Stir-Fry Techniques With the imminent arrival of spring, this is a great time to adopt and develop some stir-fry cooking skills. Make it your "thing" to master this season! Stirfries hold the possibility of endless variety; they're easy to make several times a week while producing very different meals each time. Here are some tricks to cooking hot and fast:

C enter the A ction

- Cooking over high heat makes things happen quickly. Peel, chop, cut, measure EVERYTHING in the recipe first. This is essential for good stir-fry results and allows all of the ingredients to be at their prime in the finished dish.

- Beginning with the ingredients that take the longest to cook, keep the primary cooking action in the center of the pan that's where it's the hottest. Move the cooked ingredients up the sides and add the next layer to the center of the wok stirring vigorously in that sweet spot.

- When prepping the ingredients, dice, cut, chop, or julienne each ingredient into bite-sized pieces of relatively even sizes. Choose to prepare your ingredients in thin slices or matchsticks so that the heat from the surface can quickly get to the center of the food.

P lan the S equence of E vents - With all of

the ingredients prepped, literally line everything up in the order that it will go into your wok or pan. Some vegetables will take longer to cook than others. For example, beans, peppers, broccoli, asparagus will take longer than sprouts, zucchini, cabbage, or bok choy. S tart H ot, K eep it H ot - Before adding any food to the pan, allow the pan to become hot, add any oil to the pan and allow it to become very hot - about 30 seconds. To test if the pan is ready, flick a minute drop of water in the oil; it should sizzle vigorously. When adding the different layers of ingredients during cooking, allow the pan to return to full heat before adding more ingredients. Start it hot, and always keep it hot! K eep it M oving - Because the pan is very hot, it is essential to keep the food moving while cooking. This is what's behind the technique's name "stir-fry." The surface of the food becomes hot quickly and transfers the heat inward.

If needed, remove a layer of ingredients to a plate while cooking the next set of ingredients. Keep in mind that the offloaded ingredients will continue to cook, so remove just prior to doneness, and spread in a single layer to release any excess heat. At the end of cooking, add all layers back into the pan to combine and reheat. A djust the R ecipe - Many recipes prescribe cooking times for each stage of the stir-fry. Use this information as a starting point and adjust based on how the food is cooking. This variability arises from the differences in food temperature, quantity of food, your pan, and the type of heat source. R emove Q uickly - Once the stir-fry is complete, remove from the pan, and serve immediately. Hot food left to sit will continue to cook and challenge the desired crisp-tenderness of the vegetables. In fact, stir-fry tradition calls for everyone being seated at the table before the cooking begins!

â?ˆ Wok & Roll Great stir-fry results are accessible to anyone with minimal investment! In fact, you can make a great stir-fry in any skillet or pan, but a great wok certainly eases the process and enhances the outcome. T he W ok

The idea behind a wok is its deep, rounded shape that provides a lot of cooking surface without requiring a large burner or flame. Heat transfers quickly from the concentrated source at the wok's bottom and up its steep sides. It's the original energy efficient pan! Besides stir-frying a wok is versatile for braising, simmering, steaming, and deep-frying. It's truly the "all-in-one" pan that millions of families have counted on for many centuries.

Many woks in the West go unused because of the diligence involved in seasoning the pan and keeping it in top-notch condition. In Asian cultures, wok maintenance is not an issue - the wok is used frequently enough that the pan becomes seasoned and stays seasoned with no effort. Material - Nonstick Surfaces - For many of us, a nonstick wok offers just the right amount of practicality and purpose. However, choose a nonstick wok wisely; some nonstick surfaces are not suitable for high temperature cooking. Newer, safer, nonstick surfaces are now available and have been applied in some great new wok styles. With nonstick surfaces, very little oil is required allowing the stir-fry dish to be a healthy preparation. Handle Style - When cooking with high temperatures, handle considerations become an important feature. A long handle with an opposing helper handle works well.

C hoosing a W ok

When choosing a wok, there are a few characteristics to consider. The first consideration is what heat source will be used with the wok - gas or electric burners, ceramic top, or induction stovetop. Different woks are specifically made and matched to different heat sources. Shape - Woks have rounded bottoms and either set atop a ring for stability over the burner, or on a specialized burner grate. Obtain a wok ring that best matches your burner's configuration. Other woks have a flatter bottom that sit like a more traditional pan on top of a burner, yet still feature high, concave sides. Â Size - Choose a size of wok that meets your most common cooking requirements. A 12-14-inch wok is usually perfect for home cooking and meals for 2-4 people. Material -Carbon Steel and Cast Iron - Traditionally, woks have been made of carbon steel or cast iron. This type of surface requires seasoning and re-

To keep things moving while stir-frying, a good stirring utensil is essential! A good utensil for stirfrying has a long-handle to keep the hand a safe distance from the high temperatures. Traditionally, bamboo or wooden spatulas have been used in wok cookery and still prove a good choice. Many of the newer silicone spatulas also work well at high heat, and have a bit of flexibility allowing them to conform to the curved shape of the pan. S piders

A "spider" is a very good wok tool! The broad basket of this long-handled utensil features an open weave resembling a spider's web. Food scooped with a spider drains very quickly. Beyond pairing it with a wok, a spider is versatile in scooping any food from boiling water, or a handy strainer when draining a pot.

Among the aromatics in stir-fry dishes, ginger is a frequent contributor. Working with ginger and its odd shape and coarse, stringy pulp often poses a conundrum. A ginger grater solves the problem by ingeniously extracting the potent pulp and liquid leaving behind the peel and fibers. There are several styles of ginger graters but all work similarly through a rubbing motion on top of a bumpy surface. F lavor S ecrets for C hinese S tir - F ries

Rice Wine - Most stir-fries in Ms. Chen's cookbook use just a teaspoon or two of rice wine. This mildly flavored wine serves to dissolve the essential flavor oils found in the other ingredients. Such oils are only dissolvable with a bit of alcohol - oil and water won't unleash their flavors. The alcohol will evaporate away, but only after working its extra bit of magic.

Stir-Fry Tips When serving rice with your stir-fry, start it first before starting your prep work. In a microwave, the rice will cook quickly and hold well as you assemble your stir-fry. T ip # 2 : Check out Asian specialty markets for unique ingredients. You'll find a wide selection of many key ingredients and usually at a lower price than the supermarket's specialty food aisle.

Soy Sauce - Like many other foods, special yeast and microorganism fermentation processes turn grain or soybeans into a rich brown liquid that is salty and full of the "fifth taste," umami. There are many variations of soy sauce specific to different regions of the world.

T ip # 3 : Use oil that can tolerate high heat well when stir-frying. Oils with high smoke points (the point at which they begin to burn) include these refined oils: canola oil, safflower oil, peanut oil, soybean oil, and corn oil. Oils with lower smoke points should be avoided in stir-frying; they include olive oil, butter, sesame oil, and many animal fats.

Hoisin Sauce - While "hoisin" means seafood, there is no fish present. This sauce includes water, sugar, soybeans, vinegar, rice, salt, wheat flour, garlic, and chile peppers. The sauce may be used for glazing, dipping, or as a sauce component.

T ip # 4 : If liquid is gathering in the bottom of the pan while stir-frying, this is an indication that the pan is not hot enough or that it is overloaded. The wok or pan should be so hot that any water in the ingredients evaporates quickly while cooking.

Oyster Sauce - This sauce is made from broth leftover from cooking oysters. The broth is greatly reduced from its original state until it becomes a dark, viscous sauce. It does not have a fishy smell or flavor, but is full of rich flavors that complement many stir-fries.

T ip # 5 : When starting a stir-fry, once the pan is hot, drizzle any oil being used around the pan. This will heat the oil faster compared to pouring the oil into one location all at once.

Black Bean Sauce - This sauce is also an essential condiment in many Chinese stir-fries. It is made from fermented black beans that are salty, bitter, and sweet all at once. Garlic and soy sauce are added to form a thick sauce or paste. A little goes a long way with this magical ingredient.

Ginger - This aromatic provides essential flavor to many stir-fry dishes. Peel away the thin brown skin on the nubby surface by scraping it away with a spoon. Buy small, usable quantities. Leftover ginger may be stored in an odor-proof bag or container in the refrigerator or freezer.

T ip # 6 : After washing or cleaning any vegetables, pat them or "spin-dry" them to remove any excess water. This will help reduce any water accumulation during stir-frying. T ip # 7 : To easily slice meats into thin, thin sheets for stir-frying, freeze the meat for 30-45 minutes, or allow frozen meat to partially defrost. Slice the meat across the grain to create naturally tender pieces.


Q & A's Q: What is the difference between light and dark soy sauce? A: Light soy sauce comes from the "first pressing" of the fermented beans. Dark soy sauce is darker, thicker, and aged longer. Light soy sauce is saltier than dark and is used more as a condiment or table seasoning. Dark soy is sweeter due to added molasses and used more in cooking than at the table. Q: In the ingredients list on my soy sauce, I see acid-hydrolyzed vegetable protein. What is this? A: This is a protein form that has been broken down into components through the introduction of water and acid. This ingredient is often used in soy sauces that skip the fermentation step and have garnered the nickname of "cheap man's soy sauce." The dark color in these sauces is not natural, but added caramel coloring. Read the label before buying.

Q: How do I season a carbon steel wok? A: Seasoning is easy and an important step for setting up a new wok, or refurbishing an older steel wok. Clean a new wok well to remove any waxy, protective coating from the manufacturer. This will expose the bare metal. Rub heat-tolerant oil into the surfaces of the metal. Facilitate the bonding of the oil to the pan by heating it and rubbing on the inside surface. Allow the pan to cool, then rub away any excess oil. Repeat this process three or four times. Keep the wok in a seasoned state by avoiding detergents and soap when cleaning. Simply wipe the wok clean, rinse with plain water if necessary, and dry immediately and thoroughly. Q: What is proper chopstick etiquette? A: Stir-fries are a great opportunity to practice your chopstick skills! To learn how to eat with chopsticks, check out this link: "How to Use Chopsticks." Use the wider ends of the chopstick to serve food from a shared bowl to your own plate or bowl. Never place the chopsticks straight up in your bowl of food; this is considered bad luck. Never point or gesture with your chopsticks. It's ok to hold a bowl in your hand and bring it closer to your mouth when eating with chopsticks; this minimizes spilling and is considered the polite thing to do in many instances.

With its singular focus on Chinese StirFries, it allows the Western kitchen access to the wonderful flavors of American-Chinese cuisine. Ms. Chen comes by her expertise honestly. As the daughter of the famed Chinese cook and restaurateur, Joyce Chen, Ms. Chen carries forward the long-standing family tradition of popularizing Mandarin cuisine in the American culture. The beginning chapters of the book focus on setting the stage with succinct and informative discussions of stir-fry technique, equipment, and key ingredients. The recipe chapters that follow categorize a whole host of stir-fry inventions according to: Chicken, Pork, Beef, Seafood, Bean Curd, and Vegetables. Each recipe is written simply and expertly. The simplified ingredients make each of the recipes accessible for the average cook without compromising delicious results. The step-by-step instructions are equally clear and explanatory. The typical American cook suddenly feels quite apt and able to tackle their favorite Chinese dish at home! As is often the case with us, we were especially taken by the beautiful,

❈❈❈ Stir-fried Pork with Asparagus With asparagus season just around the corner, put this stir-fry on your "must-try" list. The hoisin sauce added just a hint of sweetness that complemented the pork perfectly. The seared asparagus concentrated the vegetable's flavor and the pork browned quickly over the high heat. The light covering of sauce exceeded our expectations in taste and flavor. I keep a few individually wrapped boneless pork chops in the freezer for easy last-minute stir-fry dishes like this one. Hoisin sauce lends a delicate sweetness to the dish, which enhances the natural goodness of fresh asparagus.

(1) Snap or cut off the tough ends of the asparagus, and if desire, strip off the small leaves on the spear up to 2 inches from the tip. Cut on the diagonal into 2-inch lengths. (2) In a medium bowl, whisk together the cornstarch and wine. Cut the pork into 1/4-inchthick strips the same length as the asparagus. Add to the cornstarch mixture and mix well. In a small bowl, whisk together the soy sauce, hoisin sauce, and sugar. (3) In a wok or stir-fry pan, heat 1 tablespoon of the oil over high heat until hot but not smoking. Test by dipping a piece of asparagus into the oil; it should sizzle. Add the asparagus and stir just until they turn a darker green, about 30 seconds. Add 1/4 cup water, cover the pan, and cook over medium heat, stirring occasionally, until tender, 3 to 5 minutes, depending upon the thickness of the spears. Transfer the asparagus and any liquid to a platter.

Another favorite for just about everyone, this easy beef and broccoli dish will become a regular at your

table! We served this stir-fry over rice noodles, which made for a little extra fun. The sauce is based on prepared oyster sauce, but lends no fishy component whatsoever. We purchased double the beef, sliced it all, and froze half in a thin package for a quick supper sometime in the near future! (1) Slice the steak with the grain into long strips about 2 inches wide. Then slice the long pieces against the grain into 1/8-inch thick slices. In a medium bowl, whisk together the soy sauce, cornstarch, wine, and sugar. Add the beef and mix well. (2) Trim and peel the broccoli stalks, Chop the flower heads from the stalks and cut into florets. Slice the peeled stalks into bite-size pieces. (3) In a wok or stir-fry pan, heat 1 tablespoon of the oil over high heat until the oil is hot but not

smoking. Test by dipping a piece of broccoli into the oil; it should sizzle. Add the broccoli and stir constantly for about 30 seconds. Stir in the broth, reduce the heat to medium, and cover the pan. Continue cooking, stirring occasionally, for another minute or two until broccoli is tendercrisp. Remove from the pan and spread out on a plate. Do not pile into a bowl, as the heat generated by the broccoli will overcook the pieces on the bottom.

In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, the wine, sugar, vinegar, and sesame oil. (2) In a wok or stir-fry pan, heat the canola oil over medium-heat. Add the chiles and cook, stirring, until the chiles turn dark brown. Add the peppercorns, garlic, scallion lengths, and ginger and stir for a moment or two.

NOTE: You may substitute 1 to 3 teaspoons crushed red pepper for the dried chiles. Add with the peppercorns, garlic, and scallions. NOTE: To toast Sichuan peppercorns, heat the peppercorns in an ungreased skillet over medium heat until the peppercorns are smoking and fragrant. Do not let them burn. Let the peppercorns cool, then grind them in a mortar and pestle or roll with a rolling pin between two pieces of paper. Sift and discard the larger pieces that do not pass through the strainer. Store the powder in a clean, tightly lidded glass jar in a dark, dry place.

Chocolate first gained popularity in Europe as a medicine.


Montezuma and his LOVE As part of what is known as the “Columbian Exchange” (the exchange of foods, animals, plants etc…between the New World and Europe after Columbus came to the western hemisphere), the first cocoa beans were brought to Columbus in 1502. There is no indication that he realized the monetary or culinary importance of his discover, and no evidence that he ever tasted a glass of chocolate. He went to his grave 4 years later in 1506 not realizing the great implication of these beans, which he described as “almonds”.

Nothing was done with the cocoa beans; however, until the third decade of the 16th century, after Hernando Cortez had been served a frothy, bitter liquid of ground cocoa beans, chile pepper and water by the Aztec king Montezuma. The recipe was sent back to Spain and, with the addition of some sweetener (honey, or possibly cane sugar), and the newly discovered vanilla plus some cinnamon and black pepper, it became a national obsession. In fact, the recipe was kept an official national secret for nearly a hundred years. People were so wild about chocolate that the Catholic Church had to investigate whether or not it was sinful to overindulge in the drink, and if it was acceptable to imbibe the drink during fasting days—during Lent, for example. 16th century European clerics condemned chocolate as sinful and thought it was an aphrodisiac and could cause promiscuous sexual activity in normally upright people. A great debate ensued among physicians, the clergy and even the Popes themselves, as to whether it was proper or godly to drink it. The

nub of the argument came down to the question whether chocolate was a beverage or a food. Religious fasts forbade the taking of nourishment, but chocolate had become popular among those who were fasting because it eased their hunger. Most people engaged in this debate concluded that, since one drank it, the fast one was engaged in was not broken. Others took a more conservative view and concluded that it was far too nourishing, sustaining and delicious to be permissible. Never-the-less, chocolate would be consumed only as a drink for hundreds of years. Chocolate first gained popularity in Europe as a medicine. According to the theory of “humors” in the human body causing illness and disease (a system of medicine that went back to the ancient Greeks), chocolate was classified as containing “cool” and “humid” qualities and could be used as a fever reducer, or to reduce discomfort in hot weather. Today, much has been written about the medicinal/health qualities of chocolate—dark chocolate, that is. The historic circle has been completed.

The Aztec king Montezuma II consumed massive quantities of liquid chocolate mixed with honey and spices (such as ground and dried chile pepper). As a matter of fact, it was said that Montezuma drank NOTHING but chocolate, up to 50 “flagons” (a “flagon” is roughly equivalent to a medium sized pitcher today) a day. Whenever he drank a cup of chocolate (“xocoatl” in their language, pronounced like this, “chocolatl,” in English) he drank it from a golden goblet, and when he was finished he would walk to the balcony of his palace which overlooked one of the many lakes surrounding Tenochtitlan and tossed it into the water. Then another golden goblet filled with the beverage was brought to him and the process repeated itself over and over, throughout the years of his rule. He never drank from the same goblet twice. For decades after the Aztec empire had been destroyed, divers were still searching for and finding these golden relics of the heyday of the Aztec empire and the reign of Montezuma. The Aztecs believed that chocolate had aphrodisiac powers. Before Montezuma would enter his harem, he would prepare himself by downing a ceremonial goblet full of the beverage. Whether he took the time to throw this goblet into the lake is not known. Most people associate mole with Puebla, but the origin of mole poblano, the thick, rich, chocolate-tinged sauce made so famous in the colonial mountain city of Puebla, Mexico, is still disputed. Hispanic legend states that mole came from pre-Hispanic times and that Aztec king, Montezuma, thinking the conquistadors were gods, served mole to Cortez at a

banquet to receive them. This story has probably gained credibility because the word mole comes from the Nahuatl word “milli” which means sauce or “concoction”. All moles are very time consuming, labor intensive and require many ingredients. 30 ingredients are not unheard of, and some mole recipes contain 10 different varieties of chilies alone. Other ingredients include: peanuts, almonds, fried bread, plantains, lard, sugar, bittersweet chocolate, cinnamon, cloves and many more. Each Mexican woman has her own mole recipe, probably passed down from her mother. Because mole takes so much time to prepare, it is usually made in huge batches, too large for the home blender to handle. Therefore, women take their mole ingredients, all cooked and ready to blend, to large “molinos” or grinders in their neighborhood. Be sure to have plenty of napkins nearby when eating any mole. As you dip your warm, homemade tortilla into the wonderful sauce, you are bound to take some home with you on your shirt, your arms and under your fingernails. The origin of St. Valentine remains a mystery. One legend describes Saint Valentine as the former Bishop of Terni, a city in southern Umbria, in what is now central Italy. While under house arrest of Judge Asterius, and discussing his faith with him, Valentinus (the Roman pronunciation of his name) was discussing the validity of Jesus. The judge put Valentinus to the test and brought him the judges adopted blind daughter. If Valentinus succeeded in restoring the girls’ sight, Asterius would do anything he asked. Valentinus laid his hands on her eyes and the child’s vision was restored. Immediately humbled, the judge asked Valentinus what he should do. Valentinus replied that all of the idols around the judges’ house should be broken; the judge should fast for three days, and then undergo baptism. The judge obeyed and as a result, freed all the Christian inmates under his authority. The judge, his family and forty others were baptized. Valentinus was later arrested again for continuing to serve Jesus and was sent to the prefect of Rome, to the emperor Claudius himself. Claudius took a liking to him until Valentinus tried to lead Claudius to Jesus, whereupon Claudius refused and condemned Valentinus to death, commanding

that Valentinus either renounce his faith or he would be beaten with clubs and beheaded. Valentinus refused and Claudius’ command was executed outside the Flaminian Gate on February 14th, 269. Another legend states that in the 1st century AD, Valentine, who was a priest, defied the order of the emperor Claudius and secretly married couples so that the husbands wouldn’t have to go to war. Soldiers were sparse at the time, so this was a huge inconvenience to the emperor. Saint Valentine refused to sacrifice to pagan gods. This legend states that he was imprisoned for this. Valentine gave his testimony in prison and through prayers healed the jailers’ daughter who was suffering from blindness. On the day of his execution, he left her a note that was signed “Your Valentine.” Valentine has come to be known as the patron saint of lovers. His spirit is celebrated with romance on this day of love.

A Yoga Experience Valentine’s Day…yaaaay! Candy, flowers and cards are fun to give and receive for Valentine’s Day. Gifts like that can brighten our day and give us a quick boost, especially when it’s a surprise. I always appreciate gifts from the heart and I love to give as well. Not just on Valentine’s Day, I might add. I also appreciate my friends and my partner in life taking the time and focus to strengthen and deepen our connection. This can be done in many ways. Quiet walks with uninterrupted conversations where we’ve agreed to let each person express feelings and ideas without judgment is a wonderful avenue for improving relationships. Activities which require at least two people working together for a common goal give us an opportunity to improve communication. Of course, the commitment to see it through must be made by each individual, in order to work through differences. Relationships are tricky off the yoga mat and on the yoga mat. We can more readily improve our yoga practice solo, as it is simply ‘us’ we are dealing with.

Relationship with self is definitely an important part of what yoga teaches, but we don’t live in this world in isolation. We interact with others on a daily basis. Some interaction has little or no effect on us, while other interaction is necessary for our emotional/ physical well-being. Partner yoga provides an opportunity to look at ourselves truthfully in relationship to others. It is ‘in relationship’ that we learn about ourselves. Ram Dass is quoted as saying, “If you think you’re enlightened, go home for the holidays.” (Yoga Journal, June, 2001). The lessons we learn practicing yoga on the mat give us truthful insight into how we are off the mat. The tools we learn with a yoga partner on the mat can be transferred to daily life. There are yoga practices designed strictly to enhance physical intimacy between two adults. I am not limiting the information in this article to physical intimacy. However, intimacy on a physical level is naturally enhanced as we become more honest, trusting and willing to share on an emotional level. In one type of partner yoga, one person does the


pose and the other makes adjustments, adds weight or gently massages to enhance the experience of the pose. Another type of partner yoga is done with two people doing different poses, weaving in and out of each other’s space as in a free form dance. The partner yoga I will discuss is done with two people doing the same pose, simultaneously and depending on each other to hold and deepen the experience as a team. Building trust is key in any healthy relationship; be it parent/child, siblings, friends, or lovers. If we’re always waiting for the other person to throw us under the bus, we will not be able to engage in a healthy, mature relationship. Or if we’re continuously maneuvering to place ourselves in control, the relationship is one sided and doomed for failure. This may be an unconscious pattern that one is unaware of. Issues like those just mentioned come into the light during partner yoga. We can learn to be sensitive to the needs of our partners and of ourselves. We learn to find a middle ground maximizing the strengths, and working through the challenges each partner brings to the mat. We learn to take care of ourselves and our partners by not pushing beyond our

readiness for a pose, and allowing them the same respect. We are affected by the small adjustments our partner makes like a shift in weight, a change in breathing pattern, a slight turn of the head or foot. As we sense what the other is doing, we modify our position without completely ‘giving in’ or ‘taking over’. Commitment through practice helps us to gain trust

in one another. We learn to laugh and not blame, accept and not judge, cooperate and not dominate. Connection with our partner is another important element in partner yoga. I’m talking about the connection that is beyond size, race, religion, gender, occupation, attractiveness, dental health, etc. It’s the connection that we make with another when we realize that we originate from the same Source and we are in this ‘soup’ of life together. We do this by connecting physically heart to heart, and eyeball to eyeball. I like to do this in a seated pose facing my partner. I place my left hand on my partner’s heart and he/she places his/her left hand on my heart. At the same time we look into each other’s eyes and synchronize our breathing until we feel a connection that is beyond physical. It is interesting to see where this takes us. We may laugh through the entire experience, or we may find that our connection with Source brings us both into a place of peace and ease with the other, as well as with Source. It is my experience that our physical bodies are conduits for divine energy to pass through and become manifest on the material plane. Partner yoga provides a wonderful opportunity for this to happen. We

become witnesses of something far greater than our ‘self’. A balance pose is a wonderful way to determine just how we are going to work together and maintain the integrity of the pose. In other words, how the heck are we going to do this without falling down? Tree pose (Vrksasana) provides us with the opportunity

to maintain our balance in holding the pose while creating the space for our partner to do the same. We quickly find out how we must shift our weight to compensate for another body leaning into ours. This takes practice and a good sense of humor. Eventually, as partners we become centered, aligned with self and other, balanced, resilient and connected. Warrior pose (Virabhadrasana 1) gives us the opportunity to appreciate each other’s physical, mental, and emotional strengths. It is good to breathe as one in this pose as we make eye contact, all the while feeling our own strength and ability to hold the pose. Warriors are not fighters. Warriors maintain their integrity as chaos seemingly surrounds. We rely on each other to bring strength, balance and openness to the pose, thereby negating chaos. We find that together, we can stand strong and balanced in the midst of chaos. What a wonderful lesson to apply in our lives off of the mat. Standing to squat truly gives each partner an opportunity to read the other’s energy and move towards creating perfect balance. It may take several attempts to find that sense of balance between you and your partner, but well worth the effort. See how smoothly you can move from one asana to the other with your partner. Once in perfect balance in squat, feel the pull on the shoulders, the alignment of the spine, and the energy

in the legs. Coming back up into standing takes focus and compromise all the way. It’s interesting to notice how well partners can communicate without using words. Child’s pose with a partner can be a wonderful back release. This pose is not done simultaneously, but I wanted to include it in this article because of its benefits. As one partner is contracted, the other is expanded through the spine so both benefit. The partner who is contracted moves deeply into self, while the partner who is expanded opens up to spirit and all the wonders of life. Be sure to change places giving each partner the experience of contraction and expansion. This is a calming pose and very effective when breathing is synchronized. Partners may even be able to feel each other’s heartbeat. A final pose could be ‘Seated Spinal Twist’ with your partner. In this pose, it is important to find a point where each partner is getting the most stretch that the body is ready for. One partner may be more flexible than the other. The challenge is to find the correct amount of traction and stretch to benefit each partner. It will take some time, focus and communication to do this. Partners can come out of the twist, face each other, place hands inNamaste (prayer position at heart level), and silently send messages of support and


gratitude. Take time to truly integrate your partner practice. Allow yourself to connect to Source aware of the joining of individuals to support this. Fully enjoy these final moments of the practice. Resist rushing off to your next activity. Give your partner your full focus. To finish, with hands in Namaste, bow to your partner. It might be appropriate to say aloud the meaning of ‘namaste’ to each other. “The light in me sees the light in you. When you are in your light and I am in mine, we are ONE”. There are as many partner poses as we have imagination for. These are just a few beginning poses to give the reader an idea of what partner yoga is all about. Hopefully, I have also dispelled any misconceptions held concerning partner yoga. We can bring a playful energy to the mat and to each other. Laughter is a wonderful healer. It invites expansion and growth. Before beginning any exercise program, always talk to your doctor. It is best to consult a teacher of yoga before doing the poses presented in this article. It’s not a common occurrence that your eye doctor would recommend eating more chocolate to keep your eyes healthy, but recent studies are showing that a compound found in dark chocolate can increase the amount of blood flow to parts of the

eye such as the optic nerve. Dark chocolate also contains antioxidants, which could potentially help fight against cataracts and macular degeneration. In addition to keeping the eyes healthy, components of dark chocolate may also reduce cholesterol and blood pressure, maintain good blood vessels health, and improve brain function. More studies must be done to confirm the results, but the news is promising for chocolate lovers during this month of celebrating Valentine’s Day. What makes dark chocolate healthier than white or milk chocolate? The solids from the cocoa bean contain compounds called flavonols, which are plant-based antioxidants. Both dark and milk chocolate contain cocoa solids, but milk chocolate contains less flavonols from the cocoa solids because mild and sugar are added. There are no flavonols in white chocolate because it doesn’t contain any cocoa solids.

For some extra chemical-free firepower, a little vinegar is a traditional favorite. 5. Lose the Gas Mask. Over the top Chocolate, Chocolate Cherry Dark Chocolate Fudge

& More Chocolate Cookies!

Ingredients: 2 1/2 C. white chocolate 7 oz. marshmallow cream 3/4 C. butter 1 C. sugar 3/4 C. heavy cream pinch salt 1 tbsp. cherry flavored gelatin 1/2 C. dried cherries 10 oz. dark chocolate, melted

Ingredients: 8 ounces semisweet chocolate, roughly chopped 4 tbsp. unsalted butter 2/3 C. all-purpose flour 1/2 tsp. baking powder 1/2 tsp. salt 2 large eggs 3/4 C. packed light-brown sugar 1 tsp. pure vanilla extract 1 package (12 ounces) semisweet chocolate chunks

Directions: In large saucepan, melt butter with sugar, add cream and pinch of salt. Bring to a boil over medium high heat. Once boiling, set timer for 5 minutes and add in cherry gelatin. After 5 minutes remove from heat. In mixing bowl, add white chocolate and marshmallow cream. Pour hot mixture over this and beat with a whisk until smooth and creamy (and all chocolate is melted). Fold in dried cherries. Pour in a parchment paper lined 9inch square pan. Pour melted dark chocolate over cherry fudge and refrigerate for 4 hours or overnight. Cut into squares and enjoy!

Directions: Preheat the oven to 350 degrees. Heat chopped chocolate and butter in a microwave safe bowl in 20-second increments, stirring between each, until almost melted; do not overheat. In another bowl, whisk together flour, baking powder, and salt. In a mixing bowl, beat eggs, brown sugar, and vanilla on high speed until light and fluffy. Reduce speed to low; beat in melted chocolate. Mix in flour mixture until just combined. Stir in chocolate chunks. Drop heaping tablespoons of dough 2 to 3 inches apart onto baking sheets. Bake, rotating sheets halfway through, until cookies are shiny and crackly yet soft in centers, 12 to 15 minutes. Cool on baking sheets 10 minutes; transfer to a wire rack to cool completely.

Someone may hold the key to your heart but the key to a good healthy heart requires proper diet and a regular program of physical activity. This Valentine’s Day indulge your loved one in a heart friendly gift or date. Here are some ideas for a heart healthy celebration:

1. Rather than send that box of chocolates think of some keepsake that has more permanence. Look for a poem that expresses your sentiments and make a homemade Valentine.


REC IPE Ingredients 2. Plan a good old fashioned outing – bundle up and go outside for some physical activity. Quality time together is hard to beat. Take a walk – it is free and walking for as little as 30 minutes a day provides heart-health benefits. 3. If your children have a Valentine Party at school, send fresh fruit and vegetables cut in manageable pieces or small boxes of raisins, mini pretzels, pencils or stickers. 4. Eat out less. Prepare a romantic dinner – heart healthy recipes. Add spice to your meals rather than salt and avoid pre-packaged meals that may contain a lot of salt. 5. If you do go out for dinner select heart friendly recipes. Share if you do go out to eat. One entrée usually will feed two people. Splitting it will help you not overdo it.

• Low-sodium teriyaki sauce • 2 (6-ounce) salmon fillets • Sesame seeds • 2 small zucchini, thinly sliced • 4 scallions, chopped • Canola oil Preparation Combine 5 tablespoons teriyaki sauce and fish in a zip-top plastic bag. Seal and marinate 20 minutes. Toast sesame seeds in a large nonstick skillet over medium heat, and set aside. Drain fish, discarding marinade. Add fish to skillet, and cook 5 minutes. Turn and cook for 5 more minutes over mediumlow heat. Remove from skillet, and keep warm. Add the zucchini, scallions, and 2 teaspoons oil to skillet. Sauté 4 minutes, or until lightly browned. Stir in 2 tablespoons teriyaki sauce. Sprinkle with sesame seeds, and serve with salmon.

6. Give to one another by giving back – volunteer for a local charity or donate in your loved one’s name. 7. Support your loved ones efforts to maintain a heart healthy lifestyle. 8. If you do crave to do something sweet, send a fruit basket vs. the box of chocolates. 9. If you do receive a box of chocolates, savor them. Keep them in the freezer and enjoy in moderation over a period of time. 10. One of the best things you can do for your heart is if you smoke, give it up or help a loved one quit. Smoking is the most preventable cause of premature death. 11. Eat more fish particularly oily fish such as salmon, mackerel or tuna twice a week or more. 12. Stay hydrated – staying properly hydrated helps you feel and look better.

Egg decorating was very common in many ancient cultures; 60,000-year-old decorated ostrich eggs were found in Africa and they were also commonly placed in the graves of ancient Sumerians and Egyptians as early as 5,000 years ago. We continue this tradition of dressing up eggs in festive colors and designs every Easter, though we have adapted the archaic tradition and substituted real eggs with eggs composed of delicious milk chocolate and other plastic ones stuffed with varying sweet treats. As a child, the reason behind these elaborate Easter egg hunts were hazy, all that was certain was that whoever collected the most eggs was the coolest kid ever, for that day anyway. There were several Easter egg hunts put on by different organizations around town, but in the years following my elementary school graduation there was a decline in the number of Easter egg hunts sponsored by the community. Last year was the first major surge of a community Easter egg hunt. Organized by Kathi Wolfsteller last year, and with some help from Tanya Grady, who is co-chairing the event this year, Operation Easter was extremely successful with the participation of the community and contributions of local businesses. There were several rounds of egg collecting for kids of various ages, featured an appearance from the Easter Bunny, himself, and had several great prizes for the finders of the golden eggs. These two lovely ladies put many hours of labor into the event and no doubt brightened the Easter of many little kids. “We wanted the children in Winnemucca to have the experience of a local Easter egg hunt like we had when we were kids growing up in Winnemucca” said Tanya Grady. Is Fido Obese? Considering Obesity in Pets Contributed by Tina Burke, BS, MMA, LVT Veterinary Technician, Keystone Veterinary Hospital, Winnemucca

So how many of us ushered in 2014 with lofty resolutions about losing weight and improving our health? I’d say most Americans with a pulse think about improving their health each year, in order to increase longevity and the ability to enjoy life to the fullest in our golden years. But how many of us made a resolution for our obese pets, to improve their health and quality of life? This year I challenge you to consider your pet’s weight and body condition, and to strive to improve his or her health if necessary. Many people do not realize their pets are overweight or obese. According to a study done in 2010 by the Association for Pet Obesity Prevention, an estimated 54% of dogs and cats are overweight, with 21% of those being obese.

An obese pet is one that exceeds its ideal weight by 15 to 20%. The health risks to obese pets are many, including diabetes, osteoarthritis (from additional stress on bones, joints, and ligaments), heart disease, respiratory problems, high blood pressure, digestive disorders, increased cancer risk, skin and hair coat problems, and decreased quality and length of life, among others (Oregon Veterinary Medical Association, oregonvma.org, 2013). How can you tell if your pet is obese? This assessment can be difficult, as people have varying perceptions of what a “fit” pet looks like, and each animal is an individual and will carry weight differently. A good way to evaluate your pet is to assess his/her body condition using a Body

Condition Score Chart (Figure 1). Use the chart’s visual depictions along with the written descriptions to determine where your pet lies on the body condition spectrum. An ideal body condition is a score of 4 or 5. Note that you should be able to feel your pet’s ribs with a slight layer of fat over them, and when viewed from above, you should be able to see a defined waist. (You will see indentations in the abdominal area.) Of course, your veterinarian is a great resource to assist you by providing an honest, objective assessment of your pet’s body condition.

The IRS Volunteer Income Tax Assistance (VITA) and the Tax Counseling for the Elderly (TCE) Programs offer free tax preparation for taxpayers who qualify. The Frontier Community Action Agency (FCAA) has partnered again for the 5th year with the IRS in providing a VITA site to Humboldt County and the surrounding areas. Free tax preparation services will be available starting February 3, 2014 to eligible people who make $58,000 or less. IRS-certified volunteers will be providing free basic income tax return preparation with electronic filing capabilities. They will be informing taxpayers about special tax credits for which they may qualify such as Earned Income Tax Credit, Child Tax Credit, and Credit for the Elderly or the Disabled. All efforts in ensuring that working families have the expertise and support of trained preparers available to them at NO COST! There is no advantage to filing on paper before the opening date and you will receive your refund much faster by using e-file with direct deposit. Many filers traditionally do not feel comfortable completing their own tax returns, and as a result, turn to the commercial tax

service industry for assistance. In fact, more than 68 percent of taxpayers who claim the Earned Income Tax Credit (EITC) pay a commercial tax preparation fee agency to do their returns. While there is a strong need for commercial tax preparers, most charge lowincome filers high fees to do uncomplicated returns and many push high interest refund anticipation loans (RALs) to taxpayers, in order to provide the filer with a faster refund. These fees and refund anticipation loans can take a significant percentage out of a low-income working family’s refund. A city thrives when its residents thrive. Yet many families, even though they are employed fulltime, continue to struggle to meet their families’ basic needs. Local elected officials across the country have discovered a way to strengthen working families while bringing more federal dollars into the local economy, by connecting eligible workers to the Earned Income Tax Credit (EITC). The EITC provides a financial boost to these families by reducing their tax burden and, in many cases, giving them a tax refund when they file their annual income tax return. As part of the partnership between the Internal Revenue Service (IRS) and FCAA, the IRS has provided the tax software and training for the actual tax preparation process. The FCAA is currently scheduling appointments and are able to meet the needs of both English and Spanish speaking individuals.
