irst and foremost, as a request to all my readers and viewers, I highly encourage you to experiment, innovate and implement the use of various colours in your day-to-day lives! I cannot begin to stress the importance colour plays in our life. All you need to do is take a look around you and you can begin to appreciate the multitude of colours, patterns and designs that make up our world. Colours express more than just feelings. They give us insight to our inner beauty, our confidence and our exuberance. So ask yourself which colour appeals to you most? What emotions do you feel when you look at a certain colour?Or, which of these emotions do you want to portray in your life? Here are some great tips for picking effective colour schemes that will satisfy your senses. Note that these colour tips can apply not just to your clothing, but also in almost every aspect of your day-to-day life.

Use their expertise and knowledge to your advantage. Knowing how different types of colours go together will help you create a palate that’s sure to suit your desires.
One Day at a Time Its common for most people to get sucked into purchasing their entire outfit and accessories in one day. Don’t do this! Colour blending should be a slow, thoughtful, and creative process. Take your time!

CUTS THAT COMPLEMENT YOUR PERSONALITY Cuts should be designed according to these three factors: height, weight, and shape. It’s of crucial importance to remember that certain cuts suit people differently. Since cuts change every year, consulting a designer is your best bet towards staying updated. Tara is half East Indian and half Portuguese, born and raised in the suburbs of Toronto with her parents. Her father was raised Hindu, and decided to name her after the Hindu goddess Tara as well as his extraordinary grandmother Alice Elizabeth Singh. Tara means ‘star’ in Hindi and she shines just as brilliant in all she does. While her exotic features and timeless beauty make her a natural in front of the camera, it is her passion, charisma, hard work, luck and perfect timing that has enabled Tara to be so visible throughout the entertainment industry in such a short time. Modeling has taken Tara around the world shooting for various projects throughout Canada, the US and overseas. She has appeared in fashion magazine editorials, commercial ad campaigns, billboards across Toronto up ground and underground, as well as being featured in photography exhibits. At one of those gallery shows she got the opportunity to audition for a short film that lost there lead actress and needed a replacement. Tara was back into the world of acting where she started in highschool. After winning the role in the short Nothing Personal, Tara got the opportunity to work as an intern at a movie studio in the Philippines for three months. There she worked as a model shooting for fashion TV Asia, worked on set of movies, wrote various reviews for several in house productions and took classes from a New York acting coach. Nothing Personal ended up winning Best Foreign Film at the Action/Cut Film Festival in Los Angeles and won the Special Jury Prize in 2011 at the Houston Film Festival in Texas. Past winners of that festival include Steven Spielberg, and The Cohen Brothers. Her TV and film credits are growing, having appeared in commercials,
DVD series, TV shows and music videos. Her feature film debut will be in 2012 for the follow-up to the short film Nothing Personal called Divine Enmity. Constantly striving to hone her skills, Tara is lucky enough to continue to learn at the prestigious Pro Actors Lab in Toronto. Rachel McAdams and Scott Speedman are alumnae at PAL. “When you’re a child you spend a lot of time thinking about when you’re a grown up, but then when you become an adult the best times are when you feel like a kid. That’s when you know you’re in the right place.”
Being blessed with a natural combination of beauty, talent, and a down to earth personality, Tara has a positive, ‘everything is possible’ attitude that keeps her on the right path. “All I want to do is to be able to inspire people, especially girls, I didn’t think I could do any of this (modeling or acting) but now I know to never give up and always believe in yourself.” “Everyone’s life path is clear; you just need to be aware of it.” Tara Elizabeth will continue to radiate her light in this New Year, the future shines blinding bright. With her father from India and mother from Pakistan she gets a very good insight and finds that people on both the sides of the border are basically one and the same. She spent her late teens and early 20’s working at her father’s first Indo-Pakistani restaurant in Toronto called “The Rajput”, perfecting her public relation skills along with learning to run a business first hand. During her school years she excelled in Drama, Visual Arts and English, her natural love for arts led her into the beauty industry where she ran her own business for over 9 years catering to brides to be and average women who wanted to look and feel better about themselves. Like most females...I guess I have always Photo: Imran Mughal been a daddy’s girl.” “My mom has always been a homemaker and the caregiver of the children while my dad was the shrewd businessman. I grew up in a family where the roles of the husband and wife were very traditional

nable to decide what would make your French manicured nails pop? The answer is Statement Rings aka Cocktail Rings aka Glam Rings. They have been the hottest ultrachic trend of 2011 and here to stay for 2012. From the fashion runways in New York to the red carpets of Hollywood, these statement rings are stealing the show. Every fashionista needs to stock up on these essentials in her jewelry box. Choose from a few brightly colored over the top rings to a few basic metal colors like silver, gold or copper tones for every day wear. Just keep the pieces as bold as possible for the knockout factor. The best part is there is no reason to go matchy matchy with your outfit or other accessories you are wearing. Just wear your statement ring or rings and you are good to go. This year one is less; the trend is to combine small and large statement rings to create the look. Statement rings have their roots in ancient royalty. Roman kings loved their statement rings. They wore rings with heavy stones in winter and lighter metal ones were worn in summer. Roman kings attached great value to a ring by its history and not by the precious metals or stones used in it.
42 JAN. / FEB. 2011
In the early 30s and 40 s statement rings were also called Cocktail Rings. These pieces were inspired from the alcoholic concoctions from which it took its name. The rings were meant to be “bubbly and extravagant”. These cocktail rings had a personality of their own; assertive, bossy and a show off. With all the glitz and glamour of Hollywood being popularized by the “ it girls” like Kim Kardashian and Paris Hilton to name a few, Glam Rings is being used to describe these statement rings. These Glam rings are usually flashy and have the Hollywood glitz attached to its personality.
Today statement rings have a combination of different elements of precious and non-precious metals and stones, history and sentimental value attached to it, making it a very valuable piece for the wearer. So gals whatever your style, pick you rings and be prepared to show off your finger blings this 2012.

Tuff Scent Relaunches Scented Nail Polish
L
isa Arnbrister and 18 year old daughter, Sylvana Barbash, relaunched ‘Tuff Scent’ scented nail polish and this time they’ve added a charitable edge. The brand which has been previously carried by reputable stores such as Sephora, Nordstrom’s, Saks fifth Avenue, Fred Segal, Planet Blue and so on, will now donate $1.00 of every bottle sold to breast cancer awareness in a commemorative effort to support the cure. “Scented nail polish has a fun twist, you can apply it, smell it and it brings a smile to your face,” says Barbash, whom originally gave her mother the idea while coloring her finger nails with scented markers as a young child. The mother daughter duo have not only set
their brand apart by giving each polish an original scent but they have also given the new line affirmative names such as “Faith”, “Hope”, “Believe” and “Dream”. The line, which makes a fabulous gift or a fun treat for you has already been featured at Ryan Seacrest’s Grammy gifting lounge and Teen Choice Awards. ‘Tuff Scent’ was originally founded in 1996 by Lisa Arnbrister. The scented polish became an overnight global sensation retailing at 2,000 stores worldwide. The line quickly developed an “A List” celebrity following and has been featured on everything from Oprah, Good Morning America and Fox News to In Style, Vogue, W, and Cosmopolitan just to name a few.

WATCHES
Baume&Mercier The New Capeland - Character Redefined
E
asily one of the most charismatic collections, Capeland is a watch that epitomizes seaside living, relaxed lifestyle, authenticity and strength of character. The Capeland, a long-loved line, is inspired by an historic single push-piece chronograph, circa, 1948. It features a curved case back and “chevé” shaped sapphire crystal reminiscent of early 19th century “galet” pocket watches, but updated with bold distinction. While Capeland has been a muchcoveted timepiece, Baume & Mercier nonetheless has found ways to bring the emblematic Capeland watches to even new levels of appeal. Each emblematic Capeland watch houses a top-notch self-winding mechanical movement with the complex flyback chronograph function. The Bi-compax* caliber, manufactured by La Joux Perret, is meticulously finished with blued steel screws and a circular grained finish for the plate and bridges.
54 JAN. / FEB. 2012
The open-worked oscillating weight, adorned with the” Côtes de Genève” design and snailed décor, features the Greek Phi letter as a symbol of balance and perfection. The movement is visible via a transparent sapphire case back. This year, to complete the Capeland steel emblematic offers, Baume & Mercier brings forth this enticing leader piece. Whereas in the past the steel Capeland emblematic watches had an offwhite clear dial, this bold but sleek new piece features a black domed dial with contrasting gilt hands and tachymeter scale. This color combination, along with the light brown alligator with ecru stitching, brings a harmonious, incredibly enhanced look. The retro appeal of this watch, along with telemeter scale, classic Arabic numerals and “Breguet” type hands, makes it a timeless work of form and function. The ergonomic design offers extreme strap mobility for ultimate wearer comfort.

“I am very happy and am having the time of my life in Albania at the Miss Globe 2011 pageant. Pakistani born, 23 year old Attia Bano Qamar, who was second runner up for Miss Pakistan World 2011, represented Pakistan in the Miss Globe 2011 pageant in Tirana, Albania. A resident of Norway, Attia Bano won the Miss Perfect 10 award as well and was one of the popular girls in the running for the title. She is one of the first representatives for Pakistan in the Miss Globe 2011 pageant. Attia Bano is not new to the world of modeling and has been modeling since she was 15 years old. She is also an image consultant by profession. When asked about her experience and her newly attained title of Miss Pakistan Globe 2011, Attia replied that she was ecstatic and very happy to be having this once in a lifetime opportunity. A diehard fan of the handsome and evergreen cricketer Imran Khan, Attia stated that the one thing she would like to see in Pakistan is that all children should receive an education. She wants to use the Miss Pakistan World platform and now her new title of Miss Pakistan Globe 2011 to change the perception of Pakistanis around the world especially in Europe where she resides. Pakistan being a nine year old industry is making news around the world in the field of pageantry, and hopefully girls like Attia Bano and many more may help bring Pakistan on the map as the country with the most beautiful women! Urvah Khan
ENTERTAINMENT
“I ‘m crazy…and now so is my Music!”
R
ock meets World” says Rapper / Rhyme writer Urvah Khan, when asked about her sound. Seems natural for a Pakistani Canadian, having been exposed to Eastern and Western culture during her formative years. Khan’s family’s journey landed her in Surrey B.C. then Toronto, (via Abu Dhabi.). “My mother was a journalist back in Pakistan, and I drew my love for words mostly from her... the transition to Rap and Hip Hop was easy, Rock however, took a real leap of faith!” Running away from home as a Toronto teen didn’t hurt her lyric work either. Eventually leading her to convert from Islam to Christianity, something not to be taken lightly. “She had quite a trove of experiences from which to draw upon...” says Producer / Guitarist Ruben Huizenga.” A real aggressive edge that lends itself easily to Rock.” Khan met her band consisting of Huizenga and Kenneth Griffin (the Central Nervous System) in 2009 at Huizenga’s Toronto studio, where she was searching for her sound working with various electronic music producers. Lightning struck when on a lark, Huizenga agreed to work on one track with her... (Later to be called “Nu Luv Sequence.”) This was the dawn of a new direction

for Khan, live instruments, Western and Eastern flavours and boundless energy. “I love the energy.” says Khan. “I’m crazy... and now, so is my music!” “Obviously it was the live drums.” says Griffin. “Clearly it was the guitar...” says Huizenga. Whatever it was, Urvah Khan’s aggressive reflections have struck a chord. “I don’t know, I guess I’m just a crazy little scrappy brown girl with lots to say...” We’re listening Urvah! As a Pakistani Canadian emerging from the Toronto suburb known as Malvern, Urvah Khan’s musical choices were an exercise in faith. Thankfully for her (and us!) fortune has favoured the bold. Opening for artists such as Danny Fernandez, Saukrates, Gyptian and Choclair, Khan soon garnished attention locally; (OMNI Channel Toronto, Rogers TV, CKLN 88.1FM & Z103.5FM) as well as overseas; (BBC “Introducing Artist” Asian Network (UK), ESPN Coverage of WINTER X Games 2012 and SPORTSCENTER LA.) Khan’s energy has now translated into “RUCKUS” a 2012 European tour that will see her in Germany, the Netherlands, and the UK. If faith the size of a mustard seed can move mountains, then watch out for Urvah Khan! Check out more of her music at www.YouTube.com/URVmusic www.SoundCloud.com/URVmusic. JAN. / FEB. 2012 63

ART & CULTURE
Fenulla Jiwani
Highlighting the Rich South Asian Diaspora
F
rom humble beginnings, Fenulla’s parents came to Canada as refugees from Uganda. Her mother, who was very passionate about the arts, enrolled Fenulla in dance classes, which initially sparked her desire for the Performing Arts with her first performance at the tender age of five in a ballet recital. Since these early beginnings, Fenulla studied ballet, jazz & tap at a local dance studio while partaking in local community variety shows and musical productions. Her creative spirit was far deeper then even she realized and it was just a matter of time before she fully embraced her gifts and talents. Although Fenulla had always dreamt from a young age of being a singer, dancer and actor she decided to initially pursue a ‘noble career’ as an elementary school teacher while keeping her artistic side as a ‘hobby’.
64 JAN. / FEB. 2012
After completing a Bachelor of Education along with a Bachelor of Arts in Specialized Honors Psychology, she taught for the Toronto District School Board for a year and then went on to train in acting, singing and dancing at the Randolph Academy for the Performing Arts. After graduating and realizing that roles for ethnically diverse performers were few and far between, she decided to create new vehicles of expression for herself and other artists which inspired her to materialize her dream of starting her own theatre and film production company. Six years later with six plays to its credit, her company FenStar Productions has been dedicated to culturally diverse works highlighting the rich South Asian diaspora. She has performed in all six of her plays, and has appeared on many television and radio shows, as well as being featured in major newspapers and magazines.
Her critically acclaimed production, 30 DATES toured Canada for two years performing at well known theatres and she co-wrote and starred in the unique live interactive dinner theatre production, Paul & Priya’s Wedding, that premiered in spring 2011. Fenulla also spent four years penning her book released in 2010 entitled BALANCE: Living in Harmony with Peace, Joy & Love, in which she shares her inspirational awakenings and authentic simplicities, invaluable insights and the profound messages that she has experienced throughout her life. Fenulla is a trained Yoga instructor guiding people in their yoga practices and is an Ambassador for Lululemon athletica. On 11.11.11 Fenulla achieved her biggest dream to date, debuting her first full length album entitled ‘Divinity’ with a concert production inside Toronto’s elegant Winter

Garden Theatre. “It was truly a monumental night for me as I dreamt of this day since I was five years old. I had a vision of what the debut concert was to be like and I’m in immensely grateful for how magical and beautiful it was, a dream come true.” Fenulla’s lyrics are heartfelt and powerfully written, sharing hope, strength and optimism. “When we listen to and sing music, we are in essence an embodiment of that energy we focus on. When lyrics and music move us at the soul level we ascend in mind, body and spirit.” Fenulla worked with her music producer in creating an innovative style with her album ranging from, and influenced by genre’s in, Pop, Dance, R&B, Jazz with an ethereal flare. Her music and sound has the ability to connect with a wide range of listeners as she captivates them through her sweet angelic sound, catchy lyrics and transcending beats.
Divinity is now available on iTunes and Amazon worldwide. An entrepreneur with a social conscience, Fenulla has always partnered with a charity wherever the company performs, raising awareness and
making a donation to the charity. Fenulla has raised awareness for Red Cross, Breast Cancer Foundation, World Partnership Walk, SOS Children’s Villages, and Ten Thousand Villages. For the concert album launch Fenulla raised awareness and money for War Child and the Ssubi Foundation. Fenulla will continue her humanitarian efforts by donating to charities through the sales of her album. Presently, Fenulla is working on more music to release in 2012, watch out for this rising star! PlanCanada’s BecauseIam aGirl It only takes ONE girl to change the WORLD!
P
lan International’s ‘Because I am a Girl’ campaign is a social movement that’s unleashing the power of Canadian girls, women - and everyone who matters to them to claim a brighter, safer future for girls in the developing world. • Girls have the right to be educated. • Girls have the right to eat. • Girls have the right to be safe. • Girls’ rights are human rights. Although girls are often the poorest of the poor, it’s proven that investing in girls is key to eliminating poverty. Empower a girl and she’ll change the world. When a girl is educated, nourished and protected, she shares her knowledge and skills with her family and community, and can forever change the future of a nation. It’s that powerful! That’s what Because I am a Girl is all about harnessing the incredible power that girls and women have here at home and in the developing world, to change the future. It only takes ONE girl to change the world. Be the ONE.
Did you know? • 70% of the one billion people living in extreme poverty are women and girls. • Girls are 3x more likely to be malnourished than boys. • In the poorest countries of the world, 50% of girls do not attend secondary school. Girls and women in the world’s 66 JAN. / FEB. 2012
poorest countries are the most vulnerable members of society, denied the same rights and opportunities as their brothers. The power of girls “And yet research is also clear that when girls reach their full potential, through improved status, better health care, and education, it is the most effective development tool for society as a whole. As a country’s primary enrolment rate for girls increases, so too does its gross domestic product per capita.” - Kofi Annan, former UN Secretary General Did you know? • An extra year of school for girls
increases their lifetime income by 15%. • Children of women who have completed primary school are less likely to die before age 5 than children of mothers with no schooling. • Women invest more of their income in their families than men do. Yes, there is hope! Investing in girls is key to eliminating poverty and creating a brighter, safer future for everyone. When girls are educated, healthy and informed, they pull themselves, their children and their communities out of poverty. The most vulnerable are potentially the most powerful. Empower a girl – she’ll change the world for everyone around her, including boys and men. The plan to change the world We want to engage one million Canadian girls and women – and everyone who matters to them - to raise money for projects such as clean water and food security, healthcare and education, and livelihood initiatives, like microfinance. Girls are the answer – and so are you. Be part of the movement – make a difference. There are lots of different ways to get involved! Go to www.becauseiamagirl.ca to learn more.

might be wondering how much decorating is acceptable. Sellers with their homes on the market during the holiday season should not feel the need to give up their holiday traditions. In fact, sellers should not forgo decorating their homes for the holiday. People expect at least some
decorations. Plus, they add warmth to a home. If it is done right winter can be a great time to sell or buy!

I
s the holiday real estate market worthwhile? While the answer varies for different sellers depending upon their needs, the basic response is the same: If your house isn’t on the market, it definitely will not sell. Anyone looking for a home during the holidays tends to be more serious about buying. An added plus is that houses show better when decorated for the holidays! During the December holiday season a serious buyer will likely find fewer houses to choose from which in turn means less competition from a seller perspective with sale prices closer to asking. Once the New Year rolls around, the number of listings will begin to increase and the market will become more competitive. Although shopping for seasonal gifts can be a priority at this time of the year, often potential buyers prefer to look for a home during the holidays than during a regular work week, especially during winter vacations! Traditionally, January is the month for corporate transferees to begin new jobs. They will not want to wait until spring to buy real estate, so this is one reason a potential seller should consider exposing their property to the market now. During this time, you can rest assured that you are not going to be showcasing your home for the tire-kickers and leisurely lookers that tend to come out in the spring. If you do choose to put your house on the holiday real estate market, you

DENTIST
Dental Trauma Management & Treatment
T
his has been a common reason for stresses in families as well as children who fall or accidentally cause their teeth to fracture, loosen, shift, chip, discolor or even be knocked out of their mouth. Since the scope of this subject is very extensive a basic overview will be of great help in giving our readers a back-ground in understanding the management. The prompt handling of such a situation is what decides its success and hence management of these are very important. The review of literature shows that such incidence ranges up to 30% of trauma to primary teeth and there is a good chance of success if treatment is done within the first 30 minutes of a traumatic episode. The greatest incidence of trauma to the primary teeth occurs at 2 to 3 years of age, when motor coordination is developing in children. In the permanent teeth, the peak age ranges from 8 to 10 years of age. Overall incidence is seen to be higher in boys than in girls. Some children who have protruded teeth due to crowding and eruption patterns are at risk to get their front teethdamaged more frequently due to their occlusion. This is also why the upper front teeth are also at 70% higher risk to get damaged during a fall than the back teeth. So what should be done if a permanent tooth comes out of the socket due to an accident.
74 JAN. / FEB. 2012
Usually children below 6 years of age do not have their permanent teeth and it is not indicated to place the baby tooth back into the socket, as it can damage the permanent tooth bud or spread an infection. On the other hand for a permanent tooth that is knocked out of the socket one should gently rinse the dirt with water and not hold the tooth from the roots. Scrubbing & wiping the tooth should not be done. If a parent can place the tooth back in the socket and have the child bite down gently it will have more chances for success. If one cannot place it back then get it to a dentist or emergency room placing the tooth in milk, saline, saliva or fluoride. For a tooth completely out of the socket multiple factors decide the treatment approach of which time is the most critical and it will decide success in temporary splinting of the tooth with adjacent teeth and the need for a root canal treatment may be indicated if the tooth is reimplanted in the socket. For Crown fractures or chipped tooth, there is involvement of either enamel or dentin where in many cases a filling or a crown will suffice but when fractures involve the pulp or the nerve a need for root canal is also indicated. Sharp pain and bleeding from the pulp will help us identify this fracture. For injuries where the presentation
is only pressure sensitivity and tenderness after a fall it generally is considered minor for which treatment is unnecessary. Treatment typically consists of a soft diet, administration of nonsteroidal anti-inflammatory drugs and evaluation by a dentist. Healing of your dental trauma depends on how bad your injury is and following instructions of consuming a soft diet, avoid biting on splinted teeth; maintaining good oral hygiene; using antibiotics and mouthwash as prescribed by your dentist. If trauma is left untreated it can cause complications such as an infection and the tooth may become discolored or stay out of position in the arch. A chipped tooth with a sharp edge may further injure your tongue or other soft tissues around it and will need polished. Although the treatment of crownroot fractures can be complex and laborious, most fractured permanent teeth can be saved. Fractures extending significantly below the gums margin may not be restorable. If there is severe bleeding that does not stop or there is trouble breathing due to the injury it is very important to seek immediate help or proceed to the emergency room. Dental and soft tissue injuries increase six fold to eight fold when mouth protection is not used hence it is recommended that mouth guards be worn at all time during sports. The importance of a medical evaluation for all traumatic injuries is recommended so as to rule out Head & Neck injuries.

HOMEMADE ALOO Ingredients: For Covering: 1 Cup all purpose flour (maida) 1/2 tsp ajwain (carom seeds) 2 tbsp oil + oil for frying Salt per taste
For Filling:
Mixed Vegetable Manchurian Ingredients: (Makes for 6 people)
Photo & Text: 365 Days of Pure Vegetarian
1/4 cabbage grated 1 carrot grated 1/2 bell pepper grated 8 - 10 string beans finely chopped 3 green onions finely chopped 1/4 cup all purpose flour (maida) 1 - 2 tbsp + 1 tsp corn starch Salt per taste 2 green chillies or per taste 1 tbsp Ginger-Garlic finely minced Manchurian sauce from Indian grocery Oil for frying
Directions: Mix cabbage, carrot, peppers, beans and 1/2 of green onions, add some salt, 1/2 of ginger garlic and some chillies and keep it aside for about 10mins. Now mix in 1 tsp corn starch and some of all purpose flour to it. After mixing all the ingredients, try to form a small ball out of it and if you can, then no need to add more flour. Else you can try adding a little more. The water from the vegetables will help bind all ingredients together. Taste it and adjust seasonings. Heat oil in a wok and when oil is hot, bring the flame low and then add the a few balls. Let it cook on all sides and inside. This may take about 3 mins. But take out one and check it. The inside will be a little soft but it is certainly cooked as long as there is no flour smell. Finish cooking all the balls. Keep it aside. Heat a tsp of oil in another wok then add the green chillies, ginger garlic and 1/2 of remaining green onions. Stir well and then add the manchurian sauce and water depending on the consistency you prefer. Bring it to a boil and then add the corn 76 JAN. / FEB. 2012
starch dissolved in a little amount of water. Bring it to a boil or until the sauce starts to thicken a little and then add the manchurian balls, mix and turn off the heat. As it cools down, the sauce will also thicken a little due to the corn starch. Serve hot by garnishing with remaining green onions and of course fried rice or noodles. NOTE: If you do not find manchurian sauce, you can instead heat 1 tbsp of oil in a wok and stir fry the ginger and garlic, green chillies, green onions. Add 2 tbsp dark soy sauce, 1/2 tsp sugar, MSG (optional) and salt per taste. Stir in vegetable stock and bring to a boil. Now add corn starch mixture and cook for a few more minutes or until the sauce starts to thicken, stirring occasionally.
4 Cooked potatoes 1/2 cup peas cooked or thawed 1/2 tsp cumin seeds 1/2 tsp ginger chopped 1 green chilli chopped or per taste 1/2 tsp red chilli powder or per taste 1/2 tsp Dry mango powder (amchur) or per taste 1/4 tsp garam masala A few sprigs of fresh coriander leaves chopped Tamarind Date chutney
Directions: Mix flour, ajwain, salt and 1 tbsp of oil in a bowl. Add water little by little and knead into a stiff dough. Keep, covered with a damp cloth for about 10 mins. Heat 1 tbsp of oil in a pan, add cumin seeds, ginger, green chillies, potatoes (mashed a little) and peas. Stir in red chilli powder, amchur, garam masala and salt to taste. Stir well. Add the finely chopped coriander leaves, mix well. Now the filling is ready. Take a small ball of dough, and roll it into thin round shape just like a roti. Cut it into half. Then take a half apply water on all edges. Now take one end and fold it in center and then the other end to overlap it on the first making it look like a cone. Fill it with the stuffing and seal the edges to get a shape of the
INDO-CHINESE FRIED RICE Ingredients: 1 carrot diced 1/2 bell pepper diced 8 - 10 string beans chopped 2 green onions finely chopped Handful of peas Salt per taste 1 green chilli or per taste 1 tsp Garlic finely minced 2 tsp Dark soy sauce MSG or Ajinomoto (optional) 2 tsp Oil 1 cup cooked cooled rice 1 tsp freshly ground black pepper or per taste
Directions: Heat oil in a pan, add cabbage, carrot, peppers, beans and 1/2 of green onions, add some salt, garlic and chillies and cook until almost done. Now add soy sauce and mix well. Add ajinomoto if you would as well and mix. Taste it and adjust seasonings. Mix in the cooked rice gently and add a lot of freshly ground black pepper. Garnish with remaining green onions. NOTE: Make sure to cook with enough water and drain the water when it almost done to keep the grains separate and not mushy. The heat from the rice cooks through the remaining and also makes the rice grains be separate.
PEAS SAMOSA
Raspberry Rabri Ingredients: 3 cups whole milk 1 cup 2% milk 4 tbsp refined sugar 1/4 tsp nutmeg 1/4 cup pureed fresh or frozen raspberries A few fresh raspberries for garnish Sliced almonds for garnish (optional)
samosa. Heat oil in a kadai well, then simmer the heat and drop one samosa. Let it cook through all the sides from inside out. This takes a few minutes. Drain it in a paper towel and serve hot with a side of Tamarind Date Chutney. NOTE: Make sure the outer shell is thin and cook on medium low flame else the flour will be raw and not cook through. TAMARIND DATE CHUTNEY: Mix tamarind paste from a 8oz can with 10 dates pitted and run it in a blender with some water. Add some jaggery to this. If you do not find jaggery, use brown sugar instead as per your taste. Add 1 – 2 tsp red chili powder, 1 – 2 tsp salt, 1 – 2 tsp roasted cumin powder and bring it a boil until you get that syrupy consistency. In the end add some golden raisins or kishmish.
Directions: Heat a non-stick kadai or wok and pour milk into it. Add sugar, mix and taste. Adjust sweetness as per taste. Bring it to a boil, reduce heat and let it cook until it thickness and reduces to less than 1/2 of original amount. Make sure to stir occasionally and also scrap the sides that contains thickened milk. Once the desired thickness is reached add nutmeg then add raspberry purée and stir. Chill it in the refrigerator for at least 4 hrs before serving it with fresh raspberries. It’s creamy, easy and super delicious.
NOTE: You can choose to use 2% milk or whole milk completely but 2% will take a little longer to thicken. When using fresh raspberries, make sure to strain the seeds and use the smooth purée only.
Vegetarian food made simple for everyday cooking “I am a food lover and thanks to my husband for being one too. I must admit that my real inspiration for cooking came from none other than the queen of Everyday Italian, Giada De Laurentiis. Thanks to her enthusiasm for cooking that has dug my hidden passion into something worthwhile. I will also add that my husband has a passion for food which merely goes to his upbringing; yes, my Mother-in-Law is an amazing cook and hence he has an inclination towards food cooked in a way which Priya Kothari makes his taste buds jump in 365 Days of Pure Vegetarian triumph! And last but not least, www.365daysveg.wordpress.com how can I forget my dear Mom who has always been a source of inspiration in creating simple yet very satisfying meals day in and day out. I hope to carry on the simplicity of preparing food from her and pass it on to my family and friends!
