrap presents, sorting gifts donated, helping collect food, or putting together the food baskets for those in need, not only helps lift the spirits of those in need in our community, but those volunteering share in the hope and joy they spread with the time they donate to these great causes. As most of those in need of the
basic needs of food, shelter, and clothing are also in need of feeling that there is hope and they do have a purpose. For this reason it is crucial that as a community we understand the importance of the programs in our community and how we can contribute to them.
where and when you can, not only will those who need benefit from your actions, you will also benefit from the feeling within that we all get when we give back when helping others. It’s an amazing feeling and everyone wins in this situation.
The FCAA would like to provide you with some ideas on how you can help families and individuals in these types of situations. Contacting the various organizations on the front lines helping those in need such as Indigent Services, The Winnemucca Food Bank, The United Methodist Church of Winnemucca, The Winnemucca Domestic Violence Services, and the FCAA to ask what types of donations would be most beneficial to the populations they serve or purchasing gift cards for basic necessities such as gas, food, and clothing, these are always greatly appreciated by our agencies. Each of these organizations plays an integral role in working together to help those who are going through difficult times get back on their feet, and through donations from individuals, organizations, and businesses we are able to continue to improve our community’s well-being. These much needed funds allow us the ability to provide services such as keeping the heat turned on for a family with young children while they receive their first paycheck during the winter, or providing shelter for a young mother and her children for the night. During the holidays not only are these basic necessities on the top of the list for these families, but they are also hoping to find a way to provide some kind of holiday cheer for their family.
The Frontier Community Action Agency (FCAA) who is a non-profit 501 C3 working towards a better tomorrow for all those residing in Elko, Humboldt, Lander, and Pershing Counties was established to ensure equal opportunities for those individuals fighting poverty or unemployment. The FCAA’s purpose is to address the needs of its clients and partners by establishing and supporting programs and policies that address the social and economic issues faced by the low-income or at-risk populations. The agency works toward partnerships and collaborations with community members and businesses that promote the development and support of strategies and techniques that encourage social change thereby bringing about greater opportunities and economic self-reliance for individuals and families.
