I really love seeing how summer colours are reflected on the runways. It’s such a great way to say goodbye to the muted tones of winter and embrace the sensation of the sun. The catwalk has been busy from Joe Fresh’s latest Summer collection to Nonoo’s Resort collections. Indian designer Anita Dongre showcases her Jaipur Brides Diaries, where the models flaunted digital prints in silk knits, georgettes and chiffons. Hauté Couture designer Raishma Islam fuses eastern styles with contemporary fashion creating a unique and stunning look. Designer, Gaurang Shah launched his fashion line which blends hot looks from the past with contemporary looks of the present in his hand woven treats. On the cover is Lisa Ray, an internationally acclaimed performer, philanthropist and star with a reputation for taking on challenging, issue-oriented films. Make sure your check out her story on page 10. My favourite thing about summer is being able to kick-back, relax and getting some much needed R&R. For the next few weeks I’m going to be taking more of a break from the routine rush rush and give myself time to eat, sleep and enjoy the sun. Television and hosted the show Top Chef Canada on Food Network. She was named ‘Trailblazer’ at the Reelworld Film Festival. A nomadic spirit at heart, Lisa returned to Toronto in 2009 post a diagnosis of Multiple Myeloma, an incurable bone marrow cancer. She chose to go public with her diagnosis at the launch of one of her films during the Toronto International Film Festival and chronicled her experiences with Cancer in an acclaimed blog called the ‘Yellow Diaries’. “I believe it can be cured,” Lisa wrote on her blog. “That's the Dirty Realist in me... I’m getting better. My prognosis, given my ‘junior’ status and stage of disease, is very good. I’m aiming for full remission.” The outpouring of support was immediate and overwhelming. Her forthrightness and humour in navigating a difficult illness has earned her the attention and respect of people from all corners of the world, as well as ‘The Voice Achievers Award, 2009’ and ‘The Hope Award, 2010’. Lisa went on to help raise funds for the establishment of the first research chair for Multiple Myeloma at Princess Margaret Hospital in Toronto. In 2011 she headlined the national ‘Make Myeloma Matter’ media campaign, filmed a 5-part series for TLC in India, ‘Oh My Gold’ for which she was nominated as ‘Best Host’ at the Asian TV Awards, and returned to the stage with Luminato’s ‘Taj’ opposite Kabir Bedi, a 8 city tour stage production. Lisa continues to work in film and television, and was a host at the

2011 International Indian Film Academy ‘IIFA Rocks’ fashion and music event, as well as a presenter at the IIFA Awards and the 2011 Giller Prize. When Lisa was being interviewed by anchor, Seamus O’ Regan, of “Canada AM”, a Canadian breakfast television news show. Seamus suggested to Lisa that she may want to get involved with the Toronto based charity called “Artbound”and recommended that she meet Jason Dehni, who is the Co-Founder and Co-Chair of the charity. They hit it off instantly and were married in 2012. She relapsed in early 2013, sparking a change of lifestyle and eating habits which will culminated with a Wellness Blog. Lisa was named Ambassador for the Pantene Beautiful Lengths Campaign, recognized with a ‘Facing Cancer Together Award of Honour’ by the ‘Look Good Feel Better’ Charitable Program, and awarded the ‘Light of India Award for Excellence in Arts and Entertainment’. She was featured as one of ’50 Most Beautiful People’ in “Hello! Canada”, and honoured as ‘Entertainment Luminary’ by “Spark” in benefit of the ‘Children’s Aid Foundation’. In 2013 she

was awarded the Diamond Jubilee Medal for service to Canada. Lisa also partnered with Indian Design House, Satya Paul, to present an exclusive line of Cocktail sarees inspired by her challenges with Cancer, with a portion of sales going to the David and Molly Bloom Research Chair for Multiple Myeloma. In 2014 Lisa was recognised as a ‘Woman of Action’ by the ICRF. She also participated in Project Eleven27, an initiative spearheaded by designer Laura Siegal to support ethical practises in the garment industry and honour the garment factory workers who perished in Bangladesh. She also continues to campaign to raise funds and awareness for Multiple Myeloma research. She is participating in a ground breaking clinical trial at Princess Margaret Hospital in Toronto. Recently Lisa was selected by Exotics collection as their ‘Global Brand Ambassador’ to help tell the story of luxury escorted travel to Europe, India, and the Eastern Mediterranean. Ray’s memoir is slated to release in 2015 by Harper Collins. She divides her time presently between Toronto and Mumbai.

His tyrest with a major fashion show began with Lakme Fashion Week in the summer of 2012. It was not easy for the young designer to make it to the talent box but he persisted and got the opportunity. He never looked backed, today he is touted as one of the most admired fashion designers whose collections are eagerly awaited in the show. His first international debut happened when he was invited by the worlds largest Eco Design organisors in Berlin. He showcased to the International fashion fraternity Khadi with a completely new twist , which is body friendly and he made it lighter using 80-100 count. Using Jamdani weave he made the dull khadi look brighter with smart color tones and varying textures blending with natural dyes. “My design challenges the weaver” it takes a minimum of 5 to 6 months to weave a sari. Gaurang says. He has a hard task everytime, to motivate his weavers. He

says, “Unless I challenge them with new designs and the economic potential their work has globally, I foresee the art of hand woven fabric fading away, which is very disheartening for a designer like me, as I love Indian weaves and I am confident it has fine potential to become a global trendsetter in the years to come”. Today, Gaurang’s Khadi collections are one the most sought after attires by the modern Indian woman. From sari he has extended his collections to straight fits, jump suits and anarkalis. His most recent innovation was his twist to Kalamkari in LFW winter fest that got him the best designer award, where he brought vibrancy to the otherwise dull Kalamkari. It was the charismatic Kiron Kher who does not stop raving about Gaurang’s creation took the ramp as his showstopper. ‘I love his creations and I am among the first who wait to hear from him about his new arrivals’ Kiron Kher says. In January 2012 Gaurang opened his own label ‘GAURANG’ a premium high end couture store in the upmarket Jubilee Hills area in Hyderabad. He plans to open GAUARANG label store in other major metros going forward . New Age celebs like Sonam Kapoor, Vidya Balan, Tapsee Pannu, Ashwini Ponappa and Priya Mani also vouch for Gaurang’s creations as they find he brings a perfect twist, blending past with the present. They say, “We love his intricacy and the way he mixes and matches Khadi, Silk and Cotton in his unseen 6 yard saris, flowing gowns and even most modern jumpsuits”. His collections are liked by prominent political, industrialist and celebrity families. The self taught designer has been involved in the revival of the handloom sector for more than a decade. Way back in 2001, when the traditional handlooms were fading because of declining patronage and the growing popularity for embroidered sarees like georgettes and chiffons, many weaver communities across India were mired in debt. Gaurang took up the challenge of reviving the traditional handlooms and bringing them back in vogue. He now supports more than 400 handlooms across India, specially engaged in a weaving technique called Jamdani. He has also emerged as a trendsetter by bringing hand-woven sarees in vogue again. aking advantage of his weavers spirit and creative energy, self taught fashion designer Gaurang Shah from Hyderabad, has created excitement for over 500 weavers from across India when their motivation were fading away. In almost three years, Gaurang has initiated a Jamdani Weaves Wave with his nature inspired design in India, made a significant economic impact in the villages of Andhra Pradesh, Rajasthan, Tamil Nadu and Kolkata and did it all by following his single minded vision to make Indian weaves popular. Master weavers from Andhra Pradesh, Rajasthan, Kolkatta, Chennai who collaborate and with Gaurang say ‘Gaurang motivates us and raise our creative bar each time he meets us with an intriguing design, texture and pattern. He always made us believe that hand craft will never fade as long as we can keep pace with modern times without losing the essence of our culture and tradition which is unparalleled worldover.” The designer reached fascinating milestones, including global recognition for winning the best Indian weaves designer award at Lakme Fashion Week winter fest in 2012. His story is not one of luck or overnight success, but one of lessons learned, hard work, and patience. There were times he says that his almirah was overflowing with no customers, today customers wait patiently for his collection and in no time his almirah is ready for fresh stock. Gaurang first conceptualized his fashion design journey sitting in his father’s small store which sold saris at the age of 8. As he grew up, he felt that woman will be ready to move beyond georgette and chiffons saris if presented with alternative fabric, textures and patterns. His vision was to create saris made in traditional ‘jamdani Weaves’ on handwoven fabrics and implying eco-friendly techniques like use of natural dyes etc and giving a modern twist to our traditional fabrics. After his college education, he travelled the length and breadth of the country and convinced jamdani weaver families that potential still existed for their craft if they were willing to change. ‘I gave them confidence that my designs will change the course of their life’ Gaurang says. They were ready. Today, after over a decade he has build the finest team that consists over 500 weavers.

FIRST GAURANG LABEL STORE Inspired by ancient Indian art of Jamdani weaves, award winning designer Gaurang Shah opened his first couture store in the upmarket Jubilee Hills, Hyderabad early this year (2013). The store showcases ‘ready to wear and practical’ fashion clothing lines across women’s wear, accessories with about 100 new contemporary, traditional and bridal, Indo-western wear, completely hand-woven inspired by ancient Indian heritage like Kanjeevarams instilled with classic Kalamkaris and zardozi. ‘Gaurang’, label personifies elegance and captivates the beauty of traditional handlooms and weaves, created using Jamdani technique with pure zari on cottons and silks. Traditional motifs, are the hallmark of his creations. Gaurang believes in offering traditional Indian weaves and hand embroideries like Parsi, Kashmiri, Chikankari, Kutch and Kasauti on handloom sarees with a subtle and sensible contemporary flair. n Urban Folk tale unfolds yet another chapter in the journey of Anita Dongre’s muse and the alluring ‘Jaipur Bride’Nayantara. This time, we see her embarking on a musical adventure to the charming locales of Europe, soaking in the flavours of world music. The collection showcased glimpses of what she had packed, modern silhouettes and accents subtly combined with elements of folk and rich Indian weaves- a collection befitting the rich sartorial tastes of Princess Nayantara, the luxe-nomad. Modern mystic drama flowed as Anita Dongre’s two labels- Anita Dongre Iinterpret and Grassroot synergised for a collection that brought alive an “Urban Folk Tale” reflecting Nayantara’s personality – contemporary chic sprinkled with Indian kitsch. Models sashayed down the runway

flaunting digital prints in silk knits, georgettes and chiffons which graciously flirted with the enchanting symbols of folk creating voluminous, flowy and relaxed contemporary silhouettes- much in tune with the effervescence of Nayantara. Silver jewellery from Pinckity by Anita Dongre and select pieces from Anita’s personal collection added to the boho charm being displayed on the ramp. Inspiration was drawn from the intricate sikri work of the forts and palaces of Rajasthan and was beautifully highlighted by multi coloured folk beadwork for a collection that spells gypsy mod.From intriguing motifs and folk-inspired art, to the old world charm of the sikri draped in modern styles, the prints splashed the collection with warm hues of indigo, olive, plum, and chocolate making for a decadent boho delight.

Grassroot- the sustainable fashion movement by Anita Dongre, spun an eclectic storm with specially hand-woven silk ikats spiced up with an innovative twist with a range of long asymmetric jackets, tunics, gowns, and skirts, defining the style meter for the boho princess Nayantara where she beautifully marries the timelessness of tradition with the simplicity of contemporary design. Commenting on the collection, Anita Dongre says, “My muse Nayantara takes off on an exciting musical sojourn with this collection. Her style resonates with gypsy charm and she effortlessly combines the contemporary boho luxe sensibilities of Anita Dongre Iintepret with the classic splendour of Grassroot. Her Beautiful Creations Reflect her Inimitable Blend of Eastern Style Fused with Contemporary Fashion.

orn in London in 1973, Raishma spent her early years watching her mother making traditional Pakistani clothing at home, something which sparked her imagination and interest in clothes making and fashion from a very early age. Her influence came from the vibrant and hugely popular Bollywood films of the time. Emulating the outfits of her favourite Bollywood actresses and infusing the style with her western influences – which eventually became her key USP - Raishma quickly became a dab hand at creating her own bespoke outfits. Unsurprisingly, her talent shone through and this hobby soon became a viable career option. She went on to the Chelsea College of Art, where she studied art and design. Having qualified with outstanding credentials, Raishma went to study at De Montfort University to gain her fashion design degree. She was given the chance to work with high profile designer Bella Freud and Bruce Oldfield before becoming assistant designer


to royal wedding dress designer Elizabeth Emmanuel. Here she discovered a love for bridal corsetry and design which inspired her to set up her own bridal boutique catering for the Asian bride. Drawing on her invaluable experience, Raishma soon established her own boutique in 1998 and became renowned for her highly sought-after gowns, which blended traditional eastern style with an on-trend contemporary twist. The hautecouture designer has since developed a high-profile repertoire of royal and celebrity clients including, Princesses Eugenie and Beatrice, singer Mel B and actresses Laila Rouass and Juliet Stevenson. More recently, Raishma’s outfits were worn at the Asian Business Awards gala event by not one, but three outstanding talents; BBC presenter Sonali Shah, who looked elegant in the bold striped saree, Wright Stuff presenter Seema Pathan, who looked stunning in the black beaded cocktail dress and film actress Goldy Notay who opted for an elaborate lace creation 2012 – ONWARDS AND UPWARDS Staying one step ahead of the game and looking to create innovative ways to expand her business, Raishma has since ventured into online retailing opening her couture business to an international clientele and launching in the ready-to-wear market. Raishma will soon be re-launching a brand new website which aims to offer clients an ‘Asian Asos’ like experience.

izella was a Nominee on the Persian Beauty Awards, the first ever Iranian Pageant held in 36 years at the Toronto Centre for the Art on May 10th, 2014. A year before that on August 30, 2013 she participated in the Mr. and Miss Pakistan World 2013 pageant and was adjudged the Second Runner-Up. During her time campaigning for these pageants, Gizella’s goal has always been to represent a beautiful mind as beauty in her opinion is skin deep. “After all, what you see on the outside is just make-up that eventually washes off ”, she says. This is why it is essential for her to express the fact that being a woman is a combination of both inner and outer beauty. Not only that, but she wishes to represent love for all and positivity. that humanity alone is in dire need of hearing the message of finding beauty within themselves. About Her: The idea of modeling was always at the back of her mind from a young age. However, as she is from a Middle Eastern decent, it was without a question that “westernized” modeling was not a suitable path for her to pursue. “Although we live in a westernized country there are many things Middle Easterners would stay clear from in order to maintain that respect from their elders”. Gizella for one is very family orientated and would never want to do anything that would disappoint and jeopardize that respect. Nevertheless this did not discourage her, she had faith. Consequently as she became more involved in the South Asian culture, the events and the weddings she was invited

from friends she made during her undergrad study at University of Ontario, she soon came across the modeling world of South Asian Bridal Fashion. That is when her dream did not seem so out of reach. Gizella could pursue it without hesitation because she knew that what she was modeling was respectable and appropriate. To date Gizella has been published in Kismet Magazine and Lavish Dulhan Magazine. Gizella says she has endured many obstacles in her life that has brought her to where she is now in her career in the Fashion Industry. She truly believes that this is just the beginning for her journey and looks forward to the opportunities that allow her to experience new places, meet new people and set a positive example for others.

Fragrance How to make your Perfume Linger a Little Longer.

1. It is important to have clean, healthy skin prior to spraying or applying perfume (washing areas where you spritz fragrance will help). 2. Humid or moist skin enhances the perfume. Consider buying a body lotion that is part of the perfume line and use it as a base before you apply. “Layering is key,” says internationally renowned perfumer Claude Dir. “Apply the body lotion first, and then spritz the scent.” 3. If you don’t have a body lotion with the same fragrance as the actual perfume, then apply an unscented lotion. Using light antiperspirants with perfume typically enhances the fragrance and does not conceal it. 4. Identify your pulse points (these are typically the wrists, neck, and behind the ears). The ears contain glands that help perfume perform well in this area! Make sure these are clean and moisturized (ideally with complementary body lotion). After applying the scent on pulse points, spray the perfume into the air and step into it so it envelops your entire body gently. Remember that scent travels upward, so don’t neglect the pulse points that are found in the upper part of your body. 60 JULY / AUG. 2014

5. It’s best to apply perfume before you dress so that the clothing does not sap up the fragrance. Also, keep in mind that lighter notes (like florals) dissipate more quickly than stronger scents like musk. Perfume on skin means that it becomes warmer and rises with your temperature. 6. Outdoor Music Concert 8th Annual desiFEST Ignites Yonge-Dundas Square!

F

or its 8th consecutive year, desiFEST did not disappoint as it brought YongeDundas Square alive for a 12-hour non-stop open-air concert on May 31st. Showcasing an array of South Asian influenced genres ranging from Bollywood, R&B and Hip Hop to Soca, Bhangra and soul, desiFEST fulfilled its mandate to celebrate and showcase the talents of established and emerging artists on the desi urban music scene. “Music is such a powerful force to fuel change, share messages and engage audiences to support our community. This is why we started, and why we continue to grow desiFEST with the support of our wonderful sponsors TD and Crest,” said desiFEST founder Sathish Bala. Upcoming and established artists from Canada, the US and the UK ignited the desiFEST stage in front of 40,000 eager fans throughout the day. Throughout the day, visitors were treated to a number of on-site promotions hosted by presenting sponsors TD and Crest. Families with children enjoyed the TD Kids Zone, which featured the ever-popular bouncy castle and clown balloons. As part of its Shine Day campaign, Procter & Gamble hosted a series of sampling and product stations in the square showcasing popular brands such as Pantene, COVERGIRL, Olay, Gillette, Old Spice, Bounty, Tide and Crest

As he took the stage in front of an attentive audience of thousands, Mr. Oliver appreciated the significant contributions of South Asians to Canada and mentioned the importance of the strong relations between Canada and India as the crowd cheered on. Among the 20+ performers at desiFEST this year, were some amazing Canadian talents. desiFEST welcomed the fresh new

sound of Toronto’s own Shyann, the engaging lyrics of MC Ayydos, YouTube sensation duo Sham and Karter and back by popular demand for the third year in a row were JDhee and Reality Raj of Synsational, who had female fans swooning over their set. Toronto fans also welcomed R&B, hindi and tamil singer Piri Musiq and hip-hop artist Raxstar from the UK with open arms. Later in the evening, the crowd erupted as surprise guests, actor Vinay Virmani and singer Raghav took to the stage to promote the upcoming Hollywood film Dr. Cabbie, which is co-produced by Bollywood heavyweight Salman Khan and stars Vinay Virmani and Kunal Nayyar (The Big Bang Theory), releasing Sept. 19th, 2014. 2nd Annual Hungama! outdoor music concert ignited Mississauga Celebration Square with the sights and sounds of Bollywood music! Hungama was definitely in the air as the warm sun and Bollywood beats heated up Mississauga Celebration. Square for an evening open-air concert on June 21st. Showcasing an array of artists who performed original songs and Bollywood covers from popular movies, Hungama! kept its audience of music lovers dancing all night long. “Music is an energy that unites us all. There’s something about being part of a large audience that makes us feel great, and that is why we continue to grow Hungama! with the support of our wonderful sponsors TD and Crest,” said founder Sathish Bala. Upcoming and established artists from Canada and the UK ignited the Hungama! stage in front of 10,000 eager fans throughout the evening. During the event, visitors enjoyed a number of on-site treats ranging from the ice cream truck and roasted corn on the cob, to shopping stalls and just basking in the sun, on the artificial turf in the centre of the square. As the sun set on Celebration Square, the giant screens on either of the stage glowed in the night sky. The crowd cheered for more as they prepared for Hungama! headliner Manj Musik to take the stage for the final performance of the night. The excitement grew as Dholi Tanveer took the stage first with a drum-pounding prelude to the showstopper’s act. The former lead vocalist and producer of internationally renowned UK band RDB emerged on stage with an electrifying entrance. He then took a quick break from his set to introduce surprise guest, actor Vinay Virmani who joined Manj on stage to promote the upcoming Hollywood film Dr. Cabbie. The film, which is co-produced by Bollywood heavyweight Salman Khan stars Virmani alongside Kunal Nayyar, Adrianne Palicki and Isabelle Kaif, and is set to release Sept. 19th, 2014. aren Ahmed LOVES food creation with a passion. She describes herself as a Bollywood Ninja, married with 2 boys and working at a newspaper firm. She’s a proud desi and has lived in the Middle East before migrating to Toronto in 1996. “I started cooking at the age of 18 when I was in college and I had a sudden surge of creativity. Armed with a cookbook and some raw chicken pieces, I proceed to make a baked chicken in a coconut sauce. This was a disaster! The chicken at the end of the cooking process was still raw and not edible. Determined to make it work, I threw the chicken into a frying pan together with some spices from my mom's spice cupboard and it was pure magic. From then on, my love for cooking and creating works of art just grew”. Experimenting with new flavours and making the cooking process look easy is something she takes great pride in. After her positive experience at shows like Decorating Challenge and Design to win, it was no wonder that with her passion for food and entertaining, she took part in Come Dine With Me Canada and won. After that, she was encouraged to start her online blog KravingsBlog.ca. She also auditioned for Recipe to Riches and developed a special twist on a popular Indian street food item and called it the Bollypop. Most Canadians love their double double … most Indians too …2 is always better than one and when my friend told me about a dish that was prepared with both mutton chunks and ground mutton, I was all over it! I have no idea where the name come from, I tried to research it and didn't find anything that made sense. If I do find it, I will post an addendum, or if you find it, please let me know. This curry is usually slow cooked and requires patience and TLC. If you have a pressure cooker, it can cut down the cooking time quite a bit.Watch the video to see the step by step process. Ingredients: • 2. 2 lbs Mutton or lamb • 1/4 pound ground mutton or lamb


Process: Making sure the mutton is quite dry, heat some oil in a sauté pan and brown the meat on both sides. This can take about 5 – 7 mins. In a separate frying pan fry 2 sliced red onions till a light golden brown. Remove the onions and add to the meat and mix well. Add the coriander and garam masala (previously roasted and ground). Add the ginger and garlic paste and chili paste and mix really well. Add the chopped tomatoes. Add a cup of water, cover and cook for about a half hour. Squish the tomatoes down with the back of your spoon, add salt and

more water and continue cooking for another hour, stirring at intervals and adding water when the gravy gets dry. If you have a pressure cooker, you could just cook it in the pressure cooker. Once the meat is nice and tender, add the yogurt and coriander and more water if required. Cover and cook for 15 mins, add the raw ground meat, salt as required, pepper and more water and cook till done for another 15 mins. The end result is simply delicious! Fishcakes I've been following Jamie Oliver for years and I think that he’s really a ‘pukka’ chef so I was very excited to participate in his ‘Food Revolution’. On Friday May 16, people from all over the world had signed up and committed to teaching kids how to cook something from scratch. This resonates with me in more ways than you can imagine. I love food and I’m happy that my two boys enjoy spending time in the kitchen. Through my blog and channel, I hope to leave my legacy for them so they will always have a piece of me with them as they grow and have their own lives and families. Teaching the kids how to prepare something fresh and healthy is probably one of the more important things we can ever do. Of course this revolution not only creates awareness but funds food resources for many in need, so thank you Jamie. I’m following Jamie’s recipe with my son Aaron and adding my own spin to it (watch video).www.foodrevolutionday.com/ salmon-fishcakes/ Ingredients: • Sea salt and freshly ground black pepper • 50g or 2 oz fresh or frozen peas • 600g potatoes • 1/2 a tbsp of fresh chives • 2 x 180g tins of quality salmon • 1 lemon zested • 2 tbsps plain flour, plus extra for dusting • 1 large egg • Olive oil for frying 1. Half-fill a large saucepan with cold water and add a tiny pinch of salt. 2. Place on a high heat and bring to the boil. Meanwhile… 3. If using fresh peas, pod them into a bowl, then leave to one side.

them to cool completely. Meanwhile‌ 10. Use a microplane to finely grate the lemon zest, then add it to the bowl along with the flour. 11. Crack in the egg and season with a tiny pinch of pepper. 12. Once cool, tip the potatoes and peas back into the pan and use a potato masher to mash them really well. 13. Add the mash to the bowl, then mix together until really well combined. 14. Sprinkle a little flour over a clean work surface and onto a large plate. 15. Divide the mixture into 8 and use your hands to pat and shape each ball into a fishcake, roughly 2cm thick.

16. Place them onto the floured plate, dusting your hands and the top of each fish cake lightly with flour as you go. 17. Place a large frying pan on a medium heat and add 1 tablespoon of olive oil. 18. Carefully place the fishcakes into the pan and cook for 3 to 4 minutes on each side, or until crisp and golden, turning carefully with a fish slice. 19. Cut the zested lemon into wedges. 20. Serve the fishcakes with some seasonal green veg or a fresh green salad and lemon wedges for squeezing over. This recipe is just as delicious made with tinned tuna, or you could swap the regular potatoes for a few sweet potatoes.

4. Use a Y-shaped peeler to peel the potatoes, then chop into 1cm chunks on a chopping board. 5. Once the water is boiling, carefully add the potatoes, bring back to the boil, then turn the heat down to medium and simmer gently for around 10 minutes, or until cooked through, adding the peas for the last 2 minutes. Meanwhile‌ 6. Finely chop the chives and add them to a mixing bowl. 7. Drain the salmon over the sink into a sieve. 8. Add the salmon to the bowl, using a fork to flake it into small chunks. 9. Once cooked, drain the potatoes and peas over the sink into a colander then leave

Chicken This is an old Chinese favorite in all restaurants in India. It’s probably made a hundred different ways, here is my version!

Ingredients: • 1 pound chicken boneless breast or thigh cut in small cubes • 4-5 spring onions - sliced(reserve leaves) • 2 large green chilli sliced diagonally • 1 pod garlic minced • 2 tbsps garlic paste • 1 1/2 tsp soya sauce • 2 tsps corn starch • 1 cup chicken stock • 1 tsp chilli paste • Dash of vinegar • Salt to taste • 1 tsp ground black pepper • 1 tsp corn starch dissolved in a quarter cup of water. Add 1 tsp of the garlic paste, soya and cornstarch to the chicken and mix well. Deep fry on high heat and keep aside. In the same sauté pan heat some oil and sauté the spring onions, green chilies and garlic. Add a tsp of garlic paste, chili paste, dash of vinegar and the stock. Bring to a boil. Add salt if required. Add a little soya and ground black pepper. Add the dissolved corn starch. Add all the cooked chicken and cook for another 30 - 40 seconds.

All have variations from strenuous to more easy going, but all options provide spectacular views and experiences.” Peru - Machu Picchu Mountain: Want to take a photo of Machu Picchu that doesn’t look like everyone else’s? Try this threehour hike. An alternative to the evercrowded Huayna Picchu (the hike nearly all active visitors to Machu Picchu do), Machu Picchu Mountain is traversed by far fewer

people and offers incredible and unique views of the surrounding mountains and ruins. This hike begins at about 8,400 feet at the southern end of Machu Picchu and rises to 10,000 feet at the summit. The hike takes about three hours roundtrip and passes through significant stretches of original Incan stonework winding up the side of the mountain, reaching a summit with 360degree views of Machu Picchu’s iconic ruins and the Urubamba River below.

Brazil - Rio de Janeiro, Tijuca National Park: Overlooking the largest (46 square mile) urban forest in the world is Pedra da Gavea (crow’s nest), a peak 2,762 feet above sea level. The trail to the top is only about a mile long, but it’s a three-hour commitment due to a section of Class IV climbing that may involve setting up a belay. The view is stunning, encompassing all the iconic points of the South Zone: the Dois Irmãos Hill that crowns Leblon Beach, the golden sand of Ipanema and Copacabana, as well as the massive statue of Christ the

Redeemer and Sugar Loaf Hill in the distance. A less adventurous option that still offers spectacular views of Rio is to the top of the Pico da Tijuca, also inside Tijuca National Park and the Park’s highest point.

Ecuador - Quito, Pasochoa Wildlife Refuge Summit Trail: 20 miles south of Quito, near the town of Sangolqui, is the access point for a beautiful seven-hour roundtrip trek with an elevation gain of 3,000 feet to the summit at 13,800 feet. The trail is straightforward, but it requires a good level of fitness and, for those who want to get all the way to the top, there is some rock scrambling at the end to reach the summit. It’s worth it whether you make it to the top or not. Views along the way include the Avenue of Volcanoes, the snow-clad volcanic peaks of the Andes: Cayambe, Antisana and Cotopaxi. Hikers reach the edge of an ancient, extinct volcanic caldera, with cloud forest-covered crater walls and unique flora such as a rare polylepis forest and many bromeliads. This is one of the best places in Ecuador to see condors in the wild. Chile - Paso Desolación Trail: After a two-hour drive from Puerto Varas through Chile’s Lake District to the trailhead, guests embark on a five-hour hike that offers a spectacular alternative to the relatively touristy and overcrowded attractions of Petrohue Falls, Peulla and Frutillar. This day hike passes right along the side of glacier-clad Osorno Volcano, with incredible views out to magnificent Todos los Santos Lake and the surrounding mountains in the other direction. The hike is not challenging or technical; it just requires a decent level of fitness.

is Como with additional embellishments of several immense volcanoes. It really is too much of a good thing.’ “Many people visit Guatemala for cultural tourism, and rightly so, but they often miss out on the great and unique hiking opportunities that are right in front of them,” Lutz says.

“These are some of the best vistas you can get in the Lake District, and very few people seem to even know about this hike, much less do it. Near the end you start running into the crowds that just do the normal tourist route and you really appreciate that you’ve accomplished something special and different,” says Lutz. Guatemala - Lake Atitlán, San Pedro Volcano: This hike begins after a scenic boat ride across the lake, usually from Palopó or Panajachel. It is a 3,700-foot ascent to the summit on some 2.5 miles of steep, winding trail along the northwest side of the volcano. Plan an entire day for this one. If it’s too much to make it to the top, you’ll still get great views back out over the lake and surrounding area and experience some of the beautiful cloud forest on the flanks of the volcano, something few people take the time to do, summit or no summit. Aldous Huxley wrote of Lake Atitlán: ‘Lake Como, it seems to me, touches on the limit of permissibly picturesque, but Atitlán
