Re-Turn The Favor IT IS that time of year again... the horseshoe crabs are all over Higbee’s Beach, where they come to breed. Unfortunately, wave action often turns them upside down, and they have trouble righting themselves. So when you’re taking a stroll, go ahead and flip them over. It’s the least we can do, after all... if you’ve been reading these pages, you know that horseshoe crab blood is used to test intravenous drugs, vaccines, and medical devices for bacterial contamination. Just be careful not to pick them up by the tail; they break easily!

SOME people on this island cannot function without their morning cup of joe. Luckily for them, Cape May Roasters — the little bean company brought to you by the people behind Love the Cook, Lucky Bones, and the Washington Inn — is heading into their third season… and they’re smelling better than ever. We stopped by the Cape May County Airport, where the coffee is roasted in the same stretch that houses the Cape May Brewing Company. “If only I could get free samples from them,” joked head roaster Doug Marandino. But with the aroma wafting out his door, we’re wondering if it isn’t Doug’s neighbors who are jonesing for samples from him.
Inside, taking up most of the floor space, were 55 burlap sacks, full of beans from “pretty much everywhere” via a North Jersey-based distributer. Think Hawaii, Mexico, Kenya, Tanzania, Ethiopia, Honduras, Nicaragua, and Columbia. When we arrived, Doug was busy readying the Costa Rican beans for roast, which meant measuring out 75 pounds worth. “That’s the max you can do at one time,” he told us. “On average, we’ll roast between 400 and 500 pounds a week.” This means that Doug is putting in up to 30 hours a week at the airport during the busy season… which is quite a bit, considering he’s also the sous chef at the Washington Inn, a post he’s held for 20 years, father to son Marcus, and the owner, along with wife
Andi, of Cape May Honey Farm, which opened a store on Sunset Boulevard this spring. “There aren’t enough hours in the day,” he told us. But one position does benefit the other. “I’m able to recycle those burlap coffee sacks,” he said. “I use them as fuel for my smoker.” Which, he explained, is a contraption used to calm his Honey Farm bees during an inspection of their hives. The smoke also initiates a desire in them to feed on honey, which causes their bellies to distend and makes stinging more difficult. Who knew? And what makes it a “smart” machine, we wanted to know? “It minimizes greenhouse gas emissions,” Doug said. We looked it up, and a roaster who uses a Loring, as opposed to a conventional machine, reduces his impact on the environment by nearly 80%. Actually, the environment is a concern which seems to permeate every aspect of production at Cape May Roasters. Even some of the beans are organic, like the company’s High Grown Mexican Beans, which, interestingly enough, have been decaffeinated using the Swiss Water method. (When beans are immersed in water to extract caffeine, some of the more desirable oils are lost as well, so this method calls for immersing the beans only in water that’s been fortified first with these good components, a strategy which
minimizes their loss.) As Doug used what looked like a household vaccumm attachment to suck his beans into a top canister called a hopper, he also preheated a bottom canister — a drum – to 400 degrees. He did this with the machine’s touchscreen controls, just one of several hightech elements. It’s even possible to operate the machine remotely from an iPad or laptop, but “I prefer to be hands-on,” Doug said. Case in point: once the drum is ready and the beans are dropped inside, Doug monitors their color through a tiny window, watching as paddles constantly rotate the beans to keep them from burning. The entire process takes between 14 and 16 minutes. After that comes the flavoring, done by flavoring guru John McCulley, and the bagging and labeling. Then, the various blends are shipped out to wholesalers like Love the Cook, Depot Market, and Bliss ice cream. It’s a process Washington Inn owner, Michael Craig, sent Doug to learn in Raleigh, North
Carolina. Then, Loring’s designer and manufacturer, Mark Ludwig, met up with him in Cape May for even more training. Thursday, June 13, 2013 November morning in 2007. New Jersey Audubon’s Nature Center of Cape May is the focal point of Harbor Fest. Executive Director Gretchen Whitman said that, during the winter of 2007-2008, abandoned boats were ruining Cape May’s harbor. A group of businesses surrounding the harbor formed, the “Harbor Partners” including the Nature Center, South Jersey Marina and Lucky Bones Restaurant. They worked with representatives of the city and Chamber of Commerce of Greater Cape May to find a way to remove the abandoned boats, which were hauled away by Sea-Tow. The group established an event to bring awareness of the harbor and to pay for removal of derelict boats. The “partners” picked up the concept of Cape May’s defunct “Sea and Sky Festival.” “We said Cape May really needs to have a festival that focuses on our maritime heritage and the importance of the sea-

Scup, also known a porgy, was once overfished but the population has now rebounded and it will find itself in the frying pan at Harbor Fest. Under a big tent at the Nature Center, children can pick up a horseshoe crab or starfish. There are also activities on the water such as the “Paddle for a Purpose” kayak and canoe regatta, a tour of the harbor which raises money to provide scholarships for Coast Guard children to attend summer camp at the Nature Center for free. Whitman said Harbor Fest is a reminder of how many local residents are employed in the fishing industry. “We have a beautiful harbor, said Mark Allen, South Jersey Marina marketing director. “You can’t take it for granted because it’s a confined water area and if you let it get polluted, you lose it.” Allen will oversee a blessing of the water ceremony Friday evening June 14 at 5:30 at the Fisherman’s Memorial at the end of Missouri Avenue to remember commercial fisherman who lost their lives at sea. A solemn ceremony will be held with the placement of a wreath on the memorial. It is often attended by family members of lost fishermen.
Doreen Talley, marketing and events director of the Chamber of Commerce of Greater Cape May, said there will be more activities for children this year including a rock wall for climbing and a sand art table. Vendors will sell items ranging from birdhouses to honey and all sorts of nautical gear. A beer garden, sponsored by Cabanas, will be operating next to a tent where local chefs will be preparing their best scallop dish. Chamber President John Cooke said organizers hope to create more of a block party atmosphere with WIBG’s Philly Bill spinning the tunes. After 2pm, live music from Cape May singer/songwriters will begin with Carl Behrens, Gordon Vincent and Red Mare. Cooke said the goal has been to increase the quality of the vendors. With the harbor rid of derelict boats, Harbor Fest has become more a “destination” event, he said. “People plan their weekend or vacation stay around Harbor Fest,” said Cooke. “It draws

Talk Of The Town ? From Page 18 walk — where a single ride on the ferris wheel is enough to flood a person with nostalgia. It’s one of the reasons we’re a major part of a little artists’ colony and café called [artBOX], launched in conjunction with Morey’s Piers, and one of the reasons we spent last Sunday evening dining al fresco in front of the [artBOX], soaking in all of that good, kidlike energy. Some have wondered why we’d want to have a presence in Wildwood, when Cape May is such an idyllic little piece of the planet, and so opposite the delightfully tacky ambiance of Exit 4B. It’s because Wildwood can be an important part of the Cape May experience, even if it’s just a quick, one-night trip you take during the course of a Cape Island vacation. How nice to come to the original seaside resort for a relaxing day spent
on a pristine beach overlooking beautiful Victorian architecture, and then take the family to the boards for an experience that’s energizing, even if all you do there is sit and people-watch? Which is exactly what we did. With our plates of sushi and edamame from Café 4B, and glasses full of crisp New Zealand Sauvignon Blanc, we listened to the hum of little girls chattering about the five days of school they have left and how excited they are to ride the Spring Shot — which thrusts a person into the air at 75 miles per hour — with their father. We listened to 20-something guys discuss their day spent wakeboarding and dolphin watching. And we watched the 160-foot, rotating arm of the Skyscraper ride silently turning above us, against a dusky sky still fighting to hold on to some sun, despite the late hour. “That ride turns everyone into a sailor,” said David Macomber, one of the featured

HENEVER there is talk of building a windmill in Cape May, someone finds a reason to oppose it, whether the argument is that it will kill migrating birds or, more recently, it will ruin the “historic viewscape” of the town. Historic Preservation Commission (HPC) Chairman Warren Coupland told City Council at a June 3 meeting that a windmill planned for Cape May City Elementary School would be visible from several areas of the city, which would undermine the historic character of Cape May. The school and city received a $10,000 grant from Wal-Mart to build a 40-foot tall Sky Stream wind turbine to reduce the elementary school’s electric bill, educate students about energy sustainability and increase Cape May’s use of alternative energy. The wind turbine has the potential to produce 2,937 kilowatt-hours of electricity per year.
Coupland said the windmill would fall under the HPC’s directive to prevent inappropriate new construction. The HPC’s design standards state windmills are not appropriate in Cape May. Coupland told us he believed the windmill would be 51 feet high from the ground to the tip of the propellers, which would make it very visible from Lafayette Street. Last year, the National Park Service removed Cape May from the National Historic Landmark watch list. The city was placed on the list in 2007 due to heavy traffic, inappropriate new construction and a number of demolitions. The HPC presented a five-year corrective action plan to the National Park Service in 2008. “You don’t have to have a windmill to teach children about alternative energy in my estimation,” said Coupland. City Manager Bruce MacLeod told Exit Zero elementary school students would study
both the energy savings from the windmill and the city’s solar panel projects. He said the school property was probably the best location in the city for a windmill. City Council can ignore HPC’s objections and allow the windmill to be constructed at the elementary school if it desires. Three years ago, Mayor Ed Mahaney said the city wished to power its desalination plant with a wind turbine. The desal plant uses $225,000 per year in electricity to power the system.

Three crossings on Pennsylvania Avenue near the Coast Guard base have not been completed. “None of that work was paid for,” said Roberts. And speaking of contractor issues, thanks to rainy days, work is two weeks behind schedule on paving Washington Street following water and sewer line replacement from Franklin Street to Ocean Street. Roberts said the completion date on the contract was supposed to have been May 24. He said the city has the option of invoking a damage clause in the contract with RTW Construction of South Hampton. Roberts said additional work on Franklin Street was added to the contract without a request to extend the deadline for the project. Mahaney said the matter should be reviewed by council. “I want to be fair to the contractor but on the other hand, this project was started in January with the understanding it would be completed around Easter,” he said, adding that the work not being completed on time was a major inconvenience to residents and tourists during the Memorial Day weekend. Mahaney said the city went beyond the call of duty to pay the contractor when their invoice was submitted late. He said he was frustrated during the last few weeks to see days on end with no work was taking place.
School Funding
Vito Gagliardi, an attorney specializing in changing school funding formulas, and his team met in closed session with city council June 3. He presented a draft of a feasibility study to bring about a change in the formula with the Lower Cape May Regional School District. Councilmember Jack Wichterman said Gagliardi brought with him his “financial expert.” Gagliardi will attend council’s
June 18 meeting at 7pm to present the study to the public. “I want to see this place filled,” said Wichterman. “We’re talking about trying to save a lot of money and you don’t save money without spending some.” The city has $48,000 invested in Gagliardi’s work. Wichterman said he was convinced the funding formula would be changed but not necessarily during his term on council. He cited Gagliardi’s win in Oradell where an administrative law judge recommended the state Commissioner of Education change their school funding formula to be based 80 percent on a per pupil charge and 20 percent on property value. Wichterman said legislators would not change the funding formula. “Because those guys don’t have the guts to change it because they’ll probably lose their seats but that doesn’t mean that the court cannot adjust it…” he said.
ADA Projects
There appears to be disagreement between the mayor and the city’s Public Works Department as to whether more grants for ADA (Americans with Disabilities Act) access projects along the beachfront should be sought. Mahaney noted the city has received over $2.5 million in ADA access grants. The city has been making beach access easier with ramps and wooden mats across the sand. Mahaney said the matter should come before council for a decision. MacLeod said the intention was to continue ADA work on Lyle Lane and Mansion Street at the Washington Street Mall. He said the next segment of the proposed grant application should address Village Green. MacLeod said plans for this year included finishing the 400 block of Carpenter’s Lane and doing an initial round of intersections in Village Green. He said finishing the perimeter of the mall would consume most of the dollars the city could apply for this year. Another targeted area for beach access would also be included, he said.

The Old Fogey
I
Ah, those good old Cape May days... by Jackson D’Catur
ADORE tattoos, except those of cartoon characters or genitalia. Or tattoos ON genitalia. Especially cartoons on genitalia. And, I admit, I am a puzzled by those Caucasians who have no genetic, economic or emotional resonance with The Orient except for the occasional visit to Cape Orient restaurant. Indeed, among my many Asiatic friends, there is not a single one who has chosen to have characters of the Roman alphabet inked on their body. Nor am I fond of tattoos of human faces: they tend, when the body moves, to flex or wobble, or appear lewd or unnatural. I did once see a skinhead fellow in the Scotch city of Glasgow who had dotted lines round his neck and a “cut here” instruction. I would have complimented him on the playfulness of the offer had he not, when he saw me approach, casually taken his bottom lip tween thumb and forefinger and lower to reveal the words “F..k Off” tattooed on the inside. In Cape May, of course, over summertime, I spend many a happy hour wander-
ing the beach with my Box Brownie camera, snapping the designs. My favorite was the chap who had a Spanish galleon on his stomach, with full sail on the masts. When he rapidly flexed and relaxed his abdominal muscles it appeared to be flying before a storm, canvas flapping. I have been variously tattooed and then un-tattooed on most every part of my body. In wilder days I had an artist ink the coordinates of Cape May on my chest, so that wherever I passed out, someone would be able to UPS me home (I used to
carry an envelope with the correct postage from Australia, reckoning I would be hard pressed to go further whilst drunk, and that anything closer would be covered. How could I have expected to have woken on the International Space Station? But this is no time to tell that tale of zero-G high-jinks). And I did, one time, have a perfect set of abs tattooed on my stomach, when summer one year arrived faster than anticipated and I was not able to reduce my “winter fat” in time. This worked very well until I achieved my washboard stomach, at which point the real and illusory muscles overlapped and caused a disorientating 3D effect. My favorite, though, was when, once, I noticed I was balding and in a blind panic called my private tattoo master down from New York City and bade him to sort it, post haste. Well, when he was done he fetched a mirror. I had expected a François Sagat-like tattooed hairstyle (careful what you Google there) but what did I see? Rabbits. Voice atremble with rage, I demanded an explanation. “Well,” the quaking tattooer ventured, “from a distance they look like hare.”

HE summer I turned 19, by a stroke of luck, I fell into a job at an Indian restaurant in Philadelphia. Up until that point I was a kid from the suburbs eating pizza and fries. There were no familiar flavors in the food I would grow to love. And the customs, such as eating yogurt with the meal, seemed odd. But the yogurt was really fresh and light and not sweet like the kinds I was used to eating. I watched the chef’s make large vats of it and they showed me how they would keep one tablespoon of the last batch and add it into the new one to kick start the fermenting process that turns milk into yogurt. I was watching a method of “cooking” that went back several hundred years, if not more. Fermentation, according to Sandor Katz, author of The Art of Fermentation, “...is the space between rotten food and fresh food.” Examples are beer and wine, (yum), cheese, pickles, sourdough bread and sauerkraut. Sounds like a picnic, and it is. The picnic is happening in your gut with bacteria and enzymes noshing on your meal to digest it and make it absorbable so it can release nutrients.

The odors from some of these foods drive people from the building. (Kinda like your aging grandfather after Thanksgiving dinner).

With the over-use of anti-biotics, antibacterial soaps and germ-obsessed cleaning products, (we use a cleaner at the gym that states “...kills SARS;” I’m looking for the one that says, “Stops leprosy in its tracks!”), we need to be thinking about giving our good bacteria a hand. Besides yogurt and taking a pro-biotic supplement, there are a couple of ways to beef up your bacteria count. Drinking Kombucha may be one of them. It is a fermented drink that has a pleasant cider taste and contains anti-oxidants as well. Adding a pickled vegetables to each meal is a great way to ensure a constant supply as well. Make your own! Take cabbage and cut it and squeeze it to remove the water but keep the cabbage in the juice. Add as much salt as you like and cover it in a canning jar. Check on it in 4 or 5 days and, remember, it will be giving off gas so don’t let the pressure build up. Taste it and decide how tart you want it. And the next time you are told you smell like dirty gym socks say, “No-that’s the ViexBoulogne French cheese I keep in my gym bag. (Winner of the world’s smelliest cheese contest.)

This week, Arts Editor Tom Sims and daughter Julia Sims review “The Great Gatsby”
HIS being the Father’s Day edition of the Movie Column, what better way to celebrate than to invite my daughter, Julia (16 years old), to join me in reviewing the latest film adaptation of the F. Scott Fitzgerald classic novel, The Great Gatsby? Julia says: This movie was amazing! The time period is intriguing, so the sets and costumes were visually stimulating. The music was a little odd-sounding at first. It was like rap but it went with the visuals somehow and wasn’t so completely bad. I’ve only seen Leonardo DiCaprio in Titanic (1997), but let’s face it, that movie was kind of depressing. He was great as Gatsby. Tobey Maguire played Nick Carraway, and I love Maguire because he played Spider-Man (2002), and I love super hero movies. And who doesn’t like Cary Mulligan (who played Daisy Buchanan)? The movie was very true to the book for the most part — except in two important places. The relationship between Carraway and Jordan Baker (played by Eliza-
Leonardo DiCaprio made a truly great Gatsby, according to Julia Sims. beth Debicki) is never properly explained as it is in the book. You just think of Baker as some gossip, and not the love interest for Carraway. So, she is much better developed in the book. And, in the book, when Gatsby’s father arrives, you feel like his father did not have many people who cared about him... then you realize, neither did Gatsby! That’s a very moving scene in the book; what a loss not to have it in an otherwise well-made film.
Tom says: Well, I haven’t read Gatsby in years so I guess you could say I went to see the film cold! If you’re a literary purist, you’ll not like any adaptation of this novel. However, after careful analysis of both the printed word and mood of the book, this is clearly the best made of any adaptation. This film speaks to the essence of Fitzgerald’s work. The novel was not as much about plot as it was about movement, less about dialogue and more about language. Somehow director Baz Lurhmann remembered what is at the heart of this great novel: Fitzgerald’s beautiful command of words. So this Father’s Day, I’m going to agree with my daughter on this: The Great Gatsby is worth seeing. Both of us also agree that the Cape May Film Camp is a great way to learn about filmmaking as well as storytelling and character development! Make plans to join us Friday, June 28, 7pm at West Cape May Borough Hall for a free screening of the films made at this year’s camp! No reservations needed. ELEBRATE Cape May’s connection to the sea at Harbor Fest on June 15. Harbor Fest is one of Cape May’s best parties, and its organizers draw a connection between the town of today and the 17th century whaling village it once was. After all, scrimshaw decorated area homes long before gingerbread did. In 1685, whalers based in Cape May were part of America’s new economy. Whale products such as lantern oil, lubricants, paints and soap became important. Baleen was used as we might use plastic in skirt hoops, eyeglass frames, springs and umbrellas. Whaling in Cape May began as scavenging — settlers competed with the Lenni Lenape for beached whale carcasses. Later, it became a community event, as whaling crews took boats out into the bay whenever a whale was spotted from a tower on the shore. When overharvesting reduced the local whale population, Cape May’s whalers had to adopt the New England model, and go out to seek whales in the open ocean.

The dangerous work of a whaler... Life was hard for whalers. They slept in dirty quarters and ate salted horsemeat and biscuits flavored with vermin-infested molasses. Recreation time was spent mending clothes, reading and carving scrimshaw. They were paid in “lays,” or shares of the ship’s profit, and sometimes a sailor pulled into port owing money for tobacco or clothing he had purchased aboard ship. The captain’s lay might be 1/8, while a green hand might earn 1/350th.

Even a green hand would enjoy Harbor Fest – it’s free, and the refreshments are affordable. Sponsored by the Chamber of Commerce of Greater Cape May and New Jersey Audubon’s Nature Center of Cape May, Harbor Fest begins with the Blessing of the Waters at the Fishermen’s Memorial at 5:30 on Friday night, June 14. On Saturday, the party moves to the area around the Nature Center on Delaware Avenue. (Sunday, June 16 is the rain date.) The street will be closed, so be sure to take the trolley or bring your bike along. Harbor Fest features music, a beer garden, nature programs, information on the fishing industry, vendors, kids’ activities, and kayaking, but many people come just for the food. Pace yourself at the scallop challenge, and you can taste a sample from each of the top chefs in town. Or get a crabcake. Or chowder. Just follow your nose. Wash it down with a cold beer. Work off the calories with the kayak regatta. You’ll go home with a renewed appreciation of the sea. Next week: Tour the Designer Show House
