Cowboy Cookie....

INGREDIENTS ½ c. white vinegar

I think everyone can recall the cookie bake-off between Laura Bush and Tipper Gore....well here is the best recipe:

½ c. sugar

Laura Bush’s Texas Govenor’s Mansion Cowboy Cookie Recipe

1 c. oil 2 tbsp. balsamic vinegar 2 small cans of white corn 1 can pinto beans 1 can black-eyed peas 1 can black beans 1 green, red and yellow pepper, chopped ½ medium red onion, chopped cliantro, chopped, to taste

INGREDIENTS 3 c. all-purpose flour 1 tbsp. baking powder 1 tbsp. baking soda 1 tbsp. ground cinnamon 1 tsp. salt 1 1/2 c. butter, at room temperature 1 1/2 c.granulated sugar 1 1/2 c. packed light-brown sugar

DIRECTIoNS

Bring the white vinegar, sugar, oil and balsamic vinegar to a boil and let cool to room temperature. This is the salad dressing.

1 tbsp. vanilla extract

Then drain and rinse all of the canned beans and corn and put in large bowl. Add all fresh ingredients.

3 c. old-fashioned rolled oats

Pour the cooled dressing over the vegetables and stir. You may not need all of the dressing. Refrigerate overnight or at least a few hours for flavors to combine. (picture from www. annieathome.com)

DIRECTIoNS Heat oven to 350 degree F. Then mix together the flour, baking powder, baking soda, cinnamon and salt in a bowl. In another bowl, beat butter on medium speed until smooth and creamy. Gradually beat in sugars to combine. Add eggs, one at a time, beating after each. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. We all have a few things we'd like to do less of, and longer list of what we'd like to do more of. One item on our list includes putting more oats on our table, a simple small change with big nutritional rewards.

Double Down on oats > Once again, Mom was right about eating a good breakfast! “It’s the most important meal of the day.” Old-fashioned oats once dominated the breakfast table, but slipped to the side as boxed cereals and the morning fast food window gained favor. Now’s a good time to rediscover oats and the fabulous foods that can be made from this healthy whole grain. What’s old is new again!

Oats are a grass crop harvested in temperate regions around the world. It’s a crop that’s tolerant of a wide range of growing conditions making them an accessible food source for many. Oats require minimal processing; this, too, makes them a valuable, natural source of good nutrition.

Oats are exposed to heat and moisture treatment to stop enzymatic activity that would otherwise start a breakdown of fats in the grain – a process that stabilizes the oat kernel.

Harvesting Like other grains, oats are harvested by a combine. The straw is used for bedding and some medicinal purposes, while the seeds become food for people and livestock.

Soluble fiber absorbs water and gives the sensation of fullness for a longer period of time. Good for weight loss situations. buYing oats > STEEL CUT OATS Steel-cut oats are minimally processed and commonly available. The husked oat kernel is sliced into 2 or 3 pieces. They’re also known as Irish oats, or pinhead oats. Uses: Steel-cut oats may be boiled or steamed for 15-25 minutes or until tender. Advantages: Steel-cut oats present the whole grain advantage of slowed digestion with a glycemic index of 42; a wet preparation is a hearty oatmeal, drier versions can be pilaf-like. OLD-FASHIONED ROLLED OATS Old-fashioned rolled oats are a cupboard staple. Also minimally processed, the whole oat (oat groat) is rolled flat when moistened, then dried for long-term storage. Uses: Rolled oats are the standard form cited in most recipes, and may be used for oatmeal or in any baked good. Advantages: Regular rolled oats have the most versatility for all cooking and baking occasions. They have all of oats’ health benefits including gradual digestion with a glycemic index of 56. INSTANT OATS Instant or quick oats are cut oat kernels rolled more thinly than standard rolled oats. There’s no nutritional difference between old-fashioned and instant oats. Uses: Instant oats are helpful where the absorption of liquid needs to be fast, or where an easy thickener is needed. Advantages: Instant oats have maximum surface area allowing them to absorb water and cook more quickly. Instant oats “dissolve” faster and have glycemic index of 66.

Five easY waYs to make “real” oatmeal > Oats are easy to enjoy. They cook quickly in hot water or milk. Instant or quick oats are only slightly faster than rolled oats. Rolled oats have more staying power and are our preference in the methods below: For variation, use water, milk, soy milk, almond milk, or experiment with alternative liquids for cooking your oatmeal. 1. STOVETOP In a quality, heavy-bottomed saucepan heat water or milk. Bring liquid to a boil, add oats and a pinch of salt. Cook over low heat for 5 minutes while stirring occasionally. Or, once oats are added, remove from heat, cover, and allow to sit for 7 minutes. Stir and serve. 2. MICROWAVE Combine oats, liquid, and a pinch of salt in a microwavable bowl. Cook on high for 2-1/2 to 3 minutes. Stir and serve.

Start with this ratio then adjust to your preferred consistency. 3. SLOW COOKER Use “steel-cut” oats for this overnight method. Combine 1 cup steel-cut oats with 4 cups of liquid and a pinch of salt. Optionally, add any desired dried fruit or sweeteners. Cook overnight (8 hours) on low. 4. OVERNIGHT OATS Mix together ½ cup rolled oats with 1 cup of milk, a pinch of salt and any add-ins that you like in a 2 cup lidded container. Place in the refrigerator overnight. The oats will soak up the liquid and become tender.

Make-ahead oatmeal Using one of the methods noted here, make a batch of oatmeal for an entire week. Once cooked and cooled, package into individual servings and refrigerate. Morning sustenance is cooked and read for the week ahead at 9 cents a serving. january 2014 | everythingwinnemucca.com

5. BAKED OVEN OATS This is a great method when a crowd needs a hearty breakfast. In a bowl, combine 2 cups rolled oats, 4 cups milk, 2 eggs, 2 teaspoons vanilla, ¼ teaspoon salt, and any desired dried fruit in a 2-quart baking dish. Bake in a 350 F oven for 30-40 minutes or until the center is set. Serve with toppings that guests can customize to their liking.

Spices or flavor extracts jazz up oatmeal’s flavor; vanilla or cinnamon are classic oatmeal partners, but also try a drop of almond extract, butter extract, or a grating of nutmeg. Sweeten your oatmeal with brown sugar, honey, agave syrup, maple syrup, or a spoonful of jam. A little bit of sweetening, used in moderation, can go a long way in improving your enjoyment of oatmeal. Yogurt rounds out a serving of oatmeal with additional protein and calcium. Freeze-dried fruits raspberries, strawberries, mangoes, and peaches make prime additions to oatmeal.

Purchase just the desired quantities of ingredients at food stores that offer natural foods in bulk bins; this eliminates any leftover components. Store cooled granola in an airtight container to maintain freshness.

This classic granola recipe is full of hearty, earthy, nutty flavors and is simply adorned with a handful of dried cranberries. It comes from Korinn, one of the great original bakers at Flour. Every morning, she brought in a little baggie of granola for her breakfast, and we all begged her to share because it was so delicious. Finally, she brought in the recipe – which came from her mom – so that we could make our own. We tweaked it just a bit, and now we are passing it along to you. My favorite way to enjoy this granola is layered with yogurt and fresh berries.

Mom's Granola 2-1/2 cups (270 grams) old-fashioned rolled oats (not instant or quick cooking) 1-1/2 cups (200 grams) wheat germ 1/2 cup (60 grams) sweetened shredded coconut 3 T sesame seeds 1/3 cup (40 grams) sunflower seeds 1/2 cup (50 grams) chopped walnuts 1/2 cup (50 grams) sliced almonds 2 t ground cinnamon 1 t kosher salt 3/4 cup (150 grams) canola oil 3/4 cup (255 grams) honey 2 t vanilla extract 1/2 cup (80 grams) dried cranberries

Position a rack in the center of the oven, and heat the oven to 350 degrees F. Line a baking sheet with parchment paper. In a large bowl, combine the oats, wheat germ, coconut, sesame seeds, sunflower seeds, walnuts, almonds, cinnamon, and salt and mix well. In a small bowl, whisk together the oil, honey, and vanilla. Pour the wet ingredients over the dry ingredients and mix thoroughly until the dry ingredients are evenly coated.

Pour the mixture onto the prepared baking sheet and spread in an even layer. Bake for 30 to 35 minutes, or until golden brown. Stir the granola with a spatula or wooden spoon several times during baking to ensure even browning. Let cool completely, then add the cranberries and mix to distribute them evenly. The granola can be stored in an airtight container at room temperature for up to 1 week.

Morning glory” muffins used to be all the rage. They boasted a fiber-rich assortment of ingredients that was supposed to give you a good start to the day. I always liked the idea of them, but I was often disappointed at how heavy and greasy and overly sweet they could be. When I decided to put a morning glory-type muffin on the breakfast menu at Flour, I wanted it to be filled with wholesome, good-for-me ingredients but still be light, moist, and delicious. So, I adjusted the traditional roster of ingredients and then added a few of my own twists to create an updated version. It’s breakfast-on-the-go and the perfect start to a good morning, indeed.

Good Morning Muffins In a medium bowl, stir together the wheat bran and hot water until the bran is completely moistened. Add the zucchini, raisins, pecans, coconut, and apple and stir until well mixed. Using a stand mixer fitted with the whip attachment, beat together the sugar and eggs on medium speed for 3 to 4 minutes, or until the mixture thickens and lightens. (If you use a handheld mixer, this same step will take 6 to 8 minutes). On low speed, slowly drizzle in the oil and then the vanilla. Don’t pour the oil in all at once. Add it slowly so it has time to incorporate into the eggs and doesn’t deflate the air you have just beaten into the batter. Adding it should take about 1 minute. When the oil and vanilla are incorporated, remove the bowl from the mixer stand. In a medium bowl, stir together the flour, oats, baking powder, salt, and cinnamon until well mixed. Add the flour mixture to the egg mixture and fold carefully just until the dry and wet ingredients are well combined. Then add the bran mixture and fold again just until well combined. Spoon the batter into the prepared muffin cups, dividing it evenly and filling the cups to the rim (almost overflowing). Bake 35 to 45 minutes, or until the muffins are lightly browned on top and spring back when pressed in the middle with a fingertip. Let cool in the pan on a wire rack for 20 minutes, then remove the muffins from the pan. The muffins taste best the day you bake them, but they can be stored in an airtight container at room temperature for up to 3 days. If you keep them for longer than 1 day, refresh them in a 300 degree F oven for 8 to 10 minutes.

Knowing exactly how much food is on your plate is key to understanding and guiding your caloric intake.

Accuracy: Weighing ingredients is more accurate than volume-based measuring cups. When baking, a cup of flour means flour that has been fluffed, spooned into a measuring cup and leveled off. How much “fluffing” is correct can be highly variable. Brown sugar is measured

Oatmeal-Maple Scones I always order oatmeal when I go out for breakfast, and we always have boxes of instant oatmeal, packages of regular rolled oats, and canisters of steel-cut oats in the pantry at home. It’s not that I like oatmeal so much, it’s that, instead, I like all the things I mix into it. I especially enjoy it sweetened with copious amounts of maple syrup. I developed this recipe when I first opened Flour as a way to get that oaty-mapley fix in a scone package. The use of maple syrup as the sweetener in this scone makes the dough extra soft so you can drop these scones onto a baking sheet, rather than patting out the dough and cutting the scones with a knife or cookie cutter. I adore scones made this way. The craggy, uneven tops are browned into crunchy, addictive bits.

1-1/2 cups (210 grams) unbleached all-purpose flour 1-1/4 cups (125 grams) old-fashioned rolled oats (not instant or quick cooking) 1-1/2 teaspoons baking powder 1/4 teaspoon baking soda 1/4 teaspoon kosher salt 1/2 cup (50 grams) pecan halves, toasted and chopped 1/2 cup (80 grams) golden raisins 1/2 cup (1

stick, 114 grams) cold unsalted butter, cut into 8 to 10 pieces 1/3 cup (80 grams) cold heavy cream 1/2 cup (160 grams) maple syrup 1 cold egg Maple Glaze: 1 cup (140 grams) confectioners’ sugar 3 tablespoons maple syrup 1 to 2 tablespoons water

Position a rack in the center of the oven, and heat the oven to 350 degrees F. Using a stand mixer fitted with the paddle attachment (or a handheld mixer), mix together the flour, oats, baking powder, baking soda, salt, pecans, and raisins on low speed for 10 to 15 seconds, or until combined. Oatmeal-Maple Scones over the top and beat on low speed for about 30 seconds, or until the butter is somewhat broken down and grape-size pieces are still visible. In a small bowl, whisk together the cream, maple syrup, and egg until thoroughly mixed. On low speed, pour the cream mixture into the flour-butter mixture and beat for 20 to 30 seconds, or just until the dough comes together. It will be fairly wet. Remove the bowl form the mixer stand. With a rubber spatula, scrape the bottom and sides of the bowl to ensure that all of the dry ingredients are mixed into the dough. Using a 1/3-cup dry-measuring cup, drop

mounded scoops of the dough onto a baking sheet, forming 8 scones and spacing them 2 to 3 inches apart. (At this point, the unbaked scones can be frozen, tightly wrapped in plastic wrap, for up to 1 week. Proceed as directed, baking directly from the freezer and adding 5 to 10 minutes to the baking time). Bake for about 40 minutes, or until the scones are golden brown on top. Transfer to a wire rack to cool for 30 minutes. To make the maple glaze: While the scones are cooling, in a small bowl, whisk together the confectioners’ sugar, maple syrup, and enough of the water to make a smooth, pourable glaze. You should have about 1/2 cup. (The glaze

can be made ahead and stored in an airtight container at room temperature for up to 1 week). When the scones have cooled for 30 minutes, brush the tops evenly with the maple glaze, then serve. The scones taste best on the day they are baked, but they can be stored in an airtight container at room temperature for up to 3 days. If you keep them for longer than 1 day, refresh them in a 300-degree-F oven for 4 to 5 minutes. Or, you can freeze them, wrapped tightly in plastic wrap, for up to 1 week; reheat, directly from the freezer, in a 300-degree-F oven for 8 to 10 minutes.

Tamales! The tamale caught on very fast and eventually grew in variety and diversity unknown in today’s culture. There were plain tamales, tamales with red, green, yellow and black chile, tamales with chocolate, fish tamales, frog, tadpole, mushroom, rabbit, gopher, turkey, bee, egg, squash blossom, honey, ox, seed and nut tamales. There were white and red fruit tamales, white tamales, yellow tamales, dried meat tamales, roasted meat, stewed meat, bean and rice tamales. There were sweet sugar, pineapple, raisin, cinnamon, berry, banana and pumpkin tamales. There were hard and soft cheese tamales, roasted quail tamales, ant, potato, goat, wild boar, lamb and tomato tamales. Well, you get the idea. The sizes, colors and shapes varied almost as much as the fillings. They were steamed, oven-roasted, fireroasted, toasted, grilled, BBQ’d, fried and boiled. The wrappings were cornhusks, banana leaves, fabric, avocado leaves, soft tree bark, and other edible, non-toxic leaves. The most commonly used were corn husks, banana and avocado leaves.

Over the millennia, the varieties were minimized to the most common now being red and green chiles, chicken, pork, beef, sweet, chile, cheese and vegetables. Also changed was the everyday occurrence of making the tamales. With the preparation being so labor and time intensive, tamales became holiday fare, made for special occasions. This tradition remained for thousands of years, with the women of the family working together to make the sauces and meats, preparing the masa, and finally assembling and wrapping the tamales before steaming them in large pots on the stove. The process takes all day, the preparation often starting one or two days in advance. It is virtually unheard of to make a few tamales. In most cases, when they are made, hundreds are made at one time. Everyone-young, old, family and friends- are invited to tamale feasts where they are enjoyed, savored and loved by all.

Champurrado is a chocolate-based atole, a warm and thick Mexican drink, prepared with masa, water or milk, and occasionally contains cinnamon, anise seed and/or vanilla bean. Atole drinks are whipped up using a wooden whisk called a molinillo. The whisk is rolled between the palms of the hands and then moved back and forth in the mixture until it is aerated and frothy. Champurrado is traditionally served with churros in the morning as a simple breakfast or as a late afternoon snack. Champurrado is also a very popular during Dia de los Muertos (Day of the Dead) and at Las Posadas (the Christmas season) where it is served alongside tamales. Hardwood

Laminate

Traditional hardwood flooring is made from wood and timber products and is a solid plank. Hardwood floors are popular for several reasons. Most people like the appearance. The warm glow of wooden floors is unbeatable. Hardwood floors are also easier to clean than carpet and give your home a spacious, clean look. The disadvantages of hardwood are price and maintenance. Due to the fact that real wood is used, the price is higher than other materials. Special care also must be taken to avoid scratching the surface of the wood. 2 tsp. plus ¼ cup olive oil, divided

2 eggs, lightly beaten

3 Tbsp. Worcestershire sauce

2 lbs. fresh green beans, trimmed

1 graham cracker crust (9 in.)

2 Tbsp. cracked black pepper

1 cup water

2 tsp. garlic powder

1 cup lightly salted cashews, coarsely chopped

1 can (21 oz.) raspberry pie filling, divided

1 box (3 lbs.) kosher salt (About 6 cups), divided

½ cup water

½ tsp. salt Preheat oven to 450 degrees. Line a shallow roasting pan with heavy-duty foil. Place 3 cups salt on foil, spreading to form a ½ inch layer. Brush roast with Worcestershire sauce; sprinkle with pepper and garlic powder. Place roast on layer of salt, fat side up. In a small bowl, mix water and remaining salt (mixture should be just moist enough to pack.) Beginning at the base of the roast, press salt mixture onto the sides and top of roast. Roast 15 minutes. Reduce oven setting to 325 degrees. Roast 2-2 ¼ hours or until a thermometer reaches 130 degrees for medium rare; 145 degrees for medium. (Temperature of roast will continue to rise about 15 degrees upon standing.) Let stand 20 minutes. Remove and discard salt crust; brush away any remaining salt. Carve roast into slices.

¼ tsp. pepper Preheat oven to 375 degrees. Cut stem ends off unpeeled garlic cloves. Place cloves on a piece of foil. Drizzle with 2 tsp. oil; wrap in foil. Bake 25-30 minutes or until cloves are soft. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork to form a paste. In a Dutch oven, heat remaining oil over medium-high heat. Add green beans and garlic; cook and stir 2-3 minutes. Add water; bring to a boil. Reduce heat; simmer, uncovered, 7-10 minutes or until beans are crisp-tender and water is almost evaporated, stirring occasionally. Add cashews, salt and pepper; toss to combine.

Preheat oven to 350 degrees. In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until blended. Pour into crust. Drop ½ cup pie filling by tablespoonful’s over batter. Cut through batter with a knife to swirl. Bake 35-45 minutes or until filling is set. Transfer remaining raspberry filling to a covered container; refrigerate until serving. Cool pie 1 hour on a wire rack. Refrigerate at least 2 hours, covering after completely cooled. Serve with the reserved filling.

Welcome back from the holidays! As we closed out the end of December with Paris France we said we would head to Spain and Portugal. Yes, we are still in Europe! Europe offers a lifetime of travel with so many places to visit. The starting point for this month in Spain will be Madrid. Madrid is the capital of Spain and its largest city with a population of roughly 3.3 million. The entire population of the Madrid metropolitan area is calculated to be around 6.5 million. A must see is the Teatro Real opera house. Shaped like a compressed oval, the interior of the city's opera house is breathtakingly ornate compared with its sombre façade, and one of the most technologically advanced in Europe. Productions

are impressive, with complicated revolving sets and attention to detail in costume and props. It also enjoys funding from some of Spain's biggest companies, as well as the Comunidad de Madrid. For a real treat of Spain you must go to the Palacio Real. Commissioned by Philip V after the earlier Alcázar was lost to a fire in 1734. The Royal Palace is rarely used by the royal family, and many of its 3,000 rooms are open to view. The architects principally responsible for the final design, which reflects the taste of the Spanish Bourbons, were Italian - Giambattista Sacchetti and Francesco Sabatini with contributions by the Spaniard Ventura Rodríguez. Filippo Juvarra, Philip V's first choice, had planned

a palace four times as large, but after his death the project became a little less ambitious. Completed in 1764, the latebaroque palace is built almost entirely of granite and white Colmenar stone, and, surrounded as it is by majestic gardens, contributes greatly to the splendor of the city. The Palace Real (Palacio de Oriente) is full of history with way too much to list, and is a true jewel of Spain. If you are thinking of a cultural trip in Spain, then take note. The Medieval Towns and Villages Route runs from the Basque Country to Extremadura. Here you have the chance to explore Spain from the very shores of the Cantabrian Sea to beautiful rural, inland areas, and to enjoy the country's natural and cultural diversity. All along the way there are towns and villages with stunning heritage and monuments, perfectly conserved over the centuries. You will love their medieval atmosphere. You can get underway in the Basque Country, in Hondarribia (Guipúzcoa province), right on the Basque coast. Amongst other things, you will love its maritime atmosphere, its nearby beaches and its internationally-renowned gastronomy. In the same region, now inland in the province of Álava, you will find Laguardia. Make a stop to stroll around its old town and sample the local wine with the internationally prestigious Rioja Alavesa Designation of Origin. There are a few ways to get to Spain, and the most popular is to fly into Madrid Spain, and book a structured land tour. Of

course you can go out on your own and do your own sightseeing; however, as a travel advisor we always recommend a guided tour. We have previously mentioned in the past, it is not always easy to understand the language and the ways of the land. After all you are a visitor in their country. You can always take a beautiful cruise to one of the main ports-of-call, Barcelona Spain. Barcelona is located in the northeastern part of the country, 90 miles south of the French border. People from all around the world enjoy visiting this city for its individuality, cultural interest and physical beauty. When Hans Christian Andersen visited in 1862, he remarked that Barcelona was the "Paris of Spain." You're likely to agree. The city is a major cultural center with a fascinating history. Everywhere are archives, libraries, museums and buildings of interest - plus superb examples of modernist and Art Nouveau décor and architecture. There are cruises that start in Venice, Italy to Ft. Lauderdale USA, which makes a stop in Barcelona Spain for a full day and evening. Always check with your travel advisor for availability. So to wrap up Spain we are going to provide you a quick history lesson. Spain, originally inhabited by Celts, Iberians, and Basques, became a part of the Roman Empire in 206 B.C., when it was conquered by Scipio Africanus. In A.D. 412, the barbarian Visigothic leader Ataulf crossed the Pyrenees and ruled Spain, first in the name of the Roman emperor and then independently. In 711, the Muslims under Tariq entered Spain from Africa and within a few years completed the subjugation


of the country. In 732, the Franks, led by Charles Martel, defeated the Muslims near Poitiers, thus preventing the further expansion of Islam in southern Europe. Internal dissension of Spanish Islam invited a steady Christian conquest from the north. Moving on to the country of Portugal, officially the Portuguese Republic is a unitary semi-presidential republic. It is located in South-Western Europe, on the Iberian Peninsula, and it is the westernmost country of the mainland. As we talk about vacations there are always a few ways one can travel to any place and Portugal is no different. The best way to see Portugal is to fly in and book a land tour. Now with that being said, yes there are cruises you can take to see this beautiful part of Europe. Lisbon is the capital and the largest city of Portugal, and is a port-of-call for cruise ships, plus the starting point of many land tours. There is a lot to see in this capital city and is rich in history. One of the areas that you need to see is Alfama, the oldest district of Lisbon. It spreads down the southern slope from the Castle of São Jorge to the River Tagus. It’s name, derived from the Arabic Al-hamma, means fountains or baths. During the Islamic invasion of Iberia, the Alfama constituted the largest part of the city, extending west to the Baixa neighborhood. Increasingly, the Alfama became inhabited by fishermen and the poor; it’s fame as a poor neighborhood continues to this day. While the 1755 Lisbon Earthquake caused considerable damage throughout the capital, the Alfama survived with little damage, thanks

to its compact labyrinth of narrow streets and small squares. It is a historical quarter of mixed-use buildings, homes with small shops, Fado bars and restaurants. Modernizing trends have invigorated the district: old houses have been re-purposed or remodeled, while new buildings have been constructed. Fado, the typically Portuguese style of melancholy music, is common (but not obligatory) in the restaurants of the district. Other areas of interest would include Algarve were you will admire spectacular views from the Sagres Peninsula. In Vilamoura take a drive across the Serra de Calderirao to Evora. Visit the cathedral, the Roman temple and Ossuary Chapel. Three more areas that must be on your bucket list: stop off in the city of Viseu and then travel though the Douro Valley where port wine was produced and visit the gardens at the Palacio de Mateus. This may not be the largest of countries but it is big in many other ways. The cities in Portugal offer some of the best hotels and restaurants, and they make the most wonderful olive oil in the world. Despite being relatively restricted to an Atlantic sustenance, Portuguese cuisine has a lot of Mediterranean influences. So get out and see the world, land or sea and be sure to check with your travel service for the best travel arrangements. The first weekend had arrived. I had been waiting since I found out. My alarm clock sounded. It was four in the morning and I rolled out of bed. I heard my dad in the kitchen. I looked out my door and he was packing lunch. I threw on my camo and boots and started helping him. I wasn’t the only one in the family with a tag. My dad also had one, so we were on a quest for two monsters. We picked up my uncle Ken and started our way out to area 031. We arrived on top of the mountain just before daybreak. We arrived at the spot where we had seen a monster buck two years previous. We started glassing and saw a couple does here and there but no bucks. As the day went on we picked up a few forkies and spikes. Around mid-afternoon, we started to head down the mountain slowly. When we got down to the bottom to head to a new spot to find the big ones, we ran into my dad’s friends, Doug and George Miller, and my cousin Jake. We talked for a few hours. At around two, Jake and his roommate from college, Carter, and we took Jakes rhino to do some spotting. We headed up some rolling hills and found ten does and four small bucks. The good thing was we were seeing some deer but nothing good. We headed home. At home we looked at the calendar and we weren’t going to go hunting again for two weeks. So that left us with only two weekends to hunt since they had taken away the late season hunt. Finally we got to head back out and start hunting again. Same as before, little bucks and some does. The last weekend came and we hooked up the camp trailer and headed out. We made our same route and saw little bucks. We ate some lunch and took about an hour nap and started down the mountain. We were traveling along down the mountain slowly looking back up draws seeing if we couldn’t spot something up and moving. Then all of a sudden my brother said, “There is a nice buck!!” My dad and I spun our heads around to where Mitch was pointing. I hopped out of the truck with the 300 ultra mag and the shooting sticks. I snuck off the road and set up. I looked through the scope and saw he was a five on his right and a four on his left. My dad was still in the truck. I turned to him and he said, “He is 100 yards. Are you gonna take him?” That was the question. I looked at the buck again and put him at the best buck I would have ever killed. Ten minutes had gone by and he was still standing there. “Are you

gonna take him?” I heard again. I nodded my head. He gave me a nice broadside shot. I put the crosshairs at the bottom of his shoulder and eased back on the trigger. The gun fired. I saw the deer stumble down the hill. “He is down!” I heard. I turned back to my dad and brother who had big smiles on their faces. We waited a couple minutes to make sure the one shot kill was legit. It was. We made the short walk up to the deer. There was no ground shrinkage with this buck. He was bigger than I had expected. We took some pictures and then got down to the dirty work. We quartered him out and loaded him in the back of the truck. We talked about all the cool features of the buck from his deep forks and his mass to his height. We were still on a mission to find my dad an even bigger buck. We drove back to the camp trailer to settle in for the night. The next morning we got up and made our usual route. After making this route for the fifth time, we still did not see anything to take a second look at. We went back down the same canyon to see if a bigger buck had moved in with the does of my buck. Nothing! We decided to go to a totally different mountain

down the valley a ways. One the way there we made a pit stop with my dad’s buddies again. This time it wasn’t as long as the last one knowing we only had one day left to hunt. We loaded back up and headed out. It was about the time the deer have been getting up to move around. Twenty minutes later and we stopped to glass the backside of the Double H’s. It wasn’t but five minutes of glassing and we hear, “He is huge.” We took one look at him and knew we couldn’t pass him up. The back side of the Double H’s are hard to hunt. At the top are big cliffs, then draws, and flats-once the deer hit the flats they take off running. And the deer we were hunting was just coming out of the cliffs. We pulled our truck up to the next draw to get it out of site. Gun, shooting sticks, packs and range finder and we were headed up the bottom of the draw where we had seen him feeding down. We eased our way around the corner of the draw. Wind was in our favor; and we kept inching our way up. When we got to where we thought they were, no deer. We quickly hiked to the top of the finger ridge to see if the monster had dropped off the

backside. Sure enough, my dad set up the sticks. He was on the run “489”, my brother said. The back one. Kay, he shot. He had missed low but the deer must have seen the truck and they stopped. My dad was waiting for another shot. But the deer was out to 530 yards now and the buck was surrounded by the does. We waited for the does to clear. We gave him the okay and he shot again. The deer arched his back. You could tell he was hit. He limped slowly back to his does. Ten minutes went by of him just standing there with his back arched. Finally the does left him and took off running. He turned to follow; my dad shot again. Missed again. “Dad, you have to get this buck!” That’s all we had to say and the next shot he took the deer dropped like a bag of dirt. I turned to my dad and gave him a big high five and so did my brother. We waited to make sure he didn’t get back up. We wove our way down through some shale. We started looking for the buck where he had fallen. “Found him,” my brother said. We couldn’t believe how wide he was. We pulled out the camera and started snapping pictures. We helped my dad cape him out.

The sun had dropped and it was dark by the time we had everything loaded and ready to head back to camp. At camp we loaded the coolers, hooked up the trailer and headed for home. Once we got service, we started making calls on the buck my dad just shot. We unloaded the deer at home and Jim Billingsley came over and we scored the bucks. Mine gross scored 167. My dad’s grossed at 182 and was 33 inches wide. All in all, it was a great weekend harvesting two nice bucks with my dad and brother.

It’s a question we hear all the time. If you’ve experienced great results from care in our office, it’s only natural to want someone you love to benefit too. Here are some approaches you may find more helpful than threats.

Offer an invitation. We are open and welcoming to skeptics, doubters and cynics! We stand ready to field phone calls—even anonymous ones. Or bring your loved one with you to take a tour of our practice on your next visit.

Are you having a hard time convincing your spouse to see a chiropractor? Ask questions. Rather than judge their unwillingness to try chiropractic, become curious. Since our behaviors are the result of our beliefs (conscious and unconscious), try to find out what belief(s) are standing in the way. Often it’s some unfounded fear or misconception. Find out what the real issue is.

Give it time. Change takes time. Whether it’s making changes to the spine or changing someone’s beliefs. Be patient. Trust that your friend or family member will choose chiropractic if and when the time is right.

Supply information. One of the best ways to defuse irrational fears is by sharing information. Let us know how we can help. What could we do to equip you with the information you need to make a difference?

A Yoga Experience Contributed by Rae Edwards, Yoga Therapist

How do I maintain the necessary motivation to fulfill my New Year’s Resolution? Great question! Do the following scenarios sound familiar? I want to lose weight, but where did the will power of the first week in January go? The only thing I’ve lost is my ability to stick to a diet. I want to quit smoking and I did great for the first week. Then, the plumbing in my house froze and the first tool I went for was a cigarette. I resolved to quit drinking beer and I really did quit January 1 – January 13, 2014. I felt great until the 14th. An old friend dropped by to watch a ball game and I figured one beer didn’t really count as “drinking beer”. Well, one drink led to another and we ended up washing down chips and dip with a couple of 6 packs. The next day I was back to my old habits. The ink on my resolution list not even dry yet. Oh boy. I’m here to tell you there is hope. There are proven techniques to help us accomplish what we want in our lives. I have gleaned the following information from my training in Hypnotherapy and it is supported and deepened by my yoga training. Let’s use ‘losing 20 pounds’ as an example, but the basic principles may be applied to achieving any goal.

1. The conscious mind must believe it is possible. In your heart of hearts, do you truly believe that it is possible to lose 20 pounds? Or are you wanting to believe it, but can’t quite imagine it? If you don’t really think you will be able to lose 20 pounds, work on changing your mind first. Remember a time when you achieved a goal that seemed improbable. Bring all the details surrounding that situation to mind. Remember how you felt when you did accomplish what you set out to do. Question any negative thinking that might get in your way. “I am weak”. Is that really true? Look over your life and remember when you were able to tune into your strengths and use them to your advantage. This will take some soul searching. It’s worth the time and effort to lay the groundwork which greatly improves the probability of success. 2. A fully conscious decision is necessary in achieving goals. To ‘decide’ means to make up your mind. When your mind is truly made up, nothing short of danger can stop you. Have you decided to lose 20 pounds, or is it more like wishful thinking? Are you willing to take the steps necessary to lose the weight? Have you decided to increase your exercise, to cut out 100 calories a day from your diet, to


have smaller portions, to eliminate the foods that trigger overeating for you, and to deal with your emotions in a positive way, such as breathing techniques rather than with food? Look carefully at what losing weight entails. Have you decided to do whatever is necessary to reach your goal? If not, then begin by working on your decision. Maybe your decision could be to simply become aware of your daily caloric intake. Another decision might be to talk to your doctor about the benefits of weight loss. How will it help you? What’s truly

in it for you? Again, lay a solid foundation for yourself. Find out what speaks to your heart. 3. Want vs. Need. Say, “I need to lose 20 pounds”, then feel the response in your body. Is there any support? Now say, “I want to lose 20 pounds”. Can you feel the difference? Which is the more powerful statement? ‘Need’ suggests lack. ‘Want’ suggests desire. Your brain and your subconscious will support lack or they will support desire. Vocabulary is very important in achieving goals. Feed your consciousness with positive, powerful statements and you will be supported.

4. Repeat your resolution every day. Wake up each morning with your resolve in mind. Make a commitment then and there to follow your new eating and exercise plan. Promise yourself that this day will be filled with nutritional foods in perfect portions, some kind of extra physical movement (walking, yoga, weights, biking), plenty of water, and thoughts that support you. Remind yourself during the day several times, of how you are taking care of yourself and how good that feels. Repetition is key in changing any behavior. You’ve repeated the unwanted behavior hundreds of times, and it became a habit. You’re simply replacing one behavior with another over and over again until it, too, becomes a habit. Be the boss of your behavior rather than the victim of foolish habits. Step up to the plate and take charge. Don’t forget to congratulate yourself each night of a job well done. 5. When temptation wins. If you go off of your plan for a special occasion, or because of a temporary relapse, remember that it is temporary and you can get right back on your pony and ride. You can always increase your exercise to compensate for eating more than is good for losing weight. Whatever you do, don’t give up. Be flexible enough to look at the overall picture. You will achieve your goal. It’s like paying off a loan. I’ll make double payments for 6 months and it’ll be paid off early. Let’s say, something unexpected requires my money so I miss an extra payment. It’s okay, I’ll still get it paid off early, because I’ll get right back on the program as soon as possible. I’m not going to give up on my overall goal. 6. Meditation. The following 10 minute meditation uses your imagination (a most powerful tool). If practiced correctly, it will prove extremely effective in helping you reach your goal. This must be done every day, at least once to insure the best results. Remember, you

are changing your mind so that changing your behavior comes easily and organically. Find a comfortable chair to sit in. Have your back upright, so that you don’t fall asleep during this process. Take some slow, deep, easy breaths. Allow the exhale to be two counts longer than the inhale. Be sure to count until you find yourself comfortable with this way of breathing without counting. Then simply allow your body to breathe itself in this rhythm. Imagine walking onto the perfect scene. You may be inside or outside. It may be night or day, warm or cool. Whatever you decide, the scene is perfect for you. This place that you are imagining is the place where you are happiest. It is where you can be exactly who you are and feel wonderful about who you are. Everything in this place is designed for your comfort and your peace. Use all of your senses; smell, taste, sight, hearing and touch in creating this place. Connect positive emotions with this place. Allow yourself to feel the peace and the joy this place awakens in you. See yourself there and rest in your sense of well-being. Take several moments to do this. Now, realize that you have a right to be the perfect size and shape for you. You have decided on an ideal weight for your health and self-image. You know that you have every right to achieve what you imagine. Visualize yourself in the body that is perfect for you. Feel how passionate you are about achieving the perfect weight. Feel your commitment to achieving this goal. Notice the overwhelming desire you have to stick to a realistic plan which will enable you to reach your ideal weight. Take several moments to create your vision and your commitment. See yourself already having reached your goal. That ‘self’ is sitting across from you and


is slender, healthy and attractive. Notice everything you can about this new you. Notice the confidence and the energy. It’s not even so much about weight loss, but more about what comes with weight loss. Attractiveness depends on how a person feels about themselves. Just notice how good you feel about yourself at your ideal weight. Notice how your new appearance changes how you feel about yourself. Your sense of accomplishment becomes a foundation for a new belief in yourself. Your confidence allows you to move through life comfortably and with a deep sense of security and well-being. You know who you are and feel wonderful about giving that wonderful being an opportunity for expression in this life. Any guilt or shame that you may have felt in the past is overpowered by your new sense of self. Feel compassion for the old you, as you let go of unproductive negative thinking patterns and develop a new and powerful way of being in your life. Have a conversation with this new self who is sitting in front of you. Ask questions and quietly listen as you receive answers. Go over in detail the eating and exercise plan you have decided to implement. Notice how your new self responds to this plan. Notice the support given and the excitement shown as you unveil your intentions to your new self. Promise to check in on a daily basis to discuss and celebrate all progress, and then ‘DO IT’! Remember progress is determined by tiny, consistent steps which eventually add up to major leaps. Ask for suggestions from your new self if it seems appropriate. You are creating a most powerful support system, one that

lives deep within and cannot be affected by the outside world. Protect and nurture this new relationship with self. Take your time with this process. Be curious. Leave no stone unturned. Before you end your conversation, ask for continued support and help from within. And show gratitude for that help and support. You might give your new self a big hug and a promise to keep this relationship alive. When you feel complete, simply open your eyes and take a few moments to breathe and internalize the positive effects of the meditation. Take time to let every cell in your body, from head to toe, take on the wonderful results. Drink a big glass of cool water. Have pen and paper nearby, so that you can easily write down any and all positive information which may have come to you during the meditation. Write in detail as if you are describing your experience to someone for the first time. Give yourself a big pat on the back for taking time to take care of yourself.

Why Massage Affects Body Perception

The statistics are alarming. The majority of U.S. women-some estimate more than 80 percent--are unhappy with their appearance. At least 10 million young women, and 1 million young men have an eating disorder. Girls as young as 6 and 7 are expressing disapproval of their looks, and most fourth-grade girls are already diet veterans. Most unsettling is the fact that more women, and girls, fear becoming fat than they do dying.

Being unhappy with our bodies has serious, and sometimes lifelong, ramifications. Feelings of unworthiness and selfloathing can set up a lifetime of self-deprecating behaviors. What regularly scheduled massage allows us to do is "get back" into our bodies and reconnect with ourselves. Massage can help us release physical and mental patterns of tension, enhancing our ability to experience our bodies (regardless of their shape and size) in a more positive way. Just as it facilitates our ability to relax, massage also encourages an awareness of the body, often allowing us to more clearly see and identify destructive behaviors, including overeating or purging.

Combating the Images How do you see yourself? Are you content with the person looking back at you from the mirror each morning or do you frown in frustration? Unfortunately, many of us are unhappy with the person looking back. Whether it's lamenting about having a pear-shaped figure instead of an hourglass, or exhibiting more serious, self-hating body dysmorphic disorders, body image is under siege in our celebrity-fixated society. While Madison Avenue continues to airbrush photos of svelte, 120-pound supermodels for magazine covers, others are trying to teach young girls to love their bodies, beautiful imperfections and all. One way to combat the Hollywood hype and to create an appreciation for the bodies we have is through handson massage and bodywork.

Massage also creates a sense of nurturing that is especially powerful when it comes to poor body image. Finding the Stillness Experts say that when the tissues start to let go and relax under a massage therapist's hands, profound shifts occur emotionally and physically. A softening happens, and the brain and body begin to integrate again. The chasm between body and mind that created the eating disorder, or fueled the negative body image, begins to narrow. In her book, "Molecules of Emotion," Georgetown University Medical School professor Candace Pert explains that the body is the "actual outward manifestation, in physical space, of the mind." She says that if we generate negative energy in response to our appearance, it can eventually find its way into reality. Glaucoma is an eye health condition which typically has very few symptoms until you’re left with irreversible blindness. It’s known as "the sneak thief of sight" because up to 40% of vision can be lost without noticing any changes. Glaucoma is also the leading cause of preventable blindness. How is it prevented? 1. MAKE EXERCISE PART OF YOUR ROUTINE Exercise should be a regular part of your day, not something sporadic. Just as you set aside time for meals, sleep, kids and work, set aside time for exercise.

2. GIVE YOURSELF PERMISSION TO SPEND TIME ON “YOU” Many adults juggling work and family life find it difficult to justify taking time for exercise, as that’s time that could be spent with family, running errands or getting ahead at work. If you fall into this mindset, it’s time to give yourself permission to exercise. This “me” time will not only boost your health on both physical and emotional levels, but it will provide an excellent example for your children on how to lead a healthy lifestyle. If you’re not feeling fit and healthy, you won’t be able to take care of the rest of your obligations, or your family, so let go of any feelings of guilt you have about taking time to workout.

3. SET REALISTIC GOALS Your fitness program should fit in with your lifestyle. This means you may workout three days a week, and then spend weekends out riding bikes with your family, ice skating, working in your garden, dancing, or playing sports with friends. Remember that physical fitness is not just about how many minutes you log on the treadmill, it’s a lifestyle that you can tailor to your unique needs and interests.

4. GET A WORKOUT BUDDY If a personal trainer is not in your budget, don’t worry. Getting a workout buddy -- a friend, family member, colleague -- can give you many of the same benefits on the motivation front. When you set up a workout schedule with your buddy, you both act as each other’s personal cheerleaders, encouraging one another to stick with the plan. You can also celebrate your milestones and exercise successes together.

5. KEEP YOUR EYES ON THE PRIzE Working out is, well, work, and there will be times when you’d rather sink into your couch and put your feet up instead of hitting it hard in your workouts. For these times when motivation is lacking, remember why you’ve committed to your exercise program in the first place: your health. New research shows that exercise can help you prevent about two-dozen health conditions, including cancer, heart disease, type 2 diabetes, stroke, obesity,

depression, high blood pressure and dementia. It can even slow down your rate of aging. Plus, exercise will tone your muscles and reduce your body fat, helping you to look great on the outside, and boosting selfesteem in the process. Just try to get benefits like these from sitting on the couch.

6. MAKE IT CONVENIENT Exercise really should be an enjoyable part of your day, a time you look forward to and embrace. But keeping this attitude will be difficult if you have to travel a long way to the gym before you even start your workout. You’ll also be much less likely to stay committed if exercising is a hassle. A great idea if you have the space and budget is to purchase a few key pieces of exercise equipment for your own home, such as an elliptical machine, treadmill, or weight set. This is the most convenient option of all, especially if you like working out privately. You can also try a mix of at-home workout DVDs.

7. FIT IN WORKOUTS EVEN ON YOUR “OFF” DAYS Life is busy, so even with the best intentions your workouts may sometimes get sidetracked by travel, work or kids. Learn to roll with the punches and on the days when you don’t have time for a regular workout, squeeze in some exercises on the sly. For instance, bring an aerobics DVD with you when you travel so you can workout in your hotel room (or just hit the hotel gym). At the office, exercise at your desk by doing standing push-ups (place both hands flat on your desk, take a few steps back, and push!), or pumping your arms over your head briskly. You can also do jumping jacks, squats and lunges just about anywhere, or try standing with your back against the wall, then lowering your knees to a 90-degree angle (as though you’re “sitting” without a chair) and holding for 60-90 seconds. You can even keep a set of 5-, 10-, or 20-pound weights near your desk and do some quick bicep curls while making phone calls. When you’re out with the kids, try jogging a few laps around the playground while the kids play, or putting your little ones in a stroller for a brisk walk. If you’re exercising at home, let your child try to do yoga along with you, or use your infant as your “weight” and lift him over your head to tone your arms or hold him while doing squats to work out your legs.


If you have a new baby, place him flat on the floor and do push-ups over him (with your face over his) while keeping eye contact and making expressive faces.

8. KEEP IT FUN You’ll be much more likely to workout if you enjoy it, so incorporate a wide range of activities that appeal to your interests. Try kickboxing or dance aerobics one day, weight training, Pilates, swimming or yoga the next. This will not only keep you from getting bored, it will ensure that you’re working all of your muscle groups and getting both cardio as well as strength-training benefits.

9. REWARD YOURSELF When you’ve stuck with your exercise plan for a week, a month or more, stop to give yourself a great big pat on the back … or treat yourself to a special treat, like a massage or a new piece of clothing to show off your new fit physique. This will keep exercise in a positive perspective and help you to keep striving to reach your next exercise milestone.

If you are covered under a health plan offered by your employer, or if you are currently covered by a government program such as Medicare, you can continue to be covered under those programs.

HOW MUCH WILL THE INDIVIDUAL MANDATE PENALTY COST ME? In 2014, the penalty will start at $95 per person or up to 1 percent of income whichever is higher. For 2015, the penalty increases to $325 per person or up to 2 percent of income whichever is higher. In 2016 and after, the penalty increases to $695 per person or up to 2.5 percent of income whichever is higher.

“Income” for this purpose is your household income minus your exemption (or exemptions for a married couple) and standard deductions. Families will pay half the penalty amount for children. The penalty is calculated on a monthly basis, and will be assessed for each month in which you go without coverage. There is no penalty for a single lapse in coverage lasting less than three months in a year.

WHO IS EXEMPT FROM THE INDIVIDUAL MANDATE? You may be exempt from the individual mandate penalty if you: • Cannot afford coverage (that is, a required contribution for coverage would cost more than 8 percent of your household income) • Have income below the federal income tax filing threshold • Are not a citizen, national or lawfully present in the United States • Experience a gap in coverage for less than a continuous three-month period • Qualify as a religious conscience objector

HOW DO I QUALIFY FOR A HARDSHIP EXEMPTION? The hardship exemption is available through the Exchange if you face a hardship that prevents you from obtaining coverage. HHS has said that each of the following situations will always qualify as a hardship: • If you turn down coverage because the Exchange projects it will be unaffordable (even if your actual income for the year turns out to be higher, so that you are not eligible for the affordability exemption) • If you are not required to file an income tax return but technically fall outside the exemption for those with household income below the filing threshold • If you would be eligible for Medicaid under the expansion but live in a state that does not expand Medicaid eligibility If you face other unexpected personal or financial hardships, you may be eligible for a hardship exemption. This will be determined on a case-bycase basis.

Generally this is the time of year that you read many articles on weight management and that was the original idea for an article submitted by Nature’s Corner for the month of January. However, it was recognized that many individuals suffer from stress this time of year – losing weight is one thing individuals stress about but other stress factors come into play this time of year also – spending on Christmas gifts and all the feast ingredients, job factors, not enough hours in the day to stretch yourself between careers and family. It may seem that there’s nothing you can do about stress. The bills won’t stop coming, there will never be more hours in the day, and your career and family responsibilities will always be demanding. But you have more control than you might think. In fact, the simple realization that you’re in control of your life is the foundation of stress management. Managing stress is all about taking charge: of your thoughts, emotions, schedule, and the way you deal with problems Stress management begins with identifying the source of stress and this isn’t as easy as it sounds. Your true sources of stress aren’t always obvious and your stress inducing thoughts, feelings and behaviors are easily overlooked. For instance you may know that you are constantly worried about deadlines at work but maybe it’s your procrastination rather than actual job demands that lead to deadline stress.

Stress Something that may help you identify your stress trigger is a journal. As you keep a daily log, you will begin to see patterns and common threads. Some ideas for your journal is to write down what may have caused your stress (guess if you are not sure), how you felt at the time both mentally, physically and emotionally, how did you react in response and what did you do to make yourself feel better.

Look at how you cope with stress – temporary fixes such as smoking, drinking alcohol,procrastinating, using drugs to help you relax can cause more damage in the long run.

Learn healthier ways to manage stress and recognize they will all require change and everyone has a unique response to stress, there is no “one size fits all” solution to managing it. No one method is going to work for everyone or in every situation. So experiment with different techniques and strategies. Dealing with stress or stressful situations mean change the situation: Avoid the stressor, alter the stressor, adapt the stressor, or accept the stressor or a combination of any of these. We all know that Easter is a day to mark the resurrection of Christ. If this is the case, how on earth did Easter morph itself into giant bunnies hiding plastic eggs filled with coins and candy? It’s simple. The Easter bunny is one of the original meanings of Easter; the resurrection of Christ is completely and totally separate from the original Easter holiday. Going back to Pagan times, Easter diverged from a festival celebrating the god Eastre, the goddess of new life, fertility, and spring. The hare or rabbit, symbolic of fertility as well, coincided with Eastre’s message and became intertwined with the festival of Easter. Easter was a celebration of Eastre, a celebration of spring, a celebration of new life, and a celebration that had nothing to do with Christ. Only once Christianity became more popular, did the religion claim Easter as its own holiday. While the bunny was apparent in the Pagan times, it was still not the overly-friendly, gift-giving, canwalk-on-hind-legs bunny that we know today. That tradition began in Germany in the 1500’s when German writers began promoting the idea of a bunny leaving golden wrapped eggs in children’s decorated bonnets. Children in these villages would decorate their bonnets or caps to leave for the Easter bunny to place his gold-wrapped eggs in. Here’s the origin of the modern Easter bunny, along with the idea of the Easter bonnet. It was brought to America by German immigrants and morphed into the sugar-filled holiday we know today. So next time you’re confused on how a holiday about a bunny hiding chocolate eggs and jellybeans is related to the resurrection of Christ, the answer is simple- they aren’t.

— SAfETy — After talking to my friends at the American Red Cross, I learned a lot about Earthquake Safety that I would like to share with you:

The American Red Cross suggests the following if you are inside when the shaking starts:

• Did you know that we live in a very earthquake prone region that has a lot of seismic activity?

• Drop, cover and hold on. Move as little as possible. If you are in a bed, stay there, curl up and hold on. Protect your head with a pillow.

• Did you know that if you live in a mobile home or a home that is not attached to a foundation that your home is at a particular risk during an earthquake? • Did you know that if the building you are in was built on a landfill or another unstable soil that it is at an increased risk of damage during an earthquake? • Did you know that a doorway is no stronger than any other part of the structure and that during an earthquake you should get under a piece of sturdy furniture to provide some protection from falling objects that can injure you?

• Stay away from windows. • Stay indoors until the shaking stops and you are sure that it is safe to leave. Know that often sprinkler systems and fire alarms go off in buildings during earthquakes, even if there is no fire.

If you are outside when the shaking starts, the American Red Cross suggests: • Find a clear spot and drop to the ground (away from buildings, power lines, trees and streetlights). Stay in that spot until the shaking stops. • If you are in a vehicle, pull over to a clear location and stop. Avoid bridges, over and underpasses and power lines. Keep yourself buckled into your seat. When the shaking stops and you are driving again, be on the lookout for bridges and ramps that may have been damaged.

• If a power line falls on your vehicle, do not get out. Wait for an authority to come and help you. • If you are in a mountainous area or near unstable slopes or cliffs, remember that landslides are often triggered by earthquakes. Watch out for falling rocks and other dislodged debris.

After an earthquake: • Prepare for potential aftershocks. Aftershocks can occur minutes, days, weeks and even months following an earthquake. In areas of water they can cause tsunami, in mountainous areas they can cause landslides, anywhere they can cause more damage to weakened structures. Each time you feel an aftershock, drop, cover and hold on. • Check yourself and get first aid (if needed) BEFORE helping injured or trapped persons. • Look around for damage and get everyone out of a building if you suspect it is unsafe. • Look for and put out small fires (the most common hazard in an earthquake). • Clean up spilled medications, bleach, gasoline or other flammable liquids immediately. • Should there be a need to open a closet or cupboard door, do it carefully as contents shift during shaking. • If there is phone service, keep all calls short, using the phone to report emergencies only. • Adults should keep animals under their direct control. • Return to your home ONLY when authorities say that it is safe to do so. Use extreme caution when checking for damage.

So I asked the Red Cross, “Is there anything I can do to be ready in case this happens?” They told me to: • Like a superhero, we should learn the escape routes in our home, schools and places that we spend a lot of time. This way we can make a safe exit when we need to. • We need to really look around the rooms of our homes, workplace and schools. We need to find a safe place near an inside wall (maybe under a sturdy piece of furniture) that we could plan to go to in case of earthquake. We need to avoid being near windows, bookcases or tall furniture. We will need to practice covering our head and neck with our arms. • We can keep a sturdy pair of shoes and a flashlight next to our beds. • Moms and Dads should make sure that water heaters, gas appliances, bookcases, china cabinets, grandfather clocks and other tall furniture are bolted to the wall studs. • Think about those heavy items like pictures or mirrors that hang on walls. If they were to fall, would they injure someone on a bed, sofa, chair, etc.? If they would, perhaps it is time to rearrange the room so they pose no danger. • Mom and Dad may want to brace light fixtures and know where gas valves are located and how to shut them off when needed. A wrench needs to be handy for valve shutoff. • Check your cabinets- are all the heavy items stored on the bottom? Will the latches and bolts hold the cabinet shut during shaking? • Pack an emergency bag with a battery, solar or crank operated radio, your emergency contact’s phone number, extra clothing, medication, supplies and a first aid kit. Keep it in an “easy access” location. • Make sure you have a plan in place for any pets that you may have.

Babysitter Training from the American Red Cross will be held in the Meeting Room for children ages 11-16 on Thursday, January 2nd starting at 9:00 a.m. and running through most of the day. This course is ideal for current and future babysitters, teaching them the best ways to be safe and keep children in their care safe. The students will learn essential, professional, leadership and care-giving skills, safety skills to prevent emergencies, how to manage real-life problems, including emergencies, and tips on finding babysitting jobs. Adult Book CluB Adult Book Club will be discussing the book “Dr. Sleep” by Stephen King, as well as any other novel by King for comparison, on Tuesday, January 14th at 7:00 p.m. in the Nevada Room. This is the time of year, when people are commonly feeling very pressed, for time, cash, and a peace of mind. The holiday season can feel more like a bad omen than a blessing. Bills that are normally paid on time become a hassle with the added pressure of providing a nice Christmas for your family.

People can feel like they have nowhere to turn for help or compassion. We recently had 180 plus people laid off with little or no notice; this could be your next door neighbor whom you’ve shared summer barbecue’s with, whose kids play with yours.

Yet despite the trials that many people experience during the holiday season, angels in disguise begin to emerge, within our community we have had a number of said angels shining. One of the greatest things about small communities like ours is the sense of community. Programs like the Angel Tree at Eagle Mortgage, Project Santa at Winners Casino, The Abundance Tree at the Humboldt Printers, The Toy Run, the Wild Bunch runs each year, and the Holiday Baskets, coordinated by the Ministerial Association, many Tri-County residents find the help and relief they so crave this time of year. There are so many wonderful agencies, individuals, and businesses in our little community who really pull together to help our friends, relatives, and neighbors. Without these agencies so many families would suffer from job loss, unexpected bills or something of the like. Love and compassion are necessities, not luxuries. Without them humanity cannot survive. It’s very humbling to think of some of these residents that fear they will have nothing for their children, and to be able to give them something like a toy or food basket, and to see the relief and gratitude in their eyes. It gives you a great sense of good will and an appreciation for the small things in life. Reminding us all that life is not about the nicest car, a new jet ski, or the biggest house, but about helping your fellow man. Being a part of something so much greater than yourself and being grateful for everything we have, a great community that pulls together and wonderful businesses that jump in to lend a helping hand to someone down on their luck. As you’re doing your holiday shopping, consider giving something to someone in need, whether it be a food item donated to the Ministerial Association, a toy for the annual Toy Run, or gently used winter apparel to the local thrift shops, for which clients receive vouchers for, from the FCAA. Anything is appreciated, and while you do this, take a moment to think of some child in our community who will open that gift on Christmas and be elated to know that Santa remembered him/her and that child’s parents knowing that someone out there cares. Giving always does great things for the heart, especially during the holidays. You will find that, while you and your family open gifts Christmas morning, you will think of a child in town opening a gift from a kind stranger, and it will make you smile. Personally I think of the scene in the Grinch when his heart grows it’s cheesy but it’s how I feel when I know I’ve done something to brighten someone else’s day. But helping and giving shouldn’t be limited to the holiday season; people experience hardships all year long.

THESE FORMS TAKE UP TO 30-45 BUISNESS DAYS TO PROCESS. UNFORTUNATELY IMEDIATE ASSISTANCE SERVICES ARE VERY LIMITED. If you would like to assist our office in providing help to families, donations to our emergency fund would be GREATLY APPRECIATED, this fund helps us provide services to families that are in immediate and exceptional need, for example a family needing a small amount of funds to maintain utilities until a first paycheck comes in, providing Work boots to someone who has just been hired, with this cold weather, helping an elderly person with wood or propane to get them through until their Social Security check comes through. Our office follows through to verify all pertinent information and ensure that this fund is used as effectively as possible!
