Salep and Mastika
From the gates of the East directly to your gelato parlour Salep base Fabbri’s wide range of bases is now even richer thanks to the addition of an ancient specialty that dates back to the Ottoman Empire. Salep is a flour obtained, to this day as it always has been, from the dried bulbs of different kinds of orchids. It was once considered a tonic or medicine, and it is still used to make beverages, desserts and ice creams. Delipaste Mastika Chios, a small island in the northern Aegean Sea, has been famous since ancient times for its production of mastika. This Delipaste, with a delicate and refreshing taste, is now another Fabbri specialty.
Kaimaki Recipe Kaimaki is the result of the union between Delipaste Mastika and the Base Salep. A gelato with oriental touches, with a rich, slightly rubbery texture. Fabbri now suggests Kaimaki enriching it with the inimitable Fabbri Amarena and Pistacho grains satisfying even the most exotic of tastes.

Every day we renew our commitment to respecting the Goccia Verde Programme, a system that fights wasted water, electricity and excess emissions, carefully aiming for the protection and conservation of our environmental heritage (www.fabbriperlambiente.com).
WATER, A RESOURCE In the 1990s Fabbri has managed to reduce her water consumption by 60%, which has been further reduced by 30% the last ten years. Our constant innovation regarding our industrial equipment indeed led us to launch, in 2000, the cleaning-in-place (CIP) water system, with a significant reduction of water and sanitation products. Moreover the water we use comes from our own wells (and not from the main water-supply system), and it is transformed into drinking water using a biological process. From the 1970s, the water used in our plant has been treated and released in the environment pure enough to preserve the life of plants and fish.
ENERGY CONSERVATION We have significantly reduced our gas consumption as well. In the past 20 years, we have economised 20% overall, thanks to interventions on the distribution network for the steam produced by the processing lines. We have also reduced heat losses and adopted low-consumption lighting, in addition to a centralised air conditioning system, in line with the recommendations of the governments that adhere to the Kyoto protocol.
EMISSIONS UNDER CONTROL We have always kept our dusts and other similar emissions under constant monitoring: our abatement systems prevent uncontrolled dispersion of particles into the atmosphere. In addition, the entire filtering system is equipped with a post-combustion dust abatement system that reduces dusts and other gasses to a gassy, nonpolluting state.
