Spring Dinner
Contributed by Mandi Ratliff of Cucina Fresca
Spring brings a host of special occasions to celebrate with family and friends. Some gatherings will be casual, but others may call for a special dinner worthy of a distinctive occasion.
Spring - Fresh - Delicious - Do-Ahead - Easy A most-prized cut of meat, a beef tenderloin is a rare and special entree, perfect for a celebratory occasion. Often roasted at high temperatures, the timing and outcome can be tricky. With this “foolproof” method, the filet is slow-roasted to precise perfection. It’s become our “goto” method for tenderloins. The roast is oiled, seasoned, generously draped with tarragon branches, and slowroasted. The kitchen aromas during roasting are enticing! A side sauce of homemade basil parmesan mayonnaise topped off a remarkably tender and tasty entree.
Do-Ahead (1 Day) 1. Trim and tie the roast 2. P repare mayonnaise a day or two in advance. Refrigerate with a small piece of plaster placed directly on the surface of the sauce.

and tied (4-1/2 pounds) 3 tbsps good olive oil 4 tsps kosher salt 2 tsps coarsely ground black pepper 10 to 15 branches fresh tarragon Basil Parmesan Mayonnaise, for serving (recipe follows)
Preheat the oven to 275 degrees. Use an oven thermometer to be sure your oven temperature is accurate! Place the filet on a sheet pan and pat it dry with paper towels. Brush the filet all over with the oil, reserving about half a tablespoon. Sprinkle it all over with the salt and pepper (it will seem like a lot but believe me, it makes a difference). Place the tarragon branches around the beef, tying them in 4 or 5 places with kitchen string to keep them in place, and then brush the tarragon with the reserved oil. Roast the filet of beef for 1-1/4 to 1-1/2 hours, until the temperature registers 125 degrees in the center for rare and 135 degrees for medium-rare. I place the thermometer horizontally through the end of the beef. Cover the filet with aluminum foil and allow to rest for 20 minutes. Slice thickly and serve warm or at room temperature with Basil Parmesan Mayonnaise.

how-to tie a roast Why tie a roast? Whether pork, beef, lamb, or other meat, tying a roast creates a neat bundle that promotes even roasting. Small ends of the roast can be tucked in, and a flat shape can be made more cylindrical — all with a little string. Butcher’s twine is 100% cotton string, suitable for food use. Reusable, heat-tolerant, silicone food loops also work well for tying roasts. Cut a length of string about 7 times the length of the roast. Begin by tying a loop around the roast at one end of the meat.
Tools for Roasting Meat: Le Creuset Stoneware Baker - Beautifully glazed stoneware is a functional and aesthetic pleasure. Shallow sides promote good air circulation. Wusthof Trimming and Boning Knife - This knife features a narrow blade and a sharp tip for expertly trimming roasts and excising bones from meat. Cooking Twine - so many uses for natural 100% cotton food grade string - including tying up your Sunday roast and much more!
Wind the string around the meat again. At the top, bring the string under and over the start of the second loop. Continue winding and looping the string under and over with 1-inch intervals between each turn. Bring the string (under & over) along the underside of the roast back to beginning. Cinch and shape a uniform cylinder.
Folding the Napkins A nicely folded napkin is always part of a well-appointed table when dining out, why not at home too? Here’s a nice fold to try on a spring table - a blooming flower:
Setting the Table Assembling a meal for others not only answers the daily need for food, but also provides a setting for sharing and being with others, also an elemental need. Any meal may become elevated to “special” with a few twists and touches. The setting of the table sets the mood for the occasion and provides a great opportunity for a few creative touches. Linens lay the foundation for a wonderful dining experience. A table adorned with a beautiful tablecloth, runner, or placemats defined the mood of the meal. Whether it’s crisp, white linen or cotton splashed with spring colors, linens set the stage.
Do-Ahead Set the table with linens, flatware, dinnerware, and glassware a day in advance. Cover the entire table with a lint-free, clean, white sheet, or an older tablecloth to prevent dust and pets from intruding on the pending party.

How to Roast Hasselback Potatoes
Step 1: Three ingredients: potatoes, butter, and coarse salt. Choose uniformly sized potatoes and peel away the skin. Trim away a thin slice to form a narrow, flat surface on the bottom. This assists the slicing and prevents the potatoes from rolling about in the pan. 3095 Potato Rd (across from Step 2: Cut 1/8-inch slices along the length of Walmart) the potato Hours 8am-5pm cutting only 3/4 of the way through the potato. Use 625-3184 chopsticks as a guide to prevent the knife from slicing all the way through, or for smaller potatoes, place them on a spoon. Rinse to remove any extra starch from between the slices. Drain and pat dry. Step 3: Baste the potatoes, including between the slices, with
melted butter. Sprinkle with coarse salt. Bake at 400 F for 30 minutes under a loose foil tent. Baste with butter, and roast, uncovered for another 15 minutes or until edges are nicely golden brown and the centers tender.
Fresh vegetables accept other flavors eagerly when paired well. In this case, green beans host brilliant lemon zest, aromatic garlic, bright parsley, grated Parmesan cheese, and toasted pine nuts. The combination of flavors and textures is appealing to the eye and to the palate. It’s an easy combination that would be equally at home on asparagus or broccoli.

What is a Gremolata?
Bring a large pot of water to a boil. Add the green beans and blanch them to 2 to 3 minutes, until tender but still crisp. Drain the beans in a colander and immediately put them into a bowl of ice water to stop the cooking and preserve their bright green color.
Do you ever see a word for the first time, then suddenly see it everywhere? Such is the case with “gremolata” - it’s an ontrend thing! A gremolata is a condiment of chopped herbs with lemon zest as its core ingredient. Parsley and garlic frequently accompany the lemon zest, but other herbs may be substituted.
For the gremolata, toss the garlic, lemon zest, parsley, Parmesan, and pine nuts in a small bowl and set aside. When ready to serve, heat the olive oil in a large sauté pan over mediumhigh heat. Drain the beans and pat them dry. Add the beans to the pan

Did you know, in Canada a chesterfield is a ____________?
B) A table placed in a room to hold accessories, mail, keys, a handbag or other small items
A) Sofa
C) A table that specifically goes behind a sofa
C) Ottoman
Correct answer: B
Correct answer: A
Console tables were originally decorative French pieces attached to a wall with an S-shaped bracket—aptly named a “console”.
In the UK, a chesterfield is a buttoned leather sofa. Canadians are much more lax on the rule – any type of sofa is called a chesterfield. The furniture is supposedly named after the Earl of Chesterfield in 1600s England.
What is an étagère traditionally used for?

A) Hold the roll of toilet paper in the bathroom
What do you use a pouf for?
B) Help you step up into tall beds
A) Apply make-up
C) Displaying ornaments on a number of open shelves
B) Dust the house
Correct answer: C
C) Use as an ottoman
Also called a whatnot, these shelves originated in France in the mid-1800s and were named after the French word for “shelf”.
One of these is not like the other! Which term below is a type of sofa? A) Crest
Correct Answer: C
The word ottoman originated in the late 18th century when the French invaded Egypt (then a part of the Ottoman Empire). The invasion included physical punishment like “pain walks,” which led the Ottomans to fashion footstools so they could rest their tired legs.
A fauteuil is what type of furniture item?
B) Bumper
A) Open-armed chair
C) Knole
B) Rocker recliner
Correct answer: C
C) Wooden sofa with fabric cushion
A sofa can have a crest or bumper, but a knole sofa has adjustable sides and can be turned into a bed. The name comes from a 17th century formal two-person throne at Knole House in Kant, UK, which has high adjustable sides so royalty could sit and welcome visitors in privacy.
Correct Answer: A
The word fauteuil literally means “armchair” in French, and gained popularity in the 18th century as light yet ornate chairs, commonly used at desks and tables.

Riverboat Cruising in America Contributed by Pat and Pam of Just Right Cruises 623-9074
We will start out with Riverboat Cruising close to home here in America. We will cover small riverboat cruising in Europe in a later edition of Everything Winnemucca. Small boat cruising is a more personal cruising experience, and the main highlight of a small riverboat cruise line is the amount of passengers on board the vessel. Most small river boats only carry 50 to 200 passengers. There are some larger small vessels that may go up to 600 passengers, but in this issue we are going to cover the smaller vessels.
hooked for life. All of these small riverboat cruise lines will be second to none! So that is a win win for the customer.
There are only a few cruise lines that dedicate themselves to small river cruising. These cruise lines specialize in highly personalized service, and are experiences all travelers should do at least once. I believe if you travel on one of these awesome small river boats you will be
We will start out in the lower Mississippi where there is plenty to do on a small riverboat itinerary. Most of the cruise itineraries are 8-day cruises in this area and packed with interesting things to do in port on and off the vessel. When in port you will have time to visit
From the moment you book your small riverboat cruise your heart will be pounding with excitement because you know that you are about to be doing something very special. Here are the some of the itineraries available throughout the United States: Mississippi River, Southeast US, Northeast US, Alaska, and the Pacific Northwest.

the area, as well as tours through the cruise lines. Shore excursions typically cost $20 to $100 and can vary in price. Always check with your travel advisor or cruise line for more details. Here is a “must do” to put on your bucket list - a Mississippi River paddlewheel cruise on the Queen of the Mississippi. There is nothing like being on a beautiful paddlewheel vessel. These small riverboats are packed with the latest amenities; and when we say small riverboat, we are not talking about a lack of space. You will have plenty of room to move about the vessel. What we are talking about is the number of other passengers onboard with you. You will feel like royalty from the minute you set foot on the vessel. You will go back to a time when life was at a pace of relaxation, and service was at the top of the list. You will cruise on the mighty Mississippi watching the landscape go by from your private balcony or you can go to the public areas and enjoy the company of other passengers. You will always find something pleasing to do while onboard. When you take a river cruise on the Mississippi you will stop at ports such as New Orleans, Baton Rouge, Natchez, Vicksburg, Memphis and St Louis, MO; and of course, there are other cruise itineraries to choose from. After all the Mississippi River is very long at 2,320 miles; starting out at Lake Itasca out of Northern Minnesota. The Mighty Mississippi River has 41 ports, and of course, not all ports get a visit from a cruise line. Some of the ports on the Mighty Mississippi River are working ports and would be of no interest to travelers. I can guarantee you; all the ports on a small riverboat cruise itinerary have many points of interest that you will enjoy. Let's talk about a small riverboat cruise of the Great Southeast US, and visit places like Savannah,

Charleston, Jekyll Island, and Beaufort and other great places on earth right here in the USA. Let's begin with Charleston SC. Charleston is brimming with history, is the oldest and second-largest city in the southeastern State of South Carolina. Go visit places like The Battery, also known as White Point Gardens, where pirates were hanged from the gallows. Now the gardens provide a lovely view of the harbor and distant Fort Sumter or EdmonstonAlston House. Included in the TV series “America’s Castles”, the Edmonston-Alston House is an elegant example of a 19th Century high-style architecture Greek Revival mansion and is a treasure trove of documents, furniture silver and china. Originally built in 1825, it was rebuilt in 1838 with Greek Revival detailing by Charles Alston, a wealthy rice planter. Alston family furniture, silver and paintings are highlighted during daily guided tours. Maybe you fancy some shopping, so head on over to The Old City Market on Market Street between Meeting and East Bay. Built in 1841, it features small shops, restaurants and a flea market with everything from produce to antiques. The main building houses the Daughters of the Confederacy Museum. The list of activities is endless. Maybe you would be interested in a Chesapeake Bay Cruise? You would start out in Baltimore MD. Baltimore is a great American city, bustling with excitement, colonial history and a rejuvenated maritime spirit. After you visit Baltimore you will cruise on over to Yorktown / Williamsburg VA. Step back in time in a town that transformed the history of a nation. Yorktown is known for its monumental battlefields, authentic colonial homes, and storied past. Yorktown / Williamsburg was once the political and economic center of the Virginia Colony, today the world's premier living history.
As you work your way to Crisfield, MD / Tangier, VA, you will see the great history of an area settled in 1608 by Capt. John Smith, the charming island of Tangier. Here you can stroll through the delightful village, crab shanties, shops and charming homes. You will visit other ports like Cambridge, MD; Oxford, MD; St. Michaels, MD; and Annapolis, MD. You will then head back to Baltimore to revisit this great American city. There is so much to do and see it would take up the entire issue of Everything Winnemucca if I told you every little detail. Here are other small river cruise itineraries of the great Southeast: Great Rivers of Florida Cruise; East Coast Inland Passage - a 14 night itinerary; and the 15 day Mid-Atlantic Inland Passage Cruise; and Historic South and Golden Isles Cruise. Or check out the Northeast United States Cruises. There are four itineraries in this area, you can go on a Main Coast & Harbors Cruise, New England Islands Cruise, Grand New England Cruise, or Hudson River Fall Foliage Cruise. Each one of these itineraries is unique and as with any of these cruises you will have plenty to do. You can discuss the itineraries with you travel advisor, they can help you plan the wonderful vacation experience that you are looking for. Let’s get out of the great southeast and the northeast and head to the great Pacific Northwest. Places such as Alaska, Washington & Oregon. Yes, there is awesome small riverboat cruising in this region. The Pacific Northwest is world renowned for its diverse natural splendor and wildlife; and of course, some great cruising! We will start out with the Alaska Inside Passage Cruise. Your cruise highlights include docking regularly to explore the natural scenery, historic treasures and local communities along the way. You will be visiting Seattle, Anacortes, Friday Harbor, Ketchikan, Wrangell, Petersburg, Frederick Sound, Tracy Arm, South Sawyer Glacier and Juneau, AK. It gets no better than this, these small vessel cruises are the very best of cruising.
Other great Pacific Northwest cruising includes the Columbia and Snake Rivers, Puget Sound and San Juan Islands, and Southeast Alaska. When you are on a Southeast Alaskan cruise you will see breathtaking sights like orcas surfacing alongside the ship to watching humpback whales frolic in the cool waters of the Gulf of Alaska. During your cruise of the Puget Sound and San Juan Islands, you can experience the culture of the Pacific Northwest with fascinating guided tours to historical sites and museums. You will enjoy a diverse natural wonderland of sea lions, hawks, whales, and so much more! You can also take a Columbia and Snake Rivers cruise along the epic route pioneered by Lewis and Clark more than 200 years ago - stopping in ports like Clarkston, WA; Pendleton, OR / Richland, WA; The Dalles, OR; Stevenson, WA; Rainier, OR; and Astoria, OR. As with any of the awesome breathtaking cruises, there are awesome tours at each port of call. You will be very impressed with your small riverboat cruising. You will want to share your experience with your family and friends. It is truly a lifetime experience regardless of which small riverboat cruise you choose. These cruises will make you feel good and give you a better understanding of each port. There are only a few small riverboat companies to select from in the USA, and each one has beautiful small vessels (ships) and unique itineraries. For more information on Small Riverboat Cruises, itineraries and availability check with your travel advisor. Some cruises are season specific and your travel advisor will help you navigate your travel plans so there will be no disappointment. It is always a good idea to have travel insurance, and always try and book early. If you have any questions, please feel free to give us a call at Just Right Cruises. Until next time may you stay well and travel safe.

Kateri Martinez, head fashionista and owner of Kateri’s Karma, knows that taking care of business means taking care of the locals. After all, Kateri is nearing her 2nd year as owner of Karma. In Winnemucca, there are a plethora of clothing stores, and she knows that offering up fashionable and quality clothing in a relaxed and courteous atmosphere keeps her regulars around. Kateri also knows that her ability to special order items and her outstanding customer service will make regulars out of first-timers. Kateri has seen a lot of changes in the retail marketplace over the years. She held a few jobs around town, tried her hand at bartending and even working for the mines. Looking to expand her horizons, Kateri accepted a position as assistant manager at our local Boot Barn (then Corral West), and really enjoyed working with the community and fellow employees. After a few years, she switched positions and went to work for our local Walmart. She was able to work her way up to Assistant Night Manager and knew that retail was exactly where she needed to be! Within time, Kateri became aware of the local clothing boutique, Karma, becoming available for purchase. She knew that was where she belonged. She was eager to own her own business utilizing all the knowledge she had gained over the years. The lessons learned at other locations has allowed Kateri to understand first-hand the importance of keeping quality merchandise in stock, constantly updating and changing displays and of course, keeping a consistent supply of new items coming in! At Karma, Kateri is there to make sure that your shopping experience is the most enjoyable experience you can have. She offers a wide-range of name brand clothing -- from Big Star, Silver and LA Idol Jeans to Yellowbox and Rocketdog shoes. From sizes 0 to 24, Kateri is always happy to help you find your perfect fit. She encourages people to stop by and try on some different outfits. Redd’s Apple Ale branches out from traditional beer. Crisp like an apple and brewed like a beer, this ale is like nothing you’ve ever tried before. It has a light caramel color, fitting for an apple ale, and lively carbonation that hits the tongue with a pleasantly smooth, bubbly fizz. What’s not to love? This apple ale is unique because it’s not a hard cider like you may be thinking. It is a beer brewed with apple flavor rather than a cider brewed from apples. Redd’s Apple Ale has a crisp green apple taste with a strong malt finish that will leave you wanting more. Leave room in your fridge for this innovative ale – you’ll want to keep it in stock! Redds Apple ale contains only 165 calories per 12-ounce serving and 5% alcohol by volume. Crisp like an apple, brewed like an ale. Also in store….Redds fresh strawberry apple ale. 24. Don’t Make It Easy on the Critters. Many household bugs do not like peppermint oil -- ants, aphids, beetles, plant lice, mice and cockroaches try to steer clear of peppermint. Peppermint oil is a wonderful natural cleaning agent because it has antifungal and antibacterial properties. Spray on counter tops and bathroom surfaces, scrub, and enjoy cleaner clean. 26. 9. Peppermint oil has the ability to relax muscles in the body -- the same muscles that line our airways and become affected with seasonal allergies. Peppermint oil (with lemon) should certainly be another arrow in your quiver!
17. Brisk, Delightful Confections. Peppermint chiffon cake, homemade candy canes, butter mints, peppermint ice cream, peppermint glaze over pastries and cookies, and homemade peppermint patties.
10. Chase Away Tension. Got a mind numbing headache? A few drops of peppermint dabbed on your temples, neck and sinuses can quickly spring into action and chase that tension away!
18. Unforgettable Beverages. Peppermint water on ice, peppermint mocha, peppermint tea, peppermint hot chocolate, that’s right … it’s all delish.

When you feel like you’ve just run a marathon in clogs, and your feet are a hot mess of ouch, massage peppermint oil onto aching feet, joints, and strained muscles. 32. Leap from Lethargic. Feeling lethargic or in a brain fog? Peppermint has been known to improve blood circulation and awareness, leaving you with an energized, awake feeling. 33. Go Eight-Leg Free. When you diffuse peppermint into the room, you’ll notice fewer spiders. Why? They don’t like it. It’s safe, contains no harsh chemicals or pesticides. It doesn’t kill the spiders, but forces them out.

Maintaining a Healthy
Credit Score Contributed by Janet Jacaway, Real Estate Agent for Vision West Realty
Having a good credit score is a very crucial step to purchasing a home. It will help determine your interest rate, which will affect your house payment and the amount you can qualify for. Did you know that purchasing a Mobile Home requires a higher FICA score? Your spending and bill paying habits will determine your score. If you have a lot of credit card bills, you may not qualify for a home. Keeping responsible with your bills will help you raise your credit score.
Steps to take right now: • First, you should request a free credit report from one of the reporting agencies. There are 3 major companies, Experian, TransUnion and Equifax. • You will want to make sure the report is accurate and there are no mistakes. It will show you all the accounts you have open and the amount you owe. If there is a discrepancy, then you need to dispute it with the reporting agency. Be aware, if you pay off a judgment that you have, that doesn’t mean it comes off your report. It is your responsibility to make sure. Keep your receipt of payment for proof. • Set up reminders to make sure you are making your payments on time. Being late will cause your score to lower and it takes months of on time payments to raise the score. You can enroll in automatic payments with your credit cards if you need help keeping on track. • Reduce the amount you owe. Make a list of what you owe. Take a good look at your statements, look at your credit card interest rates and work on paying down the debt of the higher rates first. Come up with a payment plan to pay on the high interest rate cards first, while keeping on track to maintain the minimum balance on the other cards. Sometimes, you can negotiate a lower interest rate if you have a good payment history with them.
• Try to always pay off the amount you charge each month. When you go to make that frivolous purchase, think twice before you swipe. If you need to build credit, because you are just starting out, there are ways to go about it. Start with your local bank to see about getting a credit card. Even if it is a low credit limit, it is a start. Make small monthly purchases on it and then pay it off every time you get your statement. Don’t apply for department store cards; they are not the best choice. Stick with the banks. Apply and open new accounts as needed. Applying for too many accounts in a short period can lower your credit score. Maintaining a healthy credit score is important, and hopefully this article has been of help. March 2014 | everythingwinnemucca.com
Curves club members in the U.S. and Canada, including Winnemucca, have a goal of collecting 100,000 food bank donations during the two week period of March 10th to March 23rd. Curves is asking its members to donate bags of non-perishable food or cash to support their local community food banks. Curves Winnemucca donates their non-perishable food items to the Ministerial Association and to Indigent Services. Last year, they met their goal of 2000 pounds of food. This year, they hope to exceed that goal and collect 2500 pounds of food. Items that are always great for donation are canned goods, dog food, baby food items and anything else that is non-perishable. Any and all donations are greatly appreciated.
In exchange for the donations, Curves will waive the joining fee for new members who bring in a bag of non-perishable food or donate $30 to their local food bank during the two week period.
For more information about Curves of Winnemucca, located at 403 Hanson Street, and the 2014 Curves Food Drive, contact a Curves of Winnemucca staff member at 775-625-1333.
The membership offer is open to new members only who enroll for a minimum 12-month e.f.t program or join Curves Complete. But existing members are encouraged to participate as well by bringing in non-perishable food items or donating $30. This contribution is truly valuable to this community.
For more info about Curves, visit www.curves.com.
Each year, we encourage our community and existing members to donate even more than the year before. Our annual food drive is a great way for members and their communities to fill a real need by restocking the shelves in our local food pantries during a time when they are usually low.
Curves is the largest fitness franchise in the world, helping women in over 90 countries lead healthier lives. The company was founded in 1993 by Gary and Diane Heavin, who saw an opportunity to provide a fast, affordable workout for women in an industry that had often focused primarily on the needs of men. Since then, the company has continued to innovate, most recently with the launch of Curves Complete, an integrated program that combines exercise, meal plans, and one-on-one coaching for more effective weight loss and also the addition of the Jillian Michaels Kick Start Weight Loss in just 30 minutes program. Aromatic essential oils extracted from herbs, flowers, resin, wood and roots have long been a source of healing, aiding in relaxation, circulation and wound healing. However, the use of these medicinal oils declined as the modern pharmaceutical industry developed. In 1928, French chemist Rene Maurice Gattefosse revived the use of essential oils and developed the art and science of utilizing naturally extracted aromatic essences from botanicals to balance and harmonize the health of body, mind, and spirit. Gattefosse coined the practice aromatherapy. Because of aromatherapy's effect on emotional health, many practitioners incorporate this noninvasive treatment into their practices. Dispensers or diffusers filled with aromatic essences may be used to scent the room, and specific essential oils are used on the client's skin during massage. Because each oil has unique characteristics and benefits, the choice of oil or oils can be customized to the client's needs and emotional state. Whether inhaled or applied topically, aromatherapy requires an understanding of how each essential oil interacts with the body, as well as the mind. Many pure essential oils need to be diluted, as they can cause irritation when applied directly to the skin, and training is necessary to guarantee safe and correct usage.

A Yoga Experience Are you a slave to a computer all day at work? Do you spend hours and hours in one seated position, eyes glued to a glaring screen? Do you move very little, except for the repeated movement of the mouse and keyboard? Don’t feel alone. We are in the age of information, and technology is not going away. We rely on computers for work, communication, entertainment, research and banking. Perhaps your work does not involve a computer, but a sewing machine, a piano, a car engine or a steering wheel. The physical requirements are the same: repetitive movement of the hands and wrists, holding the body still while staring in one direction for extended periods of time, deadlines to meet, so focused on task completion that we are not even aware of our own breath. All of these factors take a toll on the body. The human body is designed to move, stretch, lift, expand, contract, and breathe deeply. None of which is done sitting at a desk all day or behind the wheel of a vehicle. Wear and tear on our muscles, tissues and nerves are a natural result of the type of work required in the age we live in. We sure want that paycheck and the feelings of accomplishment that come from focused activity. But we don’t want the physical problems that accompany such work. We can experience soreness, stiffness, fatigue, swelling, numbness and pain in the neck, back, shoulders, hips, arms and hands. We may feel emotionally dull and mentally exhausted after long hours of small, repetitive movements, accompanied with intense concentration and restricted eye movement. Long term damage can result if symptoms are not addressed. Of course, the first thing would be to take a good look at your work space. Make sure that you adjust
44
March 2014 | everythingwinnemucca.com
your computer so that you are looking slightly down at the screen. This will help reduce strain on the neck and eyes. If you wear glasses, adjust them so that you don’t have to strain your neck to see through your bifocals. It’s well worth the expense to have a pair of glasses made specifically for use at the computer. An investment in an ergonomically correct computer chair will save money on medical bills down the road. Make sure your chair is the correct height so that your elbows bend at a ninety degree angle, are at keyboard height and are horizontal to the floor. If you are using a regular office chair, your knees should also bend at a ninety degree angle and your feet should rest comfortably on the floor. Proper back support is mandatory for a healthy spine. You can bring a small pillow or bolster if the chair does not support you. Avoid crimping your neck to hold the phone on your shoulder. Headsets or ear pieces are not expensive and are such an easy fix. It’s very important to take some kind of break every hour or hour and a half. Give your eyes and your muscles a rest from the computer. You might have to set a timer, to remind yourself as it’s easy to become so absorbed in work that we lose all sense of time. A walk outside for a breath of fresh air or a quick trip to the bathroom or the water cooler for a drink of water is simple and effective. Take the long way back to your desk. You might even give your fellow employees a word of encouragement or simply a smile as you pass by. It’s amazing what positive energy will do to lift the heart and relax the muscles. Yoga can be and is done in the workplace. It takes no equipment, very little time, and you don’t even have to leave your desk. Ideally, there would be a private room for employees to take a break and do some
stretches, but many don’t have that luxury. I would like to go over some really nice stretches and breathing techniques which are designed to stretch, strengthen, and bring in fresh relaxed energy. The first thing I want to address is breathing. When we are otherwise focused, we tend to take shallow, quick breaths without even realizing it. Or worse yet, we frequently hold our breath. Our body stays in stress mode when we breathe like that. The oxygenated blood flow is reduced; our lungs work at less than healthy capacity, blood pressure may rise to meet the stress response. Our mental clarity is challenged and we feel exhausted. Long, slow, deep breaths promote relaxation and mental clarity. The yogis have a saying that we can either breathe or be stressed, but we can’t do both. We have a choice. In order to make that choice, we must first become aware of our habitual breathing patterns. Experiment with the breaths listed below and find which one works best for you. Perhaps a combination of them will help, or choose one for a particular situation. Personalize your practice. 1. Deep Breathing: It is easy and quite acceptable to sit at a desk and focus on the breath. A simple practice of closing our eyes and taking long slow deep breaths, while doing nothing else will bring us a long way towards feeling at ease in our body. Take at least 10 long slow deep breaths. Give yourself a moment to sense what is happening to your body and your nervous system as you breathe. Do not be in a hurry. Haste is detrimental to relaxation. 1. Alternate Nostril Breathing: This breath is a wonderful tool to help both sooth and energize the nervous system. Place your right thumb against your right nostril and your ring finger against your left nostril. Your first and middle fingers are pointing up between your eyebrows. Gently close your right nostril with your thumb and breathe out your left nostril. Now breathe in through your left nostril, then close the left nostril while breathing out the right nostril. Breathe in the right nostril. Close the right nostril while breathing out the left nostril. Repeat this process slowly for
several rounds, at least 10 breaths on each side. 2. Liberating Breath: To liberate yourself from frustration or angst of some sort, take a big breath in through your nose, hold for one heartbeat and forcefully blow the air out your mouth. Repeat this process until you feel a sense of release come over you. This is a bit noisier than the other two breaths mentioned. 3. Ear and Eye Massage: A nice way to begin your asana practice is by massaging the ears. Massage all the way up and down each ear in every way imaginable. Pull, press, fold squeeze, rub, and tap in and around your ears. This stimulates all the nerve endings found on the ears. Then pinch the area between your eyes at the bridge of your nose. Gently rub the forehead and temple area. Cup each eye with the palms of your hands and open your eyes to the dark. This helps relax the eye muscles. If you do these exercises at the onset of a headache, it just might go away. 4. Head and Neck: Say YES, NO, and I DON’T KNOW several times with your head and shoulders. This should be done several times every hour that you are on the computer. It’s amazing what simple moves can do to help release tension. Be sure to breathe. 5. Arm Stretch or Cow Pose: Stretch your right arm above your head and bend the elbow so that your right hand drops down your back. Reach your left hand behind your waist and bend your elbow so that your left hand reaches up your back. See if you can clasp hands behind your back. If your hands are not touching, grab each end of a belt, a tie, or a strap and work your way up so that the hands are as close together as possible. With your upper arm, lift up and feel the stretch along the biceps or triceps of the lower arm. Take a few breaths here. Then pull down with your lower arm and feel the stretch in the right shoulder. Again take a few deep breaths. Do the other side. This pose is great for improving posture, stimulating arms and shoulders and releasing the lower back. 6. Twist: Sit upright on your chair with your right foot planted firmly on the floor. Cross your left leg over

your right, resting your left ankle just above your right knee. Place your left arm behind you and as far to the right as possible, resting your hand on the seat of the chair. Bring your right arm in front of you and place your right forearm on the outside of your left leg. Now gently squeeze into a twist to the left. Keep your chin parallel to the floor and your spine straight. As your inhale, lift the spine and as your exhale, move deeper into the twist. Take at least 5 deep breaths and repeat on the other side. Not only is this pose good for spinal health, it is also a wonderful way to replenish and rejuvenate the organs. 7. Seated Forward Fold: Sit to the front of your chair and move your chair back away from your desk. Plant your feet firmly on the floor, and place them a little more than hip width apart. Now interlace your fingers and bring your arms and hands straight up towards the ceiling, palms up. Bring your shoulders down away from your ears as your stretch your arms up. Be sure to keep the lower back straight, as we don’t want to create any strain on the lumbar spine. Take 5 deep breaths and then extend your arms out away from the sides of your body, palms facing away from you. Take a few breaths then bring the fingers down, pointing to the floor, so your palms face toward you. Stretch the lower arms and breathe. Lower your arms and let them relax at your side. This stretches the flexors and extensors of the lower arms. Next, reach forward with your arms, lengthening your spine and bring your belly down so it rests on your thighs. Stretch your back and arms as your lower yourself as much as is comfortable. Finally drop your head and your arms and lower your torso between your knees and feet. You may raise your torso, chin up, stretching your back and then gently lower your torso and relax once more towards the floor. Inhale up and exhale down. Do this several times. You can raise one arm up, take several breaths and then raise the other one up and take several deep breaths in the seated forward fold for a nice deep twist. When you are ready to come back up to a seated position, push into your feet and round your spine, unfolding
46

and lengthening as you come into an upright seated position. Forward fold increases circulation, stretches and aligns the spine, massages the organs, and encourages blood flow. 8. Knee to Chest: Sitting on your chair with both feet planted firmly beneath you. Raise your right knee to your chest. Place your hands around the outside of your knee and squeeze your knee towards your chest with your arms. Exhale as you hug your knee close to you and inhale as you release a little bit. Take about 5 breaths this way and repeat on the other side. This is great for intestinal health and for the lower back and the shoulders. 9. Wrist Circles: Move your wrists around in circles. Be sure to move them in each direction several times. Massage your fingers and hands briskly, twisting up and down each finger. Rub your palms together quickly to ‘make a fire’. When your palms become hot, release and quickly shake out your hands. Place your hands on your lap and let them rest for a few breaths. This exercise releases tension in the lower arms, wrists and fingers and thumbs. 10. Namaste: Bring your hands together in front of your chest in prayer position. Now say to yourself on the inhale, “I am relaxed” and on the exhale, “and rejuvenated.” Repeat this phrase as many times as you like with your breath, to encourage integration and a sense of ease. These are just a few exercises designed for the work place. I hope you enjoy them as your gently move and breathe your way into health and well-being. Before beginning any exercise program, always talk to your doctor. It is best to consult a yoga teacher before doing the poses presented in this article. What are enzymes? Enzymes are proteins that are catalysts used to facilitate tiny chemical changes for virtually every single chemical process that occurs in the human body. There are thousands of known enzymes and each has a specific job. We use them to think, create energy, adjust hormone levels, and virtually everything else. We cannot use a vitamin, a mineral, a fat, make or break down cells, or control blood sugar without enzymes.
Main sources of enzymes: Your Body Digestive Enzymes break down the foods we eat into basic components that our cells can use. These are produced throughout the digestive system. The main categories include • Proteases to break down protein • Lipases to break down fat • Carbohydrases to break down starches and carbohydrates • Cellulases to break down fibers
Metabolic Enzymes are used as catalysts for energy, healing, growth, immune function, making neurotransmitters, to reduce or create inflammation, building and breaking down bone and cartilage, and every other function in your body. Your Food Enzymes are found in all foods that are fresh. Enzymes are what ripen bananas or tomatoes sitting on our kitchen countertops. Enzymes are also what continue to “compost” those same foods if we don’t eat them fast enough. The culturing of dairy products and fermentation of other foods increases enzyme activity. Think of foods such as yogurt, kefir, naturally made cheeses, and sauerkraut.
digest those food products. Left unchecked, enzyme deficiencies prevent complete digestion of specific compounds in foods and can lead to symptoms of food intolerance. Look for enzyme products that have a broad array of enzymes if you aren’t sure what type may help you with digestion. The product label should be specific about which enzymes are contained in the formula and also list the activity units. Activity units give you the strength for the specific enzyme. The abbreviations for the activity units are specific to the type of enzyme. For example, protease enzymes are listed as HUT, amylase enzymes are DU, and lactase as ALU. A superior enzyme product is blended like a fine wine and each company blends their product a bit differently. Using a broad spectrum product will typically give you the best results with food intolerances.
Visit Nature’s Corner as they have additional information on Enzyme’s and tools available to you that will help identify potential food intolerances.
Enzyme Supplements Digestive enzymes can be purchased as supplements. These products can be general for digestion of fats, carbohydrates and proteins or can be specialized. For example, some products are specifically for lactose intolerance, breaking down gluten, casein (a milk protein) or carbohydrates. Others may focus on fat digestion, reducing inflammation, breaking down phenols and fibers or for when you eat beans. If you aren’t sure what you need, there are also available a variety of broad spectrum supplements that provide enzymes that do all of these. Many people have enzyme deficiencies, making them unable to adequately digest specific foods or food groups. Have you ever eaten a bowl of cereal with milk or bowl of chili and found yourself uncomfortable with a large amount of gas? It’s probably because you lack enzymes to help you

The American Optometric Association has designated March as “Save Your Vision Month”. Advanced technology is being employed by optometrists, such as Dr. Cody Bengoa at Bengoa Eye Care in Winnemucca, to help prevent you from losing your vision. It’s important that your eye doctor keep up with the latest developments in eye care to help to preserve your vision for years to come. Are you not seeing well? of determining whether someone is not seeing as well as they should is to use a non-invasive test called corneal topography, or mapping of the cornea. This test can detect a condition called keratoconus, or a cone-like degeneration of the cornea, which causes high amounts of astigmatism and distorted vision. Corneal topography is also used to best fit contact lenses. You optometrist is also able to see through the pupil, which is really a window to the back of the eye, and evaluate the retina. This is where over a million cells capture light and send signals to your optic nerve, then to your brain. Part of the optic nerve is not only visible through the pupil, but this is the only place in the human body where internal blood vessels can be viewed without performing surgery. Photographing the retina allows your eye doctor to diagnose potential complications from such conditions as diabetes, high blood pressure, and high cholesterol. These diseases can cause bleeding, areas of the retina that don’t receive sufficient oxygen, and a stroke to the eye. It’s best to detect any such problems early to prevent complications which could cause permanent damage and blindness. Retinal photography also allows the doctor to better observe changes to the retina over time. Photographing the back of the eye is important in diagnosing and managing glaucoma and age-related macular degeneration, as is scanning the layers of the retina. Dr. Bengoa’s retinal scanning instrument, the Cirrus High-Definition Optical Coherence Tomographer (HD-OCT), acquires high-quality scans and allows him to view deeper structures than the front surface of the retina. This helps in determining the cause of vision loss due to such conditions as wet macular degeneration and macular swelling due to diabetes.
Retinal scanning instruments are also important tools used to diagnose and manage glaucoma. Glaucoma is often referred to as the “silent thief of sight”, because there are rarely symptoms until a significant amount of irreversible damage to the optic nerve is done. The Cirrus HD-OCT uses computer analyses to alert the doctor about subtle differences in health between each eye, and compares the health of each eye to normal data. Early changes in glaucoma may be identified with this instrument years before other instruments are able to detect changes, which can help to prevent irreparable damage to eye structures and future vision loss. Using advanced technologies of mapping, photographing, and scanning, Dr. Bengoa and his staff at Bengoa Eye Care are able to provide you with some of the best eye care possible. Call them today at 775-625-3937 to schedule an appointment for your annual eye exam, or if you’ve noticed changes in your eyesight. You can also request an appointment through their www.bengoaeyecare.com website. It could save your vision!
“A Seller’s Mindset for Success” Contributed by Mike Andrews, REMAX Great Basin Realty
Beyond the basic tasks and actions involved in pricing, preparing and presenting your house throughout the selling process, there is the mindset that a seller must embrace. There are a number of approaches that you can choose whether or not to take; each of which has the ability to make or break your deal and may make or break you. If you are not willing to make the necessary changes on how you view the process of selling your house and maintain this mindset through to the end, the chances are that you will fail.

Here is the one thing that no one tells you about selling your house; that it’s
Hard Work.
With that being said, when you make the decision to sell your house it is because you have decided that you wish or need to make a change in your life, your lifestyle, where you live, for financial reason, because of a job change, because you have outgrown your house or the house is more than you can physically handle anymore. Whatever the reason is, you have made the decision that a change is needed. With that in mind, you now need to get yourself in the correct mindset for success. To do so, you must first change how you see your property. Remove your emotional connection and start seeing your house as a commodity that carries with it a market value, determined by what the majority of buyers have been willing to pay for a similar property in your market. Keep in mind that selling your house is ultimately a business transaction, and you will need to remove your emotions in order to rationally work through offers that you may receive. Next, you will need to challenge yourself to start and finish the house selling process with the mindset that you must be an active participant and be diligent in your resolve to sell your house so that you can move on with your life. Begin this by do your due diligence, and don’t cut corners. Here is what you need to do: • Take the necessary time to interview and select an agent
•G et bids from contractors for the repairs or prepare to do it yourself
• Search the public record for other homes that have sold within your neighborhood and compare them to your home. Your agent can assist in this task if you are having difficulty.
• Complete several little projects and maybe a few large projects
• Nitpick everything that is wrong with your home • Determine what you can afford to fix and what makes sense not to fix
• De-clutter and de-personalize the home • Stage and decorate the home • Then deep clean the home down to the minute detail, and keep it clean and organized throughout the entire selling process
All of this should be done before you get any offers.
The sheer magnitude of this list of tasks that you will be taking on during the selling process can be so overwhelming at times that you may take shortcuts at some point along the way. You may choose not to meet with more than one agent, and ultimately end up with someone that you are dissatisfied with in the end. You may rush through the detailed questions of a disclosure, exposing yourself to liabilities that could later result in a lawsuit. You may ignore straightening up the house before a showing, and in doing so; discourage a buyer from seriously considering your house for purchase. Make it a point to avoid shortcuts as a seller. Decide up front that you are going to do it right and pass your house on to the next owner with pride. It may seem excessive at times, but the sellers who take this stance, more often than not, will experience a faster sale at top dollar. In the end, you as a seller will need to stay focused on your goal to sell the house. *Each office is Independently Owned and Operated

Working Towards a Better Tomorrow!
LENDING A HELPING HAND
The mission of the Frontier Community Action Agency (FCAA) is to empower the community and ensure equal opportunity for low-income citizens. It exists for the primary purpose of addressing the needs of low-income citizens. The FCAA establishes programs and support policies that address social and economic issues faced by low-come, special needs or atrisk residents of Elko, Humboldt, Lander, and Pershing Counties in Nevada. It will collaborate with community members on strategies and techniques to implement changes that bring about opportunity and enable citizens to secure economic self-reliance. In addition, the

The agency works toward partnerships and collaborations with community members and businesses that promote the development and support of strategies and techniques that encourages social change, thereby bringing about greater opportunities and economic self-reliance for individuals and families. One of our recent successes was a family of seven facing a difficult situation after recently relocating to our community came through our doors. They had family here, but needed help getting on their feet. This family followed through with all the steps, which are usually many, to acquire stability. Within about 4 months of walking through our door, this family found themselves taking a breath of relief as they were able to obtain employment, were approved for an apartment 2 days before Christmas, and through the diligence of the FCAA staff they were also able to obtain the beds, dressers, tables, and the basics of making a home for their family. This success story came through the collaborative efforts between their local relatives, the FCAA providing the applications and guiding them through the process, and the family following through with each step set before them. The family is doing well and making Winnemucca their home. We would like to give a special thank you to everyone who is working together to help one family at a time break down the barriers of poverty and homelessness, and help each individual and family facing them pull themselves out of poverty. We would not, and could not, be successful without
the great community support we have in Humboldt County. Community Action changes people’s lives, embodies the spirit of hope, improves communities, and makes America a better place to live. We care about the entire community, and we are dedicated to helping people help themselves and each other. For more information concerning the agency’s mission, programs, additional resources, or to schedule an appointment please contact the Frontier Community Action Agency at (775) 623-9003. Or stop by our offices located at 640 Melarkey Street, Suite 3, Winnemucca, Nevada. The more people who know about the social issues affecting our community, the more likely they are to take action to help or know how to help their own children and families. REMINDER: It's Your Money! So Why Not Get Your Tax Return Prepared For FREE! The Frontier Community Action Agency is pleased to announce that it will again be hosting a Volunteer Income Tax Assistance (VITA) site for tax year 2013, which is a free tax preparation program designed to assist low- and moderate-income families. If you worked last year, even part-time, and earned a low- to moderate-income, the IRS could owe you money! If you believe that you qualify for this program and need help filing your 2013 income tax return, you may obtain FREE tax assistance at the Frontier Community Action Agency. Hours of operation will vary throughout the tax season, so please call the agency at (775) 623-9003 for more information, or to schedule an appointment.
