A Tribute to a Self-Confident Woman. A couture soirée by anish Malhotra unveiled his couture line, ‘THE EMPRESS’ STORY’ at the Amazon India Couture Week. The Grand Finale showcased a preview to the ‘Manish Malhotra London’ label, his newly launched Limited Edition pieces, and a Men’s Wear capsule. The couture soiree was held at the The Leela Palace, New Delhi. ‘THE EMPRESS STORY’ Collection will be available at Manish Malhotra stores in Mumbai and New Delhi. It will be launched at the first Manish Malhotra Flagship Boutique in London and Dubai in Spring 2016. A tribute to a self-confident and spirited woman, ‘THE EMPRESS STORY’ weaves in the myriad nuances of femininity and reflects the designer’s passion for reviving bygone Indian craftsmanship. Each outfit in the collection is unique as it spotlights detailing on classic Western silhouettes – marking a first for the label, on the heels of its international store openings. 10 SEPT. / OCT. 2015

‘THE EMPRESS STORY’ presents textured fabrics, voluminous gown-like silhouettes that could be worn as lehengas, trails of exquisite silk - lending the woman an air of majesty. The colour palette ranges from metallic silver and antique gold to rich burgundy, old rose pink, pearl grey and coffee brown. Details such as three-dimensional embroidery, mushroom-flower and bird motifs in delicate thread work bring to life the legacy of exquisite craftsmanship. The elegance of each ensemble was accentuated with a selection of high-jewels by Dedhia Jewellers. The finale show also shared a glimpse into the Manish Malhotra Men’s Collection – replete with structured jackets, trench coats and waistcoats, in hues of blue and black with a touch of intricate embroidery. Vintage glasses, bow ties and neck ties added a hint of dandy to the collection. The evening also featured handcrafted shoes for the gentlemen – marking the brand’s first-ever foray into accessories. t’s the little details that separate the men from the boys. Take a cue from ‘The Gentlemen’s Club’, Manish Malhotra’s first menswear show in his 25-year career. Actor Ranbir Kapoor was the showstopper, looking as dapper as ever in a burgundy velvet suit paired with a geometric grey & white printed shirt. Festive fusion takes a whole new turn with structured suits and textured trench coats – paying homage to time-honoured silhouettes such as the sherwani, bandhgala and bandi jacket. Intricate Persian prints find their way onto velvet jackets. The snazzy shoes by Alberto Torresi and Kolkata-based designer Rohan Arora were exclusively designed for this show, with a foot-tapping performance by Jazz musician Gino Banks and his band. “The Gentlemen’s Club is very special to me as it marks the commencement of a new journey for a decade-old label. This new collection is for the confident, impeccably groomed man who likes to mix it up – a modern perspective blended with rich Indian tradition,” said Manish.

Two swanky stand-alone Manish Malhotra boutiques are set to open in London and Dubai early next year along with his limited edition line. The Gentlemen’s Club collection was well received by guests with thunderous applause. Seen dancing at her sangeet, the bride sparkles in a mesmerising hand woven, silk banarasi lehenga – a traditional heirloom and a valued legacy of love. The sacred pheras see the bride in an understated beige gold lehenga that offsets the family’s coordinated shades of gold. And the vintage cocktail look frames the bride in a refined, alluring gown with her friends offering a graceful contrast in their thematic coordinates. In The Wedding Diaries, It’s not just the bride, but also her entourage who are spoilt for choice.The bespoke bridal couture looks feature twirling lehengas, ravishing gowns, versatile bandhgalas, printed bandis and flowing anarkalis. time, is the intricate gotta patti embroidery, now synonymous with Anita Dongre. The collection also incorporates a meticulous line of handcrafted banarasi weaves; a treasure craft from the mesmerising city of Banaras. This art of weaving, from one of the world’s most ancient cities, is our homage to time. This is also an endeavour by Anita to revive heirloom banaras weaves. A new Versace evolution. Elevated deconstruction, softness. Stripped of detail, transparent silk chiffon gowns flow from boned body lined in velvet, the fabric free to float as if pure air. Lightweight chiffon layers bring softness to tailoring, especially with the drape of bell sleeves. The tailoring is punctuated by metal staples that define the silhouette. Cut-out chiffon layers create raw-edged flowers that decorate chiffon dresses in dove grey, powdery pink, faded green and lilac. Fil coupé velvet and hand-painted flowers are floating on a long gown as if destroyed, with boning lined in velvet at a sheer body. Barbara Bui The romance of the long silhouette reinforces the energy of the sexy rock look. A tall thin woman with a slight bust and slender legs. Dense and deep ultramarine and black contrast with the luminosity of sky blue and the sparkle of metal. The warm browns of cavallino or python provide an “animal” touch and add warmth to the blues. Woolskins and curly mohair envelop the small “Penelope Tree” suits of crêpe or velvet in winter white. The must-have winter piece is the down jacket, reinterpreted in black vinyl or velvet. In contrast to the long Bohemian silhouette, mini-skirts, “sharp and cut” mini-dresses or slim trousers in jersey and leather display a free and resolute femininity. The nocturnal ultramarine reveals all its intensity in an interplay with shimmering and textured sequins. The boots - low boots and “Rockabilly” Derbys - shift and relax the deliberate femininity of the silhouettes.The “Lipstick” mini bags are the playful signature of this attitude. Fascinated by the esotericism and the magnetism of Karl Freund’s or Marcel L'Herbier’s movies (respectively "Mad Love" and "Fantastic Night"), the French couturier portrays the female characters who favor mystery to enhance their strong personality. With a contained shoulder line highlighting a long neck, a marked waistline slightly rounding the hips, with backs featuring inlays and favoring sheer fabrics, the silhouettes by Julien Fournié constitute a collection that makes shades of black sing. In some looks, the brightness of grey velvet, several sparkles of emerald, or the deep glitter of ruby confer upon Julien Fournié’s “First Night” a specific glitz. The twenty following numbers reveal the specific witchcraft of Paris Couture. Grey or emerald silk velvet pieces are ofthen embroidered with sequins in the same shades. A “diamond shaped” neckline is embellished with Art Deco geometric patterns. The work undertaken in collaboration with Sophie Halette renews the use of lace embellishments and adds depth to vulnerability through three-dimensional craftsmanship. Drapé in fuchsia silk jersey with asymmetrical back, glittery bustiers with flaring corollas, chiffon or jersey gowns, a hooded sheath in embroidered velvet, a textile sculpture featuring a bouquet of velenous flowers hypnotize to the spectacular final dress in crinkled black vinyl.

A renewed interpretation of Ralph & Russo’s romantic sensibility is unleashed for Autumn Winter 2015/2016, manifesting in sensual femininity and sexy sophistication. The collection is a spectacle of love-laden wonders; a tour de force of elaborate design and labour-intensive artistry testifying to why - in no time - Ralph & Russo have instilled the Haute back into Couture. The silhouettes belong to a woman resolutely assertive. Armour-like tailleurs are encrusted with crystal and pearl mosaics, and dense ogival motifs adorn structured jackets wherefrom grand ovate forms shell out dramatically in the essence of a Fabergé egg. Optical and graphic, the workmanship is a sublime blend of tradition and modernity. Though the overall three-dimensional apparition is unequalled, the immense detail is to be awed at up-close. Being the only boy of five children, Al Ali took an early interest in style and fashion. For their debut as the duo designers of women’s collections, Adrien Caillaudaud and Alexis Martial offer their vision of the winter 2015 Carven girl: a fresh, contemporary and self confident character with a penchant for high waisted trousers, trench coats and mini-skirts. The collection evokes an égérie - a London girl living in Paris, swaying between an electric revival of the late 60’s and the timeless elegance of active Parisian women. She’s definitely not shy about colors. She lavishes on lilac, flower prints, blues. Textures swing from soft technical tweed, to eel skin and gathered texture fabric, to quilted jacquards. Flowers are a print staple, found on jacquard bomber jackets and shoes, while mineral stones such as Jasper azurite, and the psychedelic skin of toxic reptiles adorn some accessories pieces. There’s an undeniable 60’s feeling in the mini skirts, an après-ski aesthetic in the primary colored turtlenecks, gabardine trousers, fluffy orange knits balanced with chunky mules and oversized coats, for a newly proportioned silhouette. The collection reinterprets an assessed Carven code- the lace, into a technical lace on organza. Couture inspired waffled embossed silk dresses are sliding towards an early 70’s atmosphere are counter balanced by the weight of a masculine reefer jacket. To free her movements, her daily bag is reinvented into a messenger leather bag worn cross-body. And wherever she goes, she wears a solar metallic gold disk around her neck.

ILJA For the Fall Winter 15/16 collection, ILJA has explored the forms of basic geometry, which together, shape our reality. ‘Ingenium’ means ‘engineering’ and ‘existere’ means ‘existing’ or ‘existence’. All forms convey their own patterns, and they are all made up of the same shapes, configurations, and logic. The elements, in which ILJA chooses to engineer her couture, are a mix of nostalgic techniques, poetic silhouettes and the nonchalant attitude of its hometown: Amsterdam. Ingenium Existere’s silhouettes are sculpted in clean-cut panels that are constructed into poetic feminine volumes with an edgy, strong attitude. Materials are sculpting, heavy and clean-cut as well as vibrant, transparent and dreamy. Sculpted duchesse denim-inspired jumpsuits, sharp sateen hexagon shaped pockets, chunky vibrant knits embellished with copper cubes, bright melee jacquards in clean, edgy volumes combined with azurite square panels in heavy silk cotton sateen. Colours range from deep azurite blues, rose quarts pinks, onyx blacks, tiger-eye copper/browns and chrome silver greys. ILJA’s inspirations for her Fall Winter 15/16 collection come from the 90s denim look with cargo-pants, oversized jackets and baggy dungarees as well as the New Look from Dior’s 1947 massive couture impact. Because of the clean cuts and sharp shapes, the overall look also becomes a peek into the future with a wink to Metropolis.

These lights will help the students of Shungubweni Secondary School study for an extra 375,000 hours, and save their families $60,000 per light (estimated in Canadian equivalent) as they will no longer needed to buy kerosene or candles. The monstrous free Bollywood shows at Mississauga Celebration Square on Friday, August 7th and Saturday, August 8th were attended by thousands of people! Bollywood Monster Mashup is the first-ever festival to bring a monstrous laser show and the only concert featuring Bollywood singing stars to Mississauga Celebration Square. This year our Bollywood stars were Ash King and Jonita Gandhi and we also had special Pan American fusion acts, a bigger KidZone, more singers & musicians, more dancers and more interactive Bollywood dance lessons.

Time! It’s Paneer

Creamy, Soft, Cheesy, Protein-rich but Still Yummy!

aneer is the most common Indian form of cheese that is similar to fresh mozzarella without the salt added to it. It does not melt like any other cheese. Most Paneer is pressed into a cube and then sliced, chopped or crumbled. It is widely used in India and a variety of dishes could be made from Paneer. It is completely vegetarian. It is a good source of protein for vegetarians. Paneer could be made at home by simply bringing milk to a boil and using acid to separate the curds. The curds are then drained in a cheesecloth or muslin cloth and excess

water is pressed out. Now tell me who wouldn’t like paneer?” “It is so versatile that can be used in a variety of dishes both hot and sweet. Growing up, my Mom would make home made paneer (yummm…). It was so fresh, creamy and would melt in your mouth. I would simply add some powdered sugar, some powdered elaichi (cardamom), kesar and just eat it as a dessert whenever my craving for something sweet would occur. But, today, I will share some mouth watering recipes that will blow your mind off.” – Priya Kothari

Just a Little Taste of Heaven “Many of us know what a paneer bhurji is, isn’t it? Well, to give a brief description about it, paneer is Indian cottage cheese and paneer bhurji is a dish made out of crumbled paneer with vegetables and spices eaten with bread or roti. It is packed with protein and one of the main source of protein especially for vegetarians. Nevertheless it is also very easy to prepare. I made paneer bhurji today for lunch and used some of it modifying some spices to make a snack out it and that’s how my paneer bhurji pillows was born.” – Priya Kothari

Indian Cottage Cheese with Bell Peppers Ingredients: 1 block of paneer 1 green shimla mirch cut lengthwise into strips 1 small onion cut lengthwise Garlic – a couple of cloves Ginger – small piece grated 2 – 3 tsp oil 1 tsp rye or rai 2 tsp dhania powder 1 – 2 tsp mirchi powder or per taste 1 tsp amchur powder or per taste A pinch of elaichi powder Salt per taste

Cut paneer into big pieces, sort of like a rectangle about < 1/2 in thickness. Heat about 1 tsp oil in a non-stick pan, add the paneer pieces and just fry them slightly on both sides, remove and keep it aside. You do not need too much oil to fry paneer. In the same pan add some more oil, add rye, let it splutter. Sauté onions until translucent, then add ginger & garlic, mix for a minute or two. 78 SEPT. / OCT. 2015

Now add the shimla mirch, mix well, then add the spices, mix well. Let the shimla mirch just cook a little bit, but don’t let it cover cook. You need that little bit of crunch which makes the dish even more tasty. In the end add the paneer, mix it gently. Serve hot with roti/bread. Tastes so good. NOTE: Always store paneer in the refrigerator and not in the freezer and try to cook soon. Storing it in the refrigerator makes it easier to cut and you will not land up with crumbles.

Ingredients: 1 cup fresh homemade or store bought paneer 1 small green bell pepper finely chopped 1 small red bell pepper finely chopped A couple of cloves of garlic 1 tsp of freshly grated ginger 1 green chili or per taste 1 small onion finely chopped 1 tsp red chili powder or per taste 1/2 tsp haldi powder Salt per taste 2 tsp oil 1 tsp jeera

If you prefer to make fresh paneer at home like me, you can follow my recipe to make homemade paneer that I mentioned while making my paneer mithai. If you are using store bought, grate the paneer well. Heat oil in a pan, add jeera then add onions, sauté, then add garlic, ginger, sauté well. Now add the tomatoes and let it cook until the tomatoes almost breakdown. Now add the peppers and spices, mix and let it cook. In the end add paneer, mix well and let it cook for a 2 -3 minutes. Add finely chopped dhania. Let it cool. Roll out the pie crust with a rolling pin to thin out a little. Then cut vertically and horizontally to get rectangular pieces. Place a spoonful of the mixture in the center. Apply water with your finger around the crust and then place another rectangular crust on top to cover the filling. Using a fork, press the corners of the crust to seal. Bake in a 375F degree over for about 20 minutes or until golden brown. It is flaky and tasty. NOTE: Pie crust can be found in the frozen or dairy products section in the supermarket.

“In India, no meal is complete without mithai. Especially for the Bengali’s the meal is not over without satisfying their sweet tooth and nothing is more loved than Sandesh. It is milk based with very few ingredients and surprisingly easy to make. Growing up back home, I never had an inclination for mithai. But I think once you are far away from your homeland especially family & friends you realize how much you miss every little thing that we took for granted. I guess I am no different from many in that aspect. Now, I have developed a taste for mithai and being nostalgic at times, I wanted to treat myself with this simple mithai that would give me a feel good factor.” – Priya Kothari Ingredients: (Makes about 12) 1/2 gallon whole milk (I use organic) 1 – 1 & 1/2 tbsp lemon/lime juice A few pistachios chopped Some saffron

Bring milk to a boil. Once it starts raising, add the lemon juice only in one spot. This makes the curdle to produce faster. The curdles are now called paneer or Indian cottage cheese. Gently mix with a spatula. Once all the curdles have come, you can see the water being separated and is almost clear. If not, add more lemon juice. Drain the water in a cheese cloth. Tie the cheese cloth with the curdles and let the remaining water drain by itself, this will take about 10 minutes. Do not squeeze the water with your hands. Now add the sugar, elaichi powder and knead well. saffron is optional in mixing. The more you knead, the more creamy the net result will be. Then take some portion of the paneer and make balls out of it by placing in between your palms, place it aside. Repeat for the rest of the mixture. Decorate with pistachios and saffron. Your sandesh is ready. Every sandesh will just melt in your mouth. This is pure protein, of course it has some fat content too. But the amount of protein supersedes. You can store this up to 4 days in your refrigerator. TIP: Once the curdle starts to form, add lot of cold water to it. This makes the paneer very soft. SEPT. / OCT. 2015 79

Borneo – Weird & Wonderful Wildlife Eco-Tour.

T

he rainforest of Borneo is 130 million years old, making it the oldest in the world. It is also disappearing faster than any rainforest on earth. The Lost World of Borneo is one of three areas left in Borneo that encompass the last stands of the oldest rainforest on earth. Its geography – a basin surrounded by steep cliffs – has never been fully explored. Another of these areas, the Danum Valley, is also included in Wild Planet’s signature “Weird & Wonderful Wildlife Eco-tour” available in 12-and 16-day itineraries, the latter including an exclusive wildlife expedition into The Lost World of Borneo. In April 2015 wildlife expert Josh Cohen, Director of Wild Planet Adventures, mounted an extensive two-pronged expedition to Malaysia: first, to scout Borneo’s Lost World and then to investigate how to increase the percentage of rare animal sightings on its wildlife-focused tours. Cohen explains that Maliau Basin Conservation Area in the Malaysian state of Sabah, is home to a diverse array of wildlife, which has been allowed to flourish undisturbed. It is a virtually self-contained ecosystem never inhabited by humans and where large areas still remain unexplored. Efforts are underway to nominate Maliau Basin as a

UNESCO World Heritage Site. “It’s no wonder Maliau Basin is called the “Lost World.” Here you can experience something that is nearly impossible to find anywhere else on earth: the forest floor is so pristine and untouched, if you step off the trail it is likely that no other human will have ever set foot where you are standing!” Cohen said. He added that while wildlife is extremely shy, Maliau Basin Conservation Area offers perhaps the only remotely viable chance to see some of the world’s rarest animals including the clouded leopard, sun bear, pygmy elephant, Malaysian badger and the reclusive Bornean rhino. “Wild Planet travelers will enjoy a nocturnal wildlife walk exclusive to our guests to monitor camera traps, conditions permitting,” Cohen said. Wild Planet has made special arrangements with wildlife researchers at Maliau Basin Conservation Area who will share recent camera trap photos of some of these and other rare animals. Throughout Cohen’s Borneo scouting expedition, he and his staff went to great lengths to explore remote areas at unusual times of day, utilizing eco-responsible methods such as electric motor boats, silent safaris and ultra low-impact strategies to

assure the best possible chance to spot animals not commonly seen by even the most diligent travelers. They scouted remote tributaries of the Kinabatangan River after midnight, arranged exclusive nocturnal access to wildlife-rich habitat surrounding Gomantong limestone caves, traversed uncharted riverbed trails in the Danum Valley and made special arrangements with scientific researchers to hike into remote camera trap destinations in Maliau Basin Conservation Area. “The results were staggering,” he said. “In addition to seeing a huge volume of wildlife including 11 of the 13 primate species, pygmy elephants, tarsiers, slow loris, flying lemurs and other “gliders”, the expedition encountered an unprecedented number of wild orang-utans – both alpha males as well as mothers with babies. But the highlight of the expedition was encountering an extraordinarily rare flat-headed cat, last sighted in the region nearly eight years ago, proving the efficacy of Wild Planet’s eco-responsible wildlife viewing methods. As a follow-up to the initial scouting trip, he said “the extraordinary results continue to this day.
