A NOTE FROM FIG
There’s nothing quite like summertime in Columbia. The first signs of summer arrive in late spring with synchronization of the fireflies at Congaree National Park (a phenomenon that only happens in a handful of locations throughout the world) and the sound of home runs being hit by the Columbia Fireflies Baseball team at Segra Park. From there, it’s a whirlwind of a season that never seems to last long enough. The season is filled with al fresco dining, 4th of July celebrations on Lake Murray, festivals celebrating our favorite fruits, lazy days drifting along the Congaree River, and evenings spent socializing in our favorite districts across town. As much as we love to see the arrival of the Purple Martins when they begin roosting on Lake Murray in August, we know it means that our summer adventures are coming to a close as we prepare for fall. Our state has an abundance of sunshine, warm weather, and summer rainstorms that make it a wonderful place for produce to be locally grown and harvested. We’re lucky to have the access to so many fresh fruits and veggies that are grown right here in town! This summer, we invite you to support our local farmers, restaurateurs, and food trucks by eating local. From the vendors at Soda City Market to the farms that grow our produce to the local and highly creative restaurants that we are fortunate to have in Columbia, we believe that Columbia rivals any city with our vibrant culinary scene.

Authentic: Ramone Dickerson “I was 4, and my granddad used to let me come into the kitchen to cook with him,” said Ramone Dickerson, Executive Performance Chef at the University of South Carolina. “And when I was 9, my dad started letting me fry fish for him and my uncle when they would play chess together on Fridays. It went from there.” Locals who have been around Columbia for a while may recognize Ramone from his popular food truck, 2 Fat 2 Fly, which served up wings with a twist: they were stuffed with anything from mac’n’cheese to fresh buttered baked potatoes. The food truck had a dedicated following around town, too. Customers would flock to wherever the truck would set up shop and the truck would sell out of all of the food within hours.

Now, Ramone is out of the truck and at the University of South Carolina working with the athletes in the Athletic Village. “I’m the Executive Performance Chef which is someone who cooks specifically for the performance of an athlete,” Ramone said. “I write the menus for the athletes and work closely with the nutritionist. She focuses on the nutritional value while I handle the flavor of the food.” He’s currently working with a variety of teams at the University including baseball, basketball, beach volleyball, equestrian, football, golf, soccer, softball, swimming & diving, tennis, and volleyball.

“The athletes are always asking about the wings,” Ramone said. “I tell them that when y’all win the SEC, I got you!” Ramone’s culinary skills extend beyond just wings—he has a wide repertoire of talent in the kitchen. He has ingredients that he loves to cook with and savory dishes that he enjoys preparing for family and friends. “My favorite ingredient to cook with right now is a combination of parmesan and honey,” Ramone said. “I love the depth that you can get besides just sweet from honey and the savoriness you can get from parmesan. But I think that probably right now my favorite dish to cook is beef short ribs over cream cheese grits. That’s just where it’s at.”

The move to this locale will anchor the historic neighborhood and serve as the gathering spot for Columbians from all parts of the city. Owner Doug Aylard plans to reinvent this local fixture as a wine bar complete with small plate offerings and retail. The new concept will introduce guests to a threetier wine-by-the-glass format that will educate and satisfy all tastes and budgets. With space behind the new building for food trucks and pop-up catering, he envisions melding his wines with the culinary creations of local chefs. Local oenophiles held their collective breath in anticipation of the opening of the Columbia outpost of Charleston’s Halls Chophouse and exhaled into their wine goblets last winter when the steakhouse officially opened. It’s a fantastic place to enjoy what has become the new standard for wine programs in Columbia. Under the scrutiny of wine director Bryan Hogue, the wine list is at once approachable yet aspirational. Wines reflect the great wine regions of the world with a particular focus on structured reds to pair with the gourmet steak-driven menu. But as Columbia has proven more global-minded than originally anticipated, the wine list has evolved to meet guests’ worldly demands. Community Sponsor Highlight: Apizza di Napoli Apizza di Napoli, located on the Southside of Aiken, South Carolina, is well known for serving up some of the best true Neapolitan pizza in the state. The pizzeria was opened in 2012, but the history of the restaurant extends back over several decades with owner and pizza enthusiast, Cliff Garzillo. For nearly 25 years, Cliff was in his kitchen at home studying, making, and perfecting his pizza recipes. He built a wood-burning brick oven in his backyard that allowed him to hone his craft even further, but Cliff knew he would need to travel to learn more about how to make an authentic Neapolitan pizza. He hopped on a plane and flew to Italy for extensive training and education to become a certified pizzaiolo.

Cliff and his wife Wanda then set out to create a pizzeria that used only the finest ingredients—including some imported straight from Italy—to craft their incredible pizzas. They didn’t stop there, either, in their quest for an authentic Italian experience. Apizza di Napoli was honored with the prestigious and distinct Certification of True Neapolitan Pizza from the Association Versace Pizza Napoletana in Naples Italy. This certification means that the pizza Cliff and Wanda are baking in their restaurant is made under the strict guidelines set forth by the Association and is true to the pizza of Naples. They are the only pizzeria in South Carolina, North Carolina, and Georgia to have been honored with this certification.

While you can find plenty of appetizers, salads, and speciality pizzas on the menu, Apizza di Napoli might be most well known for their New Haven Pizza. This pizza is a style of Neapolitan pizza that is common around New Haven, Connecticut, where Cliff is from, and is known as apizza (pronounced “a-BEETS.”) It features smoked provolone, mozzarella, garlic, oregano, basil, and a perfectly charred crust.
